FRIENDS, FAMILY & COMMUNITY

It’s not always the easiest thing coming up with a true heartfelt statement every month. Something that truly captures my thoughts on what I see happening around each of us.

This month marks a solemn memorial of a good friend, without whom I would never have started this. To my good friend Don, you are sorely missed. Godspeed my friend; may you still bring joy to everyone who’s lives you touched. But as with every door closing, another one opens. This last year has brought a great deal of changes, new partners, new friends and new ‘family’. Without any of whom this humble little publication would not be here today. I have been blessed with true friendship over the last year and shall always hold that within my own heart. With that in mind, it makes me reflect on where we came from – our goal was always to be the

heart, focusing on the community which we are so proud to call our own. Without a strong focus, or strong support, it is hard to see where we would be. This is nothing new for Rutland; strength and support is the cornerstone of our community. As we prepare for this year’s May Days celebrations, it’s easy to remember the fair and the parade, but we lose perspective on the fact that this is the 55th annual celebration.

Smiles and excitement are a key component to Rutland May Days! We encourage everyone to take part in this, the 55th annual celebration.

No other community within Kelowna can boast such pride or such history. It’s because we have such a strong community that we can proudly say that it’s the longest running festival in Kelowna. It’s because we are so community proud that we continue

to ensure the May Days celebrations endure. It’s because we have such a strong community based in dedicated supporters and volunteers that Rutland keeps growing. Rutland Proud! This is our time to shine!

CREATING JOBS AND INVESTMENT

It was with pleasure that I recently made a funding announcement that will help the Central Okanagan Economic Development Commission attract investment into our communities in the Okanagan, including Rutland.

This was the highest amount of FDI coming into Canada since 2008.”

The Central Okanagan Economic Development Commission received funding under the Invest CanadaCommunity Initiatives (ICCI) program, which provides matching federal funds to help communities attract, retain and expand investment.

The Economist Intelligence Unit says Canada is the best country among the G-7 to do business over the next five years from 2014-2018.

The COEDC will use the funds to help develop a business investment guide. As the Commission’s hardworking Director Robert Fine noted, “The guide will provide a detailed description of the investment climate in the region including cost of doing business, incentives, competitive advantages, skilled workforce information, infrastructure and R & D capacities; these assets will be communicated in a style that is cross cultural and visually appealing to readers including the availability of the guide in multiple languages. The Region has a great story to tell and this project will allow us to do exactly that, in a strategic way. Foreign investors are feeling increasingly confident about Canada, evidenced by the fact that Foreign Direct Investment (FDI) inflows to Canada have increased for the fourth consecutive year.

RUTLAND BUSINESSES EXCEL AT CIVIC AWARDS Chase Jestley I Love Rutland

Two Rutland businesses took home top marks at the 39th annual City of Kelowna Civic Awards. House of Rose Winery received the Champion of the Environment for Business and Cooper’s Foods (Rutland) was celebrated as Corporate Community of the Year - Large Business. “Honoured, humbled and excited, that’s how I would describe it,” says Aura Rose, co-owner and winemaker at House of Rose Winery. “Being aware of, and actively reducing, our impact on the environment is so very important to us. It’s an honour to have that commitment recognized.”

For their part, Cooper’s manager Dave Parfitt said he was proud to accept the award on behalf of all of his team members who really dedicate their time and efforts through the year, making such an honour possible. And though he didn’t win in the male athlete of the year category, Rutland Olympian Eric Neilson was also one of the finalists for the prestigious award. In total, the city handed out 18 different awards, recognizing outstanding contributions and achievements in our community.

