The Gili Islands have certainly had an eventful few months and as we are The People of Gili we are proud of our history and who we have become as individuals and as a population. The Gili Islands are a unique blend of cultures and we live respectfully and with tolerance alongside each other. This issue is particularly special as it embarks upon a new series about the mix of people who reside between the Gili Islands and Lombok. Other residents have come from afar, making this jewel of Indonesia their home.

Gili adalah perpaduan budaya yang unik dan kami hidup dengan penuh rasa saling menghormati dan toleransi satu sama lain. Hal ini sangat istimewa karena seperti halnya asal muasal dari cerita tentang campuran orang - orang pindahan dari tempat atau negara lain yang mulai tinggal atau menetap di antara Kepulauan Gili dan Lombok. BAU NYALE FESTIVAL LOMBOK This annual festival is an ancient tradition where people, both local and tourists alike, flock to capture the rare Nyale sea worms. The caught worms are then used as bait and as a culinary delicacy for the locals. This year's celebration was centered along Seger Beach in Kuta Lombok village in Pujut sub-district, Pantai An, Selong, Mawun, Mawi etc. This year the festival ran from 17th to 25th February.

DAY OF SILENCE (NYEPI) BALI Nyepi, also known as the "Day of Silence", is a day of self-reflection, silence, fasting and meditation for the Balinese people. This year it was observed from 6am on 7th March 2019 until 6am on 8th March 2019. Balinese Hindus flock to beaches to cleanse the earth with offerings and prayers, while at night, the 'OGOHOGOH' (giant light-weight statues depicting various characters from legends and myths) parade and ignite the island with noise and glorious shouts before total silence on the day of Nyepi. TOURISTS IN BALI ARE EXPECTED TO RESPECT THE CELEBRATION Tourists are not allowed onto the beaches or streets, and the only airport in Bali remains closed for the entire day. Restaurants and other facilities within hotels are usually open, often with a more basic menu, but tourists are still unable to leave their accommodation and no one can check-in.

Several fast boat companies operate from various ports in Bali and offer a free transfer from your hotel to the boarding point, depending on your location. Ocean crossing times depend on weather conditions (around 1hr to 2hr). For fast boat companies, see directory.

The ferry departs regularly from Padang Bai in Bali, with the first ferry departing at 8am and arrives at the port of Lembar in Lombok. From Lembar take a taxi or shuttle to get to Bangsal port. The ferry crossing takes approximately 5-8hr, and 2hr for the taxi or shuttle from Lembar to Bangsal.

Take a flight to the international airport in Lombok Praya, get to Bangsal port (around 2hr) by taxi and book a boat from the port office to The Gilis.

Air Bali offers this service. You can book your flight online. The heliport is based at Benoa, Bali and will take you to the largest of the three Gili Islands- Gili Trawangan (around 45 min). Your booking includes transportation to the heliport in Benoa.

CULTURE & HISTORY

The three Gili Islands, composed of Gili Trawangan, Gili Meno and Gili Air, are located off the northwest coast of Lombok. In Sasak language, "gili" means "small island". There are more than 30 Gilis around Lombok, but Trawangan, Meno and Air are by far the most frequently visited. Because of their proximity to the equator, they have a tropical climate throughout the year with an average air temperature

of 28C and water temperatures ranging from 26 to 29C. The rainy season runs from November to April and the dry season from May to October. The Gilis bathe in the Bali Sea at the convergence of the Indian and Pacific Oceans, and enjoy a drier micro-climate than the rest of Indonesia due in part to the fact that they are situated between two great volcanoes - Mount Rinjani on Lombok and Mount Agung on Bali. Like the majority of the Lombok community, the inhabitants of the Gili Islands are primarily Muslim and each island has a mosque(s) emitting sounds of live prayer five times daily. Bahasa Indonesia is the national language spoken which unites all of the country’s islands but Gili locals speak 'Sasak Gili Air' which is slightly different to 'Sasak Lombok'. About 200 years ago, fishermen from Sulawesi of Makassar, Bugis


