t has been a super busy month for us at Team Fact. Firstly, we’ve had love on our minds making sure we put together all the best Valentine’s dining offers to ensure treats for you and your loved ones. Then we decided to look a bit more closely at the feast day that’s so closely associated with lovers. Turns out Valentine’s

is not all sweetness and light – check out a collection of somewhat weirder and less than wonderful Valentine’s snippets in the ‘Bad’ section of our Cover Story. With the Fact Dining Awards 2022 coming up soon, we’ve been out and about sampling some seriously fine food at a record number of restaurants. And, not content with checking out the culinary treats, we also chatted with a couple of the chefs responsible for coming up with these fabulous dishes. My lucky colleague, Asad, got to pay a visit to Hilton Salwa Beach Resort & Villas for some lovely pampering and a chat with the Spa Manager Adele Osborne, who spoke about her love of the industry and joy at getting to set up the spa from scratch. And our even luckier colleague, Layal, headed to the Maldives – to say I’m a bit jealous would be an understatement.

QUMRA GOES VIRTUAL 2022 Qumra Online event, hosted by DFA, will include sessions dedicated to exploring and developing fresh new projects from the region.

he Doha Film Institute (DFI) will host a virtual edition of Qumra 2022, the annual talent incubator for Arab cinema and beyond, from March 18 to 23. Dedicated to nurturing new and independent voices in cinema, Qumra 2022 will feature a wide range of activities tailored to support emerging talents in their script-to-screen journey. Fatma Hassan Alremaihi, Chief Executive Officer of the Doha Film Institute, said: “Despite the challenging situation globally, we are hosting Qumra 2022 in a virtual format because we believe it is important to support new voices, especially in these times when creative pursuits are even more important. With Qumra, our mission is to empower the global storytelling landscape and emerging voices to create inspiring cinema, exercise creative expression, and transform inspired stories into acclaimed masterpieces.” She added: “To maintain the current momentum towards success for the stand-out projects, the institute will proceed with an online programme to support the filmmakers through this challenging period. CREATING A STATEMENT VCUarts Qatar is staging an award-winning Syrian-American architect’s exhibition 'What is Home to You?’ which reflects political turmoil via a compilation of found objects, paint and scrap metal. What memories does the word ‘home’ conjure up for you? For most, there is an emotional connotation tied to it – irrespective of whether you’re a boarder in school or university, a business traveller, a navy cadet, a refugee, an asylum seeker, an immigrant, or you’re working in an office that’s just a short hop across town, the word often triggers thoughts about family, about the familiar and the fond. It is this universal sentiment that inspired The Gallery at VCUarts Qatar to organise an exhibition of artwork by renowned Syrian-American architect and artist Mohamad Hafez. Titled 'What is Home to You?', the exhibition is open to the public and visitors can schedule tours during the University’s working hours via Eventbrite. An architect by profession, Hafez’s artwork was triggered by his inability to return to Syria during his architecture training in the US because of visa issues. Homesick, he began making models of his beloved homeland to provide an outlet for his emotions. He never knew that what he began in order to channel his emotions, would end up as a testament to the plight of a nation that would soon experience conflict. The exhibition reflects the political turmoil in the Middle 10

At the core of Hafez’s work, verses offer a distinct contrast between the pessimistic reality of destruction and the optimistic hope for a bright future. Hafez’s artwork has recently been featured in several highly acclaimed exhibitions and profiled on National Public Radio, The New York Times, The Guardian, and The New Yorker. He is the recipient of the 2018 Connecticut Arts Hero Award for his extensive and continuous body of work on issues such as the Syrian Civil War, the worldwide refugee crisis, and an overall desire to counter hate speech. He currently serves as a 2018 Yale University Silliman College Fellow, Interpreter in Residence at U-Chicago Oriental Institute, and artist-in-residence at the Keller Center of Harris School of Public Policy, University of Chicago. In 2019, he was selected as one of the 40 under 40 artists in the Middle East by London’s Apollo Magazine. ✤

EQUINE EXCELLENCE Katara International Arabian Horse Festival 2022 is underway with 239 horses participating and 32 qualified purebred Arabians up for auction. Katara - the Cultural Village Foundation has announced that the second edition of the Katara International Arabian Horse Festival (KIAHF) 2022 is currently being held from February 2 to February 12 under the patronage of His Highness the Amir Sheikh Tamim bin Hamad al-Thani at Katara Esplanade in conjunction with Qatar Equestrian Federation (QEF), Qatar Racing & Equestrian Club (QREC), and Qatar Foundation. This year’s KIAHF is being held over 11 days and includes the Arabian Peninsula Horse Show (February 2-5), Arabian Horse Auction (February 7), and the Title Show (February 9-12). Talking about the second edition of KIAHF 2022, Dr Khalid bin Ibrahim al-Sulaiti, General Manager of Katara said: “The success of the first edition of the Katara International Festival for Purebred Arabian Horses resulted in the addition of a championship for Arabian Peninsula horses as a new addition in the second edition of the festival, in response to the passion of Arabian horse lovers and breeders. In addition there is a set of accompanying and surprising events. “Katara has harnessed its great potential to host this global event to produce the most distinctive and attractive version for the largest number of audience and followers. For the second year in a row, the festival will enjoy a great turnout and increasing international attention, which is embodied in the large international participation to compete in strong competitions with the best and finest horse breeds that will 12

be transported from different continents of the world. “KIAHF 2022 edition has a total prize money of QR17,083,500. This makes the festival a milestone on the map of international Arabian horse championships, and enhances Katara's position as an incubator for major international sporting and other events. In the Arabian Peninsula Arabian Horse Championship, the number of participating horses is 239. The KIAHF 2022 auction will see 32 qualified purebred Arabian horses. The prestigious Title Show championship has a registration of 309 horses from 11 countries as compared to 248 last year. The total prize money is in addition to in-kind prizes awarded to the first-place winners. Out of this, the Title Show will carry a total prize of QR13,900,000 besides inkind prizes, which are cars provided by NBK Group, and watches provided by Ali Bin Ali Luxury. The Arabian Peninsula Horse Show will have a total prize money of QR3,093,500, in addition to in-kind prizes consisting of cars presented to those occupying the first places. There will also be special prizes, namely The Legend (Senior category) - QR3,000,000; and a Special Award for the horse that has won in all categories since being a yearling - QR2,000,000. ✤

QATAR: THE SAFEST COUNTRY IN THE WORLD This marks a continuation of the distinctive position enjoyed by Qatar globally in terms of safety. Qatar has ranked as the safest country in the world and Doha as the second safest city globally, according to Numbeo, a database of user-contributed data about countries and cities worldwide. This marks a continuation of the distinctive position enjoyed by Qatar globally in terms of safety. A total of 459 cities were covered by the Numbeo Safety Index by City 2022, with Doha ranking second among them with a score of 86.17. On the other hand, Doha ranked 458 out of 459 cities in the Crime Index by City 2022 with a score of 13.83. The Crime Index is essentially a list of the same cities in reverse order, with the lowest-ranked cities considered the safest. The other cities in the Safety Index top 10 are Abu Dhabi (UAE), San Sebastian (Spain), Sharjah (UAE), Taipei (Taiwan), Quebec City (Canada), Funchal (Portugal), Dubai (UAE), Zurich (Switzerland) and Munich (Germany). Doha was the second safest city in the 2021 ranking also. Meanwhile, a total of 142 countries were covered by the Numbeo Safety Index by Country 2022, with Qatar ranking first with a score of 86.22. As for the Crime Index by Country 16

