This month celebrates the Independence of Indonesia and on the 17th of August, citizens will be enjoying a day of festivities and celebrations. In this issue, we meet some of the inhabitants of the islands who have created independence in their own lives, by starting their own businesses and are reaching for success.

The Gili Islands are bustling with tourists and many fun events have been held on the islands. In July we had the Gili Menggawe Festival which showcased local food competitions, traditional Sasak stick fighting, and cultural games. The Slow Food and Yoga Festival was a huge success and the Gili Islands are fast becoming the ‘go-to’ place for yoga enthusiasts to visit and practice their art.

Several fast boat companies operate from various ports in Bali and offer a free transfer from your hotel to the boarding point, depending on your location. Ocean crossing times depend on weather conditions (around 1hr to 2hr). For fast boat companies, see directory.

The ferry departs regularly from Padang Bai in Bali, with the first ferry departing at 8am and arrives at the port of Lembar in Lombok. From Lembar take a taxi or shuttle to get to Bangsal port. The ferry crossing takes approximately 5-8hr, and 2hr for the taxi or shuttle from Lembar to Bangsal.

Take a flight to the international airport in Lombok Praya, get to Bangsal port (around 2hr) by taxi and book a boat from the port office to The Gilis.

Air Bali offers this service. You can book your flight online. The heliport is based at Benoa, Bali and will take you to the largest of the three Gili Islands- Gili Trawangan (around 45 min). Your booking includes transportation to the heliport in Benoa.

YOU ARE ON THE GILI ISLANDS

CULTURE &HISTORY

The three Gili Islands, composed of Gili Trawangan, Gili Meno and Gili Air, are located off the northwest coast of Lombok. In Sasak language, "gili" means "small island". There are more than 30 Gilis around Lombok, but Trawangan, Meno and Air are by far the most frequently visited. Because of their proximity to the equator, they have a tropical climate throughout the year with an average air temperature of 28C and water temperatures ranging from 26 to 29C. The rainy season runs from November to April and the dry season from May

to October. The Gilis bathe in the Bali Sea at the convergence of the Indian and Pacific Oceans, and enjoy a drier micro-climate than the rest of Indonesia due in part to the fact that they are situated between two great volcanoes - Mount Rinjani on Lombok and Mount Agung on Bali. Like the majority of the Lombok community, the inhabitants of the Gili Islands are primarily Muslim and each island has a mosque(s) emitting sounds of live prayer five times daily. Bahasa Indonesia is the national language spoken which unites all of the country’s islands but Gili locals

speak 'Sasak Gili Air' which is slightly different to 'Sasak Lombok'. About 200 years ago, fishermen from Sulawesi of Makassar, Bugis and Mandar ethnicities arrived on the Gili Islands. They began to settle temporarily because of the abundance of fish in the sea and the presence of fresh water on Gili Air and at that time, sectioning off a bit of land with string was enough to claim it. These otherwise nomadic people began to settle on the Gilis and cultivate the land, planting peanuts, tapioca and corn whilst continuing their tradition of fishing. They sold and exchanged their produce in the markets of Lombok and also traded portions of their land for livestock, rice and other much needed items not native to the islands. Coconut palms are indigenous to the Gilis while mango, banana and papaya trees have been introduced over the years. The first Western traveller to set foot on the Gili Islands came in 1984 to Gili Air. By the mid 1990’s Bali had gained international recognition as a travel destination and the Gilis began to be known as an off-the-beatentrack paradise escape. Today, the Gili Islands are flourishing and are attracting all types of visitors from every corner of the globe. Over time, the people of the Gili Islands have adapted to a multitude of changes and cultural immersions, but have managed to maintain their cultural identity. Historically the people here have seen their days of hardship when during WWII, Lombok and the Gili Islands were occupied by Japanese forces. The islands were used to contain prisoners of war and the locals endured forced labour. A hill situated on the south of Trawangan was used as a lookout post and today remnants of the bunker still remain. Trawangan derived it's name from the Indonesian word "terowongan" meaning "tunnels" of which a network were dug by the occupying forces. The holes have since been filled in. 17 Gililife

