Purificacion Garcia celebrates a new collaboration with Japanese creator Daisuke Takamatsu, a renowned culinary artist who is recognised for his ability to turn luxury items into food. For this special collaboration, Daisuke chose nine iconic Purificacion Garcia bags to reinterpret with his unique creativity. The Origami bag was re-created using a square piece of toast topped with icing and maple syrup, while the Origami Bucket bag had its stitches reproduced with mayonnaise. The quilted Homenaje Acolchado bag, an iconic statement of the brand, born in 2005, is recreated using tomatoes to get the perfect shade of red, passed through a sieve multiple times to get the desired effect paired with the original metallic details to give it a shiny touch. The Soho bag has a cosmopolitan feel and is made with leather and, to reimagine it, the perfect amount of cocoa was adjusted to obtain the ideal brown shade. The culinary artist used an array of techniques and ingredients to create this edible collection.

The fashion brand Del Core partnered with jewellery house Cartier in the launch of the new Cartier High Jewelry Collection called Le Voyage Recommencé in Florence. The new Cartier collection – an exploration of the maison’s savoir-faire and creative practices experienced through the light of a new prism, celebrating the purity of lines, the balance of shapes and volumes, the play of proportions and the final harmony intrinsic to every Cartier creation –was presented on models wearing custom-made Del Core garments. Daniel Del Core created 16 unique pieces by taking inspiration from the deep or bright colours of the gems and the flowing yet precise shapes of the jewels. Tommy Hilfiger and Disney created a collection to celebrate Disney’s 100th anniversary. For the first time, Mickey and his friends enter the world of college prep, appearing in Tommy Hilfiger archival classics. The beloved character and his companions, including Minnie Mouse, Pluto, Goofy, Donald Duck and Daisy Duck, are drawn in manga, the popular Japanese comic cartoon illustration. Van Cleef & Arpels, the French luxury jewellery brand, first released the iconic Alhambra motif in 1968. Drawing inspiration from the contours of the four-leaf clover, the collection has been celebrating luck through constantly reinvented jewellery and watchmaking creations.

The latest collection boasts four new Alhambra designs that express tender harmonies by combining the intense reflections of guilloché rose gold with the dazzling nuances of carnelian.

The new pieces include a 20-motif-long Vintage Alhambra necklace, a five-motif Vintage Alhambra bracelet, a Sweet Alhambra watch and the Vintage Alhambra reversible ring.

Each of the elegant variations gracefully alternates the motifs by associating the soft glow of rose gold with the warm hue of carnelian. Moreover, thanks to a guilloché effect, the sunbeam-like streaks impart a subtle relief to the surface of the precious metal, sparking an intense whirlwind of light that captivates the gaze. An ingenious addition to this distinctive collection is the new ring that’s been fashioned with a reversible motif. This piece features two sides made from different materials: carnelian and guilloché rose gold set with a diamond. The body of the ring comprises three rows of cascading golden beads specially designed to ensure the stability and proper functioning of the pivoting motif.

Perfecting this mechanism required many research and development trials to ensure the ideal motion with a smooth and regular rotation. For each ring, the different components have been assembled and adjusted by hand. Moreover, the maison has paid special attention to detail by ensuring the perfect comfort on the interior of the ring by lining it with a golden half-bangle that gently embraces the finger.

La Prairie scientists have been pursuing the special light that hits Switzerland to create the brand’s skincare lines. In their quest to find skin luminosity, they revisited the house’s signature Science of Light, the foundation of the well-known White Caviar Collection. Their latest launch is the revamped White Caviar Pearl Infusion, newly powered with encapsulated Lumidose, La Prairie’s proprietary illuminating molecule, and enriched with Swiss Golden Caviar ingredients. The serum addresses the skin’s ability to reflect light and improve firmness.

According to the brand, skin luminosity depends on the amount and quality of light radiating from the skin, which is determined by these three dimensions: pigments, texture and skin density.

White Caviar Pearl Infusion focuses on reducing the appearance of the four significant pigmentation disturbances – brown spots, redness, sallowness and greyness – and increasing the density of

collagen fibres in the dermis. Emerging from 15 years of research, Lumidose is a potent inhibitor of human tyrosinase – the enzyme responsible for the formation of the brown pigment melanin. For the first time, La Prairie has incorporated Lumidose in a double encapsulation technology for deeper skin penetration. The spa and wellness treatments offered at Ozone Gym & Spa are certainly not ones to be passed up. Conveniently located on the mezzanine floor of the La Cigale Hotel, Doha, the interior décor, which is characterised by hues of brown wood that are bordered with natural stone pebbles, creates an atmosphere that exudes tranquillity and relaxation. The carefully placed onyx panels also evoke a sense of ease and calm, making this the perfect spot to unwind and rejuvenate. Upon arrival, I am welcomed to try a vitamin-rich, fruit-infused beverage to prepare for the detoxifying experience that awaits.

On this occasion, I am invited to try the famous HydraFacial. This service promises to be a non-invasive procedure which is safe and suitable for all skin types. The process itself integrates cleansing, exfoliation and extraction, with the aim of revealing renewed skin that glows from within. As a somewhat seasoned customer of HydraFacials, it is safe to say that the one offered at Ozone delivers on all fronts. In fact, the spa manager Olga also shares that she typically gets a HydraFacial treatment at the facility once every two months, which is a testament to the quality of the therapy itself, along with the products used. I am guided to the treatment by my beauty therapist Orsana, she explains that the session lasts 90 minutes. I am introduced to

the exceptional range of products that will be utilised during my visit, featuring the finest selections from Phytomer and iS Clinicals. With the knowledge that only the highest-quality products are used, I am immediately at ease and cannot wait to get started.

To begin with, all residue from the day so far is removed to ensure that my skin is best prepared to absorb the benefits of the acids, antioxidants and peptides still to come. Using soft clockwise motions, the surface of my skin is cleansed of all impurities using gentle cleansing milk from Phytomer (special attention is paid to my oilier T-zone and larger pores around the nose). Before the lymphatic drainage begins, Orsana applies and gently massages a moisturising peptide serum on my skin to help the lymphatic device glide smoothly. Harnessing double benefits, this serum also works to help with discolouration of the skin by evening out the skin tone (something I could definitely reap the benefits of). A high-pressure suction which is manoeuvred in a specialised directional method, manually massages and drains the lymph nodes; this drainage can improve circulation, depuff, detoxify, tone and firm the facial

skin. With my complexion now already feeling tighter and more firm, I am ready for a facial steam where a warm towel is carefully positioned on my face – this is perhaps my favourite part of the entire treatment as the wonderful therapist also takes a moment to gently massage my forehead and release any tension from my scalp with her magic fingers. It really is the extra step of care that makes the experience of a HydraFacial at Ozone Gym & Spa entirely unique.

