HAPPY DOUGH LUCKY

After months of huge anticipation, Happy Dough Lucky are opening their doors in the heart of The Lace Market. They are open for just 12 weeks, so you’ll have to be quick to catch them… It started with two fellas, a chef and a team of creatives. Their dream was simple, to open a new pop up concept in their home town of Nottingham. For those that have been following the journey of Happy Dough Lucky on Instagram, you will know how far they have gone to ensure that their pizzas & desserts are the best in town. They didn’t just want to follow the crowd & serve frozen, hand stretched pizza. They wanted to do proper Neopolitan pizza & desserts, inspired by the places they have visited. A recent trip to Naples proved to be particularly inspiring with the team given full access to the best Pizza & Dessert restaurants in the world; Sach: “Our trip around Italy was incredible. We were able to meet our new suppliers, see where our tomatoes are grown, learn new techniques from the best chefs in the world & in

the process we’ve made some amazing new friends”. As for the desserts, The Nutella & Ricotta doughnuts served with their homemade salted caramel ice cream (flavours changed daily) and The Chocolate Kinder Pots are particular highlights. So delicious, it’ll make you want to take one or two home with you. The quality of the service & venue is as important as the great food on offer. The team behind the project have been working around the clock getting the venue just right; with new bespoke tables, light boxes & neon signs - adding a Happy Dough Lucky twist to their recently refurbished home, The Lacehouse and with over 1000 applicants to date, they aren’t short of people wanting to join their team. They’ll be indulging you with lots of events during their 12 week stint, with the weekly Sunday Social being the perfect hangover cure for everyone from couples, families and housemates to come down and enjoy unlimited mimosas & Pizzas for just £25pp.

Their monthly Supper Club which includes a three course meal & drinks has already sold more than 25% of their allocation due to their huge social media following & anticipation, “we are totally overwhelmed by everyone’s support & encouragement throughout our journey. THE OVERDRAUGHT

The pub was originally a Westminster bank hence the name. We will have 7 cask lines and 14 keg craft beer lines.

We will sell a variety of beers from breweries around the country and further afield, as well as ones from Totally Brewed. We’ll also sell local cider, and a variety of Wines and Spirits. We’ll have over 100 bottles and cans available for take out. Our new manager Chris Sherratt is an expert in keeping and dispensing beer and we’re very excited to have him on board. Our aim in to serve the best kept, highest quality beers on both cask and keg to the people of Nottingham. We hope to provide a friendly and welcoming environment where people can come to relax, have fun and enjoy some great beer! THE SHOWCASE BRANCH OF NANDO’S IN NOTTINGHAM HAS RECENTLY UNDERGONE A MAJOR REFURBISHMENT AND WE WENT ALONG TO FIND OUT WHAT HAS CHANGED. Upon entering, you could see how much work and attention had gone into the refurb, as inside it looked like a completely different establishment. With new colourful artwork, light fixtures and seating, it looked amazing! Peri-Peri chicken is the main attraction for Nando’s. The range of spices and sauces are incredible and they truly cater for any spice type from a spice novice (like myself) to a spice enthusiast. The Peri-Ometer ranges from a good old plain-ish chicken to a mouth wateringly extra hot Peri kick! The best part is that Nando’s grills everything to order so you can pick and choose exactly what you want to make the perfect meal for you. So let’s get talking about the food we ordered.

We started off by sharing some Spicy Mixed Olives. Considering I like to think of myself as an olive connoisseur, I can honestly say the olives were some of the best I’ve ever tasted. They were both juicy and full of flavour. A definite must-try if you’re an olive lover.

We also decided to have the Lemon and Herb Grilled Chicken Wrap. The wraps at Nando’s are a classic meal and there’s a good reason behind that, they’re utterly scrumptious. The chicken was succulent and sweet and perfectly paired with Coleslaw and Garlic Bread.

THE WRAPS AT NANDO’S ARE A CLASSIC MEAL AND THERE’S A GOOD REASON BEHIND THAT, THEY’RE UTTERLY SCRUMPTIOUS.

I know this is a bold statement, but Nando’s Garlic Bread is the best garlic bread we’ve ever tasted and its yet to be beaten anywhere else!

