Industry News WORK STARTS ON IDYLLIC RIVER VIEW LUXURY LODGES ON THE CLYDE AT LANGBANK Popular local attractions include the Finlaystone Country Estate, with its woodlands, play areas and garden centre, hotel and leisure complex, Gleddoch Golf and Spa Resort, Coast Bar and Restaurant and Ingliston Hotel and Country Club.

An exciting, new holiday resort destination just 25 minutes from Glasgow city centre is set to open this summer as 18 luxury lodges, available for rental all year round, get under construction on the picturesque banks of the Clyde.

River View Luxury Lodges is a venture led by Calum Melville, CEO of Edison Capital, whose operations include East Kilbride-headquartered Principal Building, which will construct and install the lodges. Mr Melville said: “It has been a long road getting to this point but now that we have all the planning permissions in place, we are looking forward to seeing our vision made a reality.

The £2.5m investment project is being undertaken by River View Luxury Lodges, whose site is located by the end of the M8 at West Ferry, Langbank, Renfrewshire. Ground has been broken this week and the owners expect to welcome their first visitors this summer when the first tranche of 6 lodges open.

“The popularity of luxury self-catering lodges in Scotland over the last ten years is well-documented and West Ferry will offer not only a relaxing stay in an idyllic setting but is also readily accessible to a huge swathe of Scotland’s population, being just 10 minutes from the airport and 25 minutes from Glasgow city centre.

Situated right on the southern edge of the river Clyde, with spectacular outlooks, each lodge will have uninterrupted views of Dumbarton Rock and beyond. Easy access is a key attraction, either from the M8 or Langbank railway station which sits on the Glasgow Central – Gourock line.

“Langbank is a lovely, friendly village with a fine golf course and a hospitality venue that attracts wedding guests and others all year round, so we anticipate that the local economy will be given a welcome economic boost by the River View Luxury Lodges and the steady number of visitors we hope to attract.

Guests will be able to choose from two and three-bed high-end self-catering lodges, complete with jacuzzi, barrel steam room, a full suite of on-demand TV packages and BBQ. In addition there will be a dedicated space for weddings and other events.

“In the wider area there’s something for everyone within a 30-minute drive including prestigious golf courses, fine dining, historical landmarks, and fantastic outdoor activities and scenery.”

FAMILY-RUN GIN DISTILLERY USES BLOCKCHAIN FOR WATER CLARITY An artisan, family-run gin distillery near Keith, Moray, Roehill Springs, is using blockchain technology – essentially a digital ledger – to be completely clear about the amount, quality, and provenance of the water used in the creation of its award-winning spirits. Roehill Springs is using the system, developed by CENSIS – Scotland’s innovation centre for sensing, imaging, and Internet of Things (IoT) technologies – and Aberdeen-based app developer TrackGenesis, in what is believed to be among the first direct uses of sensor data with a blockchain. The project is part of the CENSIS IoT Evolve programme, funded by the Scottish Government and Highlands and Islands Enterprise (HIE), to support the development of IoT technologies by companies across the north of Scotland.

Roehill Springs is committed to using local ingredients, offering transparency to its customers, and being environmentally responsible. In discussions with CENSIS, the team identified combining the automation potential of IoT with the traceability and security provided by blockchain technology as the best way of ensuring full transparency for customers. IoT sensor based-flow meters have been installed at the spring on the family farm and at its distillery. The data they produce is sent to a smartphone and tablet application via Bluetooth. The data from each flow meter is transferred to the private blockchain where it is held and can be accessed by customers through a QR code printed on each bottle of Roehill Springs gin, alongside information about the bottle’s other ingredients. ontradescotland.co.uk


