2010 Loyal E. Horton Dining Awards Contest Residence Hall Dining - Theme Dinner
March 31, 2010 was a spectacular day to be a guest of UNH Dining. It was the day we hosted Mary Ann Esposito, world-renowned celebrity chef and host of TV’s longest running cooking show Ciao Italia to present a day-long event we named La Cucina Italiana to honor Mary Ann’s Italian kitchen. The staff of Philbrook Dining Hall hosted an amazing lunch utilizing Mary Ann’s recipes as well as splendid décor and a musical duo playing traditional Italian favorites that just put the event over the top. Attendance for lunch was well above normal and included many faculty and staff that came out for this event. Mary Ann was available to meet and greet guests, talk about her recipes and sign her most recent cookbook, Five Ingredient Favorites. Many of the recipes for the Philbrook lunch as well as the rest of the day were from Five Ingredient Favorites. The La Cucina Italiana event was filmed for an episode of Ciao Italia. The cooking segment was filmed in Stillings Dining Hall with UNH President Mark Huddleston and his wife Emma Bricker each creating a recipe with Mary Ann. Our catering department passed around hors d’oeuvres during the filming to the capacity audience. This event was entertaining and fun; look for this episode to be broadcast during the next season of Ciao Italia. The day was capped off by a La Cucina Italiana Dinner in Holloway Commons, UNH Dining’s largest facility. Nearly 3000 students, faculty, staff and community members enjoyed a delicious and tastefully presented repast. Mary Ann again spent much time greeting our guests. It was amazing to see how many of the college age generation knew of Ciao Italia and had grown up watching it. La Cucina Italiana at the University of New Hampshire was a great success.

Converting the recipes to large quantities presented different challenges, but in the end, the recipes were perfectly executed. Mary Ann and our guests were all delighted with the meals served during this event.

To celebrate our Great Chefs’ theme, La Cucina Italiana, we captured the essence of an Italian kitchen, complete with fresh fruits, herbs, flowers and greenery. The rustic sign that graced the entry of the dining hall was hand-painted by Kerry Buchanan, who is a talented member of our kitchen staff.

The decor of the La Cucina Italiana Luncheon was warm, inviting and reminiscent of an Italian kitchen overflowing with bright sunflowers. To add to the ambience of the event, strolling musicians provided a musical backdrop throughout Philbrook Hall.
Cooking Demonstration Stillings Hall
Mary Ann invited UNH President Mark Huddleston and his wife, Emma Bricker to join her on stage for a cooking demonstration at Stillings Hall. Together, they prepared two delicious entrees - Farro with Sausage and Whole Wheat Spaghetti with Roasted Vegetables. Tastings of both items were offered to guests following the demonstration. The session was filmed with a live audience for a segment of Esposito’s television show, “Ciao Italia.” which will air in its 21st season.

DURHAM, N.H. – Mary Ann Esposito, host of the long-running PBS cooking show “Ciao Italia,” will spend the day at the University of New Hampshire March 31, 2010, as part of UNH Hospitality Services’ Great Chefs on Campus series. President Mark Huddleston and his wife, Emma Bricker, will assist Esposito during an afternoon cooking demonstration at Stillings Hall. A UNH alum with a master's degree in food history, Esposito has taught in numerous cooking schools throughout Italy and is the author of 11 cookbooks. Her bread book “What You Knead” won the International Cookbook Revue award for best in its category, and was also named one of Food and Wine's top cookbooks. “Mangia Pasta” was nominated by the International Cookbook Revue as one of the three best cookbooks connected to a television series. “Ciao Italia with Mary Ann Esposito” is in its 20th year. Readers can get tips, recipes and other cooking information on her blog at www.ciaoitalia.typepad.com. Her Web site is www.ciaoitalia.com. The Great Chefs event will kickoff at 11 a.m. in Philbrook Hall where UNH chefs will use many of Esposito’s “five ingredient favorites” (from her cookbook of the same title) to make delicious and affordable lunches, while from noon to 1:30, she will sign copies of her newest book. Lunch is free to all UNH meal plan holders. Adults,$12; children under 12, $6. At 2 p.m., Esposito will move over to Stillings Hall where Huddleston and Bricker will join her in a cooking demonstration. A book signing and reception will follow. An Italian dinner at Holloway Commons featuring some of Esposito’s favorite recipes caps off the day. The great chef will be on hand to meet diners until 7 p.m. Free to all UNH meal plan holders. Adults, $16; children under 12, $8. The Great Chefs series brings renowned chefs to campus to present cooking demos and work with the staff in Dining Services to make meals from their recipes. Past chefs have included Martin Yan and former White House chef Walter S. Scheib III.