TRAWANGAN When you hear about Gili T you probably also hear the words "party island" yeah? Thought we should just address that straight away! Gili T gained this title because it is the largest of the three northern Gili Islands with the most development, hence it offers the greatest abundance of everything - including nightlife. There are fantastic parties every night of the week that attract large crowds of people from all different walks of life and every corner of the globe. Nightly features start with a sizzling local food market and advance into live music, beach parties and DJ's. There's also the option of watching movies screened at an open air beach "theatre." The rumoured growth of Trawangan from

a backpacker island into something of a glam island is supported by the unveiling of new upscale boutiques, restaurants, resorts, spas, and now a heli-pad, however, it remains a hub of charm for a wide spectrum of travellers. It's an iconic island of variety with numerous options for every budget/lifestyle for eating, sleeping, entertainment and activities. Luxury Villas abound and less expensive accommodation is available for the budget traveller. Gili T has extraordinarily beautiful beaches and shimmering ocean waters of crystal-clear visibility for diving and snorkelling. This island boasts some of the finest coral gardens and the widest range of dive centers with the best socializing opportunities.

Although it is predominately known as a party island, Gili T has much more to it and venturing away from the densely developed east coast, you can find a plethora of vacant beaches. Renting a bicycle is a great way to see the island, bearing in mind there are some sandy patches! Seeing how life works here can be eyeopening, its not an escape from reality, just a slightly different one, but understandably surreal none the less! There are several conservation organisations based here including Gili Eco Trust, The Gili Shark Foundation, Cats of Gili and Horses of Gili. For getting involved in beach clean ups visit one of the dive centres on the island, make your vacation meaningful by giving back to the island! As you may know - there is no motorized transport on the Gilis and what a soothing break that can be! Surfing is popular off the south and it's not unwise to speak to locals about the break. For a supreme viewpoint walk up the hill on the south that was previously used as a lookout during WW II.

The closest island to Lombok, Gili Air is aptly named after the Indonesian word "air" meaning "water." It is the only Gili Island to have natural underground fresh water wells. Gili Air is gem of a spot that allows you to sample the best of both worlds of the Gili Islands- it has the relaxing charm of Gili Meno and a bit of the night life of Gili Trawangan. Snorkelling is a good way to freely explore the waters around the Gili islands. Let yourself drift with the current whilst being careful because sometimes it can be very strong. You can easily rent the mask, snorkel and fins on all the Gili islands. Another option is taking part in a snorkelling trip – a day out on a boat.

Many local agencies offer this service and you can book this trip on site or at your hotel. You leave in the morning around 9am for a full circuit of the Gilis, you stop for lunch and come back at about 4pm. Regardless of the island where you depart from, the boats will tour the most famous spots of the three islands, where marine life is abundant. Expect to see parrotfish and butterfly fish, dense schools of trevallies as well as some species of soft corals. Snake eels are also a common sight and you will most probably see giant turtles swimming along your side.

Blue-Ringed Octopus The Blue-Ringed Octopus, a diminutive creature is one of the rarer species which inhabit the waters of the Gili Islands, delighting keen macro divers and underwater photography enthusiasts. Originating from the genus Hapalochlaena, they are typically found in tide pools and coral reefs around the Pacific and Indian Ocean from Japan to Australia. Despite their miniature size of 12 to 20cm, the BlueRinged Octopus releases enough venom to kill twenty-six adult humans within minutes. If threatened, the octopus will promptly present a defiant stance, change its skin colour to a brilliant yellow and display dazzling iridescent blue rings to ward off potential predators. As the venom is found throughout the octopus's body, the innocent victim is unwittingly envenomated if touched or bitten. Gililife 38

They naturally prefer sandy, muck-like living spaces and tend to use their long tentacles to adorably flick sand on top of their heads to cunningly hide from predators. They swim by expelling water from a funnel in the form of a jet propulsion. Their preferred diet consists of small animals like crabs, shrimp, crustaceans and injured fish. Octopi only have a lifespan of around two years. In this time, females lay a singular clutch of about 50 eggs and carry the incubating spawn under her arms for six devoted months. During this time she does not consume food and once the eggs hatch, she dies. Be sure to be bedazzled by this exotic creature and please don’t touch!