A HISTORIC LOOK AT MAY DAYS Evelyn Vielvoye Special to I Love Rutland

In the late 1800’s and early 1900’s, Kelowna and its Okanagan neighbours counted many persons of English descent in their population. These early residents celebrated May 24th with much pride and gusto. It was a time to remind everyone of England’s power and of its beloved Monarch Queen Victoria who was born at Kensington Palace, London on May 24, 1819. May 24th became known as Victoria Day. On May 24, 1919 the Kelowna Courier and Okanagan Orchardist informed its readers that the Committee of the Victoria Day celebrations had reason to be proud of their work, as the program was carried off successfully and large crowds of interested spectators enjoyed a number of activities that were available for the public. There were foot races for the children, lacrosse for athletes traveling to Kelowna from Vernon, cowboy races (involving three turns around posts set at each end of the course. Competitors had to unsaddle and wait for the word “go”, then saddle up and away), and pony races for boys. On May 24, 1920 many events were celebrated. The most important event was the unveiling of the Rutland and Ellison war Memorial, recording the names of local men who gave their lives in the Great War, 1914-1918. An appropriate location on the front grounds of the Rutland Elementary School was chosen. The monument was to remind the children for many years of the great sacrifice that all the people of the world had given for liberty. This monument was later moved in the 1970s to the Rutland Lion’s Park. On May 24, 1940 Kelowna residents were treated to a viewing of the traditional Maypole dancing and a May Queen was then crowned. May Pole dancers were picked from schools in and around Kelowna. In 1958, a Canadian Centennial year, a large Rutland Community celebration was held on the Monday of the May long weekend. As the old “Rally Days”, which had

been held in July, had been discontinued for several years, this was greeted with much enthusiasm. As a result, the Park Society decided to organize a family day of sports for May 24th of 1959. A softball tournament, children’s sports and activities, Maypole dancing and choosing of a May Queen was featured. With the cooperation of the elementary school, and the Women’s Auxiliary to the Rutland Fire Brigade, a contest was held and a grade five girl was chosen by her classmates to be May Queen and two girls named as Princesses. The first May Queen was Linda Cross, with Princesses Bernice Yeast and Geraldine Frankie. The 1959 long weekend happened to be very wet and miserable. However, spirits were not dampened, umbrellas were found, and the crowning went on as planned, the stage being a large, flat deck truck borrowed for the occasion.



Thus began the stage for a lengthy Rutland May Days celebration that continues to grow each year.

Centennial year ~ 1958, a big celebration was held in Rutland on the Monday of the long weekend. It was a beautiful day and everyone was so enthusiastic. The Rutland Rally Day was a big annual event held at the Rutland school each year on the 3rd of June starting in 1921. It was a joint effort of the Rutland Athletic Club, the Women’s Institute and the Farmers Institute each sharing the work and also the profits. When the “old” Community Hall was built, the newly formed Hall Society also took a share. The end of the reign of King George V also brought an end to the June 3rd holiday and the Rally Days were changed to the 1st of July. This date did not prove successful and soon the Rally Day had been dropped. Victoria Day Weekend then became Rutland’s official first days of summer and was call “May Days.” As everyone enjoyed this event so tremendously, the Park Society decided to organize a yearly event with a softball tournament, children’s activities, a parade and family fun day. Thus began the Rutland May Days in 1959 (some include the Centennial Year 1958).

Jubilees were causes for much celebration. Because the Kelowna area had many British pioneers, May Pole Dancing became a yearly event for many years. A pole is positioned in the ground with a rotating circle on top and many ribbons are tied to this ring. The elementary school children were taught how to “wind” and “unwind” the ribbons to a traditional tune. This event was discontinued at Rutland May Days in 1993.

