EDITO ISSUE No. 41 JULY 2017 The reflective times of the fasting month have come to an end with the hectic Idul Fitri celebrations and July kicks off with a wide range of exciting activities to entertain those who visit the Gili Islands for the first time as well as to surprise local expats. In this issue, we pay tribute to Freediving, one of the most practiced activities in the Gili Islands and a fun discipline that allows to observe the underwater world in complete silence, in connection with the elements and ourselves. In addition, we feature some of the businesses that have radically changed the experience of travelling to the Gili Islands. Read about how transport in the region has changed through the story of Kuda Hitam, the fastest speed boat service between Amed and the Gilis; witness the sustainable development of Aura Selong Selo in Selong Belanak, South Lombok, discover Coffee & Thyme, created by the cravings of a decent cup of coffee and a good slice of cake and celebrate Pesona Beach Resort & Spa 10th anniversary!

THE GILI ISLANDS
CULTURE & HISTORY
The three Gili Islands, composed of Gili Trawangan, Gili Meno and Gili Air, are located off the northwest coast of Lombok. In Sasak language, "gili" means "small island". There are more than 30 Gilis around Lombok, but Trawangan, Meno and Air are by far the most frequently visited. Because of their proximity to the equator, they have a tropical climate throughout the year with an average air temperature
Gililife 26
of 28C and water temperatures ranging from 26 to 29C. The rainy season runs from November to April and the dry season from May to October. The Gilis bathe in the Bali Sea at the convergence of the Indian and Pacific Oceans, and enjoy a drier micro-climate than the rest of Indonesia due in part to the fact that they are situated between two great volcanoes - Mount Rinjani on Lombok and Mount Agung on Bali. Like the majority of the Lombok community, the inhabitants of the Gili Islands are primarily Muslim and each island has a mosque(s) emitting sounds of live prayer five times daily. Bahasa Indonesia is the national language spoken which unites all of the country’s islands but Gili locals speak 'Sasak Gili Air' which is slightly different to 'Sasak Lombok'. About 200 years ago, fishermen from Sulawesi of Makassar, Bugis
and Mandar ethnicities arrived on the Gili Islands. They began to settle temporarily because of the abundance of fish in the sea and the presence of fresh water on Gili Air and at that time, sectioning off a bit of land with string was enough to claim it. These otherwise nomadic people began to settle in the Gilis and cultivate the land, planting peanuts, tapioca and corn whilst continuing their tradition of fishing. They sold and exchanged their produce in the markets of Lombok and also traded portions of their land for livestock, rice and other much needed items not native to the islands. Coconut palms are indigenous to the Gilis while mango, banana and papaya trees have been introduced over the years. The first Western traveller to set foot on the Gili Islands came in 1984 to Gili Air. By the mid 1990’s Bali had gained international recognition as a travel destination and the Gilis began to be known as an off-the-beatentrack paradise escape. Today, the Gili Islands are flourishing and are attracting all types of visitors from every corner of the globe. Over time, the people of the Gili Islands have adapted to a multitude of changes and cultural immersions but have managed to maintain their cultural identity. Historically the people here have seen their days of hardship when during WWII, Lombok and the Gili Islands were occupied by Japanese forces. The islands were used to contain prisoners of war and the locals endured forced labour. A hill situated on the south of Trawangan was used as a lookout post and today remnants of the bunker still remain. Trawangan derived it's name from the Indonesian word "terowongan" meaning "tunnels" of which a network were dug by the occupying forces. The holes have since been filled in.
ETIQUETTE TIPS FOR YOUR VISIT TO THE GILI ISLANDS • Always use your right hand when you give/ take/ eat/ touch • • Never point at something with your foot • • When you are a guest, wait until you are invited to sit down • • Remove your shoes before entering a house, shop or any other place • • Never get angry, always try to solve problems with a smile • • The Gili islands are Muslim, and it is sometimes inappropriate to walk around in a state of undress, going topless can be translated as a lack of respect •