WATER SPORTS The Gili Islands offer endless possibilities for water lovers besides diving and snorkelling. Enquire at one of the many watersport centres for a variety of activities on all the three islands. You can take a glass-bottom boat tour to see the underwater world without venturing

into the ocean. Rent a kayak and explore the coastline at your own pace or opt for a stand-up paddle board, a great way to approach the water and test your balancing skills. On Gili Air and Gili Trawangan there are a few nice surf spots which are worth a “dawnie�. Please

be aware of currents and tides and surfing experience is advisable. Subwing is the ultimate water sport that allows you to glide in the water pulled by a boat at slow speed, while parasailing will take you to new heights and safely land you back in the water! Have fun!

FREEDIVING A BREATH-TAKING EXPERIENCE

Summertime as a kid meant long days at the pool, which would end when my mom stood up and walked over to us to tell us it was time to go home. Trying to extend the day for just a few more minutes, as soon as I would see my mom coming, I would take one breath and swim underwater to the other side of the pool so that my mom couldn’t talk to me. Little did I know that this was my unofficial introduction into freediving.

I had never tried scuba and definitely had never heard the term freediving before signing up for my first course. But after talking to the instructors of the shop, they had my attention. I’ve said for years that I am terrible at breathing, so I wasn’t sure I would be any good at freediving. What I learned is that it is not so much about how you breathe, but about techniques, you learn to relax your body and mind so that you use less oxygen.

Freediving is a thing that almost everyone does, but you might not be familiar with the term either! Have you gone snorkeling and dived down to the bottom to get a closer look? That is freediving! Have you challenged your friends to see who could hold their breath the longest in the pool? Also freediving! Are you a surfer that goes for the big waves and spends some time underwater after a wipeout? Freediving. Now that I have completed a few freediving courses on Gili Air, I feel like so much more of the ocean is available to me. When I see turtles on a snorkeling trip, I can safely stay underwater for much longer to be able to observe these beautiful neighbors of ours in their home (from a distance of course, don’t stress out the turtles!). If I see something sparkling from the ocean floor, I know how to equalize the pressure in my ears so that they don’t hurt and I can dive down 20+ meters to check if it is lost pirate treasure (no luck so far). Best of all, I have met so many other freedivers just by spending time going out on fun dives and spending time at the shop. Talking to other people that are also in this small, but very international community is so amazing. Listening to other people who have seen whale sharks, mantas, pyrosome, just makes you want to grab your mask and suit, and a buddy (never freedive alone!), and head out to the nearest ocean to explore and just play in nature’s playground. If you haven’t tried freediving yet, then make the most of your time here in the Gilis and sign up for a course. You will learn more about your body, about your mind, and then apply those things while you freedive and learn more about the ocean. It is an experience that can’t be compared to anything else. Get a feel

for Lombok Feel Lombok is a family-run on-line tour agency offering a variety of guided excursions around Lombok, the Gilis and Flores. The husband and wife duo, Dayat and Hannah, plan memorable treks through the jungle, visits to cascading waterfalls and guided tours to the rim of the crater of Mount Rinjani. Other trips include visiting the famous Pink Beach for snorkeling, camping on a secluded island and for the more adventurous, white-water rafting and off-road biking. Dayat, a local from Kediri in Lombok, dreamed of providing a quality life for his family. Dayat candidly confesses, “Many young people in the village are advised to refrain from dreaming about economic success and potential wealth, however, deep down, I honestly believed otherwise..” At the tender age of seventeen, Dayat relocated to the Gili Islands with the primary aim of learning to speak decent English. To pay for essential needs, he cleaned beaches and later played guitar for travelers. He observed how the island had changed over time and admired other locals who prospered in business. He diligently worked his way up the “beach boy career ladder” and was eventually touting accommodation to tourists. After a period of time, this young entrepreneur managed homestays and on his days off, hosted day tours to Lombok. Gililife 46

