Fresh, Sustainable Seafood DINING

At The Land and Water Co. By: Tammy Marx and Dawn-Renée Rice Pay a visit to Carlsbad Village and you can’t help but notice the historic, blue-shingled dream house which is home to The Land & Water Co., recent recipient of the 2016 Best of Carlsbad Award for Best Restaurant. Step inside this quaint local gem and discover spacious, patio dining with incredible sunset views, intimate tables, and chic pub-style seating with a French izakaya influence. An educated cast of talented staff passionately stand by Chef Rob Ruiz, who recently won global acclaim as winner of The Ocean Awards 2016 and named Restaurateur/Chef 2016. This award recognizes Chef Rob’s campaign to conserve the endangered vaquita porpoise in the Gulf of California and to promote the use of shrimp caught without the use of entangling gillnets. When we sat down to speak with Chef Rob, we discovered he is not only a consciously aware chef and conservation advocate, he’s also a forward-thinking inventor. He created edible QR (quick response) codes printed on rice paper that serve to inform and educate consumers. Scanning the QR code on your phone takes you to FishWatch.gov, which tells you where your fish is from and how it was caught. It’s an educational journey that truly makes us start thinking about our impact on this planet and how we all have a part to play. The talented crew at The Land & Water Co. work tirelessly each season to create a menu that has something for everyone, from Tastes (smaller plates) to Eats (larger plates). One of our favorites on the Tastes menu are the Duck Steam Buns, created by Chef Brandon Nichols from the Hot Side of The Land & Water Co., which are filled with a savory duck confit and topped with housepickled vegetables, an orange-chili glaze, cilantro and mint. You’ll also find delicious options such as succulent short rib with risotto, to the most delectable yellow tail sashimi, where you taste every flavorful layer of perfectly complementing ingredients. You can dine off the full menu, but the real treat is sitting at the sushi bar and watching Chef Rob and his crew make fresh, artistically creative rolls, nigiri, and sashimi dishes using only the finest ingredients. Chef Rob utilizes fresh wasabi from Oregon

and grates the fragrant stems on an oroshigane — a Japanese wooden grater covered in sharkskin, allowing the cellular structure of the wasabi to remain intact. The plant’s spicy, heart-shaped leaves are featured in some of his mouthwatering creations like uni (sea urchin) with delicately sliced avocado flash fried to a delicate crisp. Each piece of velvety fish comes from a sustainable, traceable source. A must-try menu item is the Nori Seared King Salmon (pictured), or the exquisite oysters swirled in decadent brown butter and served on the half shell. Complement your meal with a refined selection of sake or an amazing hand-crafted cocktail like the refreshing and citrusy Carlsbad Sunset. Whatever your taste and hunger level there’s something delectable here for everyone. You will find a truly local farm-to-table treasure featuring cuisine with a conscience and a Southern California meal unlike any you’ve ever tasted at The Land & Water Co. landandwaterco.com, 760.729.5263 Editor’s Note: The menu is seasonal and subject to change. Reservations are recommended. Find out more about this award-winning restaurant and Chef Rob Ruiz at www.landandwaterco.com.

BEERS & BREWS

TH E R I SE O F R E S I DE N T B RE WING COMPANY By: Marci Pascua If you head downtown to The Local Eatery and Drinking hole, you’ll notice Resident Brewing Company, one of San Diego’s newest breweries, which has taken up residence alongside the restaurant after a recent and extensive renovation. At first impression, you might see the vast selection of beer taps at the first bar, but I guess that’s what anyone would notice when you walk into a brewery. For me, the first thing I noticed was the large crowd that filled this place to the brim and all of the smiling faces. It’s the kind of place where you feel comfortable enough to chat with the table next to you to ask what beer they are drinking or banter about the latest game flashing up on the televisions. Nestled in the back of the restaurant is the Resident Brewery tasting bar, where beers rotate on a consistent basis and you can taste the newest brew on tap. I had the pleasure of learning more about the brewery from one of its many owners, James Langley, whose brother-in-law, Rob Masterson, is a well-known home (and now) commercial brewer in the community, having created several award-winning brews, most notably the Coconut IPA. This IPA won first place at the Stone Brewing Company Homebrewers competition in 2013 and will soon be flowing at Resident Brewing Company, but under a different name. Every beer is brewed with the highest quality ingredients and the most technically advanced brewing system money can buy. Believe me, I’ve seen it. They’ve even installed a crane to lower beer kegs into underground storage through a perfectly sized hole in the ground. But what makes this brewery top notch is the love and care that goes into every drop. The partners of Resident Brewing Company love beer and it shows. They brought this brewery to life because they felt a responsibility to give back to their community and there was no better place to begin this adventure. Resident Brewing Company is not on the fast track to distributing bottles just yet, so if you want to try out their beers, you’ve got to come down to their family owned eateries for a taste of a Resident brew: The Local Eatery and Drinking Hole, The Local Pacific Beach, and Wonderland Ocean Pub. Coming soon, they will also be serving growlers from their downtown hub. However, to truly experience the culture, cruise in to their downtown location, take a seat at their tasting bar and sip your way into euphoria at Resident Brewing Company. thelocalsandiego.com, 619.231.4447

SHOPPING

To Market, To Market By: Tammy Marx San Diego is known for sandy beaches, serious surf and sunny weather. One of the benefits to a gorgeous and relatively stable climate is a year-round growing season for local San Diego farmers. Food fans flock to weekly community farmers markets where farmers are eager to share their harvest with even the most discerning fruit squeezers. Rows of colorful tents can be seen stretching for miles in a cornucopia of local honey, organic baked breads, pastries, meats, cheeses, eggs, handmade crafts, jarred jellies and jams, street fair food trucks and of course, fresh, organic produce. Local craft artists and musicians pepper the markets adding to the charming feel of a community bazaar.

