June 2014 is a special month for us here at Dazzle. It’s the first month of our ninth year with our readers, subscribers, and the various companies we deal with who have all become more like a family to us. This month also marks the very special occasion of Father’s Day. So, before you indulge in all the wonderful things we have for you this month, I would like to make a special dedication to the most wonderful father I know, my husband Ramy; I dedicate this issue to you. I also dedicate this issue to two of the greatest fathers that ever lived, the late Ghazi Zainy and the late Abdel-Gawad Abul-Wafa, and to my second wonderful father, my father-in-law Samir Kreidieh. In accordance with this special occasion, here at Dazzle we’ve included many interesting and useful features for you like A Romantic Father’s Day (p. 20) that relates how the wife of a reader, Walid Rashid, romantically celebrated his fatherhood, which is the angle mostly ignored in celebrating fatherhood. COUNTRY STARS PAY TRIBUTE TO THEIR MUSIC TEACHERS Ask just about anyone in Country Music today and you’ll likely find that music education was a cornerstone in the foundation of their careers, says Deborah Evans Price/CMA…

“I had a unique opportunity to go to a school for performing arts in Columbus, Ohio, called the Fort Hayes Performing Arts Centre,” said Jay DeMarcus of Rascal Flatts. “I had a teacher there named Mary Daniels who really pushed me to be better than I thought I was. I’d turn in projects and she’d say, ‘It’s good, but you’ve got better inside of you.’ She was actually more a friend to me than just a teacher. She had a way of disarming you to make you feel so comfortable and capable of doing more than you thought you could.” Like Chris Young, Scotty 10

McCreery learned much from performing with his high school choir. “Our teacher, Meredith Clayton, would take us to New York City, Chicago, Florida, and different places for competitions,” he recalled. “She was awesome. She has a big, bubbly personality and a love for music that she passed down to her students. She was all about preparation and putting in the work, and that’s big for Country Music nowadays. If you’re going to be successful, you’ve got to put in the work. Nobody’s going to hand it to you. So I learned a lot of good lessons from her.” A number of music teachers inspired Sara Evans as she grew up in New Franklin, Missouri. “I was playing clarinet in band,” she said. “I was also in choir. Our two music teachers, Mrs. Burnett and Mrs. Nugent, were both really sweet and fabulous as teachers. Our school was so

small that we didn’t even have football, so we would march in the town’s parades. I was always the assistant teacher. Sometimes I would get to direct the band.” The benefits of music education are a top priority for Evans to pass along to her children, son Avery, 14, and daughter Olivia, 11. She has also lent support to other kids studying music. In 2011 she visited Nashville’s PearlCohn Entertainment Magnet High School as part of CMA’s Keep the Music Playing program to support public school music education. “That was a really cool experience,” she said. “I learned so much about how they benefit from Keep the Music Playing. It was really cool to see these kids perform and work so hard on these songs and then perform them for us. You could just tell they were so proud and that they were such good friends, just

“People would ask: Why don’t you play basketball? You know you’re tall,” said Chris Young with a laugh. “I was like: Well, basketball practice was always at the same time as choir rehearsal. Between the two of them, I picked choir and it seems to have worked out.”

“I’m so passionate about Keep the Music Playing because I remember as a kid that if I didn’t have music to distract me from some other things, I don’t know where I would have ended up,” DeMarcus added. “It helped me focus a little bit more in school, having music to look forward to in the afternoons.” McCreery concurs that KTMP is “an awesome program. The star of Chasing Mavericks has been set to play the Zen adrenaline-junkie bank robber role originated by Patrick Swayze in Point Break - the remake of the 1991 Kathryn Bigelow film that also starred Keanu Reeves. With Ericson Core directing from a screenplay by Kurt Wimmer, the thriller is set in the world of international extreme sports.

Beyond Musicals Coriolanus Gerard Butler has done a lot of diverse types of films in his career. His first job as a professional actor was in Coriolanus. He was just in the ensemble and was actually assisting the casting director, letting the actors in and ticking their names off. And he spoke to the director and said, “I want to be an actor. Can I read for you?” it was his first job ever. The play represented one of the most exciting periods of his life, and he still loves the idea of doing another Shakespeare play. Fame arrived late for Butler, at the age of 40. A Brit, he is better known in America than at home. “Spartans, tonight we dine in hell!” The line from the trailer for the film 300 still resonates in the memory of his many fans. It was declaimed by Gerard Butler when

he was crowned King of Sparta in a Zack Snyder production. His charisma sweeps aside all in his path, which was unlucky for a million Persian soldiers at the battle of Thermopylae in 480 B.C. The man doesn’t do things halfway. Before taking on the destiny of the Spartan King Leonidas, Gerard Butler was a lawyer - a profession rather than a vocation. It wasn’t long before he immersed himself in his passion for theatre, where his talent was quickly recognized. One production followed another and the big screen gave him the room to express his confident and multitalented personality. Under no illusion that talent is rewarded through concessions and compromises, he threw himself completely into every role. And nothing stimulates him more than stretching himself and discovering new horizons.

