This month we will look at more local food and more specifically a tropical fruit that’s as amazing as it is tasty! It’s the rambutan - a small, reddy-orange, hairy fruit which contains a delicious, fleshy interior. You must have come across it and wondered what it was, so we will answer your questions with an overview of this special little fruit! The three Gili Islands, composed of Gili Trawangan, Gili Meno and Gili Air are located off the northwest coast of Lombok. In Sasak language, "gili" means "small island. " There are more than 30 Gilis around Lombok but Trawangan, Meno and Air are by far the most frequently visited. Because of their proximity to the equator, they have a tropical climate throughout the year with an average air temperature of 28C and water temperatures ranging from 26 to 29C. The rainy season runs from November to April and the dry season from May to October. The Gilis bathe in the Bali Sea, at the convergence of the Indian and Pacific Oceans and enjoy a drier Gililife 18

micro-climate than the rest of Indonesia due in part to the fact that they are situated between two great volcanoes- Mount Rinjani on Lombok and Mount Agung on Bali. Like the majority of the Lombok community, the inhabitants of the Gili Islands are primarily Muslim and each island has a mosque(s) emitting sounds of live prayer five times daily. Bahasa Indonesia is the national language spoken that unites all of the country’s islands but Gili locals speak Sasak Gili Air which is slightly different to Sasak Lombok.About 200 years ago, fishermen from Sulawesi of Makassar, Bugis and Mandar ethnicities arrived on

the Gili Islands. They began to settle temporarily because of the abundance of fish in the sea and the presence of fresh water on Gili Air and at that time, sectioning off a bit of land with string was enough to claim it. These otherwise nomadic people began to settle in the Gilis and cultivate the land, planting peanuts, tapioca and corn whilst continuing their tradition of fishing. They sold and exchanged their produce in the markets of Lombok and also traded portions of their land for livestock, rice and other much needed items not native to the islands. Coconut palms are indigenous to the Gilis while mango, banana and papaya trees have been

introduced over the years. The first Western traveler to set foot on the Gili Islands came in 1984 to Gili Air. By the mid 1990’s Bali had gained international recognition as a travel destination and the Gilis began to be known as an off-the-beaten-track paradise escape. Today, the Gili Islands are flourishing and are attracting all types of visitors from every corner of the globe. Over time, the people of the Gili Islands have adapted to a multitude of changes and cultural immersions but have managed to maintain their cultural identity. Historically the people here have seen their days of hardship when during WWII, Lombok and the Gili Islands were occupied by Japanese forces. The islands were used to contain prisoners of war and the locals endured forced labour. A hill situated on the south of Trawangan was used as a lookout post and today remnants of the bunker still remain. Trawangan derived it's name from the Indonesian word "terowongan" meaning "tunnels" of which a network were dug by the occupying forces. The holes have since been filled in. Le premier étranger venu de l'occident est arrivé en 1984 à Gili Air et les premiers touristes, dans les années 90 lorsque Bali a acquis sa réputation mondiale ! Aujourd'hui, les îles Gilis sont de plus en plus populaires et séduisent un bon nombre de voyageurs venus de différentes horizons. Au fil du temps, les habitants des îles Gili se sont adaptés à une multitude de changements et d'immersions culturelles, mais ont réussi à conserver leur identité. Historiquement, ils ont vécu des moments difficiles. Pendant la Seconde Guerre mondiale, l'île de Lombok et les Gilis étaient occupées par les forces japonaises. Les îles ont été utilisées pour maintenir les prisonniers de guerre et les habitants ont subi le travail forcé. Une colline située au sud de Trawangan a été utilisée comme poste d'observation et aujourd'hui les vestiges d'un bunker demeurent. When you hear about Gili T you probably also hear the words "party island" yeah? Thought we should just address that straight away! Gili T gained this title because it is the largest of the three northern Gili Islands with the most development, hence it offers the greatest abundance of everything- including nightlife. There are fantastic parties every night of the week that attract large crowds of people from all different walks of life and every corner of the globe. Nightly features start with a sizzling local food market and advance into live music, beach parties and DJ's. There's also the option of watching movies screened at an open air beach "theatre." The rumored growth of Trawangan from a backpacker island into something of a glam island is supported by the unveiling Gililife 20

