An history full of flavour EN - Is it hard to imagine to what extent spices have influenced the history of humanity. Once a prized delicacy, today a common commodity with an exotic taste, spices have made the world go round for centuries. Spices have caused wars and colonisations, moved armies, herds of camels and of merchants, tickled palates of any ethnic group and social class and revolutionised international trade several times throughout history. With its immense supply of nutmeg and cloves, Indonesia was once the epicentre of the spice trade and, even in today's globalized world, Indonesian spices have a privileged place! FR - Il est difficile d'imaginer jusqu'à quel point les épices ont influencé l'histoire de l'humanité. Autrefois considérées comme une délicatesse très convoitée, aujourd'hui comme une marchandise courante au goût exotique, les épices ont fait tourner le monde pendant des siècles. Elles ont causé des guerres et des colonisations, ont fait déplacer des armées, des troupeaux de chameaux et de marchands; elles ont chatouillé les palais de personnes de tous groupes ethniques et classe sociale et elles ont plusieurs fois révolutionné le commerce international. En raison de l'immense disponibilité de noix de muscade et de clous de girofle, l'Indonésie était l'épicentre du commerce des épices et, même dans le contexte mondialisé actuel, les épices indonésiennes ont une place privilégiée.

The three Gili Islands, composed of Gili Trawangan, Gili Meno and Gili Air are located off the northwest coast of Lombok. In Sasak language, "gili" means "small island. " There are more than 30 Gilis around Lombok but Trawangan, Meno and Air are by far the most frequently visited. Because of their proximity to the equator, they have a tropical climate throughout the year with an average air temperature of 28C and water temperatures ranging from 26 to 29C. The rainy season runs from November to April and the dry season from May to October. The Gilis bathe in the Bali Sea, at the convergence of the Indian and Pacific Oceans and enjoy a drier Gililife 20

micro-climate than the rest of Indonesia due in part to the fact that they are situated between two great volcanoes- Mount Rinjani on Lombok and Mount Agung on Bali. Like the majority of the Lombok community, the inhabitants of the Gili Islands are primarily Muslim and each island has a mosque(s) emitting sounds of live prayer five times daily. Bahasa Indonesia is the national language spoken that unites all of the country’s islands but Gili locals speak Sasak Gili Air which is slightly different to Sasak Lombok.About 200 years ago, fishermen from Sulawesi of Makassar, Bugis and Mandar ethnicities arrived on

the Gili Islands. They began to settle temporarily because of the abundance of fish in the sea and the presence of fresh water on Gili Air and at that time, sectioning off a bit of land with string was enough to claim it. These otherwise nomadic people began to settle in the Gilis and cultivate the land, planting peanuts, tapioca and corn whilst continuing their tradition of fishing. They sold and exchanged their produce in the markets of Lombok and also traded portions of their land for livestock, rice and other much needed items not native to the islands. Coconut palms are indigenous to the Gilis while mango, banana and papaya trees have been

introduced over the years. The first Western traveler to set foot on the Gili Islands came in 1984 to Gili Air. By the mid 1990’s Bali had gained international recognition as a travel destination and the Gilis began to be known as an off-the-beaten-track paradise escape. Today, the Gili Islands are flourishing and are attracting all types of visitors from every corner of the globe. Over time, the people of the Gili Islands have adapted to a multitude of changes and cultural immersions but have managed to maintain their cultural identity. Historically the people here have seen their days of hardship when during WWII, Lombok and the Gili Islands were occupied by Japanese forces. The islands were used to contain prisoners of war and the locals endured forced labour. A hill situated on the south of Trawangan was used as a lookout post and today remnants of the bunker still remain. Trawangan derived it's name from the Indonesian word "terowongan" meaning "tunnels" of which a network were dug by the occupying forces. The holes have since been filled in. Les cocotiers ont toujours été présents sur les îles, les mangues, bananes et papayes sont venues plus tard. Le premier étranger venu de l'occident est arrivé en 1984 à Gili Air et les premiers touristes, dans les années 90 lorsque Bali a acquis sa réputation mondiale ! Aujourd'hui, les îles Gilis sont de plus en plus populaires et séduisent un bon nombre de voyageurs venus de différentes horizons. Au fil du temps, les habitants des îles Gili se sont adaptés à une multitude de changements et d'immersions culturelles, mais ont réussi à conserver leur identité. Historiquement, ils ont vécu des moments difficiles. Pendant la Seconde Guerre mondiale, l'île de Lombok et les Gilis étaient occupées par les forces japonaises. Les îles ont été utilisées pour maintenir les prisonniers de guerre et les habitants ont subi le travail forcé. Une colline située au sud de Trawangan a été utilisée comme poste d'observation et aujourd'hui les vestiges d'un bunker demeurent. When you hear about Gili T you probably also hear the words "party island" yeah? Thought we should just address that straight away! Gili T gained this title because it is the largest of the three northern Gili Islands with the most development, hence it offers the greatest abundance of everything- including nightlife. There are fantastic parties every night of the week that attract large crowds of people from all different walks of life and every corner of the globe. Nightly features start with a sizzling local food market and advance into live music, beach parties and DJ's. There's also the option of watching movies screened at an open air beach "theatre." The rumored growth of Trawangan from a backpacker island into something of a glam island is supported by the unveiling Gililife 22

