CELEBRATE RAMADAN TOGETHER AT MANDARIN ORIENTAL, DOHA After two years of restricted Ramadan Celebrations, Mandarin Oriental, Doha is delighting guests with a series of offers to welcome the Holy Month in style, as only they know how.

I

t’s that time of year when we look forward to getting together with friends and family to enjoy a hearty meal after long days of fasting. In recent years, safety precautions due to the Covid-19 pandemic put a stop to our usual gatherings. So, we can’t wait to see this year’s offerings when tents and restaurants will be putting on a show to welcome us all back. And our first port of call will be a visit to Mandarin Oriental, Doha to take in some of their legendary hospitality.

Feast at Mosaic We’ll be heading straight to the showpiece Mosaic Restaurant. With its mashrabiya-style screens and spacious indoor and outdoor seating, the venue lends itself perfectly to the Ramadan buffet concept. Diners can tuck into a variety of mezzes, flavoursome grills, traditional feasts and all-time favourites. And, when you’ve had your fill of the glorious traditional dishes that are a must-try during Ramadan, Mosaic has you covered with a range of speciality dishes inspired by the origins and flavours found along the ancient Silk Route. Alongside the beloved Arabic dishes, the talented chefs in their open kitchen will rustle up a feast of authentic dishes from Japanese sushi and sashimi and sizzling hot Tandoor oven dishes to the exotic-tasting curries of India and delicate dim sum and wok-fried dishes from China and Southeast Asia. And don’t even get us started on the desserts! Ramadan is the one time of year when we allow ourselves to shun the diet and try absolutely everything in the dessert section. Let’s face it, if you’re going to do it, you’ll not find a better place than Mandarin Oriental to do it – we might even take home a special cake, of which more a little later. The Iftar buffet runs daily from sunset to 8.30pm and Suhour buffet is from 9pm to 2am. Each is priced at QR240, including Ramadan beverages. Children up to 12 years eat free when dining with their parents. And, for an opportunity to make some extra special Ramadan family memories, youngsters can join in with Storytelling Adventures daily from 8.30pm to 9.30pm at the Awbal Room where Papinee’s enchanted forest awaits them. The venue has been transformed into an enchanted forest filled with the animal characters of Papinee, such as Vani the monkey from the jungles of Mexico and Strix the owl from the bustling city of London.

A Sweet Treat So, back to that cake we mentioned earlier. Decadent and delicious the special Arabian-inspired Ramadan Cake is designed exclusively for the Holy Month and is part of The Heritage Collection by The Mandarin Cake Shop. Made of oldfashioned Victoria Sponge with biscuit crunch, hazelnut crème brûlée and milk chocolate mousse, who could possibly resist? 20

THE 2022 MERCEDES-BENZ

AMG-GLE 53 4MATIC+ COUPÉ Mercedes looks to dominate the luxury SUV segment with the new AMG Coupé.

CITY RIDES •

M

ercedes-Benz recently launched the 2022 version of their coveted AMG-GLE 53 4Matic+ Coupé. This sporty premium crossover is an offshoot of the brand’s second-generation GLE Coupé Series and offers a harmonious blend of sporty elegance and powerful performance. This month, thanks to Mercedes-Benz Qatar, the FACT magazine team were fortunate enough to experience this latest creation from the German automobile giant, an opportunity we took full advantage of. Athletic and Elegant Exterior There is no mistaking the AMG GLE-53 4Matic+ Coupé for other Mercedes offerings as the AMG-specific radiator grille clearly announces this classy coupé for what it is. The designers of this premium SUV have incorporated more style and elegance into its exterior design than most other car manufacturers could ever dream of. With its reduced length and extended wheelbase, the stance of this AMG is more robust than that of its predecessors. The selfassured attitude of the vehicle is openly displayed through many of its design elements. These include the pronounced power domes of the bonnet, the prominent ‘A-wing’ incorporated into the front apron, and the sporty outer air inlets, the latter two both sporting silver chrome trimmings. Mercedes’ three-point star

emblem is proudly exhibited in a double ring at the centre of the grille, flanked by slim Intelligent Multi-beam headlights that are now included as standard. The sloping roofline of the AMG GLE-53 4Matic+ Coupé is a defining characteristic of this dynamic looking coupé, a look complemented by AMG side skirts, augmented wheel arches and 21-inch light-alloy wheels with AMG lettering, all fitted as standard. At the shapely rear end, we took our time appreciating the freshly designed apron with its AMG-specific detailing. Sitting elegantly above the eye-catching diffuser is a slim strip of silver chrome that runs the width of the vehicle. This strip is underscored by the two round twin tailpipes of the special AMG performance exhaust system, also finished in high-gloss chrome. A spoiler lip on the boot, painted to match the body colour, adds to the sporty nature of this AMG, and finishes off the exterior in style. Luxurious and Functional Interior Once inside the AMG GLE-53 4Matic+ Coupé, our attention was drawn to the comfortable and supportive AMG Nappa Leather seats, as well as the novel colour highlights, including the contrasting red topstitching on the upholstery and optional red seatbelts. Wherever we laid our eyes, high-end materials stared back at us, assuring us of the exclusive nature of this vehicle. The ergonomic layout of the cockpit is exemplified by the fact magazine

• CITY RIDES latest generation, three-spoke AMG sport steering wheel with aluminium shift paddles. Add brushed stainless-steel sports pedals with rubber studs to the equation and we were left with an aching desire to get out onto the road. Space wise, the new AMG offers more than previous generations, with five occupants fitting comfortably into the vehicle. The combined capacity of internal storage spaces has been increased to 40 litres, whilst the boot space offers an additional 655-litre capacity. This area can be increased up to 1,790 litres with the rear seats folded down, the most you will find in any vehicle in this segment. We found the panoramic sliding roof not only added greatly to the sense of space inside the AMG GLE-53 4Matic+ Coupé but assisted in lighting up the vehicle. Innovative Infotainment System The MBUX infotainment system is equipped as standard in the GLE-53 4MATIC+ Coupé and boasts numerous AMG-specific functions. When navigating this system, we were impressed by the clear graphics and found the setup to be responsive and user-friendly. The instrument cluster and touchscreen multimedia display are combined into a single unit and can be commanded via intelligent voice-operated control. This feature is a real taste of the future and is activated through the vocal prompt “Hey Mercedes”. The optional MBUX Interior Assist also enables intuitive operation of various functions through movement and gesture recognition. The instrument cluster provides access to the start-up menu and five selectable driving modes namely: Slippery, Comfort, Sport, Sport+ (AMG exclusive) and Individual. Off-road-specific settings Trail and Sand (both AMG exclusive) are also available, ensuring this SUV can handle any terrain it encounters. Perhaps our favourite element of the internal configuration was the optional head-up display. The placement, brightness and clarity of this feature are perfect and we couldn’t think of another vehicle with a better setup.

