WELCOME TO A BRAND-NEW YEAR. For many of you January means a fresh start, however for the team here at Cove, this first publication for 2024 also marks a significant milestone – our 100th edition. I’ll get to the contents of this issue shortly, but first I want to take the time to thank some very special people. Naturally, our publisher Clare E. Urwin is at the top of the list. Without her vision, drive and determination we wouldn’t even have a magazine. And without her taking a chance on me as a mature age journalism student back in 2005, I wouldn’t be sitting in this chair, doing what I love every day. I am supported by a great group of writers and contributors who help fill these pages each edition, but a special shout out to our motoring expert Chris Nixon who has been ‘behind the wheel’ since Issue One. Chris happens to be celebrating his 60th year as a journalist in 2024 and just quietly I think he enjoys his job as much as I do. And I mustn’t forget the team at Printcraft, who from the beginning have taken the time

to ensure the quality of the printing meets our very high standards each and every edition. (How gorgeous is the work they have done on the cover this time?) Now, let’s take a look inside. The feature interview is with the super talented Bradley Cooper, who shares the story behind his latest project, Maestro, which is tipped to sweep the Oscars this year. Renowned jeweller John Calleija came on board as an advertiser in our first edition so it seems fitting that we have a gorgeous editorial featuring his Hope Soaring creation in the Looking Good section. Our annual ‘Complete Wellness’ feature is also back, with some great advice to keep you happy, healthy and feeling great as we head into 2024. We have a fantastic competition prize too, a five-night stay at the amazing Lomani Island Resort Fiji. Finally, many of you may have already noticed that we have had a bit of a design refresh to mark our 100th milestone. We have also added new video-playing content to the digital edition so be sure to check that out online. On loan As part of the Sharing the National Collection initiative two artworks from the National Gallery of Australia will call Hota, Home of the Arts home from June 2024. The first piece by internationally renowned contemporary artist, David Hockney, A Bigger Grand Canyon, is a 7.4-metre-long landscape painting consisting of 60 canvases. Underwater art The Museum of Underwater Art (MOUA) is a series of large-scale underwater artworks that first opened in 2020 with the aim to connect art, conservation, science and tourism. WORDS LUCY ALLEN / THE INTERVIEW PEOPLE BRADLEY COOPER looks set to sweep the board this Oscar season with his incredible Leonard Bernstein biopic – Maestro. In addition to playing the lead role, the Hollywood superstar wrote, directed and produced the film and is hotly-tipped to receive up to four nominations for his work on the project. Maestro tells the complex love story of Leonard and Felicia, a relationship that spans over 30 years. It starts from the time they met at a party in 1946, continuing through two engagements, a 25-year marriage and three children: Jamie Bernstein, Alexander Bernstein and Nina Bernstein Simmons. Here, Bradley reveals how making this film was a passion project he had harboured since he was a young boy. He also speaks about the process he went through to get the film made, working alongside Carey Mulligan and Matt Bomer, who plays Leonard’s male lover, and the blessing he got from Bernstein’s children. You’ve been fated to do this since you were eight-years-old – is that right? Maybe. [laughs] Yeah, you know, when you’re growing up and you’re watching movies, the ones that really stayed with me were ones where I couldn’t believe there was a camera there – there’s no way, this has to be really happening. And even just watching the trailer, it didn’t really feel like acting, it felt like we were part of something that was very special. And I just feel so privileged to have been able to be a part of this – it’s life changing. >>

[laughs] And I spent, embarrassingly, too many hours just pretending I was doing that as a kid … and into my adolescent years, maybe even college. Truly, I got that baton and I had all these years of being obsessed with it. I lost it like a year ago, I don’t know where the heck it is. But I think that certainly made it easier for me to be able to believe this sort of illusion and this beautiful journey as Lenny [Bernstein].’ And the three Bernstein kids were very much in favour of your concept for this film and the way it’s real, it’s warts and all. Well, truth is the thing that lives and everybody, you know, these incredible actors just brought truth based on love. And I think the kids early on took a chance with me because I didn’t know what I was going to write at the time that they gave us the rights of music, but I did share with them my sort of passion for conducting. That was it. I was then going to research and find the story.

And when I first came to them and said, ‘I want to make a movie about your parents and your mother’, they were really shocked. I don’t even know if they really believed that it was going to be a movie very focused on Felicia. So I think that they were very happy that we were able to unearth this incredible woman, this mother of theirs and put her for you all to see and get to know. Carey Mulligan, who plays Felicia, is so magnificent in it. This is not just a biopic, it’s a love story? Every time we spoke to people, and I must have interviewed 30-some people, they always talked about her. They never sort of said, ‘Lenny and his wife’, it was always, ‘Lenny and Felicia’ – they came as a duo. That was always so powerful. You could see in their eyes and their voice the experience they had knowing them and how privileged they felt to have known them. They really were just these incredible energies. You don’t try to hide the fact that he was bisexual and involved in other relationships. Matt Bomer does a brilliant job of playing David Oppenheim, his male lover? There’s such little real estate that we have dedicated in this movie to their relationship

and it’s only because of this actor [Bomer] that we were able to tell that story with so much power. One of my favourite moments is where Lenny, sort of without any sense of consciousness, introduces Felicia to him. And they’re also involved with each other intimately. I just always wanted these two close-ups and you don’t even see Lenny, he’s just saying, ‘Oh is that insensitive of me?’ And, you know, when you’re working with these kinds of actors you want to be audibly excited but you can’t because you’re going mess up the take [laughs]. But I was right there because I’m in the scene but as a director I’m also going, ‘You nailed it’. [laughs] I had to control myself but it was just so beautiful to watch him in that moment, when he’s taking it all in. I’m just so lucky that he agreed to do this film. You and all the actors must have done so much preparation for this film? Everybody did such a tremendous amount of preparation. And that’s just so thrilling because I loved it so much and I was able to start six years ago on this project. Carey came aboard with no script four-anda-half years ago. >>

