A Message from DVBA We are very fortunate to have enjoyed a relatively mild winter to date and thankfully, the days are becoming progressively longer. In fact, it’s almost time to start thinking about cherry blossoms, sunshine, bike rides and backyard barbeques! 2021 is the Year of the Ox and Chinese New Year celebrations began a few days ago on February 12. Teachers and students are eagerly awaiting their next school break which begins on March 15. In quick succession, St. Patrick’s Day is the next possibility for celebration on March 17, and March 20 officially marks the arrival of spring. This year, Easter Sunday falls on the first weekend in April. Our cover story for this edition features Dr. Colleen Adams, of Dunbar’s Westside Orthodontics. Dr. Adams began her career as a dentist following in her mother’s footsteps. A few years later, she returned to university for her orthodontic training. This year, she is celebrating twenty years of creating beautiful smiles and is thrilled to be working with her new associate Dr. Travis Gibson. If you have strolled along Dunbar recently, you may have noticed a new pastry and coffee shop near the corner of West 30th Avenue (formerly Kokopelli Café). Cake Bae opened in December and is owned and operated by Lizzy Fu. Her signature dessert is a twenty layer Mille Crêpe Cake, a delicious, delicate cake that is extremely popular in China but not as easily available in Vancouver. The reviews of Cake Bae are outstanding so be forewarned that cake slices are available on a first come, first serve basis. To be sure you don’t miss out, you can pre-order quarter or whole cakes. In this issue, our experts answer two very interesting questions. Dr. Terynn Chan explains what you can do about dry eyes and Yukiko Onley tells us why two artists from the Sunshine Coast have chosen to have a show at the Visualspace Gallery in Dunbar.

WESTSIDE ORTHODONTICS: Twenty Years of Creating Beautiful Smiles Story by Sarah Gordon Sometimes people know their calling from an early age. Dr. Colleen Adams, the owner of Dunbar’s Westside Orthodontics, developed an interest in dentistry from her mother, Dr. Cathy McGregor, who recently retired from the profession. Dr. Adams says, “I always liked the sciences and biology, and helping people to be more healthy and happy is a huge bonus.” After graduating from the University of British Columbia’s dental school, Dr. Adams practised general dentistry alongside her mother for a few years. Then she returned to school to further her studies and completed a Master’s Degree in Orthodontics at the University of Alberta. 8

Westside Orthodontics is celebrating its twentieth anniversary this year. The practice started in 2001 on the upper floor of Arbutus Village Mall and shifted to Dunbar in 2012. Dr. Adams was thrilled to relocate to this vibrant community. She works alongside her new associate Dr. Travis Gibson who attended the University of British Columbia for both his Bachelor of Science in Chemistry and his Doctor of Dental Medicine degrees. After graduating, Dr. Gibson practised as a general dentist in northern B.C. Subsequently, he returned to UBC to obtain his Master of Science in Craniofacial Science and Diploma in Orthodontics.

The Westside Orthodontics team uses various forms of braces and other dental appliances to align teeth to improve bites and smiles. They also work with general dentists and other dental specialists to coordinate treatments.

Although the busy clinic sees a lot of children and teens, adults make up thirty to forty per cent of the practice. Dr. Adams mentions, “Invisalign has opened up many more adults to the idea of straightening their teeth. Our oldest patient was in her 80s.” There are a number of interesting orthodontic advances taking place. Dr. Adams explains, “Invisalign is evolving and has become a valuable new method to move teeth. It is very good for correcting many types of problems and patients find it easy to adapt to. There are also little mini implant anchors that we can use to control and design movements of the teeth that were not possible without surgery just a few years ago.” New state of the art equipment includes a scanning machine that makes 3D models of teeth so Dr. Adams and Dr. Gibson no longer need to take impressions with gooey putty. They can use the scans with the latest software to show the transformation of the teeth into an ideal alignment on the screen in just a few minutes.