of new upscale boutiques, restaurants, resorts, spas, and now a heli-pad, however, it remains a hub of charm for a wide spectrum of travelers. It's an iconic island of variety with numerous options for every budget/lifestyle for eating, sleeping (backpacker dorms to luxury villas), entertainment and activities. Gili T has extraordinarily beautiful beaches and shimmering ocean waters of crystal-clear visibility for diving and snorkeling. This island boasts some of the finest coral gardens and the widest range of dive centers with the best socializing opportunities. Although it is predominately known as a party island, Gili T has much more to it and venturing away from the densely developed east coast, you can find a plethora of vacant beaches. Renting a bicycle is a great way to see the island, bearing in mind there are some sandy patches! Seeing how life works here can be very eye-opening: it's not an escape from reality- just a slightly different one but understandably surreal nonetheless! There are several conservation organizations based here including Gili Eco Trust (GET) and The Gili Shark Foundation- ask around (try dive centers) about how you can get involved! As you may know- there is no motorized transport in the Gilis and what a soothing break that can be! Surfing is popular off the south and it's not unwise to speak to locals about the break. For a supreme viewpoint walk up the hill on the south that was previously used as a lookout during WW II.

➜ Gili T is the spicy island of pizzazz with something for absolutely everyone!

Bien qu'elle soit surtout connue comme une île "de fête", Gili T cache un nature dense et douce, aventurez-vous loin des côtes pour découvrir la magnifique cocoteraie ou les plages désertes de la côte ouest. N'ayant aucun transport motorisé aux îles Gilis, la location d'un vélo est un excellent moyen de découvrir l'île, et aussi une expérience aventureuse ! La vie ici est surréaliste, c'est un mélange d'exotisme et de vie occidentale ! Il existe plusieurs organisations de conservation sur Gili T comme Gili Eco Trust (GET), Gili Shark Fondation et bien d'autres... Demandez autour de vous, dans les centres de plongée comment vous impliquer ! Pour un point de vue suprême, marchez jusqu'à la colline au sud, vous y trouverez un vestige (une batterie d'artillerie) de la seconde guerre mondiale.

Set between Gili Air and Gili Trawangan, Gili Meno arguably offers the finest beaches of all the Gili Islands. The sands are white and soft beneath your feet and you can relax on vacant stretches of beach lined with coconut trees. Meno is the real escape to paradise where you can fill your days with activities like diving, snorkeling, surfing or just simply taking in the tranquil views. This island is a treasure of local lifestyle where time seems to bend and life seems to slow down. It is the least developed island where you can completely relax amongst abundant nature- Meno is a holiday within a holiday. Here you can walk or take a cidomo (horse&cart) to attractions such as the salt lake where it's possible to spot rare blue kingfishers and the elusive island monitor lizard, or venture to the eerie remnants of an abandoned resort- where a popular wreck-dive site exists just offshore. There are no bicycle rentals in Meno but it's possible to walk the island in an hour. Gili Meno offers great selections of local and western restaurants and most places serve a variety of the two. There is also open air barugastyle accommodation for the true outdoorsmen- er, and women! Other points of interest on Meno include a bird park and the turtle conservation pools (which run entirely on donations). This island is primarily popular amongst couples and those seeking a more enlightening, recharging time. Yoga and meditation are up there with diving and honeymooning for making Gili Meno an ideal travel destination. In the past, Meno was said to have a mosquito problem but this is not the case- in the wet season there are normal levels of what you would expect in a tropical place, perhaps even less, and in the dry season- tidak apa apa- no problem!!