and Mandar ethnicities arrived on the Gili Islands. They began to settle temporarily because of the abundance of fish in the sea and the presence of fresh water on Gili Air and at that time, sectioning off a bit of land with string was enough to claim it. These otherwise nomadic people began to settle on the Gilis and cultivate the land, planting peanuts, tapioca and corn whilst continuing their tradition of fishing. They sold and exchanged their produce in the markets of Lombok and also traded portions of their land for livestock, rice and other much needed items not native to the islands. Coconut palms are indigenous to the Gilis while mango, banana and papaya trees have been introduced over the years. The first Western traveller to set foot on the Gili Islands came in 1984 to Gili Air. By the mid 1990’s Bali had gained international recognition as a travel destination and the Gilis began to be known as an off-the-beatentrack paradise escape. Today, the Gili Islands are flourishing and are attracting all types of visitors from every corner of the globe. Over time, the people of the Gili Islands have adapted to a multitude of changes and cultural immersions, but have managed to maintain their cultural identity. Historically the people here have seen their days of hardship when during WWII, Lombok and the Gili Islands were occupied by Japanese forces. The islands were used to contain prisoners of war and the locals endured forced labour. A hill situated on the south of Trawangan was used as a lookout post and today remnants of the bunker still remain. Trawangan derived it's name from the Indonesian word "terowongan" meaning "tunnels" of which a network were dug by the occupying forces. The holes have since been filled in.

TRAWANGAN When you hear about Gili T you probably also hear the words "party island" yeah? Thought we should just address that straight away! Gili T gained this title because it is the largest of the three northern Gili Islands with the most development, hence it offers the greatest abundance of everything - including nightlife. There are fantastic parties every night of the week that attract large crowds of people from all different walks of life and every corner of the globe. Nightly features start with a sizzling local food market and advance into live music, beach parties and DJ's. There's also the option of watching movies screened

at an open air beach "theatre." The rumoured growth of Trawangan from a backpacker island into something of a glam island is supported by the unveiling of new upscale boutiques, restaurants, resorts, spas, and now a heli-pad, however, it remains a hub of charm for a wide spectrum of travellers. It's an iconic island of variety with numerous options for every budget/lifestyle for eating, sleeping, entertainment and activities. Luxury Villa's abound and less expensive of accommodation are available for the budget traveller. diving and snorkelling. This island boasts some of the finest coral gardens and the widest range of dive centers with the best socializing opportunities. Although it is predominately known as a party island, Gili T has much more to it and venturing away from the densely developed east coast, you can find a plethora of vacant beaches. Renting a bicycle is a great way to see the island, bearing in mind there are some sandy patches! Seeing how life works here can be eyeopening, its not an escape from reality, just a slightly different one, but understandably surreal none the less! There are several conservation organisations based here including Gili Eco Trust, The Gili Shark Foundation, Cats of Gili and Horses of Gili. For getting involved in beach clean ups visit one of the dive centres on the island, make your vacation meaningful by giving back to the island! As you may know - there is no motorized transport on the Gilis and what a soothing break that can be! Surfing is popular off the south and it's not unwise to speak to locals about the break. For a supreme viewpoint walk up the hill on the south that was previously used as a lookout during WW II.

The closest island to Lombok, Gili Air is aptly named after the Indonesian word "air" meaning "water." It is the only Gili Island to have natural underground fresh water wells. HELLO Gecko

Native to the warmer climates of Asia, Tokays are nocturnal geckos that tend to live among the trees. Seasoned travellers will be used to encountering animals of all shapes and sizes, but Tokay geckos stand out for their incredible colouring. Their grey/ bluish skin is often decorated with intricate orange patterns and spots, although they can change their appearance to blend into their surroundings. While they naturally live in rainforests, they can also be found in more built-up areas and quickly adapt to their habitats. Due to their nocturnal nature, you’re more likely to have heard them than seen them – their distinctive call sounds like a croaking, rattling noise that echoes through the palm trees across the islands.