A lucky break altered Dayat’s life. A holidaymaker who had lost access to his bank card was stranded, so Dayat invited him to share his home and food, until the debacle was solved. Finally, the tourist went on his way safely home. Months later, Dayat received a generous gift from the visitor and it was with this money that he launched his tour operator business, Feel Lombok on Gili Trawangan. Dayat learned during this time, that tourists enjoyed visiting local villages, spending time with residents and sampling the local cuisine. By introducing tourists to his village, he realized how it increased the locals’ knowledge of travelers and also set an example for young aspiring youth that achieving a dream is possible. Dayats’ wife, supports him in by helping with the branding of the venture, the website and the online business. She also has a background in photography so assists with the marketing. Dayat also started an English Club, which has been running for a number of years and due to lack of funding was on hold, but is re-opening in two months. Students from the ages of 7-18 will be invited to learn English in an informal atmosphere. Tourists will be invited to visit, giving the students the opportunity to practice what they had learned.

Eventually they want to be in the position to offer work experience within the tourism sector to their students, giving them a greater opportunity of finding work when they leave school. They want to battle Lombok’s issue of high unemployment, by inspiring local young people to keep dreaming and think beyond the island, as Dayat learnt from his time on the Gilis. Being of service to the community is a priority for the team. The main focus is now on building a business relationship with a new venture on Gili Air, called Feel Lombok - Tours and Juice. Here travelers will be heartily welcomed with delicious juices and at the same time offered a useful insight into the island of Lombok, just 10 minutes across the water from Gili Air. The new partnership will secure ties between both islands and will offer a new and improved service to potential clients.

The history of

INDONESIAN INDEPENDENCE Indonesia is an archipelagic country in Southeast Asia and the main islands are Java, Sumatra, Kalimantan, and Madura. The country is divided into twenty-nine provinces with Indonesian and Javanese the most spoken languages. The majority of the population is Muslim, followed by Christians, Buddhists, Hindus, and Confucianists. From the historic Dong Son civilization to the Hindu dynasty and then under the control of the Dutch Empire, Indonesia has experienced an illustrious past and is rich in culture. Indonesian antiquity was influenced by China and Vietnam and international commerce commenced around the 7th century in Sumatra, with the visiting Tamil and Chinese traders. Spices and cash crops were traded throughout Asia and so the Spice Trade began between Asia, Northeast Africa and Europe. Spices such as Gililife 58

cinnamon, cassia, cardamom, ginger, pepper, and turmeric were known and used for commerce. From the historic Dong Son civilization to the Hindu dynasty and then under the control of the Dutch Empire, Indonesia has experienced an illustrious past and is rich in culture. During the later centuries, Indonesia was influenced by Buddhism and the Hinduism from Mataram. It was during that time, around the 8th century, that the famous Borobodur (Buddhist Temple) and Prambanan (Hindu Temple) were built. The Majapahit Empire, known as the Golden Age of Indonesia, reigned in the 14th century and was ruled by a Javanese Hindu king and the Javanese civilization developed. Around the 15th Century, the Indonesian population turned to Islam and later became the state religion.

The Dutch entered Indonesia in 1512 and established the Dutch East India Company. The Dutch later took control of the Indonesian seas and via their commercial empire, positioned themselves firmly in the Indonesian economy and local politics. In 1928, the first laic Nationalist Party, the PNI, headed up by Sukarno, was formed. The main purpose of establishing the organization was to unify the country by having a singular national language. When the Dutch Empire surrendered to Japanese forces in 1942, the Indonesian population seized the opportunity to secure their independence and in 1945, Sukarno declared independence from the Netherlands. Four years later on the 17th of August 1949, Sukarno, united the country and became the first-ever President of the Indonesian Republic.


The 17th of August is an important date for Indonesians and is celebrated with love, tolerance, and euphoria all around Indonesia.

INDEPENDENCE in INDONESIAN Independence Day is celebrated throughout the country. From Java to the Gili Islands, citizens cherish this special day as a reminder of those who fought for the Republic’s liberation. On the 17th of August, the national anthem, The Indonesia Rasa, is heard throughout the day. The red and white Indonesian flag referred to as 'Sang Saka MerahPutih', which translates to 'lofty bicolor red and white' and is also widely displayed around the country. The Day and red

atmosphere on Independence is electric and hotels, schools, offices proudly display the and white flags and colors.