Now it’s time to really delve deep into the pores! The subsequent phase of the procedure involves the application of a mild acid peel. This peel works wonders by refining the skin’s texture, purifying it at a deeper level, and yielding a more radiant complexion –all without causing any irritation. Orsana takes a moment to explain that the strength of the treatment can be adjusted; careful consideration is given to the sensitivity of the customer’s skin to ensure that each session is personalised and tailored to be gentle yet effective. With a few spots appearing just beneath my jawline, I feel that the peel can really get to work in loosening the upper layer of skin to prime it for the next step – extraction. Unsurprisingly, the extraction is typically my least preferred part of any facial (in fact, I absolutely dread it!). However, with such

gentle fingers at work, it is totally painless. Extra care is given to areas on my face where there are more clogged pores, and a combination of manual extraction, along with vacuum extraction, is used to provide the deepest clean possible.

Truly a HydraFacial unlike any other, my skin embraces the final step and is drenched with a big drink of hydration! A moisturising and soothing emulsion is massaged into every crevice of my face, followed by sun protection to shield my facial skin from the strong UV and UVB rays of the Doha sun, which is at its peak this time of year.

With a complexion that is glowing, pores that appear to be tighter and skin that is smooth to the touch, I depart Ozone Gym & Spa ready to face the rest of my day…with my best face!

Fashion is one of our passions, and this month, we talked to Sonali Raman, a sustainable fashion designer and professor at VCUarts Qatar, about embracing green solutions in this industry.

OHLALA – How did fashion enter your life? When did you realise this would be your career path?

Sonali Raman – My journey into fashion started even before I hit double digits, designing miniature apparel for my collection of Barbies. By my late teens, I was creating full-sized apparel using my mother’s pedal sewing machine. I knew by then that fashion and textiles were what I wanted to make my career in. I inherited my love for natural fabrics from my grandfather, who always wore khadi (a type of Indian garment), and my mother, who wore natural cotton and lush silks all her life. My passion for all things traditional is inherited from my parents, who had a fine sense of aesthetics.

OHLALA – In 2014, you started your brand SR by Sonali Raman with sustainability at its core. Why did you feel the necessity of following this route with your label?

Sonali – I started my brand’s journey with a desire to create ethicallysourced and sustainable products that I would be proud to own and wear. My apparel and jewellery reimagine India’s traditional fabrics and crafts in a more contemporary way. Every piece I design reflects my beliefs about consuming sensibly, buying responsibly, living mindfully and caring for the environment. Those of us in the sustainable fashion community know that being fashion-conscious goes beyond being fashionable and trendy. Fashion is not wearing something new every day or every season. It is about being conscious of our consumption, waste and the footprint we leave behind. An integral part of my brand is to revive long-forgotten techniques and help artisans share the intrinsic beauty of these crafts with the world.

OHLALA – What makes a fashion brand sustainable?

Sonali – Sustainability in fashion has evolved from a niche to a genuine revolution in the past few years. The demand for ecological, fair and sustainable products is rising, fuelled by growing awareness about the environment, climate change prevention and conscious consumerism. Sustainable fashion is no longer a trend but a fundamental prerequisite to remaining relevant and competitive in the fashion space. When a brand uses natural and biodegradable fabrics, produces slowly and in small batches, avoids plastic packaging, uses natural or chemical-free dyes, ensures their workers get fair wages, is conscious of energy consumption, reduces waste and designs for long-term use and for circular fashion –then they are on the path to sustainability.

OHLALA – Why is looking for environmental solutions important in this industry?

Sonali – The fashion industry is the second largest polluter after the oil industry, taking a large toll on the environment. In addition to water pollution from chemical dyeing processes, microplastics from synthetic materials, packaging waste and poor working conditions, the fashion industry emits 2.1 billion tons of CO2 annually. The fast fashion model also encourages consumers to view clothing as disposable. The human and environmental health risks associated with inexpensive products are hidden throughout the lifecycle of each garment. Clothing that is intentionally made to fall apart contributes to the pounds of textile waste that everyone sends to landfills every year. That’s why cutting CO2 emissions, addressing overproduction, reducing pollution and waste, supporting biodiversity and ensuring that garment workers are paid a fair wage and have safe working conditions, are all crucial. If we want to save the planet for future generations, we have no other path besides the sustainable fashion route – there is no Planet B.

OHLALA – You are a faculty member at Virginia Commonwealth University School of the Arts in Qatar (VCUarts Qatar). What do you think is your main mission in this position?

Sonali – It is our mission as faculty to show the path to the creative young minds of future generations. We need to channel their thinking to make them sustainable and circular fashion designers. The Fashion Design department at VCUarts Qatar has taken an aggressive approach to incorporating sustainability into our curricula in the last three years in an impactful way. The Fashion and Sustainability course focuses on supply chain, garment workers, textiles and materials, differences between linear and circular economies, waste, water and ethics, giving students a comprehensive overview of the industry towards sustainability. I am currently teaching this course, and I developed and introduced a module on sustainable textiles and organic and fair-trade materials. Students learn what it means to work with eco-friendly fabrics. The aim is to foster a longer-lasting shift to sustainable lifestyles and mindsets amongst future designers.

OHLALA – How do you see the fashion scene in Qatar today, and what should we expect for the future?

Sonali – Awareness is slowly building here in Qatar about sustainable fashion. I now see several upcoming designers moving towards slow fashion, adopting ethical production and transparency in the supply chain. This means that the path to change has begun. Organisations like M7 promote sustainable fashion through their Fashion Incubator/Accelerator programme. There are a lot of talks and discussions happening locally to create awareness. The Fashion and Sustainability course recently held a public panel discussion on sustainable fashion in Qatar, where they focused on navigating the challenge of balancing people’s need for style while ensuring sustainability. Designers also need to be careful not to greenwash their clients about sustainability and ensure they truly walk the talk.

OHLALA – What has been an exciting project you took part in in Qatar?