THE UNFORGETTABLE ISLAND OF FASHION & FUN
TRAWANGAN When you hear about Gili T you probably also hear the words "party island" yeah? Thought we should just address that straight away! Gili T gained this title because it is the largest of the three northern Gili Islands with the most development, hence it offers the greatest abundance of everything - including nightlife. There are fantastic parties every night of the week that attract large crowds of people from all different walks of life and every Gililife 28
corner of the globe. Nightly features start with a sizzling local food market and advance into live music, beach parties and DJ's. There's also the option of watching movies screened at an open air beach "theatre." The rumoured growth of Trawangan from a backpacker island into something of a glam island is supported by the unveiling of new upscale boutiques, restaurants, resorts, spas, and now a heli-pad, however, it remains a hub of charm for a wide spectrum of travellers. It's an iconic island of variety with numerous options for every budget/lifestyle for eating, sleeping (backpacker dorms to luxury villas), entertainment and activities. Gili T has extraordinarily beautiful beaches and shimmering ocean waters of
crystal-clear visibility for diving and snorkelling. This island boasts some of the finest coral gardens and the widest range of dive centers with the best socializing opportunities. Although it is predominately known as a party island, Gili T has much more to it and venturing away from the densely developed east coast, you can find a plethora of vacant beaches. Renting a bicycle is a great way to see the island, bearing in mind there are some sandy patches! Seeing how life works here can be very eye-opening: it's not an escape from reality- just a slightly different one but understandably surreal nonetheless! There are several conservation organizations based here including Gili Eco Trust (GET) and The Gili Shark Foundation-
GILI TRAWANGAN
ask around (try dive centers) about how you can get involved! As you may know - there is no motorized transport in the Gilis and what a soothing break that can be! Surfing is popular off the south and it's not unwise to speak to locals about the break. For a supreme viewpoint walk up the hill on the south that was previously used as a lookout during WW II. 29 Gililife

THE SPIRITUAL & RELAXING ISLAND OF LOVE
MENO
Set between Gili Air and Gili Trawangan, Gili Meno arguably offers the finest beaches of all the Gili Islands. The sands are white and soft beneath your feet and you can relax on vacant stretches of beach lined with coconut trees. Meno is the real escape to paradise where you can fill your days with activities like diving, snorkeling, surfing or just simply taking in the tranquil views. This island is a treasure of local lifestyle where time seems to bend and life seems to slow down. It is the least developed island Gililife 30
where you can completely relax amongst abundant nature- Meno is a holiday within a holiday. Here you can walk or take a cidomo (horse&cart) to attractions such as the salt lake where it's possible to spot rare blue kingfishers and the elusive island monitor lizard, or venture to the eerie remnants of an abandoned resort- where a popular wreck-dive site exists just offshore. To get around either rent a bike, or take a stroll, it's possible to walk the island in an hour. Gili Meno offers great selections of local and western restaurants and most places serve a variety of the two. There are also traditional warungs for popular local dish- nasi campur. There is a variety of accommodation on Meno and your options range from backpacker dorms, beachfront and village bungalows to luxury villas, apartments and resorts. There is also open air baruga-style accommodation for the
GILI MENO
true outdoorsmen- er, and women! Other points of interest on Meno include a bird park and the turtle conservation pools (which run entirely on donations). This island is primarily popular amongst couples and those seeking a more enlightening, recharging time. Yoga and meditation are up there with diving and honeymooning for making Gili Meno an ideal travel destination. In the past, Meno was said to have a mosquito problem but this is not the case- in the wet season there are normal levels of what you would expect in a tropical place, perhaps even less, and in the dry season- tidak apa apano problem!!

GILI AIR
THE ISLAND OF WATER, CHARM & BALANCE
The closest island to Lombok, Gili Air is aptly named after the Indonesian word "air" meaning "water." It is the only Gili Island to have natural underground fresh water wells. Gili Air is gem of a spot that allows you to sample the best of both worlds of the Gili Islands- it has the relaxing charm of Gili Meno and a bit of the night life of Gili Trawangan. Here you can take it fast or slow and enjoy an abundance of water sports from diving to surfing to kiteboarding and land activities such as yoga and cycling. In the evenings you also have the option of watching movies screened on the beach (weather permitting). Gili Air has pristine beaches and clear turquoise waters Gililife 32
gili AIR that soothe and revive. It is the most locally populated island with 1500 residents and it's not hard to see a special pride amongst the locals for the awe that their land inspires. There is the biggest concentration of bars and restaurants on the east of Air where you can take in views of lush green Lombok and the heights of Mt. Rinjani. Venture to the northwest and you will find yourself on empty sands gazing at the majestic Agung volcano of Bali. For sunsets be sure to be on the north/west side of the island. Happiness is infectious on this island and it's friendly inhabitants will never miss a chance to make you smile. Gili Air has a great selection of restaurants including homemade
Italian or Mediterranean food, Spanish tapas and exquisite cuisine options as well as a number of charming Warungs serving all the best local dishes. There's a range of accommodation for every budget from backpackers to bungalows (on the beach and in the village) and private villas and resorts. There are also a number of spas to choose from and you'll be delighted to find quality shopping on the island! Because of Air's beauty and increasing popularity as a dive and travel destination the island is seeing rapid development but somehow maintains it's local charm and atmosphere. Wander throughout the island to take it all in as you lose and find yourself here!

