Ronnie Milsap has no fear of mining his past and building his sound on what he retrieves. All the elements of his new single and title track, ‘Summer Number Seventeen’, written by Joe Hunter and Sam Hunter, harks back musically to much of his catalogue. His long-time, loyal fans will ease into it like weary listeners into a warm bath of reverie. Inspired as much by Jim Reeves as by soul giant Jackie Wilson, Milsap embraces multiple influences. That’s why his new album can’t be pigeonholed any more than his earlier releases. Summer Number Seventeen, released Jan. 28, is a concept project, specifically a tribute to some of the artists and songs that affected him in his formative years. This being Milsap, that means the selections are remarkably diverse, including his versions of Lloyd Price’s ‘Personality’, Jimmy Ruffin’s ‘What Becomes of the Broken Hearted’, and ‘Tears On My Pillow’ by Little Anthony and the Imperials. “We started hearing some of the songs that Ronnie and Richard Landis and Rob Galbraith, his producers, were working on,” said John Jackson, VP, A&R and Content Development, Legacy

Recordings. “At first it seemed like, ‘Oh, here’s a bunch of songs that Ronnie likes.’ And there was nothing wrong with that. But when we heard the new song, ‘Summer Number Seventeen’, I wrapped my head around what that means for him and for everybody, which is to remember back to the summer when maybe you graduated from high school or got your first car or went to the beach with your friends. That’s what he was thinking about. These are songs that he was covering when he was 17 and just starting out. Once that gave the album shape, it made total sense.” Some of Milsap’s covers stick closely to the arrangement and feel of the original versions. On others, he stretches out and takes the song to a different place. The most notable example is ‘Georgia On My Mind’. With his personal and professional veneration of the late Ray Charles, Milsap realized that the worst way to approach the song would be to emulate his late friend’s immortal rendition. “I was going to be inducted into the Georgia Music Hall of Fame in 1990,” he remembered. “They said, ‘Would you perform Georgia On My Mind?’ I said, ‘No, I can’t

do that! Ray Charles recorded the definitive version.’ They said, ‘Well, just see what you bring to it.’ When we started work on Summer Number Seventeen we couldn’t find the original master, but we had the performance on a DAT that Rob had kept. It’s different than the Ray Charles version, but we really do like what we did.” Sweetened by a remake of a Milsap classic, ‘Lost In The Fifties Tonight’ (Fred Parris, Troy Seals, and Mike Reid), Summer Number Seventeen is essential listening for all who have long loved his music. But there’s plenty for younger fans as well, if not in the elegant orchestrations and resonant vocals, then in the artist’s epic history. “There’s a backstory of discrimination and misunderstanding of his talent and where he comes from,” Jackson said. “He didn’t understand racism, for instance, so he didn’t differentiate between genres or styles or performers. It was weird to hear Country Music with a piano back then, when everybody was playing guitars. But he had 40 No. 1 hits despite being a little left of canter. It’s amazing. Walking Wires If we were to judge Logan Brill by the lyrics on her debut album, Walking Wires, we might feel a little worried. After all, she sings about being haunted by a lost relationship in ‘No Such Thing As Ghosts’ (written by Chris Stapleton), the consequences of staying with a stranger in a hotel room in ‘Month of Bad Habits’ (Andrew Combs and Doug Johnson), forlornly “going from bar to bar” in ‘Rewind’ (Paolo Nutini), and being “too tired to swim, too weak to crawl” in ‘Seven Year Rain’ (Heather Little and Travis Meadows). But, don’t call for an intervention. Instead, marvel at how this upbeat, positive 22-year-old brings a sad story to life. Brill was born with a strong, assertive voice, which she has sculpted into an expressive instrument. When she interprets Patty Griffin’s ‘Nobody’s Crying’, she animates the melody with tasteful filigrees, and on key words she subtly hardens her timbre to more vividly convey anger. Yet, she also maintains a conversational quality - no easy feat. Raised in Knoxville, Tennessee, Brill enrolled in Nashville’s Belmont University in 2009 as a vocal performance major. Location and talent combined to connect her to Carnival Music, which released Walking Wires. Produced by Matthew Miller and Oran Thornton, the album is also a sonic triumph. Layered guitars, meaty organs, and, on Audra Mae’s ‘Ne’er Do Wells’, some imaginative voice processing combine with Brill’s delivery to create a winning combination.