Sonali – This year, as a fashion designer, I had the opportunity to participate in the Zwara programme of M7 – where we had to take inspiration from the Forever Valentino exhibition and create our own piece. I collaborated with a Doha-based Indian artist, Surabhi Gaikwad, and we designed a stunning dress and cape that exquisitely embody the fusion of two art forms – fashion design and painting, underpinned by India’s intricate traditional crafts and the spirit of Valentino as its overarching theme. Il Mantello Rani – The Rani Pink Cape – draws inspiration from the fashion aesthetic of the Maison Valentino and the colour of royalty in India, Rani Pink. The pieces are in the ongoing Zwara exhibition at M7, open until September 10.

OHLALA – What are the things you like most in Qatar? Any hidden gems people should know about?

Sonali – Qatar is my second home and has been for over 18 years. I love the fact that, as an expatriate, I can live my life very comfortably and find wonderful opportunities as a designer in this country. There’s a lot of focus on creativity and art here which is great. Unique places lesser frequented by most people, in my opinion, would be Fuwairit Beach – the rocky area, Souq Al Wakrah, which is lovely with the beachfront, and Education City. A lot of people don’t know too much about Education City and all it has to offer.

Human beings have been socialising around the fire since caveman times. Nowadays, the fire pit can be seen as our modern kitchen, and the get-together aspect remains intact. This space has had a big transformation in the past century. They are no longer a room exclusively for women to cook for their husbands and children but a space to be shared with family and friends. People want this area to be cosy and spacious as cooking has become a form of entertainment. That can be clearly noticed in the number of TV series dedicated to it. Everyone in the family can become a chef. Many friends’ get-togethers are also centred on cooking and showing off new recipes and ingredients to loved ones. From a small, almost private, separate box, the kitchen is now a larger living space to cook, work, study and entertain your guests. Most are not even separated anymore from the living room. They have become more of an extension of the dining and living area. The role of this space has changed quite a lot and the furniture is evolving accordingly.

THE GOLDEN TRIANGLE

Kitchens are aesthetically improving year after year. However, never forget the main role of being a functional space. Understand your kitchen layout and prioritise what is essential for you. Kitchen layout comes in many different orientations, single-walled, U-shaped, galley and more. Whichever type of kitchen layout you have, the flow is crucially important. Have you ever heard about the triangle rule? If you draw a line to connect the fridge with the sink and the stove, you should obtain a triangle. We put in a lot of effort while cooking, which can be tiring, so the triangle rule helps ease the workflow and reduce the amount of walking while cooking. Within this hypothetical triangle, you achieve a better flow. We should always consider case by case if this rule has to be taken into consideration or if we can make some exceptions. But, generally speaking, we shouldn’t have these three elements too far away from each other.

Appliances should be integrated into the design as much as possible. The Eurocucine that happened at Salone del Mobile.Milano last year brought many innovations exhibiting this concept. There is a solid trend towards minimising the look and sounds of the appliances, with several companies introducing systems that blend them into the cabinetry. Thanks to double-depth counters, they disappear behind sliding panels, so we don’t see them when not in use. Not only are the appliances visually integrated into the design, but new tech is also being introduced to minimise noise. This next-level integration is great for open-concept spaces where the kitchen connects directly to the living and dining rooms, making it more pleasant aesthetically and sound-wise.

A protagonist of the kitchen, besides the worshipped kitchen island, is the vent hood. The latest trends see new rounded cylindrical hoods. It is always best to follow the recommended distance height between the hood and the cooktop to ensure the best suction capacity, but don’t forget to customise the measurement according to the heights of the users. If the house owner is extremely tall or particularly small, measurements need to be double-checked to ensure extra comfort.

The cupboards should be within easy access at eye level. However, for heavyweight pots, pans and trays, drawers are preferable. Integrated sockets for smartphones and devices are a must in a modern kitchen. The trendy pop-up socket is a fancy option to consider. Lighting design is also crucial; it should combine ambient, task and accent light. If you perform various chores on your island, make sure you have recessed lighting layered. In addition, you can add a strip of LED light to accentuate certain architectural features or to bring in a bit of extra warmth. Summarising, lighting design requires three illumination levels: a well-lit worktop, a nice statement pendant in the eating area and diffused lighting overall.

LATEST 2023 TRENDS

- Statement islands. Big and bold, made with interesting textures and lots of curves. In high-end designs, they come with a solid marble slab backsplash, matching the counters.

- Islands connected to the counters or dining tables.

- Induction cooktops. They heat the pan through a magnetic field, and even when the water is boiling in a pot, if you touch the burner, it is usually not hot.

- Cabinets up to the ceiling. The standard gap above the storage units is outdated and not visually pleasing. It is also a big surface to just store dust!

- Eco-friendly systems delivering filtered, chilled and carbonated water direct from your kitchen faucet. The perfect solution to eliminate plastic bottles and cans.

- Biophilic design. The trend of introducing natural elements indoors. Celebrate nature with pieces in terracotta, crude clay, cords, glazed tiles, handcrafted décor and natural textures. Invest in indoor greenery and embrace white, beige and calming earthy tones.

- It’s the age of self-expression! Make the most of it with unique styles.

For more than two decades, InterContinental Doha Beach & Spa has enjoyed its exceptional placement right on the beautiful shores of West Bay Beach. Resembling a castle with its sandy-coloured battlements, the sound of the car tyres rumbling on the cobblestones as you approach echoes the anticipation of a delightful staycation experience. The fountains leap as if extending a warm welcome to arriving guests.

The traditionally dressed hotel porters assisted me with parking and luggage whilst I was free to arrive unburdened through the revolving doors. Having been assigned a Club Room, I was able to enjoy numerous benefits, including exclusive Club InterContinental check-in on the mezzanine level and access to the Club InterContinental lounge. The corridors leading to the room, tastefully decorated with regal royal blue carpets, showcase elements reminiscent of Qatar’s rich cultural heritage and architectural design.

In a conscious effort to minimise their carbon footprint, the key card has undergone a transformation away from plastic. As someone who deeply values sustainability, it was heartening to observe the IHG chain taking additional measures to enhance their use of alternative materials that are eco-friendly and considerate of our planet.

The room provided incredible panoramic views stretching from wall to wall, encompassing the mesmerising and inviting pool area below. The distant towers of The Pearl Island on the far left and the captivating West Bay towers on the right added to the visual delight, creating a truly breathtaking vista to enjoy from the desk, couch or even the bed. The linen was immaculately pristine white, with a luxuriously soft and voluminous texture, surpassing all expectations.