Growing up in Paisley, a small town in rural Scotland, luxury on the level of Roger Dubuis was beyond the realm of possibility imagined by Butler. Indeed, his first brush with the watch world struck a more emotional, rather than technical, chord. Although he got a slow start in the watch world, the decision to work with Roger Dubuis was

natural for the actor. “They take a huge amount of pride in what they represent and how they want it to be perceived, but they also wanted our collaboration to be fun and easy. That was the feeling that I got from that meeting - a lot of passion, a lot of love, and a lot of respect,” Butler said. Roger Dubuis Celebrated Haute Horlogerie with a private dinner hosted by CEO Jean-Marc Pontroué and Friend of the Brand Gerard Butler last December in Miami Beach. In partnership with Dom Pérignon and HauteTime

Magazine, Roger Dubuis welcomed 100 guests to a private seated dinner at W Hotel, one of South Beach’s premier resorts. The event was touted as one of the most exclusive parties during the luxurious art festival. The fashionable invite-only fête featured an intimate crowd of A-listers including Eva Longoria, Serena Williams, and Karolina Kurkova who mingled amongst the Excalibur Quatuor timepieces. The evening highlighted the Excalibur Quatuor, and as the face of the Excalibur collection,

1. Realistic

Practical and straightforward, Realistic people are attracted to outdoor and physical activities, hobbies, and occupations. They don’t have strong interpersonal and verbal skills, which is why they prefer to work with objects and animals rather than people and ideas. They have good mechanical and athletic abilities, and are usually strong and well coordinated. Career Match: Engineer, veterinarian, orthodontist, and surgical technologist.

2. Investigative

They are analytical, intellectual, and scientific people who like expanding their knowledge. Father’s Day is popularly known to celebrate dads, but we can’t forget to acknowledge our husbands, because if not for them, we wouldn’t have been blessed with the children that God gave us. So how do you make your man feel loved and appreciated on his special day? Well, the best Father’s Day gift is one which comes straight from the heart, says Walid Rashid… Be it birthdays, anniversaries, or middle-school graduations, my wife Abi makes every occasion a memorable event. And when it comes to Father’s Day, she always takes me by surprise; just when I think she couldn’t top the previous year’s gift, she does something so special that it makes me appreciate her even more! Some of these gifts are around eight to nine years old, but they touch my heart till today, and I hope they leave you inspired.

A Humble Gesture

Back in 2000, Abi and I were struggling to make ends meet, but our financial situation didn’t stop her from celebrating Father’s Day. She had our son, who was a year old at the time, paint all over a simple white jersey, and at the back, his tiny handprints spelt out ‘Love You Dadda’. It was my first Father’s Day gift, and one that I’ll always cherish. 20

Television Galore

Abi gave me something that I could have never imagined - an updated TV package. I was always hesitant about getting more channels because I thought it would take away from our family time, but it did just the opposite! The boys and Abi kept me company when I watched sports, and I enjoyed watching their favourite sitcoms and cartoons with them.


Action-Packed Night

Like all men, I love action flicks, and like most women, Abi hates them! So when she rented ten of my most favourite films and gifted me a splendid movie marathon surprise, I was blown over. She sat with me through all the movies, and pretended to have the time of her life just to make me feel special.

A Dream Realised

A Passionate Night

Yup, that’s exactly what I got, a night of passion and romance, or as men usually put it, the best gift ever! After having three very naughty boys, both Abi and I needed to relive the excitement of our early days together. So she sent the kids over to her mom’s place, got dressed up, and cooked a delightful meal for me. Everything about that night was picture-perfect, and I couldn’t help but fall in love with her all over again.

