A yummy recipe for health EN - With their cute appearance resembling a friendly hug or a chubby half moon, cashew nuts are some of the most loved nuts of all times, in particular because of their uncountable health benefits and diverse culinary uses. Originally from Brazil, the cashew tree is widely cultivated in Eastern Indonesia and represents an important crop for the country. While the cashew apple is an edible fruit consumed as a drink, the nut is commonly consumed raw as a snack or cooked into delicious meals. This yummy and nutricious nut is a recipe for health and a treat to your taste buds! The three Gili Islands, composed of Gili Trawangan, Gili Meno and Gili Air are located off the northwest coast of Lombok. In Sasak language, "gili" means "small island. " There are more than 30 Gilis around Lombok but Trawangan, Meno and Air are by far the most frequently visited. Because of their proximity to the equator, they have a tropical climate throughout the year with an average air temperature of 28C and water temperatures ranging from 26 to 29C. The rainy season runs from November to April and the dry season from May to October. The Gilis bathe in the Bali Sea, at the convergence of the Indian and Pacific Oceans and enjoy a drier Gililife 18
micro-climate than the rest of Indonesia due in part to the fact that they are situated between two great volcanoes- Mount Rinjani on Lombok and Mount Agung on Bali. Like the majority of the Lombok community, the inhabitants of the Gili Islands are primarily Muslim and each island has a mosque(s) emitting sounds of live prayer five times daily. Bahasa Indonesia is the national language spoken that unites all of the country’s islands but Gili locals speak Sasak Gili Air which is slightly different to Sasak Lombok.About 200 years ago, fishermen from Sulawesi of Makassar, Bugis and Mandar ethnicities arrived on
the Gili Islands. They began to settle temporarily because of the abundance of fish in the sea and the presence of fresh water on Gili Air and at that time, sectioning off a bit of land with string was enough to claim it. These otherwise nomadic people began to settle in the Gilis and cultivate the land, planting peanuts, tapioca and corn whilst continuing their tradition of fishing. They sold and exchanged their produce in the markets of Lombok and also traded portions of their land for livestock, rice and other much needed items not native to the islands. Coconut palms are indigenous to the Gilis while mango, banana and papaya trees have been
introduced over the years. The first Western traveler to set foot on the Gili Islands came in 1984 to Gili Air. By the mid 1990’s Bali had gained international recognition as a travel destination and the Gilis began to be known as an off-the-beaten-track paradise escape. Today, the Gili Islands are flourishing and are attracting all types of visitors from every corner of the globe. Over time, the people of the Gili Islands have adapted to a multitude of changes and cultural immersions but have managed to maintain their cultural identity. Historically the people here have seen their days of hardship when during WWII, Lombok and the Gili Islands were occupied by Japanese forces. The islands were used to contain prisoners of war and the locals endured forced labour. A hill situated on the south of Trawangan was used as a lookout post and today remnants of the bunker still remain. Trawangan derived it's name from the Indonesian word "terowongan" meaning "tunnels" of which a network were dug by the occupying forces. The holes have since been filled in. Les cocotiers ont toujours été présents sur les îles, les mangues, bananes et papayes sont venues plus tard. Le premier étranger venu de l'occident est arrivé en 1984 à Gili Air et les premiers touristes, dans les années 90 lorsque Bali a acquis sa réputation mondiale ! Aujourd'hui, les îles Gilis sont de plus en plus populaires et séduisent un bon nombre de voyageurs venus de différentes horizons. Au fil du temps, les habitants des îles Gili se sont adaptés à une multitude de changements et d'immersions culturelles, mais ont réussi à conserver leur identité. Historiquement, ils ont vécu des moments difficiles. Pendant la Seconde Guerre mondiale, l'île de Lombok et les Gilis étaient occupées par les forces japonaises. Les îles ont été utilisées pour maintenir les prisonniers de guerre et les habitants ont subi le travail forcé. Une colline située au sud de Trawangan a été utilisée comme poste d'observation et aujourd'hui les vestiges d'un bunker demeurent. When you hear about Gili T you probably also hear the words "party island" yeah? Thought we should just address that straight away! Gili T gained this title because it is the largest of the three northern Gili Islands with the most development, hence it offers the greatest abundance of everything- including nightlife. There are fantastic parties every night of the week that attract large crowds of people from all different walks of life and every corner of the globe. Nightly features start with a sizzling local food market and advance into live music, beach parties and DJ's. There's also the option of watching movies screened at an open air beach "theatre." The rumored growth of Trawangan from a backpacker island into something of a glam island is supported by the unveiling Gililife 20

