Of course, the Games themselves are front and centre as we snapshot the history, the venues and the sporting program in the lead up to the Opening Ceremony on 4 April. We also hear from champion triathlete Ashleigh Gentle, Festival 2018 Co-Creative Director Kate Fell and volunteer Leigh Philpot as they count down the days to what is sure to be an exciting time for them and their families. If sport is not your forte, music and culture may be. Festival 2018 is a community arts program that will run during the Games and aims to showcase the very best local, national and international talent from throughout the Commonwealth via a range of interactive installations and events. Expect to see everything from a giant inflatable maze to illuminated musical sea saws in the main festival hubs of Surfers Paradise and Broadbeach, as well as outside many of the Games venues. And best of all, every one of the performances is absolutely free.

Speaking of performances, our feature interview is with Australian superstar, Kylie Minogue. The popular singer opens up about her latest album (appropriately titled Golden), her new ‘country’ sound and how she plans to celebrate her 50th birthday in London in May. Closer to home, we also have a lot to look forward to in May, with the inaugural Gold Coast Cup, the 30th Sanctuary Cove International Boat Show and the annual Noosa Food & Wine Festival all on the calendar. Golden girl Kylie Minogue is turning 50 in May and she’s going to celebrate in style – with a new album, a full-on world tour and her first party in years.

IN THIS DEEPLY personal interview, Australian singer/actor Kylie Minogue talks about all things ‘Golden’ – her new album, the production in Nashville, going for a hybrid country-infused pop-sound, and writing therapeutic lyrics about love, loss and age. You know that we first talked 20 years ago when you were indie-Kylie? No way. All right, we’re still here doing the same thing. Love it. Actually, I come across a lot of people, whether it’s journalists, producers, people in TV, floor managers, who say: ‘You know, it’s been 15 years, 20 years, 25 years, 30 years’. And there’s, of course, a part of you that goes: ‘Oh my God, really? That makes me feel old’.

kind of get a different truth and tell a different story. Perform differently, write different lyrics, sing it differently. Yet, as you say, still sounding like a Kylie album. It was a great challenge. I was scratching my head for quite a while trying to reach that point, but once we found the kind of hybrid, it all started to make sense to me. And Golden for the album title? Did you pick that phrase because you´re experiencing a golden age or a golden lifetime? Well, that would be the secondary reason, which I think is nice, but I just had a phrase in my mind, which was: ‘I’m not young and I’m not old’. And then I thought, well, just be golden. And then I took it away from the first person, because I’m asked a lot about being my age in the industry and, while I understand the need or the interest, I kind of get sick of being asked about it. And it’s true: I’m not young, I’m not a teenager, I’m not the younger generation, but I’m not old. Or at least I don’t think I’m old. Everything’s relative, so I turned that into more of a universal theme. You can’t be younger than you are, you can’t make yourself younger. You can’t make yourself older. So just be yourself, shine as best you can at that point in your life, because that’s what it is. And then further to that I thought: ‘Well, symbolically there’s a lot of great things that are gold. Gold is strong, gold’s malleable, you can change it into different things. The sun shines in … the daylight, the moon shines in the night. So just try to be golden whereever you are in your life and whether it’s a light part in your life or a dark part in your life. >>

NOT AVAILABLE ONLINE Well, it’s been 30 years since you put out your first album. It’s a long time, yeah. And strangely, as far as the recording goes and the challenge and the stimulation of making an album, that still feels fresh to me. I feel like there’s so much more to learn and to do.

However, Golden – the new one – is an interesting turn in your career. How did Nashville come about? When I started working on the album, my A&R guy had said: ‘Okay, you’re going in with xyz and when you’re in there, think about if there’s a little country element’. And I said: ‘Yeah, sure, okay. But what do you mean?’ He said: ‘I don’t know what I mean. Just put it in the back of your head and try and incorporate something’. So, it really took a few months to find but I think through that kind of songwriting you can

Speaking of age, are you’re going to celebrate the big 5-0 in style? That is the plan. And it’s really out of character for me. I don’t do big parties. I drive my girlfriends crazy. They say: ‘Look your birthday’s coming up, let’s plan something’. And I’m like: ‘Can we just go to the local restaurant?’ I don’t want to commit to a party, but I think this year I’m going to do it. I’m going to do it. I think I’ll have a big party in London. How did you like Nashville? I had two weeks in Nashville and I loved every second of being there, I can’t wait to go back. Before I went, I started asking different writers and producers I was with in the studio: ‘Hey, I think I’m going to Nashville, have you been?’ And without fail, anyone who had been said: ‘You’re going to love it. Let me email you the restaurants to go to, where to get the best coffee, where’s the best vintage store, you’ve got to go to this honky-tonk bar, blah, blah, blah’. It went on and – it was like a surge of love for the city. And my trip got postponed a couple of times and I was starting to think: ‘Ah, no, I’m so excited to go to Nashville. Am I going to get there?’ So I did get there and it was incredible. But it wasn’t what I had in mind. I kind of thought: ‘Oh, it might be a bit like the main street, you know, what I’ve seen of New Orleans, which is all those kind of low rise wooden buildings and a bit kind of … a little bit dilapidated, but full of spirit. And Nashville city was nothing like that at all. It was really very modern, cosmopolitan, but the sense of it being a musical city is really unavoidable. So did you mingle while you were in town? I did mingle. I went to the Bluebird Cafe and The Listening Room, both of which were incredible. Just being a member of the audience, you’ve got all different ages at these venues who were there to listen to songwriters talk about the song that they’d written. They may be the singer, they may have written the song and an artist has sung it, but they’re kind of the altar of the song. Like the church of the song. Could you imagine performing there yourself? It would be cool. When I went to those places (and I’m like this a lot when I’m in an audience) a part of me feels a bit strange, there’s something inside me going: ‘You need to get on the stage. No, simmer down Minogue shut up. Just sit in the audience’. But, I couldn’t help think: ‘Wow, I wonder if I’ll come back and do something like that myself, and talk about being in Nashville or a little bit about where the song came from’. >>