Il y a aussi les warungs (restaurants traditionnels) pour les populaires plats locaux comme le Nasi Campur. Autres points d'intérêt sur Meno, le parc aux oiseaux (Bird Park) et le centre de conservation des tortues (Meno Turtle Conservation), essentiellement

The closest island to Lombok, Gili Air is aptly named after the Indonesian word "air" meaning "water." It is the only Gili Island to have natural underground fresh water wells. Gili Air is gem of a spot that allows you to sample the best of both worlds of the Gili Islands- it has the relaxing charm of Gili Meno and a bit of the night life of Gili Trawangan. Here you can take it fast or slow and enjoy an abundance of water sports from diving to surfing to kiteboarding and land activities such as yoga and cycling. The Tamarind is one of the few large trees that grow in the Gilis. This tree has dense foliage and makes great shade on a sunny day. Furthermore, its fruit, commonly known as pod and contained in a curved hard shell, has uncountable culinary uses and medical qualities. Le tamarinier est un des rares grands arbres qu'on trouve aux Gilis. Cet arbre a un feuillage très dense, c'est un arbre d'ombrage. Son fruit, appelé tamarin, pousse dans une coque en forme d'haricot et a d'innombrables applications culinaires et médicales.

The tree - L'arbre The Tamarindus indica is an evergreen tropical tree native to Africa and that is widespread in tropical regions. It can grow up to 18 metres and can be recognized by its dropping branches, wide crown and tiny bright green leaves that close at night. It is a very strong tree that can grow in many kinds of soil and resists drought. Le Tamarindus indica est un arbre tropical à feuilles persistantes originaire de l'Afrique et répandu dans les régions tropicales. Il peut pousser jusqu'à 18 mètres et on peut le reconnaître par ses branches ramifiées et ses petites feuilles d'un vert brillant qui se ferment pendant la nuit. Immature and very sour pods are cooked with rice and meat to make amazing curries, whereas fully ripe fruits are eaten as a snack and transformed into yummy jams and refreshing juices. The tamarind has uncountable medicinal uses and is supplied to Europe and North America to be used in the pharmaceutical industry. Universally recognized as a good treatment for fever and as a laxative, it is also a great digestive. Direct application of the pulp is used to treat inflammations and rheumatisms. Seeds are used to treat diarrhea, leaves and flowers for conjunctivitis and hemorrhoids and the bark is used as a remedy for colics. The GIDA is a non-profit organisation originally launched by Big Bubble Dive, whose goal is to guarantee that high-safety diving standards are implemented in the Gilis. Behind the payment of an annual fee, member dive shops become part of a community of environmentally aware businesses who work together to promote safe and responsible diving, limit divers' environmental footprint and who help each other - free of charge - in case of emergency, thus maintaining high the reputation of the Gilis. All GIDA members are required to follow a series of rules such as not to dive in unsafe weather conditions, have a minimum number of staff on the boat, do not exceed advised boat speed and pick up anyone in need

of help in the water. Diving with a GIDA member is a guarantee of professional, safe and experienced services. Look for the logo displayed on the dive shop and go diving! Edwin from Blue Marlin is currently one of GIDA's two managers, who rotate every year; Anna from Big Bubble founded the organisation and continues to be involved, ensuring that safety measures are kept up to date and relevant. Edwin de Blue Marlin est actuellement un des deux manageurs de GIDA, qui s'alternent chaque année. Qu'est-ce que GIDA signifie pour vous ? Diving is a very safe sport, but you have to be careful. To us, GIDA means admitting that all divers to the island are our responsibility, no matter whom they chose to dive with. We all run our dive shop in our own way, but the safety standards are all up to the same level and we all work to protect divers from having any bad experiences. We have a joint emergency system, so in case something happens, there is a network of phone calls on how to deal with the situation and everybody is involved very quickly. We go out and help GIDA members without any charge.