Brand News OLD JOCK SCOTCH ALE CELEBRATES A TRIPLE WHAMMY OF AWARDS It is 40 years since the legendary Scottish Ale Old Jock first appeared in pubs and bars across Scotland, and the anniversary coincides with a triple whammy of awards for this masterclass in Scottish Brewing. In September 2023, Old Jock proudly won SIBA Scotland’s overall best cask ale award and a gold award in the strong ale category. This was followed in December 2023 with the Campaign for Real Ale’s Champion Strong Ale of Scotland Award. The success in Scotland means Old Jock will be flying the Scottish flag in both SIBA and CAMRA’s UK finals which take place in spring 2024. David McGowan of Broughton Ales commented, ‘’ As we celebrate the 40th anniversary of Old Jock, the brand has doubled in size in the last 5 years and won a host

of awards from our peers at SIBA and from beer fans at CAMRA. Entering 2024, we are looking to extend distribution of Old Jock Scotch Ale into other parts of the UK, particularly at on-trade beer festivals and in selected pubs and bars. We are also seeing more bars stock Old Jock in bottles, which has proven particularly popular with tourists and visitors. Our head brewer Ian Smith has been with us for over 40 years and Old Jock is still hand-crafted using the same brewing process and open fermentation vessels which gives the beer it’s unique award-winning flavour. McGowan added ‘beer drinkers of all ages are looking for heritage and provenance, and quite simply Old Jock is a masterclass in Scottish Brewing, and our cask variant has the medals on the mantlepiece.’

Cultar Restaurant Group supports hospitality industry's health

H

ospitality Health, a Scottish charity dedicated to improving the health and wellbeing of those in the hospitality and tourism industry, has been supported by the Cultar Restaurant Group to the sum of over £4,000.

The funds were raised by the Group through donations received from guests for the water that is provided with their meal. The water, dispensed from the Purezza fountain system, is provided free of charge, however, a donation is requested by staff when the guests asks for their bill, it is seldom refused. Paul Charalambous, joint owner of the Cultar Restaurant Group commented, “To align with our group’s sustainability ethos, we moved to filtered water at all our venues and this provides complimentary still or sparkling water for our guests enabling us to reduce our emissions on water being transported and stored. Following the industry’s recovery from Covid and our focus on mental health and wellbeing amongst our staff, we were delighted that Hospitality Health has fully funded several places for our staff to become Mental Health First Aiders. They are now in a position to support the entire team. The idea to fundraise through our water service was on the back of this vital training and we’re delighted that the money raised has allowed for additional courses to be offered, enabling more staff within the hospitality sector to be trained”. is thrilled that the fundraising will pay to train hospitality workers as mental health first aiders. He said: “We are so fortunate the Cultar Group have selected us as a partner in our ‘Water for Wellness’ campaign. The charity was formed just under five years ago to offer support to students and staff in the hospitality industry, in terms of wellbeing. Hospitality is a family and we wanted to help each other. We are trying to change the culture among employers too – there are some great ones but we’re trying to get ALL of them to put staff first and provide mental health support. Fundraising has been difficult during the past few years, but we are grateful to have been receiving funds from organisations such as the Cultar Group. It costs us £350 to fully fund a delegate on a Mental Health First Aid certification course. ameson is ramping up its commitment to promoting responsible drinking within British football culture by targeting 8 million fans through its recently announced partnership with the English Football League (EFL). Dean Banks helps Dan Ashmore launch his first solo restaurant in Edinburgh BBQ spot

D

an Ashmore has launched his own restaurant – with the support of his friend and mentor Dean Banks. Dean is passionate about encouraging his team to take the leap themselves and launch their own businesses.

