WHAT IS IT ALL ABOUT?

I’ve been reading your magazine since the beginning, and I enjoy it. A point I remember on one of the first issues you mention the changes on the roads around Rutland. I haven’t seen anything new, how do you like the changes? I don’t believe the changes on Rutland rd, the two lanes became one, on busy hours one who likes to make a left hand turn has to wait up to police station when no one else ahead of him has to turn(the same goes for right turns). The other crazy corner is Dougall Rd, before we could make right turn even on red light, now not only we can’t make right turn, but also no left turn light was installed. I understand the median but I don’t think the Petro Canada will be happy for too long(if they still are). Now, why there is no left turn light on Hollywood rd? that one is major one. I know there were plans before the changes, but you can’t see each detail on a plan like that. Thank you, Sofia

Like your birthday and New Year’s Eve, Valentine’s Day is another way of judging the state of your relationship. Some of you will get gooey cards and flowers. Some of you will get blank stares and this: “Valentine’s Day? You’re kidding.” The tradition of celebrating St. Valentine’s Day, or simply Valentine’s Day, is an occasion that began in Rome in the year 496 AD. It was not celebrated for centuries but began to gradually gather eminence in the 14th century. In these modern times, the arrival of February 14 every year fills the atmosphere with love and romance. The celebration took root first in the US and was celebrated there with great gusto but now the excitement and the enthusiasm that goes with it has spread to the rest of the world. Who says that this day should be restricted only to romantic love? No other day can conjure such powerful imagery of chocolate, flowers, romance and love. It is a commercially driven day that provokes strongly divided reactions to the bewildering display of hearts and starry-eyed romance. For those in stable, loving relationships, the day offers a wonderful opportunity to express or reaffirm their love. For those who are recently bereaved, divorced or single, this is a day that can trigger feelings of overwhelming loneliness and grief.

While Valentine’s Day is merely an arbitrary day that we use as a light hearted way to express our feelings to our partners, it is also true that this day sustains the myth that all couples are happy. With divorce rates where they are in North America, it is apparent that not all couples are “loving”. Without intending to bash this “feelgood” day, after all we can all benefit from an expression of love, it seems that Valentine’s Day may be more widely accepted if it was truly a day for love. Not just romantic love between couples, but love in all of its forms. Many people who find themselves alone on this day, struggle with past hurts, grief and feelings of inadequacy. While they are bombarded with images of happy couples, it is important that they remember that their identity is not defined by their relationship status. A person’s worth comes from who they are, not who they are with. While most would agree that this is true, it doesn’t dull the inevitable feelings of self-doubt and inadequacy that arise when besieged by the ubiquitous love heart at every turn. Make Valentine’s Day whatever you want it to be.

FEELING YOUNG AT 95 Chase Jestley I Love Rutland

At 95 years young, Stella Gunderson shows no signs of slowing down. Recently the nonagenarian (one who is between 90 and 99 years old) celebrated the occasion at a party with friends and family at the Army Navy Air Force Unit. “I’m overwhelmed with so many wonderful friends,” said Gunderson. “Being 95 years old, I feel like I’m enjoying my teenage years.” It is also noted that she is quite active with the Senior’s Centre, enjoying lawn bowling and an assortment of other activities. Gunderson shares a long background in the community and with the ANAF, being the First Ladies Auxiliary president for the organization when its charter was granted in 1973.

Firsts are nothing new for Gunderson. Her husband, Gunnar, was also active with the ANAF, being the Unit’s first President when its official charter was granted in 1972. “Stella comes out and plays crib two times a week and is a great lady,” says ANAF president Heather McTavish. “She lives on her own and has her own car.” In fact, Gunderson had to renew her driver’s licence this year and did so without difficulty. “Well, they didn’t take it away,” she laughed. When asked what her secret was, she had some sage advice for everyone. “Enjoy your life,” she said. “Enjoy every part of it – the good times and the bad.” Congratulations Stella! Hoping you had a very happy birthday indeed.