2022, which has the same list of countries in reverse order, Qatar ranked 142 out of 142 nations with a score of 13.78. The lowest-ranked countries in the Crime Index are considered the safest. The other countries in the Safety Index top 10 are the UAE, Taiwan, Isle of Man, Oman, Switzerland, Hong Kong, Japan, Armenia and Slovenia. In 2021, too, Qatar was ranked the safest country in the world by Numbeo. The position reflected the country’s strong record in the field of security. The Numbeo database has been publishing annual reports since 2009, based on the crime rates in countries around the world. The index of crimes is measured according to the laws of the countries, as there are acts that constitute crimes in some countries but not in others, which gives a real measure of the crime rate in countries in accordance with applicable laws. ✤

The fourth Qatar Neuroscience Conference 2022 will be held from February 25 to 27, Hamad Medical Corporation (HMC) has said. Pre-conference workshops will be held on February 24. The virtual conference will focus on recent innovations and technological advancements in the fields of neurology, neurosurgery and neuroradiology. "Over the past six years the Neuroscience Institute at Hamad Medical Corporation has been organising the Qatar Neuroscience Conference. We have achieved tremendous success in bringing together the best of the world’s experts in the field of neuroscience to share their knowledge and expertise during these conferences. The practising physicians, nursing and allied health professionals in the field of neuroscience have highly benefited from these conferences in the past years," according to the director's message on the HMC website said. After six years, this conference has grown into the most successful and longest-running conference in the field of neuroscience within the healthcare sector of the Mena region. In view of the current Covi-19 situation, the conference will be organised in a digital format this year - going completely virtual in nature. After the success of the previous conferences, with more 18

than 600 participants, this year's event will focus on recent innovations and technological advancements. Several speakers have been reviewed and selected, who are world-renowned in their respective fields of neurology, neurosurgery and neuroradiology to deliver lectures on specific topics. The presentations will aim to translate the most recent scientific findings into clinical practice in the form of case studies and scientific research findings, and will also discuss many more innovative pathways in the neuroscience clinical domain. A poster session will also be organised to facilitate discussion as well as collaboration between clinicians and researchers. The best poster presentation by a researcher will be awarded the 'Best Poster Award'. This activity is an Accredited Group Learning Activity Category 1 as defined by the Ministry of Public Health’s Department of Healthcare Professions - Accreditation Section and is approved for a maximum of 20.5 hours. ✤

The first phase of applications for FIFA World Cup Qatar 2022 tickets will continue until 1pm on February 8. All tickets will be sold in Qatari riyals to both Qatar residents and international fans. All ticket prices apply to both adults and children, regardless of the age of the child. The prices indicated in the infographics are for all ticket products and categories, which are available for the Random Selection Draw sales period of the Sales Phase 1 of the FIFA World Cup Qatar 2022, and include all applicable taxes. Luckily, Spangler got on the job to make sure they made the ultimate comeback in 2021. A UNIQUE TRADITION Valentines’s Day is supposedly the most common wedding anniversary in the Philippines. This tradition goes back to 2004, when 5,122 couples gathered on the Manila waterfront on the eve of Valentine’s to lock lips when the clock struck 12, setting a new world record. Even the city’s mayor at the time, Lito Atienza, attended with his wife, saying: “Let's take a break from the troubles we have been having, from our work, from political bickerings. After all, it's Valentine's Day.” Ever since, mass Valentine’s Day weddings have become increasingly popular, with hundreds of husbands and wives-to-be coming together to say “I do”.

CHOCOLOVE Cacao originated from Mesoamerica, with records of the beans being used to flavour food and drink dating back to as early as 2000 B.C. Come the Mayans and Aztecs, the bean was used for ritual offerings, especially linked with fertility and love. The Aztecs famously considered the food more valuable than gold. Flavoured with spices and honey, the drink was offered by Aztec tribes at chief ceremonies, including the moment a suitor would come to ask a woman’s hand from his would-be father-in-law. The fearsome Aztec ruler Montezuma II is said to have used the drink as an aphrodisiac, drinking three gallons a day to increase his ability to “please the ladies”. FOOD OF LOVE Everyone’s heard that oysters are, supposedly, the food of love. Oysters and their link to lust go back to the Ancient Greeks, with the image of Aphrodite, the Greek goddess of love, rising from the sea standing on a half-shell. Oysters have also been linked to love through science. Extremely rich in zinc, oysters provide this essential ingredient for testosterone production, not to mention dopamine production, increasing pleasure and satisfaction. THE FIRST VALENTINE’S CARD Charles, the Duke of Orleans, was the first to pen the word ‘Valentine’ in reference to a loved one. The French duke wrote a poem to his wife while imprisoned in the Tower of London after being captured by the Burgundians in 1415 at the age of 21. He wrote: “My very gentle Valentine, Since for me you were born too soon… My very gentle Valentine.” Charles was never able to see his wife again, being imprisoned for 25 years, far exceeding her death somewhere between 1430 to 1435. SWEET AS CANDY Necco, the 1901-born American company that produced its famous Sweethearts candy – chalky hearts with sweet little messages on them such as ‘Be Mine’ and ‘Love You’ – every year for Valentine’s Day, declared bankruptcy back in 2018 and there were no love hearts! The company sold the brand to Spangler Candy Company which then acquired the rights to Sweethearts 28

SEEING RED According to a study by the University of Rochester, the colour red has a direct psychological link to desire and attraction. The lead author of the paper, Andrew Elliot, found that men dressed in red or who had a red background were seen as more attractive by female participants. He concluded that the colour was linked to feelings of dominance and confidence and was an ingrained biological perception. LOVE LETTERS Every year, thousands of lovesick romantics post letters to Verona, Italy to ‘Juliet’, derived from the classic Shakespearean tragedy, Romeo and Juliet. The letters are answered by a team of volunteers from the Juliet Club. Each Valentine’s Day the club awards the Cara Giulietta prize to the most touching letter members receive. TOKENS OF AFFECTION The ribbon’s attachment to love goes back to the Middle Ages. A time of ongoing warfare, this period saw knights frequently going into battle wearing a token given to them by their sweethearts. This token was usually a lace handkerchief or a ribbon from her hair for luck and protection, as well as a reminder of their love. From then on, lace and ribbons have been seen as common objects of love and desire, especially on Valentine’s Day.

PAINT IT BLACK An unofficial holiday in South Korea, April 14 sees singletons across the country gathering to eat black food. Following Valentine’s on February 14 and White Day on March 14, both associated with celebrations of love and romance, this dark day became popular as more and more people decided singles deserve a celebration, too. The annual event sees singles wearing black and eating black-coloured foods, especially jajangmyeon, a black bean noodle dish, as they complain about their lack of intimate relationships. PRICKLY PARTNERS Porcupines have one of the most unusual attraction practices (to say the least). The Male North American porcupine first performs an elaborate dance to let their selected female know they want to get together. Eventually, they douse the female with their urine. The female, who is fertile just once a year for a period of eight to 12 hours, then decides whether or not to be receptive. If she is not, she will scream at him, shaking the urine off and running away!