A new 3D printer allows them to make retainers and mouthguards in the office. Dr. Adams says, “This was really useful during the COVID-19 lockdown; we could help our patients by making retainers and set them outside for pickup.” Choosing between metal, clear and lingual braces is mainly an aesthetic choice. Each has its advantages and disadvantages but the way the teeth move is similar to all of the fixed braces. Invisalign is a different way of moving teeth.

The length of the treatment depends on which teeth need to move and how far they need to move. Some cases may be as fast as six months while others may require three to four years. In addition to braces, Westside Orthodontics makes colourful custom-fitted mouthguards, which are popular with local athletes from baseball to martial arts, rugby, and football. Working towards a reward can be a good motivator. Westside Orthodontics’ Smile Club rewards patients with points based on how well they clean their teeth, look after their appliances and wear their elastics. Points are then redeemed for gift cards. Dr. Adams is extremely grateful for the clinic’s hard-working staff. She says, “The team works very closely with our patients. It is a group effort and many of our patients look forward to chatting with their favourite assistant. We see patients often throughout their treatment and they become good friends. Our team is the heart of the practice; they make the office the fun and friendly place that it is. They make it the best place to work.”

“I love seeing patients grow and their smiles get bigger and brighter as we progress.” Dr. Colleen Adams “It is fabulous to see personalities shine through as the treatment unfolds. That is probably the most rewarding part of my work, but the geek in me also loves designing and developing the plans for each case. Looking at the objectives and then figuring out how the appliances need to work for the magic to happen is like a little puzzle for each person! It never stops amazing me that we can move teeth through the bones into alignment. The capacity of our bodies to adapt and change is really sometimes like magic, slow magic, but still quite amazing. It is very cool to share this experience with our patients,” Dr. Adams says. As for her thoughts on this community and what makes it special, Dr. Adams says, “The people are the best. We have so many wonderful families and individuals in Dunbar. They are engaging and interesting; there are all sorts of people in this neighbourhood but all are kind and involved.”

Westside Orthodontics sponsors a Dunbar Little League team each year. They enjoy supporting kids’ sports teams as games bring people out to watch kids play and in the process they get to know each other. Each December the clinic chooses a particular charity to donate to such as the Union Gospel Mission, B.C. Children’s Hospital or Ronald McDonald House. As with all businesses, the pandemic has caused Westside Orthodontics to make adjustments to the way it operates. This includes taking temperatures upon arrival, filling out screening forms, and ensuring the staff is protected with extra heavy masks and face shields. The number of patients and staff allowed in the office has been reduced. CAKE BAE:

Vancouver’s Mille Crêpe Cake Destination Story by Sarah Gordon

If you have strolled along Dunbar recently you may have noticed a new pastry and coffee shop near the corner of West 30th Avenue. Cake Bae opened on December 20, 2020, and is owned and operated by Lizzy Fu.

While completing her B.A. in Fine Arts at UBC Lizzy moved out of residence and got her own apartment and this is when she began teaching herself how to bake. She laughs when she says, “I love to eat! I watched a lot of YouTube.”

When meeting Lizzy, you will be drawn to her warm, energetic, and enthusiastic personality. She is eager to make her customers feel welcome. She chose relaxing shades of green and white paint not only to make the space look bigger and brighter but also to make her customers feel happy.

She realized she had a talent for baking and registered in Vancouver Community College’s pastry program.

Lizzy didn’t begin baking until she was 18. She explains, “I came to Vancouver from China when I was 16. Ovens are not common in homes in China, so there is not much of an opportunity to do home baking. Instead, people go to the bakery.” 18

She did her practicum at Thomas Hass Chocolates, which is renowned for its artisan chocolates, pastries, and desserts. After graduating from VCC, Lizzy worked at Vancouver’s Chambar restaurant as a baker where she expanded her knowledge of bread and waffles.

