t’s a startling trend that shows no sign of slowing down. When it comes to wedding venues, more and more couples today are saying “no thanks” to traditional sites like hotel ballrooms and country clubs in favor of more offbeat, personal, and casual offerings.

“I think this generation of people who are getting married are looking for much more informal, fun, friendly events,” says Skip Weldon, co-owner of Blazing Hearth Pizza in Medfield, MA, adding that for him, it’s all part of the job these days to set up his mobile catering kitchen anywhere from apple orchards, beaches, and state parks to sprawling rural properties with llamas wandering around.

Statistics confirm change is in the air. A recent survey by The Knot showed that the popularity of farms, barns, and ranch venues soared from 2 to 15 percent between 2009 and 2017, as did the popularity of outdoor weddings, from 39 to 52 percent. Rustic, meaningful, romantic, sure. But if couples want to head off the beaten path, the potential downside is that the unique venue may lack full-service catering—or any catering services at all! While food trucks and mobile caterers are trending and seem an obvious solution, couples might have some reservations: “Can I trust a mobile caterer to handle my wedding?” “Is it a lot of extra work to arrange?” We talked to some New England operators about pros and cons, costs, and logistics. If you’re considering this option, here’s what you need to know:

The Vibe In theory, you could enlist mobile caterers for a black-tie dinner. Yet Weldon says wedding clients who want mobile catering are typically looking to set up a casual, friendly vibe in a unique setting, where “people are getting a chance to meet and spend time with each other, versus sitting at a table isolated and waiting for the band and everyone to tell them what to do.”

“People are getting a chance to meet and spend time with each other, versus sitting at a table isolated and waiting for the band and everyone to tell them what to do.” Choices, Choices Once associated with simple fare like hamburgers and hotdogs, today’s mobile catering menus run the gamut—from clambakes, wood-fired pizza, and southern BBQ to tacos, bao buns, and pig roasts. Couples can also amp up the fun by hiring multiple providers. You could hire one vendor just to serve up desserts like gelato or doughnuts or customized coffees or cocktails. Charlie Grab of Tap Truck New England, based in Central Village, CT, deploys a growing fleet of gorgeous vintage trucks to serve local craft beer at functions. Grab, who kicked off his business with a black-andwhite 1949 Ford panel truck, says the appeal goes beyond the beer to extra elements of style and fun. operation, he’s already added a second truck and is pondering a third. “The trucks have been super popular.”

Service Formats Vary Beyond the menu, Weldon says couples also have lots of service formats to consider—from vendors who simply serve up the food all the way to full-service mobile catering. Blazing Hearth Pizza, he says, delivers more than just food, they offer an experience: “We have a big wood-fired oven on the back of our truck, and we set up a pizza bar that allows us to stretch the dough and top up the pizzas as part of our catering and guest experience, and then we cook and serve the pizzas outside of the truck.” His company’s offerings also include customized menus, eco-friendly plates and cutlery, beer taps (they have a full liquor license), background music, a TV screen for couples who want to loop a wedding video at the reception, servers, tables, and trash collection.

Cost No discussion of mobile catering is complete without addressing the huge potential savings. According to foodrevolt.com, the average American wedding runs about $66 dollars per guest for reception catering, whereas food truck catering starts at around $20 per person. Weldon agrees on the cost-saving potential: “Couples are saving several thousand dollars by having a mobile caterer.”

Logistics and Due Diligence On the con side, couples who avail themselves of mobile catering do need to ask more questions and take on more planning. As Weldon says, “If you went to a full-service wedding facility, someone’s going to help you plan every detail.” Nontraditional venues and mobile vendors and caterers, “may not set up tables unless you ask them to do so; they may not provide people to clear tables unless you ask.” Talk to potential caterers and facilities, he says, and make sure those details get covered. Weldon also advises asking caterers about rain plans, what size crowd they can 14 Fall 2018

handle, how far they’ll travel for a catering gig, and if they’re open to menu customization and special dietary requests. And do your due diligence before hiring anyone: check online reviews, ask for references, and seek recommendations. Last but not least, plan ahead. Popular suppliers are busy and the mobile trend