VINEGAR VALENTINE’S These cheeky postcards include mean-spirited messages from rejected lovers insulting the receiver’s looks, intelligence or occupation, with rather garish cartoons attached, including of ‘Dudes’ and ‘Floozies’. First produced in the United States in the 1840s, they reportedly boosted readership in the lower classes, costing only a penny. OFF WITH HIS HEAD On February 14, 270 A.D., St. Valentine, a respected Roman priest, was executed following his rebellion against the banning of marriages in Rome. This was in response to the then-ruler Claudius the Cruel, who forbade couples from getting engaged or married due to his belief that men were too attached to their sweethearts and wives to join his military leagues. Defying this decree, St Valentine decided to perform marriages for young lovers in secret. He unfortunately got found out and was sentenced to a beheading, which was performed on the now romantic holiday. THE FOOD OF LOVE…NOT! Ever wanted to watch your ex get eaten? Last year, the San Antonio Zoo in Texas, US, encouraged the broken-hearted 30

DEADLY VALENTINE’S The Valentine’s Day Massacre caused waves of shock on February 14, 1929, when Chicago’s North Side experience the height of violence due to gang rivalry. Chief gangster Al Capone was the face of the warfare, as he sought control through an elimination of his enemies in illegal activities, including those of bootlegging and gambling. On the fatal day of February 14, seven men associated with the Irish gangster and Capone’s longtime enemy George ‘Bugs’ Moran were brutally murdered by men dressed as policemen. Though it remains a mystery, Al Capone is generally considered responsible for the bloody event. AND THE BRIDE WORE… Probably one of the weirdest wedding traditions is Scotland’s ‘Blackening the Bride’ custom. Performed in the days or weeks prior to the special day, the bride and groom are ‘captured’ by their families and friends, covered with an assortment of disgusting foods, including rotten eggs, fish and treacle, and additionally garnished with flour and feathers. They are then driven in the back of a truck and paraded around town, accompanied by the banging of pots and pans. WAILING BEFORE WEDDING Despite appearances, weddings are a happy event for the tribe of Tujia in China. Nevertheless, brides are expected to cry for an hour a day every day for a month before their wedding night. Joined by female relatives as the days go by, this ritual signals the welcoming of a good marriage.

n 1948, an unknown visionary named Ferdinand Porsche began producing the first of his creations, the Porsche 356. Employing a mere 200 workers and producing only 52 cars in a humble garage, he couldn’t have known at the time just how legendary his label would soon become. Today, Porsche is recognised as one of the most successful motor vehicle manufacturers on the planet and their logo has become synonymous with both luxury and high performance. Amongst Porsche’s vast array of superior offerings is the celebrated Macan range. First unveiled in 2014, the Macan has not only enjoyed commercial success but has received an array of accolades from within the industry for its outstanding design. Now, in 2022, Porsche have recently unveiled their latest generation Macan range and FACT was fortunate enough to receive an invitation from Porsche Centre Doha to test drive this latest import. The 2022 Porsche Macan is a five-door luxury crossover SUV whose very presence made us ache with longing to get behind the wheel. The superlative designers of this deluxe vehicle have created a sporty, robust and refined machine that looks fantastic whether on the roads or parked in a garage. The visual components have been sharpened, ensuring it is even more

striking than its predecessor. The nose has been redesigned and now features an inlay in the exterior colour, emphasising the Macan’s breadth and adding to its imposing presence. This fetching feature is complemented by the new body coloured air intakes that lead the eye towards the flowing lines of the flanks. The side blades now include a 3D structured element, whilst the 21-inch alloy wheels hint at the vehicle’s on-road intentions. The back end has been rounded off towards the road by a prominent and technically designed diffuser that sits perfectly above the twin trapezoidal tailpipes. All-in-all, the exterior is a true testament to the superior skills of the Porsche Macan design team. As far as the noticeably enhanced interior is concerned, we could easily go on about Porsche’s use of exquisite materials throughout the vehicle, the intricate attention to every detail, the perfectly designed and positioned steering wheel, the elegant structure of the new centre console, the impressive ergonomic layout of all buttons, dials and features as well as the adjustable, supportive and uber comfortable front seats but, in truth, it was the infotainment system that held our attention. This system is one of the most responsive and user-friendly setups we have experienced. The remarkable resolution of the 10.9-inch full HD touch display is crystal clear and we could always see the fact magazine

• CITY RIDES screen perfectly, even during the midday sun. This responsive and practical system allowed us easy access to all the vehicle’s features and functions, helping to fully immerse us in the 2022 Macan experience. This infotainment arrangement also provides wireless compatibility with Apple CarPlay, superior navigation and an impressive 10-speaker sound system. Finally, it was time for the tarmac! Needless to say, we were exceptionally keen to get this beauty out onto the roads to see what she could do. The latest generation Macan houses a newly developed, turbocharged, four-cylinder engine that produces 195kW of power. This combined with the seven-speed Porsche dual-clutch transmission (PDK) and the Porsche Traction Management (PTM) all-wheel-drive system, enables this model to power from 0-100km/h in a respectable 6.2 seconds and to reach a top speed of 232km/h. We could immediately feel the superior performance of this latest model over the last generation. The acceleration is far more responsive and the drive quality is much smoother thanks to the sport air suspension. Other notable features include the car’s superb Drivetrain Traction Control, as well as the ABS braking system that allows the driver to safely navigate through the trickiest of conditions. Importantly, Porsche have also managed to successfully reduce the Macan’s CO2 footprint. Always keeping the wellbeing of you and your loved ones at the forefront of their creations, Porsche have included a multitude of both safety and performance features in the new Macan. These include Electronic Stability Control (ESC), cruise control, lane departure warning, hill control, a tyre pressure warning system, lane departure warning, outboard front lap and shoulder safety belts, ParkAssist with front and rear parking sensors, a back-up camera, side impact beams, airbags throughout the vehicle and so much more. A CELEBRATION OF PAST EDITIONS

THE NEW NISSAN Z, IS A FRESH MODEL THAT HAS TAKEN INSPIRATION FROM ITS FOREBEARS IN CELEBRATION OF THE Z’S 50-YEAR HERITAGE.

Designers looked at the past 50 years of Z for inspiration for their latest model, adding a twist to develop a bonding relationship between the new Z and its owner. The vehicle exudes the familiar silhouette of the first-generation and the 370Z, with the ‘Z Bulge’, used on the original Z, accenting the long nose with its raised bump and sharp creases. The acute rectangular design of the new Z’s grille allows for ample airflow to feed the twin-turbo, V-6 engine, while also referencing a shape similar to the original Z and the 350Z. The shape of the headlamps is patterned after the scooped-out design of the first-generation Z. The signature lighting, made up of two crescent LED bars, took inspiration from the glass-covered headlamps of the 240ZG, or the ‘G-nose’ Z. Both functional and visually dynamic, the ducktail-style rear spoiler was a popular tuner addition for first-generation Zs. The individual spokes of the 19-inch wheels take inspiration from the traditional Japanese katana blade, characterised by their sharply sculpted design and hand-forged impression. Alpha Zoo app is dedicated to kids learning at home and works even offline without internet, once downloaded. The fun, easy-to-use app includes images, sounds and Wiki facts about animals organised in alphabetical order. From A to Z — most of the animals are featured here. The app is kid-safe and ad-free. And, it’s not just for home, this app is useful while travelling by car, on public transport or while waiting in queues to keep your child engaged in a healthy learning activity. Each animal comes with natural habitat and unique sound. Along with that, the app also offers the option of shuffling the animals in random order for a better learning experience. You can also test the little ones by just displaying the animal photo and asking them about the name of the subject and details, including facts like where the animal is found, which countries is it famous in and how it survives. The app is for ages five and under.