Why isn’t Dolly Parton on the album? It’s a very good question. I think we needed to balance the country to pop ratio. We’ve worked really hard to try to get that right. And perhaps if Dolly was there in the initial stage, it might have been too much. If I ever got to perform with Dolly Parton, I’d probably need a stiff drink. I would be so nervous. I’d be really trying hard to keep it together. Isn´t there always the question: ‘What would Dolly do?’ I bought a t-shirt in Nashville that says: ‘What would Dolly do?’ I remember I was talking to my brother in Australia and I sent him a picture. And he said to me: ‘Well, what would Dolly do? Why don’t you ask her?’ I said: ‘Don’t be crazy, I don’t have access. I can’t just call Dolly Parton up’. But he was right. Maybe that should be my mantra from now on: ‘What would Dolly do?’ Will you tour this album? Will you bring Nashville to the stage? A little bit, we will. I haven’t totally figured it out yet, but it’s the same with every album: You have to think, how do we incorporate this into the existing songs? With this one, I’ve got some ideas whirling around in my head and I’m really, really looking forward to discovering what happens to these songs when I get with my band … you know, having the mix of electronic sounds and the banjo. Having five part harmonies – I haven’t had that experience. I’ve only recorded these songs and sung these songs in the studio, so that’s the next step for me, to discover how they feel and how they sound live.

When it comes to love things never really change, do they? The first flush of love, of course, that’s the best. It’s incredible. But then there’s the different levels of knowing and understanding and of a deeper love. I know people often like to paint me as a bit of a failure in that department, but maybe it’s just not my destiny, yet anyway, to have had ‘the one’. And, you know, there’s part of me that thinks: ‘Maybe they’re out there’. And then another part of me that thinks: ‘Maybe they’re not. Maybe that’s just not for everyone’. There’s a point where you think: ‘Pfff … Can I go through this again?’ I probably will. No doubt I will. And it may be a different set of highs and lows and dramas and whatever, but that’s a part of life. Is it that you can’t have it all: fame, fortune, and beauty? I honestly don’t know. I mean, if you had it all, what would drive you? How would you relate to people if you had it all? I think you would be kind of living in the clouds or something … you know, sadness is somehow a part of joy. If you don’t know both … Wait, I’m going way too deep. I’m just …

But honestly, would you trade your career for family and kids if you had the chance to? There’s been moments where I’ve thought: ‘I’m going around in circles. I’m not meant to do what those happy looking people are doing’. But you don’t know what’s behind closed doors. You don’t know what the real story is. We all put on a bit of a face, but it’s a good question: Would I trade it all in? I honestly don’t know. What I do is so much a part of my being and how I relate to being in the world, I can’t imagine not doing it. But I do know life without having a partner, and it’s okay. There’s pros and cons to being in or out of a relationship, but I can’t imagine not having this, you know, to be able to sing and be creative in different ways.

The album also seems really personal. How therapeutic is Golden for you? Well, the first phase of writing the album was more where I was just getting stuff out of my system and it turned out the songs were not that great. I think I was so focused on just getting the words out that I didn’t have enough distance to make it a good song. I think that was good in retrospect, to just ‘blah blah blah blah’, get it out of my system, rebuild myself, regain my sense of self and feel kind of strong again, but still feeling very much in touch with those emotions. I can only speak for myself, but I think it’s a universal subject – Why do we do the things we do? Why do we change in a relationship? What are we searching for? Why do we think it was right when it was wrong or why did we not see it when it was so right? The same old questions.

GC2018 The Gold Coast is set to shine on the world’s stage when it hosts the 21st Commonwealth Games (GC2018) from 4 - 15 April, 2018. This will be the fifth time Australia has staged the Commonwealth Games following Sydney (1938), Perth (1962), Brisbane (1982) and Melbourne (2006). GC2018 will also mark the first time a Commonwealth Games will be held in a regional Australian city.

HISTORY From Asia to Africa and beyond, The Commonwealth is a collective of diverse nations that makes up to 30 per cent of the world’s population. The Commonwealth Games have been conducted by the Commonwealth Games Federation (CGF) every four years (except for 1942 and 1946 due to WWII) since the first British Empire Games were held in Hamilton, Canada in 1930. Since then, the Games have grown from an event featuring 11 countries and 400 athletes to a modern sporting spectacular that includes 70 nations and territories and over 6,600 athletes and team officials. But the Commonwealth Games are more than just about competition. They reflect the CGF’s core values of humanity, equality and destiny and bring together members of the Commonwealth of nations to compete on a level playing field in a spirit of friendship and fair play often referred to as the ‘friendly games’. There have been many magical moments witnessed at the Commonwealth Games over the years, including the famous ‘Miracle Mile’ at the 1954 Games when England’s Roger Bannister and Australian John Landy created history by both breaking the four-minute mile in a race. There are a total of 53 members of the Commonwealth of Nations, including a number of British overseas territories, Crown dependencies and island states who compete under their own flag. England, Isle of Man, Guernsey, Gibraltar, Jersey, Scotland, Wales and Northern Ireland all send separate teams to compete in the Games.

GAMES VILLAGE MAYORS Mark Stockwell and Sara Carrigan OAM, have been named as Co-Mayors of the GC2018 Village. The Olympians and Commonwealth Games medallists will play a pivotal role in welcoming teams from 70 nations and territories of the Commonwealth to their new home. The two Co-Mayor’s will also work with GOLDOC to ensure the overall smooth running of the Village during Games-time, so athletes need only focus on their performance. The Village will come to life on 25 March with 6,600 athletes and team officials converging on the Parklands site. Mark and Sara will meet and greet dignitaries and officials and play the role of confidante, supporter and motivator for all residents. “I am excited to be a part of the finale of this very long journey and can’t wait to see the Village come to life as a home away from home for the athletes and team officials,” Mark said. “This Village exudes vibrancy and energy – it is spectacular, and I can’t wait to welcome everyone and help them to enjoy an experience of a lifetime at GC2018,” added Sara.