Additionally, there was a selection of pillow options available to cater to individual preferences and ensure maximum comfort. Further promoting their commitment to improving sustainability, refillable toiletries by Byredo, in their sleek, monochrome bottles, were available in the bathroom. The wardrobe offered ample space to accommodate belongings and, as part of Club InterContinental service, I enjoyed the convenience of complimentary pressing services.

The sandy shoreline is adorned with plentiful loungers and parasols, providing the most picturesque setting. Despite the hustle and bustle of a busy weekend, it was a wonderfully peaceful place to sit back and relax or to avail yourself of the pool menu, which offers a selection of snacks and refreshing cold beverages delivered straight to your lounger. As the ocean’s pleasantly warm waters call out temptingly, you’re invited to engage in water activities like kayaking or a simple swim in the carefully designated area. The gentle slope of the sand leading into the ocean makes it an ideal spot to splash with younger children. If the pool is more your preference, there’s a large free-form option or a covered spot for kids, both offer the ideal choice for a chilled afternoon dip under the ever-watchful eye of the nearby lifeguards.

Sporting facilities at the hotel are expansive, with a state-of-the-art 24hour fitness centre on the lower ground floor, equipped with the latest Technogym equipment, including a wide range of cardiovascular and strength machines, free weights and more. Alternatively, you can easily reserve the highly sought-after padel and tennis courts for your enjoyment. Or why not engage in an invigorating beach volleyball match with your friends as the sun sets, providing a dual benefit of staying active and soaking up vitamin D? As the sun gradually descended behind the property, casting a pleasant shade, the delightful cheers of scoring points mingled with the distant sound of chilled house music emanating from the neighbouring La Mar Beach, the hotel’s exquisite new luxury beachside venue.

As a Club InterContinental guest, you have the added benefit of enjoying breakfast, afternoon tea and evening canapes. Moreover, the outdoor terrace provides an additional bonus, allowing you to savour freshly brewed coffee whilst admiring the views from a different perspective. The Coral restaurant stood out as the favoured breakfast destination, bustling with lively family activity. Guests can opt for either indoor or outdoor seating, immersed in the cool, coastal atmosphere amidst creatively arranged driftwood and sunlit tables. Displayed on wave-like counters, reflective of the nearby ocean, the extensive buffet spread featured an array of options ranging from continental cold cuts, cheese and salads to flavourful Asian curries and the beloved British classic, cooked breakfast. At the live egg station, skilled chefs prepared delightful combinations of eggs cooked to preference, including omelettes, eggs Benedict and my personal favourite, perfectly poached eggs. Step into the chic and relaxing atmosphere of Novecento, where you’ll discover an alternative location for enjoying breakfast, lunch or dinner. Nestled just across from the main entrance, the prime position makes it an ideal meeting spot, whether for a casual coffee rendezvous or a more formal gathering. The recent addition of the outdoor terrace provides space to indulge in the most exquisite pastries and cakes, all whilst soaking in the amazing views of the pool and beach beyond. I sat in a comfortable seat shaded by the large parasols and chose the classic Chicken Caesar salad as it is a great light lunch option. The crisp, fresh and crunchy lettuce formed a great contrast to the quaint, soft quail eggs, offering a twist on this classic dish. For those with a sweet tooth and an eye for detail, Novecento has an extra indulgent treat in store – a Chocolate Afternoon Tea, available daily. The handcrafted chocolates and desserts from Chef Dimitris Chronopoulos are a sight to behold, topped with gold leaf and moulded into intricately detailed masterpieces, which taste even better than they look! After the sun begins to set, the ambience of the evening is enhanced by the sound of the grand piano entertaining diners. With great care and attention, Chef Alex crafted a delightful dinner experience at Mykonos restaurant, ensuring that dishes were tailored to meet my specific dietary requirements. The soft, flickering candlelight enhanced the intimate ambience of this Greek eatery. Together, Chef Alex and I agreed on a mezze-style starter, presenting a medley of beloved Greek favourites such as olives and capers, Dolmadakia (stuffed vine leaves), Melitzanosalata (smoked eggplant dip), Lefki Taramosalata (cod fish roe) and warm pita bread. Accompanying these delectable bites was the classic Greek salad, described by the chef as the perfect complement to seafood dishes. The Htapodokeftedes (octopus patties) were expertly paired with a parsnip and fennel puree, creating a harmonious balance of textures and flavours. The main dish was a show-stopping, Mixed Grill Thalassinon, including jumbo prawns cooked on the charcoals, sheri fish, cuttlefish, seabass and steamed vegetables, with a zesty olive oil and lemon dressing. Each dish showcased the rich culinary heritage of Greek cuisine, passed down through generations and prepared with heartfelt dedication. As I savoured each bite, I felt as if I had momentarily transported myself to a cosy Greek taverna, immersed in the authentic flavours and warmth of the experience.

The Spa InterContinental facilities offered an ideal setting to conclude the weekend with a serene and peaceful experience. Before indulging in a blissful one-hour Swedish massage, the indoor pool, sauna and steam room, exclusively for women, provided a refreshing environment for moments of mindful contemplation. The individual treatment room was decorated in calm greys with the option of a heated treatment bed. Kadek, my therapist, warmly welcomed me and graciously allowed me to select my preferred scent. Opting for a rejuvenating blend of verbena oil, infused with the refreshing essence of lemon grass and Argan, I sipped on hibiscus juice, renowned for its healing properties. All too soon, this wonderful escape came to an end and it was time to head back to reality but I left with a feeling of total relaxation and a promise to return. I’d highly recommend you try a mini vacation of your own and prepare to enjoy a peaceful oasis close to the heart of the city.

One of the meanings of paradise, according to Oxford Dictionaries, is an ideal or idyllic place or state. I would say that another short description would represent this word well: the Maldives – more specifically, Avani+ Fares Maldives Resort. I had the opportunity to experience the resort’s hospitality, incredible facilities, exciting activities, delectable dining and relaxing environment. A picturesque destination with energetic staff, always ready to go the extra mile to make you feel comfortable and pamper you in all possible ways.