You can store your passwords and other important information now without the fear of the app transmitting your data via the Internet or other means. ID Guard Offline doesn’t use the Internet and uses security chip protection — only a password manager can utilise this secure element in smartphones to protect the password. The encryption key is protected by the secure element. The app takes permission for accessing the camera (for QR code scans), fingerprints and foreground service. If you forget the master password it gives an option to retrieve it and it can also provide support in filling passwords on desktop browsers, automatically identifying payment card issuers and organisations, auto filling username and password across apps and integrating the OTP authenticator to facilitate security every time you log-in. How did your career in hospitality and the food industry start? I started my career in hospitality and the food industry in 1989 in Turkey as Assistant Waiter. I always had this idea that this industry provides an opportunity to interact with people of different cultures and backgrounds and that was always fascinating to me. And it does. Whenever a customer comes in, they bring their culture with them and it’s always exciting to interact with them and know about where they’re coming from, their preferences in food, flavours, and traditions. So, that’s why I got into this industry and since then it has been the driving force for me.

Huqqa brings together Turkish and Qatari culture along with a mesh of international flavours. How do you make sure to keep it relatable to every one who comes to have a good time? Huqqa offers Turkish cuisine with certain international dishes on the menu. For us, it’s more about creating an experience for people in Qatar. Locals and expats alike here love sheesha and we provide them with one of the best. New flavours and dishes on the menu tailored with local taste in mind really takes us a long way. For example, keeping spices low and subtle rather than going overboard. Even for sheesha flavours, offering new, experimental combinations that are really well taken.

Tell us about your cultural background and what’s it like being a host at home? Are there any traditions you follow when welcoming guests in your own space? I come from Turkey and Turkey is known for its warmth and hospitality. And, like every Turkish family, my family is also very hospitable. For us it’s like my home is your home and we try to make our guests as comfortable as we can. In terms of traditions, we always offer traditional Turkish coffee and Turkish homemade baklawa to our guests. There’s no way possible that someone comes to our home and goes back without having these two. I think it’s really important to extend such warmth to guests, because more than hosting them it’s like creating memories for them. Now, whenever they’ll have a coffee or baklava, they’ll always recall you and how they cherished your company.

As an expat in Doha, what, for you, are the most interesting and unique aspects of Qatar, or your favourite thing to do here as a domestic tourist? For me it has to be the Desert Safari. It’s so thrilling. Safari tours and dune bashing really give you that adrenaline rush. There’s no way you live in Doha and you haven’t tried it. If you haven’t, then you’re missing out on the best that Doha has to offer. I also enjoy camel riding in Doha, it’s such a unique and local experience. I love doing it at least once a month. Under the current pandemic restrictions what innovations is Huqqa employing to create exciting user experiences? We’re working on new dishes; menu offers and flavours at Huqqa for its guests in order to provide them an unforgettable experience. Do you remember the first time you prepared something in the kitchen and knew that this was your calling? If you take me back in time, when I was a kid, Sundays were very special days… I remember going with my father to a beach called Pimentel in my hometown Chiclayo, northern Peru, to buy fresh fish from the fishermen. They used to go out early in the morning and come back to the coast with the freshest fish you can ever see, such as Tollo, which is a kind of a baby shark, Lenguado or Dover Sole and Bonito, which is a small white tuna. Once back home, my father used to prepare ceviche, Chicharrones, which is a crispy breaded fish, or Sudados, a fish stew, and I have to say, the last dish was my favourite of all time. Ever since, cooking has always been more than a way to feed the family, it was a whole experience. From the moment we bought the fish, to cooking it and learning from my father all the techniques. The funny thing is that usually we learn cooking from our mothers or grandmothers, however, in my case, it was completely different, I will always say the reason I decided to become a chef was my father and his passion towards food… I owe it all to him! Latin American food is appreciated internationally. Can you explain why you think that is? And does the creativity of chefs in Latin America challenge and stimulate other chefs around the world? In my opinion, our foods, Peruvian specifically and LatinAmerican generally, have become popular and recognised around the world due to great chefs who, throughout the years, have showcased and highlighted our cuisine, they have spread our culture and flavours around the world. Nowadays,

it is our mission to keep their legacy alive and take it to another level. I mean, in every country that we will go to, we should try to combine the local ingredients or techniques along with our roots, our flavours and memories. Our mission will be to create experiences and beautiful memories for our guests. We will entice other chefs and inspire them – no matter what nationality they come from – to create the same culture, but their way. Can you share with us your signature dish or style and what makes it special to you? Being the Chef de Cuisine of Hunters Room & Grill, one of the most renowned steakhouses in Doha, I would say that one of my favourite dishes, apart from the fatty and tender Rib Eye, would be the beef tartar also known was beef carpaccio. But why this dish? Simply because it is a raw meat dish and it always allows me to experience the real meat flavour. It is a special dish that we serve at Hunters and very special to me because it combines traditional techniques along with some Latino flavours, so we present to our guests a one-of-a-kind experience. What’s the most important ingredient and best technique to grill for the juiciest and most tasteful experience? I would say, apart from the quality of the meat, it will be real and proper seasoning of any steak before we grill it. The best seasonings are sea salt flakes and spices, in our case our signature Hunters Spices. Also, it is very important to keep the meat at a room temperate in order to get a nice crust full of flavours. Once grilled, my recommendation would be to give the meat time to rest to keep all its juices before you start eating it. Bon appetite! ✤

He chats with FACT about his journey and the creative process that went into baking a giant 2,022kg cake for Qatar National Day. 52

VOICE FROM THE KITCHEN •

What first led you to baking and sugary delights, and what have been the most exciting destinations to work in? At the beginning of my career, when I was a trainee, I concentrated on the hot section of the kitchen and, until my final test results, I wasn’t sure if I’d have a career in bakery and pastry. Back then, the top person of the batch used to be rewarded to start a career in their choice of kitchen but I was convinced by the then executive chef to take on bakery and pastry as my major and that’s how I embarked on this journey. I certainly fell in love with the surgical precision and use of distinctive flavours and textures in making desserts, bonbons and breads. Doha is the best destination to work in. The kind of vibe and excitement because of FIFA 2022 is phenomenal. Sugar is often vilified – is it possible to create worldclass desserts without sugar? Yes, it is absolutely possible to create world-class desserts either using a substitute or no sugar at all. These days people have become more health conscious and aware and they expect us to meet their dietary requirements. For us at Sheraton, this is of utmost importance to exceed every guest’s expectations.

You did a giant cake for Qatar National Day, weighing 2,022kg. What was the creative process like? The entire process started with the thought The GIGANTIC, followed by lots of brain storming with our executive chef and fellow colleagues. Our restaurant Al Hubara is one of the popular destinations for kids’ activities during brunches. So, we narrowed down our idea to create a curtain with the number 974, handmade donuts at the backdrop and a gigantic, 100% edible, 2,022kg donut cake. The entire process was intriguing, exciting and exhausting. But I am really thankful to each and every member of our bakery and pastry team for their commitment, enthusiasm and willingness to go that extra mile. Can you share with us your signature dish or style and explain what makes it special to you? A signature dessert should create a pleasant memory for our guests… that’s how I look at it. My signature dessert is Vanilla Caramel Ganache, Dates Cremeux with Speculaas Tart. I like to use local products because you really get the best and original flavours in your creation. And I have blended them with the finest Madagascar vanilla bean and soft caramel ganache in the Speculaas Tart. So, it’s a perfect combination of local with international flavours to create an extraordinary and lasting memory. ✤ fact magazine

