Incumbent Councilmember Ceasar Mestre Jr. easily wins re-election The Miami Laker staff Miami Lakes Councilmember Ceasar Mestre easily won another four-year term in office defeating political neophyte Xiomara Pazos in November’s general election, which experienced a low voter turnout despite being placed on the ballot for one of the most intense and closest Gubernatorial races in Florida history. According to the Miami-Dade elections department, Mestre, an attorney, mustered 64 percent (4,688) to retain Seat 6, while Pazos collected 6 percent (2,589) in the November 5 election, in which only 7,539 residents voted either at the polls or by absentee ballot. Among 23,000 residents, about 15,212 are Miami Lakes registered voters. Mestre, who had a $58,000 war

chest for a small-town election, won despite a recent published report casting a cloud over some of his campaign contributors, who are connected to the potential sale and development of residential and commercial project along N.W. 87 Avenue north of Miami Lakes Drive. Some of the parties, including Miami-based Lennar Corporation, real estate broker Wayne Rinehart and former Hialeah mayor Julio Robaina, made contributions to Mestre’s campaign. At his victory party at Trattoria Pampered Chef in Miami Lakes, Mestre expressed his gratitude to his supporters. “I want to thank everyone, but a special thanks to the Miami Lakes team,” Mestre said referring to the entire Town Council endorsing his candidacy. “These guys showed

Festival of Lights kicks off holiday season on Nov. 29 The Graham Companies and the Main Street Merchants will celebrate the historic 30th Annual Main Street Festival of Lights on Saturday, November 29, from 6 to 10 p.m. After a day of feasting with family, friends, and early morning shopping on Black Friday, come to Downtown Miami Lakes to relax and enjoy the opening of the Holiday Season on Main Street. The 30th Annual Main Street Festival of Lights has become a historical, community tradition in

South Florida. The Festival of Lights is a free event open to the public and falls on Small Business Saturday, an opportunity to take advantage of the open Main Street stores for holiday shopping. Numerous local restaurants, shops and attractions will be open for visitors of all ages to enjoy, including a meet and greet and photo with Santa Claus and Mrs. Claus, and a Kids Zone with face painting, crafts, games, music and more.

Over 700 participated in Miami Lakes 35th annual Veterans Day Parade Despite an overcast and somewhat wet Sunday, November 9, a large crowd of Miami Lakes residents and visitors showed their support for all branches of the U.S. Armed Forces during the 35th annual Miami Lakes Veterans Day Parade which marched down Ludlam Road with more than 700 participants. Mayor Wayne Slaton and Councilmembers waved to the crowd and threw candy to the youngsters, along with State Senator Rene Garcia and MiamiDade Commissioner Esteban Bovo Jr. Other parade participants included several local high school bands, sports clubs, a variety of scouting units and many other local and national organizations. Grand Marshal Miami Lakes resident Alex Sanchez, Second Class Petty Officer in the U.S. Navy, dressed in his Navy Enlisted Dress Blues and led the parade with pride. Sanchez was deployed to Operation Iraqi Freedom and Operation Enduring Freedom, where he earned much recognition including the prestigious Navy Marine Corps Achievement Medal. “Over the years, the Miami Lakes Veterans Day Parade has become a great tradition in our community,” said Slaton. “Thanks to the town’s Cultural Affairs and Veterans Committees, and all of the parade participants for making this day so special for our veterans and their families. She ran on a platform of no new taxes and fees, cutting government waste, keeping families safe and shielding Miami Lakes’ quality of life. “Our town requires responsible management and common sense leadership to ensure effective governance that responds to the needs of all the people,” Pazos said. Mestre was the only incumbent who had to hit the campaign trail. Councilmembers Tim Daubert and Frank Mingo ran unopposed and won another four-year term in office. Also on the November 5 ballot, residents amended the town charter on future annexation considerations, allowing equal appointments for the town’s committees, and approving a straw ballot to resume pursuing an independent zip code for Miami Lakes. Eighty-five percent (6,393) of voters approved the charter change to require that future annexation proposals must be first approved by them in a referendum. Seventy one percent (4,777) of voters approved the amendment to allow all councilmembers to appoint residents to the town’s committees; 84 percent (5,975) of voters approved of Miami Lakes’ efforts to get its own zip code. In other races of local interest, former Miami-Dade County Property Appraiser Pedro J. Garcia defeated former State Rep. Eddy Gonzalez, 58 percent to 42 percent to regain his former post. State Rep. Manny Diaz Jr. retained his District 103 seat by defeating Benjamin F. De Yurre, 58 percent to 42 percent, and State Rep. Jose Oliva retained his District 110 seat by defeating Nelson Millan, 69 percent to 31 percent.

