A lasting memory - the photograph

B

rides Essence interviewed wedding photographer Gerhard de Bruin of SilverZone Images in KZN. Gerhard please tell us about yourself. A: I am in my late 40’s, married with two lovely daughters. We live on the lovely dolphin coast of KwaZulu-Natal, a stones, throw from Ballito; almost on the beach. I come from a media background and worked at one of SA’s leading newspapers for 20 years as a inhouse photographer and a senior journalist. I then went out on my own as a professional freelance photographer. I love cooking, braaing, beer, rugby, women… I guess I am just your typical South African male. Oh yes and I forgot to mention I also love photography. Where did you grow up? A: I grew up in the Karoo in a small town called Cradock, in the Eastern Cape. Where are you based and what geographical area do you cover? A: I am based in Westbrook, KwaZuluNatal about 6km from Ballito where I do a lot of my business.

6

Brides Essence.com - Issue 11

What made you choose photography as a profession? A: I have been interested in photography ever since I was a teenager and Gerhard de Bruin took my first photographs with an old Yashica camera that belonged to my dad. Did you study photography? A: Yes I studied it at School of Art at Port Elizabeth Technicon. How long have you been a wedding photographer? A: Over the last 30 years or so I have photographed a few weddings, however since I started Silverzone Images I have photographed alot more weddings. How many weddings do you photograph per year? A: It all depends on the year. On average around 22 per year. Remember I am not just a wedding photographer, I photograph a lot of other stuff too, so I have to make space for that as well in my timeframe.

What sets you apart from other photographers? A: I do not like to compare myself to other photographers. I guess we all have our own style. I am a perfectionist, and will go the extra mile to get the perfect pictures for my clients. What do you offer in your bridal packages? A: I try and target the middle to budget weddings. My prices vary from just over R3000 to about R12 000 for the most expensive. It must be a win win situation for both the bridal couple as well as the photographer. I believe there are a lot of photographers out there who just charge exorbitant prices. Do you take pre-wedding photographs? A:Yes I do if asked, or if it is included in the particular wedding package.

Do you have any advice for Brides on how to choose the right photographer? A: Beware of those ultra cheap photographers. Those sort of wedding packages where you get 4 photo albums, three canvass prints, even a free chocolate, a zillion prints etc for “only R2999! or even lower”. It might be a good thing to ask the guy if he does photography as a living, or just on the side. Also find out how long he has been a “professional”. Not everyone is a crook but do be wary. Are you able to match a bride’s budget? A:I try my best to. Each wedding package is worked out very carefully to give clients the most value for their money. Do you have a favorite pose for Brides? A: Not really. Each brides is different, you Photographs © Gerhard de Bruin of SilverZone Images

can sort of “read” them beforehand and only then decide how you’d like them to pose and what will work best. What is your preferred equipment brand? A:I use Canon, but I also have no problem with Nikon. To me those two are the leading brands in the world when it comes to DSLR’s. What is your favorite photography accessory, other than your camera? A: My tripod. If you had to choose one lens which one would it be and why? A: I guess the Canon 24 – 70 mm F2.8 is a pretty good choice for wedding photography, as well as for a lot of other stuff. You can shoot in decent low light, have a medium wide angle to medium zoom capability, and the images that those lenses deliver are crisp and sharp. I guess, arguably, among the best lenses ever made. How important is Photoshop in your final images? A: I see it as important tool, however only to do slight tweaks with color and contrast, to accentuate the sky and clouds, and to take away the odd pimple etc. Do you use a Mac or PC? Which do you prefer? A:I use a PC. I just find it to be cheaper and it does the job I want it to.

Wedding Picnics

- a walk in the park

F

or many, the word ‘wedding’ connotes love, romance, tradition, ceremony and good food. The custom is to have a ceremony in a church or chapel, move to a reception hall, have dinner, say a few speeches and attend to all of the necessary formalities. However, weddings have begun to evolve as people experiment with new and interesting ways in which to entertain their guests while declaring their undying love for one another. The latest trend, for example, suits a bride who wants her wedding to be laid back and relaxed, moving away from the traditional grandeur and encompassing something more simple yet beautiful. It can also, however, be turned into the grand gesture that some ‘princesses’ dream of from the moment they are old enough to utter the words ‘I do’. This trend is to have a wedding picnic; no formal sit down dinner, but with as much (or as little) glitz and glamour as the bride requires. Whilst the originality and beauty of a picnic wedding are certainly key draw cards to the idea, it also simplifies