Being a little scared of spice myself, I went for the Mango & Lime seasoning on my Chicken Butterfly. If you too are a little apprehensive of spice, I would 100% recommend this seasoning as it is the perfect concoction of sweet and spice. To compliment the Peri-Peri Chicken Butterfly, I ordered Creamy Mash and Macho Peas. A must have on any of my visits to Nando’s. The Creamy Mash is self-explanatory and tasted wonderful, but it’s the Macho Peas that are truly revolutionary. Whole peas drenched in pea mash, parsley, mint and chilli… need I say more.

Our Nando’s lunch was a success! If you’re reading this and you’ve never visited Nando’s before, hopefully this will change your mind and convince you to enter the Peri-Peri world of Nando’s.

IF YOU COULD CHANGE ONE THING IN THE WORLD, WHAT WOULD IT BE?

IGNORANCE MANIFESTS ITSELF IN EVERY COUNTRY. YOU WOULD BE FORGIVEN FOR THINKING THIS IS NEITHER WORTH YOUR TIME, NOR ANY NOTICE, YET MAYBE, IF MORE PEOPLE BEGAN TO EXPAND THEIR CONSCIOUSNESS ON THIS URGENT CRISIS OF IGNORANCE, INCREASING ACTION COULD BE TAKEN TO ELIMINATE IT. Xenophobia, racism, ableism. All of these, and many more, could be dramatically improved in society with the absence of ignorance. Education is vital for the running of society; education, and empathy. Social ignorance adds to the escalation of political ignorance too. When talking to a person who moans about the state of the country it’s easy to see how successful media, especially social media, has been in exploiting the naivety of a person lacking in the understanding of economy, politics and social policy. Of course, people are entitled to their own personal beliefs – we live in a democracy after all – yet the online bullying disguised as debate has such power of persuasion that people can form an opinion without understanding it. Harlan Ellison said “you’re not entitled to your opinion. You are entitled to your informed opinion. No one is entitled to be ignorant.” Whilst maybe a bit extreme, the point rings true: people have a duty to educate themselves. So, next time someone says ‘ignorance is bliss’, correct them. Ignorance is voluntary stupidity: the afflicted consciously chooses a semi-aware existence, never understanding the intricacies of the world around them. Choosing to remove this blindfold, an individual can change the world.

AS SOON AS I HEARD THAT QUESTION IDEAS BEGAN POPPING INTO MY HEAD, EACH MORE CLICHÉD AND UNREALISTIC THAN THE ONE BEFORE IT. CRUSH CANCER. TERMINATE TERRORISM. WAVE GOODBYE TO WORLD HUNGER… The possibilities are endless (clichéd, I know) but if we were truly given the power to solve any one of these problems forever, we would. Yet what is the use in having the power to change the world if we have no world to live in? Global warming is not a problem for future generations: it is a problem now. President Hollande encapsulated the urgency quite simply – “We have a single mission: to protect and hand on the planet to the next generation”. If the (countless) projections of climate change experts are correct, we could be the last generation to have the power to reduce the worst impacts of global warming. Yes, the solution is not as easy as a simple click of our fingers to make it disappear; we need a sustainable solution so that future generations do not face the same threat to their earth as we do today. Creating a form of energy, which uses CO2 as a fuel, would not only dispense of our surplus of the gas that is polluting our atmosphere and causing higher temperatures year on year but also give us an unlimited source of energy. This would, realistically, effectively end the majority of global warming for generations to come and allow us to provide the whole world with infinite energy to combat all those other problems…

CHANGE. A SIMPLE WORD WITH A COMPLEX MEANING. HUMANS HAVE A LOVE-HATE RELATIONSHIP WITH THE IDEA OF CHANGE. Our brains are wired to repeat the same actions over and over, regardless if that particular exercise is actually worth the time and the effort in the long run. It can be quite challenging to undertake the experience of change but the positive consequences are certain to have a monumental outcome. Women’s rights, gender equality and racial discrimination. These are just three amongst many other mainstream, core issues that people living around the world wish to see dealt with. They are all complex matters that require exceedingly large amounts of attention, time and money – things which are desired by many, obtained by few. So, why not start simply? Instead of making change, start being change. Start by looking at your attitude towards change and the way you perceive certain issues related to it. Focus, in depth, on what you wish to change about yourself as opposed to devoting all your energy to pointless attempts at trying to manipulate the lives of others. We must learn to view life from a different perspective and serve as an example to clear the way for others intending to follow our actions. Inspire, influence, impel. I wish to change people’s understanding of change and how they go about it in their daily lives. As famously quoted by Gandhi, “You must be the change you wish to see in the world.” So, what are you waiting for?

