Christian Gott, otherwise known as The Island Chef is a food and drink writer, chef, some-time publican, and restaurant manager. With over thirty years of experience working in hospitality on six different islands from beachside burger joints to world-famous pizza restaurants and in more than a few really good food pubs he now lives and works in the Channel Islands. We caught up with him during a lunch break to chat about all things island life, from the best kept pub garden to a cheese lover’s dream shop.

Home is...

a flat in St. Helier with my partner, two beautiful daughters and three crazy cats.

My weekend ritual involves...

getting up early with my youngest daughter to have porridge or her favourite softboiled eggs and soldiers. I currently work full time in catering, which means that my weekends are usually busy in a kitchen especially Saturday and Sunday lunch. That is all about to change as I am about to start a very exciting new job!

The best brunch on the island is...

a bit left field as everyone usually recommends somewhere by the beach, but The Yard does an absolutely wicked brunch cooked by a great chef and is in a beautiful space. I’m a tea person but for I have been lucky enough to spend quite a lot of time with David Warr of Coopers Coffee and I would choose one of his blends for the best on the island. He is passionate about every step of making a great cup of coffee.

My favourite walk is...

The shops I couldn’t live without are...

numerous. I have started to write professionally about food and drink, and we are so lucky to have some absolutely amazing wine shops on the island with incredibly knowledgeable staff, I have to exercise some serious restraint. Relish in the Central Market is a cheese addict’s dream as well as selling lots of amazing comestibles. My favourite shop however has to be Waterstones. I’m an absolute book nut.

To anyone visiting Jersey I’d recommend eating at...

Awabi. The team there really know about packing flavours into their dishes. I would also send any newcomer to the island for some great fish or seafood. The Oyster Box or the Bass and Lobster. We are blessed with so many excellent places to eat in Jersey and new venues seem to be opening all the time.

I like a great pint and I’m almost loath to give the secret away of the best little pub garden in St. Helier tucked away at the back of the Prince of Wales. They have a cracking selection of well kept real ales and lots and lots of whisky.

When friends and family visit, we tend to go to family friendly venues that serve great grub. Hugo’s has well presented tasty food and the service is always excellent.

The best place for a dip is... the beach near the White Horse so you can have a swim and then some refreshment afterwards.

I have lived and worked on five islands so I’m a bit of a connoisseur on what makes a great beach. We have some amazing beaches, St. Brelade’s is just an amazing stretch of sparkling clear blue sea and golden sand, but I cannot help being amazed when the tide is out at Le Hocq. It’s almost like a different planet with all the rocky outlets.

I find inspiration...

literally everywhere. It may sound corny but I grew up in England just about as geographically as far from the coast as possible. Now I have a leisurely fifteen-minute stroll to the nearest fabulous beach. There are great bakeries, coffee ( and tea ) shops, cafes, and restaurants, there are stunning coastal walks, so much history, festivals and events. It’s impossible to be bored, hungry or awed, and the people are so very friendly, it’s a real privilege to be able to bring my family up here.

I’m happiest when... tapping away at the laptop with a pot of tea and a shortbread biscuit watching the world go by. I’m a great people watcher. I’m about to start a new job which is very exciting. I am also

freelancing as a writer and podcaster here on Jersey and nationally in the UK which is completely different to anything I have done before and a new set of skills to master. Finally I’m studying for accreditation with The Academy of Cheese – it’s a serious addiction.

The phrase ‘secluded natural idyll’ is not one often associated with St. Helier. Indeed, the parish is more known for its convenience to work, its bustling high street, and its array of restaurants, cafes, and bars. But just a hop, skip, and jump away from the action of the island's capital is a wonderfully cloistered woodland habitat, where the only hustle and bustle is from the abundance of birds and red squirrels.

Such is the beauty of La Vallee Des Vaux that, in 1936, the National Trust’s founding members recognised the urgent need to prevent the destruction of the valley through inappropriate development and protected the area of woodland. It’s hard to believe that such captivating tree species as Ash and Wild Cherry, Oak, beech, and Sycamore can be found just a few minutes walk or cycle ride from the North of St. Helier.