SCUBADIVING Divers from all over the world come to experience the underwater world of the Gili Islands. Warm clear waters, many dive spots easily accessible and suitable to all levels make the Gilis a great diving destination, appealing to beginners who experience the Big Blue for the first time as well as to experienced or technical divers who are interested in small sea creatures and unusual dive spots. Gililife 34
Expect to swim with elegant white and black-tip sharks and friendly turtles, observe extravagant cephalopods and ghost pipe-fish hidden in plain sight and explore wrecks turned into the home of colourful fish schools! Home to over 3,500 marine species including a variety of small sea creatures, the Gilis are also becoming a soughtafter destination for muck diving.
There are a multitude of centres that can plan just the right dive for you and the Gili Islands Dive Association ensures high diving standards and safe diving practices are applied at all times. Every diver contributes to a “reef tax, which is included in the cost of their first dive and goes to support the NGO Gili Eco Trust, a conservation organisation who implements projects such as coral reef restoration biorocks.

SPECIES
This months' featured species
' Sepidiidae' Commonly known as
CUTTLEFISH
Image by: Sam Herridge Found in all the world's oceans, cuttlefish are bottom dwellers, who hide in the day and hunt in the night. They are molluscs and belong to the group of cephalopods, known for their large brain. The body of a cuttlefish is composed by 8 arms and 2 tentacles, which they use to catch prey, typically crabs, shrimps and fish. They display amazing camouflage techniques and some species can change colour, pattern and even texture of their mantle! Camouflage is also used as a courtship behaviour and cuttlefish can be seen displaying flashy and changing colours to attract females!
Gililife 36
DID YOU KNOW... Cuttlefish move by jet-propulsion and, when threatened, they eject a cloud of dark ink which is kept in an ink sac near the rectal gland. This ink is known as the pigment sepia. In Latin “sepia refers to the animal as well as to the pigment.
ACTIVITIES
TURTLES GUARANTEED!! PLUS Beautiful corals and all kinds of fish!
SNORKELLING Snorkelling is a good way to freely explore the waters around the Gili islands. Let yourself drift with the current whilst being careful because sometimes it can be very strong. You can easily rent the mask, snorkel and fins on all the Gili islands. Another option is taking part in a snorkelling trip – a day out on a boat.
Gililife 38
Many local agencies offer this service and you can book this trip on site or at your hotel. You leave in the morning around 9am for a full circuit of the Gilis, you stop for lunch and come back at about 4pm. Regardless of the island where you depart from, the boats will tour the most famous spots of the three islands, where marine life is abundant. Expect to see parrotfish and butterfly fish, dense schools of trevallies as well as some species of soft corals. Snake eels are also a common sight and you will most probably see giant turtles swimming along your side.

ACTIVITIES
A BREATH-TAKING EXPERIENCE
FREEDIVING
Learn to dive deeper on just one breath, without any equipment except your fins and mask ! Freediving is the most natural and quiet way to explore and get closer to animals underwater and is a discipline that teaches you to relax and be at ease with yourself. The best way to learn is from a professional and in the Gili islands many dive centres are specialised in freediving and offer courses and dives for all levels, in different sites and ensuring safety first at all times. Freediving teaches us about the connection between our body and mind, patience, perceived limitations and challenging our self-imposed boundaries. What we learn in the water can also be applied to our daily lives on dry land. There are many different aspects to apnea, including underwater hockey, underwater rugby, spearfishing etc. You just need to find your favourite way of being underwater.
Gililife 40
MORE GILI ISLAND
WATERSPORTS The Gili islands offer endless possibilities to water lovers beside diving and snorkelling. Enquire at one of the many watersport centres for a variety of activities on all the three islands. You can take a Glass-Bottom Boat tour to see the underwater world
without adventuring into the ocean. Otherwise, you can rent a Kayak and explore the coastline at your own pace or opt for a Stand-Up Paddle Board, a great way to approach the water and test your balancing skills. On Gili Air and Gili Trawangan there are a few nice Surf spots which are
worth a “dawnie, you just need to be aware of currents and tides and a bit experienced. Subwing is the ultimate watersport that allows you to glide in the water pulled by a boat at slow speed, while Parasailing will bring you to new heights to then safely land in the water! Have fun!