KATE FELL IS EXCITED … as Co-Creative Director for Festival 2018 she has not only curated an enticing program of events, she also gets to showcase it in her own backyard. “What we are trying to do is make the city feel really alive and vibrant, not only for visitors who are coming to the Games, but also for locals and people who just want to soak up the atmosphere. “The Commonwealth Games movement across the world has really embraced the sense that it’s more than just sport, it’s sport and culture,” she says. “The competition itself brings all these cultures together and we’ve tried to replicate that with Festival 2018.” So what can audiences expect? “It’s a free 12-day community arts festival celebrating the fact the Gold Coast has the Commonwealth Games,” Kate explains.

“Our aim is to expose audiences to things they wouldn’t normally see including live concerts, musical collaborations, artistic installations, interactive events … the program is incredible … and it will offer something for people of all ages from babies to adults.” With over 1,000 performers from 50 different countries represented, Kate admits it has been a huge task bringing all the elements together. “It’s about balance, that’s been the overarching thing for us. “Firstly, the balance between local, national and international artists. “We are really proud that about 50 per cent of the artists involved in the program are local. “The City of Gold Coast has made a significant investment in arts and culture and you can see that paying off. A lot of professional development workshops and master classes have been built

into the process, and many of the projects involve community members which will leave a real legacy for the city. “But we wanted to ensure that audiences got to see an international program across different art forms as well. “So again it was about balance. Finding things that make you think and feel but are really entertaining and interactive. And sourcing works that are by very high quality artists that everyone can enjoy.” While Broadbeach and Surfers Paradise are the key festival hubs there will be events stretching across the Coast including the sporting venues in order to entertain the crowds as they are coming and going. Festival 2018 will also run alongside the already established Bleach* Festival, ensuring that visitors and locals will have access to a diverse and inclusive program including music, theatre, circus, dance, visual arts and film. >>

“I think the main message is that it is a festival for everyone and I really feel strongly that people will find something in the program they love,” Kate says. “The other thing is that it really showcases the Gold Coast’s outdoor lifestyle and culture, and embraces what Bleach* has done by putting on works in parks, on beaches and on the waterways. “We’ve commissioned over 30 new works especially for the festival. A lot of them involve Gold Coast artists while some are local and international collaborations.” With such a wide selection of performances to choose from, it begs the question … does Kate have a favourite? “I think I am most looking forward to an event called Young African Commonwealth. “It will be hosted by Nelson Mandela’s grandson and he and his team have curated a four-hour concert with fresh, young musicians representing the diversity and contemporary side of Africa. “They are not the image you would have of African music, they are very cool. “It would have been Nelson Mandela’s 100th birthday this year so it’s really about celebrating his legacy … it’s going to be a very special night.” Of course this is just one highlight in a program full of world-class entertainment and Kate is urging Gold Coasters to get behind both the Games and the Festival. “If they do leave the city people will realise that they have missed something special,” Kate says. “It’s a once in a lifetime opportunity for the Gold Coast to host the Games, there’s a big festival on, and I think it’s one of those things that you just have to embrace.”

FIRST THINGS FIRST. I am an absolute sports tragic. AFL, due to my upbringing in Victoria, is my passion, but if there is any sport on television or happening locally, I’ll be watching … although since becoming a father to two boys, the volume of participation and viewing has definitely reduced. What become patently obvious early days while kicking the footy around was that a general lack of ability, despite my best efforts, would be a major hurdle to ever having a career as an AFL player. Upon this realisation, I started to ponder. What is the best way to stay involved with sport, be close to the action and feel part of it? With a fairly good grasp of the English language, I turned my hand to writing. I started covering local AFL matches before heading to Melbourne to test myself in the heartland of football. Buoyed by my experiences, I decided journalism was the path for me and went off to university to pursue a degree and build towards my goal of working in the AFL media for a living. This would be no small journey though, and with three to four years ahead of me (juggling work along the way), I was looking for something to satisfy my sporting hunger.

This is what led me to the world of volunteering. My first involvement was the Gold Coast Indy. A role in corporate hospitality was an awesome way to be trackside and soak up the atmosphere of the event, and network with people with whom you would not normally be around. Being only a four-day event, it was over in the blink of an eye, but I loved every minute of it. I did this for three years before work commitments unfortunately prevented me from returning for a fourth year. The next opportunity to present itself was the 2006 Commonwealth Games in Melbourne. After making the necessary arrangements to take some time off work, I headed back to my homeland where I was fortunate enough to be an On Venue Results Runner at Rod Laver Arena, where the gymnastics were being held. Despite my earlier confession, I must admit that gymnastics was definitely not an area of expertise. I was taken by the skill and grace of the sport and it was definitely a learning experience. Another highlight was being at the MCG when the 100-metre final was run. Although not as glamorous as the Olympics, that roar for the ten seconds of the event is something that lives with me to this day.

I was sure nothing could top that. Until the 22nd March 2018, when I pull on the blue uniform, along with the other 15,000 volunteers, or Games Shapers as we have been termed, and help make the 2018 Commonwealth Games the most memorable yet. As a local resident, to have the opportunity to be a part of the Gold Coast Games was something that immediately resonated with me. I could not get my application in quick enough. I didn’t care where or what role it was, I just had to be there. I have been fortunate enough to be chosen to be part of the Village Operations team at the Athletes Village. My role will entail many duties, including welcoming and farewelling the athletes on their arrival and departure, assisting with village tours and handling any inquiries. Throughout the orientation, uniform and accreditation and interview sessions, I have met so many different people from all sorts of professions, volunteering for their own reasons. The one thing that shines brightest is everyone’s passion and pride for the Gold Coast, and how much it means to them to be part of an event that is being held in their own backyard.