© ZHIVIRGO - Gililife of new upscale boutiques, restaurants, resorts, spas, and now a heli-pad, however, it remains a hub of charm for a wide spectrum of travelers. It's an iconic island of variety with numerous options for every budget/lifestyle for eating, sleeping (backpacker dorms to luxury villas), entertainment and activities. Gili T has extraordinarily beautiful beaches and shimmering ocean waters of crystal-clear visibility for diving and snorkeling. This island boasts some of the finest coral gardens and the widest range of dive centers with the best socializing opportunities. Although it is predominately known as a party island, Gili T has much more to it and venturing away from the densely developed east coast, you can find a plethora of vacant beaches. Renting a bicycle is a great way to see the island, bearing in mind there are some sandy patches! Seeing how life works here can be very eye-opening: it's not an escape from reality- just a slightly different one but understandably surreal nonetheless! There are several conservation organizations based here including Gili Eco Trust (GET) and The Gili Shark Foundation- ask around (try dive centers) about how you can get involved! As you may know- there is no motorized transport in the Gilis and what a soothing break that can be! Surfing is popular off the south and it's not unwise to speak to locals about the break. For a supreme viewpoint walk up the hill on the south that was previously used as a lookout during WW II.

Il est aussi possible de visionner des films en plein air. Trawangan est l'îlot du "Glam" avec ses resorts, ses spas, ses restaurants chics, ses boutiques et son héliport ! C'est la plaque tournante de charme pour un grand nombre de voyageurs. Trawangan est l'île du choix et convient à tous les budgets et à tous les styles de vie. Que vous soyez "routards" ou que vous recherchiez un logement de grand standing, tout est possible. La nourriture est très diverse et internationale, vous aurez aussi un grand choix d'activités et de divertissements ! Gili T possède de très belles plages aux eaux limpides et cristallines idéales pour la plongée et la balade aquatique en masque, palme, tuba (snorkeling).

Cette île possède quelques-uns des plus beaux jardins de corail et le plus grand nombre de centres de plongée. Bien qu'elle soit surtout connue comme une île "de fête", Gili T cache un nature dense et douce, aventurez-vous loin des côtes pour découvrir la magnifique cocoteraie ou les plages désertes de la côte ouest. N'ayant aucun transport motorisé aux îles Gilis, la location d'un vélo est un excellent moyen de découvrir l'île, et aussi une expérience aventureuse ! Set between Gili Air and Gili Trawangan, Gili Meno arguably offers the finest beaches of all the Gili Islands. The sands are white and soft beneath your feet and you can relax on vacant stretches of beach lined with coconut trees. Meno is the real escape to paradise where you can fill your days with activities like diving, snorkeling, surfing or just simply taking in the tranquil views. This island is a treasure of local lifestyle where time seems to bend and life seems to slow down. It is the least developed island where you can completely relax amongst abundant nature- Meno is a holiday within a holiday. Here you can walk or take a cidomo (horse&cart) to attractions such as the salt lake where it's possible to spot rare blue kingfishers and the elusive island monitor lizard, or venture to the eerie remnants of an abandoned resort- where a popular wreck-dive site exists just offshore. There are no bicycle rentals in Meno but it's possible to walk the island in an hour. Gili Meno offers great selections of local and western restaurants and most places serve a variety of the two. There are also traditional warungs