Opening her own business was a natural next step for this enterprising pastry chef. Lizzy explains, “I am a leader and always wanted to work for myself.” As a UBC student, she was familiar with the Dunbar neighbourhood and was aware there are not a lot of dessert or coffee spots locally. She thought this would be the perfect place to launch her business, and was so committed to the community that she chose to move here. Lizzy admits she is fussy about her coffee. She likes to support local suppliers and is excited about Vancouver based Argo Roasters organic beans. She appreciates the well-balanced Equilibrium Espresso with its chocolatey taste while not being too acidic. She says, “It goes perfectly with my baked goods.” Twenty layer mille crêpe cakes are Cake Bae’s signature dessert. These delicate cakes are extremely popular in China but are not as easy to come by in Vancouver. It is a labour of love to assemble these cakes with alternating layers of paper-thin crêpes and pastry cream. Only quality ingredients are used. Pastry cream is used rather than whipped cream, which is lower in fat and has more complex flavours. Cakes are made daily and are never frozen.

The matcha crêpe cake is a best seller. Lizzy sources matcha tea from a Japanese

woman in Calgary who brings it in regularly from Japan. This tea is sensitive to light; therefore the cake cannot be displayed, as it will transform from its distinct bright green shade to a brown tone. Look for the sign in the display case that indicates the matcha crêpe cake is available and be sure to give it a try. Another customer favourite is the organic London Fog Earl Grey crêpe cake. With tea sourced from a supplier in Chinatown, the cake is created with Earl Grey pastry cream and an Earl Grey ganache on top.

Mochi Kinako is a new flavour, which contains less dairy. It features honey mochi, kinako soy milk pastry cream, and a thick layer of kinako powder. This cake has earned many glowing reviews. Lizzy says, “People have gone crazy for this one!”

University students flock to Cake Bae. The eight-inch cakes are sold whole, as well as in quarters and by the slice. Lizzy says, “For smaller gatherings a quarter of a cake is often all customers require.” She is happy to take custom orders for a quarter or whole cakes; due to the labour involved, three days’ notice is required. Cakes can be pre-ordered on Cake Bae’s Instagram page.

Lizzy has felt welcomed by neighbouring business owners who come in to say hello before they open their shops. Passers-by also pop in to check out Cake Bae. Lizzy is looking forward to the day she can welcome customers to sit and socialize at Cake Bae. During the pandemic she is offering take-out orders only, however, in the future when it is safe to do so, there will be a number of comfortable areas to sit down and enjoy a cup of coffee and a delectable mille crêpe cake.

DUNBAR LIFE: Ask An Expert Why did two Artists from the Sunshine Coast choose to have a show at the VISUALSPACE GALLERY in Dunbar? David E Hall and Liz Christian are two artists from the Sunshine Coast who will be presenting their work at the VISUALSPACE GALLERY in April 2021. The exhibition is self-curated and organized by the artists. Yukiko, the gallery owner, provides a professional venue that honours the artist and the community. It is a “jewel” in the heart of Dunbar. David began his art career in the backyard studio of his Dunbar home 20 years ago. He now lives in the small town of Gibsons, B.C. Liz Christian is a fellow artist and neighbour. She grew up in the San Francisco Bay area. They are master artists with unique styles. During 2020, David and Liz kept their enthusiasm and lifted their spirits by collaborating on several works. They dropped off a canvas at each other’s doorsteps, made their marks and repeated this action until each was settled with the finished product. One collaboration will be featured in their upcoming show. David Emerson Hall “Life Force Images” and Liz Christian “Abstraction in Nature.” April 8-11, 2021 from 11am to 5pm.

DUNBAR LIFE: Ask An Expert: Why are my eyes so dry?

Dry eyes is a very complex problem with many different symptoms, causes and treatments. I have had people come into my clinic with complaints ranging from blurred vision to tearing to pain. All of these symptoms can be experienced with dryness! There is a clear tissue at the front of your eye called the cornea that is filled with nerves in it and on top of that there are multiple layers of tears. Anything that disrupts the tear film or damages the cornea will trigger the nerves which makes you feel pain, causes reflexive tearing and fluctuating blurriness.

Treatment depends on the cause which is why visiting a local optometrist will help you discover the most effective way to care for your eyes.