Barbara Goleman Senior High School celebrated its 20th Anniversary Grand Alumni Homecoming Celebration on Saturday, November 8. The day was filled with exciting events that kept the visiting alumni, over 400 in total, entertained and engaged. In celebration of its anniversary, the school treated all attending alumni to an Alumni PepRally. Entertainment included performances by the Jewels Dance Team, Goleman Cheerleaders, and Goleman Dazzlers, with a special appearance by alumni William Levy, Cuban American actor. The pep-rally also included a touching session of Goleman rem-

iniscing among former principals, Jorge Sotolongo and Dr. Marcos Moran, and former teachers. A proclamation by Miami Lakes Mayor Slaton concluded the event. The alumni were also able to look back on some of the most memorable athletic performances of Barbara Goleman history with the attendance and recognition of former members of the football, basketball, and baseball state champion teams. After the inschool festivities, alumni, faculty, and current students alike were invited to Milander Park to support the Goleman Gator football team in Barbara Goleman’s 20th homecoming football game.

Our Lady of the Lakes Children’s Fashion Show is a stylish success Our Lady of the Lakes Catholic School’s 18th annual Children’s Fashion Show and luncheon was labeled a stylish fundraising success. The show was held October 11 at the Doubletree Miami Airport Convention Center and featured 125 student models, from pre-kindergarten through 8th grade, and drew more than 600 guests. The event is the largest fundraiser for the first half of the school year and money raised goes towards the “Lend-a-Hand Scholarship Program” that provides tuition assistance to families in need, and the educational needs of the school. This year’s theme was “Old Country Road” and students performed to a variety of music as they walked the runway. Music and dance was choreographed by Teresita Miranda of Miranda Productions, and showcased the students’ special talents. Roxanne Vargas, Entertainment Host and reporter for “6 in the Mix” on NBC 6 South Florida, served as the MC. News and Notes from the Town of Miami Lakes Michael Whitehead band is featured performer at Town’s 10th Concert on the Fairway Miami Lakes Cultural Affairs Committee is hosting the 10th annual Concert on the Fairway at 7 p.m. on Saturday, November 22, at Shula’s Golf Club, 7601 Miami Lakes Drive. The free concert will feature the renowned talent of Michael Whitehead and the Final Countdown Band. Whitehead and his bands have been performing from Chicago to Key West, entertaining thousands of fans for nearly 10 years.

Town schedules two Town Hall meetings for proposed Dog Park Miami Lakes is known for its beautiful tree-lined streets, parks and green spaces. With a commitment to continue “Growing Beautifully,” the Town has recently embarked on a renewed urban beautification effort to reach this goal not only for residents, but furry residents as well. Over the past several years, there have been requests from Miami Lakes dog owners to have their very own dog park. Last year, the Town agreed to lease a parcel

of property from the Florida Department of Transportation located at the southern end of N.W. 77 Court, with suitable conditions for a dog recreation area adjacent to future proposed trails and facilities. The proposed Dog Recreation Area is planned to have separate fenced areas for both large and small dogs, a parking lot, water fountain, and shaded picnic shelter. The Town will host two public meetings to gain resident input on

the proposed Dog Recreation Area concept and design. The meetings will be held on Wednesday, December 3, from 7 to 8 p.m. at Mary Collins Community Center, 15151 N.W. 82 Avenue; and Saturday, December 6, from 10 to 11 a.m. in Town Hall Council Chambers, 6601 Main Street. Town joins with Loving Soles for Thanksgiving shoe drive collection

MICHAEL WHITEHEAD and his Final Countdown Band will be performing during the Town of Miami Lakes’ 10th annual Concert on the Fairway on November 22.