years ago a man walked into a Subway restaurant and murdered my girlfriend’s best friend with a hammer for less than $50.00. That man’s existence caused so much pain for so many, it made me wonder how I was impacting the world. I always considered myself a good person but maybe I could be better and as I watched my truck warm up I realized something surreal. The poisonous gas (carbon monoxide) coming from my truck was a direct result of my existence, but what to do about it. I thought maybe I could walk to the store sometimes instead of driving, I wasn’t very successful. I would be in my truck half way to the store before realizing I was going to walk. Determined not to be harmful to the earth I sold my truck. Now I had no choice but to walk, only problem was that it took too long to get anywhere. That’s when I bought my bike, soon after that I bought my backpack. For 13 years now I have lived my life not burning any fossil fuel and even when I bought my restaurant I continued my commitment to the world. As far as I know it is the only restaurant in the world that acquires inventory without burning fossil fuel. By eating at my restaurant you would be eating the best and freshest food and saving the world from the gas that is killing our planet. A few weeks ago the World Health Organization officially announced that car exhaust is causing Cancer. My dad died of Cancer, to think that I had some part in his death, (no matter how small) is very disturbing. I hope you will come and try my restaurant, if not for the delicious homemade food but to save the life yours or someone else's loved one.

If you polled my clients they’d tell you that in my books, the biggest enemy of every home is moisture and water. When a home doesn’t protect itself from water, a whole host of events happen. Most of them are expensive to fix and are invasive. Water that lands on a home must be gathered up and taken away as quickly as possible. It should be discharged as far away from the structure as possible - where it doesn’t have the opportunity to return to the home to cause damage. Just as important, water that doesn’t land directly on the structure, but has the ability to enter it, has to be diverted away from it.

Sure, you can fix water damage to almost any home, but the conditions that caused the water intrusion in the first place must be addressed. Poor lot grading and geo locations, like a home located at the bottom of a ravine, put the home at a disadvantage right off the bat. Inadequate roof drainage Water that lands on or near a structure needs to be taken away immediately. The presence of a well sloped roof that discharges into a perimeter drainage system is the best.

Inadequate surface grading

Eliminate upper roof discharge onto lower roofs. When an upper roof discharges onto a lower roof, the sheer volume of the water can be expected to accelerate localized shingle deterioration. Worse yet, upper roof discharging onto lower roof can result in the potential for water intrusion.

Water that gravitates towards the structure on the surface or below grade has the potential to create problems unless effective drainage systems are present. Homeowners are all too aware of water intrusion problems and the havoc it can create in basements and crawlspaces. A good home inspection includes searching for and identifying

Roof flashings are simply pieces of sheet metal - usually aluminum or galvanized steel - which are placed over joints in roof and wall construction to prevent water seeping into the structure and causing damage. The major cause of residential roof leaks is a fault in the roof flashing If the flashing has been installed correctly, gravity will work with the flashing material to shed the water off of the roof where it can be directed to the ground. Roof flashing is commonly used around chimneys, fan vents, plumbing vent stacks, and other items that project out of residential roofs. Older roof coverings Here’s a big home inspection question: How’s the roof? I answer that question at every inspection. Most of the time what is meant is how long the roof covering is expected to last. As you can imagine, it takes good construction and durable materials to do the job, but weather is the enemy. As soon as a roof coving is installed it goes to work for us. Whenever a home is purchased, it is done so with the roof at some stage its service life. In our area, widespread use of wood shingle roof coverings has diminished mostly due to cost and wildfire interface fears. Personally, I think that wood shingles are great. Many of the existing ones in our area are reaching the end of their reliable service life. Entry level asphalt shingle roof coverings only last 15 to 20 years, premium products are warrantied for 50 years or more. Of course, no matter what the age of the covering, roof leaks can happen unexpectedly. Often viewed as expensive, prolonging

the repair or replacement of a roof covering is a bad move. DIY projects from improvement stores