Tri time Ashleigh Gentle: a home-grown athlete performing on home turf. WORDS MARJ OSBORNE

IN THE LEAD up to the Commonwealth Games, local triathlete Ashleigh Gentle is relishing the chance to compete in front of her family and friends. Born in South Brisbane, Ashleigh has spent most of her life on the Gold Coast. She attended St Vincent’s Primary School and All Saints Anglican School before entering Griffith University in 2009, where she is studying for a Bachelor of Public Health degree in nutrition. Ashleigh took up triathlon in 2004, taking out silver in the Junior World Championships in Hamburg in 2007 and Vancouver in 2008 before winning in Budapest in 2010. Since she began competing in the ITU World Triathlon Series events in 2011, Ashleigh has placed in the top ten in all of them, progressing to silver in Yokohama in 2015 and 2016 and in Abu Dhabi in 2016. By May 2016, she was ranked third in the world, representing Australia at the 2016 Summer Olympics in Rio de Janeiro. Recently she won the 2017 ITU World Triathlon Montréal and was placed second at the 2017 ITU World Triathlon Hamburg. We spoke to Ashleigh about the life of an athlete, how she trains, what she eats, and what it means to her to compete on home turf. What’s a typical day like for you? In full training, I train three times a day, sometimes four, with Sunday just being one run in the morning. A typical day would be a run in the morning, around 6-8km, then swimming at 10.30am, and perhaps gym. In the afternoon we could have a hard ride or a run session. Is success as a triathlete all about being physically fit? We train and race over Olympic distance or sprint distance (two or one-hour events), so

we most certainly have to be in top physical condition, but it is not the only factor. We have to fuel ourselves adequately … and our mental and physiological wellbeing all contribute to success. What food do you eat leading up to an event? I am fairly consistent with what I eat throughout the whole year. The World Series circuit season goes from around March to September, so fuelling myself with carbohydrate and protein rich foods each day to sustain myself through that long period is important. I would say I have a healthy balanced diet, and treats are certainly included in moderation too. You gained 2nd place at the 2017 ITU World Triathlon on the Gold Coast. Does performing on home territory make a difference? It was the best start to the season for me, I qualified for the Commonwealth Games in that race and it was extra special doing it in front of a home crowd, knowing I would have a home crowd at the Commonwealth Games too. The extra cheers do lift you and having friends and family watching is amazing. What have your goals been this year leading up to the Commonwealth Games? I wanted to make sure I started the year healthy and injury free. I had a good break after the 2017 season and built into the training, so I can be consistent and do the work required to perform at the Commonwealth Games. What is the pinnacle of success for you, the crowning achievement in your career? I have been racing WTS since the end of 2011 and had five second places before getting the win in Montreal. It felt like the accumulation of a lot of hard work over many years, so it’s definitely the highlight of my career so far.

WHAT IS TRIATHLON? Combining the three disciplines of swimming, cycling and running, Triathlon is a true test of fitness, skill and endurance. The Commonwealth Games individual races are held over the Olympic distance (1.5km swim, 40km bike, 10km run). Showcasing the splendour of the Gold Coast, the 2018 Commonwealth Games Triathlon course will start and finish at the Southport Broadwater Parklands.

THE SAGE ADVICE: ‘It’s never too late to start something new,’ could have originally come from the lips of Henry Sands Brooks, who established his clothing business at the grand old age of 45, when the average life expectancy of the time was only 36. His vision was ‘to make and deal only in merchandise of the finest body, to sell it at a fair profit, and to deal with people who seek and appreciate such merchandise’. Today, the company that began commercial life in 1818 as H & D H Brooks & Co is the United States’ longest-established clothier. Henry’s four sons – Daniel, John, Elisha and Edward – inherited the business in 1833 and, in 1850, the company was renamed ‘Brooks Brothers’, the name it has worn for most of its 200 years. It was also in 1850 that the company adopted its distinctive trademark depicting a sheep suspended by a ribbon, which was based on the insignia of the Knights of the Golden Fleece, an order of chivalry founded in 1430 by Philip the Good, the Duke of Burgundy.

From the sea This delicious sea scallop recipe is fresh classic for the renewed Vue 175 at Ruffles Lodge & Spa. Nova Scotia Sea Scallops, Curried Cauliflower Purée, Curry Oil and Chilli Salt

Makes 6 serves

NOVA SCOTIA SEA SCALLOPS Ingredients 18 scallops size 10/20 50g butter Sea salt to taste Canola oil Method 1. Dry scallops with a towel. 1. Season with sea salt. 2. Pour oil into a hot pan. 3. P lace the scallops into the pan presentation side down. 4. Add butter and baste the top side. 5. Once the scallops turn gold, flip them over. 6. Rest the scallops at warm temperature before serving. CURRIED CAULIFLOWER PURÉE Ingredients 1 cauliflower head 100ml vegetable stock 100ml coconut cream 1tbsp toasted cumin seeds 1tbsp toasted coriander seeds 1tbsp toasted curry powder Sea salt to taste Sriracha to taste

Method 1. Remove cauliflower from stem, clean the stem and chop all. 2. Place in a pot with all other ingredients. 3. C over with a cartouche and cook gently until cauliflower is soft. 4. Purée until very fine. 5. P ass the purée through a fine mesh sieve to ensure it is silky smooth. 6. Season to taste with salt and sriracha.

Method 1. Combine all ingredients including oil and whisk together. 2. H eat slowly in heavy bottom saucepan until temperature hits 60ºC. 3. Allow spices to infuse for 60 min at 60ºC. 4. Allow to cool down and strain through a fine mesh sieve. 5. M ixture can be fried to order as is or can be frozen and panko crumbed.

CURRY OIL Ingredients 1tbsp cumin seeds 1tbsp coriander seeds 3 star anise pods 2 cinnamon sticks ¼ cup curry powder 1tbsp chilli powder 500ml canola oil

CHILLI SALT Ingredients 25g sea salt flakes 1tbsp toasted cayenne pepper 1tbsp toasted smoked paprika Method Combine all ingredients and grind to a medium grain.

To assemble 1. Using a squeeze sauce bottle place few drops of cauliflower purée into the plate. 2. Place 3 scallops on top of the purée. 3. A dd the curry oil making sure a few drops fall on top of the hot scallops. 4. Place the chilli salt to the side of each scallop. 5. Garnish with shallot flowers.