Pour nous, GIDA signifie que nous sommes responsables de tous les plongeurs sur l'île, indépendamment du centre avec qui ils décident de plonger. How many dive shops are members of GIDA? Combien de centres de plongée font partie de GIDA ? At first we were 9 shops, now we are 17. The fact that more and more shops are joining make it more challenging to maintain a good relationship, keep the standards going and help each other when we can. At the moment we only cover Gili Trawangan; we are in contact with the shops in Gili Air and Gili Meno, but it would be easier and good to have only one organization for all the three islands to enforce the same safety standards for all. Au début on était 9 centres, maintenant on est 17. L'adhésion de plus en plus de centres rend difficile de maintenir des bonnes relations, de faire respecter les normes et de s'entre-aider. Actuellement on ne couvre que Gili Trawangan, nous sommes en contact avec les centres de Gili Air et Gili Meno, mais il serait plus simple et positif de disposer d'une seule organisation pour les trois îles et appliquer les mêmes normes de sécurité partout.

Richard, GIDA's independent advisor on safety standards and procedures, likes testing new rescue devices to introduce in the Gilis. The latest devices include custom-made prop guards, which protect people who swim close to the boat and the propeller of the boat from being damaged if it hits the bottom. He is also testing a laser pen used for sea and air rescue, which has a long distance night visibility. FROG FISH

a magnificient and unfrequented dive site... FROG FISH, site magnifique et très peu fréquenté...

A desire for a calm and unfrequented dive, full of marine life, where intact corals are abound? Dive at Frog Fish. A ballad which starts on a sandy bottom and which offers beautiful mountains of corals if you venture a bit further. But be ready also for amazing meetings. A Leaf Fish is playing hide-and-seek on the first pinnacle, a Malabar Grouper can surprise you at any time, while a school of Batfish are passing in the background. Really good dive also for macro, suitable to any diver but would fit more to "advance" and more with an average depth at 18-20 meters. Make sure that there isn’t any confusion! Knowing that dive centers attribute sometimes different site names, it is precisely about the dive site situated in the North of Han's Reef (also known as Frog Fish), in the North-East of Gili Air. Envie d'une plongée calme et peu fréquentée par les plongeurs, mais qui regorge de vie marine et où les coraux quasi intacts abondent... Plongez à Frog Fish. Une balade qui commence sur un fond sableux, et où en s'aventurant un peu nous offre de magnifiques montagnes de corails. Soyez prêts à faire des rencontres étonnantes ! Un poisson feuille joue à cache-cache sur le premier pinacle, un mérou malabar peut vous surprendre à tout moment, alors qu'un banc de platax passe en arrière plan. Très bon site aussi pour la macro. Attention à la confusion ! Sachant que les centres de plongée attribuent des noms parfois différents, il s'agit là du site situé au nord de Hans's Reef (appelé souvent lui-même Frog Fish), donc à la pointe nord-est de Gili Air. Accessible à tout plongeur, mais davantage conseillé aux "advanced" et plus, avec une profondeur moyenne de 18-20 mètres.

Connaissez-vous le Bénitier Géant ?

The giant clam is the largest bivalve on Earth and the heaviest living mollusc, as it can reach more than 1 metre of length and weight almost 300 kg. Its shell is very thick and composed of two valves that do not close completely and that are connected by a strong muscle allowing them to open and close. The mantle, visible from the outside, is incredibly colourful with a few clearer spots, known as “windows” from where the sunlight filters in. The clam filters seawater through two holes, or siphons, that act as a inhalant and exhalant respectively. Son coquillage est très épais et il est composé de deux valves qui ne se ferment pas complètement et qui sont connectés par un muscle très puissant qui lui permet de s'ouvrir et de se fermer. Le manteau, visible de l'extérieur, est brillamment coloré et présente des taches plus claires, hérissées qui permettent à la lumière du soleil de passer. Habitat

Giant clams live in the South IndoPacific Ocean, in shallow flat coral sand bottoms at a maximum depth of 20 mt. Les bénitiers géants affectent le sud de l'océan Indo-pacifique et vivent dans les fond sableux peu profonds à une profondeur maximale de 20 mètres.

DIET - alimentation

Giant clams obtain most of the nutrients they need from the symbiotic relationship they have with zooxanthellae, namely microscopic photosynthetic algae that provide nutrients to the clam in exchange of protection. Snorkeling (mask, snorkel, fins) is a good way to freely explore the waters around Gili islands! You can see turtles, all kinds of fish, blue-spotted stingrays... Let yourself drift with the current, whilst being careful because sometimes it can be very strong! You can rent the equipment very easily on all three islands. Another alternative is a snorkeling trip - a day out on a boat. You leave in the morning around 9am for a full circuit of the Gilis, visiting the best snorkeling spots of the three islands. You stop for lunch and finish about 4pm. You can book this trip on site or at your hotel. Le snorkeling (masque, tuba, palmes) est un bon moyen d'explorer les fonds marins des îles Gili en toute liberté ! Vous partez le matin vers 9h pour un tour complet des Gilis, en visitant les meilleurs spots de snorkeling des trois îles. Vous vous arrêtez pour le déjeuner et rentrez vers 16h. Vous pouvez réserver cette sortie en mer sur place ou à votre hôtel.

