Welcome to the August edition of OnTrade Scotland

As we build up to the party of the year for the hospitality industry on the 21st with the 3rd Birthday Bash this year in association with Au Vodka & The Ben where we look to entertain and recognise the people across our industry the entertain customers in venues all year round.

The voting for the top 5 in each category has been off the scale this year so far with a huge number of votes being registered already across all categories which shows just how good a job is being done to offer customers great service and value as well as an experience.

Voting closes on the 10th of this month and the winners will be announced live on stage on the night. The event itself has two main reasons for existing which maybe not all are aware of fully.

We want to provide a real experience for people in the industry, venues, brands, suppliers, staff to come together in a fun entertaining way that they can enjoy that’s a little less formal and stiff that reflects the character and vibrancy as well as the diversity of our industry and the people in it.

We also want to support and raise awareness of a fantastic charity that does so much for people in our industry that have needed help in many different ways and give a better understanding of what The Ben are all about.

We would like to thank Au Vodka and all of our partners for their support and desire to be involved in the unique event all of your support is not taken for granted and is truly valued we could not do what we do without you.

We can’t wait to welcome you all and share a special night with you all and thank you all in advance for providing a fantastic atmosphere which we know from both previous events will be on display as always. We have an amazing mix of entertainment from our stunning host Natalie James, DJ sets from the legendary Michael Kilkie and Go Radio’s amazing Zoe Kelly who will also be greeting guests on the Gold Carpet and chatting to attendees, as well as a couple of surprises that we know will get you on the dance floor.

Stirling Cocktail Week is a new initiative designed to boost the night-time economy while giving the public the chance to have a night out on a budget.

Stirling Cocktail Week was created by the team behind the hugely successful Dundee and St Andrews Cocktail Weeks, Marketing: After Dark, a Scottish agency who wanted to help struggling hospitality businesses drive footfall into their premises and their towns.

Open to over-18s only, you just go to the website, snap up your wristband and this entitles you to discounted selected cocktails at all participating outlets throughout cocktail week.

With so many people in the trade finding it especially tough in the cost of living crisis, Alice and her team are supporting hospitality industry charity The Benevolent Fund.

The SNP-Greens Government had previously been consulting on plans which would have halted drinks firms from sponsoring sport and live events, and which would have prevented distillery and brewery shops from selling branded merchandise to visitors.

When he took over as First Minister, Mr Yousaf said he backed the aim of the measures “to reduce the harm caused by alcohol to children”, but accepted that the proposals had caused “real concern”.

As a result, the FM said he had instructed Scottish Government staff to “take these ideas back to the drawing board, work with the industry, and crucially with public health stakeholders, to agree a new set of proposals”.

There is “no robust evidence” in favour of the Scottish Government introducing a ban on alcohol advertising, new research has insisted.

he Institute for Economic Affairs (IEA) think tank released its paper after First Minister Humza Yousaf pledged to go “back to the drawing board” after an outcry from the drinks industry over previous proposals to curb alcohol

The IEA paper set out to examine the “empirical evidence” for alcohol advertising bans.

And while it said public health campaigners “claim that a ban on alcohol advertising would reduce alcohol-related harm”, the report stated that “there is no robust evidence in favour of alcohol advertising bans”.

EL JIMADOR IS UK'S LEADING 100% AGAVE TEQUILA

SCOTCH WHISKY FIRM REVEALS MAJOR CHANGE

Brown-Forman’s El Jimador is the biggest-selling 100% agave Tequila brand in the UK, according to data from IWSR Drinks Market Analysis.

The Tequila brand reached the number-one spot for the first time by both volume and value, according to IWSR 2022 data released at the end of May 2023.

The brand’s sales grew by almost 75% in the UK last year. It is now the third-largest Tequila brand in the UK (IWSR 2022), after Jose Cuervo in first place and Sierra in the second spot.