We went to Philadelphia and narrated ‘Candide’ for six days – for free [laughs]. And she agreed to do that. And everybody just put in all of this tremendous work. You normally don’t have that sort of prep time and the availability all these artists to come and do this work just for the love of the gaame.

was ready to go at crew call at 6.30 or 7am so I could direct the film as Lenny. It was just this active process every day. We were always trying to get it better. He just never gave up, never gave up, he was always trying to improve it, always. And that was so inspiring to be working with him.

The make-up is incredible in this. Props to Kazu Hiro and his team for the prosthetics, etc? He applied them all himself with a few of his team. And again, he signed on, I think, four years ago. I basically spent weekends at his house putting on the prosthetic with my daughter playing with all of his paint brushes in the background for seven hours. Thank you, Lea, for being patient. And we did tests at Disney Hall three-anda-half years ago. We did five looks in 24 hours, just to make sure I didn’t look like an ‘SNL’ sketch and it was just unbelievable. And we just kept working, even during the filming. We would show up at like one or two am and that’s where we would create Lenny so that he

And you guys got to shoot in actual locations? We tried to shoot in all the places so that, again, this didn’t really feel like as much filming as it was a ritual, a sort of a channelling, really. I could just feel him. He died in 1990 and I swear I knew him, I do. This movie has messed time up for me. It’s bent time, it really has. And yeah, it had to be in the locations and, again, the children, they opened their home to us. That house you see in the beginning of the trailer – that’s their Fairfield, Connecticut home, that we see in the ‘50s in black and white and then again in colour. And so when we walked in there, it was just, you know. And we got to shoot in Carnegie Hall, which was just magical.

We got to shoot in Ely Cathedral where he conducts Mahler’s Symphony – it’s where Lenny did it in the ‘70s. And some of the orchestra members had played with him and the harpist, his teacher was in that performance where the harp was exactly in that place. It was really just incredible. That scene in the cathedral where you’re conducting is phenomenal to watch – you became him. The passion of the music comes through. How long did it take you to get every movement there, when you’re directing yourself? That took a lot of years [laughs]. It was like six years of working on it because conducting is impossible, which I didn’t realise. It’s such a hard thing when you’re keeping the tempo and reminding the orchestra exactly the decisions that were made and at the same time having to digest all this music and send it back out to the audience. So he really was able to stand in the centre of the sun. And that scene is to story because she’s [Felicia] witnessing it.

And I had Gustavo Dudamel, who I worked with intimately, and that piece of music, he conducted the London Symphony Orchestra at the Hollywood Bowl and I was with him for the entire process. Then I went with him to Berlin, to the Berlin Philharmonic for the whole process. And then Yannick Nézet-Séguin, who was the musical director of the Met Opera – he was there every day. He was the one who taught me everything … he is part of Lenny in this movie. The music here is not what you expect. You incorporate it all in unexpected ways, in different scenes? Yeah, that was a key element. I knew that I wasn’t going to make a biopic just because he’s the most photographed, videoed, documented musician maybe of all time. There’s no reason to do that. Many good documentaries have been made about him. But I did want to serve his legacy musically. And I thought well, the best thing to do is tell a story that we can relate to, hopefully, and it’s all to the rhythm of his music. So the movie is scored to his music and that, to me, is the best way that I can then present to you this man’s beauty and his gifts.

Meet Artist Louise Owen Dr Louise Owen, a regular on best-dressed lists, has built a dedicated following for her beautiful mixedmedia artwork based on the female form with a heavy influence from the world of high fashion. Born in outback Queensland, Louise began painting and playing with drawing the female form when she was a four-year-old. Her Mum, Margaret, also an artist, not only taught her to paint but helped Louise develop her life-long love of fashion from the back room of the family’s drapery business in Brisbane. Louise spent many hours there, relishing in the fine fabrics and tailoring that were produced from the store and honing her painting skills for a career in art and fashion but her practical, Finnish-born father, Charles, suggested she study medicine. Never one to do anything by halves, Louise set to work gaining five degrees, culminating in a PHD. Louise had a highly successful career in the corporate medical industry for many years but her passion for painting and love of fashion never faded. She developed her first collection of works titled Mon Amour under the name elaurante – the name taken from her late father’s surname – in 2018. In recent years, a three-year stint living in Texas, USA brought her love of painting back into focus and she successfully launched her second collection, Botanical, in 2020 at Tootsies Luxury Designer Boutique in Houston. Her works, available in a multitude of formats, are sold from Louise’s website, and delivered to fans around the world. Her latest venture, a debut premium made-to-order fashion collection based on her artworks, was released at a gala event in Brisbane in November 2023.