There is an amazing amount of doit-yourself products out there being pushed by slick marketers. Many of them tout that you can do the work yourself with awesome results. Sadly, it’s not the case. With little or no direction, do-it-yourselfers often embark on projects without the right tools or knowledge. Often overwhelmed, good intentioned projects fall by the wayside or don’t have the desired end result and it shows. It makes sense not to take on projects that require experience, yet it happens all of the time. DIY’ers are often impressed with glossy brochures and fancy displays, but they rarely consider the scope of work before embarking. I see a lot of projects tackled without going all the way to completion – I fondly refer to them as the 90%’ers. Diminished or dormant maintenance Homes don’t come with an autopilot feature. Many repairs can be avoided with simple inexpensive maintenance. Home maintenance is pretty much a practice you buy into. In most cases the committed realize improved value in their home, pride of ownership and peace of mind. It’s an acquired taste so to say. Of course diminished or dormant maintenance can be a result of extenuating circumstances. For home inspectors, the list of items that we have to look for seems never ending, but to identify some of the most common areas problems arise is something that can make our lives a little easier.

URBA is an acronym for the Uptown Rutland Business Association. It was in 2007 when a group of like minded individuals got together and created and became part of the (BIABC) Business Improvement Association of British Columbia. URBA’s goal was to make sure commercial property owners and tenants within our defined area work in partnership with the City to create flourishing, competitive, and safe business areas that attract shoppers, diners, and new businesses. By working collectively as a BIA,local businesses have the organizational and funding capacity to be catalysts for civic improvement and enhancing the quality of life in our neighbourhood.. How does a BIA work? A BIA is run by a volunteer Board elected from its members, the Board is nominated and elected at the Annual General Meeting which is held in

March. The Board works on behalf of URBA and meets regularly to develop budgets, set priorities, implement capital improvements, plan events, and promote the Rutland area. How is URBA funded? Once the members approve the budget and City Council ratifies it, funds are raised through a levy on all commercial and industrial properties within the URBA’s boundary. Calculation of this levy is based on the proportionate value of each property’s commercial and/or industrial assessment. Once the City collects the levy, it returns the funds to URBA to manage. In 2013 URBA’s budget was presented and has been approved for the next 5 years.

A GLOBAL VALENTINE

Va l e n t i n e ’s Day is a romantic tradition which is celebrated by millions of us every year as a way to express our love with gifts, chocolates, flowers and cards. This special day has been around for hundreds of years and is celebrated worldwide through various traditions and customs.

It is believed to have originated as a celebration of an early christian Saint from Rome in 269AD. As legend has it, St. Valentinus was imprisoned for performing weddings for soldiers who were forbidden to marry. During his time in prison, Valentinus is supposed to have healed his jailer’s young daughter and fell in love with her. On the day of his execution on February 14th 270AD, Valentinus is believed to have sent his love a handwritten farewell note signed ‘from your valentine’. Hence, the start of Valentine’s Day. While the romance and gift giving that is commonly associated with February 14th has spread worldwide, some cultures have their own take on the occasion and celebrate with some truly unique traditions. Japan: In this part of the world, it’s all about spoiling your man on Valentine’s Day and not the other way around like in most Western cultures. Japanese women are usually said to be reserved and shy when it comes to expressing their affections with lovey-dovey gestures. However, on this day the women are in the forefront presenting the men (and sometimes even female friends) in their lives with gifts (mostly chocolates) to express either their love, courtesy or social obligation. While on Valentine’s Day itself the men sit back and enjoy the treats presented to them by women, in the 1980’s the Japanese chocolate companies again came up with yet another successful campaign (and an obvious way to sell more chocolate) called ‘White Day’. Initially called “Ai ni Kotaeru White Day” meaning ‘Answer Love on White Day’, March 14th has since become the customary day for men to reciprocate their feelings to those who gave them chocolates

