t has been a super busy month for us at Team Fact. Firstly, we’ve had love on our minds, making sure we put together all the best Valentine’s dining offers to ensure treats for you and your loved ones. Then we decided to look a bit more closely at the feast day that’s so closely associated with lovers. Turns out Valentine’s is not all sweetness and light – check out a

in our cover story – Valentine’s The Good, The Bad and The Hungry. Elsewhere in the magazine we’ve been out and about across the island sampling some fantastic culinary fare and sharing our thoughts. We also discovered a rather impressive new venue and spoke to one of the Kingdom’s most famed Bahraini chefs. I got the chance for a full-on pampering session – what a joy – and my motoring colleagues got behind the wheel of a rather fab new car. Yes, we have had a pretty good month. THIS IS CIRCA An interesting and intriguing new concept has made its way to the outdoor space of The Palace Boutique Hotel and it’s definitely spicier than anything they've had there before!

B

uckle up for a ride with Circa Bahrain - a brand new pop-up that has arrived with a menu that shows off a uniquely modern take on South American cuisine, in a cool, serene, outdoor setting. Giving off a hip, smart and sophisticated aura from the entrance, the restaurant is set up with cool, beige, laid-back seating areas around the pool, with a stunningly large tree that sits at the front of the restaurant. Radiating good vibes right off the bat, it was no surprise that the new pop-up was busy and seemed to be the newest hotspot for every night of the week. Currently being run and orchestrated carefully by the Executive Chef at the hotel, Steeven Gilles, the man at the helm of this kitchen is also recognised for being responsible for the incredible Masso and The Orangery. We definitely knew we were in for a good time! From upbeat lounge music to Latin American hits, to live jazz performances from saxophone players all night long, the liveliness of the environment, alongside the friendliness of the staff, was without a doubt top tier and helped us remain entertained throughout the evening. Open all week long, except Mondays, Circa opens its doors from 7pm to 11pm during the week, and until 2am on weekends. Brunch is available on Fridays and Saturdays and a DJ plays all week long. Aside from the mixologists who were busy creating signature beverages 10

for guests, the kitchen staff also had some intriguing surprises for us in their dishes, from which we enjoyed every one of them. FACT recommends you try the Peruvian Ceviche, which is bursting with flavours of sweet potato, cilantro and chilli, alongside crispy plantain all doused in tiger milk that complemented the sea bream perfectly. A dish that will seriously have you in awe, make sure you delve right into this one for your starters! Next, we tried their own exotic Barbecue Glazed Lentil Taquitos. With an interesting texture and a different take from what you would expect from a regular taco, these bite-sized surprises were beyond delightful and bursting with flavours! For dessert, we recommend you take a bite of the Fuente Cigar. You may definitely be taken aback by the first look, but once you give the creative dessert a chance, you're in for a velvety chocolate peanut dulce surprise! What a sweet ending! Transcending borders with peak creativity and excellent execution and presentation of their dishes, the techniques and concept behind Circa definitely impressed us, and we're so excited to see more! ✤

MAKING NEW WAVES Radio Bahrain 96.5 has launched a new corporate identity and introduced new shows and presenters. Radio Bahrain 96.5 has revealed its new corporate brand identity as part of its development strategy. The new logo draws from the station’s vintage identity as Bahrain’s first English language radio station, highlighting its ongoing evolution and commitment to creativity, innovation and contemporary aesthetics. The new slogan, ‘Alive With Music’, communicates the station’s unique approach in providing music and entertainment that is alive with originality and personality and further connects and entertains its audiences in Bahrain and the Eastern Province of Saudi Arabia. “We’re delighted with the new corporate identity which reflects Radio Bahrain Company’s ambitious development plans and supports our efforts to steer the station through the evolving and expanding landscape of modern broadcast radio,” said Khalid Mohammed Mattar, Chairman of the Board of Directors of Radio Bahrain Company. Radio Bahrain Company’s CEO, Omar Khalifa Shaheen, added: “Radio Bahrain is an institution within our community, loved by all. The station’s very own and much-loved Bahraini host Noor Nooruddin has also introduced her new mid-morning show ‘Mellow Submarine’ which airs every weekday from 10am to 2pm. Dave Cleary, a senior broadcast professional, with more than 24 years of experience from the UK and the UAE, has also recently joined the station. A two-time award winner in 2014 and 2016, winning ‘Best Radio DJ’ at the People’s Choice Awards in the UAE, Dave currently hosts ‘Loud & Cleary at Drive’ for Radio Bahrain 96.5, from Sunday to Thursday from 2pm to 6pm. Radio Bahrain 96.5 began broadcasting in 1977 and has become the most prized and listened-to English language radio station on the island and within the Eastern Province of Saudi Arabia, reaching an audience of 6.5 million listeners in the region. The radio station is operated and managed by the Radio Bahrain Company, a wholly owned subsidiary of Bahrain Mumtalakat Holding Company (Mumtalakat), the Kingdom’s sovereign wealth fund. ✤