LAND AND MOON CERAMICS

Shelley Godden of Land and Moon ceramics is a full time potter. Her studio is based at Greve De Lecq Barracks where she both creates her own work and teaches others. Here she tells us about her daily life as a potter and how her life and travels have inspired her work.

I think I was always drawn to ceramics - my parents bought some amazing ceramics when we visited Portugal when I was younger - I was always struck by their rustic simplicity and how they aged over time. I still have some of those pieces now and all of their cracks and chips remind me of family barbecues and other fun times. My stepmum had a collection of hand made jugs and I always loved the ones with the roughest glazes and wonkiest handles.

I lived in Japan for three and a half years and took a course of throwing sessions. I was so terrible and it seemed so difficult; I didn’t continue as my life there was so busy but it sowed the seed of something I knew I wanted to try again. When I left, my work colleagues bought me a set of tea bowls as a leaving gift and they remain the most beautiful pieces of ceramics I own. For me the Japanese attention to the aesthetic is unsurpassable, everything is steeped in significance and so the quest to replicate something which has the same “energy” as those little tea bowls continues!!

After Japan, and after travelling in the Middle East, I found myself living in Istanbul. Ceramics there is much more focused on brightly colour ed surface design, which really echoes the vibrancy of life there. My friend and I had a beautiful apartment in Galata, a historic area on the European side of the city. We didn’t have much furniture or kitchen equipment so we would ask all of our visitors to buy us a plate whilst out sight-seeing. Mostly people would buy something Turkish and ornate, and that way we ended up with the most beautiful collection of tableware for our house. None of it matched, which we loved, and each piece was a memory of that person’s time in Istanbul.

I eventually settled back in Jersey, got married and had my first son Oscar. I think my husband was a bit fed up with all of the ceramics I insisted on buying and so I suggested that perhaps I should have another go at making my own. I spent the next nine years going to evening classes, under the tutelage of the amazing Dave Brown. I knew from the beginning that I would only be wheel throwing, I found it totally bewitch ing - it really is like magic. I am definitely not a

natural thrower - it took me such a long time, making cylinder after cylinder, to even begin to master the basics and I am still, after 12 years, at the beginning of my journey.

I have had two more children since then, and life is very busy. Land and Moon was created when I got my first potting shed in my garden. My friends and family’s cupboards were filled to capacity with my pieces and so selling them seemed to be my only option!! I have now moved out of the shed and two years ago joined the Arthouse team at Greve De Lecq Barracks where I have a beautiful studio next to the fabulous Tim and Tom from Luddite Press. My studio used to be the Ablutions Block during Napoleonic times and so has stunning granite work tops and whilst it is cold and a little damp in the winter, it has plenty of ventilation for drying my work!

My own work varies a lot; making for upcoming markets, commissions as well as lots of collaborations. Whilst my studio is where all of my making takes place, my kiln is at home, so all of my glazing takes place in my utility room at home. My husband and children are used to our kitchen table being overtaken with my work and seeing me with very mucky hands! They know that firing time means it’s all hands on deck, transporting pots and tiptoeing around carefully placed wet pieces.

My sons have begun wedging my clay for me to earn some extra cash at the weekends and my daughter is quickly becoming proficient at surface design and throwing her own dishes for friends and family. I am really lucky to have their support and encouragement and hope that this beautiful ceramic journey is something I can pass on to them too.

I mostly make tableware - I am food obsessed. For me a delicious meal that is made with love tastes infinitely better when presented on a dish that is also made with love. I like organic forms that have a raw perfection. I like my pots to look handmade so I don’t tend to worry too much about drips, throwing rings or slightly wonky shapes. I also tend to leave a little exposed clay at the bottom of all of my pots. I really like the juxtaposition of the textured clay with the smoother glaze and it gives the user the sense that the pot is made from the earth by a real person.

