What’s new

JUNI 93

A local master gin distiller opened his latest venture Juni on Low Pavement, Nottingham on Friday 30th November.

Private gin lab experiences, distilling classes, wine tasting and cocktail making courses will all be available at the restaurant.

Located in the former Prezzo unit, Juni serves a Balkan-influenced menu, a selection of gin cocktails made from the brand’s own gin and features Nottingham’s first gin lab experience.

Juni is a joint venture between the owner and four private investors. Owner, Tom Masters from Nottingham, previously worked as a distiller and tutor at the Burleigh’s Gin School in Leicestershire. He opened the bar with the support of his partner, Harriet Unwin-Miller and general manager, James Dexter formerly of The Orange Tree in Loughborough.

The bar will serve a selection of craft gins alongside the full range of Juni 93 gins including a London Dry gin, a raspberry and plum flavoured gin and a juniper cask aged. Information on their gin lab experiences, cocktail making master-classes, wine tasting and tutored gin tasting sessions can be found on their website.

THE HOCKLEY REBEL

Real Ale pub The Hockley Rebel have opened its doors at 9 Broad Street in the Hockley area of Nottingham following a £90,000 investment from the owners.

Nottingham-based commercial property agent, Box Property, sold the lease to the independent real ale operator on behalf of the previous tenant.

The Hockley Rebel will bring a traditional and dogfriendly pub to Broad Street, providing real ales and ciders from local and Welsh breweries, quality ‘pub grub’ and traditional pub games such as darts and billiards. The pub, which is part of the Ales from Wales company, is the first of its kind to open in the UK and will be open 12pm– 11pm Sunday to Monday and 12pm – 12am Friday and Saturday.

Upstairs is Club Tiki; a late-night bar where customers can enjoy live music and DJs, open 10pm – 2am, which is also available for private hire.

PORTELLO LOUNGE

Loungers, the West Country based restaurant/ café/bar group will be opening a brand-new site in West Bridgford on Wednesday 19th December 2018. Portello Lounge will open on Central Avenue, creating 25 jobs for local people.

Loungers have spent £750k transforming the site into a family-friendly retro-inspired cosy retreat, where eclectic artwork and quirky curios sit next to oversized vintage sofas and old school benches, strikingly painted table tops and statement lighting, in Loungers’ eclectic style.

CHICKEN & MUSHROOM BAKE

HERE’S A DELICIOUS CHICKEN AND MUSHROOM BAKE RECIPE USING CAMPBELLS CREAM OF MUSHROOM SOUP. THIS CASSEROLE IS MADE USING LEFTOVER COOKED CHICKEN, MAKING IT A SUPER QUICK DINNER TO PREPARE. 1. Pre-heat the oven to 180c / 350f. 2. Slice the mushrooms and slice the onion into half-moons.

Finely chop the garlic.

3. Heat some oil in a large pan and fry the mushrooms, onion and garlic for 5 minutes.

4. Add the soup, mustard and milk, then season. Stir until combined then set the sauce aside. 5. Add the chicken to an oven dish and pour the sauce over the top until all

the chicken is covered.

6. Grate over the parmesan cheese then bake in the oven for 20-25 minutes – until the topping is golden and crisp. 7. Remove from the oven and serve straight away.

VEGETARIAN BIRYANI MEAL PREP MY INDIAN INSPIRED VEGETARIAN MEAL PREP RECIPE IS PERFECT IF YOU’RE ON A BUDGET. IT’S ALSO GREAT FOR WEIGHT LOSS WHEN PLANNING YOUR LUNCHES FOR THE WEEK AHEAD. 1. Preheat the oven to 180c/350f and heat some oil in an oven dish. 2. Meanwhile, chop the potato, carrot and cauliflower into equal size pieces.

Slice the onion into half-moons.

3. When the oil in the oven dish is hot, pour the chopped and sliced vegetables in. Stir then cook in the oven for 20 minutes (stirring half way through cooking). 4. Remove from the oven and add the curry powder, tomato puree, rice and green beans. 5. Dissolve the stock cube in boiling water then top the oven dish up with the stock until the ingredients are just covered. Season to taste. 6. Mix together then cover in foil. Place back in the oven for a further 20 minutes, stirring half way through cooking. 7. Split the biryani between 4 food-safe containers and sprinkle over the cashews, sliced red chilli and freshly chopped coriander. 8. WITH THE VOTING COMPLETE, THE JUDGING OF THE NOTTINGHAM RESTAURANT & BAR AWARDS IS WELL UNDERWAY. The public have chosen their best-in-category and those nominees have now been passed to independent food and drink writers, journalists and experts in the field of hospitality to deliver the final verdict. The nominees and winners will be announced at a glittering Awards Ceremony to be held at Colwick Hall Hotel on the 31st January 2019, hosted by television personality, Mark Durden-Smith. Judging what makes a good restaurant an ‘awardwinner’ is not down to personal taste but instead, honesty and integrity in applying a set of industrywide standards from menu choice and seasonality; excellent, professional service from food and drink knowledge to friendliness, regardless of the style of the venue; flavour and taste; individuality and setting; all must be taken into consideration to be able to deliver a truly balanced assessment. What can often let a venue down is consistency but surely, if a place is to enjoy longevity, it has to be able to deliver the same excellent standards day in, day out.