It's an iconic island of variety with numerous options for every budget/lifestyle for eating, sleeping (backpacker dorms to luxury villas), entertainment and activities. Gili T has extraordinarily beautiful beaches and shimmering ocean waters of crystal-clear visibility for diving and snorkeling. Although it is predominately known as a party island, Gili T has much more to it and venturing away from the densely developed east coast, you can find a plethora of vacant beaches. Renting a bicycle is a great way to see the island, bearing in mind there are some sandy patches! Seeing how life works here can be very eye-opening: it's not an escape from reality- just a slightly different one but understandably surreal nonetheless! There are several conservation organizations based here including Gili Eco Trust (GET) and The Gili Shark Foundation- ask around (try dive centers) about how you can get involved! As you may know- there is no motorized transport in the Gilis and what a soothing break that can be! Surfing is popular off the south and it's not unwise to speak to locals about the break. For a supreme viewpoint walk up the hill on the south that was previously used as a lookout during WW II.

La plus grande et la plus développée des trois îles Gili a gagné cette réputation car elle offre un large éventail de tout y compris pour la vie nocturne. Commencez par faire un petit tour sur la place du marché pour goûter les délicieux plats locaux, puis laissez-vous tenter par le son des concerts live, des DJ résidents, dans les différents bars ou sur la plage ! Il est aussi possible de visionner des films en plein air. Trawangan est l'îlot du "Glam" avec ses resorts, ses spas, ses restaurants chics, ses boutiques et son héliport ! C'est la plaque tournante de charme pour un grand nombre de voyageurs. Trawangan est l'île du choix et convient à tous les budgets et à tous les styles de vie. Que vous soyez "routards" ou que vous recherchiez un logement de grand standing, tout est possible. La nourriture est très diverse et internationale, vous aurez aussi un grand choix d'activités et de divertissements ! Gili T possède de très belles plages aux eaux limpides et cristallines idéales pour la plongée et la balade aquatique en masque, palme, tuba (snorkeling).
Cette île possède quelques-uns des plus beaux jardins de corail et le plus grand nombre de centres de plongée. Bien qu'elle soit surtout connue comme une île "de fête", Gili T cache un nature dense et douce, aventurez-vous loin des côtes pour découvrir la magnifique cocoteraie ou les plages désertes de la côte ouest. N'ayant aucun transport motorisé aux îles Gilis, la location d'un vélo est un excellent moyen de découvrir l'île, et aussi une expérience aventureuse ! Set between Gili Air and Gili Trawangan, Gili Meno arguably offers the finest beaches of all the Gili Islands. The sands are white and soft beneath your feet and you can relax on vacant stretches of beach lined with coconut trees. Meno is the real escape to paradise where you can fill your days with activities like diving, snorkeling, surfing or just simply taking in the tranquil views. This island is a treasure of local lifestyle where time seems to bend and life seems to slow down. It is the least developed island where you can completely relax amongst abundant nature- Meno is a holiday within a holiday. Here you can walk or take a cidomo (horse&cart) to attractions such as the salt lake where it's possible to spot rare blue kingfishers and the elusive island monitor lizard, or venture to the eerie remnants of an abandoned resort- where a popular wreck-dive site exists just offshore. This island is primarily popular amongst couples and those seeking a more enlightening, recharging time. Yoga and meditation are up there with diving and honeymooning for making Gili Meno an ideal travel destination. Jack POINT
JACK POINT, and its "whirljack"... JACK POINT, et son tourbillon de carangues... One more site not to miss. Jack Point is preferable to dive early in the morning if you want to get more chance to make the most of the show. The site is located in the deep part North of Shark Point, in the North-West of Gili Trawangan. It is around 26-27 meters deep where you could meet the very impressive school of Jack fish, and to find yourself in the middle of the school would be an incredible memory. Frequently seen also: a school of Barracuda and another of Snapper which would add to your happiness. You would probably find also Reef Sharks, Whitetip and Blacktip and Stingray. It is a drift dive with a current from moderate to strong depending on the period. It is a dive reserved for "advance" and more because of the depth. Photographers would really enjoy it, but it would be an unforgettable moment for all divers. Encore un site à ne pas manquer. Jack Point est à plonger de préférence, tôt le matin, si vous voulez avoir plus de chance de profiter du spectacle. Le site se trouve dans la partie profonde au nord de Shark Point, soit au nord-ouest de Gili Trawangan. C'est aux alentours des 26-27 mètres de profondeur que vous pourrez rencontrer le banc plutôt impressionant de carangues (Jack fish), qui croyez-le, si vous êtes pris au milieu, restera un souvenir incroyable. Fréquemment croisés aussi : un banc de barracudas et un autre de vivaneaux, qui viendront s'ajouter à votre bonheur. Vous trouverez probablement aussi des requins de récif, pointes blanches et pointes noires et des raies pastenagues. Il s'agit d'une plongée dérivante avec un courant de modéré à fort selon la période. Plongée réservée aux 'advance' car la plongée est profonde. Les photographes se régaleront, mais ce sera pour tous un moment inoubliable.