Miami Lakes has partnered with Loving Soles for the second year in an effort to collect shoes for the needy in time for the Thanksgiving holiday. The local charity dedicated to providing shoes to Miami’s homeless, founded by Tony Garcia, Dr. Daryl Gershbein, Dr. John McGoohan and Ileana McGoohan’s teenage children, will donate gently worn shoes to Camillus House and Catholic Charities. “As we approach the Holiday season, we’re reminded of our good fortune and the importance

of helping others,” said Councilmember Tony Lama. “Last year, our community donated over 400 pairs of shoes. With the help of Loving Soles, and the residents of our community, I know we can exceed last year’s numbers.” The shoe drive is scheduled to

Elderly Affairs Committee sets Senior Holiday Social Dec. 13 Miami Lakes Elderly Affairs Committee is inviting seniors to attend the annual Senior Holiday Social from 11 a.m. to 2 p.m. on Saturday, December 13, at the Roberto Alonso Community Center at Royal Oaks Park, 16500 N.W. 87 Avenue. News and Notes from the Town of Miami Lakes More than 50 volunteers recognized for work on town’s Halloween event Town of Miami Lakes and its Youth Activities Task Force (YATF) gave special recognition to the more than 50 volunteers who donated their time to make “Nightmare on Montrose” on Halloween night a “spooktacular” success at its new location at Miami Lakes Picnic Park West. “Special thanks to the YATF chaired by Lynn Matos and all of its volunteers,” said Councilmember Nelson Rodriguez, whose son Brian, served as the co-chair for the event. “The volunteers are really what makes our Town and these events a success. We couldn’t do it without them.” Throughout the year, the Town continues to offer high school students chances to earn volunteer hours for high school graduation. STUDENT VOLUNTEERS who joined the Town’s Youth Activities Task Force in hosting “Nightmare on Montrose” were honored by the committee and Town officials for their commitment and dedication to the project.

16th annual Bike Rodeo and Safety Day scheduled for December 6 at Town Hall Miami Lakes Youth Activities Task Force, in partnership with the Miami-Dade Police Department’s Town of Miami Lakes Section, will host the 16th annual Bike Rodeo and Safety Day from 10 a.m. to 2 p.m. on Saturday, December 6, at Town Hall, 6601 Main Street. The free event, which is open to the public, will provide participating children bicycle safety training and the opportunity to interact with various branches of law enforcement officers. The Police Department will also hold a motorcycle demonstration, a crowd favorite. The first 150 kids who register

will receive a free bike helmet courtesy of Miami Children’s Hospital’s Miami Lakes Outpatient Center. Food, beverages and entertainment will be provided, along with the opportunity to win new bikes and other prizes. Daniel Hopkins rejoins town Daniel Hopkins has returned to the Town of Miami Lakes and is the current director of Community Services. Eight years ago, he served as the town’s Parks and Recreation Director. Over the past 30 years, Hopkins has worked for six government entities and served as a department director for four of those organizations. As a director responsible for Parks, Recreation, Conservation, Cultural Resources and Community Services in three different states, Hopkins has gained a wide range of local government experience.

Town hosts toy drive now to Dec. 6 for the Marine Corps Reserve’s Toys for Tots In an initiative by Councilmember Tim Daubert, who served in the U.S. Marine Corps as a Military Policeman, the Town of Miami Lakes will host a toy drive for the Marine Corps Reserve’s Toys for Tots throughout November and part of December. Residents are encouraged to bring unwrapped boys for children up to the age of 16 by Friday, December 12, to Town Hall, 6601 Main Street. The objectives of Toys for Tots are to help less fortunate children throughout the United States experience the joy of Christmas; to play an active role in the development of one of the nation’s most valuable resources – children; to unite all members of local com-