WHILE THE FUNDAMENTALS of good nutrition are well known, new research has revealed a ‘wellness trifecta’ that’s driving Aussie diet choices. Recent research from number one global nutrition and food-tracking app, MyFitnessPal, revealed that when considering diet choices, alongside the nutritional value of food, its impact on the way Aussies feel is also top of the menu. When making choices about the food they eat, close to half surveyed said they consider how food impacts their mood and stress levels, while four in ten cited the impact of food on their sleep. Interestingly, almost a third also considered the impact their diet choices have on the planet. Sleep nutrition expert and MyFitnessPal ambassador, Olivia Arezzolo said the f indings ref lect Australia’s changing attitudes towards nutrition and the overall impact of food on our health and wellbeing. “The food we eat is intrinsically linked to our energy levels, affecting our mood, motivation to exercise and also how we rest and recuperate,” Olivia said. “However, it can be difficult to know the true impact the food we eat has on our wellbeing, unless we track our consumption.” Latest research from MyFitnessPal shows that diet choices boil down to three important considerations - sleep, stress and sustainability. Sleep – Getting a good night’s sleep should be a top priority, as research showed that a staggering eight in ten Aussies admit they struggle falling asleep with almost half saying they’re not getting enough shut-eye. While there isn’t a single food group that guarantees a good night’s sleep, Olivia suggests we can make small dietary adjustments that may help improve the quality of our sleep. “Research indicates diets high in fatty fish, healthy fats, for example avocado or nuts and legumes can enhance sleep quality.

“On the other hand, diets rich in saturated fat, from fried foods for example, and sugar, can compromise it,” she said. Stress – When feeling stressed or not well rested, research showed that Aussies are more likely to give up on their nutrition and fitness goals. Almost two-thirds of respondents say their stress levels impact their sleep and, at times of heightened stress, they’re more likely to reach for processed food and takeaways, and are less motivated to exercise. Sustainability – The research also revealed that over half of Aussies are actively changing their diet due to environmental concerns, with millennials leading the charge on opting for more sustainable food choices. More than a third of those concerned about the environment are ditching red meat in favour of fruit and vegetables, water and pulses and legumes. “While some Australians are reducing their meat intake due to environmental concerns, this diet change can actually positively impact other areas of our well being – like the quality and quantity of our sleep,” Olivia said. To support Australians to reach their health and wellbeing goals, MyFitnessPal helps users track their food intake and measure its nutritional impact. “The food we eat has a huge impact on the way we feel, which is why it’s so important to track it. “Apps like MyFitnessPal can be invaluable in providing information on the quality and quantity of the food we eat, to help us make healthier nutritional choices for ourselves,” Olivia said. “Alongside tracking your food intake, there’s also a variety of healthy eating plans and now a sleep section of the app to keep your track.” MyFitnessPal’s recently launched ‘Sleep’ app integration has been created to help users more easily keep track of how their food choices impact their sleep – giving them insights into their ‘wellness trifecta’ in one place.

When Michael Kollosche considered opening his own real estate agency, he had a clear vision of what he wanted to achieve - be different, be better. To do that, he needed to bring together the industry’s top performers – those who shared the same morals, ethics and level of integrity – to work in collaboration. “I used to look at the top 10 to 15 agents on the Gold Coast and think, imagine if you could bring all of them under one umbrella, with all their contacts, databases and experience, and get them to work together rather than individually. What a powerhouse that would be,” Michael says. “Real estate agents generally, are not held in high regard. I think it’s because some act like cowboys, without morals or values,” he says. “I wanted Kollosche to be different. I wanted there to be a big focus on compliance and ethics, and to make sure that the advice we provided to clients was honest and always in their best interest. “In being honest, you provide the basis for client relationships that last a lifetime.” When Michael opened the doors to Kollosche in 2019, with a team of 11, including some of the Coast’s top agents, he was already on his way to achieving his vision. Chloe Watts is a sweet spot in the Coast’s culinary scene. WORDS MARJ OSBORNE THE FORMER OWNER of the renowned Paddock Bakery, before opening Tarte in Burleigh and more recently Tarte Beach House, Currumbin Creek, Chloe Watts could justifiably earn the title of the Gold Coast’s ‘Queen of Tartes’. Every venue that she has owned has received unrivalled attention from fans and love from both press and social media, as each one progressed from strength to strength. Yet, none of this success has happened by chance. Gold Coast born and raised, Chloe says she was blessed by positive, forward-thinking parents whose inclusion of their children in their daily lives has enabled both her love of food and design, and her attitude to life. “Mum was an amazing cook,” she says with a smile. “We didn’t grow up with basic Australian cuisine, but with a lot of Asian-influenced food, and we were also exposed to world flavours when we travelled with our parents. “This sparked something in my older brother Ben, and in me, making us passionate eaters as well as creators.”

While travelling to Sydney and then London, Europe and the US, Chloe began creating her own portfolio of ideas, such as venue concept design, dishes she loved, and the differences in pastries around the world. “The French may have been the originators of pastry, but other places such as New York have refined its quality, elevated it from its original concept to find what works and what doesn’t,” she tells us. After taking over the hugely popular ‘bread-centric’ Paddock from her brother Ben, Chloe added ‘a menu of what I love to eat’ (including more pastries and brunches). A juice and milkshake bar, as well as a loft, was added which also expanded seating options. Two and a half years later, during the heart of Covid in 2020, Chloe grabbed the chance to secure a prime corner location in Burleigh Heads; one that would truly reflect her vision and dreams. She then transformed the space into the impressive Parisian-style pâtisserie Tarte, referencing the great continental bakeries she had visited in her travels.