Description
The Whitespotted Boxfish is a tropical species that grows up to 25 cm. It is a slender fish with hexagonal scale plates that give it a box-like appearance. Males and females look very different; while the female displays white and brown spots on a black coloured body, the male is more colourful, with reddish spots on a bright blue body and orange-yellow spots on the sides. Another feature that differs males and females is the tail, which is straight with rounded corners in males and a rounded fan in females. Habitat
This species has a very wide distribution and can be found tropical waters, from the IndoPacific to the Eastern Pacific and the Americas, between Southern Japan and the Hawaii and even in the oceanic islands. It lives between 3 and 30 metres of depth and, although it usually prefers coral and rocky reefs, it also lives in clear lagoons. Whitespotted boxfish live in harems composed of one male and many females. The male usually courtships the female by swimming in circles around her. The pair then swims side by side and they release their gametes while touching each other's tail. Once fertilization occurs, the males swims off to mate with another female. Females have a special way to hunt: they blow a strong jet of water into the substrate in order to unearth small prey. SNORKELING Turtles guaranteed! Beautiful corals and all kinds of fish! Tortues garanties ! De beaux coraux et des poissons de toutes sortes ! Snorkeling (mask, snorkel, fins) is a good way to freely explore the waters around Gili islands! You can see turtles, all kinds of fish, blue-spotted stingrays... Let yourself drift with the current, whilst being careful because sometimes it can be very strong! You can rent the equipment very easily on all three islands. Another alternative is a snorkeling trip - a day out on a boat. You leave in the morning around 9am for a full circuit of the Gilis, visiting the best snorkeling spots of the three islands. You stop for lunch and finish about 4pm. You can book this trip on site or at your hotel. Le snorkeling (masque, tuba, palmes) est un bon moyen d'explorer les fonds marins des îles Gili en toute liberté ! Cashews are tropical trees which were introduced by the Portuguese in Goa in the 16th century and then gradually spread throughout Southeast Asia, reaching Indonesia as part of afforestation programs. This tree is mainly famous for producing the much sought-after cashew nut, an edible seed packed with nutrients that contains over 500 calories in just 100 grams and is known for helping in protecting from cancers and diseases. The scientific name Anacardium occidentale comes from the Greek “ana” (without) and “cardium” (heart)” because the seed of the plant (the cashew nut) grows outside the fruit (the cashew apple). En Indonésie, le cajou se repandit suite à des programmes de boisement. L'arbre est connu pour produire la célèbre noix de cajou, une graine comestible riche en nutriments. Watch Out! Attention! The seed - or nut - of the cashew is surrounded by a shell which is toxic to humans and can cause severe, sometimes fatal, reactions. This poison is an allergenic phenolic resin known as anacardic acid and related to the allergenic oil urushiol, which is also found in poison ivy. Cashews are roasted outdoor to destroy the toxin and avoid contamination by its smoke. For this reason, the nut is always extracted from the shell before is sold to customers. La graine, ou noix de cajou est entourée par une coque toxique qui peut causer des réactions graves et parfois mortelles. Ce poison est une résine phénolique allergisante qu'on appelle acide anacardique et qui est apparenté à l'huile allergène urushiol, que l'on trouve aussi dans le sumac vénéneux. On grille les noix de cajou à l'extérieur pour détruire la toxine et éviter d'être empoisonné par la fumée. Voilà pourquoi on extrait toujours la noix de la coque avant de la mettre en vente.
Indonesia's cashews Les cajous d'Indonésie Cashews were introduced in Indonesia as part of afforestation programs in the 1970s and are mainly cultivated in the Eastern part of the country, especially in Southeast Sulawesi and West and East Nusa Tenggara. Representing around 15% of the world production, cashew is considered a crop suitable for expansion and a potential boost to local income, considered favourable cashew world market prices. Trees are usually planted in November-December and harvesting time is usually during dry season, which varies from region to region. In Southeast Sulawesi, cashews are harvested from July to September, while in Nusa Tenggara from September to November. Population: 3,600,000 Language/ Langue: Sasak Geography/Géographie: Lombok Religion: Islam (Wetu Telu), Islam (Waktu Lima), Bodha (Buddhist, Hindu and animistic influences/ influences animistes, hindouistes et bouddhistes)
Sasak people are originally from Lombok, where they represent the majority of the population. Ethnically related to the Balinese, they speak Sasak, a distinct language that has 9 different varieties. The Sasak language spoken in the Gilis is known as Gangga (Kutó-kuté). Sasak possesses a system of speech levels and, as Balinese and Javanese, social classes are reflected in lexical differences. In fact, Since the 14th century, Sasak society has been divided into castes. Intermarriage is allowed but a woman who marries a man of a lower caste loses her status. From the 16th century, the Sasak adopted a syncretic form of Islam (wetu telu), which blends Hindu-Bhuddist influences, Sunni Islam, animism and ancestral Gililife 48
worship. Today, Sasak are known for their traditional pottery, that is the famous technique of “turun temurun”, the typical architecture, namely the pile-built rice barn called “lumbung” and, of course, the “gendang beleq”, the Sasak version of the Balinese gamelan, a dance and music performance featuring drums, flutes and cymbals. Aujourd'hui, les Sasak sont connus pour la poterie traditionnelle, soit la technique du “turun temurun”, l'architecture typique, à savoir la grange à riz sur pilotis appelé “lumbung” et, bien évidemment, le “gendang beleq”, la version Sasak du gamelan balinais, un spectacle de danse et musique avec des tambours, des flutes et des cymbales.