My time in the studio is split between teaching basic ceramics and my own work. I have taster sessions, as well as wine, cheese and ceramics evenings (Escape Evenings). I also run a six week one-to-one beginners course. I am constantly surprised at how much I love teaching. It’s really special to have time with one or two people and show them how they can create something themselves that they can use everyday. My teaching style is probably a little more holistic than traditional teaching.

I usually take the whole of August off to be with my children but from September it’s all guns blazing in preparation for Christmas. My main focus will be on the Genuine Jersey markets, in August and October in St Aubin’s and then the big Simply Christmas Market in the Royal Square. They are so much fun, brilliantly organised, with a great array of amazing local makers. I also have a display of seed pots in the Jersey Museum at the new exhibition Bouan Appetit which is a fantastic celebration of Jersey food and our local traditions. Worth a visit!

And what your typical day...

I review workload with the team in the office and check in with them, before looking into detailed project work. This may involve sketch schemes proposals, using various overlays and mixed media to best communicate our ideas to clients.

The calendar is usually peppered with internal review meetings or client appointments either in the office or on site which has been very valuable in my appreciation and understanding of the locale. By mid afternoon my desk usually gets covered in post-it notes of sketches, diagrams, notes from precedent projects (I like collecting ideas from other projects in a precedent manual). Recently I’ve been thinking about timber cladding and different ways it can be used sustainably – we have some scale models of cladding/louvre variations for a R&D project in the pipeline, which is exciting. It’s all about looking, testing and refining.

ARCHITECT PROFILE

ROBYN THOMAS

Robyn’s journey in architecture began with a BSc from the Welsh School of Architecture in Cardiff. He gained experience in both the private and public sectors and as a sole practitioner. He worked primariliy on residential projects before leading some high-end residential development projects in a commercial office for many years, which eventually brought him to Jersey and his role at MS Planning.

Tell us about your career path....

It’s a meandering path to enlightenment; I came to architecture wanting to learn how to design, construct and see projects being built. My experience and approach is thoughtful and pragmatic, without being too constrained on ideas; an open mind for opportunities where designing is a fun collaboration but requires a lot of patience.

I grew up in Wales & studied at the Welsh School of Architecture and was fortunate to have been provided early exposure to the rich tapestry of buildings from Architects like Williams-Ellis’ work in Portmeirion to modest rural dwellings in the rugged

landscape, where the interesting concept of ‘ty unnos’ (house in one night) was founded. I’m sure it would serve as a fascinating project/design competition for us here in Jersey, I may suggest it in our next AJA council meeting - as architects, we often have to work under pressure!

The Welsh word for Architect is ‘Pensaer’, which, loosely translated, means ‘lead carpenter’. I spend a lot of my time on site discussing processes with contractors and subcontractors. Learning from their experience – this provides us with a better understanding of what to draw and how to communicate through drawings, which is what they are for –we work from a very broad range of skills.

I have been very fortunate that my previous practice entrusted me with high-end residential project for a seasoned developer and direct exposure to clients, helping them realise their project dreams. Managing the account for many years gave me great exposure to on-site delivery and construction and fine finish detailing. That experience of high-profile clientele is what attracted me to Jersey and MSPlanning. The Lakes project was a fascinating development of luxury villas next to a lake and in a woodland setting. The land was a by-product of an industrial process which really ties in with the notion of sustainable life cycles of sites.

What do you get up to outside the office?

I am very much enjoying the process of discovering Jersey life – I’d only visited briefly prior to re-locating and It’s a fascinating place. I am very fortunate to be able to experience life as well as work here and am looking forward to engaging with the variety of cultural activities on offer, such as the Alliance Francaise, whom I’ve recently joined.

Most of my free time has been making most of the fabulous climate at this time of year and exploring the island by bicycle. I have discovered many wonderful places already, with La Corbiere and Rozel being some of my favourites, each on the great cycle networks on the island – I could not get over the size of the giant rhubarb in La Valle de Rozel! Cycling on the island also provides a

great way of learning the place names and locations for some of our projects as well as familiarising myself with historic parochial and contemporary construction detailing –this landscape is certainly a challenging, but stunning, backdrop for projects.