Finally, after all the years Chloe had spent planning, creating and testing those all-important recipes, Tarte’s beautiful detailing came together as a work of art. While the allure begins on the street with Tarte’s gilded name and bespoke windows, inside the venue shows at least as much labourintensive preparation: 100-year-old counter tops and door handles, vintage train luggage racks, imported light shades, wall sconces from Amsterdam, duck blue accents and tableware. The floor is the pièce de resistance, with 5,000 hexagonal white tiles being chipped out by Chloe and her dad and a black tile being painstakingly hand laid in its place. If the venue is a feast for the eyes, it is wellmatched in the food. Tarte’s menu of internationally inspired delights is lovingly brought to us from Paris, New York and San Francisco, each dish boasting a history rich enough to lead us on our own explorations. The salad and fresh juice bar, added a couple of years after opening, is the final piece of the jigsaw, Chloe says, extending the venue’s offerings to a wider audience.


While Tarte had been the realisation of Chloe’s dreams, Currumbin’s Tarte Beach House expanded that vision even further. “This had been my dream spot for years,” says Chloe, as she recounted her longing walk-bys dating back to childhood. “I had always seen the potential in this building and knew that one day I would make it my own,” she adds. Chloe’s plans took their first step towards reality when her mother urged her to approach the former restaurateur and ask whether she would consider selling. The timing was right, and after Chloe secured the dual-lease property, she set about transforming the building to her own exceptionally high standards. Just as she did with Tarte in Burleigh, Chloe she spent months sourcing individual vintage and antique pieces to speak of the heritage of her café: 100-year-old umbrellas from a French beach, an old pharmacy table for the entranceway, and lawyer cane light shades along the veranda that ground the French theming in Queensland. Upstairs, with a 100-year-old fig tree framing the entrance, a wall of historic photographs tells the story of the two Tarte venues through the ages. “This is my happy place, working here looking across the river,” Chloe tells us, as we talk about the mental health benefits of blue and green space. “It’s so peaceful. So serene.” Not content with replicating Tarte, Chloe wanted the menu of her Beach House to fit the iconic magnitude of its location. “I wanted to bring an elevated take on Tarte to this amazing venue,” she says. The stylish 100-seat restaurant boasts attention-grabbing savoury dishes, such as zingy House-cured beetroot and citruscured salmon served with fresh citrus pieces and herbs around a bed of whipped crème fraîche, or the luxurious Lobster roll with hot buttered Southern Rock lobster sandwiched in a toasted homemade brioche bun. A varied array of pastries complements the savoury offerings, the venue expanding as we speak to include a private function room serving high tea and lunches, with picnic baskets, afternoon drinks and charcuterie and supper club in the pipeline. “So much of who I am and what I do originates from my parents and how I was brought up,” Chloe tells us. “From venue design to our menus, I have passion for what I do, and I work hard to see my plans come to fruition. “Nothing comes easily. It’s not all rainbows and unicorns. I have to work for it.” Asked what she has had to give up to achieve her goals, Chloe flips her answer back to positive, “Balance is important.,” she says. “I am a mum first with a business, not a businesswoman with a child. “My son, Charlie, comes to work a lot, and he loves it here as much as I do. “I am fortunate to spend more time with him than most working mums do,” she adds. “Of course, there are people who help me. My husband is an amazing dad, and I have a great support team. “I train and treat my team members with respect, and we are still together, years later. “Most of all, though, it comes down to mindset. “You need to have a passion and believe that you can achieve what you want to … like many more Tartes in the next ten years,” she adds, leaving us all smiles.

Champagne C E L E B R A T I O N From Pét-Nat to prosecco … Tony Harper shares the lowdown on some his favourite sparkling wines.

ONE HUNDRED EDITIONS OF Cove magazine, Christmas, the demise of 2023 (thank goodness) and the beginning of a hopefully much more uplifting 2024. It’s very much a time for celebration, which – when it comes to wine – can only mean one thing … bubbles. And even without the excuses to celebrate, we wine drinkers have an absolute cornucopia of fizzy wine to choose from. A couple of decades ago there was no Pét-Nat, very few grower-champagnes, prosecco was only drunk while on holiday in northern Italy. And as for Aussie sparkling? It was very good and getting better – a trend that has continued unabated. Right now we have it all, from English to Tasmanian, white, pink and red, frivolous to the very, very serious. It’s impossible to trap them all in an article of this size, so I’ve opted for just a handful of wines that have given me a shock of excitement while we made yet another turn around our sun. Let’s begin with the Aussies.

His portfolio includes several Pét-Nat's, each with their own significance and allure. But I’m rolling with The Susan, crafted from 81% Fernao Pires with Montepulciano and Lagrein making up the balance. “Gentle bubbles, fresh fruity nose and lingering texture make this the perfect, refreshing and crunchy Pét-Nat. Perfect served cold during the Australian summer." And, importantly, no Sulphur addition at any stage of production.

It would be fair to say that Oakridge has something of the Midas touch, thanks – in no small part – to Dave Bicknell and his winemaking team. And there is the fact that the Upper Yarra Valley is a wonderful garden for sparkling wine grapes. This drop , however, is quite special thanks to its nearly six years on lees (most of your favourite champagnes would be lucky to see two years, and possibly three if they are vintage), but also because the exceedingly deft, perfectly judged balance between weight, complexity and crunchy acid. If you could bottle Audrey Hepburn, she’d be an Oakridge Blanc de Blancs.

It’s almost annoying that I feel the need to include Pét-Nat in the short-list, but the style has become such a mainstay for sub-$30 sparkling. And the array on offer has both improved and increased tenfold so it needs to be here. Doug Woodward – husband to the ABC weather guru Jenny Woodward, father of three and unstoppable personality – has forged a rather late in life career making wines in an extremely artisanal manner. He has finally moved his operation from the spare room in his Enoggera home to a shared winery in the Barossa Valley … Jenny breathes again.

