PEGGY'S SKYLIGHT

During August Bank Holiday weekend, Nottingham welcomed Peggy’s Skylight!

Throughout their launch weekend, the new jazz bar on George Street hosted a variety of live music. Promising to be a fusion of well-curated live music coupled with heart-warming food with a Middle Eastern twist, Peggy’s Skylight treated locals to music from electrifying gypsy jazz quartet, Swing Gitan on the Saturday and a jazz jam night hosted by saxophonist, Chris Bowden, on the Sunday.

Locals can expect a mouth-watering menu of mezes, lashings of warming harissa, bejewelled Persian Rice and a blend of aromatic spices.

During the day, diners will also be able to choose from a selection of pastries and cakes for a unique twist on an afternoon tea. Although predominantly a jazz bar, Peggy’s Skylight will also showcase live music with a soul and blues influence.

THE COD'S SCALLOPS THERE’S NOTHING MORE BRITISH THAN FISH AND CHIPS; FOR DECADES THEY HAVE BEEN A FAMILY FAVOURITE! SO WHEN IN MAGAZINE WERE KINDLY INVITED TO THE COD’S SCALLOPS IN LONG EATON, WE COULDN’T WAIT TO PUT THEIR AWARD-WINNING FISH AND CHIPS TO THE TEST!

In 2011, John Molnar decided to embark on a new adventure. With 30 years of experience, John sought out a highly skilled crew, sourced the finest produce and set sail on a fish and chip concept like no other: The Cod’s Scallops. Enjoy traditional fish and chips differently at one of The Cod’s Scallops three locations found in Long Eaton, Sherwood and Wollaton. Home of the freshest fish you can choose from over 20 species including Haddock, Plaice, Monkfish, Sea Bass and many more (depending on the catch of the day). Whether you are having a takeaway or eating in, you can have your fish baked, battered or naked, they’re all cooked fresh to order! Unsure how best to cook them yourself? Ask to speak to one of their qualified chefs who can give you expert advice!

The Cod’s Scallops enjoy doing their bit for the environment. Wherever possible they use local, seasonal produce as well as recycling, cutting energy and water consumptions. They support our local fishermen through The Fishermen’s Mission, visit their website to read more about their fantastic work. Proud to be MSC Certified, they work closely with their fish suppliers to source the best sustainable fish. ‘It’s that fresh that tomorrow’s tea is still in the sea!’ To add to their great deeds, they also work with The National Lobster Hatchery; an initiative where every lobster they buy, they release another baby lobster back into the sea. It’s amazing the work that The Cod’s Scallops do for the community and environment!


As you enter Cod’s Scallops you are greeted with the warmest welcome. On our visit we decided to dine inside and were promptly shown to our seats to look over the menu. To see their ‘catch of the day’ range visit their counter or choose from the menu. With sides from mushy peas and curry sauce to healthy alternatives such as the butterbean salad and the green mixed salad, you’ll find something for everyone. One of their brilliant offers is the lunchtime special: Golden Oldies. Available from 11:30am – 2:00pm you can indulge in a mini cod, chips and mushy peas plus a cup of tea or coffee for only £6.00! During our visit we started with their baked scallops and battered oysters. Firm in texture against their delicate sweet flavour, the baked scallops were so fresh and delicious. Both newbies to oysters we were pleasantly surprised! The crisp batter against the soft oysters created a taste like no other, full of so many flavours. If you’ve never tried battered oysters before then we highly recommend!

After this we wanted to challenge their awardwinning haddock, battered in beef dripping, the fish was wonderful! Accompanying the dish was chunky chips and mushy peas, the ultimate fish and chip experience. We didn’t stop there, we also decided to order half a lobster from their catch of the day counter. With a rich yet slightly sweet taste against the soft and tender flesh, creating the most incredible dish that you must try! Now neither of us have never been to a fish and chip shop and had a dessert… until Cod’s Scallops. They offer a range of puddings and after a difficult decision we decided to go for their chocolate brownie sundae and their warm sticky toffee pudding with ice cream. To sum it up in one word – delicious! So, if you aren’t already heading to your nearest The Cod’s Scallops, we highly recommend that you do - you will not be disappointed!

BEEF BOURGUIGNON 2. Add the flour and mix into the meat juices. Then add the tomato puree, wine, bouquet garni, bay leaf, thyme, parsley and crumble in the stock cube.

THIS IS JAM-PACKED FULL OF BEEF, VEGETABLES AND MOST IMPORTANTLY FLAVOUR! WARRENS BEEF BOURGUIGNON RECIPE IS THE ULTIMATE WINTER-WARMER.

3. Season, stir everything together and leave to simmer for 2 hours with the lid on. Top the mixture up with water whilst cooking (if needed).