? D A S u o Y Are Changes in seasons affect our behaviour, thoughts and feelings. Some people even get depressed and suffer from a condition known as Seasonal Affective Disorder… Seasonal Affective Disorder (SAD) is a mood disorder that is also known as winter depression. It’s a type of recurrent depression that affects an estimated half a million people every winter, particularly during December, January, and February. Tahir Tellioglu, M.D., says, “Most patients are normal for most of the year, but experience depression in the winter or summer.” It’s caused by a biochemical imbalance in the hypothalamus due to the lack of sunlight in winter. The condition in the summer is referred to as Reverse Seasonal Affective Disorder. For many, it’s a seriously disabling illness, preventing them from functioning normally without continuous medical treatment. For others, it’s a mild but debilitating condition causing discomfort but not severe suffering. The symptoms usually recur every winter, starting between September and November and continuing until March or April. They include sleeping problems (either oversleeping or disturbed sleeping), feelings of misery, guilt, loss of self-esteem, feelings of irritability, anxiety, tension, overeating, weakened immune system, mood-swings, fatigue, and inability to tolerate stress and carry out a normal routine. They usually disappear in spring, either suddenly with a short period of hypomania

or hyperactivity, or gradually, depending on the intensity of sunlight in the spring or early summer. Dr. Tellioglu explains, “It’s usually seen in people aged 18 to 30 years, but it can start at any age. It’s also common in the northern and southern hemispheres, and is rare in regions where temperatures are within 30 degrees because the daylight hours are long, constant, and extremely bright.” Get Happy There are three ways to treat SAD: either by light therapy, antidepressants, or counselling, but light therapy is the most effective. It involves exposure for up to four hours per day to very bright light (at least ten times the intensity of ordinary domestic lighting is the minimum dose). You should start the treatment in autumn, when the first symptoms appear and continue doing it daily in winter; sit two to three feet away from a specially designed light box, usually on a table, and allow the light to shine directly into the eyes. You can carry out normal activities such as reading, working, eating, and knitting while sitting in front of the box; it’s not necessary to stare at the light. It’s usually effective within three or four days, and it continues to be effective provided that it’s done every day. If the symptoms are severe,

antidepressants and other psychiatric medications are recommended. Bupropion is a preventive medication that patients can take; it should be taken before winter starts so that the condition doesn’t kick in. Other antidepressants commonly used for treatment include Paroxetine (Paxil), Sertraline (Zoloft), Fluoxetine (Prozac, Sarafem), and Venlafaxine (Effexor). It’s recommend that you continue to take medication beyond the time your symptoms normally go away as this helps to prevent worsening of symptoms. Keep in mind that you may have to try several different medications before you find one that works well and has the fewest side effects. Dr. Tellioglu comments, “Like other medications, all antidepressants pose the risk of side effects; always consult your doctor before you take any medication.” Counselling is another option to treat SAD. Although it’s thought to be related to biochemical processes, your mood and behaviour can also contribute to the symptoms. Counselling can help you identify and channel your negative thoughts and behaviours that may be making you feel worse. It can also help you cope with the depression better by giving you a brighter perspective; it’s the most hassle free way of battling the condition.


Coping With Sadness Try these simple things to cope with the depression: Stick to your medication no matter what. There are no days off when it comes to treating an illness. Start exercising as this helps reduce stress and anxiety levels. This can also reduce symptoms and lift your spirits. Meet up with friends and family often; talking to them about your condition can help you recover faster. Make your home sunnier and brighter so that you don’t feel gloomy all the time. Plan a trip to a place where the weather is pleasant; this will be a refreshing change for you.

The Blood Personality Follow the lead of the Japanese and find out what your personality is like based on your blood type…

In Japan, you are what you bleed. Blood type is a popular way of defining temperament and personality, much like the western horoscopes. Back in 1931 in Japan, Furukawa Takeji (1891-1940) proposed that there was a link between blood type and personality after working in a high school’s administration department where he observed temperamental differences between applicants. He divided the population into ‘good’ and ‘bad’ people; people of blood type A were generally mild tempered and intellectual, while people of type B were the opposite. A great deal of research went into blood psychology in the 50’s, 60’s, and 70’s in Japan; Masahiko and Toshitaka Nomi were responsible for making this a mainstream science, having researched the way in which blood type affects our relationships, work, and leisure. Japan’s interest in blood types grew as a reaction against western racism. Western scientists found that type B was common in Asia, but rare in Caucasians. As it was typical in animals, they were considered inferior and lower on the evolutionary scale.

