SEABASS & MUSSELS

By Top Floor Development

INGREDIENTS

• 2 X 800G SEABASS FILLETS, DESCALED & PIN BONED CUT INTO HALF • 700G FRESH MUSSELS • 200G SAMPHIRE • 1 BANANA SHALLOT, FINE DICED • 2 GARLIC CLOVES, CRUSHED • 1 TBSPS FRESHLY CHOPPED PARSLEY • 1 TBSPS FRESHLY CHOPPED CHIVES • 1 TBSPS FRESHLY CHOPPED DILL • 100G DICED UNSALTED BUTTER • 200ML WHITE WINE • ½ LEMON

1. Wash the mussels under cold running water for 1 minute, then drain.

2. Place a medium-sized sauce pan on to heat so the pan is red hot, then put the mussels, onions, garlic and wine into the pan. Place a lid on top and cook for around 2 minutes until the mussels are plump and firm to the touch. Drain the mussel stock off and reserve for later. Once the mussels have cooled down, so that you can handle them, remove the mussel meat from the shells and place aside for later.

3. Heat a large non-stick frying pan to a medium heat, add in the oil and begin to fry the bass fillets

SERVES 4 skin-side down pressing the bass fillets flat to the pan for around 20-30 seconds with the back of a fish slice, this prevents the fillets from curling. Continue to cook the fish for around 3-4 minutes until the skin is golden and crisp and the fish is 3/4’s cooked through. Flip the fish over cook for another minute, remove from the pan onto a tray and leave in a warm place to rest.

4. Meanwhile whilst the fish is resting, in the same pan that the bass was cooked in, heat the pan back up and add in the mussel stock from earlier, bring to the boil, reduce by a ¼, turn the heat down low and start to whisk in the butter.

Once all the butter has been incorporated, add the samphire, mussel meat and herbs. Cook the samphire in the sauce for around a minute, taste the sauce for seasoning and adjust if necessary.

5. Plate the dish up by, dressing the plate with a

little of the samphire. Place the bass on top and then spoon over the remaining samphire, mussels and sauce and serve. SPRINGTIME WALKS

SPRING IS HERE, THE FLOWERS ARE BLOOMING AND THE WEATHER IS WARMING UP, SO NOTHING SERVES UP MORE OF A TREAT THAN GETTING OUTSIDE FOR A WALK WITHOUT ALL THE EXTRA LAYERS REQUIRED IN WINTER.

Holme Pierrepont Country Park is a watery wonderland and home to the National Watersports Centre. You can walk to nearby Skylarks Nature Reserve which is managed by the Nottinghamshire Wildlife Trust. Similar wetlands are found to the south west of Nottingham at the Attenborough Nature Reserve, a birdlife haven where trails criss-cross amongst numerous ponds alongside the River Trent.

Four miles north of Nottingham, Bestwood Country Park offers a meandering network of paths through gentle rolling fields to an attractive lakeside setting and features an Old Winding Engine House, a remnant of its former use as a busy coal mine.

Whether you choose a woodland wander, a riverside ramble or a hilly hike, the feel of fresh air and the scent of spring will do wonders for the soul and as the daylight hours are getting longer you can even head on out after work.

Another former colliery site has developed into Cotgrave Country Park to south east of Nottingham, a peaceful place with scenic lakes amidst beautiful woodlands.

Nottinghamshire has its fair share of lovely places to indulge in a springtime walk. Some of my favourite walking locations appear in the form of Britain’s Country Parks. As well as being particularly notable for their attractive countryside, they are easy to locate and navigate around. With 5 of them within its boundaries, Nottinghamshire does well in country park stakes Withers Sports a Nottingham A5:Layout 1 4/10/18 13:07 and they cover diverse range of habitats.

My two favourite country parks however are much further north near the village of Edwinstowe. Rufford Abbey Country Park has a bit of everything: woodlands, meadows, lakes, gardens and of course the abbey ruins, managed by English Heritage.

And last but not least – Sherwood Forest Country Park. How can we not mention this infamous forest in relation to Nottinghamshire walks? The forest extends well beyond the country park and if you’re feeling particularly adventurous, you can set off from here on the Robin Hood Way. This long distance trail meanders 107 miles to Nottingham Castle.

The famous ‘Major Oak’ is found in the centre of the country park. The tree shapes look particularly amazing at this time of year before all the leaves start to appear. All the twisted leafless branches take on a life of their own so it’s well worth a visit. Keep an eye out for the hundreds of fungi species that grow in the forest. Some weird and wonderful shapes certainly exist amongst nature. With so much delightful countryside in Nottinghamshire, you’ll be spoilt for choice. There are paths everywhere, so buy yourself your local OS Map and scout out your own routes. You won’t regret it!