To get to this piece of heaven on earth, you have to hop in a seaplane. I have to say, I was not excited about this part of the trip, but sometimes you have to go through not-so-nice things to reach wonderful outcomes. As soon as we landed at Velana International Airport in Male (Maldives capital), a team was waiting to help check our luggage into the seaplane and take us to the Minor Lounge (the Avani brand is part of Minor Hotels, a Thai multinational company based in Bangkok). The lounge was very comfortable with bites, warm coffee and tea. I needed buckets of coffee after my overnight flight, and it just hit the spot. In no time, our seaplane was ready for us!

It looked a lot less scary when we got closer. What caught my attention was the pilots wearing flip-flops, shorts and caps – suitable to the hot and humid weather and, as I noticed later, to all the hopping out and back into the plane. They are known as ‘barefoot pilots’ as the flip-flops are abandoned as soon as they start operating the flying machine. The flight was incredibly smooth (but extremely noisy), and the views were to die for! In 35 minutes, we were landing close to the shores of Avani+ Fares. A boat awaited us and, as we approached the resort, we could see some of the staff making a heart shape with their hands close to their chests while traditional drums sounded. Such a lovely reception! Riaan, the General Manager, and his team were there to introduce themselves while we sipped a cooling drink.

We hopped on one of the island’s buggies and headed straight to our rooms. The check-in was done smoothly from the comfort of my private Beach Pool Villa. Kritika showed me everything I needed to know and explained how to use the room’s facilities. I was in a state of awe with

all the attention to detail. The villa was spacious, with a big super-king bed that would hug me that night and had my name written in palm leaves on the cover – such a lovely touch. The most exciting part about the resort is that you won’t find a single piece of plastic! Sustainability is taken seriously at Avani+ Fares. The bottled waters are refillable, and the toiletries are from Malin + Goetz, a company with a philosophy of fewer ingredients but better quality. Ceramic containers are filled with their luxurious body wash, peppermint shampoo, cilantro hair conditioner and vitamin B5 body moisturiser. Everything smelled incredibly good! The outside shower (a must-have in every property in the Maldives) was my favourite feature.

We were in a group of five girls, all invited to explore this brand-new hotel. My colleague and I were the first to arrive and we unwound in our rooms. We then headed to The Skipjack Bar, a restaurant located by the communal infinity pool with unobstructed views of the vast Indian Ocean. The dining spot gives the perfect beach vibes with modern and comfortable furniture in earthy tones and accents of vivid green, navy blue and yellow. Just as the pilots have casual attire, the resort staff wear comfortable uniforms in breathable materials. The print on the T-shirts is a beautiful drawing of the Baa Atoll, where the five-star property is located, more precisely on Fares island, set on the western edge of the atoll. Skipjack’s menu is vast, with lots of options for a quick bite or full meal. As a vegetarian, it can be tricky to find alternatives, but not at Avani+ Fares, they cater to all dietary restrictions and there is plenty to choose if you are a veggie enthusiast like me. Shannon, responsible for the food and beverage, ensures all restaurants’ menus have something interesting and as sustainable as possible. I opted for the Veggi Burger, a vegetable and mushroom patty in sourdough bread, and sweet potato fries – a light but filling meal.

It was time for a full-body massage from AvaniSpa. The relaxing vibe can be felt throughout the whole property, from the smiley staff to the laidback dress code. But meeting Heni, my therapist, choosing my favourite oil and changing into a super fluffy robe was the final hint I needed to fully embrace the dreamy holiday mode. The treatment started with a rice foot scrub. I then moved to the massage table, where Heni began the 60-minute therapy. She used a palm and thumb pressure technique with long-stroke movements. I finished my pampering session by drinking jasmine tea and watching the adorable fruit bats flying from tree to tree looking for Maldivian almonds.

We all met for dinner to try some items on the Tribe menu. The restaurant has a unique concept that invites you to find your tribe by offering different culinary experiences from around the world. An encounter of tribes from Northern Thailand, the plains of Colorado, the Amazon River, the Basque country, the Japanese highlands and the Middle Eastern desert. From the generous spread we had, I would highlight the Satay Gai, marinated cornfed chicken, chargrilled and finished with a spicy and coconut dip. My dining companions loved the smokiness of the chicken paired with the earthy peanut sauce. The other delightful bites were the Vegetarian Spring Rolls, Crisp Baby Squid with wasabi mayo, for which the comment was how fresh it tasted, creamy hummus and beef sliders. But the star dish for me was the simplest one, Charcoal Grilled Leeks with chimichurri and smoked almonds – they were delicate with a delicious smoked flavour. One of the main characteristics of this eatery is the molecular drinks served in eye-catching tiki glasses.

The other dining options on the island are Ocean Terrace, the main restaurant where breakfast is served; Hammock, located in the lobby lounge with comfort food and a grab-and-go corner; Smuggler’s Shack, a beach bar with seasonal pop-up dining; Charcoal, a signature restaurant

with a large charcoal grill; and Petit Bistro, the first kids-only restaurant in the Maldives, located at AvaniKids. The resort also offers the option of in-villa dining and Adrift, a romantic setup and menu served by the beach or other locations on the island.

I woke up energised and headed to the gym for my daily run. I loved that it was fully equipped with Technogym equipment – no excuses to skip my routine even when in holiday mode. After a shower, I had breakfast at Ocean Terrace, where we were served an à la carte menu with all sorts of egg preparations, pastries, healthy granola and chia pudding.

Aquafanatics @Fares is the hotel’s destination for water sports. We went there for a snorkelling expedition. After collecting the equipment and listening carefully to the super energetic diving instructor, Jean, we boarded the boat and started our journey to look for manta rays. We were

not lucky, but we stopped by a massive reef and saw many turtles and fish, such as fusiliers, blue surgeonfish, bluestriped snapper and many others. It was like entering an enormous aquarium – such a great experience!

Back on land, we had lunch at Skipjack and shared our impressions of our incredible time in the sea. I spent the afternoon enjoying my private pool and the beach, which was just a few steps away from my garden. I felt like the luckiest girl on earth!

At the end of the day, we embarked on the boat again for an incredible sunset trip where we saw dolphins. As we observed the last light of the day kiss the horizon goodnight, we spotted a massive raincloud following us back to the shore. It poured heavily over us in minutes, but we were under Skipjack’s roof, and it didn’t last very long. Coming from the Middle East, we loved it!