munities in a common cause for three months each year during the annual toy collection and distribution campaign; and to contribute to better communities in the future. Over the years, Marines have established close working relationships with social welfare agencies, churches and other local community agencies which are well qualified to identify needy children in the community, and play important roles in the distribution of the toys. Rilion Gracie's father and uncle, Carlos and Helio Gracie, changed the style of Japanese Jiu Jitsu, a result of their small stature and advanced skill in taking down much larger opponents which brought attention to the style which was later dubbed Brazilian Jiu Jitsu. “It’s not really a striking martial art, instead Jiu Jitsu focuses on controlling the opponent and finishing the fight on the ground,” said Ramirez. “The thing about Jiu Jitsu is that you can practice it at a high level without going to work the next day with your face bruised up.” Gracie is a famous name in the martial arts world, one that Rilion represents with his long career in the art, beginning at a young age and going strong today with his presence at his Coral Gables stu-

dio. Gracie also plans to make appearances at the Miami Lakes location to lead classes. “Our system is a complete form of self-defense. But our focus is on submission. And anyone has the potential to take down the opponent of any size,” said Gracie. “He is a point of reference,” said Ramirez about Gracie. “The fact that we have this opportunity, to learn from him, is unique.” Though competing is not pushed on members, instructors take a more relaxed approach to competing, but those who do compete often still attend tournaments and win. M-Dade Public Works launches new drainage project on N.W. 87 Avenue Construction is underway for a roadway drainage project in Northwest Miami-Dade, as Miami-Dade County’s Public Works Department is making street improvements for residents traveling to and from the area. The project is located at N.W. 87 Avenue from N.W. 189 Street to N.W. 197 Terrace. The work for the project includes the construction and installation of drainage structures, French drains, miscellaneous drainage improvements, grading,

sodding and miscellaneous roadway restoration, including construction of concrete curb and gutters and sidewalks. Construction began on November 10 and is expected to be finished by February 2015. All efforts are still being made to minimize the impact from the construction activities to area residents, schools, businesses and motorists. The area will be restored to its

original condition immediately upon the completion of the construction activities. The restoration activities will address any areas impacted by the project, such as grassy areas, sidewalks and other items affected by the construction. of four Outlaws and six Miami Cobras team members would define the face of national champions. The first sign of success came during the state championship tournament in Tamiami, where the Outlaws, the surprise travel baseball team based at Country Village Park, defeated the nationally ranked Miami Phenoms 11-3 in the championship game. Head coach Jorge Marin always believed the talent and drive were there. The next step was competing against the top 38 teams in the nation in the Elite World Series. The Outlaws defeated some very tough teams like the Marucci Tigers and Foundation Bulldogs to get to the semi-finals against a talented Miami baseball team. In their third game of the day, the Outlaws lost 4-0 to Miami baseball, which went on to win the

Elite World Series, leaving the Outlaws with a 3rd place finish. It set the table for the “Road to Memphis National Championship” journey of a lifetime. The boys arrived in Memphis, Tennessee on Thursday morning after some hectic overnight flight delays in Atlanta. It affected the Outlaws as they played at 4 p.m. on Thursday and ended up losing a very tight 4-3 game to Gameday Shockwave. The Outlaws finished their seeding games with an unimpressive 2-2 record but it would later be a smart move for Marin who was able to save pitching for the elimination series. The biggest test for the Outlaws came when they had to defeat Yabolusha Giants who were ranked 3rd in the nation, not once (5-4) but twice (4-2) in elimination to advance to the Championship game against the Rawlings Patriots.

The national stage was set for what was to be an epic nationally televised championship game for the Miami Outlaws Elite. The Outlaws defeated the Rawlings Patriots 7-4 in extra innings after coming back to tie the game 4-4 in the 5th inning. Great pitching by Joel Enriquez and Manny Marin held the power hitting Patriots to 4 runs. Clutch hitting by Jeter Polledo helped put the Outlaws ahead twice in the game. During the November 5 MiamiDade County Commission meeting, Commissioner Barbara J. Jordan honored the Miami Outlaws Elite traveling baseball team for winning the regional USSSA Championship and issued a proclamation declaring November 5, 2014 as Miami Outlaws Elite Baseball Day.