ACTIVITIES
YOGA
GET CONNECTED
Gililife 42
It's no wonder that the Gilis are becoming a popular yoga destination. Stunning ocean views, colourful striped skies profiling Mount Rinjani and Mount Agung at sunrise and sunset and the natural setting make the Gilis an inspiring place to practice. Many remarkable yoga schools scattered around the three islands offer classes that cater for the tastes of picky yogis as well as to open-minded visitors who want to try yoga for the first time.
Ubud is Indonesia’s most famous yoga destination, but more and more people come to practice in the Gilis, where yoga classes can be taken in bamboo structures surrounded by peaceful gardens, rooftop terraces where you can meditate as the sun appears on the horizon, or breezy shalas on the beach. For a closer contact with the water element, you can even try yoga on a stand-up paddleboard. Worst-case scenario you will have a refreshing swim!
ACTIVITIES
TREAT YOURSELF
SPA Gililife 44
There is no better way to relax after a day of diving and snorkelling or cruising around the Gilis than receiving a good massage. Many spas in the three islands offer different types of massages as well as all kinds of beauty treatments. If you like it strong, we suggest to try traditional Sasak or Balinese massage, while for a more relaxing treatment, probably an Ayurvedic massage is the best option. Pedicure and manicure for both men and women or different waxing techniques are available; earcandles is a relaxing and unique way to have your ears cleaned and foot reflexology an excellent antidote to feet tired of walking around the islands. You can choose to receive your treatment in an oceanview spa or in the quietness of a bamboo breezy terrace; also check out the spas of the best hotels on the islands, as they offers quality treatments at a good price.
MORE FUN ONLAND
OTHER ACTIVITIES There are uncountable activities you can enjoy on land in all three islands. You can decide to learn how to cook delicious dishes from Indonesian cuisine or how to make jewellery, and even take part in an art class! You may find yourself exploring WWII bunker remnants in Trawangan or riding a horse at sunset, sweating in the gym or dancing to the rhythm of salsa! Try capoeira, samba, or explore different styles of yoga such as fly-high, sunset meditation, aerial silk or acroyoga! When night falls, go for a movie on the beach or squeeze your brain and join a quiz night. If you want to mingle with the locals, join them for a football or beachball match on the beach or challenge them in a badminton game! Check the latest updates at one of the local agencies or ask at the reception of your hotel.

FREEDIVING
"Freediving is about silence...the silence that comes from within" - Jacques Mayol 53 Gililife
FREEDIVING
WHAT IS
Gililife 54
FREEDIVING ?
Exploring the depths of the Big Blue on a single breath is an experience often described as magical and even mystical. Silently diving into the ocean free of equipment takes the human mind to a different place, a place where there is no perception of time and where minutes feel like seconds. By offering a privileged non-intrusive way to observe marine life, freediving is indeed the most intimate way to connect with the ocean; there is no other water activity that can get you closer to marine life and to yourself. Freediving is not about endurance or pushing your limits to hold your breath longer and going deeper, it is a practice of consciousness and awareness and it is greatly related to a serene state of mind and concentration skills. Freediving is a human activity as ancient as humanity. Before we are born, we spend 9 months living in an aquatic environment in our mother's womb and babies keep the ability to instinctively hold their breath under water for up to 40 seconds until they start walking. An evolutionary theory developed in the 20th century – the Aquatic Ape Theory - indicates that our primate ancestors were marine mammals, and the oldest archeological evidence of humans practicing freediving dates more than 7,000 years. Human populations across the world were diving without equipment mainly for food, pearls and corals hunting; underwater endeavors in ancient Greece has been widely described in myths and historical accounts and Japanese ama dive, a traditional fishing practice, dates more than 2,000 years and is still practiced today, mainly by women, who free dive repeatedly 20 meters deep 5-6 hours daily to collect pearls and seaweed.