The UK’s top five best-selling 100% agave Tequilas in order are: El Jimador, Altos, Patrón, Cazcabel and Tapatio.

El Jimador said it had become the biggest and fastest-growing value contributor to the category.

The brand noted that ‘rapid growth’ is forecast for superpremium Tequila and higher-value products such as 100% agave Tequilas.

GORDON & MacPhail, the family-owned Scotch whisky company, has made one of the most momentous decisions in its 128-year history.

The Elgin-based company began life as a greengrocer in 1895 and as the decades passed it became known as an expert bottler of Scotch whisky, sending casks to distilleries from them to be filled with new-make spirit which was then matured. Its whiskies include the famous Connoisseurs Choice single malt range made from distilleries across Scotland, which was launched by George Urquhart, second generation of the family owners, in the late 1960s.

However, more recently Gordon & MacPhail became a distiller in its own right. In 1993, it acquired the Benromach Distillery in Forres – 12 miles from its shop in Elgin – and followed that with the construction of The Cairn, a second distillery in the Cairngorm National Park which opened in 2022.

Revolución de Cuba began with a team of rum lovers, who knew that taking on this spirit meant capturing it. Raising the question, could the spirit of the island of Cuba really be brought to life in food, music, cocktails and the people’s experiences - absolutely! In 2016 Revolucion de Cuba Glasgow opened its doors with the fiestas, events, Christmases, corporate network, and la familia growing in size ever since.

Customers should expect to be transported from the streets of Glasgow City Centre right into the heart of Cuba. As you step into our venue you will notice a change in decor matched with our latin inspired music, giving you the holiday feels. Pair this experience with our cocktails and Tapas, you are in for an experience you will remember! On the weekends we have live music on from 6pm on Friday & Saturdays and 4pm on Sundays with some surprise entertainment like a Saxophonist popping up throughout the month!

Our venue is spread over one floor, meaning the party atmosphere at the weekends is contagious - no matter where you are seated or even standing, you are part of the ‘full on fiesta!’

Our food offering ranges from our small tapas serves, main meals, boozy brunches to our finest Cuban Tapas served buffet style in our Mostrador - perfect for larger groups. Midweek, you can expect some great offers and deals including £6 Happy Days cocktails SundayWednesday and 2-4-1 Tapas on Thursdays!

Since my time here at Revolucion de Cuba as Sales Manager, I’m proud to see our venue growing in what we can offer - we have a fantastic venue that is now being

used for many purposes from networking events, craft pottery events to our Drag Bingo nights!

I’m most proud of establishing the Drag Bingo Revolucion themed nights that we do throughout the year. We have worked hard with local Drag acts to design a night that is fun, and incorporates Bingo with a Revolucion de Cuba twist on it. Expect amazing performances, comedy and shot limbo to cocktails themed after our Drag acts - it’s a fabulous night that our guests love!

The decor of our venue really is important! We want our customers to step off the streets, like they’ve stepped off the plane into Cuba. The feel of our venue and the experiences we provide acts as a form of escapism - step away from real life for an hour or so, forget about work, sit back, relax and soak up the Cuban atmosphere!

The people of Glasgow love what we offer here at Revolución de Cuba, from our Tapas plates to our exotic cocktails - we’re getting busier each year and during our off peak sessions, so we must be doing something right! One of the biggest surprises is how many tourists we get coming into our venue to see the decor and take pictures with all of our art work, photography and interiors and of course sample our menu!

We want to continue enhancing our brand and our bar by pushing forward our live entertainment offering and ultimately being the ‘Home of the Fiesta’ - providing fiestas for all from corporate groups, to hen dos, to catch up with friends - Revolucion de Cuba Glasgow really is for all! Our new feel cocktail menu launches in the bar on Tuesday 8th August with more cocktails than before and amazing sharing options!

BBPA responds to Ofgem Non-Domestic Review

This long-awaited review from Ofgem which publicly notes the unacceptable behaviour of energy suppliers towards businesses over the past year is welcome.