PREHISTORIC FUN Prince Khalifa bin Salman Park’s new Dino Park is sending waves through the island, setting itself as a national landmark for both locals and tourists. The new facility is attracting children and adults alike with its installations, exciting games and entertaining events. Incorporating a dinosaur theme, the 80,000sq/m park is dotted with over 30 dino structures and contains brand new activities such as a jumping castle, outdoor paintball space, outdoor theatre, and electric boating on the 5,000sq/m lake. Originally owned by the Muharraq municipality, the park was taken over in 2020 by the now-owner Abdullah Al Doseri and managing company Delma Marine, headed by Firas Hammad. The concept was originally a temporary project managed by Firas in 2019, but with the onset of the pandemic, things fell apart soon after its opening. Firas has come back stronger though, with the current installation as a permanent feature of the park, holding bigger structures, better rides and much more exciting activities. “The project in 2019 was done on a very small-scale,” says Firas, “this year’s project is a much bigger investment and done on a much larger-scale.” “Our plan is to have the park be a national landmark in Bahrain promoting tourism and culture. If you go to America they have Disney, and in Bahrain we have Dino Park,” says Abdullah. Firas first implemented a similar project in Kuwait, Oman and Jordan. He approached Abdullah in 2020 with the idea 20

of transforming the park into a permanent Dino Park. The dinosaurs have plaques with written information about each species, with some containing a sensor, aiding it to respond to a person’s movement and come alive with sound. The park also includes the biggest jumping castle in the Middle East, a trampoline and the only outdoor paintball area in Bahrain, offering a range of exciting and fun activities. Every Thursday and Friday the park features a children’s play or musical performance in the outdoor theatre, running twice between 5pm and 10pm. For anyone worried about a hungry tummy, do not fear, for the park is lined with several food trucks, a lovely Garden restaurant and an upcoming café in the tower, from which you can see great views of beautiful Bahrain. Covid-19 regulations are strictly followed in the park, with rides being sanitised after every use and other activities such as the jumping castle and trampoline having limits on the number of people allowed to enjoy the space and sanitization taking place every 30 minutes. Firas insists that Dino Park is: “A space for everyone, young and old. Anyone and everyone is welcome. The money does not matter to us. What matters is that people have a good time and are happy with their family and friends.” When asked about their next steps, Abdulla assures readers that more exciting things are to come: “All I can say is: just wait for the summer. It’s going to be big.” ✤

Luckily, Spangler got on the job to make sure they made the ultimate comeback in 2021. A UNIQUE TRADITION Valentines’s Day is supposedly the most common wedding anniversary in the Philippines. This tradition goes back to 2004, when 5,122 couples gathered on the Manila waterfront on the eve of Valentine’s to lock lips when the clock struck 12, setting a new world record. Even the city’s mayor at the time, Lito Atienza, attended with his wife, saying: “Let's take a break from the troubles we have been having, from our work, from political bickerings. After all, it's Valentine's Day.” Ever since, mass Valentine’s Day weddings have become increasingly popular, with hundreds of husbands and wives-to-be coming together to say “I do”.

CHOCOLOVE Cacao originated from Mesoamerica, with records of the beans being used to flavour food and drink dating back to as early as 2000 B.C. Come the Mayans and Aztecs, the bean was used for ritual offerings, especially linked with fertility and love. The Aztecs famously considered the food more valuable than gold. Flavoured with spices and honey, the drink was offered by Aztec tribes at chief ceremonies, including the moment a suitor would come to ask a woman’s hand from his would-be father-in-law. The fearsome Aztec ruler Montezuma II is said to have used the drink as an aphrodisiac, drinking three gallons a day to increase his ability to “please the ladies”. FOOD OF LOVE Everyone’s heard that oysters are, supposedly, the food of love. Oysters and their link to lust go back to the Ancient Greeks, with the image of Aphrodite, the Greek goddess of love, rising from the sea standing on a half-shell. Oysters have also been linked to love through science. Extremely rich in zinc, oysters provide this essential ingredient for testosterone production, not to mention dopamine production, increasing pleasure and satisfaction. THE FIRST VALENTINE’S CARD Charles, the Duke of Orleans, was the first to pen the word ‘Valentine’ in reference to a loved one. The French duke wrote a poem to his wife while imprisoned in the Tower of London after being captured by the Burgundians in 1415 at the age of 21. He wrote: “My very gentle Valentine, Since for me you were born too soon… My very gentle Valentine.” Charles was never able to see his wife again, being imprisoned for 25 years, far exceeding her death somewhere between 1430 to 1435. SWEET AS CANDY Necco, the 1901-born American company that produced its famous Sweethearts candy – chalky hearts with sweet little messages on them such as ‘Be Mine’ and ‘Love You’ – every year for Valentine’s Day, declared bankruptcy back in 2018 and there were no love hearts! The company sold the brand to Spangler Candy Company which then acquired the rights to Sweethearts 26

SEEING RED According to a study by the University of Rochester, the colour red has a direct psychological link to desire and attraction. The lead author of the paper, Andrew Elliot, found that men dressed in red or who had a red background were seen as more attractive by female participants. He concluded that the colour was linked to feelings of dominance and confidence and was an ingrained biological perception. LOVE LETTERS Every year, thousands of lovesick romantics post letters to Verona, Italy to ‘Juliet’, derived from the classic Shakespearean tragedy, Romeo and Juliet. The letters are answered by a team of volunteers from the Juliet Club. Each Valentine’s Day the club awards the Cara Giulietta prize to the most touching letter members receive. TOKENS OF AFFECTION The ribbon’s attachment to love goes back to the Middle Ages. A time of ongoing warfare, this period saw knights frequently going into battle wearing a token given to them by their sweethearts. This token was usually a lace handkerchief or a ribbon from her hair for luck and protection, as well as a reminder of their love. From then on, lace and ribbons have been seen as common objects of love and desire, especially on Valentine’s Day.

PAINT IT BLACK An unofficial holiday in South Korea, April 14 sees singletons across the country gathering to eat black food. Following Valentine’s on February 14 and White Day on March 14, both associated with celebrations of love and romance, this dark day became popular as more and more people decided singles deserve a celebration, too. The annual event sees singles wearing black and eating black-coloured foods, especially jajangmyeon, a black bean noodle dish, as they complain about their lack of intimate relationships. PRICKLY PARTNERS Porcupines have one of the most unusual attraction practices (to say the least). The Male North American porcupine first performs an elaborate dance to let their selected female know they want to get together. Eventually, they douse the female with their urine. The female, who is fertile just once a year for a period of eight to 12 hours, then decides whether or not to be receptive. If she is not, she will scream at him, shaking the urine off and running away!