During one of our several conversations, I told Abi about how I always wanted to become an F1 racer. So last year on Father’s Day, she gave me a plaque with a Ferrari sign on it that read ‘Realise Your Dreams’. The fact that she remembered my childhood dream and encouraged me to pursue it made me feel like the proudest man alive. In fact, the gift of encouragement never loses its impact, and it hardly takes any effort. You don’t even have to find that perfect plaque, just let your hubby know that you believe in him, and he’ll forever be grateful to you.

Crafty Sentiments

Abi gave me a very memorable bookmark when our first two boys were toddlers. She laminated a piece of paper that had been scribbled on by the boys, and she even added their pictures to it. Eight years later, the bookmark still remains as cute as it was back then, and the boys really enjoy looking back at their old art projects. www.dazzle-magazine.com

A Unique Union Maintaining a healthy father-daughter relationship is challenging to say the least. Because of all the differences in opinion, we find it difficult to connect with our dads, and the relationship eventually reaches a dead-end. But giving up on the man you once considered your hero isn’t the way to go… Ask any five-year-old girl about her dad and watch her face light up; she’ll go on for hours talking about how strong he is and how he knows everything. Now if you pose the same question to an adult woman, she won’t stop complaining about how he’s on a mission to ruin her life. But what we don’t realise is that our dads are the same as they always were – we are the ones who changed. Dr. Linda Nielsen, author of Between Fathers and Daughters: Enriching and Rebuilding Your Adult Relationship, explains, “As we get older, we start developing our own thoughts and opinions, which is something that our dads can’t fathom. For them, we’ll always be that naïve little girl who turns to them for everything.” Communication is the foundation of a healthy relationship, but usually, the more important a conversation is with someone we love, the more likely we are to mess it up. Leila, 25, concurs, “I find it very difficult to be honest with my dad when I talk to him about something serious. He has his own notions about how things should be done, and if I try to explain my side to him, we end up having an argument.” According to Dr. Nielsen, serious conversations between fathers and daughters can be very vulnerable for both parties. “We usually say and do hurtful things because we’re afraid that the relationship is going to get worse if we share our true feelings,” she says. “And when we feel

anxious or scared, we communicate at our worst.” The author explains that overcoming the communication gap requires a lot of teamwork, understanding, and empathy. “You need to help one another feel comfortable enough to talk openly,” she explains. “And this can only happen if you understand what you and your dad are afraid might happen in an honest conversation. Both of you may find each other’s concerns ridiculous, but as adults, you have to reason everything rationally and maturely.” Warda, 27, was neglected when she was a child, and she continues to hold that against her father. “Every time I fight with my dad, I can’t help but think of how he’d never talk to my brother like that. It kills me to see how open he is about his favourite child, and I despise him for it!” Actually, when it comes to understanding our dads’ behaviour, we rely on connecting our past memories to our present feelings, which leads to unnecessary anger and resentment. Dr. Nielsen adds, “Your brain has a natural inclination to create stories that make you feel good about yourself, make the other person look like the villain, and interpret things the way you did in the past – even when you’re wrong.” If unpleasant memories are hurting your relationship, you need to talk it out and revisit the past. “Try to modify or soften

management’s 8 deadly sins New Bain & Company study shows how lost time costs millions each year and recommends zero-based time budget and other practices to fight time management’s 8 deadly sins… Top executives lose thousands of hours each year responding to emails and sitting in unproductive meetings, and the losses snowball through their organizations simply because companies don’t track and monitor employee time as tightly as any other resource such as capital. Bain has studied and calculated the losses in time and money and compiled a list of best practices companies can follow to fight time management’s Eight Deadly Sins. Bain’s research found that 15% of an organization’s collective time is spent in meetings, a number that has increased steadily since 2008. One company’s weekly senior leadership meeting directly consumed 7,000 hours per year for the attendees - but 300,000 hours companywide among subordinates in preparation and related meetings! Yet most companies have no 24

ability to quantify how their executives and other employees spend their time because they don’t track and measure it. Bain teamed with VoloMetrix, an enterprise analytics company, to examine the time budgets of 17 large corporations. Among their findings: Executives today, on average, receive 30,000 external communications per year, up from 1,000 in the 70s. At the current rate, executives will soon spend more than one day each week managing electronic communications. Senior executives, on average, devote more than two days each week to meetings with three or more co-workers. A meeting that starts just five minutes late costs a company 8% of that meeting - a loss that would be untenable in any other resource category. Meetings are often scheduled “just because”, and dysfunctional meeting behaviour

is on the rise. At one company, about one in five meeting participants sent an average of three or more emails for every 30 minutes of meeting time. At a sample 10,000-employee business, $60 million - 20% of the total cost of meetings - was squandered in unproductive activity. Bain’s work with large organizations found the problem to be cultural as much as systemic: Organizations evolve into complex mechanisms that require increasing maintenance to function smoothly, and a corporate culture springs up to support this effort, siphoning resources away from externally-focused, customer-serving tasks. “Most time management advice focuses on individual actions - be choosy with meetings, rein in your email box. But this advice sometimes goes against your company’s culture: ignore emails and meeting invitations