Organizations, villages, and schools organize events, especially for this occasion. Older school children show their ‘walking’ skills', and don’t be surprised to see teenagers parading around with a military demarche along the roads. Each region has its own signature games and various activities take place with food vendors selling bakso, sate, cakes, crisps, and drinks at the events. One of the most famous games is called Panjat Pinang. The players climb to the top of a pole to grab prizes of bikes or t-shirts. The President makes a speech which is broadcasted on national channels.

Bu Yanah arrived in Gili Trawangan eight years ago. She opened a small Warung at the famous night-market, which unfortunately closed last August. Three months ago, she relocated to the middle of Gili Trawangan in front of Mango Homestay. Originally from Java, Bu Yanah has always worked in the hospitality and food industry. She has owned similar businesses in Java. Even though she has had tough time recently, as it is quieter in her current location, she genuinely enjoys having her own business. There is no immediate pressure and all the earned income goes directly to her!

Detha arrived on Gili Trawangan five years ago and two years ago, opened her boutique, Gili Mo. Before securing her own business, Detha worked at Casa Vintage and Sunset Bar Casa Vintage as the General Manager. Her biggest achievement is being self-employed, and she is extremely proud of herself. She plans in the future to open another branch in Kuta, Lombok as she has decided to invest in another opportunity outside of the Gili Islands.

IRWAN | ABDI LIFE IS GOOD Irwan was born on Gili Trawangen thirty-two years ago and when he was of school-going age, he moved to central Lombok to complete his formal education. After completing his studies, he promptly returned to Gili Trawangan. He worked as a surfing instructor, rented out spear guns and sold fishing trips. In 2013 he opened his own business; Abdi Life is Good. He rents out bicycles, spear guns and arranges snorkeling trips. Rightfully owning his own business is his most substantial achievement and he genuinely loves to extol about the extraordinary beauty of Lombok. He is incredibly proud of his island. He humbly hopes for a promising future where he will derive a more substantial income and aims to be the biggest tour operator in Lombok.

EKY | GILI T LOCAL RESTO The first time Eky arrived on Gili Trawangan was two years ago and worked at Bamboo Spa, in the harbour area, as a manager. Prior to that, he worked in Jakarta as a Restaurant Manager and also worked as a tour operator, arranging trips for tourists on fast boats to and from Bali. Four months ago, he started his own venture. Eky opened his own restaurant, and the menu is a delightful mix of traditional local Indonesian cuisine and Padang food. He is investing all his money into the renovation of his restaurant, but he is happy to face this challenge and adventure. He is also looking at updating his menu to include dishes that work for both local Indonesians and tourists. In the future He would like to change the concept of his restaurant to be more cafĂŠ-like and offer free delivery.

SULMAN | BROTHERHOOD & BAR

Sulman was born on Gili Meno 40 years ago. He worked as a dive instructor for Blue Marlin. After ten years he decided to take a break and chose instead to become a freelance instructor across the three Gili Islands. In February 2018 he decided to launch his own business, Brotherhood & Bar. Brotherhood & Bar is an organization that collects recyclable rubbish from Gili Meno. Along with willing volunteers they sort the rubbish and salvage reusable plastic, metal and compost. They utilize what they can, and the rest is upcycled into souvenirs, handmade furniture and decorations. Sulman wanted to exchange ideas with anyone who genuinely cared about the ecological state of Gili Meno. His ultimate goal was to properly inform local residents on how to keep the lovely island clean. One of their key projects is manufacturing Eco-Bricks which can be used to build walls and furniture. As a way to support their funded project and educate visitors and residents about the project, they serve delicious juices and beer at the bar. In the foreseeable future he wants to build a composter and properly recycle all materials originating from Gili Meno. He plans to build a restaurant and a house for his volunteers as at the moment they are living in a tree-house and as you guessed correctly, out of recycled material!