for popular local dish- nasi campur. There is a variety of accommodation on Meno and your options range from backpacker dorms, beachfront and village bungalows to luxury villas, apartments and resorts. There is also open air barugastyle accommodation for the true outdoorsmen- er, and women! Other points of interest on Meno include a bird park and the turtle conservation pools (which run entirely on donations). This island is primarily popular amongst couples and those seeking a more enlightening, recharging time. Yoga and meditation are up there with diving and honeymooning for making Gili Meno an ideal travel destination. In the past, Meno was said to have a mosquito problem but this is not the case- in the wet season there are normal levels of what you would expect in a tropical place, perhaps even less, and in the dry season- tidak apa apa- no problem!! ➜ Gili Meno is the island of sweet simplicity and nature where you will sigh with happiness Située entre Gili Air et Gili Trawangan, Gili Meno possède sans doute les plus belles plages de toutes les îles Gili . There are hundreds of different species belonging to the genus Acacia; sometimes a shrub, often a medium-sized tree, this plant has pinnate leaves, fragrant flowers and pod-like fruits. The name “acacia” comes from the Greek akis, (meaning thorn), because many species have sharp thorns on their branches. Le genre Acacia comprend des centaines de variétés d'espèces. FROG FISH

a magnificient and unfrequented dive site... FROG FISH, site magnifique et très peu fréquenté... A desire for a calm and unfrequented dive, full of marine life, where intact corals are abound? Dive at Frog Fish. A ballad which starts on a sandy bottom and which offers beautiful mountains of corals if you venture a bit further. But be ready also for amazing meetings. A Leaf Fish is playing hide-and-seek on the first pinnacle, a Malabar Grouper can surprise you at any time, while a school of Batfish are passing in the background. Really good dive also for macro, suitable to any diver but would fit more to "advance" and more with an average depth at 18-20 meters. Make sure that there isn’t any confusion! Knowing that dive centers attribute sometimes different site names, it is precisely about the dive site situated in the North of Han's Reef (also known as Frog Fish), in the North-East of Gili Air. Envie d'une plongée calme et peu fréquentée par les plongeurs, mais qui regorge de vie marine et où les coraux quasi intacts abondent. Plongez à Frog Fish. Une balade qui commence sur un fond sableux, et où en s'aventurant un peu, nous offre de magnifiques montagnes de corails. Mais soyez prêts aussi à faire des rencontres étonnantes. Un poisson feuille joue à cache-cache sur le premier pinacle, un mérou malabar peut vous surprendre à tout moment, alors qu'un banc de platax passe en arrière plan. Très bon site aussi pour la macro. Attention à la confusion ! Sachant que les centres de plongée attribuent des noms parfois différents, il s'agit là du site situé au nord de Hans' Reef (appelé souvent lui-même Frog Fish), donc à la pointe nord-est de Gili Air. Accessible à tout plongeur, mais davantage conseillé aux "advance" et plus, avec une profondeur moyenne de 18-20 mètres. Gililife 34

Spotted eagle rays belong to the family of Myliobatidae, together with the largest rays. They can grow up to 5 m in length with a wingspan of over 3 m and weigh up to 230 kg. They can be easily recognized by their flat white-spotted body on a dark blue/grey background. They have white wings, tail and stomach and some species have a beak-like mouth. Shy creatures, they are good and elegant swimmers, so that their way of moving in the water is often compared to the flight of a bird. They often swim close to the surface and can jump several metres out of the water if threatened. La raie léopard fait partie de la famille des Myliobatidae, dont font partie les plus grandes raies. Elle peut atteindre 5 m de longueur, 3 m d'envergure et peser jusqu'à 230 kg. On peut la reconnaître par son corps en losange et tacheté de points blancs sur un fond bleu/gris foncé. Les ailes, la queue et le ventre sont blancs ; dans certaines espèces, la bouche a la forme d'un bec. Animal timide, la raie est très bonne nageuse et sa façon élégante de bouger dans l'eau est souvent comparée au vol d'un oiseau. Elle aime nager près de la surface et peut sauter de plusieurs mètres au-dessus de l'eau si elle se sent menacée.

HABITAT

This cartilaginous fish usually swims in large groups; it is found in the open tropical oceans across the world and prefers to live close to bays and coastal reefs, at a depth up to 80m. Ce poisson cartilagineux aime nager en large groupes et se trouve dans les océans tropicaux du monde entier, souvent près de baies et récifs en proximité de la côte, à maximum 80 m de profondeur.