Little Italy, located in the heart of downtown San Diego, offers one of the largest farmers markets stretching in one long, flowing ribbon from street to sea. One of the major features of this community market are the delightful eateries dotted along the street, nestled below gleaming sky scrapers. One such eatery is the New Zealand pub Queenstown Public House, located on the corner of Columbia Street. This is the place where locals brunch before they bargain. Café tables punctuate the courtyard beneath shady trees leading into a cozy, house-style eatery where you can kick off your day with a playfully paired peach basil Bellini and order quirky named dishes such as “oink” and “cure” from their menu. A housemade favorite is the Elvis, a crispy waffle loaded with an explosion of mouthwatering banana, peanut butter, maple syrup and bacon.

With more than 40 farmers markets in San Diego, there is a fresh, local market waiting for you no matter what day you are visiting! You will discover incredible edibles, a gorgeous array of gifts made by local artisans, plus luxurious candles, soaps, lotions and creams, beautiful jewelry, unique clothing and much more. The artists know they have many outof-town visitors and are incredibly accommodating at packaging gifts to travel by plane or take home with you.

For the consummate coffee consumer, Bump Coffee, featured at both Little Italy’s and La Jolla’s farmers markets, is the perfect cup of Joe for a Saturday market stroll. The coffee lovers at Bump roast all their organically sourced beans here in SD. One taste of the magic mojo and you’ll understand why there is always a line down the block. These guys know their coffee and they make it to your liking. Watching them carefully craft brew right in front of you is mesmerizing! A must try is their signature coffee mojitos. These scrumptious drinks are the real deal served over ice with fresh mint.

Food and gifts eagerly await you but the markets really are a holistic experience inviting touch, taste, scent, sight and sound! As you stroll the aisles, local musicians set the mood and stop traffic with their lively tunes and children laugh and dance to the soundtrack, further enhancing the overall enjoyment of our community markets. So grab your basket or reusable tote and join us on a journey of San Diego’s best community farmers markets.

Just up the hill from downtown is the bright and colorful Hillcrest farmers market. One of the pleasures of visiting this market is the thoughtful layout. The market is sectioned off into bright, plump produce, homemade offerings including breads, pastries, guacamoles, vinegars, olive oils, and handmade crafts of scented soaps, teas and candles twisting their way to the almighty street food truck rodeo. The smells emitting from the food trucks will send you salivating towards delicious delights. Pan fried garlic Vietnamese noodles, organic rotisserie chicken and crispy vegetables are all roasted on site. You’ll discover a world tour of other flavors from Africa, Greece, Mexico

22 SPRING 2016

SHOPPING and more. A market favorite for the sweet tooth is the sugar-seared crème brulee. Hints of lavender, vanilla bean and orange melt into the perfect custard cream topped off with turbinado sugar crystals and flash-flamed to order. These little delicacies are not to be missed. Heading north away from the downtown bustle is the quiet and serene farmers market at Scripps Ranch. This market is delightfully designed for a nice stroll as stalls wind in a maze of fresh, local goodness. You’ll find nearly every fruit and vegetable imaginable! A jewel box of purple, red, green, yellow and orange tomatoes beckon from afar. The plump, sun sweet tomatoes burst in your mouth like seeded candy. The avocado growers feature Hass and other creamy California varieties all waiting to top your favorite burger, salad or omelet. Baskets full of tart, sweet citrus of pink grape fruits, blood oranges, Meyer lemons and key limes beg to be bundled up and taken home. Truly local, fresh fruits and veggies are the stars of the Scripps Ranch market and the farmers are waiting to fill your basket. Heading west towards the coast, the hillside horse community of Rancho Santa Fe features its own Sunday farmers market, wrapped up and packaged like a beautiful European piazza, complete with street performers, tables decorated with vases of dizzyingly scented home grown roses and a community feeling of togetherness. A great appeal to this market in addition to the scrumptious produce is the abundance of handmade and homemade foods and crafts. These local artisans take painstaking care in packaging pleasure for visitors to take home. Local, wildflower honey and luscious vanilla fig balsamic vinegar make great gifts for foodie family and friends. On any given Sunday, you can spend a leisurely day strolling through the bustling La Jolla Farmers Market, located at the La Jolla Elementary School on Girard Avenue. This popular openair shopping extravaganza is only a few blocks from the beach, and boasts a beautiful bounty of fresh, local produce (more than most other markets in San Diego), plus

plenty of other items for purchase such as artisan jewelry, artwork and clothing. What’s even better is the proceeds from your purchases benefit La Jolla Elementary (LJES), a public school, so the kids can continue to enjoy programs such as art and music and improvements to other areas of the school. So join us as we share our rich, flavorful and bountiful harvest and invite you to take the best of San Diego’s farms home with you.