I

t’s just been a month and the city has been buzzing ever since InterContinental Doha revamped The Lounge to Novecento, an Italian-French restaurant. Its tantalising, unique menu and aromatic flavours have been the talk of the town. The modern and iconic take on al fresco dining leaves guests with a lasting impression as it is set amidst the beautiful architecture of the hotel, overlooking the beach and the pool. As for the final touches in terms of the terrace, think cane chairs, beautiful marble-top tables and the sounds of Italian and French melodies. Each dish on the menu is a simple blend of flavours from authentic Parisian and Italian cuisine. We started off our food affair with Mushroom Creamy Soup and Quinoa Kale Salad. The salad was so virtuous that eating this grain bowl, topped with spiced pumpkin, almonds and passion fruit dressing, had us befuddled as to whether we wanted to just relish this and call it a day or keep space for anything else on the menu. The salad bowl ingredients were expanded with the inclusion of seafood. And you can also taste a zest of lemon that gives the entire recipe a kick. The bestselling menu item for appetisers has to be this. A perfect mix of vegetable proteins and good fats. The mushroom soup also came with a little surprise: brie cheese croquettes floating within the bowl. The cheese was melted even before it reached my mouth. A cheeselicious affair! Diving deeper into the menu, for the mains, we took on the Classic and Salmon as Tarte Flambēe — a French take on the Italian pizza. The only difference between the two was the fact magazine

• CULINARY SPOTLIGHT topping, the classic came with beef bacon while its companion included smoked salmon. Both featured sour cream and onions as well. This food was all about comfort, the old-world way. The salmon with mesclun was velvet softness, if you can imagine that. The onions were cut extremely finely and then thrown into the fresh sour cream on the bread dough that did not exceed 3mm. I believe that this is the only place in Doha where you can actually relish the perfect Tarte Flambēe. However, I was only able to nab two slices, because my friend gobbled it up and also because our server told us the next main on the menu, Tortellini (ricotta and spinach with saffron sauce and shaved, aged parmesan) was on its way from the kitchen. Another winner — particularly for its saffron sauce that was a perfect balance of slightly sweet yet earthy. We ended this gastronomical journey with Raspberry Chocolate Mousse Tart, Chocolate Praline and French Toast paired with Hazelnut Hot Chocolate. The clouds and weather called for a warm ending. If the flavours of the Chocolate Praline aren’t enough to convince you, then the textures of this dessert will! From intimate ambiance to indulgent cuisine, Novecento is a must-try for anyone looking for outdoor dining, unique dishes and a fresh vibe. An experience of its own.✤

estled in the middle of West Bay, towering on the 43rd floor of the JW Marriott Marquis City Center, the Shanghai Club is arguably one of the most scenic spots in Doha. It’s this picturesque location that makes it the ideal spot to enjoy Friday brunch. Friday brunch has not only become the favourite weekend event in Doha but has also evolved as a lifestyle for most. Brunch-goers have become more discriminating and their tastes and demands more distinct. Hence, it’s not easy to find the perfect recipe for the ultimate brunch experience – which, for me, is the combination of the food, drinks, ambiance and entertainment. We were warmly welcomed with cool and invigorating fresh coconut juice straight from the husk, these are displayed at the entrance that is colourfully bedecked with Chinese lanterns, charming fans and flamboyant ornaments. The expansive and elegantly bedecked restaurant setting delivers a distinct yet vibrant feel. The conveniently spaced seating area includes a stylish round bench in the corner, a middle section and our space, which faced the amazing views of the Doha skyline. This and the live jazz music performed by the three-piece band made for the perfect Friday atmosphere we had been craving. The kids were immediately drawn to the Chinese fans on the table and kept a tight hold on them. And, while we were enjoying our drinks, the miso soup arrived, which marked the beginning of the myriad of flavours coming our way. fact magazine

The orchestra of appetisers started filling our table with radiant and bright colours. Starting with the tangy tuna tartar served cold mixed in ice, then corn tempura, which is a delectable duo of sweet and savoury, followed by the creatively prepared soft shell bao, soft shell crab in a taco, so picture perfect and the taste was equally amazing, while the playful mix of the kani salad balanced all the flavours on the spread. The taste of the satay chicken will always be a mainstay, the essence of the vegetable-pickled peanut sauce makes the taste effortlessly memorable. Not to be missed is the host of assorted dimsum, where we couldn’t get enough of the collection of sweet and savoury tastes. The appetisers were served like an orchestra, with every presentation resembling a performance. The one that stood out was the mango salad, which teased our palates with every single bite with its balance. And the master of the show was the assorted sushi, which was served enveloped by a dancing steam vapor. The assortment of sushi from shrimp tempura, spicy tuna, lobster roll, crispy phili shrimp and salmon nigiri and sashimi was easily the best tasting set we have had, as we have unanimously decided. The time had come for our main courses to be served, and oh, what a range of gastronomic delights. The palate-pleasing parade started with the aromatic Malaysian BBQ Mamak Chicken, followed by the banana-leaf-steamed sea bass with perfectly blended lemon grass sauce. Next came the savoury Peking Duck, served with thin pancake wraps, shredded vegetables and hoisin sauce. This was such a delectable 60

ensemble but our favourite was the 48-hour slow cooked short ribs, so seamlessly tender and impeccably seasoned with peanut sauce. A choice of condiments from steamed rice to phad thai and the stand-out wok-flashed vegetables mixed and seasoned with shitake mushrooms, made it all an even more scrumptious treat. We were engaged throughout the brunch as several mixed beverages and mocktails were served to our delight, entertaining both kids and the adults between courses. Then the parade of desserts from the fluffy passion fruit cheesecake and meringue ice cream with matcha cream to our favourites for this course, the sticky rice mango and the cashew nut cake sans rival, not too sweet but rich with fruity tangs, were indeed the sweet ending to the wonderful and vibrant brunch experience. Tucked away in the centre of the city, with the most amazing colourful views to entertain you throughout your dining experience, Shanghai Club is anything but shy. The spectacular wall fresco dazzles your eyes at the entrance and the enticing live jazz music that surrounds the air sets the expectation that food, like the setting, will be bursting with inspired colours. The Koi Brunch delivered this and more – an exciting venue that cascaded vibrancy throughout our brunch journey.

et’s be honest some like it hot, some are born to be mild, but everyone loves a decent curry. If it’s comfort food you’re looking for, then there’s nothing finer than Indian. Whether it’s the pappad, street-food-style chaats, grilled tandoori chicken or just aromatic and creamy butter chicken — Chingari has been a top pick for culinary connoisseurs and people who love Indian flavours for years now. And so, to broaden my culinary palate a notch — the winter breeze called for some Indian comfort food. Chingari does look a lot like an Indian restaurant — the exterior at the entrance is decked with red draping, ornate elephants (a symbol of importance in Indian culture), gorgeous handwoven rugs on the walls and beautiful painted elements — everything takes you right to the streets of India in a second. There’s a sense of the Mughal era, ghazals (traditional music) play throughout the space and the walls are adorned with historic paintings and antique swords. We were served with some crunchy pappad paired with an assortment of chutneys whilst we browsed through the elaborate menu of Indian delicacies. The crispiness of the pappad cracking with the sweet and spicy flavours of the chutneys — there couldn’t have been a better way to begin our journey. Delving into the mains, we bit into Chef Jograj’s Selection platter of kebabs featuring chicken, lamb, fish tikka and prawns as well as Murgh Makhanwala, Lamb Biryani and Madras Fish Curry. The tender kebabs were slathered in spices and exuded richness in every bite. With a slight squeeze of lemon and mint chutney on the side — they were resoundingly delectable and juicy. The Murgh Makhanwala was basically the butter chicken gravy,