Chef profile BRIAN DEAN CHEF DE CUISINE VUE 175 ACCORDING to Chef de Cuisine Brian Dean, there are few careers more intimate than preparing someone’s food. “It’s nourishment, fuel and an experience all at once,” he says. “I couldn’t picture myself doing anything else.” Brian’s love of food can be traced back to his childhood. “I fondly remember my mum’s scallops with cheese casserole,” he says. “To this day, scallops remain one of my favourite ingredients for their versatility, presentation and most of all taste.” Brian also feels that cooking gives you the unique opportunity to affect people’s memory. “Perhaps a dish you make brings them somewhere they remember with great affection,” he says. “I hope that someone who has chosen to dine at Vue 175, may be brought back to the time they spent with me, when they have a meal elsewhere.”

Pork Rillette Ingredients 800gm skinless boneless pork belly 250gm fine sea salt 3-4 fresh bay leaves 3 thyme sprigs 400gm pork back fat* 3 garlic cloves, bruised To serve, toasted or fresh sour dough or baguette Method 1. Coat pork with salt in a non-reactive container that holds it snugly. 2. A dd herbs, cover and refrigerate to cure (4-6 hours). 3. H eat back fat in a saucepan over lowmedium heat with 2tbsp water and add more water as it evaporates until fat renders (about 1 hour). You should have about 250ml melted lard.

4. Preheat oven to 150ยบC. 5. R inse pork under cold water to remove excess brine and pat dry with paper towels. 6. Reserve herbs and garlic. 7. C ut pork into 6cm cubes and place in a roasting pan that fits it snugly. 8. Pour over rendered fat. 9. Scatter with reserved herbs and garlic. 10. Roast, turning occasionally, until meat pulls apart easily (3 1/2 - 3 3/4 hours). 11. R emove pork from fat and set aside on a tray to cool briefly. 12. Strain fat through a fine sieve and set aside. 13. Shred pork using two forks, pulling meat apart along the grain. 14. Divide among 4-6 individual 3/4 cup jars or ramekins, pressing on pork to pack lightly. 15. Pour fat over each jar to cover pork. 16. C over with plastic wrap and refrigerate to set (about 4 hours).

Serve with fresh or toasted sour dough or baguette. Rillettes will keep sealed for up to a month. *Give your butcher prior notice for the pork back fat.

REGARDLESS OF THE SEASON, a charcuterie board or platter is the perfect addition to afternoon drinks. According to the chefs at The Balfour Kitchen, charcuterie is all about quality salted and fatty cured meats – especially pork. A great platter includes a combination of those meats and accompaniments, balancing the salt and fat of the meat with acid from other sources. Think salamis with and without chilli, thinly sliced jamon, serrano and prosciutto. The addition of pork rillette or chicken liver paté is a great way to mix flavours and textures, while pickled vegetables or mustards add an element of acidity to help cut through the fat. Not to be forgotten is plenty of bread – sourdough or potato bread charred on the barbecue with a drizzle of olive oil. Cake art The world’s best cake artists are headed to Brisbane for the International Cake Show Australia.

THOUSANDS OF CAKE DECORATORS, professional bakers, chocolatiers, home hobbyists and food personalities from across the globe will converge on Brisbane for the 2018 International Cake Show Australia. Beguiling wines Pinot Shiraz/Shiraz Pinot blends are gaining popularity – and notoriety – in the Australian winemaking industry. WORDS TONY HARPER

RIGHT NOW it might seem a little odd, a few years ago it was odder, soon it will be less odd, and ninety-odd years ago it was a legend in the making. I’m talking about the blend of pinot noir and shiraz – odd bedfellows perhaps, but a partnership that has created some of the most long-lived and beguiling wines in Australia’s history. It began with a chap called Maurice O’Shea. Born in 1897, he caught the wine bug on a trip to France while still only 17. I think that’s what folk who could afford it did back then; sent their kids on sabbatical. He must have been a persuasive fellow (and his mother well heeled), because on his return, seven years later, he conned her into buying him a vineyard in Pokolbin, Hunter Valley. He called it Mount Pleasant (and yes, it’s the same Mount Pleasant that still exists, owned by McWilliams, today). Maurice was very good at his job, weaving French savvy with the more traditional winemaking that was happening in Australia. When McWilliams bought Mount Pleasant from him in 1941, they kept him on as winemaker. The pinot noir vines O’Shea planted began as cuttings from the fabled Clos Vougeot vineyard in Burgundy, and their progeny has spread through Australian and New Zealand vineyards as clone MV6. And McWilliams still makes a wine – Mount Pleasant Mothervine Pinot Noir – from those vines planted in 1921. It’s very, very good. If you think the Hunter Valley is an odd place to plant pinot noir you wouldn’t be alone, but there have been some stellar wines – some legendary wines – that have justified its existence in the region. Tyrrells Vat 6 Pinot Noir 1976 won the Gault Milleau Wine Olympics, making it (in the eyes of that competition at least) the best on the planet. And the landscape of Australian pinot noir has changed dramatically over the past century as the cooler parts of the country – Tasmania, Mornington Peninsula, Bellarine Peninsula, Macedon, Gippsland and Geelong – were explored, and the taste (obsession) for Burgundy changed our perceptions of the grape, and raised our expectations of quality and style. The Hunter Valley pinots don’t really fit the modern bill. But in the early part of the 20th Century Maurice O’Shea wasn’t fretting about future pinot fads; he was using the grape to soften shiraz in wines like Mount Pleasant Henry Pinot Hermitage. It’s a blend that sat comfortably in the Hunter Valley, creating decades of great, long-lived reds from all sorts of producers under the banner of Hunter River Burgundy. The tradition has been kept alive in the Hunter Valley, but barely. Until recent times, when the blend has had something of a resurrection, spreading its wings beyond the Hunter.