VINEGAR VALENTINE’S These cheeky postcards include mean-spirited messages from rejected lovers insulting the receiver’s looks, intelligence or occupation, with rather garish cartoons attached, including of ‘Dudes’ and ‘Floozies’. First produced in the United States in the 1840s, they reportedly boosted readership in the lower classes, costing only a penny. OFF WITH HIS HEAD On February 14, 270 A.D., St. Valentine, a respected Roman priest, was executed following his rebellion against the banning of marriages in Rome. This was in response to the then-ruler Claudius the Cruel, who forbade couples from getting engaged or married due to his belief that men were too attached to their sweethearts and wives to join his military leagues. Defying this decree, St Valentine decided to perform marriages for young lovers in secret. He unfortunately got found out and was sentenced to a beheading, which was performed on the now romantic holiday. THE FOOD OF LOVE…NOT! Ever wanted to watch your ex get eaten? Last year, the San Antonio Zoo in Texas, US, encouraged the broken-hearted 28

DEADLY VALENTINE’S The Valentine’s Day Massacre caused waves of shock on February 14, 1929, when Chicago’s North Side experience the height of violence due to gang rivalry. Chief gangster Al Capone was the face of the warfare, as he sought control through an elimination of his enemies in illegal activities, including those of bootlegging and gambling. On the fatal day of February 14, seven men associated with the Irish gangster and Capone’s longtime enemy George ‘Bugs’ Moran were brutally murdered by men dressed as policemen. Though it remains a mystery, Al Capone is generally considered responsible for the bloody event. AND THE BRIDE WORE… Probably one of the weirdest wedding traditions is Scotland’s ‘Blackening the Bride’ custom. Performed in the days or weeks prior to the special day, the bride and groom are ‘captured’ by their families and friends, covered with an assortment of disgusting foods, including rotten eggs, fish and treacle, and additionally garnished with flour and feathers. They are then driven in the back of a truck and paraded around town, accompanied by the banging of pots and pans. WAILING BEFORE WEDDING Despite appearances, weddings are a happy event for the tribe of Tujia in China. Nevertheless, brides are expected to cry for an hour a day every day for a month before their wedding night. Joined by female relatives as the days go by, this ritual signals the welcoming of a good marriage.

n 1948, an unknown visionary named Ferdinand Porsche began producing the first of his creations, the Porsche 356. Employing a mere 200 workers and producing only 52 cars in a humble garage, he couldn’t have known at the time just how legendary his label would soon become. Today, Porsche is recognised as one of the most successful motor vehicle manufacturers on the planet and their logo has become synonymous with both luxury and high performance. Amongst Porsche’s vast array of superior offerings is the celebrated Macan range. First unveiled in 2014, the Macan has not only enjoyed commercial success but has received an array of accolades from within the industry for its outstanding design. Now, in 2022, Porsche have recently unveiled their latest generation Macan range and FACT was fortunate enough to receive an invitation from Porsche Centre Bahrain to test drive this latest import. The 2022 Porsche Macan is a five-door luxury crossover SUV whose very presence made us ache with longing to get behind the wheel. The superlative designers of this deluxe vehicle have created a sporty, robust and refined machine that looks fantastic whether on the roads or parked in a garage. The visual components have been sharpened, ensuring it is even more striking than its predecessor. The nose has been redesigned and now features an inlay in the exterior colour, emphasising the Macan’s breadth and adding to its imposing presence. This fetching feature is complemented by the new body coloured air intakes that lead the eye towards the flowing lines of the flanks. The side blades now include a 3D structured element, whilst the 21-inch alloy wheels hint at the vehicle’s on-road intentions. The back end has been rounded off towards the road by a prominent and technically designed diffuser that sits perfectly above the twin trapezoidal tailpipes. All-in-all, the exterior is a true testament to the superior skills of the Porsche Macan design team. As far as the noticeably enhanced interior is concerned, we could easily go on about Porsche’s use of exquisite materials throughout the vehicle, the intricate attention to every detail, the perfectly designed and positioned steering wheel, the elegant structure of the new centre console, the impressive ergonomic layout of all buttons, dials and features as well as the adjustable, supportive and uber comfortable front seats but, in truth, it was the infotainment system that held our attention. This system is one of the most responsive and user-friendly setups we have experienced. The remarkable resolution of the 10.9-inch full HD touch display is crystal clear and we could always see the screen perfectly, even during the midday sun. This responsive and practical system allowed us easy access to all the vehicle’s features and functions, helping to fully immerse us in the 2022 Macan experience. This infotainment arrangement also provides wireless compatibility with Apple CarPlay, superior navigation and an impressive 10-speaker sound system. Finally, it was time for the tarmac! Needless to say, we were exceptionally keen to get this beauty out onto the roads to see what she could do. The latest generation Macan houses a newly developed, turbocharged, four-cylinder engine that produces 195kW of power. This combined with the seven-speed Porsche dual-clutch transmission (PDK) and the Porsche Traction 38