To blend in with their surroundings during the lighter hours, they often hang on to the sides of trees. They have ridges, or folds, along their backs which open up to blur the spaces between the trees with their bodies, making them tricky to spot. They can become defensive if they feel their territory is being challenged but are otherwise harmless to humans. The smaller ones may pop into your home briefly, but only to do some housekeeping - they're great at catching bugs and will leave you well alone! If you’re lucky enough to spot one in daylight, marvel at their beautiful colourings and then leave them to it. It is their nap time, after all…

Snorkelling is a good way to freely explore the waters around the Gili islands. Let yourself drift with the current whilst being careful because sometimes it can be very strong. You can easily rent the mask, snorkel and fins on all the Gili islands. Another option is taking part in a snorkelling trip – a day out on a boat.

Many local agencies offer this service and you can book this trip on site or at your hotel. You leave in the morning around 9am for a full circuit of the Gilis, you stop for lunch and come back at about 4pm. Regardless of the island where you depart from, the boats will tour the most famous spots of the three islands, where marine life is abundant. Expect to see parrotfish and butterfly fish, dense schools of trevallies as well as some species of soft corals. Snake eels are also a common sight and you will most probably see giant turtles swimming along your side.

Freediving is the most natural and quiet way to explore and get closer to animals underwater and is a discipline that teaches you to relax and be at ease with yourself. Freediving teaches us about the connection between our body and mind, patience, perceived limitations and challenging our self-imposed boundaries. What we learn in the water can also be applied to our daily lives on dry land. There are many different aspects to apnea, including underwater hockey, underwater rugby, spearfishing etc. You just need to find your favourite way of being underwater.

When did you arrive on the Gilis? My great grandfather arrived on Gili Air from Sulawesi, my grandfather, my father and I were born here on Gili Air. What are you passionate about? Happiness. What is your favourite thing about living on the Gilis? The atmosphere. What interesting projects are your at the moment? We are planning a month long festival called Gili Bangkit, this is a yearly event. Gili Bangkit will include a food festival, yoga, a triathlon, traditional stick fighting as well as traditional dancing.

Please can you also fill us in about your Friday Clean Up Initiative? This is the fourth time we have done the Friday Clean Up, this was the program on Gili Air before, but stopped a few years ago so we brought that back in. This is announced every Friday morning from the mosque. We ask everybody to clean their own area and once they have completed it they can move on to other areas. It is from 7.30-10am and we can tell its working, everyone is really proud! If people are at work we ask for everyone to give at least 30 minutes, one time a week for the island and the environment. 57 Gililife

THE HISTORY

of the Gili Islands

The Gili Islands are recognised for their stunning beaches, laidback vibes and friendly Indonesian culture. There is more to these islands than meets the eye. With much of the history overlooked in favour of beaches and sunsets, the islands attract many visitors seeking a cultural experience. Prior to humans inhabiting the islands, it is believed the Gilis were home to lush mangroves and a large variety of animals and wildlife. During the Second World War, a dark time for the Gilis, the islands were used by Japanese forces as a lookout and prisoner of war camp. After the war, the first visitors to the islands were the Bugis fishermen who used the islands as a stop off location on their voyages around the archipelago. The first people to officially live here originated from Sulawesi. Just four families resided here and survived as fishermen. Permanent settlement began in the 1970’s with the Governor of Lombok giving companies farming rights on the islands. Inmates from Mataram were sent Gililife 58

over to harvest the coconut trees during their sentences and over time some of their families remained as residents of the islands. The land was divided and shared amongst families and coconut plantations flourished. Eventually, plantations were abandoned in favour of attracting visitors to the island. Backpackers seeking the ultimate escape, visited Lombok and ultimately the Gili Islands. Getting to the Gilis back then was arduous and not for the faint hearted. In the early 16th century, Lombok was conquered by the Gelgel Balinese kingdom and as a result many Balinese relocated to Lombok. Later in the 16th century, the Sasak people of Lombok and the islands were converted to Islam under the influence of Pangeran Prapen. Due to the diversity of beliefs, a unique version of Islam called Wetu Telu was created. This is a combination of Islamic, Hindu and Buddhists beliefs. The Balinese population in Lombok make up around 10 – 15% of the total inhabitants.