Create zero-based time budget and manage organizational time as rigorously as capital assets. 3. Let’s-Start-A-Project Mindset. Require a business case for any new project. 4. Thickening Middle. Simplify the organization. More managers and layers rob time and create more work for others. 5. Anyone Can Schedule. Create a line of authority for who

can call and set meetings. 6. Decision Making Murky. Manage decision-making, not the matrix for it, by standardizing the process. 7. Meeting Time Is Free Time Mentality. Arab Knowledge Economy Report 2014 The first-ever Arab Knowledge Economy Report 2014, a joint study by Madar Research & Development and Orient Planet, aimed to research and examine the components and characteristics of the Arab Knowledge Economy and its contribution towards the overall development of the region’s economy. Excerpts from the report concluded:

GCC GDP & Population Growth The GCC countries comprise the 12th largest economic region in the world with a recorded GDP growth rate of 4.03% in 2013. The GCC also dominates the Arab World with its GDP of USD 1640.83 billion in 2013. Overall, KSA ranks first in the GCC and 19th in the world with USD 745.30 billion as GDP, followed by the UAE with a GDP of USD 398.32 billion. GCC GDP Per Capita Qatar, with a population of 1.91 million, emerges as the richest country per capita in the GCC and the second richest in the world with USD 105,169 in 2013, followed by Kuwait with USD 47,265. GCC Population Growth In 2013, the GCC witnessed a population growth of 3.68% with Qatar leading at 11.36%, followed by UAE at 5% due to the large influx of foreign workers. The local population of UAE and Qatar comprise of 13% and 14% respectively of the total population. Arab Knowledge Economy Index The UAE topped the Knowledge Economy Index (KEI) among Arab countries, while it stood at 42 globally with a score of 6.94, closely followed by Bahrain at 6.9, and Oman at 6.14. Patents in Arab Countries To date, the US Patent and Trademark Office has granted 858 patents to KSA, positioning it 29th in the world. Kuwait is at second place with 272 patents, and Egypt at third with 212 patents. 26

Arab e-Performance Index Madar Research & Development and Orient Planet have created a new Arab e-Performance Index based on six important global indexes: the Global Competitiveness Index, Networked Readiness Index, ICT Development Index, Global Innovation Index, Knowledge Economy Index, and e-Government Development Index. For the Arab e-Performance Index for 2013-14, Bahrain leads the GCC with an average of 66.55 followed by the UAE at 65.68. Arab ICT-use Index Bahrain has topped the 2013 ICTuse Index with a score of 3.08. It has emerged among top five in all the ICT sectors, including first in the internet user’s rate and second in mobile penetration level in the MENA region. Qatar takes the second place with 2.96, having the third highest mobile penetration and fourth in internet user’s rate. Arab Internet Population Overview There were 111,721,020 internet users in 18 Arab countries in 2012, growing at a rate of 18.98% as compared to 2011. The number of internet users in the region is expected to increase to about 197 million by 2017. Internet penetration in the Arab world is expected to surge from 32% in 2012 to 51% in 2017, amounting to 3% above the world average. Adult Literacy Rate Adult literacy remains a major hurdle for the development of the information society and knowledge-based economy in the

Arab region. In the age group of 15 and above, the literacy rate was nearly 77% in 2011. Six countries, including Qatar’s 96.3% and Jordan’s 95.9%, have shown a success rate of 90% and above for the period. There’s also a huge discrepancy between the male and female literacy rate, wherein the male literacy rate is around 85% and only 68% for females. ICT Price Basket as a Percentage of Monthly Minimum Wages The ICT price basket includes three tariff sets: fixed telephone, mobile phone, and fixed broadband internet services. Qatar ranks 1st in the Arab World and 2nd globally when Gross National Income is compared with the ICT price basket, with 0.4% of monthly GNI per capita spent on ICT services. The UAE ranks 2nd in the Arab World with 0.5% spent on ICT services. When the minimum wage is compared with the ICT price basket, Qatar ranks 11th in the Arab World with 12.2% of minimum wage spent on ICT services while the UAE is at the bottom with 15.4% of minimum wage spent on ICT services. Academic Ranking of Arab Universities In 2013, five Arab universities, four from KSA and one from Egypt, appeared on the Shanghai Academic Ranking of World Universities. The KSA universities are the King Saud University, the King Abdul Aziz University, the King Fahd University of Petroleum, and King Abdullah University of Science and Technology.

