MEET

Traditional bamboo tattoo artistry originated near Cambodia during the Khmer period, around 3000 years ago. The art was refined by monks in Buddhist Temples and the practice spread throughout Asia to Indonesia. At the time, tattoos were unique to the wearer and each artwork represented something meaningful. Gililife 10

Tattoos were considered blessings from the Gods for strength, protection and courage. One of Gili Islands most charismatic personalities is Sonteng, a traditional bamboo tattoo artist, who resides between Gili Meno and Gili Air. Sontengs’ artwork is forged from centuries of ancestral sacred

knowledge and receiving a tattoo from him, bears with it, inherent symbolisms of ancient history and blessings. The moment you lay eyes on Sonteng, you are acutely aware that you are engaging with an extraordinary soul. His warm generous smile, the distinct twinkle in his eyes, his unique attire, striking jewelry and his body tattoos are a lot to absorb in a glance, so one needs more time, just to take it all in. Sonteng instantly made me feel at home and I noticed that he laughs easily. So, we chatted for a while‌.


Born in Mataram to a Balinese family, Sonteng grew up with his father who was an artist working with wood, statues and paintings. His grandfather and father were both traditional bamboo tattoo artists, so Sonteng cultivated his craft naturally from generations of ancestral artistry. With his fathers’ love and support, Sonteng’s confidence grew and at the tender age of 15 or 16 years, he accomplished his very first tattoo. His art took him to Bali and it was in Kuta, Ubud, Candidasa and Lovinia, where he worked on people and made a name for himself. A friend invited him to Germany, and he spent a year working in a challenging market, gaining knowledge and building a good reputation.

He returned to Germany for six months at a time for many years and his favourite memory is of an international tattoo convention he attended. Ninety-nine artists from around the world worked together. It was here he realized his unique style, which is to draw freehand on the body, and not rely on a stencil. “With freehand, you see the object, you touch and feel the volume of the body and you decide where the lines are to go. The line of the body guides me. I work with the body, not just the picture or the object. The left and right side of the body are so different. When you draw, you can see that it is not balanced, so I work on balancing the picture,” he explains. Due to his personal style, Sonteng is regarded as an icon in the tattoo industry. He later moved to Senggigi and opened a tattoo painting studio in the area. In 1989, Sonteng moved his work to Bangsal Harbour where he reminds us, “There was no electricity, no buildings, no neighbours, just the beach and rice fields, but it was closer to the Gilis,” he smiles. Memories of how this move impacted his life, is not lost in his expression. Later, Gili Trawangan became his second home. A reminder of the days when there were only two bungalows on Gili Trawangan and no electricity, only tropical land and white beaches. It sounds idyllic as he sets the scene. Sonteng now resides and works on Gili Meno, the quieter of the three islands and often visits his son, Baba, on Gili Air. Baba, also a well-known tattoo artist shares his studio with his father. They are situated upstairs opposite Warung Kampung, where I went to meet him again and observe him at work. The studio resembles a shrine to ancient art and culture. It is in this sacred space, that I find my friend who is receiving her tattoo. Sonteng sits cross legged throughout the procedure and after drawing the picture freehand, he begins his work. His bamboo stick is festooned with bells and tassels, each accessory

meaningful and symbolic. Beside him sits a small pot of ink which he uses to dip the point and transfer the ink to the body. As he works, his stick comes alive with quick movements and the bells jingle to his rhythm. The scene is mesmerizing. Hours later, Sonteng is finished. He lovingly cleans the area, lights an incense stick and for a moment silently leans over his art and blesses the tattoo. This traditional method allows the body to heal quickly, with very little redness and trauma to the skin. It is ideal for visitors who want to return to the ocean in a hurry, with only two to four days to wait, depending on the size of the piece. Sonteng muses

Several fast boat companies operate from various ports in Bali and offer a free transfer from your hotel to the boarding point, depending on your location. Ocean crossing times depend on weather conditions (around 1hr to 2hr). For fast boat companies, see directory.

The ferry departs regularly from Padang Bai in Bali, with the first ferry departing at 8am and arrives at the port of Lembar in Lombok. From Lembar take a taxi or shuttle to get to Bangsal port. The ferry crossing takes approximately 5-8hr, and 2hr for the taxi or shuttle from Lembar to Bangsal.