BAKED MAC AND CHEESE THIS IS THE ULTIMATE COMFORT FOOD DISH MY BAKED MAC AND CHEESE RECIPE HAS DELICIOUS FILLINGS LIKE BACON AND BREAD CRUMBS AND IT’S MADE WITH NO EGG.

1. Place a saucepan over a low heat on the stove. Add the butter and leave to melt.

2. Add the flour and stir to make a roux. 3. Pour in the milk. Remaining over a low heat stir continuously (approx. 10 minutes) until the sauce thickens.

4. Meanwhile, cook the macaroni pasta according to the instructions on the packet.

5. When the sauce has thickened, add half the cheese, nutmeg and mustard. Stir until the cheese has melted. Then set aside.

LOVEABLE LIPS IT’S THAT TIME OF THE YEAR WHERE EVERYONE IS ALL LOVED UP! REGARDLESS WHETHER YOU’RE SINGLE OR NOT, YOU SHOULD STILL LOVE YOUR LIPS! THERE’S NOTHING WORSE THAN CHAPPED LIPS WITH LIPPY ON, NEVER MIND KISSING THEM... PREP It’s key to make sure your lips are in top condition, otherwise your lippy is not going to last at all and will just look awful. Firstly you need to get rid of the dead skin on them puckers, I recommend The Body Shop Lipscuff, It gently exfoliates away dead skin cells, leaving you lips softer, plumper and moisturised. Follow with your favourite lip balm, as your lips can never get enough moisture.

TOP TIP: Do this before you start the rest of your makeup, to give your lips a chance to absorb that moisture! LIQUID MATTE LIPSTICKS These are a new type of lipstick that’s definitely here to stay. They look smooth and glossy on application, but they’re designed to dry down to a matte stain finish, which means they’re typically long lasting and do not budge. Despite it being a matte formula it looks and feels creamy, yet it stays put! The shade is an intense red, with a blue undertone, very Marilyn Monroe! Urban Decay’s ‘Vice’ Comfort Matte Lipstick’s have amazing pigmentation with creamy formula and are perfectly matte! The shade Afterdark, is a dark berry pink, it’s stunning!

The Body Shop, Rimmel Exaggerate and Essence Long Lasting Lip Liners, are some of the best that I’ve tried and they’re really budget friendly!

TOP TIP: Fill in your entire lip, not just the outline. If you want to adjust the shade of you lipstick, put a darker or lighter lip pencil shade underneath. To give your lips some dimension you could use a darker lip pencil in the corners of your mouth and blend. Or you could just where the lip liner on it’s own. Happy Valentines! xXx

SOPHIE SET TO REALISE LIFE-LONG DREAM

MANY OF US DREAM OF SCORING THE WINNING GOAL FOR OUR COUNTRY IN THE WORLD CUP FINAL, THE CRUCIAL GAME-WINNING TRY, OR PERHAPS HAVING AN OLYMPIC GOLD MEDAL AROUND OUR NECK AND IT WILL ALWAYS REMAIN JUST A DREAM FOR MOST, BUT ONE TRIATHLETE FROM KEYWORTH IS RIGHT ON THE TRACK TO REALISING A LIFE-LONG AMBITION. Brothers Alistair Brownlee and Jonny Brownlee are two of the best-known names in the world of triathlon. Both have won medals at the Olympics, indeed Alistair is a two-time gold medallist while Jonny has won a silver and a bronze at the last two Olympic Games. And now, 22-year-old Sophie Coldwell is on the path to follow in their footsteps and, who knows, could soon become talked about in the same circles as one of the most famous brother combinations in UK sport. Sophie has taken massive step to a dream she has had since she was a child and will represent Team England at the Commonwealth Games, which 16 | IN Nottingham | February 18

is being held on the Gold Coast, Queensland, Australia in April.

The former South Wolds Academy pupil, who is originally from Gravesend in Kent, moved to the area at the age of five and has had the triathlon bug for as long as she can remember.

“I do recall that I could barely swim at the time, so was pleasantly surprised to have won. It felt like the best thing ever.”