Unfortunately, these recommendations have been too slow coming, and a failure to act sooner has cost businesses across the country millions of pounds and undue stress for months on end. Poor supplier behaviour has also led to the hospitality unfairly being seen as a risky sector. Now, what we need is these recommendations to urgently become policy and take effect giving reassurance that the

same behaviour won’t be allowed to happen again, and that the businesses and livelihoods of people across the country won’t be at the mercy of huge energy supplier costs again. Given the clear need for further action, we will continue to work with Ofgem and the Government to ensure pubs and breweries receive fair deals and treatment when it comes to their contracts in the future.

Passion for hospitality industry is what drives new SLTA president

HEADING up a trade association is a big responsibility that needs a mixture of time, commitment and passion, and for Murray Lamont it’s one he is relishing after just a couple of months as president.

“It’s no longer all about wearing the president’s chain of office and attending functions,” he says. “Obviously there are times when that is what is required and we’re a very social industry – it’s the people, relationships and friendships that make us want to be part of it – but we’re operating in an era now that throws up so many challenges that can be allconsuming.

“The SLTA has been fantastic in recent years in advising businesses and guiding the industry through Covid and the post-pandemic period and I want to keep going with the good work started by our managing director Colin Wilkinson and predecessor as president, Graham Blaikie.

“None of us ever thought something like Covid would hit us but sadly it did and the entire industry – licensed trade and tourism sector – continues to suffer, notwithstanding all the other challenges and barriers that hold us back and make trading successfully very, very difficult.”

For Murray, who owns and runs the well-known Mackays Hotel in Wick in Caithness, in the far north of Scotland, the hospitality is a wonderful one to be part of despite the challenges. Moving into the retail trade 25 years ago, Murray opened Bin Ends, The Fine Wine Shop in Wick, followed by the Thurso shop two years later. He opened Whisky Cellar & more in Inverness Airport in 2016.

Having a point of difference – and a passion for whisky and wine – is always going to give a hospitality business an advantage. And in the case of the award-winning Mackays Hotel, it really does deserve to be described as an “iconic” business as it has the distinction of sitting on the “world’s shortest street”, with Ebenezer Place measuring up to six feet, nine inches long.

Business, says Murray, is building all the time with the postpandemic “staycation” trend contributing to that growth but also the fact that Mackays Hotel is very much part of the local community. During the pandemic, for example, the hotel looked after key workers and ensured that local veterans and pensioners were provided with meals.

The Mackays story started back in 1955 when Murray’s maternal grandmother bought the hotel. Murray and his wife, Ellie, took over its management in 1983 before purchasing it from the rest of the family in the 1990s. Not surprisingly, the business has evolved considerably over time. “The bar was a hub for the community and we did a roaring trade, particularly on market days when all the

country folk and farmers were in town,” recalls Murray who spent some time in the south, even venturing over the Border for a short time before the call of the North lured him back to Wick.

“We still enjoy a busy bar trade but over the years we’ve branched out into weddings and functions, developed our accommodation offer and put huge emphasis on food – our No. 1 Bistro has one AA Rosette.”

While Wick’s location would be considered “remote”, the town is bustling and has certainly benefited from the arrival of the North Coast 500. However, it’s a very long drive down to the central belt and public transport can be challenging. Indeed, Murray’s journey to Edinburgh a few weeks ago to attend a licensed trade lunch involved two trains and a bus!

“Our location does present challenges at time but I think that’s the appeal of it, too,” he says. “If you need to go somewhere, you will find a way and people will find us.”

Does the location cause staffing issues? For Murray Lamont, the staffing issue hasn’t caused too many problems thanks to the hotel’s family focus and place in the community although he feels for those in the industry who have lost staff because of Brexit and Covid. However, the industry is making sterling progress in training and convincing people – particularly the younger generation – that they can have a fulfilling and worthwhile career in hospitality. “It’s something I’m quite passionate about – as is the SLTA –so I want to have an impact on that myself,” he adds.