This led to choosing a May Queen, with the co-operation of the Rutland Elementary School. It provided a means for the young ladies to gain confidence in speech, deportment and fashion. Linda Cross was the first official May Queen with her Princesses Bernice Yeast and Geraldine Frankie crowned in the 1959 celebration. The elementary students also participated in “May Pole Dancing” every year in conjunction with May Days. May Pole Dancing was one of the activities that happened every year in Great Britain on Victoria Day which was named in honor of Queen Victoria, reigning monarch when Canada achieved nationhood in 1867. RUTLAND WOMEN EMBRACE ROLLER DERBY Chrystal Myers Special to I Love Rutland

Ask one of the more than 40 women playing roller derby in Kelowna why they play and without even a moment of hesitation they respond with “because it’s so fun and empowering!” Our local roller derby scene started with an idea and a desire of two women who rented some space at a hall in Peachland. From its very small beginnings in 2009 to present day, roller derby in Kelowna is now the sport of over 40 women, two men (who are part of the referee team) and a fan following that many would say is almost like a cult they want to be part of. Of these more than 40 skaters in the sport, Rutland is home for 10 of these individuals. Roller Derby is a sport of agility, strategy, hard hits and constant training. It’s also a sport where women have the chance to get out of their comfort zone and get out of the routine of their daily lives. Long gone are the days so many remember in the 70’s that consisted of theatrics and comedy focused more on the ‘show’ than the sport itself; today it’s the fastest growing women’s sport in the world with world championship games and tournaments taking place all around the country. These girls train and they train hard, making fitness a big part of their lives knowing it will just improve their skills on the track. One of our own Rutland area residents ‘Sugar Beats’ says she “joined derby because I was looking to meet new people in a way that would also let me be the athlete I love to be, and I saw how physically challenging the sport can be which intrigued me to be a part of it.” ‘Suzi Bertuzzi’ tells us “we love the sport so much that we’ll practice anywhere we can find space that has a concrete surface where we can roller-skate.” Part of the training for many of these women includes learning how to skate and practice drills that makes one quicker on their feet. You’ll often see girls practicing in the loop around Ben Lee Park, the men’s lacrosse box or running the 100 stairs off of Dougall Rd.

The Okanagan Roller Derby Association will be holding a free scrimmage May 14 at the Rutland Arena.

These women fell in love with roller-derby not just for the sport itself but for the camaraderie that they’ve received from the women who play. Locally, the league consists of every type of woman, including those of all ages, fitness levels, sizes and roller-skating experience. All of whom have a variety of careers including: stay-at-home moms, graphic designers, lawyers, event producers and teachers. Name the career and chances are someone in the league is doing that for a living. The Okanagan Roller Derby Association is holding an open scrimmage and inviting all Rutland area residents to come in and watch for free and get a better understanding of the sport. Families are always welcome; you can watch this scrimmage on Wednesday, May 14 at Rutland Arena (West). The scrimmage starts at 8:45pm and runs until 9:45pm and the girls will be available to answer questions and explain the game during this event. The Okanagan Roller Derby league is Kelowna’s first league and is a 100% skater-owned and operated all female flat-track roller derby league. Wow, it has been another great month for Tamara.

This month’s progress is a perfect example of Body Fat Percentage loss without an actual loss on the scale. Tamara has increased her lean muscle mass with increased exercise and resistance training which has resulted in a body fat percentage drop of 4%. As I discussed last month, the Body Fat Percentage is much more important than the number on the scale and is a much better indicator of overall health. This is a very busy and stressful time of year for Tamara and as we all know, when we are stressed we don’t sleep properly. Stress and insufficient sleep can cause an excess of cortisol which plays havoc on weight loss. Long-term weight loss includes monthly challenges like holidays, vacations and loss of motivation, all of which are a part of life and we have to learn not to get discouraged and give up. Tamara totally understands that her temporary lull is just that, temporary, and is well on her way to next month’s goal. We are going to increase the intensity and duration of both cardio and resistance in Tamara’s program and concentrate on low glycemic food choices. I was fortunate to have been able to attend a Fitness Conference in Seattle a couple of weeks ago and came home with further confirmation on the effects of exercise on fat metabolism and some new knowledge regarding the physiology of fat loss. Interval training has a very important effect on E.P.O.C. (exercise afterburn), which is the amount of fat that is burned following exercise. I also learned in much greater detail the effects of glycemic index (GI) on fat metabolism and the importance of following a low glycemic diet for optimal fat oxidation. There are Glycemic Index Charts available for your reference and I would highly recommend becoming familiar with the % rating of the foods you eat. There is a man I just can’t stop thinking about.