That night we were invited to dine with Riaan and ask him as many questions as we wanted – and we had many! After discussing a few topics, it was clear that all the good energy that enveloped the property came from the man himself. He is a force, on top of every detail – a passionate leader that fits perfectly in this environment. We had a delightful evening experiencing some dishes from the Charcoal menu and some off-menu items such as the pumpkin and drumstick curry (which I used to commit a delicious culinary crime and poured on top of my risotto) and the Maldivian curry made with local tuna. Flavours that played with our taste buds and that we embraced with ultimate pleasure. There was entertainment from a DJ, and the party vibe took us to the dance floor. The next day we had the opportunity to spend some time in the Avani Overwater Villas. We took our snorkelling equipment and beach clothes and enjoyed the jump from the villa platform into the ocean, where we could continue to be amazed by the incredible sea life. The infinity pool with open views of the turquoise waters was a lavish touch to this luxurious accommodation.

We were gifted with in-villa dining with a selection of delicious curries, red snapper ceviche and salad. I had previously mentioned that I love Sri Lankan beetroot curry, which they don’t have on any of the menus, but guess what we had at our feast? Yes, Sri Lankan beetroot curry! This is an elevated level of customisation to please guests – conquering them by their stomachs!

We also enjoyed a sound healing wellness session at sunset by the beach conducted by Shalin. The whole purpose of this therapy is to promote mindfulness, focus on breathing correctly and massage the brain with the vibration of the bowls. It was my first time experiencing this kind of treatment, a way of connecting with myself and the nature that was surrounding us, a magical moment.

We ended our trip with a romantic dinner Adrift by the beach. If the sound therapy was magical, this dinner went beyond that. A beautifully decorated table was placed in the middle of a sand circle with low lights ringing the dining spot. A guitarist was playing soft music just for us. The set menu had a refreshing Char Grilled Watermelon appetiser with three main options: Beef Chalmar Tenderloin, Maldivian Tuna Fillet or the veggie Open Lasagna. I opted for the latter, and the dough was cooked to perfection with a creamy white sauce and vegetables with a touch of black truffle, a delicate and light dinner to end this fantastic experience on a high note. The dessert was a deconstructed lemon meringue with lemon curd, a small meringue bowl where a yuzu sorbet sat gracefully, decorated with candied orange, grapefruit and kumquat jam.

We were treated to two extra shows that night. The drinks expert, Sergei, prepared a special and refreshing cocktail at our table while the lovely Nisha, Director of Sales, sang two songs of her own composition in her mother tongue, Maldivian.

Inspired by the warmest time of the year, we invited some of the most talented chefs in Qatar to share their favourite dishes for the hot days with us. Head to the kitchen and have fun re-creating their recipes!

Summer is all about refreshing dishes, but these are some tips to take into consideration:

- Opt for recipes with minimal ingredients but maximum flavour.

- Keep hydrated. Eat water-loaded fruits like watermelon, melon and grapes. You can also make different homemade popsicles with fresh fruits.

- Green leafy vegetables are high in nutrient value and provide a good cooling effect on the body. Spinach, lettuce and kale are your summer talismans. They can be added to smoothies and salads or served as a side dish to a meal.

- During this period, lighter foods are more appealing because they are easier to digest. Foods that require more energy to digest end up generating more heat in the body and, therefore, should be avoided during summertime.

- Cool off with chilled soups! Go for the likes of Gazpacho and cucumber soup.

- No-cook recipes such as salads are an easy way to have a quick meal and still achieve high nutrition and a cooling effect.

“Tub Tim Krob, also known as red rubies, is a famous Thai dessert that stands out for its vibrant appearance and cultural significance. Made with water chestnut cubes coated in red food colouring, it resembles sparkling rubies. Usually paired with coconut milk and ice cubes, it offers a delightful balance of flavours and textures. This dessert is the perfect choice after a hot and spicy Thai menu, providing a refreshing and satisfying end to the meal, but can also be enjoyed as a standalone dessert for those seeking a taste of summer indulgence,”

INGREDIENTS:

150g peeled water chestnuts

1 1/2 cup sala-flavoured syrup

1 cup tapioca flour

1 cup sugar syrup (see recipe below)

150g coconut ice cream

10g jackfruit

10g young coconut

5g fresh mint leaves

METHOD:

For the sugar syrup:

1. Begin by preparing the sugar syrup by placing a small saucepan over medium heat. Add the sugar and two cups of water to the saucepan. Stir the mixture frequently and heat it for approximately three minutes or until the sugar completely dissolves. Once the sugar is dissolved, bring the mixture to a boil. Remove the saucepan from the heat and let the syrup cool down completely.

For the chestnuts:

1. Cut the chestnuts into halves. In a mixing bowl, combine the salaflavoured syrup and water chestnuts. Stir the mixture thoroughly until the

chestnuts are well coated with the sala-flavoured syrup. Let the chestnuts sit in the mixture for 10 minutes, allowing the flavours to infuse. Next, working in small batches, use a slotted spoon to transfer the chestnuts from the syrup mixture into another mixing bowl containing tapioca flour. Toss the chestnuts in the flour to ensure each piece is evenly coated. Once coated, transfer the chestnuts to a small bowl, making sure to shake off any excess flour before moving on to the next batch.

2. Prepare a bowl filled with ice and put aside. Then, bring a pot of water to a boil. Transfer the coated chestnuts into the boiling water and cook them until they are tender. Once cooked, remove the chestnuts from the boiling water and immediately place them into the bowl of ice, allowing them to cool down for a few minutes. Using a separate bowl, transfer the cooked chestnuts from the ice bath into the sugar syrup. Let them sit in the syrup for approximately 15 minutes.

3. Scoop out generous portions of coconut ice cream and carefully place them inside a serving bowl or a coconut shell. Create a hollow space in the centre of the coconut ice cream, forming a well. Fill it with the sweet water chestnuts, ensuring they are evenly distributed.

4. Garnish with jackfruit, young coconut and mint leaves.

METHOD:

1. Start by preparing the pomegranate dressing. Add all the dressing ingredients to a mixing bowl. Whisk them together until the sauce becomes smooth and shiny. Place the sauce in the refrigerator for 30 minutes to chill.

2. Next, wash and clean the arugula leaves, tomatoes and grapes. Pat them dry. In a mixing bowl, combine all the ingredients except for the burrata cheese. Toss the ingredients together with the pomegranate dressing.

3. Plate the tossed mixed salad and place the burrata cheese in the centre. Garnish with mashed avocado, pomegranate seeds, a drizzle of extra virgin olive oil and a pinch of Maldon salt on top of the burrata. Enjoy your meal!