Daniel Yanez hosts Shula’s scramble to aid Notre Dame-bound students By R.A. Romero The Miami Laker staff University of Notre Dame alumnus and Miami Lakes resident, Daniel Yanez, leads the Alumni Association group, Notre Dame Club of Miami which is hosting the “1st Annual Irish Golf Classic” golf scramble on Friday, December 5 at Don Shula's Golf Club. Proceeds from the event will go toward the group’s Student Scholarship Foundation which raises funds to financially assist high school seniors from Miami who have been accepted and will attend the University of Notre Dame. In 2014 alone the 501(c)(3) not-for-profit group donated over $10,000 to 10 charities. Yanez, a longtime native, and youngest Notre Dame alumnus named president of an alumni club, is eager to raise funds for the next generation of Miami transplants at University of Notre Dame in his hometown. Yanez created the event and scheduled 1995 Notre Dame graduate and former Miami Dolphins safety who played in the NFL for 9 seasons, Shawn Wooden, as honorary

chairman of the tournament. The golf scramble tournament field will be made up mostly of Notre Dame alumni, but the event is open to all. The American Patriots defense didn't have an answer for Plantation's explosive running back Maurquice Flowers, who rushed for 203 rushing yards and scored four touchdowns in their Region 4-7A quarterfinal playoff game last week at Milander Stadium. When it was over, Plantation advanced with a 34-13 win against a 9-2 American team that had one of the best defenses in MiamiDade County, but allowed over 350 yards of total offense against the team from Broward. Flowers credited his offensive line for his record-breaking performance, saying his on-field body guards blocked well and opened up holes for him to run through.

Under the direction of Athletics Director Jonathon Milian, Jose Marti MAST 6-12 Academy is participating in the following middle grade sports for the 2014-2015 school year with intentions of increasing the sports program within the coming years: Boys Basketball, Girls Basketball, Bowling, Cross Country, Golf, Girls Soccer, Boys Soccer, Softball, Tennis, Track and Field, Girls Volleyball, Boys Volleyball, Swimming, and Wrestling. Lakes United Methodist Church hosts second annual Winterfest starting Nov. 28 Miami Lakes United Methodist Church launched the first Winterfest in 2013 as a follow up to the popular Pumpkin Patch and has announced its return this winter. Beginning November 28 through December 24, Winterfest will feature free daily admission, Christmas Tree sales, and scheduled activities throughout the holiday season. Basulto Special to The Miami Laker Four Monsignor Edward Pace High School seniors were invited to perform in the 86th Annual 2014 Macy’s Thanksgiving Day Parade in New York City on November 27. Annalise Rodriguez, Amanda Gonzalez, Stephanie Roque, and Meghan Roucco were selected after attending a Universal Dance Association Officer Camp this past summer. Their performance, as part of a crew of more than 650 cheerleading and dance team members representing the Varsity Spirit group, will be televised nationally live on NBC. The performance will come near the end of an eight-day trip to New York City from November 22-28. To prepare, the girls will spend the week before rehearsing for the performance in dance classes along with the rest of the selected cheerleaders and dancers from across the country. They will also have the chance to sightsee in the city and even attend a private Broadway performance of Aladdin where they can talk with the cast after the show. On Thanksgiving, they will be marching down the streets of Manhattan during the parade before ending up in Herald Square, where they will have a televised performance of the routine they have spent the week rehearsing.

Pace High students tour various Florida universities By Rene D. Basulto Special to The Miami Laker Juniors and seniors at Monsignor Edward Pace High

School got a first-hand look at their college prospects when they went on a three-day tour of six Florida universities from October

6-8. The students were chaperoned by Pace’s Dean of Academics Rebeca Bautista and college advisor Lilian Dubon, along with a director from the tour’s organizer College Campus Trips. After meeting up at Pace early on October 6, students and chaperones rode a bus to Fort Myers to spend their morning at Florida Gulf Coast University, headed to Tampa to visit the University of South Florida in the afternoon and ate dinner at the University of Florida in Gainesville at night. The next morning, students got a tour of the University of Florida, headed to Tallahassee to visit Florida State University in the afternoon, and ended their evening in Jacksonville. On the final day, students went on a tour of the University of North Florida in Jacksonville and headed south to Orlando and the University of Central Florida before finally arriving back at Pace