• FOODIE CORNER chicken marinated and cooked in a tandoor and simmered in a rich tomato gravy. It was succulent and mild — great if you love the textures and flavours but don’t prefer any ad-libbing masalas. Think creamy but not so heavy that you go home hating yourself for eating too much. Well, one thing I can say for sure — there’s no way possible you won’t mop the last bit of it with the fluffy butter naan. For those of you with big appetites, this is your safe space! Another main course that had our mouths salivating was the Lamb Biryani. The spicy aroma of the rice with lamb added a hint of distinct flavour and took the warm, spiced cuddle of the rice and made it a bolder experience. To sum up our Madras Fish Curry, fresh hammour, cooked with coconut gravy and tempered with mustard and curry leaves, was remarkable. Possibly the best ever fish curry around in that it impressed us beyond words. The floating coconut curry made for a delectable, creamy dish with rich and flavourful chunks of fish. The drinks served to us throughout the experience were very exotic as well. Punches of raspberry, pineapple, cucumber and orange giving a kick to our palates. We ended our Indian affair with Gulab Jamuns and Ras Malai. The warm Gulab Jamuns had to be our favourite, the round milk dumplings in rose water syrup were sweet enough to take you on a journey of their own. ON THE MENU •

A

ndalusia, Spain. It has a long cultural history. Colonised by the Phoenicians, Greeks, Romans, Moors… the list goes on. Majestic coastline, pristine peaks and dramatic volcanic landscapes. It’s a region steeped in food culture, with flavours as colourful as its history. Recipes for deep-fried croquettes, marinated seafood, and creamy rice pudding are treasured from one generation to the next. Locals treat their lunch as they treat their elders. And boy, do they respect their grandmothers. It’s from this vibrant background, and his love of travelling, that Andalusian Chef Dani Garcia and his team, founded the concept of BiBo Doha – his first gastronomical endeavour outside of Spain. The restaurant is tucked inside Al Gassar Resort, West Bay, adjacent to The St. Regis Hotel, Doha. Upon arrival, I felt as though I had entered a stylish, art-decoinfused Spanish haven. Its high ceiling is industrial, yet the space is curated for an intimate experience through low lighting and creative use of foliage. The interior is distinctly Mediterranean. Giant lampshades and traditional wall tiles complement the large, central hexagonal bar, reminiscent of the Spanish ‘mercados’ (markets). Comfortable dining chairs upholstered with beautiful floral designs are set around large wooden tables. Both, I later realised, are necessary to fit the copious amounts of food you’ll feel compelled to order! Speaking of food, where should I begin? With a troupe of double and triple Michelin-starred restaurants to his name, we can safely say Chef Dani Garcia takes his food seriously. It is phenomenal. Once seated and watered, BiBo Doha’s Head Chef, Santiago, came to our table to explain the concept behind BiBo – Andalusian fine dining with an eclectic, relaxed and international approach. He listed the culinary delights of the evening ahead. Charming, professional and experienced. He had us at “octopus”. The first three dishes landed in front of us – Ceviche de Lubina, Caprese Andaluz and Verduritas en Adobo. If I’ve lost you, allow me to explain. Tender seabass marinated in lime juice with tart, crunchy green apple, sweetcorn and a dash of heat from some sneaky jalapeño peppers. Just when you think the ceviche can’t get any better, centred in the dish is a creamy yellow bell pepper reduction. Heaven. The Andalusian take on the Italian Caprese classic is a creamy burrata, slow-cooked cherry tomatoes laced with basil oil and the surprising addition of a deliciously sharp tapenade. The third dish – finally, some cruciferous vegetables at which we could rejoice. I dearly love broccoli, but often feel it’s a fan club for one. Our Verduritas en Adobo, however, packed an undeniable punch. Spicy, garlicky, with a crunch of crispy almond. A taste explosion – no longer shall I fly solo! I would be remiss not to mention the fried-to-perfection beef and chicken Andalusian croquettes, the succulent oxtail brioche, the insanely good grilled avocado with feta or indeed, the exquisite tiger prawns wrapped in crisp basil, but I really, really, want to fast-forward to the part with the octopus… If you’re not a fan of octopus, you and I shall never be friends. fact magazine

• ON THE MENU Well, perhaps I’m exaggerating, but it’s not far off. Our firm favourite for the evening was delivered on a typical Andalusian crystal plate. Unassuming, the plate is filled with circular slices of the cephalopod, each sitting on its own little wheel of potato and sprinkled with smoked paprika. Simple, yet sautéed to perfection. The potato adds a subtle sweetness and each mouthful comes wrapped with the fine earthiness of pimenton. I could live on it. We were well into our food journey, but it was far from over. Empty plates were swiftly removed by our fantastic waiter, Alberto, and we were soon presented with our main course. The whole, roasted chicken was simply presented. Carved expertly by the restaurant manager, it was served up alongside a creamy mash. Someone once told me potato takes its own weight in butter. I am now no longer a sceptic, but a firm believer in equal parts. Under the crisp, darkly roasted skin of the bird hid a layer of truffle and mushroom and, as we tucked in, it received a shout of approval from fellow diners, who were leaving the restaurant grinning, clearly full of roast! Room for more? Let’s have some dessert! A delicious, velvet hazelnut soufflé, served with freshly churned vanilla ice cream hit the table, along with a cheeky extra scoop on request. To finish our feast, we each gulped down bowls of traditional rice pudding – a recipe from Chef Dani’s very own grandmother, a twist of tangy citrus espuma perched atop, perfectly complementing the cream. Every detail at BiBo Doha has been orchestrated for the ultimate Andalusian-based experience. But more than anything, the food is just fabulous. I’ll be back in a heartbeat. ✤

he weather is chilly and Thai food is sweet, salty and tangy. And yes, it may seem outside your chicken-and-rice comfort zone but is bold with seasoning to awaken comforting memories on the palate. Chewy noodles, crunchy bean sprouts, umami-rich fish sauce and everything it’s made of makes it worth your time to dress up and head out. What’s the rave about Thai Kitchen at Centara West Bay? Well, I guess it’s about giving us what we want — fresh and full-ofkick ingredients with an extensive menu of East Asian dishes that go way beyond classic curries and papaya salads, offering something for everyone. Even during lunch hours on a weekday, the restaurant with its minimalistic interior and lots of room for natural light, was full. The dishes on the menu seemed punchy but paid tribute to their roots in authentic Bangkok cuisine. fact magazine

It was sparkling water with ice and lemon for me to start with as I surfed through the menu before Chef Ravi came himself to greet me. I left everything to him, to surprise me with the best he has to offer. And oh my! What a brilliant idea that was. Por Pia Sod (Thai-style chilled rice spring rolls served with yum sauce) arrived accompanied by Chicken Satay (marinated grilled chicken skewers). The spring rolls were a testimony that the vegetarians are not forgotten here. I paired the chicken with sweet chilli sauce for extra punch and also dipped the skewers in peanut sauce for an added earthy flavour. The spring rolls were so unique that perhaps you won’t find them anywhere else in Doha. The chef was most enthusiastic about them. I also tried the Yum Nua Yang, which was pieces of grilled beef striploin seasoned with lime juice, onions, mint and toasted rice. These were simple, fresh, handmade dishes that are layered with both delicate flavours and bags of zing. There’s no way you won’t feel you’re dining home with great comfort food as the chef takes you on a unique journey. For the main course, I delved into Kaeng Kiew Wann Gai (Thai green chicken curry) and Gang Massaman Nua (beef brisket massaman curry) paired with Jasmine Rice. The brisket was gorgeously cooked and a little milder than other dishes. However, the Thai green chicken curry was spicy enough to hit all the right notes of heat in a very real sense. If you’re not a fan of such hot flavours, have stir fried vegetables on the side to bring that fieriness down a notch. Next up was the Phad Thai. I like these stir-fried noodles on their own — so I didn’t pair with any curry choosing instead to savour the ground peanuts, green onion and beansprouts, in light sweet and sour tamarind sauce which is tangy and tart on its own. And, lastly, for dessert, do not miss out the Tub Tim Grob in fresh cococunt. It is fresh and milky! This is a perfect spot for a comfort lunch or dinner. The service is warm and perfectly suits this homely place! I’ll be back at Thai Kitchen soon, so spot me there on one of the weekdays! ✤