“I am thrilled to share with you one of my favourite recipes from our recently introduced Quick Bites menu. This dish holds a special place in my heart because of its simplicity and remarkable freshness. This recipe combines the perfect balance of spiciness, sweetness, acidity and saltiness – all harmoniously coming together in every bite. When executed with precision and care, the result is nothing short of a resounding WOW

INGREDIENTS:

8 red Romano peppers

100g plain flour

4 beaten eggs

100g Panko breadcrumbs

60g white and black sesame seeds

16 kaffir lime leaves (finely chopped)

1tbsp sheet of nori (finely blitz it in a spice grinder)

600ml sunflower oil

2tsp lime zest

Salt and black pepper as needed

Spicy Cocktail Sauce:

1 garlic head

180g cherry tomatoes

4 chillies

1tbsp maple syrup

2tbsp Worcestershire sauce

60g mayonnaise

METHOD:

For the Spicy Cocktail Sauce:

1. Sprinkle the garlic bulb with some salt and pepper, then wrap tightly in foil and place on a parchment lined baking tray with the tomatoes and chilies. Roast in pre-heated oven at 230°C fan for 30 minutes, until the tomatoes and chilies begin to blacken and blister.

2. Remove from the oven and, when cool, squeeze the garlic into the small bowl of a food processor, discarding the skins.

3. Add the chilies (deseeded for less heat), tomatoes, maple syrup, Worcestershire sauce, and ¼ teaspoon of salt and blitz to a coarse paste.

Leave to cool completely, then mix in the mayonnaise and refrigerate until you are ready to serve.

For the Romano peppers:

1. Cut a 5cm slit vertically in the base of each pepper, then place them on a large parchment-lined baking tray. Roast for 16 minutes, turning the peppers over halfway, until cooked through and beginning to blacken a little. Transfer to a sieve, to drain any liquid, taking care to keep the stalks intact. Once cool enough to handle, carefully peel away as much of the skin as possible without puncturing the flesh, then sprinkle each pepper with a good pinch of salt and set aside.

2. Prepare three shallow containers long enough to fit the length of the peppers. Mix the flour with 1tsp of salt and plenty of black pepper in the first container. Put the eggs into the second container. In the last container, mix the Panko breadcrumbs, sesame seeds, kaffir lime leaves, nori, 2tsp of salt and a generous pinch of black pepper.

3. Set a large metal rack over a tray (on which to place the Panko-coated peppers). Prepare a separate tray lined with plenty of kitchen paper (on which to place the fried peppers). Dip each pepper first into the flour, then into the egg and finally into the Panko mixture, shaking any excess off as you go, and lay each on the rack while you repeat with the rest of the peppers.

4. Pour the oil into a large, high-sided sauté pan or wok and place on a medium high heat. Once very hot (180°C if you have a temperature probe), fry the peppers two at a time so you don’t overcrowd the pan. Lower each pepper carefully into the oil and fry for one to two minutes on each side, until golden-brown and crispy. Transfer to the kitchen paper-lined tray as you go.

5. Serve the peppers straight away, with the lime zest, salt sprinkled on top, lime wedges and the spicy cocktail sauce.

2. Prepare the dressing by mixing premium extra virgin olive oil, fresh lemon juice, mint and a hint of molasses. Keep it aside.

3. Assemble the salad by placing all the chopped ingredients into a large bowl. Next, drizzle the dressing generously over the vegetables and seeds. Toss everything together thoroughly, ensuring that all the flavours mingle harmoniously.

Al Sultan Brahim is a family-established restaurant which was first opened in Lebanon in 1961. It has expanded over the years to add five different locations, including Kuwait and here in Doha. As the winner of this year’s prestigious Fact Dining Awards Qatar Best Lebanese Restaurant, I was keen to try out their menu.

Featuring a private elevator connecting directly from the Sheraton’s main foyer, this exceptional triangular establishment offers a top-floor setting. Boasting two walls with expansive floor-to-ceiling windows, the location allows for panoramic views across The Corniche.

The seating arrangement combines window seats and elevated central seating, all beneath the umbrella of the magnificent crystal chandelier. Taking centre stage, at the head of the establishment, is the remarkable fish counter, where a vast array of freshly caught fish of the day is beautifully displayed on ice. Guests have the option of personally selecting their preferred fish based on weight, ranging from local hamour to lobster or substantially sized scallops.

The modern design of the restaurant is sleek and well-lit and incorporates sandy tones to mirror the environment around us; vibrant bursts of colour are provided by the numerous large plants and even large potted basil and mint. The vibrant ‘living’ walls add to the ‘outdoors-indoors’ concept. The gentle tones of the background music playing traditional Arabic instruments add to the ambience of the evening.

CHIC Eats

The restaurant specialises in traditional Lebanese dishes, including salads, cold and hot mezze appetisers, grills and desserts. The small mezze appetiser dishes are perfect for sharing and a great way to try the many different options available. To reflect the casual and relaxing social event of sharing a mezze in Lebanon, we began with a classic favourite, hummus. Whilst many may have tasted hummus with meat, on this occasion, the Hummus Awarma Fish had replaced the lamb with cubes of sauteed fish sprinkled with toasted pine seeds and olive oil. Alongside this flavourful dish, we had steaming hot, puffy pita bread, which was perfect for tearing open and scooping up the smooth and creamy hummus and succulent fish combination.

The Bizri Fish Salad was a surprising option with its intriguing presentation. On first glance, its main ingredients were not initially apparent. The dish was, in fact, topped with generous portions of crispy fried bizri fish. Similar to whitebait, this tiny fish was fried whole, adding a crunchy bite and a touch of saltiness, accompanied by the shredded lettuce, finely diced tomato and cucumber salad. Mint leaves added to the Middle Eastern flavour combinations. To further complement and combine all the savouriness and add a subtle zesty touch, the tarator dressing was skilfully mixed throughout by our waiter. The dressing itself is a tahini-based sauce infused with a touch of lemon and garlic.

The crab salad presented shredded strands of crab stick, resembling spaghetti, wound into a mound, and dressed with its special spicy sauce, which added an additional kick of flavour.

Two additional ocean delights came in the form of the Shrimp a la Provençale and Octopus a la Provençale. The large, juicy shrimp were served warm in a brass pot, whilst the chunky and tender pieces of octopus were enhanced by the sweet tomato dressing with the additional flavours of fresh garlic and fragrant coriander adding an aromatic, Mediterranean twist to the evening’s offerings.