“Young people are the lifeblood of our industry and those of us who have been in business for many years, and been successful, have a duty and moral responsibility to do what we can to nurture talent and help people develop new skills. “Of course, that’s not to say that older people aren’t valuable to us – they are – and I always say that no-one is ever too old to learn something new.”

“I genuinely believe that the SLTA is a superb organisation because everything we do is for the benefit of our members and we have a responsibility to do our best for them,” he adds. “Whether it’s representing them in high-level government discussions about the deposit return scheme, VAT, rates, tourism levies … these are issues that affect the whole industry and we need to make sure our voice is heard loud and clear.

“For me, it’s a huge honour to be part of the SLTA over many years and now be entrusted as president, a role I’ll hold for the next two years.

“I know it won’t always be plain sailing but if I can make even a small difference, I’ll have done my job properly.”

WHAT LENDERS LOOK FOR IN A BUSINESS PLAN

A business plan is the foundation of your business. It shows the vision and mission and serves as a road map as you move forward. A business plan is one of the most important documents you will ever create. It is an invaluable tool when it comes time to apply for a business loan.

So what are some of the key headlines that lenders look for in a business plan?

SHOWCASE YOUR EXPERTISE

Lenders want to see how adept you and your management team is at leading and growing your specific business. They want to know who is steering the ship and who’ll be doing what in your business to make it a successful and profitable business. So they shall want to understand who everyone is and what are their relevant skills, knowledge, qualifications and track records.

BE CLEAR ABOUT WHAT YOU ARE SELLING

Your plan needs to show the lender that you’re clear about what you’re selling, who’s going to buy it and why and how you’re going to reach those buyers. Explain what you’re selling in plain English. This may seem obvious, but don’t leave lenders guessing!

WHAT IS YOUR MARKET?

Lenders want to know who your customers are, how large the customer population is, how much they’ll spend and how viable the market is and why they will buy from you. They also are interested in who you are competing with in this space and how you are setting yourself apart – why is your business better or distinct from your competitors? They want confidence that you know your sector backwards.

HOW MUCH DO YOU NEED?

This may seem obvious, but know how much you need, versus how much you want; there is a

difference! And, for what purpose? You need to clearly itemise why you need business financing, what amounts you’re requesting (both current and prospective for, say, the next five years), and how you will use the money borrowed. The amount you ask to borrow should match the financials in your plan. For example, don’t try to show that you don’t need any money; if you didn’t, you wouldn’t be borrowing. But don’t show that you need much more money than you can afford to borrow. Your cash flow should be realistic, and it should show how much money you need and why you need it.

CURRENT FINANCIALS, PROJECTIONS AND CASH FLOW

To give lenders a clear idea of the financial health of your business, you need to show detailed financials of the revenue, assets, liabilities, and repayment structures. Lenders want to make sure that you are financially stable so that you can make your loan payments.

Lenders expect to see the three main financial statements — income, balance, and cash flow — projected monthly for the first year, and annually for a couple of years after that. Cash flow is the most

important part of your plan. Most loan applications are declined because the cash flow projections don’t convince the lender that the business will make enough to repay the loan. Lenders need to see that your assumptions are supported by concrete evidence from the industry, your own past sales, or even your competitor’s sales, if you can get those.

Your financial projections need to be realistic. Lenders will compare your projections to sector reports. If you project margins way better than sector averages, you will need to explain why and how you are going to accomplish that. Be sure to include projections regarding job creation, market growth and development. Consider seasonal or cyclical changes to your business if any and how those changes can impact your business.

Of course, in deciding whether or not to lend lenders look at more than just your business plan. But the business plan is the platform from which you can demonstrate your skills, expertise and industry knowledge and your drive, control and vision for your business. A good business plan is persuasive and answers queries rather than raises more questions, deriving confidence in you from those that read it!