Dal Zotto Col Fondo Prosecco 2019. RRP $30 Col Fondo refers to the original, farmhouse style of making Prosecco, before filtration, I units and stainless steel. The result is a cloudy, characterful, less fruity but more complex expression of Prosecco; I love this version. A touch over 11% alcohol it is all about freshness and crunch.

Oakridge Blanc de Blancs 2019. RRP $65

Bellebonne Sparkling Rose 2017. RRP $80 Last year this wine took out the Halliday Awards for Best Sparkling Rose, which it absolutely deserves. Natalie Fryar cut her teeth making some of the country’s most alluring sparkling wines under the Jansz label, for what must be a decade or two. Bellebonne is her own project and the wines have all the purity and finesse that comes with top-notch Tasmanian fruit, plus the X-factor that a little wisdom and experience adds to the mix. Made solely from Tassie Pinot Noir, immaculately put together, it combines power, richness, loads of nuance and that unshakeable Tasmanian crunch.

Daosa Blanc de Blancs 2019 RRP $90 Xavier Bizot (yep, the same Bizot as Bollinger) moved to Australia to marry Lucy Croser, daughter of Anne and Brian (Petaluma and Croser) and created along the way Daosa, using the fruit from the Piccadilly Valley, just like Croser. So there is immense pedigree in the Daosa wines, and this I believe is its masterpiece. 100% Chardonnay, fermented and aged in old oak barrels before its secondary fermentation and lees ageing for close to four years. It has everything – brûlée, cream, toast and butter, lemoncurd, nut; what a wonderful expression of Australian sparkling.


And now to Champagne. No matter how good the opposition from Australia, New Zealand, England, Oregon, anywhere, there is something that makes the wines of Champagne more desirable, more prestigious; worth paying a little more for, even if it is all just posturing and a very strong, clever, long-lived marketing campaign that makes them so. But the landscape has changed and the focus is irrevocably shifting from the stranglehold of the major houses to a much more balanced and interesting array that still includes the big guys, but also an increasing array of family-owned, grower-producers. What a way to make champagne more interesting.

Andre Clouet 1911 RRP $180

Krug Grande Cuvee RRP $480

Andre Clouet is one of my my favourites of the smaller houses … and it has been doing its independent thing for several generations. 1911 is its most extreme wine. Made from only Grand Cru Pinot Noir from the Clouet vineyards in both Bouzy and Ambonnay (the pinnacle villages for Pinot Noir in Champagne), it is an assemblage of at least ten vintages, aged for an incredible decade or more on lees. It is rich, bold decadent, and far more suited to good stemware with some serious food than a pool party.

I have a soft spot for Krug; I always have and always will. Other champagnes have waxed and waned, fashions have changed, recipes tweaked. Yet Krug has always stood aside from the petty machinations. It makes perhaps the longest-lived of all champagnes, and one of the most complex. And that’s a wrap. Are these the best? Probably not, but they are pretty good candidates. Congrats of your 100th Cove, and Happy New Year to the rest of you.

Agrapart Terroirs RRP $180 A good friend who really knows his stuff warned me a few years ago that Agrapart would soon become rare and very expensive, because it is so special. Well, it has become very, very rare, and the price has probably doubled. But it is not at all expensive if you think about the wine. It's Blanc de Blancs (100% Chardonnay) from four top villages in the Cote des Blancs, and made in Agrapart’s compelling style that involves oak (old and neutral), a great degree of reserve wine, and very little dosage. Every Agrapart is a masterpiece; Terroirs is the one that can occasionally be found.

BEHLAU MURAKAMI GRANT has earned a reputation as one of the country's leading boutique law firms having represented clients in some of the nation's highest profile cases but what is not known is that the firm also has a long and proud history of acting for people in need without charge. This is what is known as acting pro bono. ‘Pro bono’ comes from the Latin phrase ‘pro bono publico’ which means ‘for the public good’. In the legal context it generally means the provision of legal services on a free or significantly reduced fee basis, with no expectation of a commercial return. The commercial success of Behlau Murakami Grant’s three divisions, namely the Criminal Defence/Corporate Regulation Division headed

“My partner Jason Murakami started the internationally renowned Griffith University Innocence Project in 2001, and in 2021 celebrated more than 20 years of providing pro bono services to people in need, whilst Ron Behlau last year celebrated 15 years of providing pro bono services to the Project as well.” For a nationally renowned boutique litigation firm based in Southport, Behlau Murakami Grant boxes way above its weight in the pro bono stakes, which is enhanced by the involvement of Ron, Jason and Senior Associate Mr Brendan Reidy as members of various prestigious Queensland Law Society Committees that actively participate and advocate for improvements and changes to the law and the legal profession in Queensland. "It's impressive for a firm to have one lawyer on a Queensland Law Society Committee but it's rare for a boutique firm to have three committee members," said Ron. "It's an indication of how serious we are about giving back to the community." On a more local level, Shane provides pro bono assistance to local domestic violence charity, ‘The Sanctuary’, a retreat for women and children who are the victims of domestic violence. "The fallout from a broken relationship in terms of domestic crimes, domestic violence and parenting is one of society's serious now problems," said Jason. "There are lot of people in need in this space and my partners and I are determined to make a difference." Behlau Murakami Grant takes so serious its pro bono work that this year it established its very own Pro Bono Division headed up by Ron. "A person can apply to the firm, and if the matter falls within the scope of our Pro Bono Division's Guidelines, then the firm can agree to act on behalf of the person on a pro bono basis," said Ron. "The systems that were created and pioneered at the Griffith University Innocence Project have been adopted in our Pro Bono Division. “The firm's partners, senior associates, associates and solicitors work with law graduates and leading experts to assist persons in need and to uphold the rule of law." My husband and I are firmly in the first category so we were very pleased to receive an invite to board Royal Princess for a 4-night journey from Sydney to Hobart and back. Guests can also download the free Princess MedallionClass app on their smartphone, literally putting all the ship’s relevant information such as activity schedules and deck plans in the palm of their hand. Once onboard, we experienced the Princess Premier package, which included unlimited Wi-Fi, a premier beverage package, fitness classes, speciality dining, reserved theatre seating, room service delivery and a host of other benefits. Some guests may be wary of such packages, however, we found it both easy and convenient. While the weather wasn’t so kind to us on the sea days, meaning the upper decks and many outdoor activities were off limits, there was