Describing herself as an active child, Sophie had her first taste of success after her mum entered her into an event at Clifton Leisure Centre when she was aged eight. She explained: “Mum saw an advert for the event in Clifton and entered me. From what I remember

Sophie subsequently raced in events up and down the country, which eventually lead her on to the Olympic Talent Squad and onto the World Class Programme at the age of only 17 Many of us like to run, or perhaps cycle, while some of us prefer to swim to keep fit, but being a triathlete means you have to excel in all the areas.


With most of the events taking place in the summer, a lot of training is done in the winter and, as Sophie explains, you have to be focused to achieve your goals. “You have to make sure your training is consistent from week to week,” she said. “You need some recovery periods but with fewer races over the winter, it is a great time to put back to back weeks of training together.

“I’M ABSOLUTELY OVER THE MOON TO HAVE BEEN SELECTED” “I find that one key to the winter is to make sure you enjoy the training you are doing. It’s a long time before the fun of racing begins again, so if you aren’t enjoying the training you aren’t going to be very motivated.” Last year was huge for Sophie with her first global medal, a bronze in the U23 event at the ITU World Championships in Rotterdam. She also secured fourth place finish on the ITU World Triathlon Series in Yokohama.

“IT WAS ONE OF THOSE SURREAL MOMENTS WHERE I HAD TO RE-READ THE EMAIL SEVERAL TIMES BEFORE I COULD ACCEPT THAT I WAS ON MY TO AUSTRALIA TO REPRESENT MY COUNTRY. who joins an elite band of athletes in representing their country. “I’m absolutely over the moon to have been selected,” she said. “When the email came through with the news, I honestly expected it to say that I hadn’t made it. “It was one of those surreal moments where I had to re-read the email several times before I could accept that I was on my way to Australia to represent my country. “After many years of competing in triathlons, it got to the stage where I was performing consistently well. It was at this point that my coach suggested that the Commonwealth Games was a very realistic target.

This was enough to secure selection for the Commonwealth Games and she also won senior ETU European Championship silver.

“From that point on, I didn’t really put any huge pressure on myself. I just concentrated on performing to the best of my ability. I knew that I’d put in a good year, but never truly expected to be selected.

It seems that all those days of training on dark winter mornings have paid off in spades for Sophie,

looking forward to coming out with me to lend her support and soak up the atmosphere of such a big event.” One of the biggest events in Nottingham last year was the British Triathlon Mixed Relay Cup, held on the banks of the River Trent, and Sophie took the silver medal in the inaugural event, something that will live in her memory for a long time. “You had the technical bit on the bike, the swim and the run over Trent Bridge and back across, that was literally amazing and crowds lined the route the whole way. Nottingham’s my home – it was incredible. To bring triathlon here was just brilliant.” The 2018 Commonwealth Games will be held on the Gold Coast from 4th to 15th April 2018.

KATE’S LOVE FOR DESIGNING INTERIORS SIT TING DOWN AND ADMIRING INTERIORS DESIGNED IMPECCABLE SHOWROOM AND STUDIO, KATE STEPHENSON, THE OWNER AND INTERIOR DESIGNER, SHOWED ME ONE OF THE PROJECTS SHE WAS CURRENTLY WORKING ON . A design board showcasing different images, fabrics, paints, wallcoverings and examples of room layout. Kate would soon be showing the board to her client, following their initial consultation meeting. This particular client was interested in Interiors Designed unique selling point, an Interior Design Service for just £89 per room! If I’m being honest, I always thought that to hire an interior designer it would be quite pricey. However, it seems this is not the case here. background in sales and marketing, but a flair for interior design, Kate took a leap of faith in herself and went back to learning and enrolled at the National Design Academy where she later qualified as a Level 3 Professional Interior Designer. Interiors Designed started in Kate’s office at her home. There she would handle and deal with all the business coming through, until she got to that great part that any entrepreneur is waiting for, where she needed some administrative support, and a bigger space.

Whilst arriving at her regular hair appointment at TopKnot, she came across the perfect premises where she could expand her business. Visualising exactly how it would look within seconds, Kate knew it was fate and by the end of the week she had the keys to her shiny new showroom and studio. Once her new business space was ready, it was time for Kate to hire her first member of staff. Jo, also a working Mum and a very well trusted friend

Layer up different fabrics with cushions and throws – this can really help to bring warmth and personality into a room”.