He flirts with me and we enjoy each other when we see each other at the local bar. About a year ago, we went home together one night. Since then, we had two other nights together. We don’t date, or even talk on the phone. We just see each other at the bar or in the neighborhood. I discovered recently that he is engaged. A friend of mine confronted him and he denied it, but through others, I now know it is true. My problem is that he is soooo nice to me. He flirts and compliments me. I am so upset he is involved with someone else, but I can’t get him out of my head. I am desperate. What should I do? Confused HE SAID:

So let me get this straight. You hooked up with a guy in a bar and assumed he wasn’t a player. I‘m sorry dear, but you are the other woman. Or perhaps you are the one he wishes he was with. There are many instances which could make someone go astray.

But then you have to remember, men are assholes. Also, are you free for dinner next week? SHE SAID:

Look at it this way… he could be attached to someone in a loveless relationship, but stuck in a certain situation which prevents him from leaving. His time with you could be how he escapes an unhappy relationship. On the other hand, you could be just that good. Spending time with you could just remind him about what he is missing, or used to have. Either way, no matter how you look at it, you obviously have his attention, it’s up to you to decide what you want. So you have your hooks in someone whom you know isn’t the most faithful, but catches your attention. You and your friends know he isn’t the most honest in relationships. BUT, his attention has got you. What do you really want? Do you really believe that if you were able to win him away you could keep him? Beautiful and charming are but two parts of the whole story. Is your relationship based upon physical attraction, or do you see a future? I like flirting, I’m quite good at it. But at the same time I am completely dedicated to my partner, she completes me in many ways. Do you see that with this guy? This man is using you to get some when he wants some - yes this is why he is “soooo nice” - and while you are willing, the truth is you were hoping for more. You believed he was available and that there was a chance of some type of relationship. This “arrangement” for lack of a better word is dishonest and hurtful

and I have to ask - what is wrong with your self esteem that you are not angered by that?? Then there is the other issue: this man is supposed to be in a committed relationship and about to be married. At this point, any decent person would or at least should be totally enamored with their fiancée and have eyes only for them. What this says about this man’s character and the future of this “marriage” is a column of its own, for another day!

Ironically, once you get past all the tension, they’re actually really good friends. Just don’t tell them that. With their constant bickering, the two have made it possible to come up with two very different opinions on just about everything. Truly one of them has to be right. She was ranked by the American Film Institute as the third greatest female screen legend in history and devoted much of her later life to UNICEF, and was awarded the Presidential Medal of Freedom in recognition of her work with the organization in 1992.

POST TAX SEASON TAX TIPS Wendi Swarbrick I Love Rutland

Most of Canada has already filed their taxes but for those of you who haven’t yet, there is no time like the present! Here are a few points to consider for the coming year. Installments Installments are quite a controversial subject with some individuals and have been the subject of many debates. Some are perfectly ok with making installments and even find them a practical approach to avoiding a large tax bill at the end of the year, while others are deeply offended that the government has the audacity to predict what their tax bill will be and request prepayment of it. Whatever your feelings on the subject may be, the bottom line is that those installments are not, as many seem to think, “a suggestion”. If you have been given an installment schedule, you are required to pay those amounts by the dates on the schedule. Failure to do so will result in the Canada Revenue Agency levying interest charges. If you were given an installment schedule due to an unusual tax year and you know you won’t owe taxes over the limit in the next year, then you can disregard the installment schedule without fear of penalties but check with your advisor and go over your estimated income for the year before making the decision not to comply with your installment requirements. Another issue surrounding installments is the fact that many of the individuals required to pay them are self-employed business owners that are generally very busy people. So even those that have no issues with paying them still often incur interest charges simply because they forget to make them or make them late. One of the common ways around this is to pay all your installments in one payment on July 31. Yes, technically you are now late on some of the payments but also

early on the others. You won’t receive interest on the early payments but the interest you would have incurred on the late ones is cancelled out. It’s not a one size fits all answer but it does save the hassle of having to remember the amounts and the dates of the installments.