During Vaisakhi, colourful processions called Nagar Kirtans take place around the world. Vaisakhi celebrations are open to all communities. All are welcome to take part in the procession or alternatively, to join the celebrations in the Old Market Square. In line with the Sikh Principles, langar (free food) will be available to all in attendance. For Sikhs, Vaisakhi marks their New Year and commemorates the formation of Khalsa Panth in 1699 by their 10th Guru, Guru Gobind Singh and since then, the Khalsa panth has been a way of life for the Sikhs. REDKANGAROO IS AN EXCITING TRAMPOLINE PARK GROUP WHO BELIEVE EVERYONE IS BORN TO BOUNCE. SO THE IN MAGAZINE CHILDREN WERE KINDLY INVITED TO NOTTINGHAM’S REDKANGAROO FOR A BOUNCY REVIEW! Based in the Blenheim Industrial Estate, Bulwell, you’ll find a converted warehouse that’s RedKangaroo. There is plenty of parking and only a short walk to the nearest bus stop. So it is accessible to everyone! As we walked into reception we were greeted by enthusiastic members of staff who advised us to where to go to check in. At Check in, it was so quick and easy. As we had pre-booked a slot online we knew there was space and they found our details easily. We were then provided special anti-slip socks to bounce, whilst we completed the waiver forms which took literally one minute. We were then called into another room with other families on the same session to watch a safety video. It was very easy for the children to understand and the safety rules were easy to follow. There are three types of bounce sessions to choose from at RedKangaroo; Kanga Bounce – the most popular session. It’s for ages over 4 years with unlimited access to bounce for an hour.

Kanga Tots – a special session for under 5’s, it’s a 2 hour session to help “little Roo’s” learn to bounce, gain confidence and experience the excitement and freedom of trampolining. Kanga Family – the perfect family session if there’s a mix of ages from 2-12 years. So no child misses out on a bouncing experience. We opted for the Kanga Family session, as the children reviewing RedKangaroo were ages 3, 5 and 9. After watching the Safety Video we headed to the trampoline room - wow it was big and loud! There were so many excited faces bouncing around wanting to try everything as quickly as possible. There were plenty of seats in the café areas where parents could observe with a drink.

There’s also free lockers available to store belongings too should the adults want to join in with the children. Once we were settled in the café, we headed in the trampolines. With the 3 year old the adults took it in turns supervising. It’s a little overwhelming with how many trampolines and games there are – including Mega Ninja Course, Tumble Track, Wipeout, three gigantic Foam Pits, Gladiator Beam and so much more! Everly is only 3 and it was her first experience of trampolining and she absolutely loved it! She loved got the hang of it straight away, wanting to bounce on every single trampoline possible. She had so much fun!

Miley is 5 and had some experience, but not to RedKangaroo’s scale and couldn’t stop giggling! “It makes my tummy tickle!” She loved the giant foam pits the most, she tried to bounce as high as she possibly could and landed in the foam cubes.

Luke who’s 9, has been to RedKangaroo before, but loved it just as much as previous times! He loved trying new tricks while bouncing too. “I enjoyed the Dodgeball court and the Gladiator Beam the most, as it’s super cool and a lot of fun!” Before we knew it the hour session was up. Then smiles turned upside down – they didn’t want to leave! “Already? NO! We want to stay!”. RedKangaroo have four party rooms – perfect for hosting birthday parties or special occasions. Luke is already requesting that his next birthday party to be at RedKangaroo! While researching RedKangaroo we discovered group bookings are available, so if you’re a big family this may be an option for you. They even do office parties, so I’ll be mentioning this to the boss! Overall the experience we all had at RedKangaroo was great! The children are already asking when they can go back – and we can’t wait to go back either!

Whatever your age or ability, the staff at the National Ice Centre will teach you all you need to know to get started. Penguins and seals are available for those younger skaters, so you can get the whole family involved.

When the weather starts to improve and the sun starts to shine, head outdoors with the family. Pack up a picnic, put on your walking boots and take to some of Nottinghamshire’s greatest country parks. There’s plenty to choose from: Rufford Abbey, Clumber Park, Wollaton Hall & Deer Park, Newstead Abbey, Holme Pierrepont, Rushcliffe Country Park and many more. Being active and staying fit doesn’t always mean you need to spend hours down at the gym- the key thing is to just get moving! Whether that be indoors or out and about, here are some great ways you can include the family and make health and fitness a priority for everyone:

GO FOR A BIKE RIDE/WALK

The best time is after your evening meal, before it gets dark and you need to put the kids to bed. A nice walk/ride round a few blocks in the area. Set a timer and aim to try and beat your previous recorded time, you could even make it a little more challenging for yourself by giving the smaller ones a piggy back too. 16 | IN Nottingham | April 19

PLAY OUTSIDE IN YOUR BACKYARD/GARDEN

Kick a ball or create games like hide and seek. Climb on things to avoid the ground (that is larva), so in order to move from your spot you must hop on one leg or do cartwheels - yes you will need to bring out that inner child and do the cartwheels too. In no time hearts will be racing and before you know it you have had a great workout.

GO HIKING/EXPLORING

Go on hike trails and explore some beautiful places outdoors. Have you ever tried Geocaching? Great for all ages - it involves an outdoor treasure hunt using an app and GPS on your phone or tablet to hide and find treasure (unique geocaches) around the world. The awesome thing about it is you will stumble across hidden places you would never have thought of right on your doorstep and it’s a fun way to get moving and increase your daily step count.

SET CHALLENGES

Disguise the task with a family challenge including the young ones but also the teenagers too. Although, it may be a challenge in itself to peel them away from their electronic devices. A body weight home workout challenge doing push ups, squats, mountain climbers etc. Set up a score board “how many can you do?’’

DANCE

Have a good dance to some music and put on a mix of everyone’s favourite hits, a surefire way to have a good giggle at some of dad’s bad dance moves, why not include a game and play musical statues?

LET THEM GET INVOLVED IN WHAT YOU ARE DOING

Most kids will want to do what you do, whether that be exercise, cooking or having a good clean at home - let them get involved! It’s about having the right mindset that encourages healthy habits from an early age, but the main thing is you get to spend quality time as a family, stay active and have fun!