Ear candling has been praised as the panacea for almost every problem of the ears, the head and the entire body. However, for those who have never experienced this treatment, it may sound as something quite interesting and bizarre. I am one of the skeptical ones and I often wondered how a burning cone stuck in your ears can remove the ear wax stored deep down your ear canal and at the same time purify your spirit. However, this is actually a relaxing treatment and the finest way to remove the sticky yellowish dirt that prevents you to hear properly. The origins of ear candling are not clear. Some sources claim this technique was diffused among the ancient peoples of Tibet and China, evidence shows that ear candling was practiced in Egypt over 2000 years BC and different varieties of ear candling were performed by some American Indian tribes. Ear candling was also largely diffused among the Greeks who, like ancient civilizations in the Americas and in Asia, believed this treatment was a process of purification of the body as well as of the spirit and was performed before initiation rites and rituals. Since the domestication of the honeybee and the availability of wax, candles have been of fabric soaked in wax and made into a cone-shape in order to be inserted in the ear canal. The cones are around 15 cm long and 8 cm in diameter and, once lit, they take around 15 min to burn. The patient is usually laying on one side and a towel covers the shoulders and the area around the ears to prevent the fire to touch the skin. Apparently, not only does this treatment clean the ear canal and prevents ear inflammations, but, if underwent regularly, it purifies the mind and opens and aligns all the chakras!

Les cônes sont d'environ 15 cm de longueur et 8 cm de diamètre.Une fois allumés, il brûlent pendant 15 minutes. En général, le patient est allongé de coté, une serviette couvre ses épaules et la zone autour des oreilles pour éviter que le feu touche la peau. My ear wax was not leaking down my shoulders and I could still hear my kids yelling or whispering according to the time of the day. However, this story of the purification of the mind and the ears at the same time was something I wanted to try, even just to have a 30 minutes of peace for my ears. I stepped into Blue Lotus Spa in Gili Air and got one. There I was, lying on one side with a burning cone in my ear. I could feel a popping sound and for a second I feared I would get burnt and go deaf. Kadek, the experienced Balinese therapist who was doing the treatment, reassured me and I started focusing on my breath. It is a weird feeling; I found myself in a sort of bubble, with all sounds buffered and far away. After more or less 15 minutes, I change side, half asleep. The second round seems faster, probably because I am now used to the feeling. Once done, Kadek opens the cones in front of me and I look at the orangeyellow dirt. There is a lot of it. “Are you sure this comes from my ears?” I ask. Kadek laughs. I cannot believe my ears were so dirty! One Gililife 60

is supposed to do it twice a month to be “purified” spiritually and physically and, although I am not sure my spirit is clean, sure I will come back to take this disgusting stuff out of my ears! Toutefois, l'histoire de la purification simultanée de l'esprit et des oreilles m'intriguait et je voulais essayer, juste pour profiter de 30 minutes de paix. Je me suis trouvée dans une sorte de bulle : tous les sons étaient étouffés et éloignés. Après environ 15 minutes, j'ai changé de coté, à moitié endormie. J'ai eu l'impression que le

deuxième coté fut plus rapide, peut être parce que je m'étais désormais habituée. Une fois terminé, Kadek a ouvert les cônes et m'a montre la saleté orange-jaunâtre. Il y en avait beaucoup. « Etes-vous sûre que cela est sorti de mes oreilles ? » ai-je demandé. Kadek a ri. Je ne pouvais pas croire que mes oreilles étaient aussi sales ! Pour se « purifier » physiquement et spirituellement on est censé le faire deux fois par mois et, même si je ne suis pas sûre que mon esprit soit "propre", je vais sûrement revenir pour enlever cette chose répugnante de mes oreilles...