Andrew and Jessica had been living together for seven years when Andrew proposed in the cabin he built in their backyard. Equipped with a wood stove and sound system, the cabin serves as a retreat the couple uses to relax and enjoy themselves. The night Andrew proposed, he suggested they have a drink in the cabin before bed since they both had a long day at work. It was a Tuesday and Jessica was home first, so she went out to the cabin, started the fire, and set up the music. When Andrew arrived, they chatted about their day, had a beer, and relaxed. At one point, Andrew got up to stoke the fire; he turned to Jessica and got down on one knee. It was the perfect proposal in their favorite place, just the two of them. They planned to be wed in eight short months! Jessica and Andrewâ&#x20AC;&#x2122;s favorite part of planning the wedding was the anticipation. They loved talking about their plans, and especially surprising friends and family members with their unconventional ideas. Andrew works for Tree House Brewing Company, a venue that they knew would provide the perfect laid-back atmosphere they wanted. They considered themselves lucky to be able to work with the staff to host their wedding at this gorgeous new brewery.

“We didn’t want to spend a lot of money, and we didn’t have a theme in mind; we just wanted the wedding to reflect who we are as a couple. We didn’t have a seating chart, favors, programs, and we didn’t even have a cake!” There were many wedding traditions Jessica and Andrew didn’t observe, and that’s exactly how they wanted it. For decorations, they used a variety of wildflowers from American Stems in Spencer, MA. “Kelsey did an amazing job at creating a simple and funky vibe by decorating the arbor we said our vows under, creating beautiful bouquets and boutonnieres, and, of course, the centerpieces.” Photos were taken by Johnny Mahaney Photography and Brent Berthiume, two friends who “did an amazing job.” The caterers were Dare to Taste out of Boston; there was a giant cheese spread and passed appetizers, followed by a Mexican station and an Italian Station that were open for guests to visit at their leisure. For dessert, friends and family made a variety of small finger desserts, including delicious chocolate covered strawberries made by Andrew’s mother. Jessica insisted on ice cream, so about an hour before the night was over, an ice cream truck came for the guests to enjoy as well. Andrew and Jessica both enjoy live music and wanted to make that part of the day. August First, a band out of Hudson, MA, played acoustic music during the ceremony and cocktail hour, then Feel Good Drift from Springfield, MA, took over for the rest of the night. Both bands were amazing and kept everyone entertained and on the dance floor.

“It was so amazing to see all the people we care about together, celebrating our love, and enjoying themselves because, after all, that’s the whole point.” Jessica chose an ivory bridesmaid’s dress as her wedding gown. After trying the dress on, she knew it was exactly what she’d been looking for. The bridesmaids picked out their own looks, choosing from a selection of neutral colors, shoes, jewelry, and hairstyles. It was very important to Jessica for her bridesmaids to be happy and comfortable. Andrew’s groomsmen wore matching blue suits with white shirts, brown shoes, brown belts, and white floral ties. They received many compliments on those ties! Highlights for the couple included “the music and the friends and family.” Jessica elaborates, “It was important to us that we took some time to escape from the chaos, find each other, and reflect on what was happening. It was so amazing to see all the people we care about together, celebrating our love, and enjoying themselves because, after all, that’s the whole point.” www.bridegroommag.com

Another favorite wedding memory was the contribution of Andrew’s grandfather, Bob. “Having him perform the ceremony made it personal, and it was very meaningful to have him play such a major role in our marriage ceremony.”

It should reflect you as a couple—not be stressful or overwhelming—just fun. Charles River Museum of Industry and Innovation

Warehouses, factories and mills repurposed into desirable event space

This historic nineteenth-century textile mill turned museum sits on the Charles River just a short ride from the city, making it a prime venue for those with relatives flying in. The Lace Factory Nestled on Deep River Landing, a historical hub that has transformed from a local shipbuilding yard, then dockage for ivory used at local piano factories, this nineteenth-century building offers plenty of industrial allure. Dubbed “The Lace Factory” because it was exactly that in the 1940s, the building features a landmark chimney, hand-hewn wood floors, ten-foot wavy glass windows, old pipework in the bathrooms, and even some examples of old lace tools on site. Another nice feature is that guests can arrive by the old fashioned Essex Steam Train or even by riverboat! They met through mutual friends and dated for four years before getting engaged. Pierre knew VanNhi was the one when he was admitted to the hospital for five days for a heart condition. She remained by his side throughout the entire ordeal and as Pierre stated in his vows, â&#x20AC;&#x153;through it all, I knew that with God, all things are possible, and he miraculously grew my heart larger to love you even more and to prepare me for this unspeakable, unparalleled, unmatched, undefeated love.â&#x20AC;?