It was 18 months ago when I first tasted Yarra Yering’s 2016 Pinot Shiraz – a 50/50 blend that’s light on its feet, juicy, plump and delicious. Less serious perhaps than other reds in the Yarra Yering range, but at the same time brighter, easier, more drinkable. (For the record, the 2016 vintage is sold out but the 2017 is available.) Then, last November, in a lineup of potential trophy wines at the Melbourne Wine Show, another pinot shiraz blend sat in a glass, surrounded by heavyweight cabernets, shiraz’ and Grenache, and looking like a million bucks: Medhurst 2017 YRB. It’s a gorgeous thing – brightly perfumed, silky and lush. According to the winemakers it’s ‘a tribute to the wines made in the 1920’s by legendary Hunter Valley winemaker Maurice O’Shea and a wine to showcase our sites and the season.’ That’s two from the Yarra Valley. Giant Steps made the hat trick when they released the 2017 LDR (Light Dry Red), just a tiny bit heavier on the pinot than the syrah. Again it’s a plush, blue-fruit laden, generous, silky wine that smells like a bowl of ripe berries. All three wines make a compelling argument for more of these styles being made in the Yarra Valley (and perhaps there already are), and given the swing away from heavily-built, highoctane reds they should find a willing audience. What about the birthplace of the style; the Hunter Valley? There it’s a longer list and a little more diversity. I’m a big fan of Silkman Wines – the whole range – and its Reserve Shiraz Pinot Noir is stellar; a more intense, structured beast than the Yarra versions and probably designed and destined for a longer life. Andevine Wines, Hungerford Hill, Meerea Park (it’s Indie Shiraz Pinot is terrific), Briar Ridge and McWilliams Mount Pleasant all dabble with the blend; to name a few. Like the Silkman, these are more robust wines than their Yarra counterparts, usually shiraz-dominant with pinot playing a secondary (but still very important) role, but still only moderate in terms of alcohol. And I guess they are made to improve with bottle age while the Yarra versions might be at their best in their infancy. If the Hunter River Burgundy’s of the last century are any guide, the best of these wines will travel well for decades, expanding, complexing, softening and transforming into graceful middle-aged, then old wines. I won’t be around to witness either. Pinot Shiraz/Shiraz Pinot isn’t new, innovative or pushing any boundaries in terms of winemaking or philosophy. But it is a surprising, clever, perfectly apt blend of grapes that has been tried and tested over nearly a century and is perfectly suited to the whims of the early 21st century. AS PARENTS of two young children, my husband and I often feel the need to ‘get away’ for a little while and remember what life was like rewind five years ago. While I admit the thought of two weeks in Paris may regularly cross my mind, for us a mini break is the perfect balance of reality and escapism. I’m not sure if it was my mood or my unhealthy dependence on coffee that sparked the conversation, however, hubby had an idea. STAYCATION. With the date marked on the calendar in bold red pen, and my bag packed in advance, you could say I was eagerly waiting for the long weekend.

Having grown in up Brisbane, I was patriotically keen to show my Coastal husband the big city buzz and my local knowlege. With only a short hour’s drive we were on our holiday. What better place to stay in the iconic River City, than a hotel… in the city…by the river? The Marriott Brisbane didn’t disappoint. The grand hotel set the tone of the weekend with its sophisticated architecture and interior and its welcoming staff. As I stepped foot in our luxurious executive suite, brownie points were being accrued by Hubby. I caught glimpse of some colourful blooms. Nice touch. He’s doing well.

Stunning marble bathroom. Then my eyes were fixed on that view. Set high above the meandering river, our room was positioned to take in the pointed arches of the Story Bridge. Hubby poured a glass of Sparkling and we toasted to the long weekend and to us surviving parenthood. Chatting over our bubbly, my husband revealed he had booked one of the hotel’s Experience Packages aptly named The Date Night. And with that, I devoured the chocolates he mentioned were included in the package. After all, I had to summon some energy for the retail therapy we were about to undertake.

With a bag or two in my hands, and perhaps a newfound skip in my step, this time away was shaping up nicely. My partner didn’t complain about being ‘dragged’ shopping either. I think he actually enjoyed it almost as much as I did – but don’t tell him I told you that. From the Queen Street Mall, it’s a quick cab ride to the hotel but we chose to soak up some of the cosmopolitan feel of the city and make our way back by foot. The flowing colours and vibrancy of the river during the afternoon were ever changing as we enjoyed talking without the interruptions of daily life. >>

As the sun was beginning to set, we made our way to the Executive Lounge where we whet our appetite in preparation for dinner. The room was abuzz with visitors, most with varying interests in the screen showing two men hitting a ball back and forth. Apparently there was a big tennis match on and I got the vibe we were among some sports enthusiasts. The game seemed to bring guests together as they chatted across the lounge. The Marriott is positioned a short distance from Eagle Street Pier, which boasts being Brisbane’s premier riverside dining mecca with over 15 restaurants, cafés and bars. We contemplated heading there for dinner but decided to stay even closer to ‘home’ and dine in the hotel’s Motion Bar and Grill Restaurant.

We ordered some tasty oysters to satisfy our seafood fix as we were a day shy of the Seafood Smorgasbord being available. (Next visit.) Admiring the wall of wine the Marriot has to offer, it would have been tempting to indulge in a glass or two. However, cocktails were our poison of choice and oh, did we choose well? They were divine and all the more enjoyable among the ambience of the M Bar. After all the day’s indulging, we decided a romantic walk along the riverfront might be a good idea before retiring to our comfy bed for some much needed zzzzzs. Waking up in the morning knowing you don’t have to rush due to a midday check out was glorious.

Breakfast continued the wonderful start to the day with a delicious array of food on offer and welcoming staff to greet us. But alas, our time away had to come to an end. We headed back to the Gold Coast with revitalised minds, happy hearts and full bellies. We vowed to not leave it so long between dates next time. Life is too short not to spend quality time making memories with the one you love. And how lucky the people of Gold Coast and Brisbane are to be able to enjoy each other’s precincts only an hour’s commute away. The Staycation was just what my body and soul needed.