our ears. This powerful motor enables the car to generate 435hp and 520Nm of torque. This coupled with the AMG SPEEDSHIFT TCT 9G nine-speed automatic transmission, enables the SUV to accelerate from 0-100km/h in just 5.3 seconds, and to achieve an electronically capped top speed of 250km/h. Combine these capabilities with 4MATIC all-wheel drive, air suspension with stabilising electro-mechanical AMG ACTIVE RIDE CONTROL, along with an ultra-responsive braking system, and you have one smooth and responsive ride. The inclusion of multiple safety and driver assistance features adds greatly to our unshakable confidence in this supreme machine. Our Verdict We spent many hours appreciating the splendour of this fourdoor luxury SUV, developing a particular fondness for the Sport+ mode with its agile throttle response. With all this SUV has to offer, the AMG-GLE 53 4Matic+ Coupé represents what most premium SUV manufacturers strive for, yet very seldom manage to achieve. ✤

Three versions were rolled out at launch: GT, powered by a fourcylinder mild hybrid engine capable of delivering 300hp; Modena, with a four-cylinder, 330-hp mild hybrid engine; and the powerful Trofeo, equipped with a high-performance 3.0L, 530-hp petrol V6, based on the Nettuno engine fitted to the MC20. To complete the range, the Grecale Folgore, the 100%-electric version will offer 400V technology. The new SUV stands out in terms of spaciousness and comfort, boasting an impressive set of ‘best-in-class’ features, including interior space, driveability, handling, acceleration (0-100km/h in 3.8 seconds – on the Trofeo), top speed (285km/h – again on the Trofeo), sound quality and extensive use of fine materials such as wood, carbon fibre and leather. Its dimensions are a major factor: in the GT version, Grecale is 4,846mm long with a wheelbase of 2,901mm, a height of 1,670mm, a width of 2,163mm (including wing mirrors), with a rear wheel track of 1,948mm (and even greater in the Trofeo). The design embraces Maserati’s new visual symbol, which distinguishes every new model since the MC20. The front 44

features a low and imposing grille. The profile is notable for its contrast between purity and technique, with a highly fluid body featuring meandering, visual forms and its technical components highlighted by the use of carbon fibre. In the rear, the boomerang taillights are inspired by the Giugiaro 3200 GT and fit in with the trapezoidal line, made even more striking by the coupé effect of the cabin. In the cabin, the standout tech specs include the traditional Maserati clockface. Digital for the first time, it transforms into a veritable in-car concierge, courtesy of voice control. Everything becomes touch-based and the technology is controlled from the displays: the large 12.3” central screen, the largest ever seen in a Maserati, another 8.8” display for the extra controls and a third for the passengers in the rear seats. The in-car experience is managed from the Maserati Intelligent Assistant (MIA) Multimedia system, from the state-of-the-art infotainment and from Maserati Connect. Every journey is transformed into a unique adventure that combines dynamic comfort and an unforgettable driving experience, made possible by the extraordinary handling provided by the new, 100% Maserati Vehicle Dynamic Control Module (VDCM) system and the 360° control it offers over the car. The option of complete control translates into a clear distinction between the various drive modes: Comfort, Gt, Sport, Corsa (Trofeo only) and Off-Road. ✤ GO: VISIT WWW.MASERATI.COM FOR FURTHER INFORMATION.

BLENDING TRADITION AND INNOVATION On the occasion of the fifth anniversary of CUT by Wolfgang Puck, at Mondrian Doha, FACT spoke to the chef about his humble beginnings with his mother in the kitchen, and his culinary adventures and aspirations. 54

fact magazine

CHEF IN FOCUS •

What first inspired you towards the culinary sector? Did you always know you wanted to be a chef? It really started with my mother who was a great cook and made delicious food with minimal resources. Every summer break, I went to the restaurant where my mother worked and helped the pastry chef. My childhood was difficult with my stepfather. While I wasn’t sure I was going to be a chef, I wanted to move out. I was 14 when I started in the kitchen and I’m still in the kitchen! Before branching out on your own, you worked at some very prestigious establishments. How did you actually get your start in the kitchen? When I was 17, I moved to France where I learned about l’Oustau de Baumanière, a Michelin-starred restaurant in Baumanière Provence that was founded by Raymond Thuilier and has its place in the history of French gastronomy. At that time Raymond was 70 years old but, even at that age, he was so passionate about food and hospitality. He became my mentor and that changed my life. He was the first one who made me realise that maybe I could do this. At the age of 20, Raymond offered me a job as a chef at his one-star restaurant, where I worked for a year before I moved back to Baumanière. I worked at other places in Monaco, Paris and America but it was really Baumanière that changed my life. From TV and the Internet, we somehow expect chefs to be somewhat fiery in the kitchen. Are you like that? Do you have any observations on that way of working?

In America today, if you get too wild in the kitchen, you go to jail! You can’t work like that anymore. I too have had my fair share of fiery moments when I worked in France. Then, when I opened Spago in 1982, it had an open kitchen. With the guests next to us, we couldn’t scream or curse, at least not in front of them, and that changed the way we interacted. Please tell us about how you acquired your first flagship restaurant and what made it so special? Before I started Spago, I was at Ma Maison where I met a lot of important people in the movie industry in LA including Billy Wilder, George Welles, Jack Lemmon and Joan Collins. Knowing these guests helped me when I opened Spago. It was very different from other restaurants at the time with its relaxed vibe – the only thing that was formal was on the plate – which is what attracted guests; it had a high energy with an open kitchen offering a view of the fiery grill and pizza oven. I remember Billy Wilder once came in with his movie star peers including Gregory Peck and Linda Evans. There were some journalists present at the same time who saw this and wrote about us. Before we knew it, calls for reservations were pouring in. Some guests called to book a table for a particular time and cut the line even before we had the chance to tell them that we were full. I recall a good customer who owned a basketball team and never made a reservation. He simply walked in and sat at an empty table when he spotted one. When anyone asked him if he had a prior reservation, he told them that I’d asked him to sit there.