FREEDIVING Gililife 56
NO, YOU DON'T NEED
SPECIAL POWERS
TO BE ABLE TO FREEDIVE!! All human beings, and many water going mammals such as dolphins and whales, have a set of reflexes that are activated if we hold our breath or when our face is in contact with water. This Mamalian Dive Reflex allows humans to tolerate low levels of oxygen. For many people this reflex is not very strong, but it is still there, and it is something that gets stronger with practice.
As we submerge in the water, our heart rate lowers up to 25%, blood rushes to the core and brain activity is lower, while the spleen releases a large quantity of red blood cells, allowing more oxygen to be stored in the blood. In addition to these instinctive reflexes, freedivers can dive deeper because beyond 10-20mt, buoyancy reverses and water brings us down as if gravity was reversing. This is known as “the doorway to the deep or "free-falling".

DISCIPLINES OF
FREEDIVING
'Freediving' is a broad term which encompasses a variiety of disciplines. Anytime we hold our breath in the water we are freediving. Here we have listed the 8x most common types of competitive freediving.

KUDA HITAM EXPRESS THE FASTEST TRANSPORT BETWEEN BALI, LOMBOK AND THE GILIS! Many people remember how long and uncomfortable it was to cross the Lombok Strait (separating Bali and Lombok). If you ask around, you will hear stories of endless journeys, characterised by long waiting times, unexpected changes and uncountable different means of transport! Until less than 10 years ago, the common way - beside flying to Lombok – to reach the Gili islands was to take the public ferry in Padang Bai (Bali), which in about 4 hours (often 6 or 7) would reach Lembar harbour in West Lombok. From there, a road trip of about 2 hours would bring you to Bangsal and from there you'd have to wait for the public boat to be full to leave to the Gilis. The whole trip would
last about 10-12 hours and the Gilis were more of a remote destination than a weekend gateway! The first speed boats were very expensive and could not offer reliable safety standards and it is only in the last few years, with the increase of speed boat companies that this way of reaching Lombok and the Gilis has become fast, safe and affordable. This direct innovation has now revolutionised the tourist market in the area and today over 2,000 people per day travel this way. You no longer have to spend the day trying to figure out how to cross the strait as speed boat companies such as Kuda Hitam Express offer reliable and fast transport service between Bali, Lombok and the Gili islands! 67 Gililife
GILI ZOOM “I took a jukung on my first trip to Trawangan in 1999.” John Huxley, one of the owners of Kuda Hitam speed boat company said. ”It took 4 1/2 hours and I arrived soaking wet, half-frozen and sunburnt at the same time! I thought then that there must be an easier way.” This was one of the reasons that convinced him to take over the company with his Balinese partner (Wayan Sukadana) in 2009. Kuda Hitam started with an original crew of 3 people, who were local fisherman with years of experience at sea but no familiarity with speedboats or outboard engines. “Our first boat was home-built of wood and fiberglass, 10 meters long and powered by 2 x 150hp Mercury engines, with a capacity of 20 persons.” John remembered. “I captained the maiden voyage with only 5 passengers and astounded Gililife 68
the crew by navigating direct to Gili T in the midst of a storm with no forward visibility by using a compass, something they knew nothing about. My reputation was made on that day and only slightly diminished when I demonstrated to them (much later!) how a compass works.” he laughed. Today, renamed Kuda Hitam Express 2, they operate a 13 meter long fiberglass boat powered by 4 x 200hp Yamaha engines with a crew of 5 and capacity of 40 persons and Kuda Hitam Express 3 - 17 meters long, 5 x 250hp Yamaha engines with a capacity of 70 persons - is on its way. Offering the fastest transfer between Bali and Lombok, a very professional service and a fully automated reservation system with all safety precautions met and exceeded, Kuda Hitam Express is the best choice to cross the Lombok strait!
Routes & Destinations Kuda Hitam Express operates between Bali (Amed), Lombok and the Gili Islands leaving every day from Amed at 9am to Gili T (arrives 10:15 am), Gili Air (10:30) and Bangsal (10:45) where all boats must stop for permission from the harbour master before proceeding back to Amed (arrives 12:30pm). Passengers to Gili Meno may get off on Gili T or Air and transfer back to Meno on the public ferry (speed boats have difficulty stopping on Meno due to obstructions in their harbour). In high season there is a second departure from Amed at 1:30pm. The boat may also be chartered for private transfers and excursions. Book directly with the company: www.kudahitamexpress.com or through one of the many travel agents across Bali, Lombok and the Gili islands! John suggests: On calm days the passage is smooth and easy but in rough weather waves can be as high as 5 meters. This can make for a very uncomfortable, even scary, crossing for some people. In conditions like this or if you are prone to sea-sickness, consider flying!