Top marques The fun factor’s high as Chris Nixon reviews the latest from legendary marques Maserati and Ferrari. IF YOU’VE ORDERED a croissant and got a bread roll, you’ll understand how I feel about dieselpowered performance cars. They do the job, but without the excitement promised by the badge on the nose. Such cars are more common in Europe, where fuel prices are higher and driving conditions often different to Australia’s, and I’ll admit there can be a practical case for them. But when I drive a Maserati, I’m out for thrills. A lack of engine character was the only thing I could really find to dislike about the Maserati Levante SUV when it debuted in Australia with diesel power early last year. The 202 kilowatt V6 was relatively economical and powerful and came in a package that was undeniably stylish outside and sumptuous inside. Truthfully, it walked the talk that SUVs are supposed to even when no-one uses it for that, the diesel’s low-down pulling power combining with electronic traction aids to haul this unlikely piece of Italian luxury over some testing bush tracks. And the price of $139,990 was a very sharp entry point for the prestige of Maserati ownership.

But now I’ve driven the Levante with a petrolfuelled 3.0 litre V6 that makes a local road feel like the Brenner Pass. The model has ‘S’ added to the name to distinguish it from the diesel and there are three versions – S ($169,990 list) and S GranSport or S GranLusso (both $179,990). The S has a 321kW engine built by Maserati’s Fiat group stablemate Ferrari. Aided also by 590 Newtonmetres of torque, it will catapult this big wagon from rest to 100 kmh in a sportscar-like 5.2 seconds and on to a 264 kmh top speed. That’s more like it. It’s not the speed that’s important as much as the responsiveness and character. With the electronic drive mode set to Sport and the Skyhooks automatic shock absorbers doing their work, the Levante shrugs off its bulk and becomes truly enjoyable to punt along winding roads at rapid pace. With a perfect 50:50 weight balance, it corners flat and neatly and then the V6 slings it off the exit with an invigorating growl. The Levante has a German ZF eight-speed automatic transmission.

Finger tip-paddle shif t levers behind the steering wheel make it easy to flick up and down the gears whenever the driver chooses. While many makers are adopting the newer, efficient double-clutch gearboxes, there’s still a strong case for the Maserati’s conventional torqueconvertor type and its smoother operation. Power distribution with the all-wheel drive system is biased toward the rear in normal driving but responds in just 150 milliseconds if the road grip changes. The system can vary from 100 per cent rear bias to 50:50 without the driver even noticing. The Skyhooks adjusting dampers combine with air springs and Normal, Sport, Off-Road and ICE (winter) driving modes to soften or stiffen the suspension for different road conditions – soft for the highway, tighter for the winding stuff. The Levante’s off-road ability is impressive and surprising, even if it’s never going to be a rugged adventure machine. The suspension also can be adjusted to six heights for better ground clearance, reduced wind resistance or easier passenger exit/entry.

The arrival of the S petrol model was accompanied by upgrades across the Levante range and the addition of the GranSport and GranLusso (luxury) variants. Cars now feature a comprehsive range of safety features – highway assist (centres the car in the middle of the driving lane), land-keeping assist, blind spot monitoring, traffic sign recognition, radar cruise control, forward collision alert and full-surround cameras. The new Ferrari Portofino is car for what its evocative name suggests – la dolce vita. It’s a classic convertible-hardtop roadster with a front-mounted V8 engine, svelte lines and supreme comfort suited perfectly to touring the Italian Riveria around the ‘fishing village’ of Portofino, where moguls come ashore from massive super-yachts to dine beside the harbour. Or, equally, to the Gold Coast lifestyle where at least the traffic would be easier. Priced from $399,888, the Portofino replaces the California as the least expensive car in Ferrari’s line-up.

The $10,000 saving over the superseded car’s price should be just enough to purchase something modest from the options list. The Portofino is a considerable 80 kilograms lighter than the Cali, structurally stiffer for better road handling and its 441 kiloWatt, twin-turbo V8 is more powerful. Driving through a seven-speed, double-clutch gearbox, the car will hit 100 kmh from rest in 3.5 seconds, according to Ferrari. That is seriously fast (as one expects of a $400,000 Ferrari), yet the Portofino is aimed at perhaps the less serious driver than other models

in the Modenese stable of the prancing horse. First-time Ferrari buyers should love it. It has a spacious cabin, a fast-folding solid roof and will be easy to enter or exit. The boot will take a couple of cabin trolleys for a weekend away. The new body has a lower, sleeker style than the slightly lumpy California, much closer to what enthusiasts had wanted from this model all along. Ferrari Australia matched the Portofino’s resort style with an elegant launch at Byron Bay. It will go on sale soon from the current Ferrari Brisbane dealership and from a new outlet expected to open on the Gold Coast in coming months.

Sailing into the 30th Anniversary Boat Show The Sanctuary Cove International Boat Show (SCIBS) will make maritime history when it celebrates its milestone 30th anniversary from May 24 to 27 this year. AS QUEENSLAND’S first on-water boat show in 1989, SCIBS has grown from humble beginnings to become the southern hemisphere’s premier marine event with hundreds of boats and thousands of marine products on display each year. Over the course of its history, SCIBS has hosted more than 10,000 exhibitors and welcomed 1.4 million-plus visitors through its gates, which has had an economic impact of over $3 billion. Sanctuary Cove International Boat Show General Manager Johan Hasser said the event’s success could be attributed to the expertise

and stamina of organisers, as well as exhibitors, partners, loyal supporters, Mulpha Sanctuary Cove and the event’s unique and pristine waterfront location. “The Boat Show started out as a relatively small event with around 100 exhibitors in 1989 and has evolved to the world-class showcase it is today, attracting more than 300 local, national and international exhibitors,” Mr Hasser said. “SCIBS has grown to become one of the most important B2B events on the Australian boating calendar.