• CHEF IN FOCUS There was an area by the window, which was popular with guests and we had guests get upset if they couldn’t get a table there. Three years after we opened, we moved to the next level when Swifty Lazar started hosting his Oscar parties at Spago. Everyone from the older celebrities, including Cary Grant, Jimmy Stewart and Elizabeth Taylor, to the newer ones, including Michael Jackson, Madonna and Sean Penn, who were in their 20s then, showed up. It was a huge success. You have had a long and illustrious career with many different outlets across the world. Do you have a favourite brand/location? This is like asking me which of my four children is my favourite. How can I tell you that? For me, a restaurant is all about people. I like to open restaurants in places that I don’t know. That’s perhaps why I don’t have anything in Austria, yet. Longevity is what I’m most proud of. Restaurants come and go all the time, but to be there for so many years on the forefront and have people still talk about it, is a good thing. For example, Spago has been around for 40 years and the first CUT opened in 2006 in Beverly Hills and is still a favourite gourmet destination. Also, there must have been some odd or funny incidents over those years. Is there a particular one that stands out? I remember hosting the Oscars many years ago. We were expecting about 1,600 guests. We were cooking when suddenly, the electricity went out for 15 minutes and we still had to cook for 800 people. The security was tight on the day, so, the engineers couldn’t get through to correct the issue. That didn’t stop us from putting out a great service.

CHEF IN FOCUS •

Another time, a fire marshal walked in and noticed that while we could accommodate only 120 guests, there were 180 chairs with tables laid out. He asked us to remove 60, which would have been a logistical nightmare considering the tables had been reserved by name. My manager handled the situation smartly. He told the marshal that there were 120 seats inside and 60 outside. The marshal wasn’t one to easily budge and asked him where the sign was, to which he replied that we would receive it soon. CUT will mark its fifth year in Qatar this year. What made you choose to bring the brand here? How has it been received? We started in Dubai and felt this was an interesting region. I liked the history and tradition of this place and the people here. An opportunity came along and I said let’s do something in Qatar given its rich and diverse culinary scene and, so far, it’s been great! Qatar is now a well-positioned culinary hub embracing flavours from all over the world and continuously offering a myriad of experiences, including Michelin-starred restaurants and experimental cuisines that cater to all needs and tastes. What can CUT’s Qatar fans look forward to in the future? Are there any changes to the restaurant or menu that you can share with us? My motto in life is to get better every day and that’s what we hope to continue doing at CUT too. We started off using only the best products and have enhanced them along the way. I’m always thinking of ways to make things better. I always envision

more development as we don’t stand still! It’s important for me to blend tradition and innovation. We’re always changing the menu ever so slightly and try to use the best locally-sourced ingredients as much as we can. At CUT, we deliver innovation and quality at every level through our unique culinary culture, service and design combination. What is the favourite menu item at CUT Qatar and what do you think makes this dish so popular? In Qatar, CUT specialises in beef. We have great beef coming in from Japan – Wagyu – Australia and the US. We also have some fantastic appetisers for lunch and pizzas with smoked salmon and caviar. Further, we have a wide selection of refreshing salads including the Crab Louise Cobb salad and the Charred Eggplant, which are quite popular. We always try to cater to all tastes and adapt to the local palate through continuous innovation across our menu offerings while retaining our culinary philosophy. Guests love our pastas and risottos – especially with truffle in the winter. Will you have the chance to get out and about a bit during your visit? And, if yes, what is your favourite thing to do or see in Qatar? Unfortunately, my visit this time is very short. However, I am planning to come for an extended stay and I am looking forward to visiting Souq Waqif that is steeped in Qatari tradition and learning more about Qatar’s enriched culture and heritage. ✤

A LEVANTINE JOURNEY

Ailsa Whyatt heads to Antika to discover a world of difference with themed-nights galore and live entertainment. 58

CULINARY SPOTLIGHT •

I

t’s Wednesday evening when we arrive at the unassuming basement entrance to Antika – Marsa Malaz Kempinski, The Pearl-Doha. There is, however, nothing unassuming about this place. A stunning, high-domed ceiling with all the trimmings of Levantine grandeur awaits us. There are Arabic lanterns, traditional pottery, teal walls… There’s also an enormous stage, ready for Antika’s trademark live entertainment. Tonight, 500 guests will be welcomed to catch up with friends, share food and dance the night away. We are whisked through the plush interior to the terrace, which overlooks the sights and lights of The Peal and Lusail. With sultry lighting, greenery and awnings, it’s a terrace like no other. Deep-house vibes mixed with live musicians are the perfect backdrop against which to relax, sip a mixologist’s concoction and enjoy the views. Head Chef Hossein Kattan explains the sharing concept and the roots of Antika’s foundations. This is no ordinary menu – there are twists and turns adding excitement and a touch of the Orient to many of our well-known favourites. Sharing food is a way of life in this part of the world, and goodness me, there is plenty to share! Our host, Housni, brings plate after plate of Levantine fare – Mezza on crockery bearing the trademark patterning of this wonderful region. Our food is scattered with pomegranate seeds – the jewels of Levantine cuisine. And there are further culinary gems to come. The Labneh Makdous hides some delicate aubergine chunks, and the unmistakeable but wonderful hint of green chilli, topped with walnuts for added crunch. You can taste the green of the chilli, but not the heat…it is wonderful. fact magazine