fter weeks of working from odd sitting positions (hunching over in bed or stress-crying at my makeshift desk), thanks to Omicron, going for a massage was completely necessary. I was at that point where all I could think was to have an expert physically massage away my worries. The eforea Spa at Hilton Salwa Resort had been the talk of the town recently with people driving all the way there just to de-stress and re-energise themselves. So, I decided to jump on the bandwagon and head to the best. As I entered the spa, I could smell the fresh fragrance of lemon grass in the air, a popular tool in aromatherapy to help relieve stress, anxiety and depression. Deep tissue might be my staple whenever I visit a spa, but this time I wanted to step out of my comfort zone a bit and opted for the Chakra Balancing Hot Stone Massage, a 90-minute treatment that takes you on a sensory journey of complete relaxation with warm basalt stones to balance the chakras and melt away tension – a holistic approach to relaxation whilst rebalancing the body, mind and spirit. The changing rooms are a perfect example of contemporary design, think minimalism, mood lighting and lounge music completing the atmosphere. Each room seemed like a mini hotel suite with an attached washroom, shower and a changing room. I donned the luxurious robe and slippers before I was seated for an instant foot massage and lemon-grass mint tea. My therapist asked for my preference of essential oil and the scrub for the facial that followed the massage. As I slipped into the cotton sheets, I was asked about my preference of pressure and heat levels of the stones. I like it hot! The sound fact magazine

A

once-in-a-lifetime trip began with a flight upgrade and after four-and-a-half hours of deluxe flying, we landed at Velana International Airport in Malé to meet Adam. He’s a kind and helpful young Maldivian who assisted us with our transfer. A short drive later, we arrived at the seaplane lounge, and waited to board the tiny plane with a hot cup of jasmine tea in hand. A summer rain shower passed by and we boarded the seaplane, which is not ideal for claustrophobic travellers – but is incredibly safe and comfortable. Forty minutes of ocean views and we were landing in the middle of the water. A floating platform was our next step, moving from plane to boat. As we disembarked on the jetty at Amilla Maldives Resort & Residence on Baa Atoll, we finally breathed in the beautiful air and ambience. We were greeted by the sound of local drums mixed with the crashing of waves and the smiles of hospitable faces. With no check-in required, Elena, our amazing butler, escorted us to our new temporary home. A spacious, newly renovated and luxurious over-water villa adorned in white and blue decor. Two bicycles were parked by the door. Inside we cast our eyes over a giant counter that held everything you need, from a coffee machine to a minibar. As you walk through the living area, your eyes meet a blanket of blue, from your private infinity pool to the shallow sapphire water and the deeper azure ocean that looks as though it’s kissing the cloudy sky. There was an urge to jump right in, and everywhere we turned felt like a scene from a dream. 86

Back inside, behind the bed, which was utterly comfortable, there was a big space with a dresser on one side and a wide floor-to-ceiling cabinet that can accommodate a whole family’s luggage. Two smooth white seats offered comfort while getting dressed. A bathtub sat at the far end, hidden away in the corner, with a rain shower ready to wash the sand away. A narrow path connected this side of the villa to the entrance. To the left side, a bathroom. To the right, another cabinet. You’ll want to take it all in and store it in your memory. Once you’ve done that, it’s easier to relax. We took a seat at the desk and listened to Elena while she explained our well-planned itinerary. First things first, two gentlemen from the clinic arrived to perform Covid-19 tests via swabs. We stayed in our room for an hour until the results were confirmed negative (and we didn’t mind the down time). With a confirmed negative result, we rushed out to EBC (Emperor Beach Club) Restaurant. Here, the delicious SriLankan Chilli Crab satisfied our palates in a way that we feel we’ll never experience again. The halloumi brown rice salad was light and delicious, making lunch a success. The dining options at Amilla are widely diverse with a deep understanding and commitment to the concepts of sustainability and self-sufficiency. Amilla plans for more vegetables to be grown on the island soil for maximum freshness. The garden currently produces basil and mint. Eggs also come from the resort’s chickens. All drinking water is purified in a special facility, and a special nonalcoholic Kombucha is prepared in the resort’s

kitchen, using fruit leftovers and local herbs. The resort is also committed to the minimum use of plastic. Throughout our three-night stay, every meal was as satiating as its predecessor, if not better. For breakfast, a buffet offered a great range of bread and pastries, and yoghurt and jams that are prepared in house. There was fruit, porridge, cold cuts and cheese, and an extensive hot food offering (sausages and hash browns, pancakes, waffles and more). You can get made-to order eggs and anything off the à la carte menu. We ordered our favourite Maldivian tuna dish, Massuni, which is canned tuna prepared with freshly ground coconut, chilli, onion, and lime juice… so, so good! If you wish to try the Instagram-worthy floating breakfast in the privacy of your pool, all you need to do is book it the day before. The Japanese restaurant, WOK (taste of Asia), was exceptional. Amazing octopus salad, sushi, and catch of the day fish fillet all passed the taste bud test. In the evening, you can chill out and enjoy a shisha if you wish, surrounded by beach vibes with your toes in the sand. Rainy days put a halt to our water activity plans, but unwinding by the pool was just perfect. Youngsters also have plenty of activities to choose from at the kids’ club. We tried recycled paper making at the Art Studio, which was fun! Entertainment was alive in the evenings. The resort organises culture-inspired shows as often as possible, and we had the pleasure of watching the talented fire show on our third night. Javvu Spa offered us a long-anticipated treatment, a 60-minute aromatherapy body massage. From a variety of essential oils, we chose coconut; it smelled divine and was deeply moisturising! We felt completely Zen afterwards. Visiting the Maldives was a dream come true, and Amilla Maldives Resort & Residences certainly made it the picturesque and memorable escape that you imagine. As far as safety, seclusion, and luxury goes – this is the destination where you’ll find it all. ✤ ✤