Masao Ohmura, a personality professor at Nihon University, doesn’t believe that it has any bearing on a person’s personality. He suggests that the popularity of blood typology in Japan is because the typically homogenous Japanese don’t want to seem the same. Their population has a fairly even distribution of blood types; so if grouped accordingly, diversity is created, even if it’s only an illusion. After this link was suggested in 1930, a new blank for blood type was added to job application forms to better assess the potential employees’ temperament. In 1997, four Japanese TV channels broadcasted programmes on this subject and even today you can find a daily blood type forecast on morning TV. An entire industry has grown around this foundation laid down by Furukawa; you can now buy blood type chewing gum, soft drinks, calendars, and even condoms. The condoms contain different instructions for each blood group on how to approach the sexual encounter! In Japan, this has influenced peoples’ lives in unexpected

ways: some Japanese companies plan their departments around the blood types of their workforce, a baseball coach supposedly used it in the selection of his team, and some kindergartens split children accordingly and use different teaching techniques for each group! It’s also used in dating services because it’s considered a good indicator of potential matches. Discussing blood type is a key part of introductions in Japan; Japanese teenagers ask about your blood type, just as western teenagers ask about star signs. Interestingly, 90% of Japanese people know their blood type, regardless of the popular fad. On the other hand, Europeans and Americans are unaware of their blood type and the blood typology phenomenon. A vast majority of them are type A or O, with few type B’s and AB’s. So, most people fall into two personality categories, explaining why this hasn’t been a big hit overseas. If you’re type AB or O, you’ll probably dismiss all this blood analysis as new-age mumbo jumbo, but the sensitive type A’s or B’s may want to discover more.

Love Chemistry Chemistry in relationships is not just clicking with each other and having a jolly good time. Scientists have proven that love is in our head and is fuelled by chemicals in our body, says Nisrine Kreidieh… My friend Suzan has been married for two years now. She’s disturbed because her husband and her don’t seem to have that spark that we call chemistry. Since I’m newly wed, she tipped me with some marital advice, “Marriage is not what you see on TV, or the Hollywood lust that you long for. We have different views, we don’t share the same hobbies, we don’t even have similar tastes! Yet we stay together.” We search for love with a list of desirable qualities such as honesty, fidelity, loyalty, sense of humour, intelligence, and warmth. Yet, when that person appears we say, ‘He is a really nice guy, but nothing clicked, just no chemistry.’ It has been scientifically proven that certain chemicals in our body make us think and act the way we do. The Love Chemicals There are some chemicals in our body that act up in different stages of a relationship and thus determine our behaviour. They can give you a high that you can’t resist, or show you a low that you can’t tolerate. Infatuation: New couples are always happy and energized because they experience the chemistry that we all crave for. This chemistry is the result of neurotransmitters such as dopamine and norepinephrine that are released by the brain; dopamine makes us feel good and norepinephrine stimulates the production of adrenaline. It

makes our heart race! Together they’re responsible for your bright outlook, increased energy, and a sharpened sense of perception; you’re elated to the highest level possible. When you’re with your love, a neurotransmitter called phenylethylamine (PEA) is released, giving you a sense of comfort and security. When you’re separated, the levels of PEA drop causing your mood to crash; that’s ‘love sickness’. All these chemicals together create an adrenaline rush, leading to infatuation or ‘chemistry’. Attachment: Once the infatuation is over, a new set of chemicals created by endorphins come into play. They’re not as power-packed as PEA, but are more addictive and steadier and they reinforce feelings of intimacy, dependability, warmth, and shared experiences. People who have been married for long become addicted to the endorphins, and it’s likely that they’ll stay married. When they’re apart, they yearn for each other because of the absence of endorphins; this is also why overcoming the death of a spouse is very difficult. According to Mark Goulston, M.D., Professor Of Psychiatry at the University of California, “Adrenaline-based love is all about ourselves, we like being in love. But with endorphins, we like loving.” Some people need this chemical excitement to feel happy and intoxicated by life. Once