Indonesia's thousands of islands are a treasure of resources; spices are one of its most famous and popular product and whose importance has been valued for centuries, greatly influencing world cuisine. Although today their use is common in kitchens worldwide, many of the spices we use originally come from the Moluccas, a tiny archipelago a thousand miles east of Java. Nutmeg/ mace (pala in local language), clove (cengkeh), pandan (daun pandan) and galangal (laos) are native to Indonesia and black pepper (lada hitam), turmeric (kunyit), cinnamon (kayu manis – literally "sweet wood") and tamarind (asam jawa) originally came from India but were soon grown in Indonesia too.

Nutmeg is the only tropical tree, namely the Myristica fragrans, that produces two different spices: nutmeg, the fruit and mace, the aril of the seed. Asian, Indian, Middle eastern, Mediterranean and even Northern European cuisine make large use of this spice, which was once believed to treat the plague and to procure abortions. For this reason, in the 17th century it was sold at high prices. Its essential oil is used to soothe rheumatic pain and in traditional medicine its consumption is advised to treat diarrhea, nausea, indigestion and insomnia. Larger quantities can induce hallucinations, paranoia and even kill. In fact, only eating 2 nutmegs can be fatal. Natives to the Moluccas Islands, cloves, namely the fruits of the tree Syzygium aromaticum, have been valued for centuries and even Sinbad the sailor from the Arabian Nights is said to have traded this spice. Used in Eastern and Western cuisine to savour dishes and spice up hot drinks, cloves are largely used in traditional medicine for treating strong toothache and indigestion. Its essential oil is a very strong painkiller and can be applied directly on the affected area. Cloves are also used to flavour kretek cigarettes, Indonesians' preferred way to consume tobacco. Originaires des îles Moluques, les clous de girofle, à savoir les fruits de l'arbre Syzygium aromaticum, sont appréciés depuis des siècles. On raconte que même Sinbad, le marin des Mille et Une Nuits, prit part au commerce de cette épice. Turmeric first fills your eyes with its deep yellow colour and eventually satisfies your tastebuds, benefits your body and even your mood. Turmeric, derived from the plant Curcuma domestica and usually sold in powder, has several culinary uses and medical properties. In Indonesia, its leaves are used to prepare the famous and yummy Sumatran Rendang and, mixed with tamarind, turmeric is consumed as a juice, the kunyit asam, drunk as a refreshing drink or as a treatment for cough and fever. Its active ingredient is curcumin, used in Ayurvedic and experimented in Western medicine to treat arthritis and to fight Alzheimer's disease. In addition, it is reported to increase serotonin levels; therefore, eating it surely brings up a smile! In today's world, spices are a commodity completely integrated in our daily life and most of us are most likely unaware of spices' geographic origin and of their epic history, marked by adventourous journeys, intrepid sailors, determinate merchands and violent wars. Ludovico di Varthena was the first Westerner to describe nutmeg in 1502. Few years after, European ships reached the Banda Islands in the Moluccas, where they discovered huge supplies of nutmeg and cloves which origin had been concealed by Arab and local merchants. A "Spice Race" soon began and centuries of wars, trade treaties and monopolies followed. The Moluccas became the Spice Islands, as they were the only place in the world where nutmeg grew. Nutmeg was sought after because it was used to preserve and flavour food, to treat plague, as well as a soporific and as a hallucinogen. Beside this spice, the Moluccas were also great source of pepper, cinnamon and cloves; in the 17th century European traders were selling these spices back to the homeland for a markup of over 60 thousand per cent! This is why it was said that "A house that smelled