in the evening. The tour was the first of its kind that Pace students have been on. As part of their tours, students got to walk through the six colleges’ campuses, see classrooms, and speak with current university students. They also got the chance to have honest conversations with recent Pace alumni, such as Javier Gonzalez, (Class of 2012) at FSU, Janelle Gonzalez (Class of 2014) at UCF, and Tommy Aponte (Class of 2013) who gave the tour of the University of Florida as a UF Student Ambassador. “For me, personally, the most memorable experience was our alumni at the different universities making the time to meet me and our students,” said Dubon. “It proved that, in fact, there is a family bond that is created among Spartans, a bond that is everlasting because of the memories and experiences they live while at Pace.” “It is very important for stu-

dents to visit the colleges and imagine themselves there,” said Dubon. She added that students’ expectations about universities may be based on hearsay or public relations material put out by the college. According to Dubon, while many students were awed by certain campuses, particularly UF and its facilities, what matters in the end is that students decide on what school is best for them. “Individual perceptions of what a university should be like varies from individual to individual and not all colleges have the same environment and/or atmosphere,” said Dubon. Pace junior Michael Barcelo, who says he wanted to know all of his options for Florida universities, was one of those students who had his eyes opened by the trip. “I only had UM and FIU in mind before I went on this tour,” said Barcelo. “Now I have a better understanding of the other universities in Florida and can't wait to go to UNF!”

Area students are invited to create artwork in Main Street’s new banner contest Miami Lakes children, as well as students from area schools, are invited to participate in the 2nd Annual Main Street Banner Art Contest where up to 26 winners’ artwork will be showcased down Main Street on the light pole banners. This year's theme is: “My Home, My Community.” Artworks can show, but are not limited to, any of the following attributes that connect with Miami Lakes: Culture + Heritage, Parks + Nature, Arts, Town Center, or Active Living. The contest is open to all children who live in Miami Lakes or attend a Miami Lakes public school. Local public schools include Miami Lakes K-8 Center, Bob Graham Education Center, Miami Lakes Middle School, Hialeah Miami Lakes Senior High School, Barbara Goleman Senior High School, Miami Lakes Educational Center or any Miami Lakes private school. Artwork is to be submitted for judging on or by December 12, 2014. Winners will be notified by mail the week of January 12, 2015, and will be printed in the February 7, 2015 edition of The Miami Laker. Hialeah Miami Lakes Trojan Band wins ‘Best in Class’ at recent regional competition By R.A. Romero The Miami Laker staff Hialeah Miami Lakes Trojan Marching Band took home Best in Class for Visual and General Effect, and was the Class 1A Champion in the regional competition, Flanagan Falcon Sound Invitational, that took place at Flanagan High School on October 11. This was the first time in nearly 10 years that HML has taken home first place for this competition. In recent years the band has improved from 6th place in 2012 to 2nd place last year and finally champions for 2014. Following the success at Flanagan High School, HML was once again Class 1A Champion at the Miami Coral Park Ram-aPalooza Contest of Champions in

Hialeah on November 1. Additionally, the band earned Best in Class for Visual, General Effect and a Best in Class for senior Kevin Baluja for Drum Major. The final competition for 2014 is the Florida Marching Band Coalition State Championships in St. Petersburg, Florida on November 22. This is the first time in HML's history that the school band will be competing for the state title. Following the state championships, the marching band program will branch off into smaller groups such as Wind Ensemble, an indoor concert band, Jazz band, and Winter Color Guard. “I am incredibly proud of the students, instructional volunteers, and wonderful band parents,” said Band Director Sara Cowley.