File your taxes Even if you have little or no income, file a tax return. There are many benefits to doing so and of course there are negatives in not doing so. First of all, you will not receive any qualifying GST credits and/or integrated provincial credits if you don’t file, nor will you be eligible for Child Tax Benefit payments or the Universal child Care Benefit for children under the age of 6. It’s also worth noting that the Child Tax Benefit amount is based on “family” income, which means that both partners must file their return in order to continue to receive the monthly payments. There are also benefits like the Guaranteed Income Supplement for seniors and the Working Income Tax Benefit that require your tax return be filed every year in order to qualify or continue to qualify. Teenagers earning a couple thousand dollars through employment should also consider filing; it’s a great opportunity to start building up your RRSP Deduction Room that is carried forward indefinitely. Students receiving a T2202A for Tuition paid should file even if they don’t have any income, those tuition and education credits can be carried forward and used as tax deductions in a year that there are taxes payable. If you are unsure whether or not you

need to file, ask your advisor. RRSP’S RRSP’s are another one of those subjects that can garner some very different view points, but the reality is that they have been in place in Canada for over 50 years and are still considered, by most advisors, to be the best way to save for retirement. Getting started contributing is much easier than it sounds and you don’t have to come up with a large amount of cash to do so. Contribute during the year, with a monthly or bi-weekly contribution. It just makes sense to do it during the year, rather than scrambling to do it at the end of the year. Talk to your advisor during the year, review your contribution room and come up with an amount that fits your budget. Of course buying more or topping up your contribution at the end of the year is always an option. INSURANCE IS A PART OF YOUR CHILD’S FUTURE As I weigh the pros and cons of buying life insurance for my little boy, I’m thinking about the life insurance policy that my dad bought for me when I was still in diapers. Christine Lwowiski Sun Life Financial

He must have spent considerable time collecting information before making such an important decision that over time proved to be very beneficial to me. I think I had better follow his example and learn all I can about the subject, and in particular, what kind of benefits it can and can’t deliver. This is what I have discovered, and if you’re considering buying life insurance for your child or children, you might want to ask yourself some of these same questions and consider the possible benefits. “Insurability” What is it and why do I need it? Guaranteed insurability allows my child to buy more life insurance at specified times up to his 45th birthday, no matter what his health, occupation or lifestyle may be. This ensures he’ll have access to additional insurance, even though he may become otherwise uninsurable. With some insurance policies, the guaranteed insurability benefit gives him six opportunities to buy $150,000 of additional insurance, and his age or health won’t be a factor. Could my child become uninsurable in the future? Sadly, yes. A common obstacle to buying life insurance is a medical condition, such as heart disease, diabetes, or HIV. It’s possible that some day, my child might not be able to get life insurance because of a health condition. Even if he’s accepted, the bigger the risk, the higher the premium he’ll have to pay. The hobbies and adventures my child chooses to pursue may make her ineligible for insurance. If my son decides to race motorcycles or if he takes up skydiving or scuba diving, insurers will consider him as a higher risk. However, if the policy I buy for my child has guaranteed insurability, he won’t be penalized for being adventurous. What’s the financial benefit of buying insurance now? As I’m quickly finding out, babies grow up fast, and one day he may want his own life insurance policy, especially if he has his own family. Insurance advisors will tell you to “buy it now and save.” Buying a permanent insurance policy now means that premiums will be paid over a longer period, but my son will pay less if he takes over the policy when he becomes an adult. costs at the age of 25. Another possibility for providing protection for my child is the child term attachment. It insures my son under my policy, allowing me to include my entire family when I make my personal insurance decisions. Child term is a good option, since it has built-in guaranteed insurability. It’s also good for people who are uncomfortable having large amounts of insurance on their children. With permanent life insurance policies (whole life and universal life), a cash value can provide a fund to draw on for future opportunities. Premiums paid into a permanent life insurance policy build up equity in the form of cash value. I remember borrowing $500 on the policy my dad bought for me. I put the money back into the policy a little while later. The cash value of the policy is an asset that helped me establish credit, helping me to get a down payment from a bank for my first car. In a way, though he didn’t know it, my dad started my financial program way back in 1981. Just as I did with my policy, my son might want to use his policy’s cash value to borrow money to pay for school supplies or cover an emergency expense. The borrowed money would also help him take the important step of establishing credit. The cash value also ensures his policy will remain in force if, at some point in the future, I’m unable to make premium payments. What if the unthinkable happens? As much as my husband and I avoid talking about life insurance for our little boy, realistically we have to admit that if something happens, our family income levels would be seriously affected. One of our first needs would be to take time off work, likely for an extended period. We are both self-employed and wouldn’t have paid bereavement time from a company. The proceeds from life insurance would help. I’ve weighed the pros and cons and I’m convinced that I’ll buy insurance for my son. My dad wasn’t a financial genius, but he made a wise choice that paid benefits. He’d be proud that I’m following in his footsteps!

