SLUG AND LETTUCE

Derby’s Slug and Lettuce has recently undergone a huge £320,000 refurbishment, creating a brand new fresh look for the restaurant. The new look now contains brand new seating areas, new garden, and a brand new separate cocktail master-class bar!

Since they reopened on the 4th March 2018, Slug and Lettuce have received nothing but great and positive feedback from both their regular and new customers on the new look and feel of their venue.

Louise Williams, General Manager, has done a great job of the reopening of the venue, with recruiting around 15 new staff members and training them to a high standard. ESTABLISHED FOR ALMOST 7 YEARS, MULTI AWARD WINNING HAVELI RESTAURANT, LOCATED IN CHILWELL, OFFER AN EXPERIENCE OF TRADITIONAL AND FRESH INDIAN FOOD. We were warmly greeted by staff dressed in traditional Indian clothing. As we were shown to our seats, I noticed every table was dressed and set ready for other guests and napkins created to look like swans – lovely detail. The rest of the décor was very warm and cosy, with large canvases of beautiful Indian women dressed in Saris.

After ordering drinks, one of the directors invited us to meet the chefs. All of them had worked all over the world in top establishments and have been at Haveli from the beginning. They told us that they specialise in 5 sauce bases, which are freshly made on a daily basis. The chefs continued to tell us about the quality of their Lamb and Lamb Shanks and how they always slow cook them for 4–5 hours to achieve the perfect tenderness. Out of 13 starter dishes, we opted for the Tandoori Lamb Chops and Tandoori Chicken Tikka, which were beautifully presented. The Tandoori Lamb Chops were tender and perfectly crispy, coated in a balanced spicy marinade. The Tandoori Chicken Tikka pieces, had a lovely kick of spice and melted in the mouth.

HAVELI

While waiting for the main courses, a passion fruit sorbet was served to cleanse our palettes. With over 18 dishes to choose from, we chose Murgh Makhani and Desi Lamb. The presentation was perfect.

DURING OUR DINNER WE WERE PRESENTED WITH 3 NON-ALCOHOLIC COCKTAILS; STRAWBERRY DAIQUIRI, MOJITO AND PASSION FRUIT MARTINI. THEY TASTED AS GOOD AS THEY LOOKED!


The Murgh Makhani had tender chicken pieces in a creamy tomato sauce, which was aromatic and mouth-watering. The Desi Lamb, had good amount of spice in its sauce and the lamb was really juicy and full of flavour. We were told that The Desi Lamb was originally an old rural dish from Northern India and was traditionally made in a clay pot. Alongside these we were served pilau rice, which was fluffy with lovely seasoning and a plain naan bread. The dishes tasted amazing and reminded me of when I was travelling back in India – absolutely beautiful. During our dinner we were presented with 3 nonalcoholic cocktails; Strawberry Daiquiri, Mojito and Passion Fruit Martini. They tasted as good as they looked! By the end of our main courses we were satisfyingly full. However, the staff persuaded us to try two desserts, we just couldn’t resist.

THE DISHES TASTED AMAZING AND REMINDED ME OF WHEN I WAS TRAVELLING BACK IN INDIA – ABSOLUTELY BEAUTIFUL. We had a Gulab Jamum, which is a very traditional Indian dessert and served warm with a small scoop of vanilla ice cream. It was light, with cake sponge texture and beautifully sweet, just delicious. We also had a Malteser Cheesecake, of course this isn’t a traditional Indian dessert, but it was very chocolatey with a lovely biscuit base. Haveli go the extra mile to make sure you feel extraordinary special and welcome. I’ve visited Haveli before with my husband, a few years ago. I had mentioned to the staff after our main courses, that it was his birthday.

What happened next was beyond our expectation. Three members of staff performed a traditional Indian song to my husband. He then was treated with a small birthday cake, which was beautifully decorated and presented with a candle on the top. This was a wondeful surpise and completely complementary! Haveli are a modern restaurant, with traditional values, who pay attention to detail and make sure that their customers are looked after. They’ve also partnered with some local charities, and organise charity dinner events and support other charities in many other ways too. If you’re wanting to experience beautiful Indian cuisine, with a warm and traditional atmosphere, then I would recommend heading to Haveli Restaurant in Chilwell.

VEGETABLE PASTA & WHITE SAUCE

IF YOU’RE LOOKING FOR AN ITALIAN DISH THAT’S GREAT FOR KIDS, MY EASY WHITE SAUCE PASTA RECIPE IS THE PERFECT CHOICE. IT HAS A FUSION OF FLAVOURS AND CAN BE MADE WITH BACON, CHICKEN OR BOTH. 1. Slice the mushrooms and chop the pepper, broccoli and bacon. 2. Fry in a large saucepan for 5-10 minutes (until the juices from the

mushrooms have nearly evaporated).