I’LL BE THE JUDGE OF THAT…

Columnist for the London Evening Standard and a regular judge, Tim Cooper, said of his recent visit, ‘it’s good to get out of London and see what other cities are doing and I’ve always had a soft spot for Nottingham. There’s no doubt the food and drink scene has evolved and it’s great to see the independents doing so well,’ but he did add a word of caution; ‘those venues that rest on their laurels do so at their own risk as there’s always a new restaurant, bar or pub waiting to take their place.

We’ve seen some pretty poor service when the restaurants haven’t been paying attention and even some very average food… not what we’d expect from nominees! Consistency is definitely the name of the game.’ Most restaurants are subject to scrutiny these days with every-day reviews from the general public -sites such as Trip Advisor have definitely empowered the diner to make their thoughts known - or from those that have made it their profession.

A frightening thought or a necessary by-product to keep the venues on their toes?

Acclaimed and, no doubt, one of the most successful restaurant critics of a generation, AA Gill, once said as part of a review in the Sunday Times: "To get one restaurant critic is a misfortune; to get two is carelessness. To get them both on a bank-holiday Monday is suicidal." It begs the question - who’d be a restaurateur? All we can say is, we’re glad there are plenty here that are!

They have decided to confront their current struggles by putting on a performance – about themselves. Their therapist told them it was a terrible idea. With Lost Dog’s blend of dance, theatre and comedy this duet, directed by Olivier Awardnominated Ben Duke, takes on cultural obsession with youth and inevitable issues with longevity. Juliet & Romeo is co-commissioned by Battersea Arts Centre, The Place and Warwick Arts Centre. The work is funded by Arts Council England via Grants for the Arts. GETTING BACK ON TRACK GETTING BACK ON TRACK AND RE-ESTABLISHING BALANCE WITH YOUR HEALTH AND FITNESS AFTER CHRISTMAS CAN PROVE VERY DIFFICULT, NO MORE THAN WHEN YOU ARE JUST TRYING TO GET THE BALL ROLLING. The last supper mentality will inevitably kick in, this is when the thoughts of ‘’I’ve got to eat and get it all in whilst I can, and diet starts on Monday!’’ take over. So, what do you do? You start your plan of action and go! The best way to combat this is to create a sustainable lifestyle change, if you really can’t see yourself still doing it 3 months down the line then it’s simply not got going to work! It’s important to see it as a process that may take time, implement small changes each day/week, that eventually will help to gradually create new and better habits for the long term. The difference between a diet and lifestyle is creating the habits that are sustainable, with no restrictions in sight, it is important to still eat what you like as well as the right nutrients. Sometimes it can be overwhelming tackling everything in one go i.e. this week I will aim to eat healthier by making better choices or I will aim to include 5-7 portions of vegetables in my meals as well as making sure I hit 10,000 steps every day. 14 | IN Nottingham | January 19

Setting unrealistic targets like ‘I want to lose a stone in one week’ is counter-intuitive and will also demotivate you when you make less progress. Make sure you also set aside time to commit to measuring the progress you have made - this will include the start date and a deadline for a certain measure of time.

Implement some strength training as soon as you can, if you want to get more bang for your buck from training then this is one of the most effective ways to do so, it can improve your metabolism and increases your chances of obtaining even better results, not to mention the health benefits that are also associated with it.

Give yourself a weekly check in day/time that is the same every week - this way you can measure weekly progress (use photos, measurements and weight). These little milestones are important to ensure you stay motivated and keep going!

Most of all, you have to accept what has passed during the holidays and where you are currently at i.e. ok, I have gained X amount of weight/I feel sluggish, I am ready to get back on track! With this mindset you will then be able to re-evaluate your current position, future goals and proceed with your healthy lifestyle.

Once you feel the initial training target is something you can manage each day, look to include something that is more challenging and is going to get you increasing your heart rate. (If you do have any injuries or health complicationsalways seek advice from a health care professional).