The people of the Gilis are made up of mostly Sasak people with strong ties to Lombok. Many of them commute everyday between Lombok and the Gilis, peddling their wares to locals and foreigners alike. Fresh fruit, nasi bungkus, Lombok delicacies, snacks and meals such the delicious Bakso soup are brought to the island daily by local boat. Traditional hand weaving by Sasak women can be seen in Sukarara and Pringgasela. These fabrics are used for making sarongs and blankets. Sarongs have many uses and some fabrics are elaborately weaved with gold or silver thread. Ikat weaving is done by men only. Lombok Pottery is creative and uses no tools. Villages usually specialise in a craft and Banyumulek, Masbagik and Penujak are villages where you can see pottery being made. Artists who make Lombok wooden boxes and primitive carvings can be found in Labuapi and Rungkang Jangkuk. Lombok pearls are grown in pollution free oceans of Lombok and Sumbawa. Sekotong, East Lombok and North West of Lombok are home to most of the sea pearls. The islands have only recently modernised due to the lack of water and electricity. Since these facilities are now provided, the islands have flourished. The Gilis have popular dive sites and one of them is a sunken patrol boat from the Second World War. Due to the warm tropical waters, the area is a popular diving destination and professional dive businesses have proliferated. Many foreigners have made the island their home and due to this migration, the island now offers a variety of accommodations and eateries. Many people who care about the islands are involved in community projects and facilitate the care of the natural fauna and flora as well as the cats and horses of Gili. Business owners actively participating in island and beach clean ups, recycling efforts, assisting with children and adult education, carrying out research on coral, turtles and sea life. When did you arrive on the Gilis? I arrived on the Gili Islands in 2005. I had been traveling for a year and started to become travel tired. I was searching for a place to settle for a while, to relax and scuba dive. What are you passionate about? Competition and adrenaline! I am a super competitive person, which comes from a background of working on the stock exchange in Amsterdam, Holland. What is your motto in life? "Hupla" - if you want to experience the "Hupla" feeling come to Oceans5! What is your favourite thing about living on the Gilis? Gili Air is the perfect, little island; everything is in walking distance and despite its small size there is always plenty of things happening! I love the grass roots atmosphere and being part of a close knit, family community.

If you could make one difference in the world what would you do? Create a way to build understanding between one another so we may all live in harmony together. When did you start to take an interest in scuba diving? When traveling through Asia I made a bet with a friend that when we met up again in 3 months we could both have achieved our Open Water certifications. When we met I was already a Rescue Diver with 60 dives! What made you decide to open your own dive shop? I opened Oceans5 in 2010 because I thought I could do it better than all the others. I learnt a lot from working in other shops but having previously owned my own businesses I found it hard to listen to other bosses. What interesting projects are you and your team up to at the moment? A Coral Restoration Project in partnership with Blue Corner Lembongan.

When did you arrive on the Gilis? In May 2004. What are you passionate about? Oceans, scuba diving, horses, yoga & running. What is your motto in life? Do your best with minimal impact on our environment. What is your favourite thing about living on the Gilis? I can be barefoot every day, and do many things every day. If you could make one difference in the world what would you do? Too hard to answer with just one difference! What made you decide to join Gili Eco Trust? I joined in 2004 when I started to do coral reef restoration projects with biorock technology. What interesting projects are you and your team up to at the moment? Education in waste management, recycling and up cycling, monitoring of coral bleaching, biorock maintenance, educational tools & events for GET wasted and green patrol to prepare so we are ready when sorting facility buildings are finished.

When did you arrive on the Gilis? First time I arrived on the Gilis was back in 2013 on a backpacking trip. Fast forward four years, November 2017 I came across Gili Shark Conservation and never left. What are you passionate about? My passion is science. I've been studying earth and marine science for 7 years because those two fields require fieldwork. What is your motto in life? Give respect if you want to be respected. It applies in so many ways. What is your favourite thing about living on the Gilis? Simple life style, Dive sites are located at our "backyard" and the loving and caring people. If you could make one difference in the world what would you do? I wish that every single person in the world is aware that our ocean is dying and we need to do something on worldwide scale to shift things around. When did you start to take an interest in Conservation work? I started my conservation work when I did my Masters in Sydney, Australia back in 2015. What made you join the Gili Shark Conservation Team? Gili Shark Conservation and I share the same vibe. We are a small team. In this small team, I learn a lot about dreams and passion. I also have freedom to expand the scientific side of the project. What interesting projects are you and your team up to at the moment? Although our focus is on sharks, we have more urgent issues, the declining live coral coverage across Gili Islands. Since we know that the reef sharks around the Gilis are an integral part of the reefs we decided on two projects: Developing Coral Health Index at reefs on the Gili Islands and Coral Reef Rehabilitation Project on Gili Air.