Management (PTM) all-wheel-drive system, enables this model to power from 0-100km/h in a respectable 6.2 seconds and to reach a top speed of 232km/h. We could immediately feel the superior performance of this latest model over the last generation. The acceleration is far more responsive and the drive quality is much smoother thanks to the sport air suspension. Other notable features include the car’s superb Drivetrain Traction Control, as well as the ABS braking system that allows the driver to safely navigate through the trickiest of conditions. Importantly, Porsche have also managed to successfully reduce the Macan’s CO2 footprint. Always keeping the wellbeing of you and your loved ones at the forefront of their creations, Porsche have included a multitude of both safety and performance features in the new Macan. These include Electronic Stability Control (ESC), cruise control, lane departure warning, hill control, a tyre pressure warning system, lane departure warning, outboard front lap and shoulder safety belts, ParkAssist with front and rear parking sensors, a back-up camera, side impact beams, airbags throughout the vehicle and so much more. Designers looked at the past 50 years of Z for inspiration for their latest model, adding a twist to develop a bonding relationship between the new Z and its owner. The vehicle exudes the familiar silhouette of the first-generation and the 370Z, with the ‘Z Bulge’, used on the original Z, accenting the long nose with its raised bump and sharp creases. The acute rectangular design of the new Z’s grille allows for ample airflow to feed the twin-turbo, V-6 engine, while also referencing a shape similar to the original Z and the 350Z. The shape of the headlamps is patterned after the scooped-out design of the first-generation Z. The signature lighting, made up of two crescent LED bars, took inspiration from the glass-covered headlamps of the 240ZG, or the ‘G-nose’ Z. Both functional and visually dynamic, the ducktail-style rear spoiler was a popular tuner addition for first-generation Zs. The individual spokes of the 19-inch wheels take inspiration from the traditional Japanese katana blade, characterised by their sharply sculpted design and hand-forged impression. The all-new Z’s new exterior colour, called Ikazuchi Yellow, pays homage to past Z models. The original Z’s yellow paint was chosen by Yutaka Katayama to contrast against blue skies. In Conversation with… David McGoldrick The GM of Euro Motors, talks sustainability and his love for one particular brand.

You have been with Euro Motors since 2017. What prompted you to make a move from the UK to Bahrain? I first visited the region in early 2004 and was very impressed at the energy and growth potential in the automotive industry. Over the next 10 years, I monitored the industry in the region and came very close to taking a role at Mercedes-Benz in Bahrain, but my heart has always been with the BMW Brand. In 2017, the opportunity arose, and I successfully secured the position of General Manager at Euro Motors. Recent years have presented a double challenge for the motors industry with Covid-19 and the ever-increasing push towards sustainability. How has Euro Motors, and the various brands it represents, dealt with these issues? In business, there are always challenges, no matter what sector 48

you are operating in, and Covid-19 was one of them. Covid-19 presented some unique challenges that affected all areas of our operation. We acted swiftly to ensure the safety of our staff and customers. We monitored our business daily, ensuring we always followed the Government’s advice. Swift action and the ability to adapt our business operations has seen Euro Motors through this uncertain period; we remain vigilant to the ongoing challenges of Covid–19. In addition, sustainability has been a critical topic for the automotive sector for several years. Our brand partners invest large sums to ensure their products are at the forefront of technology and sustainability. The use of recyclable materials has increased considerably in the premium sector with lightweight alloys and natural elements, such as wood and fibers, being used in production. BMW Group factories have worked hard to reduce their carbon footprint by producing their power from renewable sources.

Moving forward, how do you see the use of greener technology affecting motoring in a region famed for its love of premium brands and, particularly, gas guzzling SUVs? For example, many big manufacturers are coming up with fully-electric or hybrid models but, thus far, there is little infrastructure, certainly in Bahrain, to support these. What do you believe needs to happen to get sustainability in motoring further up the agenda? I get asked this question a lot and, unfortunately, there is no simple answer. Still, education regarding features and benefits to the consumer is critical for Euro Motors and our brands. First, the consumer needs a compelling reason to invest in the new technology due to the increased cost of purchasing a Battery Electric vehicle (BEV) vs Internal Combustion Engine (ICE) model. Exemptions on Import Duty and VAT or a subsidy as part of a Greener Cleaner Strategy could support the cultural change of drivers in Bahrain. In addition, the latest generation of BEV represents a significant advancement in technology. They can use the newest generation batteries and intelligent charging software to travel further on a single charge. This is a considerable advantage for a driver in Bahrain due to the size of the Kingdom’s road network. It should also be noted that there is a perception that BEVs are not fun to drive. I can assure you this is not the case. I recently had the opportunity to drive the BMW i4 M50 and the iX50 models, which we hope to bring to Bahrain in 2022. These cars are amazing to drive and full of the latest technology.

You are involved with all the brands under the dealership. If you had to choose, which would be your favourite and why? BMW, of course. I first became involved with the brand in 1985, and it has been a passion of mine ever since. Why? A tough decision as Ferrari and Maserati are iconic brands and exciting to be around daily. Rolls-Royce is my guilty pleasure; such a unique brand, with Goodwood being one of my favourite places to visit. My father worked for British Leyland in the UK, which produced JLR vehicles when I was a boy and I have fond memories of this brand too. BMW, however, has it all: heritage, design, technology, performance and consistency. A car for everyone. With four years on the island under your belt, what are your favourite things about Bahrain and the one thing you would tell visitors they must-see? Well, the Kingdom of Bahrain is such a safe place with many favourite things, but I think the cultural diversity of the Kingdom and the friendly nature of everybody you meet is infectious. There is also fantastic, accessible history in Bahrain, and I love getting out to the souqs of Manama and Muharraq and seeing the old buildings and culture. Moreover, I love Friday rides out in the desert and the oil fields to see what makes Bahrain tick, and I love to visit Bahrain International Circuit. ✤ fact magazine

You are the first Bahraini chef to attain the position of Executive Chef in the Kingdom. Please tell us about your culinary journey and how you reached this level. I started to attend training locally and internationally in 2002 and for the next 16 years I travelled to Lebanon, China (Beijing and Shanghai), Belgium and the US to learn different cuisines. I worked hand in hand with two-Michelin-starred Chef Patron Yves Mattagne in an Asian-fusion seafood restaurant. I joined The Diplomat for the first time in 2002, where I stayed until 2005. I returned for the second time in 2007, and here I am still today – a Bahraini Executive Chef honoured to call The Diplomat Radisson Blu Hotel, Residence & Spa my home. How did it feel to be named among the 50 most influential chefs in the region by a respected publication? I felt proud and grateful that my work had been recognised in and outside of Bahrain. It was an enormous privilege to see my name aligned with well-known chefs in the region.