on Valentine’s Day. Slovenia: The 14th of February in Slovenia marks the first working in the fields. St Valentine, or ‘Zdravko’ as he’s better known there, is one of their patron saints of spring. There’s a Slovene proverb that goes “St Valentine brings the keys of roots”. As such, it’s an auspicious day to start working in vineyards and fields as usually around this time of year one starts noticing the revival of plants and flowers. The people of Slovenia also have a belief that the birds of the fields propose to their loved ones and get married on this day (simply put, it’s the mating season for some birds), and to witness this one must walk barefoot through the field on sometimes still frozen ground. Finland & Estonia: Here Valentine’s Day is more a celebration of friendship rather than a romantic love fest. February 14th is called “Ystävän Päivä” in Finnish and Sõbrapäev in Estonian, which literally translates to “Friend’s Day”. People exchange cards and gifts among friends with the greeting of “Happy Friend’s Day”. It is, however, a popular day to tie the knot or get engaged. France: Dubbed one of the most romantic countries in the world, it comes as no surprise that France too houses a strange Valentine’s Day tradition. Their most popular tradition was called “une loterie d’amour” that translates to “drawing for love”. This practice involved single men and women of all ages to enter houses that faced opposite each other and take turns calling out to one another until they were paired off. In a November 8, 2012 Tax Court of Canada case, CRA disallowed as a medical expense $14,883 of travel costs related to 101 round trips that Mr. Jordan made from Weyburn to Regina to assist his wife in recovering from an aneurysm. Taxpayer wins The Court allowed the deductions on the basis that they were incurred while his wife was receiving medical treatment and, therefore, should not be restricted to just the initial trip from Weyburn to Regina. DISABILITY TAX CREDIT In a December 18, 2012 Tax Court of Canada case, the Court determined that the Appellant was not entitled to a Disability Tax Credit for the 2010 taxation year in respect of her diagnosis under Attention DeficitHyperactive Disorder and DSM-IV Learning Disability. The Court noted that there is no doubt that the difficulties experienced

by the Appellant are not insignificant, however, they are not sufficiently serious to meet the definition of mental or physical impairment required to claim the credit. SALE OF FAMILY HOMES In a September 6, 2012 Tax Court of Canada case, the taxpayer was a police officer who had three unreported sales of family homes built in 2004, 2005 and 2007 in which CRA assessed business income of $31,068, $44,729 and $29,872 and also assessed gross negligence penalties. For the three properties, the ownership period between the date of purchase of the land and the date listed for sale varied between 67 and 110 days. Taxpayer loses The Court found that these homes were acquired and built with the intention of selling and were, therefore, business income and, that there was gross negligence in not reporting the income.

TAX PLANNING Meet with your accountant or tax advisor before December 31 to review your tax planning options. Many of the credits and options available have to be implemented prior to December 31. Waiting until you bring your taxes in, in March or April is too late for any proactive planning. If you have had any changes in personal income or business revenue, investments etc. It’s important to make your tax advisor aware of these changes as soon as possible so they can review and explain any options that may be beneficial to your particular situation. As each individual’s tax situation is unique and dependant on a variety of factors, always consult with a tax professional before proceeding.

RRSP CONTRIBUTIONS - DEADLINE? December 31st is the last day for final RRSP contributions for individuals who have turned 71 years of age during the 2013 year. Making a final contribution can be beneficial for individuals who have unused RRSP contribution room remaining as the amount of the contribution can be deducted against income generated in 2013. Thus, this will reduce the individual’s 2013 overall tax liability.

PAYING A SALARY TO FAMILY MEMBERS Consider paying a spouse or a child a reasonable salary based on their involvement in your business. The salary should be a reasonable amount considering the type of work performed and should be comparable to what a third party would be paid to perform the same type of service. For individuals who originally had little to no income, the salary paid will be taxed at a lower marginal tax rate. In addition, the salary will be considered earned income and will also generate future RRSP contribution room for each of those individuals.