When did you arrive on the Gilis? I arrived on Gili Air end of November 2017, my first job was to tutor one of the expat kids on the island. What is your motto in life? Before the pregnancy I would put fancy quotes here, about education, feminism, or environment. But now that I am 6 months pregnant, I will say “remember to eat a little every 2 hours”. What’s your favourite thing about living on the Gilis? I love it on Gili Air, it's not too quiet, not too crowded. Like Goldilocks says “this one is juuuuuussst right!”.

What made you join Gili Playground? When Valetina and her daughter Soraya came from Austria we met and discussed the idea of having a playground on Gili Air for Soraya and of course all of the other kids. No further discussion, I had no doubt at all and jumped right in. What interesting projects are you and your team up to at the moment? Gili Playground stands under the roof of Soraya Foundation, Soraya Foundation has so many interesting activities that everyone can join. We do social circus, English and music classes at local school, we are about to start rebuilding the local school fences, and guess what! We are looking for volunteers for many projects. When did you arrive on the Gilis? July 2014 I came to manage Lutwala Dive with my husband Joe. What are you passionate about? Animal welfare and diving, I enjoy introducing people to diving because that teaches them how reliant our world is on our oceans. What is your motto in life? You can't go back and change the past, but you can always make the future better. What is your favourite thing about living on the Gilis? No motorized transport, peace and quiet. If you could make one difference in the world what would you do? Take away those people who purposefully neglect or abuse animals. When did you start to take an interest in working with animals? My "real" job before becoming a dive instructor was a Veterinary Technician and Animal Behaviourist. What made you start the Horses of Gili? When I came here it only took a short time to realize that veterinary care was lacking and desperately needed year round, so we worked with Cats of Gili and opened the cat hospital. After our success with the cats I volunteered at a horse clinic. There was lots of bad, false, and inaccurate publicity on the Internet about the horses here and it had negative effects on the tourism, so one of my first goals was to provide factual, and accurate information about the welfare of the animals on the islands. What interesting projects are you and your team up to at the moment? We just leased land for our new Charity shop and a new hospital/stable for the horses. We have been busy fundraising for this so it can be built in the best quality possible. 61 Gililife

When did you arrive on the Gilis? My parents arrived on Gili Air 65 years ago from Sulawesi and myself and my 9 siblings were born on Gili Air. What are you passionate about? I love nature and I love to look after my garden. My dream is to one day retire in Lombok and relax with my family. What is your motto in life? Don't worry, be happy. What is your favourite thing about living on the Gilis? The lifestyle, the people are very friendly, our friends have become like family. I also like to talk with the tourists and learn about their cultures. If you could make one difference in the world what would you do? I would end all of the wars. Tell us about your family history? My father was the second person on the island to promote tourism. We had Banana & Coconut Plantations. My father was one of the only people who could speak English at this time, so when the tourists arrived my father would give them bananas, welcome them, show them around and give more information on the islands. At the age of 12 I would go to Lombok looking for tourists to bring to the Gilis to show them our beautiful paradise and help my family to get customers for their bungalows. At this time there were only two accommodation businesses Nusa Tiga and Gili Indah. Gililife 62

When did you arrive on the Gilis? In November 2011 I left my home country Finland and it just so happened that I never went back. What are you passionate about? Animal welfare and environmental issues. We only have this one planet to live on. What is your motto in life? "Never try, never know�. Meaning nothing will ever change if you don't even try. What is your favourite thing about living on the Gilis? The weather. It is warm 365 days a year. If you could make one difference in the world what would you do? Have way less humans on the planet. We are the cause of all the problems and the planet cannot handle so many of us much longer. When did you start to take an interest in working with cats and what made you join Cats of Gili? I have always loved animals, especially cats, and nothing upsets me more than seeing animals sick or hurt or suffering. I knew Gili Eco Trust had so many other important issues and projects to deal with, so I thought maybe I could help by becoming the cat person of the island. The idea of a cat project was presented to Gili Eco Trust and then Cats Of Gili was born in September 2013. What interesting projects are you and your team up to at the moment? I have just started to work on our next big cat clinic which will run for approximately one week in April and an on-going project is to keep our charity shop on Gili Trawangan up and running.