this initial rush of chemicals goes away, their relationship crumbles. They then look to achieve this chemical rush by being infatuated all over again. But by experiencing this high repeatedly, their body builds up tolerance to the chemicals and it takes more and more chemistry to bring that special feeling of love. If they stay married, they’re likely to have affairs to feel the high. Make Your Chemistry Falling in love is like being high on drugs that are naturally produced by the body; this stage of love has a strong psychological component. You love everything about your new love and consider him to be perfect. He’s the solution to your emotional problems and his love completes you; the chemistry between you two is absolutely beautiful. Unfortunately, this elated feeling does not last forever. Our bodies don’t function in that heightened state for longer than six months. As time goes by, we’re no longer ‘in love’. The time allotted to being in love is long enough to act on the attraction and gradually develop a more committed relationship. When that’s done, the relationship then requires work and effort. Notions about our ‘one true love’ should be put aside and focus should be on how important our partner is in our lives. You should be able to see the world through his eyes, understand what he’s going through, and always support

When PEA is released into your system, your heart starts racing and you feel that strong attraction that you had felt once upon a time. In order to bring back the excitement, it’s important that you take time off and do things that couples enjoy. This will not only revive your relationship, but also deepen the emotional bonds you both share. Making time for playfulness and surprise will bring back memories of your initial love for each other. Write a love letter to your partner and let him know how much you

adore him. Celebrate any small occasion that has deep meaning for you and your partner; this will bring you closer together and create an emotional connection that triggers the love hormones all over again. According to Randy Hulburt, author of Romantic Chemistry Comes in Degrees, “It’s about how you feel about yourself when you’re with your partner; you feel interesting, attractive, and appreciated.” So if you start feeling stale, revive your relationship by doing new things together and getting back that rush.

Within a circle of friends, there’s always a person or couple who is the glue of the group. Being the leader of the pack means you would be the one your friends turn to for advice, plans, a hangout place, and money! It’s as equally a hassle as it is a reward and you have to be cut out for the host role. To become the glue, you need to possess certain inevitable qualities and resources: The Designated Planner: One of the main reasons why your friends choose you to be glue is because you’re always the first one to find a new hangout place or happening party in town and they trust your decision. So if your friends give you the tedious task of deciding on a place, it’s likely that you’re the glue. Reema from Jeddah, explains, “Whenever we want to go somewhere new, I ask my friend Soha to decide on the place because she knows the city in and out. She keeps discovering new hangout places and we have

no problems with that!” The Official Entertainer: Friends also consider you to be the glue when you have a fun-loving personality and you’re always up to something exciting. to remember that your friends trust you completely and will listen to you, so give them democratic advice and never let your personal feelings get in the way. Thomson Reuters’s 2013 investment banking analysis for the Middle East… During 2013, Middle Eastern investment banking fees reached US $722.2 million. According to the Thomson Reuters report, the value of announced M&A transactions with any Middle Eastern involvement reached $43.4 billion during 2013, 7% more than the $40.7 billion witnessed in the region during 2012, and marking the best full year total since 2010. Nadim Najjar, Managing Director for the Middle East, Africa, and Russia/CIS, said, “Middle Eastern companies raised $4.2 billion of equity during 2013, a 39% decline from 2012 ($6.9 billion), while Middle Eastern debt issuance reached $8.1 billion during the fourth quarter of 2013, up 82% from the previous quarter. Despite the quarterly uptick, only one-third of 2013 activity was seen during the second half of the year.” Najjar pointed out that the investment banking fees increased by 20% over the $602.6 million seen during 2012, recording the highest annual total in the region since 2010. He added, “Investment banking fees from completed M&A transactions totalled $212.8 million, up 22% from 2012 ($174.0 million), and accounting for 29% of the overall fee pool. Fees from debt capital markets underwriting hit $144.1 million, up 44% from $100.0 million during the previous year, and marking the best annual total for DCM fees in the Middle East since 2010. Equity capital markets underwriting fees totalled $62.4 million, down 43% from 2012 ($108.9 million) and the lowest annual total since 2003. Investment banking fees from syndicated lending increased 38% to $303.0 million, accounting 26