Mother of three young children, she is happy to see her kids loving their life in a multicultural school environment and in contact with nature. The respect for the environment is a value that the couple tries to infuse in their business, in which they implement a reduce waste policy and pursue the goal to completely ban plastic on the

COFFEE & THYME COME ANY TIME GILI AIR Indonesia is a world leading coffee grower, with a yearly production of over 500,000 metric tons of coffee. Coffee is grown across the archipelago, and displays a large variety according to the region of production and the type of roasting and processing. While coffee from Sumatra is known for its intense flavor, with cocoa, earth and tobacco notes, the one from Java has a heavy body, with a lasting finish and herbaceous notes. Coffee from Papua also presents a heavy body, but has chocolate, earth and a spicy finish. In Flores it is sweet, with chocolate and tobacco notes. Bali coffee is sweeter than other Indonesian coffees, with nut and citrus notes, while coffee from
Sulawesi is generally characterised by warm spices, is quite sweet and has a good body. Coffee experts say the taste of the coffee depends on the crops growing nearby, for example a chocolate taste results from the presence of a chocolate plantation, while the quality of the coffee depends on the altitude at which the coffee is grown. “If a coffee is good,” explained Umar, co-founder of Gili Air Coffee & Thyme, “twenty per cent depends on the taste, the body and the roasting, and 80% depends on the barista's skills”. Coffee & Thyme serves 100% Indonesian coffee, mainly their in-house blend, which is a mix between Java and Sumatra coffee and is passionately prepared by Umar & Melati's team: the best baristas on Gili Air!
79 Gililife
GILI ZOOM Umar and Melati came to Gili Air on different occasions and, although they loved their stay on the island, repeatedly noticed that the only thing missing was decent coffee and decent cakes. Umar, originally from Java and long living in Bali, and Melati, half Indonesian and half Dutch, decided to partner for a business venture that would make available what they had been missing themselves. This is how Coffee & Thyme was created and soon became THE place for coffee and cakes on Gili Air. Opened in March 2015 and strategically located in front of the harbour, the café has grown and now includes a restaurant, which serves a variety of tasty coffees and amazing food, familiar to the palates of Indonesians and
Gililife 80
foreigners alike. The concept is to pay tribute to the abundance of Indonesia, striving to source most of its ingredients locally and make Indonesian culinary tradition more approachable by presenting it in a Western way. “For instance, dairy products are not part of Indonesian culinary culture,” Melati explained “so vegan dishes perfectly fit this concept, and the fact of being vegan appeals to many Westerners” she added. Whether you are sadly leaving the island for good, you are off for a brief excursion, or you simply want to savour excellent food in front of a nice cup of coffee, go to Coffee & Thyme, where you can appreciate the last glimpse of island life at its busiest corner while treating your tastebuds.
Your personalised cake... Beside great coffee, Coffee & Thyme is island-wide known for its selection of home-made cakes. Surely, starting your day with a Banana bread and indulge in the Vanilla Citrus cake or the Apple Oat muffin is good, but the best is that you can have a whole one just for yourself! Ask Umar and Melati's team for a personalised birthday cake! Coffee & Thyme can also help you organise small private events such as a tailored lunch or a surprise breakfast! Gili Life recommends:
Taliwan Wrap: One of Lombok's traditional dishes prepared in a handy wrap, also available in a vegetarian version! Energy boosts: Find the blend of freshly squeezed juice suited to your mood!

GILI FRUIT
RAMBUTAN Native to Malaysia and belonging to the family of soapberries (Sapindaceae), rambutan are tropical fruits easily recognisable by a rough, spiky and hairy red skin. In fact, the name rambutan derives from the Malay/Indonesian word “rambut”, which means “hair. The flesh is white and sweet similar to lychees, though they are slightly bigger and less sweet, with a slight acidic taste. They grow on trees in clusters; when ripe, these ovois-shaped fruits can reach up to 6 cm in length. At its core, the rambutan bears a single seed, which is safe to eat when roasted. Lombok is a great place where to taste rambutan; stop at any fruit sellers on the road and you will never get enough!