2013 FEDERAL BUDGET Some of the provisions in the 2013 Federal Budget include: First-Time Donor’s Super Credit (FDSC) Budget 2013 proposes a temporary FDSC providing an additional 25-percent tax credit for a first-time donor on up to $1,000 of donations. A first-time donor will be entitled to a 40-per-cent federal credit for donations of $200 or less, and a 54-percent federal credit for the remaining portion, not exceeding $1,000. An individual will be considered a first-time donor if neither the individual nor the individual’s spouse or common-law partner has claimed a Charitable Donation Tax Credit in any taxation year after 2007. The FDSC will be available in respect of donations of cash made on or after Budget Day (March 21, 2013) and may be claimed only once in the 2013 through 2017 tax years. Taxes in Dispute and Charitable Donation Tax Shelters Budget 2013 proposes to allow the CRA to collect 50 per cent of the disputed tax, interest or penalties where an objection has been filed with regards to a disallowance of a deduction or tax credit claimed in respect of a tax shelter that involves a charitable donation. Normally, collection action cannot be taken while amounts are

under objection or appeal. This measure will apply in respect of amounts assessed for the 2013 and subsequent taxation years. Leveraged Insured Annuities (LIA) and 10/8 Arrangements A LIA involves the use of borrowed funds in connection with a lifetime annuity and a life insurance policy, both of which are issued on the life of an individual. A 10/8 Arrangement generally involves the borrowing of funds secured by a life insurance policy, or investment account under the policy, whereby the rates on the loan and the investment are tied to each other. Budget 2013 proposes to eliminate unintended tax benefits by introducing rules for “LIA policies” and “10/8 arrangements”. Budget 2013 also proposes to alleviate the income tax consequences on a withdrawal, from a policy relating to a 10/8 arrangement, if the withdrawal is made before January 1, 2014. Restricted Farm Losses (RFL) Budget 2013 proposes to codify the chief source of income test whereby other income must be subordinate to farming in order for farming losses to be fully deductible against income from those other sources. As there are various bodies involved, negotiations must still take place to finalize the detailed design of the Grant. Extension and Expansion of the Hiring Credit for Small Business Budget 2013 proposes to expand and extend for one year the temporary Hiring Credit for Small Business. This credit would offset up to $1,000 of

The CRA will pay rewards to individuals providing information on major international tax noncompliance to the CRA of up to 15 per cent of federal tax collected if reassessments exceed $100,000 in federal tax. Canada – U.S. Information Exchange & FATCA Budget 2013 confirms the Government is engaged in negotiations with the U.S. for an agreement to enhance reciprocal information exchange under the Canada – United States Tax Treaty. The agreement would include information exchange provisions in support of the United States Foreign Account Tax Compliance Act provisions.

DEFERRING OLD AGE SECURITY The 2012 Federal Budget introduced provisions whereby an individual can delay receiving their OAS for up to five years after age 65. Commencing July 1, 2013, a compensation of 0.6% per month of delay is provided to compensate for the deferral of the OAS pension payments. This flexibility may permit a person to reduce, or eliminate, the OAS clawback by deferring the receipt of the OAS until the income of the person is below the net income threshold ($70,954 for 2013). In general, the taxpayer does not need to take any specific action to defer commencement of the OAS receipts. The person simply would not apply for OAS until he or she wishes to receive the payment. An OAS application may be retroactive to as much as eleven months. Note that the Government may send a letter notifying a 64 year old individual of the ability to apply for the OAS at age 65. Consideration Item: An individual who has received OAS benefits for less than six months may cancel the benefits and begin the deferral by paying back the total OAS received. This could apply even if the individual has not received any net OAS payments because of a full clawback. rutland proud Paul Spoljaric – SPRINGVALLEY SECONDARY SCHOOL Paul Spoljaric, a Professional Baseball Player (retired), born September 24, 1970. After being signed by the Toronto Blue Jays as an amateur free agent in 1989, he went on to play for the Blue Jays (1994, 1996-1997, 1999), Seattle Mariners (1997-1998), Philadelphia Phillies (1999) and Kansas City Royals (2000). He was traded in 1997 with Mike Timlin for José Cruz, Jr. and was a member of Team Canada at the 2004 Summer Olympics, where they finished in fourth place in the baseball tournament. In his 6-year major-league career, Spoljaric compiled a career 8–17 record with 278 strikeouts, 12 saves, and a 5.52 ERA in 278 innings.