They also feed on small fish and worms. Les raies léopard ont des dents très puissantes qu'elles utilisent pour ouvrir la coque de mollusques et de crustacés, qui représentent la plupart de leur proie. Elles se nourrissent aussi de petits poissons et d'annélides.

The mating process of spotted manta rays involves a race, in which males chase the females until they can catch one and immobilize her. Females often mate with more than one male; they undergo a gestation period of around 1 year, after which they give birth to 2 to maximum 6

young. These rays attain maturity after about 5 years and can live up to 20 years. Spotted eagle rays are adapted to life in the ocean; their flat body allows them to float easily and thanks to their wings they can cover big distances and escape predators. Like their cousins the sharks, they have some specialized organs that they use to sense prey in the water. SNORKELING Turtles guaranteed! Beautiful corals and all kinds of fish! Tortues garanties ! De beaux coraux et des poissons de toutes sortes ! Snorkeling (mask, snorkel, fins) is a good way to freely explore the waters around Gili islands! You can see turtles, all kinds of fish, blue-spotted stingrays... Let yourself drift with the current, whilst being careful because sometimes it can be very strong! You can rent the equipment very easily on all three islands. Another alternative is a snorkeling trip - a day out on a boat. You leave in the morning around 9am for a full circuit of the Gilis, visiting the best snorkeling spots of the three islands. You stop for lunch and finish about 4pm. You can book this trip on site or at your hotel. Raise the soles of your feet to face upward so that your knees are wider than your shoulders. Hold on to your calves, back of the knees or your feet but be sure to keep your back down (no bums in the air!). Gently pull your knees toward the mat and offer your pelvis deep soothing breaths for a minute or more. To come out, hug your knees in to your chest and rest your feet back on the ground. Riding horses has always been a passion of mine, and I could enjoy it also during my visit in the Gilis! Here, you will find the Sumba horses, cute strong horses not higher than 1,40m! I contacted Ram and met Kading and Mesi, his beautiful horses. While Mesi is fast and young, Kading is 9 year old, calm and easygoing. He loves carrots, and I thought we would get along. We met in front of Legend bar and slowly started riding on the beach, admiring the view as the sun slowly set on Gili Air. I am not a beginner, but I guess it won't really matter, as these horses are

well-trained and the sandy path is easy and accessible to anyone. The tour lasted about 1 hour, perfect time for sunset and along the most unspoiled area of the island, to enjoy this horse riding experience at its best! L'équitation a toujours été ma passion et j'étais contente de pouvoir en pratiquer pendant mon séjour aux Gilis ! Ici, on trouve les chevaux de Sumba, des chevaux beaux et forts qui ne dépassent pas 1,40 m ! J'ai contacté Ram et rencontré Kading et Mesi, ses chevaux. Mesi est rapide et jeune, alors que Kading a 9 ans, il est calme et sympa. Il

adore les carottes et j'ai pensé qu'on pourrait en trouver en chemin. Nous nous sommes retrouvés en face du Legend Bar et nous sommes partis à cheval sur la plage, en admirant le soleil qui se couchait lentement. Je ne suis pas une débutante, mais je crois que cela n'est pas important, parce que ces chevaux sont bien apprivoisés et aimables avec tout le monde. Le tour a duré environ une heure, pendant le coucher de soleil et dans la partie la moins exploitée de l'île, ce qui m'a permis de profiter au mieux de cette expérience !

The Rambutan,

a small, hairy fruit with a soft heart.. Le ramboutan, un petit fruit velu au cœur tendre... The rambutan is a tropical fruit from Southeast Asia that is found in Indonesia. It is in the same family as lychees, longans and quenepas. All of them have a skin surrounding a juicy flesh and a seed. They are cylindrical or oval shaped. Le Ramboutan est un fruit tropical d’Asie du Sud Est que l’on trouve en Indonésie. Il est de la même famille que les litchis, les longanes et les quenettes. Tous sont constitués de la même manière : une peau qui enrobe une chair juteuse et d’un noyau. Ils sont tous de forme cylindrique ou ovale.