What do you love about your job?

I enjoy our office discussions on conceptual ideas and interrogating project precedents. I have been very fortunate in my career to have worked on a number of built (probably over a hundred) projects which is quite staggering. Building, from a modest house extension to a new school, takes a long time due to the processes involved and we have to be patient with it and learn form colleagues in house and the field. Collaboration is often the best way to achieve a refined solution.

Every client and project is varied, which is one of the most satisfying elements about the Architect’s role. We get to work with varied typology, scales and context. Even on an island, I have come to understand that the topography lends itself to challenging but rewarding solutions. As architects, you have to be a visionary and challenge opportunities, it’s a vast toolkit of required

skills. One previous house project that I loved had a pool on the roof! I’d always dreamt of one day delivering a house with a pool on the roof from reading about Koolhaaus’ Villa Dall’ava in SMLXL during my university days.

Talk us through a recent project....

What’s hard about your job?

Everyone thinks its easy and they can do it! It’s a challenging existence making something work in reality, but important to have a common dialogue and approach to how we can make things work as a team for the whole lifecycle of a project. Clients often come to us with problems, such as

Back at HQ, we have recently been developing proposals for a sensitive extension and refurbishment to a listed building in the Parish of St Ouen. This has been quite a challenging exercise, particularly from a planning perspective, which is one of the key advantages of working at MSP. We have heritage and planning consultants to hand, who have extensive experience of dealing with this type of case for clients, which means we can provide more robust and accurate proposals. There is a great variety as well as the depth of experience here at MSPlanning to deliver them. I’m excited about this and other projects we have in design at the moment; delivering the high quality projects for the MSPlanning portfolio and serving our clients.

BEST RATES

MORTGAGE market update

Last month, it was announced that Inflation had decreased in June to 7.9%. This was a significant fall from the 8.7% figure for May and surprised analysts, who had expected a smaller fall to only 8.2%.

LESS PRESSURE TO INCREASE BASE RATE ANY MORE

Financial markets now think that following the latest Base Rate rise to 5.25% (03 August 2023) the Bank of England should be under less pressure to raise interest rates much further.

It has been suggested that the very slow fall in inflation relates to the high proportion of borrowers who are still tied into five-year fixed mortgage rates for the next two to three years, so distorting the impact of trying to reduce inflation back to the 2% target.

LENDING RATES FALLING?

In the meantime, some UK mortgage providers have been modestly reducing their rates following the release of the latest inflation figure, but we have yet to see much downward movement in Jersey.

At the beginning of August, and before the latest increase, interest rates from all the local lenders could be found in the range from 5.70% up to 8.14%., which was a marked increase from January this year when rates were available from 4.45% up to 6.85%.

LESS ACTIVE PROPERTY MARKET

These high rates are reflected in the less active property market which has prevailed since the second half of last year. In the past few weeks however, it was particularly noticeable that vendors were starting to appreciate that prices had to fall, and we have seen reductions of up to 20% and in some cases more, on certain property sales.

A GOOD CHOICE OF REASONABLY PRICED PROPERTY

Looking at recently advertised property for sale in the JEP and on places.je, there were a total of 1498 listings, of which 407 were in the First-Time Buyer price range up to £500,000. With a further 309 in the price range of £500,000 to £700,000 – many being three or even four bedroomed houses, with parking and gardens.

These figures clearly indicate that asking prices are falling, and that for the first time in several years, a good choice of property is becoming available for couples and families to get on to the first rungs of the property ladder.

A NEW STATES LOAN SCHEME

If the Government is really committed to ensuring that property ownership is made available to everybody, then urgent thought should be given to the resurrection of the very successful Dwelling House Loan Fund scheme which was available for many years to thousands of very happy First Time Buyers, that offered a range of interest rates from 3.5% to 10%, subject to affordability. Any modified Government funded loan scheme should ideally have no requirement for a deposit, stamp duty on the transaction waived, a term of 40 even 45 years, and which could be linked to a low interest rate which would be means tested annually and increased according to affordability.