of nutmeg smelled like money." The Portuguese, the Dutch, the English and the Spanish competed in this trade and, in order to gain monopoly of the spice trade, in 1667 the Dutch even traded the island of Manhattan with the English for the island of Run in the Moluccas! Through the Dutch East India Company, established in 1602, the Netherlands maintained a privileged position in the world's spice trade for the following 2 centuries. Imagine having a whole island at your disposal; big enough to be explored, but small enough to have the best sunset and sunrise spots just a few metres apart. Snorkeling and chilling on the beach are the main activities on Gili Nanggu, whose pristine waters and wonderful marine life have nothing to envy to other more famous snorkeling and diving destinations. Moreover, located on the only hill of Gili Nanggu there is a bihara, or Buddhist temple;. The temple was built by the former owner and sometimes hosts small ceremonies. It is a special place where to meditate and take time for yourself. Visit for a snorkeling trip or just to spend a few days in total relaxation, Gili Nanggu is a fantastic getaway that offers a peaceful setting, close contact with nature and with ourselves! Taking place from the 28 of October to the 1st of November, the 2015 edition of the UWRF gravitates around the theme “17,000 Islands of Imagination”, a tribute to the Indonesian heritage and its diversity, to this country of imagination and creativity, where distance and isolation typical of island living have contributed to trade exchanges, cultural distinctions, currents of migration as well as to trafficking and slavery. Held annually in the beautiful setting of Ubud, amongst rice paddies and royal temples, the festival is an idea by Janet DeNeefe and the main project of the not-for-profit foundation Yayasan Mudra Swari Saraswati. Originally launched as a response to the first Bali bombing in 2002, the festival has grown in popularity and has become the best showcase for Indonesian literature and an international platform of ideas and stories, with last year edition seeing the presence of over 26,000 visitors from all over the world. The program of this year's event is very rich; book launches, discussion panels, workshops, poetry and theatre performances as well as many other side events ensure four days of celebration of knowledge and the arts, education, wisdom and science. Single tickets and 4 day passes can be purchased online or on the spot. Beside bringing together Indonesian and international writers and readers, the festival aims at celebrating the growing Indonesian scene: a young and vibrant community of writers who explore different literary genres and use Bahasa in a simpler and more straightforward way than previous generations. Sixteen emerging Indonesian authors have been selected to take part in the event. Their work, translated into English, will be included in the Festival's anthology, providing them with the opportunity to share their words in an international setting. Warung is one of the words in Bahasa Indonesian you are likely to hear more often. Meaning “small restaurant”, in Indonesia and in Malaysia a warung is an institution that indicates local food at a cheap price and in a familiar atmosphere. This word does not indicate the speed the meal will be served and it can be a fast food restaurant or a slow pace one according to what you decide to eat. If you go for nasi campur (mix rice), you will just have to pick what you want from the dishes on display and eat it right away. If you go for the warung best sellers such as mie goreng (fried noodles), nasi goreng (fried rice) or soto ayam (chicken soup), you will have the time to crack into a couple of krupuk (rice crackers) and burn your lips sipping a teh manis panas (sweetened hot tea) before you get served. In case you are daring and order some Western dish on the menu, you may end up spending the whole day in the warung and eventually become a member of the local family who run the place! dadar gulung Coconut pancake - Crêpe de coco Ingredients: Pandan pancake mix: - 190g plain flour - 1/2 tsp. table salt - 1 tbsp. sugar - 2 eggs - 100 ml coconut milk - 200 ml water - 120 ml Pandan juice Filling: - 300 g fresh grated coconut - 100 g palm sugar - 1 lime - 5 cm grated fresh ginger - 120 ml water

Dadar Gulung are small pancakes made with Pandan (a tropical plant) with a fresh coconut and palm sugar caramel filling. Les Dadar Gulung sont des petites crêpes de Pandan (plante tropical) roulées avec une farce à la noix de coco fraîche et au caramel de sucre de Palme. To prepare the Pandan juice - Préparation du jus de Pandan : Blend 10 Pandan leaves with 250 ml of water and then sieve. Take the required 120 ml of juice and freeze the rest. Mixer 10 feuilles de Pandan avec 25 cl d’eau puis passer à travers un chinois en extrayant bien tout le jus. Prélever les 12 cl nécessaire et congeler le reste.

Ingrédients : Pâte à crêpes au Pandan : - 190 g de farine T45 - 1/2 c. à café de sel fin - 1 c. à s. de sucre - 2 œufs - 10 cl de lait de coco - 20 cl d’eau - 12 cl de jus de Pandan Farce : - 300 g de noix de coco fraîche râpée - 100 g de sucre de palme - 1 citron vert - 5 cm de gingembre frais râpé - 12 cl d’eau

Batter - La pâte Put the flour and salt into a large bowl, make a well in the centre and pour in the liquids and eggs, and mix to a smooth paste. Leave in the fridge for 1 hour. Verser les liquides et les œufs au centre des matières sèches puis mélanger jusqu’à obtenir une pâte fluide. Laisse reposer au frigo 1h. Filling - La farce Heat the water in a small saucepan, add the sugar when it starts to boil until you get a caramel consistency. Add the ginger, the lime zest and a teaspoon of the lime’s juice. Also add the grated coconut and cook for 5 minutes over a high heat to reduce the liquid. Leave to cool. Faire chauffer l’eau dans une petite casserole, lorsqu’elle bout, ajouter le sucre. Faire réduire jusqu’à obtention d’un caramel. Ajouter alors le zeste de citron vert et une cuillère à café du jus de ce dernier ainsi que le gingembre. Ajouter aussi la noix de coco râpée et continuer à cuire 5 min sur feu vif pour dessécher. Laisser refroidir. Assembly - Service Make the pancakes with the batter. Place the pancakes in front of you, smoothest side facing up, place 1 tablespoon of filling on the first third and then fold the left and right side to the middle and roll into a small sausage. 1 gross ton of paper waste recovered = 700 kg recycled paper = 17 trees saved. Regardless of its quality, recycled paper has less impact on the environment than