59

• CULINARY SPOTLIGHT Some slightly off-road, and extremely delicious additions to the menu include the White Mushrooms in Urchin Cream (creamy mushrooms blanketed in a duvet of cheesy goodness), Akkawi Swiss Balls (a gooey blend of cheeses, drizzled in red pepper sauce), and Grilled Halloumi (pesto-marinated grilled halloumi, served with gently roasted, succulent cherry tomatoes and a touch of basil to round it off). Did I mention I am a fan of cheese?! Zaatar and Pomegranate Labneh Dip, Infused Hummus with Lemon Peels, Shawarma Chicken Roll with Tzaziki (plus the beef variant) are swiftly brought to our table, and just as swiftly devoured. One of my favourite things about Levantine food is the colourful array of flavours and textures you get with a salad. Chef Hossein knows his salads. His Yuzu Tabbouleh contains all the trappings of tradition, but with a fresh yuzu tang that is both unexpected and rather delightful. Next, there’s Grilled Halloumi with Soujouk chips. Please order it just for the stunning addition of the Granny Smith apples, which lift the salad, cutting through the heartier contrasting elements. Abundant curls of toasted pitta bread, lightly drizzled with pomegranate molasses, rest atop the spectacular Crunchy Fattoush with Roasted Truffle Beetroot. The salad is fresh, lightly dressed and the beetroot is a superb addition. I could eat it in swathes. From the Raw Bar we try a delectable Salmon Ceviche – melt-inthe-mouth salmon on beautifully presented wasabi and avocado mousse. The gentle kick of the wasabi is tempered by the cool avocado. It’s perfect.

“Shall I bring out the main courses?” asks the ever-attentive Housni. Gosh, there’s more? First up is Braised Lamb Shank, artfully positioned on a bed of freekeh – a stalwart of Middle Eastern cooking, paired with a garlic and herb drizzle for full flavour and colour. If you go into Antika without ordering the Sayadieh Risotto, your senses may never forgive you. Notes of cumin warm this luscious and silky risotto, with tender chunks of hammour crowned with delicate onion crisps. It is divine. Pistachios are the river that run through our desserts. We try the Antika Chocolate Cake, a sumptuous and unmistakeably nutty fondant, and the Kanafeh, do not overlook the sugar syrup – it is the glue that binds the entire dessert into a heavenly miscellany of pistachio, cheese and crumble-like topping. The Pain Perdu is a decadent dough soaked in cream for a mere 12 hours, strained then baked, leaving it both rich and somehow also fluffy. My personal dessert highlight, however, is the Ashta Ice Cream. For the uninitiated, ashta is essentially a Levantine version of clotted cream. It’s gently perfumed with rose and encrusted with pistachio crumbs on feather-light candy floss. Why do I not have more space in my stomach?! Dining at Antika is not just a meal; it’s an experience. Whether you are looking for chill-out vibes on the terrace, a feast with friends or a full-on party that will have you dancing in your shoes until 2am, Antika has it all. With a different theme every night, you could come daily to experience something different. There is also enough food on the menu to ensure you would then have time to try everything! ✤

THE REAL DEAL Kalvin Ng discovers the joy of authentic Chinese goodness with a trip to Miss Wong.

DINING DELIGHT •

A

s someone of Chinese heritage, finding good Chinese food in Qatar can sometimes be a challenge. Miss Wong steps up to the plate by offering a culinary tour of China, all within the elegant settings of the Hilton Salwa Beach Resort and Villas. The journey began with a golf cart ride to the restaurant building, where we announced our arrival by striking a gong at the entrance. The interior is opulent yet modern. Orchids and porcelain vases sit atop lacquered red and black surfaces. Characters representing four of the 12 animals in the Chinese zodiac – horse, dragon, rabbit and tiger – adorn the walls. Panels divide the dining area to provide privacy, while four private dining rooms and a large function room on the second floor serve as ideal spaces for celebrations. The restaurant tells the story of Miss Wong, who grew up among woks, pots and the scent of spices. Her curiosity would take her across China’s regional cuisines, all with their distinct ingredients and tastes. We took off with a balanced hot and sour seafood soup, followed by a fresh wood ear mushroom and cucumber salad, the sweet, sour, salty and spicy mix bursting on the tongue in an explosion of tastes and textures, the meaty cooked fungi contrasting beautifully with the raw cucumber. Then, we headed to southwestern China with a Szechuan Spicy Icy Jelly salad. Mung bean jelly is tossed with cashew nuts, corn flakes, aged vinegar, coriander, and chilli oil infused with Szechuan peppers to give it the signature numbing spiciness of Szechuan cuisine. It’s a mystery that something bringing this level of heat manages, at the same time, to be both flavourful and satisfying. The starters were accompanied by a refreshing Cup of Wonder mocktail featuring an innovative combination of rice grape vinegar, spiced oolong tea and ginger ale. After a brief stop to devour delicate dumplings – definite comfort food with a variety of fillings which not only taste amazing but are also a treat for the eyes with their delicate colours – the culinary chariot headed north to Beijing for Peking Duck. The chef, with 15 years of experience roasting ducks to perfection, paired the succulent slices with a soybean-based sauce instead of Hoisin, which made for a welcome variety in the taste experience without losing any of the traditional piquancy of the bird’s tender flesh. That was followed by one of the stand-out dishes: Cumin and Chilli Spiced Roast Lamb Skewers with a hint of smokiness from the charcoal. The meat was mouth-wateringly tender, the juices spilling forth as we bit into it and the spices delicately mingling complemented by the smokiness. Miss Wong’s open kitchen gives diners a chance to see how the silky, hand-pulled noodles are made, before they’re submerged in a hearty broth with braised short ribs. By now, we were only halfway through the menu, and I reminded myself of the most important thing in a Chinese feast: the food must never stop flowing. The main courses featured Cantonese stir-fried favourites including Wagyu beef with plenty of smoky wok heat, juicy lamb slices with leek, and delicious egg noodles with Canadian fact magazine

lobster, all washed down with a sweet and spicy mocktail of goji berries and tea. The beef and lamb were cooked to perfection, the meat falling apart at the mere touch of a chopstick, while the lobster was firm and juicy, clearly removed from the heat at that perfect point before it becomes overdone. A proper meal wouldn't be complete without a selection of decadent desserts. Miss Wong thus took us to the more tropical reaches of southern China, starting with fresh mango puree with sago and grapefruit. A mousse cake with lychee included a delicate hint of jasmine tea to tease the taste buds. And the final stop on our culinary journey was a seasonal fruit platter of rambutan, mangosteen and lychee fit for royalty. Before we left, Miss Wong had one parting gift: an oolong tea ceremony. Also called a Kung Fu tea ceremony, the practice is thought to have originated in Fujian province in southeastern China. Following a specific set of steps, loose leaf tea was brewed with spring water in a small clay pot and served in delicate espresso-sized cups. The result was refreshing and comforting; a warm embrace after a long journey through the depths of China’s great culinary traditions. ✤

