1. Take a few tablespoons of the warm milk into a small bowl and pour the yeast on top. Let stand for a while to dissolve and activate. Meanwhile measure the flour into a large bowl and form a little hollow in the middle.

1. Nimm von der warmen Milch einige Esslöffel ab und streue die Hefe darauf. Lass stehen bis die Hefe deutlich reagiert und schäumt. In der Zwischenzeit das Mehl in eine große Schüssel geben und in der Mitte eine Kuhle formen.

2. Cut the butter into smaller pieces and arrange it around the hollow. Add the 2 tsp. of salt to the flour but at a good distance from the hollow. When the yeast is ready, pour it into the hollow and start mixing while adding the warm milk. Mix long enough to create a smooth dough and divide it into about 6 to 10 pieces. Cover with a damp kitchen towel and let rise until it has significantly increased in size.

2. Die Butter in kleine Stücke schneiden und drum herum verteilen. Das Salz in möglichst großem Abstand zur Kuhle zum Mehl hinzufügen. Wenn die Hefe bereit ist, diese in die Kuhle geben, anfangen zu mixen und dabei die restliche warme Milch hinzugeben. Knete den Teig so lange, bis eine glatte, weiche Masse entstanden ist. Unterteile den Teig in 6 bis 10 Stücke und bedecke diese mit einem feuchten Geschirrtuch. Wenn sich die Teigstücke deutlich vergrößert haben, forme daraus lange Schnüre, die an den Enden dünner sind.

PRETZELS

INGREDIENTS • 500 g flour (3 1/2 cups) • 1 pouch yeast • 250 ml warm milk or water (a little more than 1 cup) • 50 g Butter (almost 1/2 stick) • 2 tsp salt • 1 l water (4 cups) • 3 tbsp soda • some coarse salt

3. Fill one liter of water and 3 tbsp. baking soda into a large pot and bring to a boil. 4. Preheat the oven to 350°F.

500 g Mehl 1 Päckchen Hefe 250 ml warme Milch oder Wasser 50 g Butter 2 TL Salz 1 l Wasser 3 EL Back Natron Grobes Salz

5. Meanwhile take one of the dough pieces and roll it into a long strand with ends smaller than the middle and shape a pretzel. One by one put the pretzels into the boiling water and remove after about 3 seconds. 6. Place the pretzels on a baking sheet covered with parchment paper and put some coarse salt on every pretzel. Bake for about 30 minutes or until brown.

BREZELN

3. Fülle einen großen Topf mit Wasser und gib 4 EL Back-Natron hinzu. Bringe das Wasser zum Kochen. 4. Den Ofen auf 180°C vorheizen. 5. Nimm jetzt je eine Teig-Schnur an den Enden und forme daraus eine Brezel. Gib die Brezeln eine nach der anderen für maximal 3 Sekunden in das Kochwasser. 6. Lege die Brezeln dann auf ein vorbereitetes Backblech und bestreue sie mit dem groben Salz. Backe die Brezeln für 30 Minuten bzw. bis sie die richtige Bräune haben.