When did you arrive on the Gilis? I arrived on Gili in 2009 or 2010 and lived on Gili T as a Scuba Instructor working for Gili Divers. What are you passionate about? Scuba diving, travelling, dancing, nature and music. What is your motto in life? Follow your dreams, they know the way and be happy with what you have all the while pursuing all the dreams you have. What is your favourite thing about living on the Gilis? The fact there are no cars, but I think what made me stay in Indonesia are the people, they have so much heart. If you could make one difference in the world what would you do? To delete plastic, no more plastic! My little eco warrior is so angry every time I end up with plastic.

When did you start to take an interest in conservation work? I have always loved conservation, I’ve always had this little voice in my head saying give back to the community! What made you start the Soraya Foundation? Valentina came to me in August 2017 and said she wanted to open a Montessori playground for her daughter. We spoke with a consultant who told us we need to create a foundation and it was like a revelation and it just felt like destiny. Thanks to that foundation it means that we can help the local school. We started to do a circus show every year at the school; we used the donations to provide stationery supplies and musical instruments. After a lot of thought we decided to pay the salary for one year for an English teacher as well as a music teacher. What interesting projects are you and your team up to at the moment? We are an NGO that focuses on social and environmental projects on Gili Air. The next project is to create a permaculture community garden at the school and teach the children how to grow their own fruit and vegetables. 63 Gililife

Inspired and run by Janset Berzeg, who happens to be Turkish, The Mexican Kitchen has brought more to Gili Air than just fantastic tacos – it started a revolution of international food offerings on our little island… Originally in Mexico to study, Janset quickly became absorbed by the incredible variety of food and has spent much of her life exploring the country’s intricate and colourful cuisine. A holiday to the Gili Islands had her captivated and she moved here soon after, buying land with little intention of what to do with it – ‘I had my little piece of paradise’, she smiles. And so, in 2014, she opened The Mexican Kitchen on Bintang Beach. ‘I have no idea how I came into being a restauranteur… I guess, you know, things just happened’, she laughs, humble despite the enormous success Gililife 66

she’s experienced with her restaurant. Soon after, the rest of the island followed suit, with more international restaurants opening up around Gili Air. Her restaurant has recently moved back to the north-east beach area, which she lovingly refers to now as the ‘Mexican Beach’ with beautiful reflections of the Gili sunsets – it took 88 cidomo trips to relocate! ‘People make fun of me, like ‘how’s your Mexican food truck, moving every year’ – this is the last time!’, she laughs. She plans to change the menu every 3-6 months, ‘Luckily, Mexican food has so much variety that you can never finish!’. The new menus will feature more sharing dishes, ‘I grew up like that… My mum always tried to put plenty of food on our plates. I like fine dining, of course, but I don’t like to see a giant plate with three dots

in the middle!’, she laughs. ‘I want to do baskets of seafood soaked in Mexican sauces – everything will still be very Mexican, very BahaCalifornian with authentic cocktails to compliment the tantalising meals…’, she continues as we drool. ‘A key focus for me is staff development’, she urges. She takes the team with her to Bali for training sessions and invites chefs to Gili Air for on-site training. ‘It helps upskill the staff that are working in the kitchen’, she explains that she’s building a strong team that can continue her legacy should she choose to move on in the future, ‘I want to bring this business to the point where it works as a co-op.’

‘I think, we had an unexpected influence on the whole island, because there’s so much Mexican food around now…’, she smiles, not feeling any resentment, but indeed, some pride in her involvement. ‘Bringing in international cuisine that everyone enjoys? It doesn’t bother me at all, it’s just adding richness’. She feels very at home and is very grateful to her new neighbours for their friendliness – ‘They know it’s not a competition – it’s the opposite, actually. If someone’s having a Mexican lunch, they’ll have an Indonesian dinner’. Variety is the spice of life, after all!