A lot of us are guilty of writing off pain as a temporary annoyance. While most pains are generally temporary, there are certain seemingly harmless pains that could develop into complicated conditions if left unchecked. Here are the top six deadly pains you shouldn’t ignore…

CALF PAIN

A dull pain in the calf is often an indication of Deep Vein Thrombosis (DVP), a condition in which a blood clot forms in the leg’s deep veins. “If left untreated, DVP can spread and cause a clot in the lungs, which could be fatal,” says Dr. Karim Abdalla, a general physician in Jeddah. “In fact, millions of people lose their lives to DVP every year because they ignore its most basic symptom: calf pain.” The risk factors for DVP include smoking, long-distance travel, taking birth control pills, and obesity.

EXCRUCIATING HEADACHE

“Never assume that the worst headache of your life is just a migraine,” says Dr. Abdalla. “It could represent brain haemorrhage, which, as we all know, is always a life-threatening event. Brain haemorrhage is a condition in which blood leaks out of blood vessels over the surface of the brain. The nerve terminals that are close to the bleeding area get irritated by the blood, causing excruciating headaches.” Other brain haemorrhage symptoms that are similar to that of migraine’s include vomiting and changes in behaviour, such as depression or euphoria.

TOOTH PAIN

Ignoring tooth pain just because you don’t want to go to the dentist isn’t a very smart idea. If you have a throbbing tooth, chances are the tooth’s nerve has become damaged. If left untreated, bacteria in your mouth can infect the nerve and subsequently spread throughout your body. Dr Abdalla explains, “A tooth infection can spread to the brain and result in brain abscess, a potentially fatal condition in which the brain swells due to the accumulation of infected brain cells, white cells, live and dead bacteria, and fungi in one area. A tooth infection can also affect the inner layers of the heart and its valves, leading to heart failure.”

SIDE STITCH

Experiencing a side stitch, an intense stabbing pain under the lower edge of the ribcage, when you haven’t been exercising might indicate appendicitis. “Appendicitis occurs when the interior of the appendix becomes filled with something that causes it to swell, such as mucus, stool, or parasites,” says Dr. Abdalla. “The organ soon becomes dangerously inflamed, resulting in a severe side pain.” Another possibility for side stitch in women is a ruptured ovarian cyst.

STOMACH PAIN

“A sharp pain in the stomach could mean a lot of things,” says Dr. Abdalla. “It could signal appendicitis, intestinal blockages, stomach ulcers, or pancreas problems – all serious conditions that need to be treated right away.” He adds that a sharp pain in the lower abdomen accompanied with bloating is often associated with the onset of ovarian cancer. “If you experience this kind of pain almost daily for more than three weeks, go to the doctor immediately.”

Heart disease is the number one cause of deaths worldwide, which is why Dr. Abdalla says chest pains are nothing to ignore. “A little pain in the chest is more dangerous than you think,” he says. “It can lead to a completely closed vessel and eventually result in a heart attack. And unfortunately, this can happen to anyone at any age; even people in their 20s can get a heart attack if they ignore the initial signs.” He adds that chest pains tend to differ from person to person. “For some people, a chest pain is provoked by exercise, while for others, it occurs at rest. Its intensity also tends to differ, ranging from mild discomfort to severe pain.”

Throw On That Hat. Head gear isn’t just fashionable during warm weather months; it’s also extremely functional when it comes to protecting eyes from the harsh sun. Wide-brimmed hats are best, especially if you’re planning to spend a lot of time outdoors, such as a day boating or afternoon gardening. The wider the brim, the more the hat will deflect sunshine overhead and from the sides. “Keep in mind, the sun’s UV rays are typically the strongest between 10 a.m. and 2 p.m., so be sure to wear your favourite hat during peak hours. But, don’t forget about times when the sun is along the horizon between the times of 8 a.m. to 10 a.m. and 2 p.m. to 4 p.m., which is in our direct line of site. This gives our eyes tremendous UV exposure. Prime times for when people are outside exercising!” reminds Dr. Bazan.