18

the wedding planning process, as all hiring, food and décor is handled by one supplier, and it allows endless possibilities in terms of flexibility and creativity. “Dial-a-Picnic’s first priority is to ensure that the bride is happy and that everything is made according to her requirements”, says founder Paula Janse van Rensburg. “Our wedding picnics add to the overall wedding experience; everything we use has its own story. We will tailor make your wedding picnic to meet your every need, ”confirms Janse van Ransburg, who also believes in a very hands on approach. The possibilities are unending; brides can let their imaginations run wild. The Dial-a-Picnic team will build bespoke, handcrafted picnic weddings from scratch. As specialists in outdoor

dining, every bride’s taste and theme requirements are catered for. Every woman deserves to be made to feel like a queen on her wedding day. What is more luxurious than being pampered in a beautiful setting, surrounded by nature and elegant decorations, basking in the cool summer breeze or the warm winter sun and enjoying the outdoors, the company, and, most importantly, Mr Right?

Purity from nature’s best

N

ew Zealand is a sanctuary for nature with more than a third of the land area designated as protected wilderness, so it is very easy to find one’s self in a landscape that is pure and unchanged. Soaring mountains reach for the sky; clear, clean rivers rush for the sea; Pacific Ocean waves wash onto sun-scented beaches; in vast rainforests delicate, feathery fern plants grow in peace, unfurling their promise leaf by leaf. Mud Pack’s range is unique and unparalleled due to the key ingredients in each and every product. Discover the science behind the products and you will understand what sets them apart and why there aren’t any “generics” that are as effective.

Manuka Honey

Active AAH 650+ New Zealand manuka honey Manuka is a flowering tea tree native to New Zealand. The honey that is collected from these flowers has long been renowned for its remarkable beneficial properties. Manuka honey contains special antibacterial properties including an enzyme that produces hydrogen peroxide, which is a proven antiseptic. Manuka honey has higher levels of this enzyme thereby containing a greater level of antiseptic and antibacterial properties. It is extremely rich in proteins, vitamins and minerals and has the outstanding ability to nourish, soothe and heal sensitive skin. Manuka honey also contains

28

Brides Essence.com - Issue 11

active antioxidants that neutralise free radicals which are responsible for skin cell damage. Manuka honey assists in the growth of new cell and tissue regeneration. Wild Ferns Manuka Honey skincare products all contain Active AAH 650+ (Active Antibacterial Antioxidant Honey 650+), a uniquely tested manuka honey. The honey is trademarked and strictly controlled to ensure only the best manuka products contain it. It was developed following extensive research by Dr Geoffrey Savage, Associate Professor of Food Biochemistry at Lincoln University in Canterbury, New Zealand. Dr Savage is one of New Zealand’s leading authorities on the health benefits of honey and antioxidants. He and his team found that active AAH 650+ manuka honey contained extremely high, naturally occurring levels of antibacterial activity and antioxidants — far more than any other honey varietals.

Planning your

wedding budget by Sigrid Madonko

P

lanning a wedding is an exciting season. It is a special time for engaged couples to plan the day their two lives are knitted into one and their dreams are brought together. A big part of this perfect day is finances. If not planned correctly, finances can cause your dream day to turn into a nightmare! It can even leave a newly married couple with much unwanted and unplanned debt; debt that can take many years to pay off. The best place to start your wedding planning is with the creation of a budget. There are several ways to pay for a wedding. Traditionally the bride’s parents paid for the majority of the wedding and the parents of the groom paid for the