Welcomed by a warm, friendly smile, we were escorted to our table in the middle of the restaurant where we could fully experience the fizzing ambience all around us. Should you be a little hard of hearing in crowds, then I would definitely recommend you ask for a table on the side against the wall as it would be easier to talk and definitely lighter – but, if you want to enjoy the full South of the Border experience, getting central is the way to go. If you find the atmospheric lighting a challenge when reading the menu, don't worry a light is available and all the staff are impressively knowledgeable and obviously very passionate about the food, so they’re more than happy to help guide your choices and you don’t really need to read too much at all. Coming from a hospitality background, I was very impressed with the service throughout. While we waited for our choices, we were brought some homemade tortilla chips and traditional guacamole, which was divine and the ideal way to start our Mexican journey. We then shared the Seabass Tiradito, aguachile, a traditional dish with slices of raw seabass, submerged in liquid and seasoned with chilli peppers, lime, cilantro, cucumber and onion, similar to a ceviche, which was beautifully presented and was mixed for us at the table. It came with Recado Negro, which is one of the more unusual and distinctive flavour bases in Mexican cooking and

• ON THE MENU actually comes from the Maya regions. It’s like a thick spice paste with a warming flavour both piquant and sweet. It is heavy on the char with the spiciness from burnt chilli, depth from charred garlic and a touch of the exotic from the toasted spices, which really made the dish. To be honest this isn’t usually my type of dish but I was keen to try it and I was so pleased I did. It had a bite to it and left a light warmth on the palate but the cucumber perfectly cooled and balanced the dish. Next, we tried the amazing selection of tacos, all of them so fresh and full of flavour. My favourite was the Camaron, battered shrimp with mixed cabbage, pickled onion and macha cream on a flour tortilla. Such a great combination of flavours and textures. The avocado with coriander dressing, beans, pico de gallo, cilantro corn tortilla and crunchy quinoa, was also simply delicious and proved you don’t need meat or fish to enjoy an outstanding taco. Next was the dessert and, of course, we had to try them all! I just love Churros and these were perfectly cooked with a light crunch and served with a caramel and chocolate sauce. So satisfying to bite through the crunchy exterior to the soft, fluffy insides. The gorgeous chocolate cake had a delightful cinnamon crumble and the Tres Leches had to be my favourite, a cake soaked in all the naughtiness of evaporated and condensed milk and cream and served with the most amazing passionfruit sorbet, wow that was a real winner. Then to finish it all off, I had to have the perfect pot of green tea!

NEW IN TOWN •

D

oubletree by Hilton Al Sadd is nestled in the heart of Doha, which means it’s within easy reach of pretty much everywhere. It doesn’t take long to get there, even on a Thursday night. (Tonight, this is excellent news as I’m very, very hungry.) The hotel is low-rise and lovely, with twinkling palm trees outside. My destination is the property’s very newest restaurant – Broadway Brasserie. I know it’s a brasserie, but that’s all. I’ve no idea what more to expect. A short ride in a lift, a quick walk along a corridor and … WHOA. I’m instantly transported to Nashville, Tennessee. I’m also instantly charmed by the staff. They are so cheery and friendly that I feel at home straightway. Broadway Brasserie is a faithful, fabulous and fun homage to the USA’s musical heritage. Anna Calderon, the Cluster Director of Marketing and PR, explains how she and her team thought long and hard about the décor and gee whizz (that’s me being American) they’ve made a good job of it. An enormous Elvis and huge Hendrix watch over the diners. Vinyl records pepper the walls and the centrepiece bar. It’s no surprise to learn that there’s live music every night, too. But perhaps the piece de resistance is the clever use of short-throw projectors to flood the walls with videos of neon-lit shopfronts. (Watch them carefully – they do move!) It’s at this point that I remember I’m still ravenous and sit down – squashy seats, check – to discover that the music theme extends far beyond the décor. The beverage menu is a masterpiece of musical references. How about a Burning Piano? It’s named after the Country Music Hall of Fame in Nashville, with its pianofact magazine

• NEW IN TOWN key-shaped windows. It’s burning because there’s Louisiana hot sauce in it. Phewf. They’re not kidding. The food menu is entertaining, quirky and bursting with comfort food from the southern states. The head chef, Luigi Goytizolo, has created stunning new dishes that work alongside old favourites. I try the brilliantly inventive Oh Burrata, Where Art Thou. It looks like a tomato, but it’s a trick! It’s actually a beautifully soft burrata hidden inside a shiny tomato glaze. Crunchy balsamic caviar adds the perfect finishing touch. Next up, it’s The Broadger Burger. This isn’t any old burger. It’s a burger inside – wait for it – a doughnut! There’s Pommery mustard and sticky BBQ sauce too. Wow. The chef recommends the Memphis-Style Braised Chuck. And thank goodness he does. The Omaha chuck steak has been marinated in brine for 48 hours, followed by a further 24 hours with thyme, rosemary, tomato and garlic. It’s melt-in-themouth magnificent. I’m also tempted to taste one of the Greater Omaha Prime Cuts – the Skirt Steak 300g – which is chargrilled, succulent and delicately flavoured with fennel. Again, awesome. Finally, I try Johnny Cashfish – grilled catfish with truffle green pea, Cajun spices and fresh herbs. It’s tender and moist and also the best pun I’ve heard all week. Bravo, Broadway! I devour the rest of the menu with my eyes. The chef really has thought of everything. There’s Broadway Mac & Cheese for the less adventurous. (The more adventurous can add King Crab.) LOTG Burger is named after Live on the Green – Nashville’s world-famous music festival – and is just one of the vegetarian options. There’s plenty for children to enjoy too, which is great, because it’s the perfect place for a fun family lunch. Sundae Sensation is a live-action dessert of champions. A chocolate sphere is dropped from a great height onto a mirrored plate, smashes into pieces to reveal ice cream and chocolatecake chunks, before being finished off with strawberries and orange cream. It serves two to four. (Though I’m fairly sure it could stretch to more.) I can hardly believe the price is so reasonable for such a crowdpleaser. It’s a relief to visit a restaurant with prices that aren’t out of this world. It takes 18 hours and five minutes to fly the 11,923km from Doha to Nashville, Tennessee. Book yourself a table at Broadway at Doubletree by Hilton Al Sadd and y’all can get there lickety-split! ✤

HEAD-TO-TOE PAMPERING Kalvin Ng found just what the ‘doctor’ ordered at eforea spa at the Hilton Doha.