So much so that Dan’s first restaurant, ASKR, is actually launching as part of Dean’s group – so Dan will remain as Food Director of all the outlets and have the backing of a successful established group behind his fledgling eatery. It’s a dynamic, exciting new way of helping chefs and the business in general evolve and grow - and Dan is understandably thrilled. “I am absolutely still part of the Dean Banks Group and very proudly so. I’ll still be working away in the background helping develop dishes and train staff for the other sites. “For me it’s a huge plus to still be connected to the group, it’s a scary world out there right now in hospitality and to have partners, especially ones as experienced as Dean is nothing but a benefit for me. “The fact he’s very keen to make this restaurant about me is such a testament to how selfless he is, I want to make sure people know we’re still very much working together. “It can show other team members that it’s absolutely worth digging your heels in and calling the DB group home. I’m incredibly humbled to have been given this opportunity.” Dan’s first restaurant is an exciting new concept and something fresh for the group and for Edinburgh. As well as the fulfilment of a lifelong dream for the chef himself. Dan said: “It still doesn’t feel completely real. It’s something that’s been on my mind in various forms since I started cooking 18 years ago when I was a 15-year-old boy. The fact it’s happening and especially how it’s come about is really amazing. “The concept is a lovely one. We’ve got a wonderful fire pit style bbq in the kitchen and we’re going to be using that as the main source of cooking. “We’ll be using different coals and woods to create different flavours and levels of smoke. I’ve already started researching which coals and woods do things differently to others and what flavour profiles they have. As for the name, we have been trying to figure out what ASKR could be the initials of… Ashmore’s Sexy Kool Rubs? But no – Dan’s gone Nordic. Dan explained: “ASKR is the name, it comes from old Nordic. Depending on where you read it means Ash or Ash Tree,

both very fitting for the type of cooking we will be doing. “It’s a very happy coincidence that Ash is the first half of my surname. I think the whole thing just fits together so well, it all feels very elemental in nature, the name and the cooking style marry together perfectly.” Dan reckons opening should be some time in March, and hasn’t yet created the menu but is working on the fun part – figuring out ideas and how to put them together. “I’ve been busy working on a few sample menus and jotting lots of ideas down. “I’m quite excited about a hogget dish I’ve been working on, the plan is to buy the animals whole and create a two-part dish. “The first will be a smoked consommé with morels cooked in hogget fat and wild garlic, this will be served while we will be dressing the second serving which will be the loin, served with sheep’s curd and fresh peas, and a fragrant hogget sauce poured tableside. Meanwhile Dean himself is over the moon to be able to support Dan in his first solo venture – while keeping him in the family. Dean said: “I’m really proud of Dan, this is a special moment and it’s a thrill to see him go out on his own. “It’s a massive benefit to me to keep him as part of the Group too – he’s integral to what we do and I would hate to lose his skills. “At the same time it’s really important to me to help our team dream big and achieve those goals, fulfil their potential. “Dan is already a star so it’s a privilege to be able to help him take the next steps. It’s always stuck with me how hard it was getting started on my own, so I want to help the next generation through that. “I hope other chefs see this and take it on board. We need to ensure the future of hospitality – so help each other please.” And of course the last word goes to Dan – who is buzzing that his boss is now his business partner. Dan said: “I just want to say a huge thank you to my friend and now business partner Dean. Harnessing your rights assistance dogs in licensed premises There are several challenges facing the licensed trade daily. One of these is the potential for unintended discrimination. This is something Anderson Strathern has addressed in relation to staff and advice given, however, something we’re often asked about is animals, and particularly dogs, in licensed premises. Previously Guide Dogs were always accepted and there was a fairly clear division between a family pet and an ‘official’ Guide Dog. Those lines have now blurred with assistance dogs being increasingly common, but what are the lines and how is an assistance dog defined? WHAT DOES THE LAW SAY? The relevant legislation is the Equality Act 2010, which contains a duty on service providers not to discriminate against members of the public on grounds of their disability and to make reasonable adjustments. Many licensed premises have access for disabled persons, perhaps including rails, ramps, lifts or accessible toilets, and staff may provide further assistance, for example reading the menu to those who have impaired vision. The 2010 Act states that it is illegal to treat a disabled person less favourably than anyone else in areas such as service provision, which includes the licensed trade. DEFINING AN ASSISTANCE DOG The recognition of an assistance dog goes further than the historic ‘guide dogs’ definition. 18