What is your favourite way to have fun in the kitchen? Day-to-day kitchen operation can be very stressful and exhausting, so my approach is always to keep the team cheerful, in a good mood and active. I would have to say, my favourite way to have fun in the kitchen is telling jokes and stories from the past. The team is relaxed and enjoys the work. A healthy atmosphere means creating remarkable and mouth-watering dishes. What is your signature dish and why is it popular? Let me share with you two favourite and signature dishes, Beef Steak with chive sauce, and Black Cod with rosemary and saffron sauce. My guests enjoy combined flavours and blended tastes. ntering the magnificent building of Vida Beach Resort Marassi Al Bahrain had my heart pumping from the start. With exquisite interiors and exceptional service, the hotel was bursting with life and vigour. As we mounted the stairs to The Bistro by Origins, we were welcomed by friendly staff and taken to our table by the window, which offered a beautiful view of the beach below, with dancing palm trees and the azure of the water glittering bright under the sun. The white interiors of the spacious restaurant dazzled us with simplicity and finesse, decorated with subdued colours of blue and green, further inducing a calm atmosphere. As we sat, we were served a passionfruit and pomegranate twist, made specially for us. Cool, tangy, fruity, with a tinge of zest, it was garnished with a sprig of rosemary and a slice of dehydrated lemon. Munching on the crunchy dehydrated lemon left the perfect sour aftertaste to complement the sweet drink. Next, we were served gougeres, soft French cheese puffs, glowing with a rich golden hue and deliciously baked to a soft texture, with the delicate taste of cheese melting in our mouths. Next came the Salad D’Endives Jaune et Rouge, offering a beautiful combination of roasted and fresh ingredients, including ripe pear, lettuce, walnuts and Roquefort cheese, topped with a blend of date and mustard dressing. The flavoursome and fresh crunch of the pear and lettuce were perfect additions to the richness of the sweet roasted walnuts and the strong and pungent taste of the Roquefort cheese. The Soup Aux Truffes Noires ‘VGE’ by Paul Bocuse came soon after, topped with freshly baked pastry, soaking up the juice of the soup and harbouring the aroma of a wholesome and comforting meal. Breaking through the pasty with our spoons, we were immediately hit with the steam of the soup and the fragrant scent

of its many luscious ingredients, including carrots, capsicum, tomatoes, celery, olives, and a most unusual addition, Foie Gras. The dish has an interesting history to it. It was originally created in 1975 by the famous French chef Paul Bocuse for a presidential dinner at the Élysée Palace. Thereafter it was served in the chef’s restaurant near Lyon as Soupe V.G.E., with the initials standing for the then French president, Valéry Giscard d’Estaing. This piece of historical narrative made it all the more exciting to devour. The third starter that appeared was the Feuilletée D’Escargot de Bourgogne, a puff pastry with Burgundy snails, a French dish with a twist. The round puff pastry was freshly baked with parsnip and carrot cubes and oozing with garlic butter. On top lay three Burgundy snails, garnished with a dash of coriander and accompanied with a fresh salad. The snails and pastry complemented each other magnificently, with strong tastes providing a good balance of flavour to the tongue, leaving us satisfied, yet ever hungry for more. Next came the Chateaubriand, a classic French steak dish of soft tenderloin and grilled vegetables, including potato grilled with soft cheese, broccolini, asparagus, carrot, squash, onion, spinach and mushrooms. The meat itself was delicately cooked, not too bloody and not too chewy, its rich taste well juxtaposed with the succulent flavours and textures of the vegetables and the rich gravy, made with high-quality beef stock, that adorned the dish. Soon we were distracted by the new beckoning scent of the Fillet De Hétan, unmistakably the star dish of the meal. A panfried halibut flatfish, it was served with a side of mashed potatoes infused with lime and kale, and a fresh salad of carrot, cucumber, cabbage and pickled daikon. The famous saying ‘Simplicity is the ultimate sophistication’ applies perfectly to this dish. The fish, only lightly fried with no added flavours, offered the sincere pleasure of a nourishing meal. The mashed potato provided an ideal balance of freshness and comfort, with the salad offering a kick of crispy rawness. Next came one of the restaurant’s bestsellers, the Poulet ‘Label Rouge’, a plate of roasted chicken on a bed of yellow ragu dal and quilted with a rich and creamy white sauce. Chef Nicholas purposely incorporated an Asian twist, with spices such as cumin, coriander and chilli packing the dish with a host of flavours that I had never seen combined before. Garnished with lemon breadcrumbs, roast chilli cauliflower and freshly chopped coriander leaves, the dish flaunted an exuberance of vibrant 54

colours and tastes, with the tenderness of the chicken breast offering the perfect sponge to soak it all up. A meal would not be complete without dessert, especially at a restaurant like The Bistro by Origins. The Pavlo-Fleur was brought in first, with an elegant design resembling that of a rose, a key flavour in this delicate little dish. Made with crispy meringue, rose petal jam and the most immaculate dark chocolate, each bite into this dessert gave way to new flavours. It felt like a rose opening up before our eyes, offering surprise after surprise of something to relish. First came the sweetness of vanilla ice-cream and whipped cream, followed by chewy meringue, which was stuffed with the gem of the dessert, the rose petal jam. How Chef Nicholas managed to accomplish that was a mystery to us! ✤