1. Heat some oil in a large casserole on the stove. Fry the beef until browned.

4. 30 minutes before serving, chop the bacon into pieces, peel and quarter the shallots and finely chop the garlic.

The invitation is the window to your event, just like a website is for your business- make it attractive, relevant and don't forget the basic obvious information. You'd be amazed at how many invitations I have received without timings or venue details etc.

REHERSE Beforehand 'walk the event' as if you were a guest, from start to finish. This gives you the opportunity to visualise your event before it happens from the eyes of your guests and allows you to make any necessary changes.

DETAILS The details of anything you do are what make you memorable. Tailor whatever details you can to the type of event you are hosting, with as much precision and professionalism as you are able. For example, if you're doing a black tie dinner, offer goodie bags or favors on each place setting.

MAKE IT FUN

Whatever the event format, there is no excuse for a dull experience. With a bit of creativity you can make any event enjoyable, so think outside of the box. Of course there's nothing wrong with sticking to a tried and tested format, if you'd rather play it safe, just be sure to be attentive to your guests needs at all times and you cannot go far wrong.

HOSPITALITY Whatever you are offering- whether it's drinks, canapĂŠs, a three course dinner or buffet lunch, it's extremely important to ensure the food is of a decent quality and has variety. Ensure you have several vegetarian options and if it's a pre booking, cater for special dietary requirements.

SPEAKERS They're more often than not the bread and butter of your event, so make sure they're looked after. Perhaps a free meal as a thank you, plus provide what materials or equipment they may need and test it well in advance.

To ensure a smooth event you need to know how many are due to attend; for venue capacity, catering and your own peace of mind. You'll need to decide early on if you are going to run a free guest list or sell tickets. Remember that selling tickets still doesn't guarantee full attendance. Check people off as they arrive no matter what kind of event it is! This way you know who actually didn't attend and you can follow up and invite them to your next event.

Ensure the dress code is clear on the invitation if there is one and if so ensure you and your colleagues adhere to it too. Set an example, first impressions count, so ensure your image portrays what you want your event to portray and mirror this too in your behaviour, as you are promoting yourself as well as your brand.

SMILE How many events have you attended where the first person who greets you at the door is as miserable as sin? Not the welcome you anticipated nor would expect. So ensure you offer a positive experience at your event from start to finish to ensure your guests leave with a smile on their faces and ultimately tell people about their positive experience. NEW SHERIFF IN TOWN NOTTINGHAM PANTHERS HAVE A NEW SHERIFF IN TOWN WITH THE ARRIVAL OF HEAD COACH RICH CHERNOMAZ. THE 55-YEAR-OLD CANADIAN HAS TAKEN OVER AT THE ELITE LEAGUE CLUB FROM COREY NEILSON, WHO HAD BEEN AT THE PANTHERS SINCE 2006, BUT HAS NOW MOVED ON TO COACH IN GERMANY. Chernomaz’s arrival marks a new era at the club. The last time Panthers had a coaching change the i-pad had not been invented, while Snapchat, Spotify, Instagram, GPS on your smartphone, WhatsApp and Uber didn’t even exist. The Manitoba native has a tough act to follow after the unheralded success of Neilson in his time at the club, but he clearly is up for the challenge of coaching one of the UK’s biggest ice hockey clubs.

“We want to win trophies, especially the league, domestically, but it will be a process,” he said. “I have a plan and a strategy. I’ll trust my players, but they have to earn that trust to start with. “In turn it creates a lot of mutual respect for everybody. That’s the goal every year – get people on the same page and get them buying in. “We have to develop a consistency and build around a structure. A big part of it is the respect and trust we all have between players, coaches and management. That’s my philosophy in a nutshell.” Chernomaz has been coaching in Germany since 1999 and also had a five-year stint as head coach of the Hungary national team, so he is well used to being away from home. As a player, he played in the world’s top league, the NHL, as he iced for Colorado, New Jersey and Calgary, so has done his fair share of travelling since starting out as a teenager in Saskatoon. The Canadian has not seen much of the city since his arrival after a busy start to the new season,

but he admits he did chalk something off his bucket list recently by visiting one of Nottingham’s famous landmarks. “I have really enjoyed my time so far,” he said. “Unfortunately there has not been much time to do much sight-seeing but I have managed Wollaton Hall. I always wanted to see where the Dark Knight movie was filmed, so that was something fun to do.” Chernomaz led Panthers to an unbeaten preseason and his first two home games at the club were near sell-outs, as Panthers beat Sheffield Steelers in the Challenge Cup and Manchester Storm in the league. And the Canadian has been impressed by the dedication and the passion of the club’s large supporter base. “I have been really, really happy with a lot of the people and especially the fans,” he smiled.