3. Set these ingredients aside in a bowl. Then return the pan to the stove over a low heat. 4. Add the butter and flour and mix together to make a roux. 5. Pour in the milk and nutmeg then stir continuously for approx. 10 minutes

until the sauce has thickened.

6. Meanwhile, cook the pasta according to the instructions on the packet. 7. When you’re happy with the thickness of the white sauce, season with

MY SERIOUSLY TASTY STRAWBERRY BANANA SMOOTHIE RECIPE IS EASY TO PREPARE AND CAN BE QUICKLY BLITZED UP IN A BLENDER OR NUTRIBULLET. 1. Add all the ingredients to a blender or

personal blender.

2. Blitz for approx. 1 minute, or until the

smoothie is nice and smooth. Add a dash of water if it’s too thick.

With fitness and being healthy you need to be drinking plenty of water daily, but for some it’s hard remembering to drink water. I once did until I got myself a water bottle from Hydratem8. These have times marked on the bottle to help you remember and you’ll be surprised how easy it becomes to drink more water. The year Beatlemania was born, the Profumo affair scandalised Britain and preceded the resignation of Harold Macmillan, Ronnie Biggs, Buster Edwards and co snatched £2.6m cash from the London to Glasgow mail train, the ‘Britain in Bloom’ campaign began, the US trounced ‘Great Britain’ 23-9 in the Ryder Cup and Cliff Richard and the Shadows took off on a jaunt across Europe in a Routemaster bus in the film ‘Summer Holiday’.

Mark Neville’s Battle Against Stigma project aims to challenge the stigma of mental health problems in the military and to encourage attitude change.

The film is now a feel-good stage musical in Michael Gyngell and Mark Haddigan’s adaptation, with Don and his fellow London Transport bus mechanics journeying through Paris, the Alps, Italy and then Greece. This exhibition and book contains a re-telling of Neville’s own personal experience when he was sent out to Helmand in 2011 as an official war artist, and combines his photographs, films, and texts as a means to give some insight into the issue of adjustment disorder which he found he had fallen victim to on his return. The Battle Against Stigma exhibition at QUAD will connect with veterans, artists, academics, charities and policy makers in order unite the different sectors of society necessary to drive the campaign for improved mental healthcare for service personnel.

KEEPING MOTIVATED LOOKING FOR ADVICE ON HOW TO GET INTO FITNESS OR LOST MOTIVATION? WE ASKED PERSONAL TRAINER; JOE BYRNE, SOME QUESTIONS ABOUT FITNESS AND HE GAVE SOME GREAT TIPS AND ADVICE! HOW DO YOU KEEP YOURSELF MOTIVATED? My main motivation is to progress and better my self every day, whether that is hitting my own goals that I’ve set out to achieve or helping others fulfill their potential.

WHERE TO START TO GET INTO FITNESS? First of all you must of have a plan of action before setting off in the fitness world. Set your self a target that is achievable, some can be really simple, for examply; going to the gym 3 times a week or going out running 3 times a week.

The plan is always to better yourself after your targets have been met which will give you more confidence to do even more challenging battles such as 10k run or a half marathon.

IS IT IMPORTANT TO SPEAK/ TRAIN WITH A PT AND WHY? It can be quite important to sit down with a PT to get information. A PT can give you a lot of confidence and build up your self esteem helping you train, set goals to ultimately achieve them, so you are able to have the confidence to do it yourself.

3 MOTIVATIONAL TIPS: •Train harder than yesterday. •Never skip a Monday. •Believe in yourself. WHY DID YOU GET INTO FITNESS AND BECOME A PT? One of my reasons why I got into fitness and became a PT, was like any teenager - to get stronger and look better which I’m still continuing today.

However, my main reason is to help others and make people happy in themselves. I lost two of my best friends through mental health reasons back in 2012.

This gave me so much motivation and drive to help others. To help them realise that they can do better, they can progress and be happy.

Knowing what you will eat each day, will help you stick to your own personal diet.

•Always change your routine whether that is cardio, resistance or free weight work which keeps you on own your toes and motivated. •Record your results and information, for results can be something such as hitting a personal best and information can be loosing or gaining weight depending or your goals.

WE SPOKE TO QUINTIN, WHO’S A PERSONAL TRAINER FOR DAVID LLOYD’S AND A STAGE SHOW COMPETITOR, ABOUT THE CURRENT TRENDS WITHIN THE FITNESS INDUSTRY, ALONG WITH SOME ADVICE AND TIPS. HERE’S WHAT HE TOLD US...

The current trends within the fitness industry are the most effective and don’t take hours out of your day. I’ll be the first to say I have fallen into the trap of becoming lazy and inactive. But I turned that around after realising that we in the UK are among the top 10 countries facing obesity in both adults and children. With 66% of men and 52% of women being overweight.