more than enough happening inside to keep everyone entertained. As with all Princess ships, the Atrium was the central focus for much of this activity. Zumba classes, line dancing and salsa lessons, children’s story time, arts and crafts and crew versus guest challenges all took place in this central hub. For me, any meal I don’t have to prepare is a bonus and I found the food offerings on the ship both tempting and delicious. The ship’s signature restaurants Allegro, Concerto and Symphony – offer exceptional a la carte menus or for a touch of romance you can order the Balcony Breakfast Experience delivered straight to your room. You can also try Sabatini's Trattoria for traditional Italian, the Crown Grill for amazing steak and seafood or Alfredo's for pizza and pasta.


The International Café in the atrium serves great coffee and cake, while the buffet delivers a feast day and night. Speaking of nights, the ship comes alive every evening with cabaret-style shows in the Princess Theatre, hosted entertainment in the Princess Live! studio and musicians performing in many of the bars and common areas. One of the main things that struck us during our time on Royal Princess was how many intergenerational family groups were on board … grandparents, parents and kids all gathering at meal times or for movies on the deck and then going their separate ways during the day. With two swimming pools, eight outdoor hot tubs, a fitness centre, mini golf course, and the spectacular Seawalk, a dramatic over-the-ocean glass walkway that hovers 39 metres above water and extends 8.5 metres beyond the ship's

edge, there is certainly something to keep everybody busy. The younger ones are also well taken care of with the Camp Discovery Youth and Teen Centres catering for ages 3-17, while The Sanctuary area is reserved for adults only. The Lotus Spa and The Enclave are also very popular spots if you are looking to relax and unwind. With so much to do onboard, there really is no need to leave the ship but Hobart is one of my favourite cities, so when we docked we were keen to go ashore. Even though we only had one day to explore, it was great to revisit the Museum of Old and New Art. Commonly known as MONA, this selfconfessed ‘temple to secularism, rationalism and talking crap about stuff you really don’t

know very much about’ should be on everyone’s must-do list if they are in the region. We were also treated to a high-end cultural Tasmanian Aboriginal food and bush tucker experience with Palawa Kipli, where we tasted native local ingredients and got a first-hand glimpse into how palawa (Tasmanian Aboriginal people) undertake culturally-centred land management across lutruwita/Tasmania. This 4-night itinerary was a great ‘starter’ cruise for anyone contemplating this form of travel, but I can almost guarantee that once you have a taste of life at sea you will find yourself booking a longer journey in the not-too-distant future. ROLLS-ROYCE ONCE claimed in a famous advertisement, ‘at 60 mph the only sound you’ll hear is the ticking of the clock’. As now even the clock is silent, what does Rolls do to maintain its reputation as the most serene vehicle on the road? The answer is the all-new Spectre, a ground-breaking model in the 117-year history of the so-called best car in the world. You see, it’s all-electric. As it accelerates with the unstoppable surge of a navy destroyer, the Spectre is absolutely silent and free of vibration. Shut your eyes and the only sensation you feel is inertia pushing you back into a sumptuous leather armchair … it’s almost other-worldly. One of the first Spectres passed through Queensland recently on a demonstration tour and I was invited to take a ride (a ride, only). This isn’t just a car. It isn’t just a Rolls-Royce. Right now it may be the best car in the world. The models sold during this tour should arrive late this year and even at close to a million dollars including inevitable bespoke extras and on-road charges, this incredible vehicle is clearly heading for a sell-out. The Spectre is the first electric Rolls-Royce and by 2030 a complete battery-EV range – Phantom II and Ghost saloons and Cullinan SUV also – is set to follow directly without any diversion via hybrid battery-combustion power. This sadly will mean the end after 20 years of the famous R-R V12 petrol engine. But unquestionably EV makes unique sense for Rolls as it pursues zero emissions and always the world’s most refined motoring experience. The Spectre symbolises Rolls-Royce’s thoroughly modern approach. No longer an upright old barge for top-hatted, back-seat barons, the latest Rolls appeals to younger owner-drivers with sleek body design, bright colours outside and inside, big polished wheels, hi-tech digital dashboards and unique shooting-stars headlining featuring thousands of pinhead-size lights. (That last item sounds garish, but in fact is magical; an option extends it down into the door linings.) The two most recognisable Rolls-Royce hallmarks have been updated for this new era. The iconic Spirit of Ecstasy is smaller and leans more forward – the result of hundreds of hours of design work, it’s said – and the Parthenon-style front grille is wider rather than taller for the first time in 117 years. The rear-hinged doors are a massive 1.5 metres long and of necessity, power-operated. Umbrellas in colours to match the bodywork are nestled in each door jamb. The Spectre’s coupe body provides four seats in a magnificentlyappointed interior (a standard interior is impossible to describe, as Rolls-Royce’s Bespoke program ensures virtually every vehicle is finished to the buyer’s unique preferences). >>