A

t the end of a long and busy week at work, my inner doctor sensed the stress and prescribed me a much-needed spa day at eforea, the signature spa of the Hilton Doha in West Bay. Located in a quiet corner of the hotel, eforea offers a range of treatments including facials, wraps and traditional massages. My prescription called for a 50-minute signature massage and a dynamic resurfacing precision peel facial. Check-in was fast yet still friendly and welcoming. My therapist, Kwan, introduced the spa’s facilities before leading me to one of the eight treatment rooms. After a quick chat about the two treatments I was about to receive, Kwan began with a soothing lemon and ginger foot bath, to wash away the stress, before offering me a choice of massage oils. I opted for lemongrass. Low lighting and soothing music created a calming atmosphere. As we began the massage, I mentioned that I would like to focus on my stiff neck and shoulders – a common ailment of desk jockeys who spend hours hunched over a computer. Kwan obliged by expertly kneading away the knots all over my body with just the right amount of pressure, finishing with a head massage. Fifty minutes passed by blissfully. I felt relaxed and rejuvenated. Eforea spa Hilton Doha also offers volcanic stone and Thai massages up to 80 minutes long, as well as targeted, 25-minute massages for neck, head and shoulders; and foot reflexology – perfect when you are pressed for time, but still want to pamper yourself. The massages incorporate a range of techniques, from Chinese acupuncture to the much-loved Swedish.

SPA & WELLNESS •

The 60-minute dynamic resurfacing precision peel facial featured products from the British luxury skincare brand Elemis. My therapist Kwan studied the concerns on my face and tailored the products to suit my needs. They included a soothing, anti-ageing face wash; a deep cleansing balm; and a resurfacing face mask to remove excess sebum. Kwan noticed my face’s uneven skin tone and blemishes and decided to use a resurfacing serum to help balance out the skin. After such a deep cleanse, Kwan told me not to be alarmed if I saw a few spots of acne over the next couple of days, as the skin continued to purge the toxins that had been lying beneath the surface. That was to be expected. Overall, the treatment was relaxing, adding an extra layer to the pampering I had already experienced and my face felt exfoliated, balanced and smooth afterwards. Other facial options on eforea’s menu include an anti-ageing collagen treatment; a superfood pro-radiance treatment to rejuvenate the skin with nutrition; and a facial for sensitive skin. Eforea spa Hilton Doha's therapists therapists are on hand to tailor the treatment to your needs and indulgences. With the treatments now over, I maintained my state of bliss by relaxing in the post-treatment room on a lounger with a cup of peppermint tea. Guests can also relax in the sauna and steam room. Eforea spa Hilton Doha promised a place like no other, where guests can reconnect and re-emerge brighter. My experiences delivered on that promise, all within a calming atmosphere where I could leave all the stresses of everyday life behind. I am already trying to decide on my next treatment: a Frangipani wrap or honey hammam, perhaps? Or maybe even a trip to the VIP room with Rasul mud chamber. Whatever I choose, I’m confident I will be in expert hands. ✤

pending four days and three nights in the magical city of Istanbul sounds like something out of a dream. This month, FACT magazine got the opportunity to turn this fantasy into a reality, after being invited to stay at the renowned Swissôtel The Bosphorus. This five-star luxury venue, located in the centre of Istanbul on the banks of the Bosphorus River, proved to be an unforgettable experience, one we could not wait to share with you, our readers. After a comfortable flight lasting just over four hours, we touched down in Turkey at Istanbul Airport. Our exceptional Swissôtel experience began immediately, as we were gifted a special ‘Meet and Greet’ service offered by the hotel. This meant a golf cart was waiting for us the moment we disembarked from the aeroplane. From there we were whisked through the airport, through passport control and on to collect our luggage. By the time we found ourselves sitting cosily in the Mercedes-Benz provided by the hotel, only eight minutes had passed since exiting the plane. A truly novel airport experience. The drive to the Swissôtel The Bosphorus gave us a sneak peek of the splendour awaiting us in Istanbul, the only city in the world to sit in two continents, both Europe and Asia. This breath-taking metropolis with its grand architecture, large assortment of mosques, vibrant colours, and rich history, all located on route, were enough to keep our eyes wide open in sheer wonder at all the adventure and splendour awaiting us in this great capital, once named Constantinople. Arriving at Swissôtel The Bosphorus, friendly and professional staff members were on hand to receive us and to take care of every aspect of our booking and settling in. • TRAVEL exceptional standard as we had the pleasure of inspecting various types, including guest rooms and suites, as well as two-story lofts, and one-, two-, and three-bedroom apartments. All these options feature state-of-the-art technology and premium quality amenities, including highspeed internet and marble enriched bathrooms. I was booked into the beautiful Swiss Advantage Bosphorus View Room. This 38sq/m, deluxe space, with large floorto-ceiling windows, boasts unbelievable views of the Bosphorus River, as well as the Golden Horn, an Asian landmass located across the water. The interior decor showcased a mix of uncluttered Swiss design and Turkish warmth, a balance that seemed to work in every way. I found the walk-in shower, complete with rainfall showerhead, to be a great feature, along with the attentive housekeeping service, offered twice daily, that ensured the room was always clean, tidy and fully stocked. A large work desk, complimentary Nespresso coffee and tea service, a 46-inch digital HD LED TV, premium internet and multiregional power sockets, all added to the comfort, convenience, and generous feel of this Swissôtel. The building itself offers various meeting spaces with capacities anywhere from five to 1,200 people. A ballroom, a luxurious holistic spa, a rooftop pool and no less than 65 acres of historical gardens. All this and so much more is available to guests of this beautiful hotel. Spending time at the luxurious Pürovel Spa & Sport facilities, offered us a chance to work up a sweat, as well as to relax and unwind. Boasting a full range of luxurious, holistic treatments, this venue houses 15 treatment rooms, including 12 massage rooms and three hammam areas, a steam bath, sauna, Jacuzzi, Pilates’ studios, group fitness classes, indoor and outdoor pools, and ultramodern sports training facilities. could over our stay and left feeling calm and revitalised. Swissôtel The Bosphorus is also regarded as a cuisine hotspot and it’s easy to understand why. With several highend restaurants located under its roof, we were spoiled for choice as we were served healthy Peruvian, Turkish and Nikkei cuisines. Buffet breakfasts, lunches and dinners, along with al fresco dining complete with scenic views, were all on offer and never disappointed. Both the food and the service were of an excellent standard and we must have gained a couple of kilos over our short stay. Yet another fantastic feature of Swissôtel The Bosphorus is its location in the heart of the city. The property is not only within walking distance of the affluent shopping district in Nisantasi, home to brands such as Gucci, Louis Vuitton, Kenzo, Prada and more, as well as several high-end malls, but it is also a great starting point to explore the vibrant city of Istanbul and all the wonders it holds. Over our four-day stay we managed to take in Hagia Sophia, the Grand Bazaar, the Blue Mosque, The Basilica Cistern, Topkapi Palace, Eminonu Square, The Galata Tower and many others. Any one of these magnificent landmarks would have made the journey to Istanbul worthwhile. It was not easy saying goodbye to the amazing space we had experienced over our four extraordinary days in Istanbul. With VIP treatment to the airport and the same golf cart experience back to the plane, we spent our four-hour flight reminiscing on all we had experienced. We made a promise to return both to Istanbul as well as to Swissôtel The Bosphorus. Truly, an awe-inspiring experience. ✤