Pierre told VanNhi that he was invited to a ceremony in recognition for his dedication at work. He booked spa massages earlier in the day at the Intercontinental Hotel, and then they got ready for the ceremony at the Boston Harbor Hotel. He pretended that his boss called, asking them to meet by the water to take some photos. When they got there, VanNhi saw her mother and thought what a nice gesture it was for Pierre to invite her. As she turned the corner, she saw more friends and family holding signs that said, â&#x20AC;&#x153;Will You Marry Him?â&#x20AC;? She turned to Pierre, who was down on one knee. She was especially touched because she had told Pierre that she wanted friends and family present when she got engaged; he remembered and invited them all!

They considered a destination wedding—somewhere warm by the water. But because they wanted to make sure all family members were able to to attend, including the elderly or those with health conditions, they decided to have the event close to home. Danversport Yacht Club was the first venue they visited, and as they walked through, they imagined the scene, with the gorgeous ballroom holding all their guests, the natural lighting from the large windows, the gazebo by the water, and the outdoor boardwalk for cocktail hour. The bonus was that the ceremony and reception would both be on the premises. “We were in awe with the venue and the friendly staff. We both knew Danversport was the place, and we didn’t have to look elsewhere.” They set a date that same day. The theme was romantic, classic, elegant, and simple. The groomsmen’s suits were grey and bridesmaid’s dresses were navy blue. The grey and navy provided a pop of color as the bride’s flowers were all white. VanNhi says, “ I wanted the wedding to look simple and effortless, but remain classic and elegant.” The party favors were homemade traditional rum cakes boxed individually for guests to take home, along with freshly baked donuts from Davis Square Donuts and Bagels, whose owner, George, is Pierre’s longtime friend; he was also the best man. The donut wall, displaying all the flavors of donuts, was a big hit that night. VanNhi enjoyed working with Phil, the florist at Bowler & Jones. She told him what she wanted—all white flowers and no greens for all the centerpieces, bouquets, boutonnieres, corsages, and gazebo pillars— and he delivered. He also added the hanging crystals she wanted to go with the tall centerpieces. The bride’s bouquet was a cascade of beautiful white orchids.

DJ Explicit, which is run by Pierre’s longtime friend and great DJ and MC, also provided uplighting. One of the special things about weddings is that, for one brief spectacular moment, you get to gather together all of the people you love most in one place. But let’s face it, while your guests are beyond excited to share your big day, given the mashup of generations and number of unfamiliar faces, a bit of awkwardness or reserve is natural too. When you’re planning your day, putting a bit of effort into icebreaker activities can really help get the party started. If you look at annual wedding trend reports, interactivity is a buzzworthy concept of late. In its list of 2018 wedding trends, for example, Wedding Wire notes interactive elements four times, integrated at mealtimes, in décor, and with entertainment. While thinking about event interactivity isn’t new, there is a new twist. Today, icebreaker activities are much more likely to be personal and outside-the-box. “Less and less I see the bouquet throwing and garters and things like that,” says Luba Gankin of Primavera Dreams Wedding & Events Planning in Newton, MA.

Millennials, say wedding industry observers, tend to prefer to encourage mingling in ways that break the mold. Where guests used to interact at prescribed points—the reception line, cocktail hour, cake cutting, the bouquet toss, and so on—Luba says, “Today people are trying to do something more individual and unique.” We talked to local wedding vendors about how to encourage genuine connections in fresh and personal ways. Here’s what we learned:

Technology Technology is a definite game changer allowing you to start breaking the ice months before your wedding day. Try social media, private chat groups, wedding hashtags, and your wedding website to introduce your people to each other. At the wedding itself, options like same-day wedding videos and photo booths with fun props work well. In fact, Luba says that nowadays almost every wedding she works on includes some type of photo booth. “It’s actually popular across all ages of the guests. It brings a lot of joy to the elderly generation who never saw it before…they enjoy putting on all these props and taking pictures.” Techno-savvy couples, says Luba, may even want to consider robots. She’s a big fan of Ava Robotics, a Cambridge-based company that has developed robots who can wander and livestream your big day to loved ones who couldn’t attend. Beyond livestreaming though, Luba says such elements serve as icebreakers too. “Because it’s new technology, it attracts many guests during the wedding.”