For some, the idea of going to a gym can be daunting and are often left feeling clueless on what to do. This is where HIIT (High intensity interval training) comes in. It’s short, fast and intense while all of can be done at home or your local park.

FEW EXAMPLES TO TRY: • Cardio:

SOME OF THE BENEFITS THAT COME AFTER A FEW WEEKS OF HIIT: • Burn a lot of calories in a short amount of time • Metabolic rate is increased even after exercise • Helps you lose fat • Increased oxygen consumption • Can reduce heart rate and blood pressure • Blood sugar levels can be reduced.

• All round workout Squats x20 Lunges x20 Burpees x10 Press ups x10 Crunches x10-20 Plank 1minute Repeat 3 times having 20 seconds rest between exercises.

The idea behind this form of training is to have short bursts of intense exercise alternated with recovery periods, taking roughly 30 minutes to complete, making it ideal if you’re limited for time. A quick example would be 7-9 different workouts using the whole body, 30-40 seconds of intense work followed by 20 seconds rest repeating this 2-3 times. Now there are many ways and methods for HIIT training. To start with keep it simple and consistent.

Using a stationary bike, pedal as fast as you can for 30 seconds. Then pedal at a slow steady pace for 2-4 minutes. Repeat this pattern for 15-30 minutes.

As you can see it’s easily done at home or you’re local park. That’s the joys of HIIT, any place anytime! As a summary, HIIT is great fun, short and effective with a string of health benefits linked to it. Give it a try and see how quick you’ll see the changes.

If the weather doesn’t make you feel less motivated, then I’m pretty sure that something will have gotten in the way and maybe life’s bogged you down. It’s important to remember that nothing blooms all year so don’t expect yourself to. However, it’s finally spring and the perfect time to re-energise yourself and take back control. Here’s my top tips to energise yourself and put a spring in your step.

This will also have a knock on effect to your mood at the end of the day as you have been productive.

REGULAR EXERCISE

Find something you actually enjoy doing, for me it’s walking. Yes I love the gym and weight training. However, I’m not always motivated or in the mood to do that, but walking is something I can fit into my day even when I’m busy. Remember exercise shouldn’t feel like a chore, it should be something that you look forward to, this way you will keep it for life.

EAT WHOLESOME, DELICIOUS, IN SEASON PRODUCE

Food always tastes better when it’s in season and you’ll always feel better when you fuel yourself with a nutritious and delicious meal. Why not give yourself the challenge of cooking one new recipe every 1-2 weeks using foods that are season. Rhubarb is currently in season, why not experiment and make yourself a healthier dessert.

HAVE A SPRING CLEAN

I’m talking de-clutter everything, your wardrobe, your fridge, your desk, your car, your social media, your mind and your life. Remove anything that brings your negative thoughts and feelings.

SUSHIMANIA SUSHIMANIA IS NOTTINGHAM’S NEW SUSHI RESTAURANT THAT OFFERS MUCH MORE THAN JUST FISH. The ever-expanding restaurant has added Nottingham to its already existing branches totalling 8 restaurants now across the UK with other restaurants in places such as London, Oxford, Brighton, Reading and Edgware.

Speaking with the owners, it was very clear she wouldn’t serve anything they wouldn’t want to eat themselves. With the fish being sent from London to ensure the highest of quality, you’ll be surprised how amazingly fresh the food tastes. When we arrived, we were greeted with friendly smiles and were directed straight to our seats. The first thing we noticed was how beautiful the décor was. With huge traditional umbrellas hung from the ceiling, cultural framed artwork and oriental storage caddies, it creates the perfect authentic eating environment.

With Cambridge in planning, there’s a reason for Sushimania’s exciting expansions and that’s because of the authentic experience, fresh ingredients and exceptional tasting foods.

Now comes the exciting part of trying their food. With a huge selection on offer we decided to ask the chef to send out a mixture of the best dishes, catering for a few vegetarian options as well.

Sushimania offers a vast variety of food which caters for all, even you vegetarians out there. With offers of all you can eat for £16.80 per person, loyalty points on every online order and ½ price of lunchtime and after 10pm, you are sure to enjoy a delightful meal.

The first dish to come out was the Spicy Dragon Rolls and what a way to start. The tempura prawn, avocado and cucumber encased with white rice and salmon sashimi drizzled with spicy mayonnaise was unbelievable.

The fresh soft texture of the fish, vegetables and rice against the kick from the spicy mayonnaise created the perfect concoction. Afterwards came the Tempura Moriawase. This was a mixture of battered king prawns, fish and vegetables. The prawns were extremely fresh and paired with the light crispy batter they created some of the best prawns we’ve ever tasted. Having never tried battered vegetables, we were pleasantly surprised at how tasty they were. With our taste buds eager for more, they brought out 5 pieces of Gyoza: Fried Chicken Dumplings. Wow! As a meat alternative for sushi these were delicious.