Rambutan comes from the word "Rambut" which means hair in Indonesian. Why such a name? Well, it is easy to guess, look at this little fruit and you’ll see why! Lined on all sides by relatively long fibrous growths which are soft to the touch, you might think that this fruit has hair! Its hairy appearance might make it a little inelegant or strange but actually, this mysterious fruit is simply the cousin of the lychee, who’s bald! So don’t stop at its "ram-butante" appearance – it’s a pretty little hairy fruit, with tempting and warm colours, containing firm and juicy flesh and certain flavours you will recognise! Rambutan, open your heart, show us your gustatory qualities and enliven our taste buds! The rambutan is a small fruit about 6cm long and oval in shape. It looks like a lychee. Its skin is thick and Gililife 50

hairy as mentioned above. It grows on the rambutan, a bushy, evergreen tree with the same name as its fruit. This tree can grow 15-25m high! The fruits grow in a cluster form. There are none on the Gili Islands, but they can be found in Lombok. During harvest it’s common to see lots of rambutan branches sold in bulk by the kilo. Why not stop for a moment of negotiation in a typical setting! Within this "hairy" fortress, the rambutan hides a white, translucent flesh that really contrasts with the orange-red skin. This is the edible part. The flesh sticks to the brown seed and the latter is less smooth. The seed is a kind of almond which can be eaten and is very popular grilled. They say it’s a mild narcotic. The oil that is extracted from the seed is used to manufacture soap and candles.

The tree takes between 5 and 6 years to produce fruit and matures at the age of 8 years when it can produce about 200kg of rambutans. It blooms from March to June and produces fruit from September to December. The rambutan produces clusters of flowers without petals that will themselves produce fruit in a cluster. The world's main producers are Thailand and French Guiana but the fruit is mainly from Malaysia and Indonesia. It is a tree that does not cope well with frost, so it’s very difficult to sow in non-tropical climates. Rambutans like heat and humidity! The taste of rambutan is a mix between lychee and grape; it is slightly juicy and its flesh is firm but nonetheless refreshing and sweet! It contains glucose, iron, potassium and vitamin C. It has a high water content so it helps fight against fatigue, dizziness and anemia. It can prevent worms and is also used in a decoction to relieve diarrhoea and fevers. The leaves are applied as a poultice on the temples to relieve headaches. Ramboutan provient du mot « Rambut » qui veut dire cheveu en Indonésien. Pourquoi une telle appellation ? Et bien c’est facile à deviner, regardez ce petit fruit et vous trouverez la réponse ! Garni de toute part par des excroissances fibreuses assez longues mais qui ne piquent pas, on pourrait penser que ce fruit possède des cheveux ou des poils ! Son apparence velue le rend un peu disgracieux ou étrange alors que bien au contraire, ce fruit mystérieux est tout simplement le cousin du litchi qui lui est complètement dégarni...

une sorte d’amande qui peut être mangée et qui est très appréciée grillée. Elle serait légèrement narcotique... L’huile que l’on extrait du noyau entre dans la confection de savons et de bougies. L’arbre met entre 5 et 6 ans avant de produire ses fruits et atteint sa maturité à l’âge de 8 ans où il peut produire environ 200 Kg de ramboutans. Sa floraison s’étend de Mars à Juin et sa fructification de Septembre à Décembre. Le Ramboutan fabrique des fleurs sans pétales en grappe qui donneront naissance aux fruits eux mêmes sous forme de grappe. Les principaux producteurs mondiaux sont la Thaïlande et la Guyane française mais le fruit est principalement originaire de Malaisie et d’Indonésie. C’est un arbre qui ne supporte pas bien le gel, il est donc très difficile de l’implanter dans des zones qui ne sont pas tropicales. Le Ramboutan aime la chaleur et l’humidité ! Le gout du Ramboutan est un mélange entre le litchi et le raisin, il est légèrement juteux, sa chair est ferme mais il en reste pas moins rafraichissant et sucré ! Il contient du glucose, du fer, du potassium et de la vitamine C. C’est un aliment gorgé d’eau qui aide à lutter contre la fatigue, les vertiges et l’anémie. Il agit aussi comme un vermifuge et il est également utilisé en décoction pour soulager la diarrhée et apaiser les fièvres. Les feuilles sont appliquées en cataplasme sur les tempes pour soulager les maux de tête.