TUMERIC

Turmeric, known as ‘Kunyit' in Indonesia, is a popular spice used in cooking and is also a key ingredient in many of the local natural medicines called Jamu. Turmeric has an earthy aroma and a pungent slightly bitter flavour. This vibrant yellow spice is used to add flavour to curries and mustard and is also used as a colouring in foods. The use of turmeric dates back 4000 years to the Vedic culture in India, where it was used as a culinary spice and had some religious significance. Turmeric is a flowering plant from the ginger family and the root is the part of the plant most widely used. Although a native to the Indian subcontinent, this popular spice thrives in Indonesia as it requires temperatures between 20 – 30 degrees Celsius to grow. One can find this incredible spice in its fresh form in abundance at any of the local markets throughout Indonesia. The health benefits are many and the powerful antioxidants found in turmeric and in particular curcumin, a polyphenol isolated from the turmeric, is the champion in assisting to boost the immune system and support the body's natural healing processes. More than 100 useful chemical compounds have been discovered in this versatile spice! For best results, combine turmeric, ginger, lime juice, tamarind and honey in a delicious drink and take on an empty stomach in the mornings. For a tantalizing warm latte, try mixing grated turmeric into warm coconut milk and honey. For added benefits, it is suggested to add a pinch of black pepper to assist with the assimilation of curcumin into the body. If you cannot find fresh turmeric in your local store, the dried spice is just as beneficial! INGREDIENTS 1/4 Chicken 3 Cloves of Garlic 5 Small cloves of Shallot 1 or 2 Small Burn Eye Chilli A half red chilli 2cm or 15g of palm sugar 1cm Turmeric 1cm Galangal 1.5 cm of Ginger

THIS WEEKS DELICIOUS RECIPE:

CHICKEN CURRY

1 stalk of Lemongrass 1 tsp of Coriander seeds Half tsp white peppercorn 1 Macadamia Nut or Candle Nut Salt to taste 100ml coconut milk 100ml water 5 tablespoons of cooking oil Your Favourite Vegetables (such as long beans, carrot, etc.)

PREPARATION Step 1: Place the spices: chilli, garlic, 3 small shallots (leave 2 pieces for slicing), ginger, galangal, coriander seeds, white peppercorn, turmeric, palm sugar, macadamia nut in a food processor and grind into a paste. Step 2: Slice the 2 remaining shallots in tiny slices, chop all the vegetables chunky, chop the chicken chunky as well and crust the lemon grass. Step 3: Heat up the cooking oil on a medium heat then put the chicken and lemon grass together. Let this cook for one minute until the chicken is golden, add the sliced shallot and stir it until the shallot has changed colour. Step 4: Add the ground paste into the chicken and fry it until the paste becomes thick or reduces. Mix the coconut milk and water then pour into the chicken, cook for one minute then put all the chopped vegetables, add salt to taste (normally three pinches) and keep stirring until the chicken is cooked through. Serve hot with rice. Notes: The yellow paste is not only for a chicken curry but can also be used for fish, beef, boiled egg or vegetarian and vegan dishes. The Lemon Grass is not to be eaten and should be removed, however some people leave it in for the presentation. 81 Gililife

THIS WEEKS HEALTHY DRINK:

8 small Limes 2 tablespoons Honey 1/4 tablespoon White Sugar 5 pieces of Clove 3 large cups of Water

PREPARATION First clean and cut the turmeric. Cook in boiling water for 30 minutes until the tumeric is soft. Wait for this to chill and blend the tumeric. Once blended use a sieve to collect any of the unwanted pieces of turmeric and slowly mix all other ingredients in. Boil this again for another 30 minutes, once its cold sieve again. The Jamu is now ready to be enjoyed or stored in the fridge for later.

SERVING SUGGESTIONS 250ml every other day as required. This recipe is for up to six people and would normally fill a 1.5 litre bottle. Jamu can be refrigerated for up to a week. Gililife 82