NOURISHING SQUASH HOT POT WITH CRUNCHY DUKKAH

WITH THE BEAUTIFULLY INDULGENT SEASON OF CHRISTMAS JUST GONE, IT’S THAT INEVITABLE TIME WHERE WE ARE TOLD OVER AND OVER AGAIN TO EAT HEALTHIER, CLEANER AND LEANER. INSTEAD OF FOCUSING ON ANY FOOD YOU SHOULDN’T BE EATING, HERE IS MY FAVOURITE NOURISHING MEALS THAT FOCUS ON ALL THE THINGS YOU SHOULD BE ENJOYING TO WELCOME TO NEW YEAR.

1. Finely chop the onion then add to a large pot with a glug of olive oil and fry on a low heat.

2. Chop the squash or sweet potato into 3cm cubes ready to add to the pan 3. Mince the cloves of garlic and fry with the onion for 1 minute then adding

all the other ingredients to the pan (apart from the leafy greens)

4. Using the tinned tomato can, refill with water 2 times and add to the pot 5. Allow to simmer for around 25 minutes then check if needs more seasoning 6. Serve up into bowls and add a generous spoonful of yogurt and top with

the toasted dukkah seeds

For the dukkah - simply pop all the seeds and nuts into a non stick pan and gently heat until popping and golden

WEIGHT TRAINING MINDSET BEFORE ANYTHING ELSE - DON’T FORCE YOURSELF TO GO TO THE GYM, LISTEN TO YOUR BODY. I’VE HAD DAYS WHEN MY HEAD ISN’T IN IT, WHEN I JUST WANT TO GO HOME AND LIE ON THE SOFA; BUT I HAVE ALSO HAD DAYS WHEN I’M FULL OF ENERGY AND RARING TO GO! You may not think it, but your mood can have a massive impact on your performance, the question is ‘how do I overcome this?’ You need to find your inner warrior, your fight side! Motivation can come in many forms, it’s all about finding the one that works best for you. Whether you save images of your fitness goals on your phone, self-reassurance or plan your diet. Diets, there are so many to choose from, where to start! Amongst the trending diet plans are the Keto, Atkins, Dukan, plant-based diet – which one you decide on all depends on your personal fitness goals, budget and more importantly your health! What I have found is, like a lot of things, research is key! Going to the gym for the first time can be daunting, but I find, once I am in there and see everyone else getting on with it, I feel more motivated.

PLANNING AHEAD Knowing what you are doing before you even step foot in a gym is vital; I find that my session flows better when I am prepared, because I am not constantly stopping to scroll through my phone to see what I’m doing next.

When weight lifting, it’s easier to focus on one or two body parts you would like to work on during your session; whether it is back and biceps, shoulders and triceps, or leg day – this keeps your workout interesting and varied!

REST DAYS Although working out is great for the body, mind and soul; you need to rest as well. Your days off don’t have to be spent lying on the sofa (although that sounds great), you could head to your nearest spa and indulge in a jacuzzi, steam room and sauna, perhaps book yourself in for a cheeky massage too to release tension and relax. Rest days are important as they help to give your muscles a break!

TIPS AND TRICKS If you can’t find someone to support (spot) you then try out the cable machines, these are just as good as free weights. Using cable machines can be helpful when weight training as there is constant tension on your muscle therefore you are working more, whereas when you rest your arm down with a free weight there is very little strain. Also, you don’t need a spotter as much because the cable will always retract back to its original position, but whatever you do, release the weight slowly otherwise this can cause damage to the equipment.

SPOTTING When lifting weights, in particular free weights, it is advised that you ask someone (friend or the person next to you) to spot you. Spotting is an act of support which allows you to do the majority of the lifting with a helping hand, this can help you to lift more than you think, and safely!

KNOWING YOUR LIMITS Give yourself time to lift the weights, don’t rush to your goal. As the famous saying goes “don’t run before you can walk”, this can lead to injuries and pain. As explained in the point above, it is better to ask someone to spot you if you want to go up in weights, as a safety measure if nothing else!

WITH 2019 AROUND THE CORNER, THE MAJORITY OF US WILL START MAKING PLANS TO GET FITTER AND HEALTHIER. USUALLY THAT PLAN WILL INVOLVE THE GYM, BUT WHICH TYPE OF GYM IS THE BEST FOR YOU? Carly and Jason got chatting about types of gym and their personal experiences. Carly is all about the Home Gym, whereas Jason is all for the Public Gym.

PUBLIC GYM After feeling the toll of middle age life, and with an ever increasing waistline, I made several lifestyle changes 12 months ago, including taking the giant leap of faith and joined a gym.

From the second I walk in the door right up to the time I leave, I feel so much better about myself physically and mentally. When I leave the gym, a sense of happiness and overall well-being washes over me. The gym is my safe haven during stressful times, plus, I find the confidence gained afterwards is so rewarding!