huttered since the early days of the pandemic and sharing a kitchen with its neighbour, China Garden is keen to show off its new look and a menu that promises long-time favourites as well as some new innovations from Chef Ding. The interiors are much lighter and brighter than before, while still incorporating those quintessential Chinese touches that make this such a treasured eatery. And the smiling greeting from outlet manager, Joanne, is every bit as welcoming and warm as the food. We headed to our table and, almost immediately, our starters began to arrive. Crispy baby corn is a signature dish, with good reason. Piping hot pieces of the sweet baby vegetable coated in a mix of Szechuan sauce and chillis, for an additional kick, then topped with roasted sesame seeds. Whether you’re a fan of corn or not, you really should try this. It’s the perfect marriage of sweet, crunchy vegetable with a sauce that’s just the right side of fiery and if, like me, you cannot resist those tiny seeds that add a nutty, almost salty, tang, you’re in for a treat. Golden fried battered prawns came next and both size and taste were equally impressive. The crisp golden shell invites you to tuck in and, once you do, the crispy, fresh batter yields to reveal the sweet, firm tender flesh within. A combination that initially melts on the tongue leading to a satisfying bite. So good I took a portion home! Next, we were presented with one of the Valentine’s special dishes – a small, heart-shaped chicken escalope, the thinly sliced chicken so tender and juicy, it’s the perfect food for lovers. The last of the starters was mixed dim sum. This is a dish where I always have to limit myself. I simply adore dumplings, whether they be the traditional Irish ones, the Eastern European ones, or the Chinese version. I just can’t resist that deliciously doughy, supremely comforting texture. So, having a selection all to myself, well, you can imagine my joy. The fillings were chicken, beef, vegetable and, my favourite, the prawn. Knowing the mains were still to come, I took a bite of each, but I could not resist demolishing the prawn one, the mixture of the fluffy outer and tasty inner with a perfect mix of mild herb and spice flavours… the temptation was just too strong. We moved on to the mains and another of my favourites soon made an appearance. Crispy beef with sesame seeds, peppers and chilli sauce is a staple in just about every Chinese restaurant you will ever visit. But what sets China Garden above so many others is the quality of the meat used. Since the beef is cut into thin strips, it has to be of excellent quality to avoid being overwhelmed by the other ingredients. That did not happen here and, honestly, I couldn’t stop nibbling at it long after my dining companions had moved on. What followed was, for me, one of the most surprising and also best dishes of the day. I have only come across Sczechuan lobster in a stir-fry before, so the presentation of the whole lobster was a really impressive sight. However, I am not usually a big fan and would probably have left it alone had not my dining companion insisted I try just a small bit. Oh my, what a good decision. The delicate flesh was so creamy and flavourful with the secret mix of Chef Ding’s spices, that I kept going back for more. Thank you, China Garden, for the education on just how good lobster can actually be. And, last but definitely not least, came Chef Ding’s special duck, fact magazine

served by the man himself at our table. China Garden does offer the standard Cantonese-style sliced duck but the chef has his own special way of cooking and serving the bird and, trust me, you don’t want to miss it. This duck is marinated for several hours with salt, pepper, five spice and some ‘secret’ ingredients; then it’s boiled in water, honey and white vinegar, then it’s washed twice and left to stand for eight hours before it ever sees the oven. The result is meat so tender that the chef simply pulls it apart with his fingers, rather than slicing it. And it truly just melts on the tongue giving your taste buds a little ‘ah’ moment as if to say, ‘this is what we’ve been waiting for’. With all of the above, it should come as no surprise that there was literally no room for dessert but I’ll surely be going back to see the new and improved China Garden fully in action. ✤

I

t’s been quite some time since I’ve visited Neyran, so I was keen to refresh my memory with a weekday lunch with a colleague. The interior is warm and inviting with Moroccan plates adorning the walls and traditional Arabic lamps both hanging from the ceiling and tucked into wall niches giving a cosy feel to the daytime interior where dark wood shutters filter the outside light. Bench seating and chairs are plushly padded and comfortable enough for a quick business lunch to turn into an hours-long affair as you chat over coffee and traditional mint tea. Neyran is the hotel’s international restaurant but at lunchtime it serves a selection of Shami Magrebi (Moroccan-Levantine) dishes. Dinner is à la carte or set menu. And Lebanese Night, where you can enjoy food and music in a lively atmosphere, begins at 9.30pm and runs right through to the small hours. We arrived for our lunchtime feast and were immediately served a selection of cold mezzes, tucking into fattoush, hummus, vine leaves, moutabel and tabbouleh. I loved the freshness of the salads. If I could move in and eat these every day, my waning New Year’s Resolution to get in shape might just stand a chance. The crunchy fried pitta bread topping made the multiple vegetables in the fattoush feel both refreshing and luxurious while the tabbouleh, for once, had just enough lemon dressing rather than drowning in it. I also particularly enjoyed the moutabel, the smoky taste of the eggplant shining through to give a great flavour combination alongside the salads. Next came hot mezzes consisting of kibbe, falafel, spring rolls, fatayer and, my favourite, the Moroccan zaalouk – a spicy and fact magazine