30

Brides Essence.com - Issue 11

drinks, a few other smaller items and the honeymoon. However, this is no longer always the case and weddings can be paid for by both sides of the family, or either set of parents. Many couples opt to pay for the wedding themselves. Before planning anything it is best to speak to both sets of parents and discuss finances. Also talk to one another and clearly set out the budget. Once the budget is set, decide on the city and country you wish to get married in. Also discuss the theme and style of your dream wedding. Write an extensive list of possible expenses and start contacting venues, restaurants, dressmakers and florists to get an idea of costs. If the costs exceed your budget, it is good to go

back to the drawing board and redesign the wedding with different expectations. Do this before wedding invitations are sent out. All your expenses, planned and unplanned should fit into your budget. A list of possible expenses include: stationery, venue hire, catering, a wedding planner, flowers, a wedding dress, bridesmaids’ dresses, flower girls’ dresses, groomsmen’s suits as well as a suit for the groom. Other expenses not to forget are the cost of flowers, rings, hiring of the church and party favours. Make sure all the expenses fit into your budget, leaving some funds for unplanned expenses. Once you have decided upon the location, style and theme of your wedding, book the venue, caterers and send out the invitations. Whilst organising your wedding, constantly check and recheck your budget to make sure all the expenses are still within your budget. Your dream wedding can fit into your budget, even if it means adjusting your expectations to fit into the budget. Whilst planning for your big day, remember to dream big as all dreams can come true with a little help from your imagination. It is a special time, so make the most of it but don’t let run away expenses ruin your day. Have fun planning!

The Secret Ingredient

To many people, the secret Ingredient might be a dash of this or a pinch of that. Not for me, my secret ingredient is love; pure, simple love. No two cakes will ever be the same nor do I want them to be. Each cake that I create is a reflection of myself and the passion that I have for creating an everlasting memory on someone’s special day, be it a birthday or a wedding day. My secret lies in the ability to cater to each of my client’s individual needs, while only using the best ingredients. I am not limited by shapes, sizes, designs or character, I rather welcome the creative challenge. I am determined to create the sweet delights of your dreams, make your taste buds dance and your happiest memories last. I offer a free cake consult to all my brides. They can come and sit, drink tea and eat cake in a relaxed environment where they can make their dream cake come true. I will happily custom design a cake or work from an image of a specific design you have fallen in love with. View some of our cakes over the next few pages: 32

The Big Banquet in a Little Jar

™ Photographs supplied by Pesto Princess

Kathleen Quillinan

About 14 years ago, Kathleen Quillinan – an opera singer at the time – began selling fresh sauces made in her home kitchen, as a creative way to fund her singing career. Pesto was quite new to South African palates back then, and people were thrilled to discover the fresh flavour, revealing to Kathleen that it was possible to create a business with pesto as the signature product. And so it came to be that she laid her singing career to rest and began a new adventure, with plenty of its own theatricality! With the support of loyal fans over the last 14 years, Pesto Princess has

weathered the challenging journey from market to supermarket, and today continues to nourish, comfort and delight people through food. Where did the quirky name come from? At a market in the early days, someone asked Kathleen what her company’s name was. The truth of the matter was, it did not even have a name. Being a performer, Kathleen was used to improvising, and offered the first name that came into her head: Pesto Princess. Jan/Feb 2014 Brides Essence Magazine

Introducing African Extracts

T

he African Extracts Rooibos range of Skin and Body Care products is a South African success story, with many of its products among the top sellers in their categories. Now African Extracts launches Herbal Extract Shampoo and Conditioner. With so many choices on the market, the question is why? The answer is simple – because people who have tried them rave about them. For several years the products have been included in our trial-size and travel body-care packs. Growing demand for them has prompted the launch of fullsize products. African Extracts Herbal Shampoo has our patented Rooibos extract and is enriched with Tea Tree Oil and Wheat Germ Oil. Rooibos is well known for its anti-oxidant properties, while Tea Tree Oil has antifungal and anti-bacterial properties for healthy hair and scalp. Wheat Germ Oil is an excellent emollient, relieving dryness and adding softness to the hair. It gently cleanses without stripping the hair of natural oils and is ideal for every-day use. African Extracts Herbal Conditioner contains natural herbal extracts like Rooibos, which acts as a powerful antioxidant to protect the hair against environmental stress and pollutants. Seaweed extracts provide a wide variety of vitamins, minerals and amino acids to strengthen hair and improve strength and elasticity. Grape Seed Oil is included for its ability to absorb quickly and moisturise without adding weight to the hair.