Moisture Is Key. Dry air, bright skies, wind, air-conditioning, and the high levels of microscopic allergens associated with warm weather months can dry out your eyes quickly. If it feels like your eyes are dryer than usual, try blinking a few times and make a habit of doing so more frequently. If that doesn’t help, a few drops of an over-the-counter eye lubricant can help. Also, be aware of fans and air-conditioners blowing directly in your face, which can quickly dry out eyes. “If chronic dry-eye conditions persist, it’s important to visit your eye care provider for an eye exam,” Dr. Bazan says. Don’t Forget About Food. The fresh fare of the season is packed with nutrients good for the eyes. Next time you visit the grocery store or farmers market, keep an eye out for some vitamin-packed foods that provide key nutrients for eye-health; fill your plate with: Vit C: oranges, strawberries, papaya, and green peppers. Betacarotene: yellow and deep orange produce like mangos, peaches, sweet potatoes, and carrots. Zinc: beef, lamb, eggs, milk, and whole grains. Omega-3s: leafy green vegetables, nuts, fish, and fish-oil supplements. “A few simple steps can help anyone maintain eye health and ensure you can enjoy time outdoors now with healthy eyes for many years to come,” says Dr. Bazan. 30

So use this time wisely and develop a taste for fruits and vegetables. Fresh fruits in summer, like plums, peaches, or nectarines, are rich sources of phytonutrients and

antioxidants. Research has shown that fruits that are sources of antioxidants help protect the skin from the potentially cancer-causing ultraviolet rays. Cleanse, Tone, Moisturise

Skincare is a three-step regime: Cleanse, tone and moisturise. Expensive lotions and potions will work, but due to the skin’s renewal cycle, it might take up to three weeks for any product to really show results. For an easy

do-it-yourself cleanser, rub slices of raw potato onto your face and cleanse with cucumber if you have large pores. For oily skin, use fresh tomato paste because it effectively peels off dead skin cells. Applying natural yoghurt as a mask is suitable for all skin types, while rubbing fresh lemon on darkened areas is a good exfoliator and skin lightener because it effectively removes dead skin. There are plenty of moisturizers in the market today and choosing the right one for your skin can be a tedious task. If a moisturiser feels right on your skin, without leaving a greasy film or clogging your pores, it’s the right one for you; this is the simplest rule for choosing a moisturiser. For the rest of your body, a simple cream like Dove or Nivea should keep your skin bump and rough free. Remember that your neck and chest need care too, so don’t forget to moisturise them as well. And we all know how important it is for the skin to smell good; so since a lot of body creams are fragrance-free, applying a few drops of your favourite perfumed oil to them should make you feel

Asparagus With Honey Vinaigrette

June is the on-set of summer, and with it comes de lightful herbs and vegetab les that make delectable dis hes‌

Prep: 30 minutes Cooking: 10 minutes Serves: 4

Method:

1.

For the dressing, strip the leaves and finer stalks off the thick stems of the herbs. Pile the leaves into a liquidizer and add all the remaining ingredients.

2. Liquidize to a smooth emulsion, taste and adjust the seasoning. Pour into a jug.

3. Trim the tough lower part of the root from

the asparagus. Cook in lightly salted water, simmering gently, for about 5-8 minutes until just tender.

4.

Drain and run quickly under cold water to set the colour and prevent overcooking.

Mascarpone Tart Prep: 45 minutes Cooking: 10 minutes Serves: 6-8

Method:

1. For the crumb case, melt the butter in a small saucepan. 2. Place the biscuits in a food processor and process to fine crumbs (alternatively, place in a plastic bag and bash with a rolling pin, taking care not to split the bag).

3. Mix the crumbs thoroughly with the melted butter and

spoon into a 25cm diameter loose-bottomed flan tin. Press the crumbs firmly over the base and up the sides of the tin to cover completely. Transfer to the fridge to chill until firm.

4. For the filling, place the egg yolk into a bowl with the

caster sugar and whisk together.

5. Add the mascarpone and beat until thoroughly combined. Stir in the vanilla essence.

6.

In a separate bowl, beat the egg white with a clean whisk until stiff peaks form when the whisk is removed from the bowl. Gently fold the egg white into the mascarpone mixture.

Remove the biscuit case from the fridge. Spoon the mascarpone mixture into the biscuit case and gently smooth the top with a spatula. Arrange the sliced strawberries on top of the mascarpone.

8. Transfer to the fridge and chill. Remove the tart from the fridge 20 minutes before serving.