Alors, ne vous arrêtez pas à son apparence « rambutante », c’est un joli petit fruit velu, aux couleurs attrayantes et chaleureuses, à la chair ferme et juteuse dont vous reconnaitrez certaines saveurs ! Ramboutan, ouvre-nous ton cœur et montre nous tes qualités gustatives et égaye nos papilles ! Le ramboutan est un petit fruit d’environ 6 cm de longueur et de forme ovale. Il ressemble énormément au litchi. Sa peau est épaisse et velue comme nous avons pu le dire au dessus. Il pousse sur le Ramboutan, arbre touffu aux feuilles persistantes portant le même nom que son fruit. Cet arbre peut atteindre jusqu’à 1525 m de hauteur ! Les fruits y poussent sous forme de grappe. Il n’y en a pas sur les îles Gili mais on peut en trouver à Lombok. Pendant la récolte il n’est pas rare de voir sur les étals des tas de branches de ramboutans vendus au kilo en vrac. Arrêtez-vous pour un moment de négociation dans un décor typique ! Le ramboutan renferme à l’intérieur de cette forteresse « poilue » une chair blanche et translucide qui contraste vraiment avec le rouge orangé de la peau. C’est cette partie qui est comestible. La chair adhère au noyau brun qui est moins lisse que ce dernier. Le noyau est 51 Gililife

Duck Red Curry with Rambutans Curry rouge de canard aux ramboutans

It’s a delicate fruit that is picked only when completely ripe. It keeps only a few days, so it is best to consume it quickly. When the hairs turn black, it’s too old. It’s eaten cool, with the skin slightly cut to get the flesh out, or cooked in a sauce, a jam, or a sweet savoury dish or even dried. C’est un fruit fragile qui n’est cueilli que complètement mûr. Il ne se conserve que quelques jours, il vaut mieux le consommer rapidement. Lorsque les poils noircissent, il est trop mur. Il se déguste frais et nature en entaillant légèrement la peau pour en extraire la chair ou bien cuit, en compote, confiture, dans un plat sucré salé ou bien séché.

Ingredients / Serves 4

- 2 duck breasts (about 500g) - 1 tablespoon chili oil - 2 tablespoons soy sauce - 5cm of fresh grated ginger - 1 garlic clove, finely chopped - nutmeg - white pepper - 1 tbsp sunflower oil - 1-2 tablespoons red curry paste - 500 ml vegetable stock - 500 ml coconut milk - 1 tablespoon fish sauce - 1 tablespoon palm sugar - 4 kaffir lime leaves cut into 2 - 200g peeled, pitted rambutans cut into 2 - 8-10 cherry tomatoes - 2 tablespoons of bamboo shoots - thai basil and pepper for decoration - 2 magrets de canard (environ 500 g) - 1 cuillère à soupe d’huile au piment - 2 cuillères à soupe de sauce soja - 5 cm de gingembre frais râpé - 1 gousse d’ail émincée - noix de muscade - poivre blanc - 1 cuillère à soupe d’huile de tournesol - 1-2 cuillères à soupe de pâte de curry rouge - 5 dl de bouillon de légumes - 5 dl de lait de coco - 1 cuillère à soupe de sauce poisson - 1 cuillère à soupe de sucre de palme - 4 feuilles de kafir lime coupées en 2 - 200 g de ramboutans pelés dénoyautés et coupés en 2 - 8-10 tomates cherry - 2 cuillères à soupe de pousses de bambou - basilic thaï et piment pour décoration Gililife 52