Dade Christian welcomes Olympic Gold medalist Sanya Richards-Ross Dade Christian School was honored to host Olympic Gold Medalist and World Cup Champion, Sanya Richards-Ross as a celebrity guest judge during its annual Homecoming Lip Synch Competition. Richards-Ross is one of the most decorated track and field Olympians of all time, having won four gold medals as well as five World Championships. On Tuesday, November 4, Richards-Ross helped kick off the school event by sharing her journey to Olympic Gold with the students and encouraging them to perservere toward their goals. Lip Synch is highly anticipated at Dade Christian School. Each grade level goes above and beyond to produce a show choreographed to various song mash-ups. This year's homecoming theme was “Once Upon A Time,” with each class selecting a specific storybook. Richards-Ross sat in for performances based on Alice in Wonderland, Dr. Seuss, The Wizard of Oz, and more. She later instagrammed a photo of herself with DCS students. Richards-Ross is a South Florida native, having attended St. Thomas Aquinas High School in Ft. Lauderdale.

Basulto Special to The Miami Laker Pace High School and its Campus Minister, Andres Novela, have worked tirelessly for years to give back to Pace’s Haitian sister schools, Moulin and Pewou, through fundraisers and missions to Haiti. Last year, Pace Campus Ministry started the school’s firstever coffee shop to sell “just.ice.coffee,” a new way to raise money and awareness for this cause. The iced coffee is more than just a simple fundraiser; it is made with the organic fair-trade Café Cocano, the coffee grown in Pace’s sister diocese of Port-depaix. “Most people don’t know that Haiti produces coffee and this allows our school community to consider one of the many resources that Haiti has to offer,” said Novela. Novela learned about Café Cocano coffee on a trip to Port-dePaix in 2011 when he met with the coffee farmers and their cooperative president. After learning that St. Thomas University was selling the coffee through its Center for Community Engagement, he decided that Campus Ministry should start selling it at Pace in order to “connect the work of the farmers with our work with the sister schools.”

The money from the sales goes toward teacher salaries and schools supplies for the Haitian sister schools and building construction, nutrition programs, and agricultural projects for the sister dioceses and their communities. The “just.ice” dual-meaning comes from the fact that the coffee is cold-brewed and direct trade, as the cocoa farmers receive a just and fair wage for their work, or “justice” which ends up contributing to the economic development of the community. Unlike traditional iced coffee, which is brewed hot and then put on ice, just.ice.coffee is coldbrewed at room temperature for 7 hours with cold water, giving it a smoother taste and velvety finish. The coffee, creamer, and sugar used to make the syrup are all organic. Pace has a long, storied history of continued support for Haiti. During Catholic Schools Week, the school and Campus Ministry sells t-shirts, Haitian-made artwork, and other items at the Fair Trade Bazaar, and offer a simple lunch of rice and beans on that week’s Solidarity day in order raise awareness of how the children of Moulin and Pewou live

every day. In addition, many school events throughout the year such as Battle of the Bands, the Pace Film Festival, and the mass collections during the Junior Ring Ceremony and Baccalaureate Masses raise funds for the Haitian sister schools. For this school year, Campus Ministry began selling just.ice. coffee in the Pace plaza regularly on Tuesday and Thursday mornings, upping their production of brewed coffee to 3 gallons a day. Each cup of coffee sells for $3, with 85 percent going to the Haitian sister schools and 15 percent being used to purchase the coffee beans and supplies. Through social media, announcements, and word of mouth, the sales have made regular customers out of students and teachers. Cupcakes, cookies, and themed-music days where jazz, 90’s hip-hop, and Haitian music play in the plaza have also brought more customers. While he is currently running the just.ice.coffee shop, Novela eventually wants to train a group of students as baristas so that they can run the shop themselves.

Jose Marti MAST Academy uses technology for nature research

JOSE MARTI MAST ACADEMY’S Green Club uses its arboretum to study 38 species of trees, shrubs and grasses native to South Florida.

Rather than solely using technology to be engrossed in cyberspace activity, Jose Marti MAST 6-12 Academy is utilizing technology to foster connectivity and exploration among the natural world outside the classroom walls. The Green Club at Jose Marti MAST 6-12 Academy, a STEM focused magnet school, has planted an arboretum with 38 species of trees, shrubs, and grasses native to South Florida. To help students in both middle and high school research classes to become familiar with plant life from the local

environment, the school has developed an activity in which nature and technology merge. Each species of plant is labeled with a number from 1 through 38 and students are given a field guide that describes common plant names, and QR codes for websites that describe the plants. In com-