Ben Lee – STRAIGHT OUT OF RUTLAND! Affectionately known as “The Mayor of Rutland”, Ben served as City Councillor between 1973 and 1996 promoting parks, recreation and health care. He was instrumental in the assimilation of Rutland into the City of Kelowna when the City’s boundaries expanded in 1973, and he played a significant role in the development of the City’s Heritage Management Plan and Guisachan Heritage Park. A devoted teacher by profession Ben’s actions always reflected his genuine concern for youth and he championed many innovative programs, facilities and services for children of all ages. Ben’s valuable contribution to the preservation of cultural heritage was recognized provincially with the 1989 Public Service Award of the Vancouver Multicultural Society of B.C. His award marked the first time the award had been presented to anyone outside of the Lower Mainland. Ben is a constant source of wisdom and inspiration to all who are fortunate enough to know him.

Well, some would say you are living the high life there. Two women and no commute.

A few months ago, I met this girl at a concert and we started seeing each other.

Seriously though, do you really think this is going to work out well in the end?

At the offset, our relationship was great, we did lots of things, spent all our time with each other and our respective children.

Ok, for the first while, it’s going to seem great, you are guaranteed some action anyhow.

Over the months and the time spent together we did have a great relationship and also with her roommate. Hey who am I to complain, go out to places and events with two cute blondes… We also party a great deal, which has taken a strain on our relationship and let’s just say has led to an ever dwindling physical relationship. Recently we all went out to a club, partied and after getting home in a taxi, my girlfriend and her roommate got into a row, with my girlfriend storming off to bed locking the door behind her. Needless to say, the roommate and I started fooling around and have spent some time together since. The problem is, I think I am more attracted to her than my actual girlfriend. What should I do? One Man, Two Women

But unless you are in an ‘open’ relationship or into threesomes, this is not going to work out. I can’t always say I have been the most honest in this area over the years, but I have learned from my mistakes. In a non-monogamous relationship, there needs to be huge amounts of trust, respect, and communication. Otherwise it’s just going to feel like cheating. In this situation, it is a really slippery slope. Do you really care for your girlfriend? Is the roommate the one you’d rather be with? Or do you really know? It’s a fact of nature: Women are competitive. Even friends — scratch that, especially friends — can be jealous of one another. So getting involved with the roommate may seriously fracture that relationship. It’s only a matter of time before your girlfriend finds what’s going on. When

she finds out, she’s probably going to flip out, especially since you’ve been seeing her roommate behind her back. What I would really suggest is to run, run away far. Sever all ties to these relationships. It’s not going to work out well in the end, and truthfully, can you really trust each other? She Said: Wow, not sure where to begin with this load of crap! Predictably minimized in the all the parts that matter and overly excused on the parts that are irrelevant – well done. Also in response to He Said’s opinion – I’m hoping most of you will recall the pictures of the fried egg that was supposed to be someone’s brain on drugs – guess who’s brain that was and you can be certain that same someone is very glad he lives in a country where everyone is allowed an opinion no matter how asinine it may be. LOL – I love this job Let’s start with the obvious – you are all drinking and partying to excess and as has been said by multitudes before me – judgement is the first thing to go! We see a great deal of pocket pets. They are wonderful pets for people who don’t have time for exercising or walking a dog or families that live in a condo or apartment with limited space. These pets can be a great way for children to learn the responsibilities of caring for a pet with out as much expense as a dog or cat. One caution with these little pets, they like to escape and get into drawers, hide in furniture and places that make them hard to find. The first lesson should be on how to close and secure their cages. Rats, Mice, Hamsters and Gerbils Rats, mice, hamsters and gerbils are all primarily seed eaters but rats, mice and particularly hamsters are also known to eat some insects. All of these species have long, continually growing incisors. The basic diet for this group should consist of a good quality rodent chow or lab block. These dry foods can be left in the cage at all times in a bowl or hanging feeder to be consumed as needed. However when we give them all the food they want all the time in one place in their cage it can be pretty boring! Try stuffing pellets or healthy treat foods in toys like small boxes or toilet paper rolls or plain white paper twisted closed at each end. Try hiding the food around the cage or exercise area so they have to forage for it. Something to remember, hamsters and gerbils are both nocturnal and will be the most active playing and eating at night. Don’t be surprised if they wake you up playing on their exercise wheel in the middle of the night. They don’t like to be played with or pestered if they are sleeping, they will bite! Other foods can be fed in addition to the commercial pellets but should not constitute more than 20% of the total diet. Fruit and vegetables can be offered at a rate of about 1 teaspoon/ day. All of these species love grains, nuts and seeds, but these foods should

