1 20oz can crushed pineapple (drained) 1 cup honey 1 chipotle pepper in adobo sauce minced (optional) 12 chicken thighs (bone-in & skin on)
Preheat oven: 400 degrees. Rinse and pat dry chicken. Season with salt & pepper, place in Ziploc bag and marinate with ¼ cup Chipotle Olive Oil. (at least 4 hours). Transfer to large baking dish and bake chicken 1 hour. In medium sauce pan, sauté remaining 2 T. Chipotle olive oil and garlic until golden. Whisk in ketchup, honey, balsamic, soy sauce and crushed pineapple and simmer for 15 minutes. Remove skin from cooked chicken and toss with desired amount of Pineapple BBQ sauce and serve over rice. (save extra BBQ sauce for later)

Just a decade ago, Imperial Beach’s Serge Dedina, co-founder of WILDCOAST, set out to protect some of the most beautiful and biologically significant coastal areas in the Californias and Latin America.
According to the WILDCOAST website, about 35,000 endangered sea turtles are slaughtered off the coasts of Baja California each year, making its waters the most dangerous place for a sea turtle to swim anywhere in the world. Though it has been illegal to harvest and consume sea turtle in Mexico for more than a decade, black market demand for endangered sea turtle meat is widespread in both Southern California and Mexico. WILDCOAST firmly believes that if they are able to reduce the consumption of sea turtles, they will be able to eradicate a huge black market that threatens these spectacular species.
Because Mexico plays such a crucial role in the world’s sea turtles, WILDCOAST has an office in Huatulco, Oaxaca, close to the most important beaches for sea turtle survival, beaches like Morro Ayuta and Santa Cruz. Over the past 10 years, they have made sure that millions of hatchlings make it to the ocean unharmed.