ADI | YAYA BUNGALOW & TRIGGER BOAT TRIP Adi was born on Gili Meno in 1992 and worked in a variety of luxury hotels in Senggigi. He graduated from D3 Tourism School in Mataram, Lombok, where he learned about working in the tourism industry. He opened Yaya Bungalows four years ago and recently added another feather to his bow, Trigger Boat Trip. As he is a young man with two active businesses, he has felt the struggles financially, but with the welcome addition to his accommodation, he is happy that he can deliver a supplementary service to his guests. Trigger Boat Trip offers snorkeling around the islands, which is a ‘must do’ activity. Adi suggests to people who want to open their own enterprise is to never give up, maintain a strong mentality and don’t be afraid to face obstacles. He also advises to always wake up early in the mornings!

PAK HASRUN | SARI TAMA BAKSO Pak Hasrun was born in the north of Lombok and had a challenging childhood and adult life. He was raised in humble surrounds and struggled financially for most of his life. The first time he travelled to Gili Meno was in 2014 where he decided it was undoubtedly the ideal place to start his own business. Pak Hasrun sells Bakso, which is a delicious Indonesian style meatball soup in a hearty broth, served over noodles. Bakso is a traditional dish and is loved by local residents and frequent travellers. He has a second Bakso business in the harbour area in Gili Trawangan, which is run by his daughter. Pak Hasrun is currently in the process of opening a new spa, and his entrepreneurial dream is to own a minimarket in the near future.

JAMALUDIN | FANTASTIC HOTEL & BLUE OCEAN TRIP Jamaludin was born on Gili Meno in 1967. When he was a child, he relocated to Gili Air with his family so he could attend the local primary and high school. Once he graduated, he returned to Gili Meno in search of employment. Fortunately, his lifelong passion, fishing, became his career and he worked in the industry until 1991. He opened his own hotel called Fantastic Hotel and had guests booked from all around the world. Two years ago, he expanded and opened a snorkeling-trip office called Blue Ocean Trip. Jamaludin helps visitors plan snorkeling trips around Gili Meno and the neighboring islands. Jamaludin is immensely happy with his businesses. He is content with his life and believes his dreams have already been achieved. JAMALUDIN

He is now a well-known owner of a beautiful, but humble restaurant called Warung Alam Damai. Translated it means Beautiful Nature. His philosophy reflects the suns movements in a day. The sunrise represents living like a child, still pure and fun and having nothing. The afternoon sun is like being a teenager whose blood is still burning. The sunset is reflective of how we age and end our life with sweet memories. His dream is to make a foundation to help the poor and jobless communities in Lombok.

Her new burger shop became exceedingly popular on Gili Air, and she admits that she sometimes struggled with the sheer number of customers, so she promptly hired other staff. As an unmarried independent lady, Yati is doing well as her food is genuinely enjoyed by many.

ADI | ADI SHOP Adi was born on Gili Air forty years ago and opened his art shop around nineteen years ago. He was a natural a jack of all trades and worked as a snorkeling guide, boat captain and local fisherman. His family depend on the income he generates from his shop where he sells handcrafted jewelry from coconut shells, string bracelets and souvenirs. He is a highly respected and proud man and dreams of sending his son to university. Through his owning his own business, he has made many international friends feels passionate about sharing the island spirit. He dreams of expanding his business and even though he has been through hard times, he remains optimistic, strumming his guitar and spending time laughing with friends and family!

SAMSUL BAHRI | CORNER TOUR AND TRAVEL Before Samsul arrived on the Gili Islands, he worked as a local gardener, waiter and a tourism information agent. Captain Coconuts THE COCONUT LIFE GILI AIR After traveling the world, Resa and Belinda arrived on beautiful Gili Air eight years ago and decided to invest in a piece of paradise. A few years later, they returned to the island and built Captain Coconuts. They were deeply conscious of protecting the territory around them. The idea behind the project was to construct an external space that was moulded around the present native environment and not damage the resident palm trees. Captain Coconuts, designed by Resa, originally from Indonesia, envisaged a welcoming and unique environment that would facilitate social interactions between guests. Belinda, an avid backpacker, dreamed of a space where people could easily meet and share travel adventures. The key concept is recognizable in the oversized communal tables, the centrally located pool, and the shared outdoor deck area. Gililife 68