Games Conversely, more and more couples are using old-fashioned, low-tech games to get guests mixing. From trivia quizzes to lawn games such as croquet, Giant Jenga, and mini-golf, Luba says, “Games are very, very entertaining.”

When choosing vendors, he encourages couples to consider the whole experience, adding that presentation elements like his vintage trucks add so much. “I call it a prop. It is a conservation piece. You get a lot of valueadded—not just the beverages.”

hen it comes to capturing their blissful wedding moments, most couples still turn to photographers first. Yet as video technology keeps advancingâ&#x20AC;&#x201D;and videographers keep wowing the industry with new and innovative workâ&#x20AC;&#x201D;more and more couples today are making room in the budget for a professional videographer.

According to the most recent Real Weddings Survey from The Knot, a full 35 percent of couples hired a videographer in 2017, compared with just 26 percent in 2009. “Video is on the rise in a big way,” concludes the report. As Jamie Podworski of Jpod Films in Wellesley Hills, MA, explains, “Technology just keeps getting better and better and better. For clients, it’s a win-win because the product keeps getting better, and it’s not like there has to be any kind of distraction anymore to get their wedding filmed.” Curious about what’s new and trending today, we asked Podworski more about wedding videography advances: Q. Same-day wedding videos seem to be popping up everywhere. What can you tell us about this trend? The same-day edit is probably one of the biggest trends that has stood the test of time. It’s where you get an actual highlight video reel edited the day of your wedding… It’s usually a smidge shorter than a regular highlight film—usually twoand-a-half to three minutes long. The goal is to get in, as much as possible, some of the audio and some of the major wedding moments, maybe a first look, things that happened a bit earlier in the day. Q. Why do you think same-day videos are so popular? To see it the same day, and to go home and have a copy of a portion of your wedding day, and to have some of those emotions already captured is pretty cool. I mean, the experience of watching the video right there and having people cheer as you walk down the aisle or kiss for the first time; the energy of watching the video is to me unmatched. You sit the bride and groom right down in front of the screen so they can see it… It’s stressful to put together, but the reward is amazing! continued on page 44

Q. What other trends are you seeing today with wedding videography? Utilizing storytelling and incorporating the couple’s history to make every film a little bit different. A lot of stuff is going to look the same, but each couple has a unique story. I think personally, the videographers who are doing it really well, they’re good storytellers. They’re utilizing speeches, maybe moments during the preparations, and vows and things like that to tell a couple’s story… So it’s really incorporating personalities into a wedding film. That’s a huge trend right now. Q. There’s been some focus on aerial drone photography in the last few years. Are you seeing this trend continue? Drone footage is something that’s really jumped on the scene in the last three years. There are restrictions, especially in cities near major international airports…

and there are also no guarantees. If it’s a rainy day or a really windy day then the drone can’t go up, but it definitely can be a nice little bonus… We’re mostly using it to show the venue or the local area—if we’re in the mountains of New Hampshire, if we’re out of the city, or by the water in Maine, that’s where it’s really cool and it exposes the venue.

Q. How much does it cost to hire a videographer for a wedding?

I think you have to look through a bunch of videos [online], and once you find the people that you think would fit you: (a) budget-wise and (b) style-wise, then go through the interview process… Your photographer and your videographer are the people you’re with the longest during the day, so I think it’s got to feel right.

Between $4,000 and $8,000 is our general range, with most couples falling between $5,000 and $6,000. Q. Is there anything else couples should be aware of with videography? One of the biggest things couples don’t focus on when they are looking for a videographer is the audio and how audio is captured. I think they focus so much on the video, but audio really is more than 50 percent of the day. You want to hear