Take a flight to the international airport in Lombok Praya, get to Bangsal port (around 2hr) by taxi and book a boat from the port office to The Gilis.

Air Bali offers this service. You can book your flight online. The heliport is based at Benoa, Bali and will take you to the largest of the three Gili Islands- Gili Trawangan (around 45 min). Your booking includes transportation to the heliport in Benoa.

YOU ARE ON THE GILI ISLANDS

CULTURE & HISTORY

The three Gili Islands, composed of Gili Trawangan, Gili Meno and Gili Air, are located off the northwest coast of Lombok. In Sasak language, "gili" means "small island". There are more than 30 Gilis around Lombok, but Trawangan, Meno and Air are by far the most frequently visited. Because of their proximity to the equator, they have a tropical climate throughout the year with an average air temperature of 28C and water temperatures ranging from 26 to 29C. The rainy season runs from November to April and the dry season from May to October. The Gilis bathe in the Bali Sea at the convergence of the Indian and Pacific Oceans, and enjoy a drier micro-climate than the rest of Indonesia due in part to the fact that they are situated between two great volcanoes - Mount Rinjani on Lombok and Mount Agung on Bali.

Like the majority of the Lombok community, the inhabitants of the Gili Islands are primarily Muslim and each island has a mosque(s) emitting sounds of live prayer five times daily. Bahasa Indonesia is the national language spoken which unites all of the country’s islands but Gili locals speak 'Sasak Gili Air' which is slightly different to 'Sasak Lombok'. About 200 years ago, fishermen from Sulawesi of Makassar, Bugis and Mandar ethnicities arrived on the Gili Islands. They began to settle temporarily because of the abundance of fish in the sea and the presence of fresh water on Gili Air and at that time, sectioning off a bit of land with string was enough to claim it.

These otherwise nomadic people began to settle on the Gilis and cultivate the land, planting peanuts, tapioca and corn whilst continuing their tradition of fishing. They sold and exchanged their produce in the markets of Lombok and also traded portions of their land for livestock, rice and other much needed items not native to the islands. Coconut palms are indigenous to the Gilis while mango, banana and papaya trees have been introduced over the years. The first Western traveller to set foot on the Gili Islands came in 1984 to Gili Air. By the mid 1990’s Bali had gained international recognition as a travel destination and the Gilis began to be known as an off-the-beatentrack paradise escape. Today, the Gili Islands are flourishing and are attracting all types of visitors from every corner of the globe. Over time, the people of the Gili Islands have adapted to a multitude of changes and cultural immersions, but have managed to maintain their cultural identity. Historically the people here have seen their days of hardship when during WWII, Lombok and the Gili Islands were occupied by Japanese forces. The islands were used to contain prisoners of war and the locals endured forced labour. A hill situated on the south of Trawangan was used as a lookout post and today remnants of the bunker still remain. Trawangan derived it's name from the Indonesian word "terowongan" meaning "tunnels" of which a network were dug by the occupying forces. The holes have since been filled in.

TRAWANGAN When you hear about Gili T you probably also hear the words "party island" yeah? Thought we should just address that straight away! Gili T gained this title because it is the largest of the three northern Gili Islands with the most development, hence it offers the greatest abundance of everything - including nightlife. a backpacker island into something of a glam island is supported by the unveiling of new upscale boutiques, restaurants, resorts, spas, and now a heli-pad, however, it remains a hub of charm for a wide spectrum of travellers. It's an iconic island of variety with numerous options for every budget/lifestyle for eating, sleeping, entertainment and activities. Luxury Villas abound and less expensive accommodation is available for the budget traveller. Gili T has extraordinarily beautiful beaches and shimmering ocean waters of crystal-clear visibility for diving and snorkelling. This island boasts some of the finest coral gardens and the widest range of dive centers with the best socializing opportunities.

Although it is predominately known as a party island, Gili T has much more to it and venturing away from the densely developed east coast, you can find a plethora of vacant beaches. Renting a bicycle is a great way to see the island, bearing in mind there are some sandy patches! Seeing how life works here can be eyeopening, its not an escape from reality, just a slightly different one, but understandably surreal none the less! There are several conservation organisations based here including Gili Eco Trust, The Gili Shark Foundation, Cats of Gili and Horses of Gili. For getting involved in beach clean ups visit one of the dive centres on the island, make your vacation meaningful by giving back to the island! As you may know - there is no motorized transport on the Gilis and what a soothing break that can be! Surfing is popular off the south and it's not unwise to speak to locals about the break. For a supreme viewpoint walk up the hill on the south that was previously used as a lookout during WW II.