• FOODIE CORNER flavourful dip or sauce made from eggplant, grilled capsicum, garlic, onions and tomatoes with a healthy dose of paprika. I dipped both tasty kibbe and crunchy, fluffy falafel in it and fell a little bit in love. The texture is kind of chunky and the flavour was a triumph bringing both heat and strong taste to the table. Before selecting our mains, we indulged in bowls of Harira soup and when I say indulged, I really do mean it. The soup was, for me, one of the highlights of the lunch. Chickpeas and lentils with spices such as cumin and coriander, and chunky vegetables all served up in a delicious tomato-based broth. So warming and filling. The spices give a feeling of adventure and you get the sense that each version of this traditional Moroccan dish will be different but each will be flavourful and comforting. This could actually be a meal by itself. The mains are displayed safely behind a glass buffet. You make your choice and it is served to your table. We tried both lamb and chicken tagine and both were excellent with the flesh melt-in-the-mouth soft and infused with the herbs, spices and vegetables used in the traditional tagine cooking method. For me though, the highlight was the lamb kofta served, unusually, with tahini sauce with scalloped potatoes and fried onions. The meat was tender, beautifully seasoned with the perfect mix of spices and superbly complemented by the potatoes which were liberally coated in the tahini to give a delightful combination of sweet and sour derived from the tahini and the browned onion topping. Definitely a hit for which I would happily return. A generous display of traditional desserts, such as mouhalabia and the deliciously creamy Um Ali, was on display but we decided to finish our lunch with mint tea for me and Moroccan espresso-style coffee for my dining companion and, in true business-lunch style, we whiled away another hour over chat and refills. It’s the perfect weekday lunch whether you have limited time and want a quick and easy, in and out or if, like us, you have a little time to spare and just want to enjoy the atmosphere over a cup or two of your favourite hot drink. ✤

ho doesn’t love a spa day? Life is busy, particularly with business taking a definite upswing, and sometimes the frenetic pace, though very welcome, can seem a little overwhelming. Muscles ache from long hours spent at the computer, your neck hurts from having your phone clamped to your ear… need I say more? Sometimes, what we all need is a few hours of time out to relax and rejuvenate. So, a trip to Rimal Spa at Mövenpick Hotel Bahrain was just what the doctor (or rather, my boss) ordered. One thing I noticed straight away on arrival was the sense of peace and calm, almost like a balm to the spirit before I ever set foot in a treatment room. The waiting area is all glittering mauve tiles, raindrop crystal lights fall from the ceiling to form a circle of light surrounding plush white leather seating. The floors are gleaming wood, no clattering heels here, and gentle music drifts on the air along with a subtle scent. Perhaps I could just settle here for the afternoon with my warming cup of green tea? But no, I learned that my first treatment was to be the Turkish Hamman and was struck by a small sense of dread. The last time I was in a Hammam, not only was there a power cut leaving me sitting in the dark steam room for, what felt like, ages but I was scrubbed to within an inch of my life leaving patches of my extremely sensitive skin pink and sore. However, my lovely therapist Azell was completely understanding and soon put me at my ease. She showed me to the changing area, where I donned a soft, fluffy robe and slippers, then we walked along a corridor with walls decorated fact magazine

• SPA & WELLNESS in swirling sand patterns, in keeping with the spa name, Rimal, which means sand, passing treatment rooms each bearing the name of something sand or sea related such as Waha (oasis), Horiya (mermaid) and Juman (a type of pearl). On entering the Hammam, the therapist checked that I was comfortable with the hot temperature and asked me to lie on the marble bed. What followed was an hour of gentle pampering the like of which I have never experienced before. To say Azell is a master of her craft would be a definite understatement – she even goes for regular Hammam treatments on her days off – and I was glad of both her expertise and her gentle care. First, I was washed down, using a shower attached to the bed, then it was into the steam room for a few minutes to heat my skin and aid in cleansing. This had the added benefit of leaving my airways feeling opened as I took several hot, deep, relaxing breaths. Back onto the table it was time for the famous Moroccan soap with Argan oil which Azell got to work rubbing in and administering the gentle scrubbing for which Hammam is famous. If Hammam is not something to which you’re accustomed, it can initially feel a little weird being washed and scrubbed by another person, almost like going back to childhood. But, trust me, it’s worth it. Release yourself and you will feel super relaxed. Soon it was time for another rinse down before the application of a deliciously orange-scented, full-body mask of rhassoul clay, a brown clay found only in the Atlas Mountains of Morocco and famed for its cleansing and exfoliant properties. It’s also said to reduce skin dryness and improve clarity and I was more than happy to lie back and let it do its job – so much so that I was snoring gently by the time Azell returned sometime later. Finally, I was rinsed and steamed again finishing up with moisturiser and a hair wash all of which left me feeling as clean as the day I was born and ready for a few minutes chill, to get back to my normal body temperature, with a cup of relaxing chamomile tea. Next came a massage with plain, unscented almond oil – Azell had warned her colleague Kartika, my next therapist, that my skin was too delicate for the traditional, often highly scented, aromatherapy oils we had planned. I was glad since I didn’t want to lose the blissful feeling I had on leaving the Hammam. I’m a bit of a baby when it comes to massage pressure but Kartika was so tuned to my sensitivity that I actually asked for slightly stronger pressure to work on my problem areas of ankles, knees and lower back. With gentle but firm, sweeping strokes she expertly released my knots and I honestly would say this was one of the most comfortable but effective massages I have ever had. My final stop of the day was with facialist Jane, who expertly explained each step of her process of cleansing, toning, gentle scrubbing and more toning before a facial massage with a potion of seaweed, sunflower and coriander seeds. She explained that this was one of the most important steps of the treatment to really nourish my tender and dehydrated skin. The massage was followed with a mask of green tea, chamomile and aloe vera working with the skin’s own properties to produce a soothing and anti-ageing effect (yes please) and the treatment concluded with a liberal application of moisturiser containing sunflower and jojoba oil. My complexion felt amazing afterwards and even looked plumped and less wrinkled. 74

Goodbyes were said over a last cup of tea, this time refreshing ginger, and I learned that all the products used were from Voya, a brand that’s organic and cruelty free. Why Is It Worth Watching?