Including 700 kg of underfloor battery – which Rolls-Royce says largely replaces in weight and function the sound-deadening material used in its other models – the Spectre weighs a gargantuan 2.97 tonnes. Despite this burden, 430 kW of electric motors front and rear fire the car from rest to 100 kmh in 4.5 sec. Top speed? – a gentleman doesn’t ask. Claimed driving range on a full battery is 530 km, although Rolls-Royce suggests this is unlikely to be tested on trips to the remote backblocks – owners typically have seven more suitable vehicles in their garages. It will be a sublime experience wherever you drive. My chauffeur assures me it’s easy and light to steer and the ship-like bulk of 5.5 metres length and 2.1 metres width shrinks with familiarity. As if riding in the Spectre was not special enough, he insisted at one stage I get out and stand on the roadside while he drove past several times, so I could admire the stately progress … Not merely a rich man’s toy, but also an example of the art of motor car design and engineering at its very finest.

The new, fifth-generation Grand Cherokee is the leader of the pack. WORDS CHRIS NIXON AMID THE HUNDREDS of SUV models now swamping our highways, relatively few can actually fulfil the original, traditional role as heavy haulers and off-roaders. For that, grey nomads and boat owners need something heftier, like the Jeep Grand Cherokee. If you’re tired of Toyotas, indifferent to Isuzus or numb over Nissans, the new, fifth-generation Grand Cherokee offers a taste of American character. It’s available in five-seat and seven-seat wagons across three model grades priced between $77,950 and $103,250. All are powered by the Chrysler group’s vintage 3.6 litre Pentastar V6 engine. With 210 kW, it’s powerful enough but noisy and not particularly smooth. A long-standing diesel option has been discontinued in the interest of emissions standards, but an economical hybrid-powered version is a-comin’ down the trail soon.

Jeep’s off-road ability is well-regarded and the top-shelf Overland version I sampled recently came with a package of aids for the adventurous 4-wheel driver, called Quadra-Trac, Quadra-Lift and Select-Terrain. As these names suggest, they will make rock-climbing easier, lift the ride height over obstacles and adjust the response of the driving controls for conditions from mountains to mud. Being American, it’s got an abundance of other driving and comfort features too, including automatic emergency braking, blind-spot monitoring and 360-degree cameras – the last equally useful for checking where your wheels are on a rutted track or in a narrow city car park. Jeep includes a communications feature called Uconnect, which pairs with a smartphone to allow many functions from remote locking, to break-in alerts and OTA (Over The Air) software and map updates.

The Overland’s cabin is upholstered in leather and all the controls on the dash centre console and steering wheel are well organised and convenient to use. It’s a big vehicle, but with a wide range of adjustments for the steering wheel and seat positions, it’s possible to achieve a commanding view, whatever your size and shape. That will appreciated by drivers with a trailer hooked up. However, it’s a little surprising that the towing capacity is quoted by Jeep as 2813 kg, when rivals in this class typically claim 3500 kg. While looks are a subjective judgement, in my book the Jeep Grand Cherokee is one of the more handsome wagons in its class. Combined with a high level of interior comfort and strong off-road ability, it might be the ticket for adventurers who want to stand out as the Chief rather than an Indian.

Heady forecasts for luxury properties in 2024. WORDS NICK NICOLS

THERE WERE MIXED SIGNALS for the national property market at the end of 2023, putting a number of forecasters at odds with each other over how property prices will fare in 2024. SQM Research is one of the naysayers that sees a potential softening of prices for most capital cities, other than Brisbane and Perth which it says are supported by strong underlying fundamentals. Many of the major banks, on the other hand, see prices continuing to rise. However, there is some common ground on both sides of the analytical spectrum and that rests in the luxury end of the market. The most robust forecast comes from the Knight Frank Wealth Report which is factoring a

rising momentum of price growth over at least the next two years. These forecasts come amid a slowing of property price growth across the broader market at the end of last year as higher interest rates appear to be reining in buyer enthusiasm. CoreLogic research director Tim Lawless says worsening affordability and persistently low consumer sentiment are ‘acting as a drag on value growth in some markets’. Perth, Brisbane and Adelaide stood out as the year-end stars with a ‘resilient and rapid pace of growth’. Lawless puts this down to ‘remarkably low levels of advertised supply while purchasing activity is holding above average levels’.

But SQM Research’s annual Housing Boom and Bust Report has made the biggest call for a potential market slowdown with the researcher tipping Sydney will either have a flat year or endure a moderate fall of up to 4 per cent. Melbourne is also tipped to be hit by a ‘modest correction’ of up to 3 per cent. Canberra is likely to be the hardest hit with SQM highlighting a slowdown in government spending, and increased supply due to a rapid delivery of residential projects, leading to falls of between 4 and 8 per cent in the nation’s capital. “If I am wrong and the housing market has another strong year, it will be because employment growth has continued to be firm and/or migration has once again grown more


quickly than expected and homeowners once again have managed to withstand the higher lending rate environment,” says SQM Research managing director Louis Christopher. “Perth and Brisbane are still very likely to record price rises based on super-tight rental conditions, a better-than-expected global commodities market and minimal exposure to the financial services sector (where we believe there maybe be significant job losses).” But in the lofty world of premium properties, Knight Frank’s Wealth Report has made a bold prediction that prices, which were up 3 per cent at the end of 2023, will increase by 4 per cent this year and 5 per cent in 2025. Notably, Sydney, Gold Coast and Perth all achieved annual growth above the 2023 global average of 2.1 per cent in the latest Wealth Report – at 4.2 per cent, 3.9 per cent and 3.8 per cent respectively.