for 42% of total Middle Eastern fees, the highest share since 2004.” Najjar noted that HSBC earned the most investment banking fees in the Middle East during 2013, a total of $61.6 million for an 8.5% share of the total fee pool. HSBC topped the Middle Eastern completed M&A fee league table, as well as both the DCM and Loans underwriting fee rankings. The National Bank of Abu Dhabi took first place in the Middle Eastern ECM fee ranking with a 10.3% cut. In respect to Mergers and Acquisitions, Najjar pointed out that 2013 marked the best full year total since 2010. “Bolstered by the $7.5 billion merger of two UAE state-owned aluminium producers in June, the materials sector was the most targeted, accounting for 23% of activity. Energy & Power and Telecoms deals also helped drive activity during 2013, with each sector accounting for 21% of Middle Eastern involvement M&A,” he said. Najjar added, “Inbound M&A totalled $6.1 billion, down 3% from the previous year. Egypt was the most popular target, while China registered the highest value of inbound M&A deals targeting the Middle East. Outbound M&A increased 11% from this time last year to total $14.8 billion. As sole advisor on the aluminium merger, Morgan Stanley topped 2013 Middle Eastern involvement M&A league table with $12.7 billion.” In the area of equity capital markets, he pointed out that Middle Eastern companies raised $4.2 billion during 2013, a 39%

decline from 2012 ($6.9 billion), led by an 80% drop in follow-on offerings. “Follow-ons accounted for 23% of equity issuance in the region during 2013, compared to 69% the previous year. Despite the fall in overall equity issuance, Initial Public Offerings recorded the highest level since 2008 with $2.7 billion accounting for 66% of ECM activity in the region. The strong IPO total was supported by Asiacell Telecommunication’s $1.3 billion stock market debut at the beginning of the year. The United Arab Emirates was the most active nation, accounting for 45% of total equity issuance in the Middle East during 2013. As sole bookrunner on the Asiacell IPO, Rabee Securities took first place in the 2013 Middle Eastern ECM ranking with 31% of the market,” noted Najjar. Speaking about the debt capital market activity in 2013, Najjar said, “Despite the quarterly uptick, only one-third of 2013 activity was seen during the second half of the year. Debt issuance in the region throughout 2013 totalled $38.6 billion, nearly levelling 2012’s total of $38.8 billion. Investment grade corporate debt totalled $27.4 billion and accounted for 71% of the annual total.” Najjar concluded, “The United Arab Emirates was the most active nation accounting for two-fifths of activity, followed by Saudi Arabia with 22%. International Islamic debt issuance declined 11% from 2012 to reach $32.5 billion during 2013. HSBC took the top spot in the Middle Eastern bond ranking during 2013 with a 16% share of the market.”

Get Physical Exercise is great because it’s a natural mood enhancer and stress reducer. During PMS, many women turn to sweet foods to gain temporary relief from stress, but exercise provides long term relief and burns calories simultaneously. Working out three times a week for 20-30 minutes is sufficient; aerobics, walking, jogging, bicycling, and swimming are great stress busters. Yoga is also believed to combat psychological symptoms because it eases the mind and body. Several of its poses relax the muscles and this reduces physical discomfort. But, avoid twists and inverted positions because squeezing the abdominal area

PMS Prep Keep these tips in mind to help reduce nasty PMS symptoms: Eat six small meals at regular three-hour intervals, high in carbohydrates and low in simple sugars; this helps avoid energy highs and lows thus reducing mood swings. Substantially reduce or eliminate caffeine, fats, and simple sugars to reduce bloating, fatigue, tension, and depression. Avoid salt (it retains water in the body) for a few days before your period to reduce bloating and fluid retention. Get plenty of sleep; about eight hours a night. You don’t need the added crankiness of lack of sleep!