The show follows the main protagonist Geralt of Rivia (Henry Cavill), a mutant monster hunter, and the people he encounters across his various journeys around this fascinating world, such as the charismatic bard Jaskier (Joey Batey) as well as the sorceress Yennefer (Anya Chalotra). Something interesting about the show is how the audience is informed about the rules of this world. We are not told right away; instead, we must piece things together. This element always makes a series more interesting to watch, as you can't look away from the screen for fear you'll miss something! The second season also smoothly continues the first, furthering certain characters' development and backstories. Henry is able to present the complex nature of Geralt, and it is gratifying to watch his personality develop throughout both seasons. The cinematography in the second season is also just as outstanding as in the first. Each scene is carefully thought out, with the angles and lighting complementing the mood and tone perfectly. An incredible show, if you are a fan of drama fantasies with lots of action, this is an absolute must watch!

Why Is It Worth Watching?

It is always exciting to discover a new horror show, as this genre can become overly repeated and washed out. However, Midnight Mass brings something new to the table. The series has many different protagonists. We begin by following Riley Flynn (Zach Gilford), who has just been released from four years in prison after killing a young girl in a drunk driving accident. As he returns to the small town and reconnects with the people there, such as Erin Greene (Kate Siegel) and others, he grows closer to the new priest Father Paul. Riley discovers certain things about the priest that could unravel the quietness of this community. This was an enjoyable watch and what makes it such a good horror show is that it does not depend on jump scares for cheap thrills. It can frighten you through the complex storyline and supernatural themes, as the story gets progressively more disturbing as you near the end. The eerie silences and zoomed in camera angles create beautiful scenes that fit incredibly well with the sinister tone of the show. The series was mostly filmed in Garry Point Park in British Columbia, Canada. So, we get beautiful scenes of the greenery and sea. Midnight Mass is a perfect binge show for horror fans who enjoy good cinematography.

The Boy Named If By Elvis Costello & The Imposters

Bonobo, otherwise known as downtempo musician/producer Simon Green, has done it again. Fragments is an album so chilled that we’re surprised it even got made. And, it’s no surprise that fans are going wild for it, but it’s not likely to gain him too many new listeners. This latest release has everything from super tuneful collaborations – including From You a surprise pairing with Japanese former online star turned musical phenom Joji, which works superbly – to the slightly more upbeat Sapien which boasts a stunning sax solo that leaves you wanting more. Of From You, one fan on YouTube phrased it much better than we could saying: “Falling from you, the opposite of falling in love with you, yet still filled with the same beauty, pain and feeling. It’s like turning the clock back in slow motion and painfully undoing the heart.” We’re not sure if this is a quote stolen from somewhere else but it perfectly describes this song. Shadows is another collab, this time with Jordan Rakei whose achingly clear voice brings the chill to a piece that harks back to the early days of electronica complete with rhythmic synths and not quite random buzzes. Bonobo has been in the music game a long time and you can tell that from his progression, or possibly lack of it. Fragments will be loved by those who are already fans, but we fear new listeners will find it just a little too relaxed to go back for a second listen.

It’s hard to believe that this is the 32nd studio album or, in fact, that Elvis Costello has been making music for more than 50 years – showing our age here but Alison and Oliver’ Army really don’t seem that long ago! However, even as he heads for a really big birthday, he and his inimitable band (pretty much The Attractions bar one) sound every bit as fresh and musically tight, if a little more mellow, as they did back in 1979. For your listening pleasure, the show opens with Farewell OK, a decidedly unmellow, stonking rendition that will have those of you old enough to remember Elvis Costello of yore, tapping your feet and, perhaps, reliving your, possibly, misspent youth. Of the title track, Elvis himself explained that The Boy Named If is the imaginary childhood friend who took the blame for your own misdeeds. Others have lauded this, but Personally, we found it a bit of a weird listen. Paint The Red Rose Blue. Oh, we loved this. A beautiful ballad and story switching from ‘what am I to do?’ to ‘what are we to do?’ We don’t know the answer but would gladly listen to this song many more times to try and find it. Another of our absolute favourites is Mr Crescent. This is wonderful; the words, the tune, the backing – this track has everything. And it’s a tale as old as time. Whether you’re a new acquaintance or a veteran fan, this album is a great place to get to know Mr Costello.

You have extensive experience in the F&B sector. What particularly draws you to this area of the hospitality field? I personally love to share food with family and friends, I come from a family that cherishes food on the table and that’s what drove me to start my career as a chef. I’d also like to mention that food and beverage is a highly competitive, fast-paced industry that requires grit, determination and hard work. It is also unique from other departments; you must be driven by creativity and passion. Every day is different and that's what keeps me going. What are your plans for Crowne Plaza, are there any upcoming developments that you can share with us? Development never stops in the F&B field. My aim for Crowne Plaza is to become a culinary destination in the country while 98

offering added value to our guests and service beyond expectations. I am very excited for what's coming, especially for Waves Restaurant since it has been closed for quite some time now. I am definitely keeping the identity of the place, which is a seafood dining venue, but I will be adding an Asian fusion aspect to make it more appealing to guests. As for Spices Restaurant, that will open its doors very soon. There, I would like for our guests to indulge in a true Indian ambience from the first second they step inside starting from the decoration to the taste. Also, the Holy Month of Ramadan will soon be upon us. It is a key period in Bahrain and a time when we see a distinct shift in what our fasting guests are looking for from a dining experience. For this reason, we have launched a Special Ramadan menu for all our outlets to reflect a more traditional

approach to breaking the fast and allow our guests to have a sense of discovery and tradition. Exciting programmes are coming up for the month and we can’t wait to welcome guests for Ghabga and Iftar. Your bio describes you as an adventurous cultural history buff. How are you finding Bahrain in terms of exploring the Kingdom’s rich past? I Love Bahrain. The place is so rich in culture and history and is definitely worth a visit. With the high-rise towers, captivating mosques and historical sites. Exploring it is certainly fun. Bahrainis are warm, friendly and loving people with a deep national pride and keenness to help. I haven’t had much time to visit the old souq and Muharraq, as it's the oldest town in the Kingdom, but I can't wait to experience Bahrain as a local.