THE ISLAND OF WATER, CHARM & BALANCE

The closest island to Lombok, Gili Air is aptly named after the Indonesian word "air" meaning "water." It is the only Gili Island to have natural underground fresh water wells. Gili Air is gem of a spot that allows you to sample the best of both worlds of the Gili Islands- it has the relaxing charm of Gili Meno and a bit of the night life of Gili Trawangan. Here you can take it fast or slow and enjoy an abundance of water sports from diving to surfing to kiteboarding and land activities such as yoga and cycling. LOMBOK

With its largely unspoiled natural environment, vivid, diverse traditional culture and increasing infrastructure, Lombok island is an interesting compromise between touristic Bali and wild Sumbawa. Jagged coasts and sheltered bays, white-sanded empty beaches and lush green hills lined by rice paddies overlooked by majestic Mount Rinjani characterise Lombok’s natural landscape, while in traditional villages a diversity of practices coexist. The island is dotted with mosques, symbols of Islam, the Gililife 24

most practiced religion, but there are some important Hindu temples scattered in the West, heritage of the Hindu tradition. Sasak people, Lombok’s indigenous people, practice a syncretic form of Islam (wetu telu), which blends Hindu-Buddhist influences, Sunni Islam, animism and ancestral worship. Authentic Sasak villages offer a valuable insight into the island’s traditional culture, famous for the turun temurun, Capital city Mataram is a busy town with colourful markets and the gate to Senggigi’s

stunning bays in the North and Mt Rinjani’s green slopes to the East. In the South, world-class surf breaks, a multitude of pristine beaches and gentle hills are an open invitation to explore the surroundings at one’s pace and enjoy the tropical vibe. The East offers a complete different scenery; from waterfalls, rainforests and hills carpeted with rice paddies, the surroundings of Mount Rinjani provide a myriad of hike options, from easy walks to very challenging treks in a beautiful panoramic landscape. In the South-West, facing Lembar harbour and Sekotong, are the less known Gilis (meaning “small island”), where snorkelling in the lively reef and chilling on the empty beaches are the few tourists’ main activity. With its cultural and environmental diversity, Lombok is the ideal destination to discover something new everyday.

SCUBADIVING Divers from all over the world come to experience the underwater world of the Gili Islands. Warm clear waters, many dive spots easily accessible and suitable to all levels make the Gilis a great diving destination, appealing to beginners who experience the Big Blue for the first time as well as to experienced or technical divers who are interested in small sea creatures and unusual dive spots. Expect to swim with elegant white and black-tip sharks and friendly turtles, observe extravagant cephalopods and ghost pipe-fish hidden in plain sight and explore wrecks turned into the home of Gililife 26

colourful fish schools! Home to over 3,500 marine species including a variety of small sea creatures, the Gilis are also becoming a sought-after destination for muck diving. There are a multitude of centres that can plan just the right dive for you and the Gili Islands Dive Association ensures high diving standards and safe diving practices are applied at all times. Every diver contributes to a “reef tax”, which is included in the cost of their first dive and goes to support the NGO Gili Eco Trust, a conservation organisation who implements projects such as coral reef restoration biorocks.

Snorkelling is a good way to freely explore the waters around the Gili islands. Let yourself drift with the current whilst being careful because sometimes it can be very strong. You can easily rent the mask, snorkel and fins on all the Gili islands. Another option is taking part in a snorkelling trip – a day out on a boat.

Many local agencies offer this service and you can book this trip on site or at your hotel. You leave in the morning around 9am for a full circuit of the Gilis, you stop for lunch and come back at about 4pm. Regardless of the island where you depart from, the boats will tour the most famous spots of the three islands, where marine life is abundant. Expect to see parrotfish and butterfly fish, dense schools of trevallies as well as some species of soft corals. Snake eels are also a common sight and you will most probably see giant turtles swimming along your side.