“We are fortunate to have the incredible location of Sanctuary Cove and the vibrant Marine Village, InterContinental Sanctuary Cove Resort and marina as a unique setting to stage the Show.” Mr Hasser said there were several foundation exhibitors who have had a close association with SCIBS over the past 30 years including Bill Barry-Cotter – founder of Mariner, Riviera and now Maritimo – as well as Superior Jetties, Northside Marine, Leigh-Smith Yachts, Polyflex and Trade-A-Boat. Heavily involved in the Show since its inception, Barry Jenkins (aka ‘Mr Boat Show’) said SCIBS


SCIBS 2018 FEATURE was a success from the beginning and had continued to evolve exponentially with the industry across its duration. Mr Jenkins, who was joined by long-serving Harry Davis and his wife Marilyn, worked around the clock in those early days to take a promotional idea and nurture it into an ever-evolving trade and community boating lifestyle showcase. “SCIBS was embraced and supported by the industry from the outset,” Mr Jenkins said. “The recreational marine manufacturing sector was moving into the south-east corner of Queensland – boat registrations were growing at around six per cent per annum and the Show grew in parallel with the industry. “More imports appeared and bolstered the Australian product, and SCIBS championed the industry to an ever-more interested consumer.” Mr Jenkins remembers the first show in 1989, formerly known as the Queensland International Boat Show, causing traffic gridlock from Runaway Bay to Dreamworld, taking visitors three hours to get from the highway to the marina. It was this response, together with positive industry uptake, that resulted in organisers making the show a permanent fixture on the Sanctuary Cove events calendar. Continuing to see growing success each year, and undergoing a series of name changes, SCIBS began to receive international attention and quickly became renowned as the place ‘where the marine business does business’.

THE SHOW CEMENTED ITS POSITION AS THE LARGEST MARINE EXHIBITION IN THE SOUTHERN HEMISPHERE IN 2008, WHEN IT ACHIEVED A RECORD 450 BOATS ON WATER, 600 BOATS ON LAND, 453 INDIVIDUAL EXHIBITORS, A TOTAL OF 53,000 VISITORS ACROSS THE FOUR DAYS AND AN ECONOMIC BENEFIT TO THE GOLD COAST OF $310 MILLION. “Every edition of the Show was exciting, however, seeing the biggest year ever in 2008 is something I will never forget,” Mr Jenkins said. While it wasn’t all smooth sailing, particularly with the effects of the Global Financial Crisis hindering the industry, in addition to a damaging storm that tore through the south-east in 2009, SCIBS continued to maintain its ranking as a leader within the Asia-Pacific marine and boating arena. Over its history, SCIBS has launched new segments to meet market demand and enhance the overall visitor experience. These include Supercar Street, showcasing the latest in luxury vehicles; The Boatyard, a precinct dedicated entirely to fishing, sporting and recreational trailerable crafts; and this year’s Sports, Leisure and Fishing Boats precinct. >>

Rising property values The rise of million dollar Gold Coast suburbs. WORDS NICK NICHOLS

IF MEDIAN HOUSE PRICES are any guide, the Gold Coast now has six million-dollar suburbs, and the latest research reveals that several more are close to joining this exclusive club. Main Beach remained the Gold Coast’s suburb with the most expensive houses with a median price of $1.67million, according to CoreLogic’s detailed snapshot of median property prices for the 12 months to the end of January 2018. This was followed by Mermaid Beach ($1.38million), Surfers Paradise ($1.31million), Clear Island Waters ($1.15million), Broadbeach Waters ($1.13million) and Bundall ($1.07million). The report also reveals that three more suburbs are just shy of this exclusive list – all of them close to water. South Stradbroke Island is the closest to the mark with a median house price of $970,000, but Paradise Point at $969,009 and Runaway Bay at $964,909 are also nearing that magic million figure. Surprisingly, two hinterland suburbs are the next closest with Willow Vale at $902,520 and Tallebudgera Valley at $899,056 on annual price gains of 7.6 per cent and 10.6 per cent respectively. The past year delivered strong housing price growth across the Gold Coast with 14 of the city’s 79 suburbs producing double-digit returns. Market analysts are confident of further gains in the year ahead, although probably at a slower pace. Researcher Michael Matusik sums up the Gold Coast market as ‘pretty solid’ due to strong fundamentals.

In his latest overview of the Gold Coast market, Mr Matusik says the Gold Coast is attracting 12,500 new residents a week and calculates that the market needs 5,000 new dwellings a year to meet demand. However, while residential sales have increased, along with dwelling approvals, he warns that new dwelling supply is ‘struggling to keep up with demand’. “The dwelling market is in a strong upswing in terms of sales,” Mr Matusik says. “There were 8,500 detached house sales; 10,000 apartment sales; 4,000 townhouse sales and 2,500 vacant lot sales on the Gold Coast last year. These volumes are more than double those traded just five years ago. “Current attached dwelling values are rising faster than the mid-term, and especially long-term, average. Median house values rose 7.6 per cent last year; apartment values rose 5.7 per cent and townhouse prices were up 4.5 per cent. “So, too, are weekly rents, especially for apartments and townhouses. Our available rental rate for the Gold Coast is currently 1.7 per cent for apartments, 2 per cent for townhouses and 3.7 per cent for detached houses.” In February he noted there were just 2,000 dwellings advertised for rent on the Gold Coast. “The Gold Coast current momentum is being somewhat influenced by new construction associated with the Commonwealth Games,” Mr Matusik says. Although he believes the local market will ‘cool’ after the Games ‘there is little to warrant a market bust’.

“Values aren’t inflated and there are serious limits on housing supply,” he says. It’s a view shared by other property forecasters, including CoreLogic’s head of research Tim Lawless. “There probably will be a bit of a slowdown after the Commonwealth Games but I don’t think the market is going to crash or probably even go backwards,” Mr Lawless says. “You have the added effect of the broader economy of the Gold Coast. It has certainly picked up, not just because of the Commonwealth Games, but because of a more broad-based improvement on the back of better tourism numbers and stronger migration rates. Labour markets have really tightened up as well.” Mr Lawless says the strongest property growth on the Gold Coast over the past year has occurred along the beachfront suburbs. “It is generally those coastal areas, the eastern strip of the Gold Coast, showing a stronger performance and that’s understandable because that’s where the scarcity is in the land,” he says. “But a lot of the hinterland locations around the Gold Coast have also really bounced back as well.” The CoreLogic data has delivered one notable negative figure among the coastal suburbs with the Broadbeach median house price down 4.9 per cent to $621,849. In contrast, the median price for apartments in Broadbeach jumped 5.2 per cent to $521,171.