THE FRESH SOFT TEXTURE OF THE FISH, VEGETABLES AND RICE AGAINST THE KICK FROM THE SPICY MAYONNAISE CREATED THE PERFECT CONCOCTION


They were the perfect amount of meat that was very light, full of flavour and beautifully wrapped. Following, came a couple of raw fish dishes and one of them was called Nami Shashimi. First thing we noticed was how bright and beautifully presented this dish was. With mixtures of raw salmon, tuna and seabass, this dish is a definite must try for any sushi lover. Accompanying this dish was 5 pieces of Salmon Tataki. With the salmon briefly cooked just to seal the outside but left raw in the middle, it created such a beautiful taste and texture and against the kick of the ponzu dressing, the salmon tasted incredible. Next came a vegetarian dish: Tofu Salad. As far as tofu goes, this was some of the best tofu we’ve tasted and paired with the mixed salad and homemade dressing, it was heavenly. As if we hadn’t of had enough food already, the waitresses kept bringing out more. Dynamite Spider Roll was the next delicious dish we tried. With soft shell crab, cucumber, pickles and egg wrapped in white rice, seaweed and spicy mayonnaise, they were amazing. The colours, texture and taste were the perfect concoction and all 4 of the rolls were instantly gone.

FRIED CHICKEN DUMPLINGS. WOW! AS A MEAT ALTERNATIVE FOR SUSHI THESE WERE DELICIOUS. THEY WERE THE PERFECT AMOUNT OF MEAT THAT WAS VERY LIGHT, FULL OF FLAVOUR AND BEAUTIFULLY WRAPPED. Alongside this came another dish called Salmon Teriyaki and we were blown away with the flavours. Who knew grilled salmon could taste so wonderful dressed in a teriyaki sauce with mixed vegetables! After thinking we couldn’t possibly eat any more food, the owner Kim came over to tell us we had to try their version of their Chicken Katsu Curry. We were not disappointed. The breaded chicken against the mild curry sauce was delicious and a recommendation to all if you fancy an alternative dish to raw fish.

One thing that was made very clear during our Sushimania experience was that the food and customers were their top priority. The attention to details with the food presentation and flavours is incredible, making it look too good to eat. Also, if you had any doubt with the menu, the staff were more than happy to explain and help you pick the perfect dishes for yourself. So, as you can see, our Sushimania experience was incredible and the next time you’re out and about in or visiting Nottingham, we highly recommend Sushimania located within the Chapel Bar area of the city.

YOU, YOUR HOME AND COLOUR THERE’S A REASON WE ALL LOVE A RAINBOW – RIGHT? AND, ALTHOUGH IT COULD BE THE PROMISE OF THE POT OF GOLD AT THE END OF IT, I STILL THINK IT’S THE COLOURS THAT PROVOKE THE EMOTION . Psychologists have studied colours and their influence on our mood, productivity and creativity. Understanding some of the results help to recognise how to use colour effectively in our homes. Some colour choices are obvious. The femininity of pinks, the bright happy hue of yellow, whilst greens are often used to create a tranquil, peaceful environment. Neutral colour schemes are currently very popular and grey is a backdrop which still features widely on the high street right now. Grey is a mature, self sufficient colour, but used alone, it can be perceived as dull.

By lifting grey with something a little more lighthearted like the blush buttons on these curtains, it creates a softness and gives more depth and detail. A tool I use a lot when thinking about where to begin with a room is a colour wheel. You’ll find them on Amazon and other online sites for around £3. To work a colour scheme successfully there are a few general guidelines that can help. Complementary colour schemes are created by using colours which sit opposite each other on the colour wheel. They’re opposite because they balance each other. Have you ever walked into a room and thought ’wow!’ But couldn’t put your finger on what it was? It may be down to the clever combinations of colours and tones. The cool blue velvet on this sofa is a great example as it really pops against the warmth of the orange walls. This is why the two work together and provide a striking pairing. Another use of colour theory is to harmonise colours together. Use the same tone, or strength of colours and once again, a balanced scheme will be produced.

Pastels are particularly good when using this method as the tones are so gentle that lots of colours can be used together as none of them are overly dominant. And then of course, there is the very dominant black. It symbolises security, glamour and sophistication. As with all the colour advice, success is about balance and if you’d like to introduce black into a room consider how you might best use it. A trim on cushions or a border on curtains can create an elegant ‘boutique’ feel. Team it with gold and it becomes quite regal. Pattern and texture are also important to black to ensure that it doesn’t look too flat or cold.