During this time, university students scramble to move out of their eight-month homes from the school year, as do those who worked or skied temporally in the city during its snowy months. Rental properties located in downtown Kelowna, Mission or Glenmore, freshly empty of their former tenants, litter the pages of rental websites with pricy ads. During this time of transition for tenants and landlords alike, Rutland remains one of the only areas in Kelowna with reliably constant rental rates. Due to this factor, this community is a common summer retreat for renters, as well as a great one. Close in proximity to various amenities of Kelowna, Rutland also rests on the brink of beautiful orchards and vineyards, making it one of the prettiest places to summer in the Okanagan. Although I may be biased, knowing many students who love their Rutland summers, downtown Kelowna is not all it’s cracked up to be – and neither is

COMMUNITY CELEBRATES Close to 1,000 people filled the streets as the Sikh community celebrated Vaisakhi in Rutland recently.

In Sikhism, Vaisakhi is one of the most significant holidays in their calendar.

The event was full of gorgeous colours and traditional Sikh outfits, along with music and food.

In the Punjab region of India, Vaisakhi is also the ancient harvest festival that marks the beginning of a new year. It falls in the middle of the month of April because this marks the harvest time of the winter crops.

RELATIONAL COMMUNICATION – PART 2 Garth Walker, MA, RCC Life Choice Consulting

Welcome back Rutland to the second part of our series of moving beyond Reading, Riting and Rithmetic to practical skills of relational communication. For those of you who know about the odd occasion that I may not have used these skills well, you have permission to let me know, as long as you don’t yell too loud. In the first segment in the April issue we covered the skills of: 1. Learn to listen well. 2. Ask questions about what you observe about body language or about the tone that you hear – don’t assume what it means. 3. Reflecting – Putting into your own words what you think the other person is saying. In this next segment we will look at another area that can be sabotaged by assumptions. We will also look at how emotions can reveal some doorways to clarifying our perceptions and inform our attempts to communicate to one another. I apologize ahead of time to the guys who may not want to deal with the “E”motion word. 4. Avoid assuming motives - Not only can we incorrectly make assumptions about what body language or tone means - we can incorrectly assume what another person’s motive was for saying or doing something (or not saying or not doing something). I remember the Monday after school when my Grade 8 daughter came home and asked me if she could go to a soccer game the next night. I said “sure”. Then she asked me if she could go to the last dance of the year on Wednesday night. She was a bit behind her school assignments - so in light of 2 nights out in a row not being productive to catching up, I casually suggested she pick one event or the other. If you are a parent, you know the drill – explosion – crying, raised voice, body language over the top. My assumption was that I was getting the drama queen act to manipulate me to change my mind. So my voice starts to creep upwards, but since I was trying to teach myself these communication skills, I softened my voice and did my inquisitive thing. First I verbally acknowledged what I was observing and hearing (skill #2). Then I asked “help me to understand what is so important about this soccer game? When I was your age, I would have picked the dance.” She instantly stopped crying and blurted out “__________ is bringing his new girlfriend to meet me and if I don’t show up, they will think I jammed out on them.”