FREEDIVING

Learn to dive deeper on just one breath, without any equipment except your fins and mask ! Freediving is the most natural and quiet way to explore and get closer to animals underwater and is a discipline that teaches you to relax and be at ease with yourself. The best way to learn is from a professional and on the Gili islands many dive centres are specialised in freediving and offer courses and dives for all levels, in different sites and ensuring safety first at all times. Freediving teaches us about the connection between our body and mind, patience, perceived limitations and challenging our self-imposed boundaries. What we learn in the water can also be applied to our daily lives on dry land. There are many different aspects to apnea, including underwater hockey, underwater rugby, spearfishing etc. You just need to find your favourite way of being underwater.

WATER SPORTS The Gili Islands offer endless possibilities for water lovers besides diving and snorkelling. Enquire at one of the many watersport centres for a variety of activities on all the three islands. You can take a glass-bottom boat tour to see the underwater world without venturing

into the ocean. Rent a kayak and explore the coastline at your own pace or opt for a stand-up paddle board, a great way to approach the water and test your balancing skills. On Gili Air and Gili Trawangan there are a few nice surf spots which are worth a “dawnie�. Please

be aware of currents and tides and surfing experience is advisable. Subwing is the ultimate water sport that allows you to glide in the water pulled by a boat at slow speed, while parasailing will take you to new heights and safely land you back in the water! Have fun!

The Gili Islands are home to one of the most exquisite species in the ocean. One of only two vertebrate species known, that create its own intense blue pigment, Synchiropus Splendidus, is a romantic fish that displays a most enchanting mating ritual at dusk with its mate. The male and female Mandarin fish, latch on to one another and rise together in unison above the coral. In perfect synchronicity the male releases his sperm and the female, her eggs. The fertilised spawn drift away with the current and settle amongst the reef where the new generation hatch. These reef dwellers prefer sheltered lagoons and inshore reefs and are not easily spotted due to their

bottom feeding habits. Reaching only 6cm in length, these intensely coloured fish have no scales. Instead they are covered in a layer of smelly and bitter slime, which blocks out disease and discourages predators. Named after the ornate Imperial Chinese robes, Mandarin fish are on the bucket list of most avid divers and underwater macro photographers. To achieve a good close-up photo of this beauty, the use of a red focus light is advised. Due to their particular feeding habits, they prefer small crustaceans and other invertebrates. These fish are difficult to establish in salt water aquariums. Luckily, divers on the Gili Islands are blessed to see these brilliantly coloured fish in their natural environment.

There are uncountable activities you can enjoy on land in all three islands. You can decide to learn how to cook delicious dishes from Indonesian cuisine or how to make jewellery, and even take part in an art class! You may find yourself exploring WWII bunker remnants in Trawangan or riding a horse at sunset, sweating in the gym or dancing to the rhythm of salsa! Try capoeira, samba, or explore different styles of yoga such as fly-high, sunset meditation, aerial silk or acroyoga! When night falls, go for a movie on the beach or squeeze your brain and join a quiz night. If you want to mingle with the locals, join them for a football or beachball match on the beach or challenge them in a badminton game! When did you arrive on the Gilis? I arrived on Gili Trawangan early 2012 in search of volunteering on a coral restoration project. What are you passionate about? I am incredibly passionate about protecting the ocean in any way I can, if everyone slightly changed their daily habits, it would be easy. I also love cleaning the beach, I can be in my happy place, and make a difference at the same time. What is your motto in life? Make a difference in the world, even just a tiny one. What is your favourite thing about living on the Gilis? To be surrounded by sea, surrounded by friends and surrounded by cats. If you could make one difference in the world what would it be? That every child in the world had the chance to go to school and be safe and secure. What interesting projects are you and your team up to at the moment? Too many to name! But we are very excited that our little eco shop is open again, the kids are enjoying our volunteer environment lessons in school and after finishing another Bio-rock workshop, we have newly certified eco warriors protecting our coral reefs.

I love this job as it allows me to meet people from all around the world. What is your motto in life? Be successful and help everyone! What is your favourite thing about living in the Gilis? I love that I can go snorkelling in the day and spearfishing at night. If you could make one difference in the world what would it be? I would like to make peace between all religions. When did you start to take an interest in crafting jewellery? Around 10 years ago, but my main focus was painting. In 2015 I moved to Gili Air and opened my own handicraft store called Abay Handicraft and this is when my real passion began.