The highlight, for me, was the skilfully filleted hamour, selected from the fish counter and served with a juicy lemon wedge. This locally caught fish, known for its tender and flaky texture, had been expertly prepared and cooked to perfection. Its everso slightly golden hue and chunks of meat with an additional burst of lemon juice were a flavourful and satisfying end to the meal and accompanying mezze selection.

To conclude our feast in authentic Middle Eastern fashion, an Arabic sweet arrived featuring the beloved Basbousa cake. This dessert incorporates the moistness of a semolina cake, soaked in a sweet syrup and topped with a whole almond. In addition to this, a platter of watermelon and sweet melon was a light and refreshing end to this meal.

The Lebanese-inspired culinary traditions showcased by the selection of seafood on offer encompassed an array of cooking techniques. The welcoming nature of the staff and outstanding surroundings offered a great space to enjoy a meal; whether you’re dining with friends and family or business colleagues, the establishment provides a great space to enjoy a meal together whilst savouring the delicious and traditional flavours.

OHLALA SPENT THE DAY IN THE LATEST TAYCAN, THE NEW PORSCHE MAKING WAVES IN THE ELECTRIC SPORTS CAR SEGMENT.

OHLALA is a fan of all things Porsche and we always relish the chance to get behind the wheel of any model we can get our hands on. This month, thanks to the team at Porsche Centre Doha, we got the opportunity to test drive the new, fully-electric 2023 Porsche Taycan.

EXTERIOR

Our first impression of the four-door sports saloon was that it carries the unmistakable Porsche design DNA. At the front end, the low and wide stance of the vehicle is particularly obvious. As a result of the compact drive components, the bonnet slopes down at a flat angle between two highly pronounced wings. The LED matrix headlights and the air curtains combine to form a visual unit that seems to float. The unique light signature with three-dimensional glass elements is further enhanced by the presence of four-point daytime running lights – both flatter and wider than those of any previous Porsche model.

From the sides, we admired the sculpted contours of the new Taycan, along with the steeply sloping panoramic roofline. The short overhangs at the front and rear emphasise the car’s sporty proportions, whilst the

sleekly designed cabin sits on a wide body and 21-inch Mission E design wheels, both reinforcing the car’s lean and muscular look.

At the back, the drawn-in C-pillar and pronounced shoulders of the wings enhance the width of the rear. A narrow, illuminated bar stretches from one side of the back end to the other and contains the Porsche logo made of three-dimensional-shaped glass letters. Further notable rear design features include an aerodynamically efficient diffuser and a spoiler that extends in three phases depending on speed.

INTERIOR

Slipping into the 18-way electric adaptive front sport seats, the driverorientated nature of the tech-laden cockpit was immediately apparent. The cleanly styled dashboard is a modernised version of the one fitted in the original 1963 911. The wing-shaped upper and lower sections of the dash stretch across the entire width of the car, where they effortlessly blend into the door trims.

The instrument panel also features a clean, minimalist and ultracontemporary design, whilst the curved instrument cluster forms the highest point on the dash. All components are positioned to ensure the driver has everything in easy view required for driving the Taycan.

A novel inclusion in the interior is the compact direction selector switch in the instrument panel, replacing the classic lever in the previous models. The Taycan is equipped with two plus two seating as standard, but you can opt for a third seating space in the back if desired. With ample room on offer in the front and a comfortable seating arrangement in the back, this sleek saloon is not only aesthetically pleasing but functional to boot.

INFOTAINMENT & TECH

The highly innovative instrument cluster houses a 16.8-inch display with a modern tablet-like appearance. The driver can select between four display modes – Power Meter, Map, Extended Map and Reduced – each focusing on different aspects of the driving experience. A passenger display is offered as an optional extra.

The elevated centre console features an additional 8.4-inch touch panel with haptic feedback. Our favourite feature of this panel was the integrated handwriting recognition that allows for the quick entry of street addresses. We also noticed that many classic hardware controls have been omitted, replaced by touch operation and voice control functions.

The colour head-up display is another great optional extra, projecting relevant information directly into the driver’s field of vision. It features several display options, including a navigation display, a power meter and a user-defined view.

PERFORMANCE & SAFETY

The Taycan houses two efficient electric motors, one on the front axle and one on the rear, thus making the car all-wheel drive. It also comes equipped with the Performance Battery Plus as standard, enabling this model to produce 490hp (360kW). This bestows the Taycan with frighteningly fast acceleration, surging from 0-100km/h in four seconds flat and delivering a regulated top speed of 250km/h.

Porsche have included a centrally networked control system for the car’s chassis that analyses and synchronises all chassis systems in realtime. Complete with adaptive air suspension featuring three-chamber technology and four driving modes – Range, Normal, Sport and Spot Plus – this metallic masterpiece is equipped to deliver a smooth and exciting driving experience.

The all-electric Taycan can be recharged at home with up to 11kW of alternating current (AC) as standard. When out and about, the charging time from five to 80% is a mere 22.5 minutes at an 800-volt charging station. This equates to 100km of range in just 5.5 minutes.

Lastly, it’s no surprise that Porsche has equipped the new Taycan with a full suite of the latest driver assistance and safety features.

Food has an incredible capability to unite people. It also brings many benefits when shared; it builds trust among people as they are bonded with this invisible thread created by eating the same food. You can also reach decisions and consensus quicker, as you are more likely to respect each other when eating together. Why do you think many business meetings are done over lunches and dinners?

We also usually associate food with good memories (or bad ones). That childhood dish your grandma used to prepare can calm you down when things get rough, as it will spark the feeling of being loved. The taste, smell and texture of food get ingrained in our brains, and have the power to bring not only memories of the act of eating the food itself but also of places and settings. The neuroanthropologist, John S. Allen, wrote in his The Omnivorous Mind: Our Evolving Relationship with Food book that the human brain interacts with the food environment

through a range of cognitive adaptations that combine to form the ‘Theory of Food’, which operates in the brain much like the capacity for language acquisition. He also believes that food effectively triggers more profound memories of feelings and emotions, internal states of the mind and body. His theory also highlights the reward effect food has on our brains. For example, when we eat highly appealing food such as candy, the brain’s reward centre is activated, giving our internal systems the message that we did well. At the same time, the neurotransmitter dopamine converts this short-term memory into a long-term one. So, when you eat the same candy 50 years later, those memory centres light up with happy recollections.