traditional paper. Recycling involves extracting fibres from waste paper and removing contaminants (glue, staples ...). This method requires less wood, water and energy. Be aware that unbleached, beige or grey papers are the most environmentally friendly. No recycling of paper exists in The Gilis... re you looking for love or do you want to make up with your loved one? Try the bumbu! Spices have magical powers here, and it is no coincidence that Indonesia has been one of the main sources for centuries. This mysterious seasoning made from condiments and spices is used everywhere, but the one I am talking about is a rare recipe made secretly in the kitchen. Bumbu come in all colors, depending on the problem you want to solve: white bumbu is for broken hearts, red bumbu is for passion, yellow bumbu is for infidelity, and orange bumbu is for meeting a special someone. Choose your ingredients and crush them gently in a mortar murmuring your request. Then, write your wish on a banana leaf, and burn it over the sink. Spices must be slightly heated to bring out their true flavor. Fry your bumbu in coconut oil before adding meat, fish or vegetables. This mix of spices will guarantee true love, passion, reconciliation or a less bitter life! Vous cherchez l’amour ou vous souhaitez vous réconcilier avec votre cher et tendre? Essayez le bumbu ! Il en existe de toutes les couleurs, selon le problème à traiter : le bumbu blanc pour les peines de cœur, le bumbu rouge pour la passion, le bumbu jaune pour les infidélités, et le bumbu orange pour rencontrer quelqu’un. Choisissez vos ingrédients et dans un mortier broyez-les délicatement en murmurant votre demande. Puis, écrivez votre souhait sur une feuille de bananier et brûlez-la au-dessus de l’évier. Les épices, comme les cœurs, doivent être enflammées pour déployer leur véritable parfum. Faites revenir votre bumbu dans de l’huile de coco avant d’ajouter de la viande, du poisson ou des légumes. Voici donc le mélange qui vous garantira un amour sincère, la passion, la réconciliation ou une vie moins amère !

You WANT TO VISIT LOMBOK? On Gili Air public boats leave to Lombok starting at 7:30am. Meno to Lombok, twice a day, at 8am and 3pm. And on Gili T starting at 7am until 5pm. Sur Gili Air les bateaux publics partent vers Lombok à partir de 7h30. Sur Gili Meno, deux fois par jour à 8h et 15h. Sur Gili T à partir de 7h du matin jusqu'à 17 h.

WATER Drinking water in the Gilis is imported from Narmada in Lombok. It is not advised to drink tap water. L'eau potable des îles Gilis est importée de Lombok à Narmada. Il est déconseillé de boire l'eau du robinet.

ELECTRICITY

Sometimes there are power cuts on the 3 islands but the resorts have generators. Parfois il y a des coupures

INTERNET - WIFI Internet cafes are in abundance on Gili T- mainly on the developed east. On Gili Air there are 3 internet cafes and there are 2 on Meno (see map for locations). WIFI is available on all three islands at a variety of restaurants and at most resorts. Il y a de nombreux "internet café" sur Gili T, principalement à l'est. HEALTH - SANTE There are clinics on all three Gili Islands (see maps) offering basic treatments and medicines. For serious ailments there are hospitals (rumah sakit) and dentists in Lombok (see directory). Pour les maladies plus graves, il y a des hôpitaux (rumah sakit) et des dentistes à Lombok (voir l'annuaire).

IDR - RUPIAH You can change your foreign currency and pay by debit/

credit card in most dive centers and resort hotels, however, cash remains the only form of payment for most accommodation/food in The Gili's. BEWARE DON'T SWIM BETWEEN THE ISLANDS Bear in mind that the Gili Islands are exposed to open oceans and can have incredibly strong currents running between and around them, and trade winds which create choppy seas. For this reason- always check daily conditions before commencing oceanic sports and know that it is NOT recommended to swim between the islands no matter your skill level.