SLOW FOOD & YOGA FESTIVAL Bangkit in Bahasa Sasak (local language of Lombok) means ‘to rise’. The island of Gili Air will be a hive of activity in June and July as two festivals are taking place! Gili Bangkit Festival, a month-long cultural festival will also include a five-day, Slow Food and Yoga Festival. To celebrate the indomitable spirit of the Gili Islands, these cultural and lifestyle events will present a unique synthesis of local and regional Indonesian culture as well as newer international offerings on Gili Air. Gili Bangkit Festival will offer visitors the freedom to take off their shoes, live vehicle-free and explore Gili Air’s fascinating culture, through art and food. Fun activities include a triathlon, traditional stick fighting, workshops by local artisans, musical performances and dancing. While spending time on Gili Air, visitors will have the rare opportunity to immerse themselves in Sasak culture.

Slow Food and Yoga Festival will afford attendees the opportunity to step into a magical space outside of the frantic operations of normal life and lower collective rhythms down to a Zen hum! Yoga by acclaimed facilitators and cuisine from famous Indonesian chefs will be offered at various locations around the island. Top chefs and film-makers from the region will headline events, stallholders will showcase regional specialties, and visitors can participate in food-foraging tours and cooking classes. All proceeds from Slow Food and Yoga Festival will be used to support educational initiatives, such as the zero-waste permaculture garden project at the local school, which has been created to encourage long-term eco-friendly behavior. Sustainability is the main theme and the festival area will have zero plastic and throwaway containers or packaging. The team who organized the GILI BANGKIT FESTIVAL consists of local and foreign stakeholders on the Gilis. The collaboration includes Subur, the current head of the three islands and owner of Biba Beach establishment, who will headline one of the food events. Hero, celebrity chef and owner of Warung Sunny, will head up local events. The evening food events will be organised by Julie Thonnard, the owner of Slow Villas and Emily Christian, the owner of Flowers & Fire Yoga will co-manage the yoga events.

GENDANG BELEQ

Peresean, also known as ‘stick fighting’, is an ancient martial art that originated from Lombok folklore. According to the legend, Princess Mandalika chose to take her own life, rather than be the reason that two suitors fought to the death in order to win her hand in marriage. Armed with rattan sticks called ‘penjalin’, and an armored buffalo or cow hide shield called ‘ende’, the fighters attack each other using the shield to defend themselves. Gililife 50

Peresean fighting is steeped in Sasak history and was originally practiced in traditional ceremonies when soldiers from the Lombok Kingdom won a war. It was also used as part of a ceremony to invoke rain during times of drought. Peresean fighting is now part of traditional and cultural entertainment in Lombok.

Gendang beleq is a dance and musical performance from Lombok. It is a popular performance among the native Sasak people. The name gendang beleq is a Sasak language term, which means ‘big drum’. The performance consists of a group of musicians playing, dancing and marching with their traditional instruments, centered on two big drums or ‘gendang’ players. The ensemble for the gendang beleq performance consists of main players who perform with the two large drums. ANGKLUNG The children from the local Elementary School on Gili Air will be performing, using the local angklung musical instrument. The angklung is designed from bamboo tubes, which are attached to a bamboo frame. The base of the frame is held in one hand, whilst the other hand shakes the instrument, causing a repeating note to sound. The tubes are carved in such a way as to have a resonant pitch when struck and are tuned to octaves. Each of the three or more performers in an angklung ensemble play one note or more, but altogether complete melodies, are produced. 51 Gililife

One of the missions of the Slow Food & Yoga Festival, is to provide information to visitors on how to travel sustainably, as well as assisting local communities to create initiatives to improve their practices. The foundation organizes an annual circus show and donations are used towards stationery supplies. Other initiatives include providing an English teacher and teaching the musical instrument called Anklung. This vast establishment on the beach boasts an incredible collection of music memorabilia and it is highly recommended to take your time and have a closer look at Boots’ treasure. A particular favourite is the humongous print of the Rolling Stones, which looms over the bar area. Boots, the owner of Bel Air is full of energy and excitement and he confesses to an illustrious past in the music industry and has many a tale to tell. In the third year of his Architectural Degree, he admits to being bitten by the travel bug, after a trip to India, which changed his course. “I became a hippie… then I became a yuppie,” he reminisces, “I sold rentals in England. Now I’m a cross between the two… I’m a yippie-yaoh!” He laughs. He moved to Indonesia in 1986, building and managing a resort in Umalas for 15 years. Seeking somewhere more peaceful, he Gililife 56

relocated to the Gilis, “Bali became something I didn’t go to Bali for – hustle and bustle and traffic jams.” Gili Air offered the perfect solution. Boots opened Bel Air Resort in 2015 and it is home to a range of accommodation options. MENO DIVE CLUB JOIN THE CLUB... GILI MENO

