The coexist community kitchen is getting a facelift and should be transformed by the beginning of september. there will be some great new facilities which will open up a whole host of options for the kitchen to run workshops and classes. we’re super excited about it!

Gazpacho

This is a yummy and refreshing cold tomato soup from the South of Spain. It is so, so easy to make and will chill you right down after a sticky day in the fab weather we’ve been having. .

The Hamilton House foyer has received some much needed love with a fresh lick of paint. We’ve installed ‘What’s On’ boards (shown below), some words about the journey of Coexist, and a beautifully illustrative map of the building. Come in, have a look round and get inspired! We’ve also added a community noticeboard and still found a place for all the local flyers and posters! Phew...I don’t know how we managed to fit it all in!

All you need is to get good, fresh ingredients and throw it all into a blender (take out the middle of the peppers and the peel off the onion and garlic- obviously!). I haven’t given a quantity or measurement for the ingredients as it is best to taste as you go. However, for one cucumber, I would go with about 7 tomatoes, half an onion and a couple of cloves of garlic. Then just some pinches of salt and pepper with as much olive oil as you like. Again, try the gazpacho as you along because its one of those dishes that the taste

What you’ll need: -Fresh and tasty tomatoes -Cucumber -Green pepper and/or red pepper -Garlic -Red onion -Salt -Pepper -Olive oil depends on the person... do you want more garlic, more salt, more tomatoes? To make a slightly thicker version of the soup called Salmorejo you can add some white bread into the blender... this makes the gazpacho a little creamier. However, in this heat gazpacho is a bit more refreshing! The Spanish often put chopped up boiled egg and tiny bits of jamon on top... alternatively just put some nice fresh herbs and a drizzle of olive oil.