Hany called Vivian and said they were going to pick up the rings. “In our culture,” she explains, “we don’t have proposals, we have parties!” They set the date, giving themselves seven months to plan the wedding. Vivian’s favorite memory from that time was shopping for her wedding dress at the Special Event Bridal Shop. Once she said yes to the dress, the champagne started to flow. They chose Egypt as their destination wedding locale because they both have family and friends there. Once the wedding was underway, Vivian says, “Everything was special.” From the perfect dress to the beautiful makeup and hair, right down to the belly dancers who entertained at the reception. She cautions couples to keep in mind the various conditions of rough terrain, high winds, and fluctuating temperatures when selecting a mountain venue. For a recent wedding shoot, “We had a sunny day and then the clouds moved right over us, creating a dramatic foggy landscape. Of course, this doesn’t mean you are going to get any less beautiful photos!” In remote locations, you’ll want to be prepared by having an accessible, weatherproof “plan B” event space and hiring reliable transportation companies. “Source locally and work with vendors who have used the facility before,” recommends Craig Clemmer, director of sales and marketing at Omni Mount Washington Resort in New Hampshire. “You don’t want a learning curve to strike you out on your big day.” This four-diamond resort, which has the distinction of holding a variety of weddings during all four seasons, is “set on 2,600 acres at the base of the Presidential Mountain Range, dominated by majestic Mt. The Setting: The Ritz-Carlton, Boston The Ritz-Carlton’s redesign has updated the 3,500 square-foot ballroom, an exquisite backdrop to set four tables for today’s couples. “Couples have long enjoyed getting married in our ballroom because of the breathtaking view of the Boston Common and the natural light that comes in from our floor-to-ceiling windows,” shares General Manager William Bunce. “The view, along with a new silver and taupe color palette, a silver-leaf ceiling, modern lighting fixtures, and hand-printed wallcoverings offer a luxurious space that will wow any wedding guest.” Enjoy the tablescape tour!

Modern Glamour Contemporary couples will adore seeing their guests seated smartly around a table set in a Modern Glamour motif. Oberlander loves the juxtaposition of this look against the ballroom’s botanical-inspired canvas. She used the graphic lines and striking texture found in the linen to start, and then bold lines were further layered with the selection of clear glass wing 12” chargers, lotus china, and Tribeca glassware. Lillibridge drew inspiration from the elements selected for the table. For example, gray glass containers and votives were chosen to accentuate an almost monochromatic look when paired with the gray tablecloth. The vessels and votives also have really crisp horizontal and vertical lines, respectively, that mirror the modern lines of the table linen. She comments that the pearl-like hue of the orchids also highlight the milk-white opaque glassware, which contributes to a very simple and chic overall aesthetic.

Simple Elegance Understated couples will love the clean lines of this tablescape. Simple Elegance shines through with Be Our Guest’s mercury embossed linen paired with the beadwork along the antique ivory china. The gold hourglass chair beautifully ties into the overall feel and complements the hues of silver and taupe in the newly redesigned space. Lillibridge notes that she wanted to create a new take on a classic garden-style arrangement by adding a ton of fresh seasonal textures to the already low and lush design. “We surrounded plush Van Zyverden peonies and alabaster garden roses with luscious greenery like geranium foliage, jasmine vine, silvery leaves of dusty miller, and lots of hellebores,” she says, noting that the additional embellishments also serve to play up the texture found in the dinnerware and table linens, while the gold vessel and votives are a nice complement to the gold chairs. Clear candlesticks add a simple and sophisticated touch.

Traditional Romance Sweet and celestial create a lovely looks for traditional love birds. Traditional Romance got an update with the White Possibility Table, where the white embossed damask linen is inlaid. The remaining details are unmistakably old-world including cut-crystal Longchamp glassware, Versailles flatware, double gold band china, and the gold Palazzo charger. The gold chiavari chairs provide the finishing touch.

Winston Flowers plays on the elongated shape of the table by creating a continuous runner of florals using various sweet and ethereal details, while still managing to keep an overall simple look with the main focus on the flowers. Trumpet-shaped vases in various sizes allow the flowers to flare out, which creates a looser style. This adds to the idea of the continuous line of blooms, while the clear, etched hurricanes help to break it up slightly, keeping it from looking too monotonous.

Rustic Chic This style is an unexpected treat for guests in an urban ballroom setting, yet it doesnâ&#x20AC;&#x2122;t feel out of place with the glamorous and glossy Fruitwood Table, which features details such as beehive flatware, a taupe charger with a hammered-effect, and deco beige china. The fruitwood chairs and Madison glassware create a polished touch, and the linen runner adds texture. The design was inspired by the French countryside. Winston Flowers wants it to feel like you could have picked these flowers yourself by using an asymmetrical design and injecting numerous organic elements. The overall tablescape has a lot of darker elements, from the wooden table and chairs to the copper flatware, so they decided to add some color and freshness in the form of elements such as chartreuse club moss, green hellebores, and blue nigella for subtle vibrance. They employ a variety of green glass vases and white vessels, and prevent it from looking too busy by using two floral varieties per containers at most. What was your favorite tablescape?