From the village of Senaru it takes 20 minutes walk to access the waterfalls. You can cross the valley and go down the 315 steps following the irrigation canals. The Tanjung Aan bay is huge with pristine, fine, white sand on one side, and on the other, a golden sandy beach with large grains. A central rock separates the two different beaches and you can climb it to admire the magnificent view ! Selong Blanak is a beautiful bay strewn with small shops. The main attraction is surfing but however, swimming remains possible. The waves are perfect for beginners. You will easily find somewhere to rent a board for a few hours. Selong Blanak est une très belle anse jonchée de petites échoppes. L’attraction principale est le surf mais la baignade reste, toutefois, possible. Les vagues sont parfaites pour les débutants. Vous trouverez facilement de quoi louer une planche pour quelques heures.

The Suku Bali is a diverse ethnic group result of different waves of migration from China, India, the Middle East and Java, whereas the Bali Aga (or Mula, the aboriginals) represent a small minority which reside in a few villages and speak their own dialect. The Suku Bali speak Balinese, a complex language which reflects the caste system. Also people's name reflects their position in the social hierarchy as well as in their family. Children are named according to a 4-names naming system, which indicates their order of birth. Regardless of the gender, the first-born will be named Wayan, followed by Made, Nyoman and Ketut. Bali Hinduism is a unique blend of Hindu worship, Buddhist rituals and animist practice. Religion is incorporated in every action of the Balinese Gililife 56

1. LUMBUNG SASAK - LOMBOK
Meaning “rice barn”, the Lumbung is traditionally used to store rice. It has bamboo walls (bedek), a wooden floor and a thatched roof and can be easily distinguished by the mountain-shaped roof that dives downwards to the ground. Signifiant “grenier”, le Lumbung est traditionnellement utilisé pour stocker le riz. Les parois sont en bambou (bedek), le sol en bois et le toit en chaume. On peut le reconnaître facilement grâce au toit à forme de sommet d'une montagne qui arrive jusqu'au sol.
2. JABU BATAK – SUMATRA
The traditional house of the Batak Toba features a boat-shaped roof and is built on pillars. The carving outside the house is red, black and white, representing the human world, the underworld and the world of good spirits. Joglo houses are traditionally associated with Javanese aristocrats and joglo rooves are typically used for palaces and government estates in Java. The joglo roof has a very complex construction and the inner beams form a vaulted ceiling. Warung is one of the words in Bahasa Indonesian you are likely to hear more often. Meaning “small restaurant”, in Indonesia and in Malaysia a warung is an institution that indicates local food at a cheap price and in a familiar atmosphere. This word does not indicate the speed the meal will be served and it can be a fast food restaurant or a slow pace one according to what you decide to eat. If you go for nasi campur (mix rice), you will just have to pick what you want from the dishes on display and eat it right away. If you go for the warung best sellers such as mie goreng (fried noodles), nasi goreng (fried rice) or soto ayam (chicken soup), you will have the time to crack into a couple of krupuk (rice crackers) and burn your lips sipping a teh manis panas (sweetened hot tea) before you get served. In case you are daring and order some Western dish on the menu, you may end up spending the whole day in the warung and eventually become a member of the local family who run the place!