Assistance dogs are trained to a very high level, they cannot be reactive and must focus on supporting their owner. Assistance dogs are generally with their owners 24 hours a day. There are various assistance dogs: • guide dogs • hearing dogs • assistance dogs • autism assistance dogs • dogs supporting those with mental health issues • medical alert dogs IDENTIFYING AN ASSISTANCE DOG There aren’t currently enough accredited training courses to cover the wide range of needs and disabilities for those requiring assistance dogs, ontradescotland.co.uk


therefore training by owners and/or other dog trainers is a necessity. This training is still meaningful but there may be no certificate or accreditation to produce as evidence of the training. Some dogs, particularly those who have undergone the Assistance Dogs UK formal training, may have a training certificate or identity document. However, if a person cannot produce this, that doesn’t mean their dog should not be accepted as an assistance dog. They should still be allowed access to public spaces and licensed premises. Operators must be careful not to refuse such dogs and their owners entry, then find themselves being accused of discrimination. Most assistance dogs are well behaved and highly trained, as well as having assistance dog identification, such as a harness, bandana, branded lead, tags and similar. There is no legal requirement for assistance dogs to wear identification, but most owners recognise the benefit to both the public and service providers in being able to quickly identify an assistance dog. This means a smoother transition to entry to places such as licensed premises and also the avoidance of the public distracting the dog when it is working. There are some recognised signage and colour co-ordination which might be helpful to be aware of:

CHRIS MCDOWALL – PARTNER cause an issue, are badly behaved, if the owner or one of their party is drunk, rude or inappropriately behaved to other customers or staff, or their behaviour breaches the licensing objectives and proper operation of the premises licence, they can still be asked to leave. WHAT ABOUT THERAPY DOGS?

OWNERS’ RESPONSIBILITIES

Interestingly, there is a distinction between assistance dogs and therapy dogs. Therapy dogs tend not to wear a coloured harness, or at least do not have one which is generally recognisable. A therapy dog is one which benefits people in a therapeutic manner. Because they are not considered assistance dogs, it is much less likely they would be required to be given entry to licensed and other premises in the same way. That, of course, doesn’t mean the licensed trade cannot allow access to these dogs as licensed premises can allow access to dogs in general. On some occasions, depending on the disability and the circumstances, it could still be a reasonable adjustment nonetheless to allow access to a therapy dog.

Owners of assistance dogs must take responsibility for their dogs and for any issues occurring. While licensed trade premises must allow entry to an assistance dog with its owner or handler, if the dog (or indeed the owner)

Diageo's Learning for Life programme celebrates decade of success in the UK

iageo’s award-winning Learning for Life hospitality industry skills programme last night celebrated its 10th anniversary with a toast to more than 6,000 people who have graduated from the course.

Diageo Learning for Life was launched in Scotland in February 2014 as part of an effort to tackle youth unemployment by creating training and employment opportunities in the hospitality industry.

Since then, more than 2,000 people in communities all over Scotland have gone through the programme, and it has grown into a UK-wide initiative with more than 6,000 people in total graduating over the past decade, equipping a wide range of people who have faced barriers to employment with skills and resources for a career in hospitality.

“I also want to thank all the employers across the hospitality industry for their involvement in this scheme which has helped to provide life-enhancing opportunities for our workforce of the future.

Over the course of the 10 years, Diageo has invested £1million per year in the programme to ensure high quality training, delivered by hospitality training charity Springboard, resulting in 83% of graduates going on to sustained employment. Last night (Wednesday 21 February) politicians, hospitality leaders and Learning for Life alumni came together at Johnnie Walker Princes Street in Edinburgh to celebrate the anniversary. Graeme Dey MSP, Scottish Government Minister for Higher and Further Education, attended the event and acknowledged the contribution Diageo Learning for Life has made to people across Scotland. Graeme Dey, Minister for Higher and Further Education, commented: “The tenth anniversary marks an important 20