Method Préparation

First remove the oily duck skin. Once the fat is removed, cut the duck breast into thin strips. Mix them with oil, soy sauce, grated ginger, and garlic. Spice with a little nutmeg and white pepper and leave to marinate for one hour in the fridge. Heat the oil in a wok and fry the curry paste for 2-3 minutes. Add the marinated meat and sear quickly for 2-3 minutes. Add the stock, then the coconut milk, fish sauce, palm sugar and kaffir lime leaves. Cook for 5 minutes then add the rambutan, tomatoes and bamboo shoots and cook everything for 1-2 minutes. The rambutans and tomatoes do not have to break up but simply heat through. Garnish with basil and a few slices of peppers then serve. Commencer par retirer la peau grasse du magret. Une fois dégraissé, couper le magret de canard en fines lanières. Mélanger-les avec l’huile, la sauce soja, le gingembre râpé, l’ail. Epicez avec un peu de noix de muscade et de poivre blanc et laissez mariner le tout une heure au frigo. Chauffer l’huile dans le wok et faites revenir la pâte de curry 2-3 minutes. Ajouter la viande marinée et saisissez la rapidement pendant 2-3 minutes. Mouiller avec le bouillon, puis ajouter le lait de coco, la sauce poisson, le sucre de palme et les feuilles de kéfir lime. Laisser cuire 5 minutes environ puis ajouter les ramboutans, les tomates et les pousses de bambou puis faire cuire le tout pendant 1-2 minutes. Les ramboutans et tomates ne doivent pas se défaire mais juste chauffer. Décorer avec le basilic et quelques rondelles de piments, servir.

Sasak people are originally from Lombok, where they represent the majority of the population. Ethnically related to the Balinese, they speak Sasak, a distinct language that has 9 different varieties. The Sasak language spoken in the Gilis is known as Gangga (Kutó-kuté). Sasak possesses a system of speech levels and, as Balinese and Javanese, social classes are reflected in lexical differences. In fact, Since the 14th century, Sasak society has been divided into castes. Intermarriage is allowed but a woman who marries a man of a lower caste loses her status. From the 16th century, the Sasak adopted a syncretic form of Islam (wetu telu), which blends Hindu-Bhuddist influences, Sunni Islam, animism and ancestral Gililife 54

worship. Today, Sasak are known for their traditional pottery, that is the famous technique of “turun temurun”, the typical architecture, namely the pile-built rice barn called “lumbung” and, of course, the “gendang beleq”, the Sasak version of the Balinese gamelan, a dance and music performance featuring drums, flutes and cymbals. Built in the 16th century, the Bayan Mosque is the oldest mosque in Lombok. It has woven bamboo walls and is built on stone foundation. Warung is one of the words in Bahasa Indonesian you are likely to hear more often. Meaning “small restaurant”, in Indonesia and in Malaysia a warung is an institution that indicates local food at a cheap price and in a familiar atmosphere. This word does not indicate the speed the meal will be served and it can be a fast food restaurant or a slow pace one according to what you decide to eat. If you go for nasi campur (mix rice), you will just have to pick what you want from the dishes on display and eat it right away. If you go for the warung best sellers such as mie goreng (fried noodles), nasi goreng (fried rice) or soto ayam (chicken soup), you will have the time to crack into a couple of krupuk (rice crackers) and burn your lips sipping a teh manis panas (sweetened hot tea) before you get served. In case you are daring and order some Western dish on the menu, you may end up spending the whole day in the warung and eventually become a member of the local family who run the place!