BIG SCREEN The House Need to Know:

The House is a 2022 stop animation movie, a dark adult comedy with horror elements. The film is divided into three parts where we follow different characters at distinct times in the same house. The animation is masterfully done, and the story is fascinating as we see how this mysterious house affects those associated with it.

Directors: Niki Lindroth Von Bahr, Paloma Baeza Cast: Mia Goth, Helena Bonham Carter, Jarvis Cocker, Susan Wokoma

The scenes in this sequence are bizarre and somewhat disturbing but extremely intriguing

The Adam Project Need to Know:

The Adam Project is a 2022 sci-fi adventure movie that follows a young kid as he meets his older self who is trying to fix mistakes that occur in the future. The movie is easygoing and perfect for some laughs.

Director: Shawn Levy Cast: Ryan Reynolds, Walker Scobell, Jennifer Garner, Zoe Saldaña, Mark Ruffalo, Catherine Keener

Why Is It Worth Watching?

The House is an enjoyable movie from beginning to end. We start by following a human family of four. In this section, Mabel (Mia Goth), the eldest of the two daughters, is presented as the main character as we watch the sinister goings on of the house from her perspective. This part is the most horror-esque of all three, with creepy themes as well as a scarier soundtrack and lighting. The story then changes to a RATS developer (Jarvis Cocker), who is left unnamed, in more modern times as he attempts to fix the house and sell it. The scenes in this sequence are bizarre and somewhat disturbing but extremely intriguing. In the final part, we follow Rosa (Helena Bonham Carter), a cat landlord in an unknown future where everything surrounding the house has flooded. This segment is the least disturbing, both by the visuals and music. The stop-motion is incredible as the characters are filled with life, and so are their surroundings. The story is mysterious, with many things being left for the watcher to decide. We are not explicitly told why or how these things are happening. However, that’s what makes this movie so special, as the audience members are left to make their own interpretations of its greater message.

Why Is It Worth Watching?

This movie follows a 12-year-old, Adam Reed (Walker Scobell) right after the tragic loss of his father (Mark Ruffalo). He finds himself struggling to find his place and keeps getting into fights at school and petty disputes with his mum (Jennifer Garner). However, one day he meets the older version of himself from 2050 (Ryan Reynolds) as his future self is trying to figure out what happened to his wife. As well as fixing the mistakes time travel has caused in the future. The movie is hilarious as Reynolds is able to bring in his classic charm and the interaction with the other characters seems heartfelt and real. It is also a pretty funny movie and ideal for those looking for a relaxing watch. The story is easy to follow, and the characters and storyline are intriguing enough. 86

The Language of Food By Annabel Abbs

ALTERNATIVE/INDIE

ALTERNATIVE/INDIE

Homesick By Sea Girls

The Jacket By Widowspeak

On first listen of the first track, Hometown, we were initially sold. After days of listening to mediocre new offerings, we were happy to find something we could actually recommend to you. How much of that is down to the very retro-ness (is that even a word?) of Sea Girls’ offering, we’re not sure but we were definitely listening with empathy, if not sympathy. Lead vocalist and songwriter, Henry Camamile, is a self-confessed exhibitionist when it comes to laying his feeling out front and centre. And there is something to be said for the teen/early 20s angst of songs that drag the listener, regardless of age, back to their youth – let’s face it, we’ve all dealt with the insecurities and disappointment of unsuccessful romantic encounters. The first move away from home is something no-one ever forgets – excitedly playing adult while inside feeling like a defenceless, momentarily abandoned, child. A feeling captured perfectly on Sick with it’s poignant lyric “I don’t want to grow up” and slick inclusion of 90s advertising slogans that immediately summon youthful memories and smiles from a generation Camamile is too young to be part of. Overall, the album seems to be an homage to youth with definite vocal influences from Brandon Flowers and even Julian Cope, in terms of attitude and delivery. Fave tracks from us are Sleeping With You (and mentally cheating) and Paracetamol Blues. Each is thoughtful and thoughtprovoking. However, there’s also loads of self-indulgence here that’s not overly attractive.

This is the sixth album release from the Brooklyn-based band and after 12 years of making music, it’s a joy to find that they still sound as fresh as ever. Vocals from Molly Hamilton offer a dreamlike quality throughout, you could almost float away on the delicate thoughtful sounds, but you really do need to listen to the lyrics too, to discover that all is not as it seems. At times you could be forgiven for thinking you’d tuned into something from The Peasant, the 2016 album from Hope Sandoval & The Warm Inventions. And indeed, on Unwind Molly’s voice takes on a less whimsical quality, deeper and with a welcome rich timbre which, together with the Gangsters Paradise-style opening, makes this track a favourite. Other standouts include Salt and True Blue. Neither is currently easily accessed in this part of the world, so we had to do a bit of digging. Bit, it was definitely worth it. The, now familiar, twinkling score draws deep from that oh-so wistful voice telling stories of love, loss and memory. Sad words entwined with happy sounds which make the sentiments even more melancholy. Our absolute favourite track is Slow Dance, a very pretty love song – again with lyrics that hint at what lies beneath. Though the messages are sometimes hidden, Widowspeak have succeeded in delivering another cerebral masterpiece that sounds just like easy listening.