Newsflash! Much of the emotion my daughter was experiencing had nothing to do with the soccer game. It was FEAR of disappointing her friends. Whether she should be afraid or not, that is what she was experiencing. I get that. I was able to shift my assumption from thinking she was trying to manipulate me to understanding her fear. Acknowledging her fear and than asking her permission to make a suggestion quickly turned our conversation from a power struggle that could have lasted days to some simple solutions that she readily accepted within two minutes. Phew!! I said this in the first segment last month and I repeat – DO NOT ASSUME – or at least work at not assuming as much as possible. 5. Looking under the tip of the iceberg – Anger most often confuses communication. Imagine anger as the10% of the iceberg above the waterline. If we understand that there are always underlying emotions beneath the surface of the anger, we can become inquisitive and try to ask questions to find out what is fueling the anger. In the previous story, my daughter’s angry outburst was fueled by fear. On another occasion when I asked my daughter to do something for me on a Saturday afternoon, I received an angry response. She had a lot of “attitude” and I felt that she was just lazy and didn’t want to do it. Most of us don’t appreciate “attitude”, (unless we are the ones with the attitude and then it can be conveniently justified). Well, I put a hold on my normal response and asked “I am picking up a little bit of attitude – could you help me understand what that is about?” Her tearful answer shocked me. “Daddy, do you remember when you said ____________ this morning. Baingan Bharta (Eggplant Curry) UNCORKED THE PERFECT PAIRING

“This is a really easy and tasty Indian dish that is sure to stir up your taste buds. Delicious baingan bharta is ready to eat with naan, or rice.” Ingredients •

1 large eggplant

2 tablespoons vegetable oil

1 teaspoon cumin seeds

1 medium onion, thinly sliced

1 tablespoon ginger garlic paste

1 tablespoon curry powder

1 tomato, diced

1/2 cup plain yogurt

1 fresh jalapeño pepper, finely chopped

1 teaspoon salt

1/4 bunch cilantro, finely chopped

Celebrate May Days!

Preparation Preheat oven to 450 degrees F (230 degrees C). Place eggplant on a medium baking sheet. Bake 20 to 30 minutes in the preheated oven, until tender. Remove from heat, cool, peel, and chop. Heat oil in a medium saucepan over medium heat. Mix in cumin seeds and onion. Cook and stir until onion is tender. Mix ginger garlic paste, curry powder, and tomato into the saucepan, and cook about 1 minute. Stir in yogurt. Mix in eggplant and jalapeño pepper, and season with salt. Cover, and cook 10 minutes over high heat. Remove cover, reduce heat to low, and continue cooking about 5 minutes. Garnish with cilantro to serve.

Tanglewood Thicket Creations Studio is the creative outlet of East Kelowna artist/designer Kasey Sorsby. Kasey creates one-of-a-kind, or custom ordered, hand dyed felted creature creations. After the birth of her first child, Kasey left a successful career in Interior Design and took up needle felting instead. A past-time has become a passion and Tanglewood Thicket’s creatures are now sold all around the world. Tanglewood Thicket creatures are lovingly and painstakingly handmade, and therefore it is best to plan ahead when ordering, as there is generally a waiting list. Kasey takes custom orders and can accommodate design requests.