Chernomaz revealed that the Elite League and the Panthers’ arena in particular matches up well to some of the top clubs in Germany, which is considered a stronger league than the UK. The Canadian had discussions with owner Neil Black over a lengthy period of time about taking over at the club and was invited to the end-ofseason play-off finals weekend in Nottingham,

where the Panthers were knocked out in the semi-finals by Sheffield. “I heard a lot of good things about the organisation. My initial discussions with Neil were excellent,” he said. “He has a vision I respect. He wants to take the league to another level of professionalism. “When I saw Finals Weekend I was really impressed. That game day operation was better than 75% of DEL teams.

“That says a lot about wanting to push on. It’s a shame not every team in the league has a building like Nottingham. It’s a new challenge and I’m really looking forward to it. It’s going to be nice to speak English again.”

Off the coast is the picturesque island of Hon Tre, which is a great destination for a day trip. The method of getting there isn’t by the usual boat or bridge, but by cable car! The 3.3km ride is certainly one of the more unusual sea crossings you can do!

This area is famous for its excellent scuba diving by day, and in the evening the sea food restaurants and street markets call the locals and tourists to the streets. Grab a table, some famous local seafood dishes and watch the world go by.

With its very dark history of the tyrannical reign of the dictator Pol Pot and the Khmer Rouge, and one of the most incredible wonders of the world: the temples and complexes of Siem Reap and the majestic Angkor Wat. It certainly must be on your bucket list to visit.

We now set off on our next adventure, as we head further south either by plane, private car or the famous Reunification Express train to the coastal town of Nha Trang. This lovely seaside town has a rather unusual attraction.

Our Vietnam adventure is drawing to a close now, but not before we head into Ho Chi Minh City, formally Saigon. This is a real opportunity to explore the differences between where we started in Hanoi in the “communist” North and the “capitalist” South.

THERE IS NOW A VAST CHOICE OF OUTDOOR LIGHTS ON THE MARKET AND TRYING TO SIFT THROUGH THE VARIOUS OPTIONS OF HOW YOU MAY BEST LIGHT YOUR ENTRANCE OR PORCH CAN SOMETIMES BE A BIT OF A MINEFIELD. With a few handy hints and tips we can help you choose well, but also with a little extra style, panache and functionality. Porch and entrance lighting has traditionally been either very classic lanterns with faux leaded panels or contemporary stainless steel up and down lighters.

BRIGHT HOUSE LIGHTS FOR DARK WINTER NIGHTS

But now there is a much wider choice of styles and designs, from very sleek and sharp Danish and Scandinavian designs through to styles influenced by New England seaboard styling.

Dusk ‘til Dawn sensor lights, as the name suggests, turn on when the light drops at dusk and will turn off automatically when a higher level of light is detected, for example at dawn.

The traditional up and down wall lights can been seen in cubes or rectangular shapes, with finishes from smart brass to urban powder-coated aluminium or corten steel and often with a choice of light diffusers to allow you to create your own light patterns on the wall.

Many of these lights now also have additional programs, for example you can decide how dark it needs to be before the light switches on, or you choose a soft light start function, when the light is turned on it builds up brightness to the full 100% or you can have the level of brightness gradually reduced when the light is switched off.

Functional lights such as sensor and PIR (Passive Infra-Red) lights until recently were a very unloved part of the lighting market from both a design and functional perspective, with limited designs and very few functions available. With improved technology, huge developments have been made in this area to offer not only improved styles, but a much wider range of functions.

Motion or PIR sensor lights are a great option if you are looking for outdoor security for your home or garden. Unlike Dusk ‘til Dawn lights, the PIR sensors use invisible infra-red rays to sense changes in the temperature. This will cause a change in the output voltage which will trigger a detection turning on the light.


Again, the developments in technology have allowed for additional programmes to be available, including having your PIR set to a basic light level where the light is continually on at a low level such as 10%, but will switch to a full light only when motion is detected. Many of these motion sensors now have a ‘sneak by guard’ to thwart anyone who tries to avoid the sensors coverage underneath. If the outside of your house has limited space for house numbers and wall lights, and you want the added security and convenience of a motion light, illuminated house numbers are now available with a sensor light.

With these the house number will light up when motion is detected or you can set the lights so the front porch a soft glow whilst making sure your house number is crystal clear.

With the clocks due to go back soon and as Autumn draws in, outdoor lighting can offer you far more than just a carriage lantern.

Of course don’t forget, if you already have an outdoor light you want to use or prefer other styles, you can purchase separate PIR sensors which can be wired by your electrician to turn any light into a security light. You can now choose dusk to dawn sensors with night economy modes right through to adjustable stand-alone motion sensors with a reach of up to 14 metres and an angle coverage of 140 degrees.