CAPTURED IN THE MOMENT FACT speaks to Ajeesh Puthiyadath, a photographer who has recently garnered international accolades for his photograph ‘City on the Shoulders’, about his creative process and capturing the extraordinary and everyday moments of life. What’s a good photograph? To start, an image that can express emotion, according to Ajeesh Puthiyadath, an IT engineer by profession and a photographer by passion, who was recently recognised at the Paris International Street Photo Awards (PISPA 2021) in the Street and Architecture Category for his image titled ‘City on Shoulders’. The photo features the Doha skyline, depicting the human workforce as a significant foundation in building cities and structures. But taking a great picture also poses a larger existential query. For over a decade, as Instagram has made photography both a currency and a global language — the process of capturing that perfect moment remains a tiresome process. And it’s not every working professional that can manage to juggle a full-on career whilst pursuing a passion, but then Ajeesh isn’t just any everyday person. One of the reasons he has attracted several recognitions in the past few years, including the Year of Culture title granted by Qatar Museums in 2019 and multiple international awards in 2020, is his candidness towards moments. As a man who tries to capture the real-life situations, Ajeesh puts forward a narrative for visual impact. He makes sure catastrophes are averted — in terms of scenic aesthetics and photobombs — but also has defined the look and feel of pictures of the ordinary people that are not so ordinary — his lens looking straight on into people’s defiant glares. The shift Ajeesh signals is aesthetic as well as representational. He didn’t study photography — but what started as taking family pictures during vacations has taken a turn to worldwide recognition and exhibitions. FACT quizzed him about the bigger picture. How did you get into photography? I love to keep memories and cherish them later. Maybe one of the reasons why I’m still doing photography. I still have all my college memories with me – even photos taken from mobile cameras and other digital cameras of that time. My family used to have this old Kodak film camera that I used to take pictures of family members during our outings. I think that’s how I got into photography. Which is your favourite shot and what’s the story behind it? It has to be ‘City on Shoulders’ and ‘Dragon Fly Charm’. I shot dragon fly during Qatar National Day celebrations airshow in 2019. The image features three helicopters around a head. The image took me to so many places, so 88

unexpectedly. I got so much international recognition for it and then the exhibitions that followed. What makes a good photo? How do you ensure you get the best shot? I never plan. I always go out and photograph with no specific agenda. I try to take pictures every day. I mean obviously we’re all everyday photographers now thanks to good quality smart phones. But I also have an additional small camera that I keep with me every day in my bag… I shoot with zero expectations. So, even when there’s a small scene, it excites me as a photographer and makes me happy. For me, a good photograph means an image that can express emotion or surprise you or a moment of magic that you seize. Your 'City on Shoulders' won an international award, so what’s the creative process like when you’re shooting? Is there a particular narrative you intend putting forward via your photography? ‘City on Shoulders’ was shot on a Friday. I was going to Souq Waqif with friends for a photo-walk and we were

just driving around the Corniche. That’s when I saw some workers carrying some metal sheets. It was literally that instant moment when I took a U-turn, parked my car, took the camera out and rushed closer to them to capture them. I was lucky to have been able to compose the scene well, depicting the city on top of their metal sheet. It was just an impromptu capture and idea and there you go ‘City on Shoulders’! You’re an IT engineer by profession. So how has the transition been getting into photography? Like I mentioned, my family had a film camera and I loved to keep memories — so it wasn’t a huge transition. I always had this passion. And you know when you’re passionate about your work or something — then it doesn’t feel like work. I bought some good cameras and lenses in Doha after coming here for work. I saved money to follow my

passion and that lead me to some good photographer friends in Doha. They really guided me through on how to be a better photographer and how to look for ‘that’ moment. I’m proud to call myself a photographer today rather than just an engineer. ✤ fact magazine

The show is based on a series of books by Polish author Andrzej Sapkowski, and it is absolutely mesmerising. With incredible acting, storytelling and cinematography, it's hard not to get hooked on the gripping storyline.

Midnight Mass Need to Know:

Midnight Mass is a 2021 horror series set on Crockett Island, a small island that is described to be miles away from the mainland and only has 127 people inhabiting it. Despite the sleepy and calm setting, dark secrets lurk in this little fishing community. Especially in the local church, as strange events begin to happen, the characters must figure out the cause before it is too late and they are taken over by evil.

Why Is It Worth Watching?

The show follows the main protagonist Geralt of Rivia (Henry Cavill), a mutant monster hunter, and the people he encounters across his various journeys around this fascinating world, such as the charismatic bard Jaskier (Joey Batey) as well as the sorceress Yennefer (Anya Chalotra). Something interesting about the show is how the audience is informed about the rules of this world. We are not told right away; instead, we must piece things together. This element always makes a series more interesting to watch, as you can't look away from the screen for fear you'll miss something! The second season also smoothly continues the first, furthering certain characters' development and backstories. Henry is able to present the complex nature of Geralt, and it is gratifying to watch his personality develop throughout both seasons. The cinematography in the second season is also just as outstanding as in the first. Each scene is carefully thought out, with the angles and lighting complementing the mood and tone perfectly. An incredible show, if you are a fan of drama fantasies with lots of action, this is an absolute must watch!

Why Is It Worth Watching?

It is always exciting to discover a new horror show, as this genre can become overly repeated and washed out. However, Midnight Mass brings something new to the table. The series has many different protagonists. We begin by following Riley Flynn (Zach Gilford), who has just been released from four years in prison after killing a young girl in a drunk driving accident. As he returns to the small town and reconnects with the people there, such as Erin Greene (Kate Siegel) and others, he grows closer to the new priest Father Paul. Riley discovers certain things about the priest that could unravel the quietness of this community. This was an enjoyable watch and what makes it such a good horror show is that it does not depend on jump scares for cheap thrills. It can frighten you through the complex storyline and supernatural themes, as the story gets progressively more disturbing as you near the end. The eerie silences and zoomed in camera angles create beautiful scenes that fit incredibly well with the sinister tone of the show. The series was mostly filmed in Garry Point Park in British Columbia, Canada. So, we get beautiful scenes of the greenery and sea. Midnight Mass is a perfect binge show for horror fans who enjoy good cinematography.

The Boy Named If By Elvis Costello & The Imposters

Bonobo, otherwise known as downtempo musician/producer Simon Green, has done it again. Fragments is an album so chilled that we’re surprised it even got made. And, it’s no surprise that fans are going wild for it, but it’s not likely to gain him too many new listeners. This latest release has everything from super tuneful collaborations – including From You a surprise pairing with Japanese former online star turned musical phenom Joji, which works superbly – to the slightly more upbeat Sapien which boasts a stunning sax solo that leaves you wanting more. Of From You, one fan on YouTube phrased it much better than we could saying: “Falling from you, the opposite of falling in love with you, yet still filled with the same beauty, pain and feeling. It’s like turning the clock back in slow motion and painfully undoing the heart.” We’re not sure if this is a quote stolen from somewhere else but it perfectly describes this song. Shadows is another collab, this time with Jordan Rakei whose achingly clear voice brings the chill to a piece that harks back to the early days of electronica complete with rhythmic synths and not quite random buzzes. Bonobo has been in the music game a long time and you can tell that from his progression, or possibly lack of it. Fragments will be loved by those who are already fans, but we fear new listeners will find it just a little too relaxed to go back for a second listen.

It’s hard to believe that this is the 32nd studio album or, in fact, that Elvis Costello has been making music for more than 50 years – showing our age here but Alison and Oliver’ Army really don’t seem that long ago! However, even as he heads for a really big birthday, he and his inimitable band (pretty much The Attractions bar one) sound every bit as fresh and musically tight, if a little more mellow, as they did back in 1979. For your listening pleasure, the show opens with Farewell OK, a decidedly unmellow, stonking rendition that will have those of you old enough to remember Elvis Costello of yore, tapping your feet and, perhaps, reliving your, possibly, misspent youth. Of the title track, Elvis himself explained that The Boy Named If is the imaginary childhood friend who took the blame for your own misdeeds. Others have lauded this, but Personally, we found it a bit of a weird listen. Paint The Red Rose Blue. Oh, we loved this. A beautiful ballad and story switching from ‘what am I to do?’ to ‘what are we to do?’ We don’t know the answer but would gladly listen to this song many more times to try and find it. Another of our absolute favourites is Mr Crescent. This is wonderful; the words, the tune, the backing – this track has everything. And it’s a tale as old as time. Whether you’re a new acquaintance or a veteran fan, this album is a great place to get to know Mr Costello.