Read on to discover their tricks and become a makeup artist yourself, says Sonja Svensek… At Chanel’s fall fashion runway show, the focus wasn’t on bags, shoes, or accessories; it was on the models’ dark and thick eyebrows. Big, bold eyebrows are in now, so if you have thin ones, fill them with a brow pencil that’s a little darker than your natural colour; to avoid the artificial look, do short and light strokes. However, balance thick, dark brows by making sure your lashes are equally thick and dark. Wearing false lashes is very popular now, but if this is a big step for you, cut the falsies in half and glue them only at the ends to enhance the size of your eyes. If this is simply not your thing, use a volumizing mascara like Chanel’s Inimitable Mascara or Bourjois’s Blackest Black volumizing mascara to enhance their size. The smoky eyes effect is a big hit this season, but with a slight twist. Instead of using dark shades

such as blue, grey, or black, choose green or purple. The contrast of purple and green works well to create smoky eyes with a twist. Apply one of these shades on your lids and at the bottom and blend it well. Then line your lower lashes with a dark or metallic green liner and finish off with black mascara. The best eyeshadow colours to use this season are a mix of shimmers and neutrals; greens, pinks, purples, and certain bronze shades are in and they suit most complexions. Our favourite ones include YSL’s Ombres Duolumieres in fresh peach-moonlit burgundy and Isadora Mineral’s EyeShadow in purple agate. Line Up Eyeliner plays a great part in the overall look of your eyes. If it goes wrong, you will not be able to achieve professional eyes. So, if you line your eyes in the same manner

all the time, try lining them in a way that enhances your eye shape. If you have big eyes, run a soft eye pencil over the outer third of your upper and lower lash lines. The lines should meet in a sideways ‘V’ point, just beyond the outer corner of each eye. Then, smudge the liner out with a cotton bud or eyeliner brush at the corners to elongate your eyes. If you have small eyes, follow the same steps, but don’t connect the two lines at the corners. Instead, smudge the liner outwards and line the inner rims of your lower lash lines with a peachy pencil (a lighter colour makes eyes look bigger). If your eyes are narrow, you should try to make them appear rounder. The trick is to create a ‘camel hump’; the liner is thin at both corners and thicker in the middle. This should only be done on your upper lash lines.

Pro Eyes Tip If you can’t draw a straight line on your lid, first make an even line of tiny dots and then connect them. Contrary to what some people believe, pencil liners shouldn’t be stored in the fridge. They should be soft enough to glide along your lash lines and must not pull on the delicate skin. But if your liner keeps smudging, refrigerating it for a few minutes will help because this hardens it.

There are some easy fixes for some bothersome problems: Mascara Smears: Anyone who wears mascara has faced this annoying problem! If this happens while you’re applying makeup, dab on some loose powder and wait till it dries off. Once it’s dry on your skin, it will easily flake off. If it smears during the day, the easiest way to remove it is to use a cotton bud dipped in moisturizer. Dark Circles: If you have dark circles under your eyes don’t apply layers of concealer and foundation because this will draw

more attention to the area. The secret is to use a very thin layer of concealer and then a highlighter like Touche Eclat by YSL. This will brighten up the area without caking up. Puffy Red Eyes: A quick fix is to lie down and place cold spoons on each eye. Another good option is to use cotton pads soaked in milk or used tea bags on the eyes. And, of course, applying eye drops is always helpful. However, consider switching to a mascara

that’s meant for sensitive eyes for a few weeks. Keep in mind that cucumbers only help to cool and tighten the area; they don’t soothe and reduce red eyes. Runaway Liner: Eyeliners tend to run, especially during hot nights out. To prevent this, use a tiny brush dipped in primer and run it along your lash line. A primer is used all over the face to make the makeup last longer, so the idea works equally well for upper and lower lash lines.

Cape Town is southern Africa’s most beautiful, most romantic, and most visited city. Table Mountain is by far the most striking and famous sight found there; it’s shrouded by clouds and rears up from the middle of the city. More than a scenic backdrop, it’s the solid core of the city that divides it into distinct zones with public gardens, wilderness, forests, hiking routes, vineyards, and desirable residential areas trailing down its lower slopes. Palatable Pasta

With the beginning of the New Year you will constantly be on the run. So here are four easy and delicious pasta recipes…

Pasta ala Oglio with Shrimp Ingredients:

3 Oz cooked shrimp 2½ Cloves of minced garlic 1 Tbsp light margarine 1 Tsp pre-minced garlic or 1 Cup cooked pasta of your choice 1 Tsp dill 1 Tsp parsley ½ Tsp basil Salt and pepper to taste Parmesan cheese to taste Directions:

Serves 1

1. In a small saucepan, sauté the margarine and garlic. 2. Once the garlic and margarine have reached a tender consistency, add the spices and blend. 3. Add the cooked shrimps and sauté until shrimps are warm. 4. Add cooked pasta to saucepan, toss gently but thoroughly, and transfer to warm plate. 5. Add salt, pepper, and Parmesan cheese to taste.