be offered in small quantities because of their high fat content. A reasonable amount of nuts and or seeds would be a total of 1 teaspoon/day for rats and about ½ teaspoon for the other species. Ferrets Ferrets are strict carnivores. They have a short digestive tract. Ferrets have a minimum protein requirement of 32%, which necessitates a high quality dietary meat protein. Plant proteins are not digested and used by ferrets. In addition, they have a high fat requirement, around 20 to 30%. Ferrets use fat as their main energy source. They are poor digesters of fiber and they cannot utilize carbohydrates effectively for energy. It is a good idea to expose young ferrets to a variety of tastes and textures that will expand the foods they will eat later as an adult. Ferrets also like to swallow foreign objects. Examples would be ear plugs, buttons and earrings. Watch if they have run of the house that they don’t pick up things of that size. Unfortunately they won’t pass through their digestive tract but cause an obstruction and that could mean surgical removal of that object. The most natural diet for a ferret would be one that is comprised of whole prey. Ferrets can be fed either a high quality cat or ferret commercial diet. Look for a food that has at a minimum 32% and a maximum of 40% protein and at least 20% fat. Ferrets are highly intelligent hunters and it is only necessary to put the food in twice a day for 30 to 60 minutes and then remove it. In this way they will gain some mental stimulation looking forward to mealtime. Try putting the

food in different places and hiding it in their play area to give them a chance to “hunt” for it. In addition to the commercial diet, you can feed about a tablespoon of a good quality all-meat canned cat food. Avoid foods that have vegetables or grains in them. Some ferrets enjoy bits of fruit and vegetables such as green peppers, bananas, cucumbers and melons. These are not foods a ferret would normally encounter in the wild but in small amounts they are not harmful. Feed no more than 1 level teaspoon per ferret per day of a fruit or vegetable. They cannot digest fiber well, and if these items are fed in excess, they may develop diarrhea. Foods to completely avoid include breads, breakfast cereals, cakes, cookies and dried fruits such as raisins. These foods contain too much sugar, which can be damaging to the ferret’s pancreas. Even the smallest of pets can leave a paw print on your heart.

SEARED SALMON, RISOTTO WITH HERBS AND GREEK YOGURT UNCORKED THE PERFECT PAIRING

It’s easy to impress your guests with this salmon dish served on a bed of the creamiest risotto you’ll ever taste. The secret? Greek yogurt! Ingredients

• 1 small onion, finely chopped • Greek olive oil • 300 ml (1 1/3 cups) arborio rice • 60 ml (1/4 cup) white wine • 475 ml (2 cups) chicken or vegetable broth

• 130 g (1/4 lb.) salmon for a meal-

sized serving, 75 g per person as an appetizer • 1 nut of salted butter • 125 ml (1/2 cup) Plain Greek Yogurt • 2 or 3 kinds of fresh herbs (finely chopped) of your choice: flat parsley, chives, green onions, chervil, dill. • Salt and pepper

Preparation In a medium saucepan, sweat the onion in a bit of olive oil over medium-low heat and add the rice. Deglaze with white wine and top up with hot poultry or vegetable broth. Continue cooking over medium heat and let reduce. When most of the liquid has evaporated, top up again. Repeat this step until you reach your desired doneness (add more broth if necessary). Season halfway through. Remove from heat and let sit for a few minutes. Season the salmon with salt and cook in a non-stick pan in a bit of olive oil, until desired doneness (I suggest rare).

Add the nut of butter and yogurt to the risotto, remove from heat and garnish with fresh herbs. Place the salmon on a bed of risotto and drizzle with a bit of olive oil.