PAINT IT OUT! Suzana Joumaa, artist, interior designer, architect and former alumni of Doha Fire Station Residence Programme, speaks about her journey through art.

S

uzana Joumaa gets the picture of the world around her. A Qatar-based, cotemporary mixed-media artist, originally from Syria, she takes inspiration from her subconscious thought process to create her work. Driven by a desire to let her inner feelings out on a canvas, she uses art to awaken her audience to the messages lying just beneath the surface of culture. There’s a notable genuine effortlessness to Suzana’s work as an artist, interior designer and architect. Although her paintings are about myriad colourways and contrasting hues that play on the personality of the art lover – her interior design pieces have an inherent playfulness to them that demands individual styling and can be refreshed and reimagined over time. She doesn’t generally go into great detail about her art, it is, after all, her subconscious expression. But, when coaxed, her answers are both deep and thoughtful as she discusses the discipline it takes, how she finds art an outlet to her inner thoughts and bringing 90

music and art together as part of her Residence Programme at Doha Fire Station. FACT sat with the artist to talk about her journey from Syria to Qatar, how her art has evolved over time and what drives her creative process.

ARTS & CULTURE •

What’s something that is essential to your creative process? The deep feelings and what is visually unexpected is so essential for my art. Dreams, subconscious thought process and the traumas, all offer an endless number of art-stimulating materials. And trying what is new in techniques with continuous experimenting is also critical. How has your work evolved over time, do you see a significant change in how you portray elements and concepts? A lot has changed over the period of time and I accredit that to my continuous experimentation with art and life challenges that I have endured. After leaving Syria because of the serious tense situation around, I had stopped painting for years and then, when I decided to pursue my Master’s Degree and got back to art, I discovered my expression had changed a lot, just like myself. The urge to let out the depression that I’d been holding in for so long really translated well on the canvas. Also painting in art galleries and being resident at Doha Fire Station really gave me a new perspective.

What inspires your art and who's your favourite artist? My subconscious memories and my general visual memory inspire my work. Sometimes I see certain patterns, designs and melodies in my sleep and when I wake up, I try to translate them into a reality. I am trying to do something original. I don’t have one favourite artist but I get inspired by cinema directors, architects and musicians who are progressive.

What advice would you give to the young artists who want to pursue painting as a full-time profession? I’d just like to say be brave. Make a living from what you love – if you give art a lot, the art gives it back, everything. Art is a profession like any other but it needs you to be hard working and smart at the same time – it requires you to be patient and original because that’s the key! And remember knowledge and developing your art tools continuously are forever your friends. ✤

How do you think architecture, interior design and visual arts come together? To make visual art you need lines, concept, feelings and compositions to come out of the painting frame and get back inside back and forth. My artwork is really inspired by space, objects and lines. For architecture, that’s what you need, and those are the basic elements of creating an artwork as well. You have a very contemporary and modern style of expression. What is the narrative that you intend putting forward with your work? Combining different art forms can give an absolutely new perspective not just for the artist but the audience as well. With my artworks, I intend my audience to get lost in an absolutely different spectrum and universe, in the thoughts, perhaps via colours, shapes and sound – as I bring all these three elements together. Every individual has a different perspective to the way they look at a certain piece of art and I want to stimulate that thought process. fact magazine

What We’re (Still) Talking About Off With Their Heads

NFT or NFC (No Flippin’ Clue)

Not Just For… Peacetime

Britain’s Prince William and the everdelightful and perfectly dressed Kate have been tootling around the Caribbean recently as part of a tour to mark Queen Elizabeth II’s Platinum Jubilee. All, of course, should have been sweetness and light with red carpets and welcoming arms… but, and there’s a big but, somebody at The Palace seems to have gone a bit tone deaf. It’s almost as if royal staffers and the UK Foreign Office have been living under a rock and have totally missed the increasing dissent and an air of protest in the region where, earlier this year,

Non-Fungible Tokens. Simple right? They allow artists to sell their works, without actually giving the works away – we think. At least that was our understanding. But it seems things are not that straightforward. Radio Bahrain recently announced the launch of its own NFT, at the NFT MENA Exhibit 2022, and it was very well received by local and international artists and musicians. So far, so good and we can just about stretch our somewhat fuddled brains around how NFTs can benefit the arts world – though it’s still confusing. But then heard big fashion brands, such as Dolce & Gabbana and Adidas, are

There’s no doubt the war in Ukraine is hideous and shouldn’t be happening. The daily images of death and destruction are heart rending. But, for all the dismal human suffering, it has also brought out the very best in human nature. Not only are many countries welcoming refugees with open arms in a seldom seen in recent years. But what has also been demonstrated is the true humanity of so many Ukrainians, not just those who have bravely stayed to defend their homeland but also those who have headed to the borders taking their pets with them.

Barbados dropped the Queen as Head of State and became a republic and Jamaica looks like following suit. Of course, with immense grace under pressure, the young couple have put a brave face on it but, it’s hard to believe heads won’t be rolling and questions won’t be asked about how they ended up in this ridiculous situation in the first place – the first tour of the Jubilee year to a region that clearly didn’t want them.

producing clothing for the virtual world which can be sold as NFTs – in effect like selling a painting or any other valuable item in the real world. But, wait a minute, how can you sell something that doesn’t actually exist? It’s the same question we asked when Tommy Hilfiger announced that it was designing clothes for avatars, some items at great cost. Is it just us being really old-fashioned, or is this a bit like The Emperor’s New Clothes?

There are some who might argue that “it’s just a dog” or “just a cat” but for these people, who have already lost so very much, their pets are part of the family and they would never leave a family member behind. We wish the same could be said of the expats in our part of the world who frequently acquire animals while they are here but have no intention of taking them when the time comes to move on.