We met up with James Holt, owner of Meno Dive Club, to see how his new business venture is getting on. Very well, as it turns out… Having lived on Gili Meno for six years, James has plenty of experience in the world of diving. His passion for diving sparked in New Zealand where he was born and raised. He travelled to the Philippines, where he settled for a while and earned his Divemasters, working with tourists and locals as an instructor. From one paradise to another, James relocated to Gili Meno six years ago and began working in a local dive shop. After lending his expertise to other businesses, he decided to open his own establishment in December last year, and so, Meno Dive Club was born.

Offering the full complement of diving courses, PADI-certified Meno Dive Club is popular with the tourists who flock to the quietest of the three islands. With courses tailored for Beginners all the way through to Divemasters, anyone is welcome. Discover Dives are available to those who want to experience an introduction to marine life, or who just want a fun adventure. For training, the dive centre has its own huge pool, along with classrooms and a bar for divers to socialise and chill out after long days in the sun and warm tropical waters. Ideally located in the harbour area, the team behind Meno Dive Club is as international as the customers they welcome. The team is from Malaysia, Belgium and France, as well as New Zealand! James enthuses, “We created a pretty relaxed, chilled environment, obviously with safety at the forefront,” he offers. The equipment is brand-new and there is an informal and very genuine feel to the shop itself. “We have kept the environment natural, using local building materials, like bamboo and alang-alang, sourced from the island". So, what is the next step in James’ journey? He and his team are looking forward to a busy high

season and he is keen to show off everything the business has to offer. “We will be showing weekly conservation movies at night”, James says, very aware of the environmental responsibilities that come with running a dive shop. Speaking of which, Trash Heroes, a global rubbish-collecting initiative, is up and running on Gili Meno, with Meno Dive Club staff dedicated to donating time to the project. “We are also going to organise clean-up dives once a month,” James reminds us, happily making his mark on the beautiful island in the best way possible. We chatted with owner, Elva, to find out what makes this new kid on the block so different… Elva has been living on the Gili Islands for years. With a resume packed full of experience from working in resorts, owning warungs and small local eateries, Elva has made it clear that she knows the island inside out. For her latest venture, she has chosen the quieter beauty of this much-loved social hub, which she is showcasing with her latest venture, CozyBaze. This new accommodation and chillout space is home to an impressive 40 rooms, including 4 private rooms. Don’t let the size mislead you, however, as this zen den is quiet, peaceful and just as relaxing as it is

The chilled atmosphere offers a refreshing change from the strip of bars on the other side of the island, which is still within easy walking distance. Given that the loud music and drinks deals on the other side of the island are part of Gili Trawangans’ attraction, why did Elva decide to set up this ultra-calm zone? “I like that we’re close to nature here, close to the beach and being surrounded by the ocean. If everything gets a bit too stressful, I can just go to the beach and swim" she explains.

That sounds like the ideal holiday destination to us! With a restaurant opening soon, Elva is keen to provide a full range of facilities for her lucky guests. Movie nights are also on top of the to-do list, with volleyball tournaments following just after. Barbeques are universally-loved, so they will be added to the dining schedule and it is guaranteed they will be popular. Rumours have it, that a beer garden is also in the pipeline. CONSERVATION CONVERSATIONS ABOUT CONSERVATION GILI AIR From setting up a paradise resort for visitors to Gili Air, to receiving a prestigious award for their work on shark and coral conservation, Rose and her husband, Andreas, have got island living down to a fine art. In 2015 Rose and her husband bought a little paradise called Villa Nangka. In the same year, together with a friend, they also started The Gili Shark Conservation Project. “It was just three friends who shared a huge passion for the ocean, and we all lived on the island,” Rose smiles. “The reefs surrounding the Gili Islands were changing rapidly and we saw fewer and fewer sharks on our dives. We thought it would be really cool if we could start something together instead of just standing on the side-line and watch how other people try to solve a problem which we are all responsible for. So we did!” “We were always dreaming about how we could change the world and now we had the tools to do something.” She explains the reasoning behind setting up two businesses at the same time. “We Gililife 62