METHOD - PREPARATION Fill a pan with water, bring to a boil. Peel and cut the pumpkin, then put it in the boiling water. Let it boil for about 15 minutes. When the pumpkin is ready, mix together the meat and water, so to get a homogeneous soup. Remove the first leaves from the lemongrass stem, and cut it small, pour inside the soup. Put salt and pepper in the soup, then a pinch of curcuma. Before serving, add some coconut milk on top. Remplir une casserole d’eau, porter à ébullition. Eplucher et découper le potiron en morceaux et le plonger dans l’eau bouillante, laisser cuire environ 15 minutes. Quand le potiron est cuit, mixer ensemble la chair et l’eau de cuisson, afin d’obtenir une soupe homogène. Enlever les premières feuilles de la tige de citronnelle, puis l’émincer finement, parsemer la soupe de quelques lamelles. Saler, poivrer et ajouter quelques pincées de curcuma. Avant de servir, ajouter un filet de lait de coco.

ave you noticed how cashew apple looks like a plump and pink heart? It is not a natural coincidence: some nuts have strange properties, and you can fall in love immediately after just a bite. All cashews do not have this effect, but you may find one of these rare magical nuts in your pack, and it could change the course of your life forever. In Indonesia, the fruit is called jambu monyet, the monkey rose apple. Recently, a little macaque friend of mine explained to me their origin: the monkeys know how to use a strange magic, and love to play all day long with it. One day, a small macaque who wanted to seduce a beautiful monkey, created the cashew with a mysterious ritual, and offered her a branch of this tree laden with nuts and fruit, as a sign of love. She was delighted by this present, as the cashew apple had precisely the shape of her pink and plump buttocks, which she was very proud of. She fell in love with this delicate little macaque. Since then, the fruit of this tree have multiplied around the world, and sometimes some of the nuts in our cashew pack still hold this magical ability Avez-vous remarqué comme la pomme de cajou ressemble à un cœur bien dodu et rosé ? Ce n’est pas un hasard de la nature : certaines noix ont des propriétés étranges, et il suffit d’en croquer une pour se retrouver immédiatement amoureux. Toutes n’ont pas cet effet, mais il peut arriver qu’une de ces rares anacardes magiques se glisse dans votre sac, et change le cours de votre vie à jamais. En Indonésie, ce fruit s’appelle jambu monyet, la pomme rose des singes, et un macaque, qui est un bon ami à moi, m’a récemment expliqué son origine : les singes savent utiliser une étrange magie et aiment se jouer des tours à longueur de journée. Un jour, l’un d’entre eux voulut séduire une belle guenon et créa le pommier-cajou à l’aide de rituels mystérieux. Il lui offrit en signe d’amour une branche chargée de ces noix et de ses fruits. Celle-ci fut ravie tant par le goût que par la pomme de cajou, qui avait justement la forme de ses fesses roses et bien dodues, ce dont elle était très fière. Elle tomba sous le charme de ce petit singe si délicat. Depuis, cet arbre s’est multiplié dans le monde entier, et parfois on retrouve certaines noix qui ont gardé cette propriété.

There are cidomos (horse and cart) available for hire on the three islands and bicycle rentals on GILI T, Gili Air and now Gili meno. Vous pouvez vous déplacer en Cidomo (charrette à cheval) sur les 3 îles ou louer un vélo sur Gili T, Gili Air et maintenant à Gili Meno
On Gili Air public boats leave to Lombok starting at 7:30am. Meno to Lombok, twice a day, at 8am and 3pm. And on Gili T starting at 7am until 5pm. Sur Gili Air les bateaux publics partent vers Lombok à partir de 7h30. Sur Gili Meno, deux fois par jour à 8h et 15h. Sur Gili T à partir de 7h du matin jusqu'à 17 h.

Sometimes there are power cuts on the 3 islands but the resorts have generators.

INTERNET - WIFI Internet cafes are in abundance on Gili T- mainly on the developed east. On Gili Air there are 3 internet cafes and there are 2 on Meno (see map for locations). HEALTH - SANTE There are clinics on all three Gili Islands (see maps) offering basic treatments and medicines. For serious ailments there are hospitals (rumah sakit) and dentists in Lombok (see directory). IDR - RUPIAH You can change your foreign currency and pay by debit/
credit card in most dive centers and resort hotels, however, cash remains the only form of payment for most accommodation/food in The Gili's. BEWARE DON'T SWIM BETWEEN THE ISLANDS Bear in mind that the Gili Islands are exposed to open oceans and can have incredibly strong currents running between and around them, and trade winds which create choppy seas. For this reason- always check daily conditions before commencing oceanic sports and know that it is NOT recommended to swim between the islands no matter your skill level.