Penne Arrabbiata Ingredients:

Serves 4

16 Oz. packaged penne pasta 3 Pieces of a fresh garlic clove (do not use entire clove) 3 Medium peeled, chopped tomatoes 2 Tbsp fresh chopped parsley 1 Tsp crushed red pepper ¼ Cup extra virgin olive oil Salt to taste Directions: 1. Preheat olive oil on high heat. 2. Cook penne pasta al dente - penne should still be somewhat firm after cooking. 3. Add garlic and chilli pepper to hot oil and cook until golden brown. 4. Reduce heat to medium and add tomatoes and salt. 5. Cook uncovered until sauce thickens, about 20 minutes. 6. Drain penne and pour into a warm serving bowl. Pour the sauce over the pasta and gently work sauce to cover the penne - do not stir as this may break up the pasta. 7. Sprinkle with parsley and serve. 58

Spaghetti Bolognese

Ingredients:

Serves 4

Directions: 1. Heat oil in a 12-inch non-corrosive skillet over medium heat. 2. Add onion and sauté until soft, about 4-5 minutes. 3. Cook, breaking up meat into fine pieces, just until meat loses its raw colour, about 6 minutes. Do not brown meat. 4. Stir carrot and celery into meat mixture and cook over medium-high heat for 2 minutes. 5. Stir in milk and nutmeg while reducing heat to medium and cook until meat is evaporated, about 3-4 minutes. Remove from heat. 6. Press tomatoes and their liquid through a sieve into a bowl and stir it with the beef broth, tomato paste, salt, basil, thyme, pepper, and bay leaf into the meat mixture. 7. Heat to boiling then reduce heat to low. Simmer uncovered, stirring frequently, until most of the liquid is evaporated and the sauce is thick, 1-1½ hours. 8. Remove and discard bay leaf. Just before serving time, cook in a large kettle of boiling salted water just until al dente, 8-18 minutes depending on thickness of pasta. Drain well. 9. Ladle meat sauce over spaghetti in a heated bowl. Sprinkle cheese on top.

Lobster Linguine al Pesto

Serves 4

1 1 1 ½ ½ ½ ½ ⅛

Tbsp tomato paste Tbsp olive oil Chopped medium onion Large lean ground beef Can tomatoes - whole and peeled Cup beef broth Tsp salt Tsp dried basil - crumbled Bay leaf Pound Spaghetti boiled in boiling salted water Cup Parmesan cheese - freshly grated Small carrot - finely chopped Stalk celery - finely chopped Cup milk Tsp dried thyme – crumbled Tsp nutmeg

Ingredients: 10 Oz lobster 4 Tbsp grated Pecorino Romano cheese 3 Tbsp pine nuts 2 Cloves garlic 2 Cups fresh basil, cleaned and stems removed 1 Tbsp chopped Italian parsley 1 Pound linguine ½ Tsp salt ½ Cup olive oil

Directions: 1. Boil lobster juice in heavy medium saucepan over high heat until reduced to ½ºC, about 6 minutes. Mix in lobster and pesto sauce. 2. Meanwhile, cook pasta in large pot of boiling salted water until tender but still firm to bite. Drain well. 3. Add pasta and parsley to sauce and toss to coat. Season to taste with salt and pepper. 4. Combine the first 6 ingredients in a food processor at medium speed for 3-4 minutes. Set aside. 5. In a large saucepan or stock pot bring 4 quarts of water to a boil and cook the linguine in the boiling water for 4-5 minutes or until pasta is just done. (Reserve a little of the boiling water and set aside). 6. Drain the pasta and return it to the pot. Add the sauce to the pasta and combine. If the pasta is a bit dry, add a little of the reserved water. 7. Add the Pecorino Romano cheese, combine, and serve. www.dazzle-magazine.com