thought that one project could become quite boring, so why not do two?" They decided to dedicate one of the five luxury villas at Villa Nangka to guests who want to join the conservation project. GSC set up a website, inviting people to join their research team a few years ago. “We never thought it would actually happen!” Rose explains. She remembers that they had responses almost immediately. Fast-forward to today. They have now hosted over 100 ‘Shark Warriors’ from 30 different countries, all of whom are dedicated to taking care of our oceans. The research team of GSC share their findings with the local government and international partners to make them aware of the conditions and environmental changes, highlighting areas that are suffering to encourage action and implement change where necessary. They also use their data to build a case strong enough to prove to government officials that this area is a critical habitat for

black tip and white tip reef sharks and deserves official recognition of this to improve protection within the area for these species. They now use seven different methods to assess the health of the reef and the sharks. They educate local school children about conservation and also manage ‘Dive for Debris’ sessions every Friday. They are currently seeking new teachers who would love to tell the children of Gili Air all about conservation. It is not just people on the island who appreciate the work they’re doing. GSC recently won an award in recognition for their conservation efforts from the International SeaKeepers Society, an NGO committed to oceanographic research, conservation and

education. They have even agreed to sponsor GSC’s latest project. “In a secret location somewhere around Gili Air, we will start a coral restoration project” Rose beams. “We plan to use a new method we discovered while researching in nearby Nusa Lembongan.” If you fancy being involved, check out their Gili Shark Conservation website. PITUQ CO. A local non-profit NGO that supports less fortunate people around Lombok. For several years, the founders of Pituq Co. have been raising funds to support underprivileged people by donating much-needed supplies such as fresh water, sanitary items and learning aids for children. Following a multitude of natural disasters in the region in 2018, Pituq Co. has been donating basic supplies, organising trauma healing for the children and distributing school supplies as well as educating camps and villages about hygiene and sanitation. Millions of people around the world have been inspired to alter their eating habits by switching to a vegetarian or vegan based diet and so the humble soybean has come into its own as a major source of food protein. ‘Kedelai’ in Bahasa Indonesia, is the legume native to East Asia and is one of the most vital components of the Indonesian diet. Soybeans or Glysine Max, is classified as an oilseed, rather than a pulse, and are consumed daily in Indonesia in the form of tahu and tempe. This versatile legume features in many dishes such as curries, stir-fries, gado-gado, sates and soups. Soymilk, an alternative to dairy, is delicious in smoothies and can be enjoyed by the lactose-intolerant. Soybeans contain all 8 essential amino acids, vitamin K, riboflavin, folate, vitamin B6, thiamine and vitamin C. Rich in iron, manganese, phosphorus, copper, potassium, magnesium, zinc, selenium and calcium, this little bean packs a mineral punch. First writings citing tofu, date back to 902AD and since then, their illustrious history has been recorded. During the US Civil War, soybeans were used instead of coffee beans and their components are now found in ink, candles, cleaning and personal-care products and more recently, in renewable fuel. The soybean plant has the ability to use nitrogen in the air. The microorganisms that live on the roots of the soybean, convert this nitrogen into a form the plant can use, thereby creating its own fertilizer. Ingenious! Gililife 72

INGREDIENTS TEMPE

THIS WEEKS DELICIOUS RECIPE:

Tempe Goreng

100g tempe 1 egg 4 tbsp wheat flour ½ teaspoon ground white pepper 4 pinches of salt

SAMBAL 1 tomato 1/2 cm terassi (shrimp paste) 2 small chilis 1 lime ½ teaspoon of white sugar

WITH SPICY SAMBAL!! PREPARATION - TEMPE • Blend the tempe and egg. Add the salt and pepper. • Once blended it will become a dough-like consistency. Place in a bowl and sir in the flour until the texture is even. • Roll out the dough, cut into any style of your choice and deep fry until golden and crisp.

PREPARATION - SAMBAL • Blend or crush all ingredients using a blender or mortar & pestle (excluding the lime). Once the ingredients have broken down into a paste, add lime to taste. Place the sambal into a small dish alongside the crispy tempe.

SERVING SUGGESTIONS Enjoy one of Indonesians most famous dishes by dipping the crispy Tempe Goreng into the Sambal Sauce! This recipe serves one to two people. 73 Gililife