METHOD - PREPARATION Peel and cut small the curcuma and ginger. In the blender bowl, pour the curcuma, ginger, tamarin and lime juice, then mix on full power. Add the honey and water then mix again. Filter the juice and keep in the fridge. Eplucher et découper en petits cubes le curcuma et le gingembre. Dans le bol du mixeur, verser le curcuma, le gingembre, le tamarin et le jus de citron, mixer à pleine puissance. Ajouter l’eau et le miel puis mixer à nouveau. The rambutan of the sea Le ramboutan de la mer

nce upon a time, there was a small sea urchin that lived alone in a dark crevice at the bottom of the sea. He would look with sadness at pretty fish who did not want to approach him, for fear of being stringed by its spines. But one day, he saw a strange purple, oval shaped object sinking, with soft skin and sweet fragrance. The little sea urchin had never seen a sphere as beautiful and approached it. It was a grape that had escaped from a tourist’s lunchbox. The grape got pricked on its spines, and it was love at first sight! The sea urchin became pink with joy and his quills became as soft as silk: he had turned into a cute and colourful rambutan! Rising to the surface, he floated to the shore and with its thousands of little feet; he rolled and climbed the land. As he could no longer live in the sea, what would he do? He found a crevice and lodged there comfortably. With time he turned into a beautiful tree and produced many red berries that tasted just like grape, and he was affectionately named "rambutan", the hairy fruit. Il était une fois un petit oursin au fond de la mer qui vivait tout seul dans une sombre crevasse. Il regardait avec tristesse les jolis poissons qui ne voulaient pas l’approcher, de peur de se faire piquer. Mais un jour, il vit couler un étrange objet, ovale, violacé à la peau douce et au parfum sucré. Le petit oursin n’avait jamais vu une sphère aussi belle et alla à sa rencontre. Il s’agissait d’un grain de raisin qu’un vacancier avait laissé s’échapper de son déjeuner. Le raisin se piqua à l’oursin, et se fut le coup de foudre immédiat ! L’oursin en devint rose de joie et ses piquants devinrent doux comme de la soie : il était devenu un joli ramboutan ! Remontant à la surface, il se laissa porter vers le rivage et avec ses milliers de petites pattes, il remonta les terres tout doucement en roulant. Il ne pouvait plus vivre dans la mer, mais qu’allait-il donc faire ? Il se trouva une crevasse et s’y logea confortablement. Avec le temps il se transforma en un bel arbre et produisit de nombreux petits fruits rouges au goût de raisin que l’on nomma affectueusement « ramboutan », les fruits chevelus.

There are cidomos (horse and cart) available for hire on the three islands and bicycle rentals on GILI T, Gili Air and now Gili meno. Vous pouvez vous déplacer en Cidomo (charrette à cheval) sur les 3 îles ou louer un vélo sur Gili T, Gili Air et maintenant à Gili Meno

On Gili Air public boats leave to Lombok starting at 7:30am. Meno to Lombok, twice a day, at 8am and 3pm. And on Gili T starting at 7am until 5pm. Sur Gili Air les bateaux publics partent vers Lombok à partir de 7h30. Sur Gili Meno, deux fois par jour à 8h et 15h. Sur Gili T à partir de 7h du matin jusqu'à 17 h.

Sometimes there are power cuts on the 3 islands but the resorts have generators.

INTERNET - WIFI Internet cafes are in abundance on Gili T- mainly on the developed east. On Gili Air there are 3 internet cafes and there are 2 on Meno (see map for locations). WIFI is available on all three islands at a variety of restaurants and resorts. Il y a de nombreux "internet café" sur Gili T, principalement à l'est. HEALTH - SANTE There are clinics on all three Gili Islands (see maps) offering basic treatments and medicines. For serious ailments there are hospitals (rumah sakit) and dentists in Lombok (see directory). IDR - RUPIAH You can change your foreign currency and pay by debit/

credit card in most dive centers and resort hotels, however, cash remains the only form of payment for most accommodation/food in The Gili's. Vous pouvez changer vos devises et payer par carte dans la plupart des centres de plongée et hôtels, cependant, l'espèce reste la forme de paiement la plus courante.

BEWARE DON'T SWIM BETWEEN THE ISLANDS Bear in mind that the Gili Islands are exposed to open oceans and can have incredibly strong currents running between and around them, and trade winds which create choppy seas. For this reason- always check daily conditions before commencing oceanic sports and know that it is NOT recommended to swim between the islands no matter your skill level.