HOME GYM I find being in your own space can be very empowering and can even make you work harder. Not having to worry about anyone around you, can really help you focus on the task in hand. Having a home gym can eliminate the worry about sharing equipment or being in anyone else's way. Being able to listen to your music, either through the TV or speaker is great, as let's be honest headphones whether they're wireless or not - they always get in the way!

I probably should have taken the time to look around and shop for gyms, but I really liked the one that just happened to be the closest to my home.

In reality I can workout anywhere I want to in my house. I even can get a sweat on while doing the housework - I just add a few extra movements like squats. The stairs are great option too - do a few sets of stepping up and down definitely raises your heart rate.

It isn’t cheap, but it was exactly what I needed. Somewhere that had a pleasant environment and was round the corner, so that I could easily fit it in with my hectic family life.

I'm lucky enough to have my own little space - as in the garage, that I've turned into my gym. And I only have and need a few basics – a mat, set of weights, a bike and a bonus of a punch bag!

I generally undertake a 2 hour session three or four times a week and utilise the full cardio section, treadmills, cross training equipment and bikes, along with the huge weight section. They also have an indoor and outdoor swimming pool along with sauna and steam room facilities, which I love to use as a kind of reward after a hard workout. As well as this, the offer a lot of classes which are free within the membership, along with tennis and badminton courts which have proved to be an invaluable way to keep the kids occupied during school holidays and weekends, while keeping them fit and active at the same time. 20 | IN Nottingham | January 19

Being at home, I can take my time in my routine and even display my routine on my wall, so that I'm not having to constantly refer to my phone or try and think of what to do next.

Being a mum of two and working full time, I have very limited time of when I can workout. But with my gym at home I don't have to consider extra time in driving to and from the gym. And if I've only got a spare 30 minutes at home, then I can get a workout done and not feel that I need to spend hours in the gym because of paying a membership. The major bonus of a home gym, is that there's no membership fee! The money I save can go towards well deserved treats! At the end of the day it's just personal preference on which type of gym is best for yourself, as long as you're feeling amazing afterwards, then that's all that matters! What are your thoughts? THE ABBEY I WAS KINDLY INVITED TO THE ABBEY, AN OUTSTANDING BEAUTY SALON SITUATED WITHIN ONE OF NOTTINGHAM’S BETTER-KNOWN AREAS, MAPPERLEY. AS A MALE CONSUMER, I WAS EXCITED TO EXPLORE THE VARIETY OF TREATMENTS AVAILABLE TO BOTH MALES AND FEMALES.

The Abbey offers a huge range of treatments, ranging from the holistic side, such as acupuncture, Reiki and hot stone full body massage, to the more evasive aesthetic beauty, like the well-known Dracula facial, thread lifts and the likes of Botox and dermal fillers. During my day I endured a range of gender-neutral treatments which is something The Abbey strongly believe in, ensuring equal treatments for both men and women alike to create a haven for all! As I entered the salon I was presented with an immaculate waiting area, here the attentive, respectful and professionally trained staff were able to inform me further of the treatments I would be receiving, and how they would benefit me and other clients.

My first course of treatments was the “wellbeing”, this was made up of several treatments including; The Classic Pedicure, Natural Spa factory full body scrub and a full body massage, finished off with a natural Spa factory signature 23 carat Gold facial. Lacking the body confidence of an ancient Greek gladiator, I had huge reservations about stripping down and hopping onto a heated table for the massage. However, those body doubts were soon taken care of, as the friendly member of staff eased my angst. Light and pleasant conversation flowed as I was being treated like a Hollywood star.


Slowly I forgot about all my worries and stresses of the outside world as I was teleported to a totally carefree state of mind. Now feeling more relaxed then I had ever thought possible, I was being prepared for my second course of treatments. Jackie, the owner of The Abbey was to be taking care of me during this course of the day. Her skills and training had come from industry pioneers and leading beauty professionals, so I knew I was going to be in safe hands, yet again. When the list of treatments was relayed to me, I honestly thought I’d be playing a lead role in a Hollywood Sci-fi film.

Those treatments were; collagen wave technologies, to smooth, tighten and lift the face, reduce fine lines and puffiness.Followed by Dermapen or micro needling, designed to promote natural collagen production, this then led on to the LED light face mask. All of these treatments are favoured by many celebrities, in order to achieve high and lasting results without going under the knife and avoiding needles. However, for myself, the experience was beyond anything I had ever expected. It aided my quest in breaking down any thoughts I has about men having treatments.

It also opened my eyes to the world of beauty and how it can be used to achieve results you’d expect to find on the more financially advanced folk to the more well-known celebrity. In a nut shell, I would highly recommend a visit to The Abbey, they have something for everyone, gender and social standing aside. Body language and the face play a huge part in communication, from this I have learnt the importance of maintaining my face, looking after my wellbeing and not allowing my gender to restrict me where beauty is concerned.