However, growth did ease in Sydney over the past six months. Brisbane rounded out the Australian cities listed in the top 15 of the Knight Frank Wealth Report’s global index of 46 cities. Melbourne was languishing in 26th position with growth of just 0.7 per cent after the luxury property market in the Victorian capital suffered a 1.8 per cent fall in prices over the six months to the end of September. Despite this setback, Knight Frank says luxury properties in Australia continue to be supported by solid demand and constrained supply. Knight Frank’s head of residential, Erin van Tuil, says there was a strong uptick in luxury residential transactions in the second quarter of 2023, leading to an improved performance in the third quarter even though more luxury homes were listed for sale than earlier in the year.

“The average length of time to sell a prestige home is generally taking longer across Australian cities with more clients taking their time to consider their options for expanding their property portfolio, despite very little variety of homes available,” says Ms van Tuil. “Exceptional one-in-a-generation homes in the super-prime space are of ten selling swiftly off-market to ultra-wealthy clients who have been waiting years to upsize and, in many instances, achieving suburb records well beyond the $10 million threshold. “A lt hough uncer taint y remains in global markets, Australia tends to be insulated with our relatively smaller prime residential market and this resilience is likely to deliver a stronger price performance forecast for coming years.” covemagazine.com.au i s s u e 1 0 0 Issue | c99 o v –e m a g a z i n e . c o m . a u 93 93

From Apollo Bay to the Arctic, Sunshine Coast photographer Mark Gray captures some of the world’s most spectacular landscapes.

PHOTOGRAPHER MARK GRAY and his family became political refugees during Covid, escaping Melbourne (the most locked down city in the world) to Darwin and quarantining for two weeks in Howard Springs. They then drove half way across the country to find a place to live on the Sunshine Coast where Mark opened a new gallery in Mooloolaba to complement his flagship store in Melbourne. Celebrating 20 years since he first started his landscape photography journey, Mark shares some insights into his career and what he still hopes to achieve. How did you get into photography? I have always been a creative, originally working in web design for many years. I was working with high quality photography in my design work daily and without even realising,

I was growing an appreciation for the elements required to make a good photograph. I didn’t, however, take any real interest in photography until I met Suzy, who eventually became my wife. When we started dating, we both developed a passion for travelling and would often spend long weekends away at places like the Great Ocean Road. It was on one of these trips in Apollo Bay that I just happened to wake up early and witness an incredible colourful sunrise … it was like nothing that I’d ever seen before. It was in that moment that I felt a strong desire to find a way to share moments like this with the world. God revealed my calling that morning, and since then it has been my mission to share his glory through my photography.

Do you specialise in a particular style? Most of my work would be considered traditional landscape photography and I spend most of my time shooting by the sea or in the mountains. I am a hunter by nature, so enjoy the excitement of stalking the perfect light and when it doesn’t happen, I’m fully prepared to revisit a location many times over weeks, months or even years until the magic happens. I also enjoy shooting aerial landscape photography. All my aerial work to date has been captured on high resolution cameras from planes and helicopters which allows me to produce large, high-quality prints. Nothing beats the thrill of hanging out the door of a light aircraft or helicopter with the wind in your hair.

Having said that, I also recently invested in a drone to try something new. While the resolution doesn’t compare to my other cameras, it will allow me to get into places not accessible by planes or helicopters due to lower altitudes, flight restrictions and/or inclement weather conditions. How do you prepare for the different shoots? Every one of my photos has a story behind it. I spend a lot of time researching my target locations before visiting them. I often use tools such as Google Earth looking for interesting subjects (especially for aerial shoots) and you’ll sometimes see me in visitor information centres getting ideas for locations to shoot. Research is important but nothing beats actually visiting your target location. I often won’t even get my camera out of my bag on the first visit to a location, instead spending my time to assess the lay of the land and best time of year and day to be there. This gives me the best possible chance of capturing something truly special. After that I begin visiting at my preferred time of day/year and eventually something spectacular happens.

How do you continue to create/find new inspiration? I spend a month every winter in the Arctic region, a location that inspires me greatly. I conduct tours in Norway and Iceland, empowering amateur photographers with the skills required to capture the Northern Lights and Ice Caves. I always allow time either side of my Arctic photography tours to shoot new photos for myself. I just love this region because it’s incredibly changeable … the weather and landscape changes daily offering new opportunities all the time. While back at home, I also enjoy viewing the winners’ photographs in some of the big international photography competitions. This inspires me to continue to improve on what I do and discover new locations that I hadn’t considered before. Do you have a bucket list project/destination that you would like to shoot? I am excited to be heading to the Dolomites in Italy next year for the first time to capture the amazing mountains, lakes and forests during the autumn period.

I’d also love the opportunity to visit Greenland to shoot the incredible fjords, mountains and icebergs. What has new technology brought to photography? Generally speaking, digital cameras have revolutionised photography for a variety of reasons. Instant image review, no ongoing costs for film, processing and scanning plus sensors that offer a much larger dynamic range than film ever did (effectively recording images much closer to how we see them with our eyes). Drones can’t be overlooked either – particularly because they can access locations that were previously unattainable thus opening up a whole new world of opportunities for photographers like myself.