Captain Coconuts opened around three years ago with just a cafĂŠ and the shared bamboo lodge. The lodge was inspired by South American hammock houses that Belinda had previously visited. Slowly, the charming place progressively expanded with a few traditional Javanese style villas. The handcrafted furniture, the doors, and the windows were made from pre-loved wood retrieved from old traditional Joglo houses and lovingly restored to create a unique features. All the rooms have been carefully designed to intentionally avoid any ecological disturbances to the trees already thriving in their natural environment. The owners have also adopted various methods to minimize their ecological impact, like heating water and harnessing electricity from solar panels. They dearly hope to obtain their power from solar energy in the near future. Belinda and Resa are sincerely concerned about their carbon footprint and have decided to

Henrik, who arrived on the island about two years ago on a sailboat, is the manager of this impressive project. Love made him stay on the island. With a theatrical and cultural events management background, Henrik possessed all the qualities to oversee this mysterious and fun project. For those less familiar of what an Escape Room is, keep reading. It is a real-life adventure game where a group of people, secured in a themed room, work out how to escape by resolving puzzles and riddles provided. A time frame is given and the excitement begins. The idea behind this Escape Room was to design a unique and authentic experience.

A majestic Banyan Tree, an Indian tree recognized for its mystical power, was planted here centuries ago and possesses a magical aura. The story behind this specific Escape Room titled ‘INHERITANCE’ is that the old man hid a secret in his house before he passed away. He was an eccentric man who could not identify who was worthy of his fortune, so he thought of a creative way to distribute his wealth.

For the first time ever, the island of Gili Air hosted the Slow Food and Yoga Festival alongside the Gili Menggawe Festival... The cultural festival showcased regional specialties, food-foraging tours and regional Sasak cultural events including stick fighting, traditional tattoo demonstrations, workshops by local artisans, and musical performances and dancing. An indigenous food and film night was held, and locals and visitors took part in a Triathlon. Chef Sisca Soewitomo, her daughter Chef Novia Soewitomo and Chef Anton, Chairman of the ICA BPD ntb, were honoured guests and judges. The official sponsors included the Indonesian Chef Association, the Junior Chef Community, Kokito and Blue Band Foods. Chef Dharma of Waroeng Alam Damai and Chef Heru of Warung Sunny on Gili Air organised the affair with Andrian Yosaredo, Chairman of the Gili Menggawe Festival. A festival highlight was the cooking competition, where chefs and cooks battled it out in an exciting Master Chef style competition.

GILI FOODS

CASSAVA Indonesia is the fourth biggest producer of cassava in the world, growing around 21 million tonnes per year. The waxy root vegetable is robust, easily grown in poor soils and low rainfall, which allows for it it to be produced all year round. High in starch, it has can be used in a variety of forms including flour, as a potato substitute or made into tapioca. Cassava has grown in popularity since modern understanding of dietary requirements and health benefits in recent years. It is used as a substitute for flour in making gluten free breads. It is high in vitamin C and linamarin which research has proven fights tumours in rats. When cassava is not properly prepared it can produce cyanide, which is poisonous and potentially fatal. The process of cooking out the dangerous ingredient is straight forward and it still serves as a staple ingredient for 700 million people. Cassava is a fantastic vessel for taking on flavour and particularly good in curries. A beautiful, crisp yet smooth texture. Gililife 92

INGREDIENTS 2 bunches of Cassava Leaves 200ml Water 200ml Coconut Milk 8 tbs Oil

FOR PASTE

THIS WEEKS DELICIOUS RECIPE:

Cassava Leaf Curry

1½ cm piece of peeled Ginger 1cm Galangal 1cm fresh Turmeric 1 large fresh Chili 2cm long Indian Chili 3 fresh Red Chili Peppers 3 pieces Candlenuts ½ tsp White Peppercorn 1 tsp Coriander Seeds 3 Cloves A pinch of Nutmeg ½ cm piece of Cinnamon

PREPARATION Boil the cassava leaves for just one minute or until soft and strain. Be sure to discard the water. Combine all the ingredients for the paste and blend until very smooth. Fry the paste until the aromas are released and the herbs and spices are well cooked. Combine the coconut milk and water and add to the cooked paste and stir well. Once the mixture comes to a boil, add the blanched cassava leaves and cook gently for a few minutes. Add salt to taste. If you cannot find cassava leaves, kale without their stalks makes a perfect substitute.