The Reviews: Vash What a lovley shampoo and conditioner, I have really enjoyed using it. The conditioner really makes my hair so soft and easy to brush. My daughter has a very sensitve head and after using the African Extracts conditioner she doesn’t cry because of the knots in her hair. It has a wonderful rooibos fragrance, you feel fresh after using this product. Shamila ‘Good day. I bought a gift pack that contained a shampoo from your range. Where can I buy this product? It is truly amazing!’ Graeme ‘I was given a sample bottle of African Extracts Rooibos shampoo, and it was the best shampoo I have ever used. I have curly, frizz-nightmare hair. Other shampoos strip my hair of natural oil. The little bottle is finished, and I cannot find the shampoo anywhere (not for love or money). Please help’. Hilda ‘Don’t you have the shampoo in bigger bottles than the ones that are in the travelling size packs? My daughter has cradle cap and I would like to get bigger sizes as it is working for her.’

Wedding Centrepiece Inspiration by Lorraine Hirst

T

able centrepieces are an important consideration when planning your wedding flowers. They add beauty, drama or whimsy (depending on your theme) to a wedding table and are a critical part of the wedding décor. When designing the centrepieces for your wedding, it’s important to keep the tone and style of your wedding in mind – as well as the time of year in order to tie everything together seamlessly. Obviously an elegant occasion calls for an elegant centrepiece design, while a casual wedding calls for something less formal and structured. Always try to choose flowers that are in season and “local”, as this will ensure that when you order, your flowers are readily available. Also choose flowers that complement your other décor. Brief your florist well and they will help you select the perfect seasonal flowers for statement centerpieces. There is no harm in searching the internet for ideas and inspiration but try not to throw the net too wide – there is nothing more frustrating than finding a lovely centerpiece and realising that the flowers you love are not available or are prohibitively expensive to import. is a vast collection of wedding centerpiece ideas over the internet and most websites provide them for free. Have a look – keeping in mind that local is lekker. When briefing your floral designer make use of lots of different images that give a feel for the colours, look, feel & tone you hope to achieve. Have a look at Pinterest for fabulous wedding ideas - making your own mood board can be a lot of fun. Consider your venue as well. Are you having a garden wedding? Will you hold your wedding in a restaurant or hotel? Just be sure that your centerpieces will match your venue. Usually wedding table centrepiece designs are determined by the shape of the wedding tables. For example, if the wedding tables are round, a single floral centrepiece placed in the middle of each table will look beautiful; however if the

tables are rectangular a few smaller table centrepieces or centrepieces of varying sizes would look more aesthetically appealing. The size of the wedding centrepiece is also very important. The centrepiece shouldn’t be so small that it has no impact whatsoever, or too large that it doesn’t allow enough room on the table for other items such as place cards, cutlery and dinnerware. You certainly don’t want a table that feels cramped and over-crowded. The height of the centrepiece also needs to be considered carefully. If the centrepiece is a full floral arrangement, ensure that it is short enough for wedding guests to see each other over the arrangement –and be included in the conversation around the table. However, if your heart is set on a tall floral arrangement, it’s best to consider a single tall flower, with perhaps a few thin long branches or 52

Don’t forget to tell Lols that Brides Essence Magazine sent you! leaves so your wedding guests can clearly see each other across the table. Alternatively; tall, thin candles are also an excellent choice and can look very romantic. Obviously your budget will largely determine the wedding centrepiece you choose and centre-pieces can be affordable or very extravagant. It’s up to you to decide how much to spend. There are many options available when choosing a centrepiece, and they do play a major part in the overall wedding décor. Give them the time, thought and attention they deserve and you can create a spectacular statement at your reception. Working in the online travel industry, George was born in Zimbabwe and later raised in the suburb of Woodstock in Cape Town, South Africa. Jade is a born-and-bred Capetonian of Malay, Dutch, Indian and Filipino origin, who works for an international NGO named M.S.F (Doctors without Borders). How we met… Jade: We were both working at an Australian-based customer service centre for an internet company situated in Cape Town. We gazed at each other as I was taken across the call centre floor during my introduction, with an instant connection – it felt like we knew each other from somewhere. It wasn’t until four weeks later that either of us found the courage to strike up a conversation. We bumped into each other in the canteen hallway and both said at the same time, “Don’t I know you from somewhere?!” This was followed by ages spent suggesting possible places we may have met, to no avail. To this day, how we may have known each other remains a mystery. I like to believe it was just destiny. How he proposed… Jade: It’s very difficult to surprise me because I am a very curious individual and nothing really goes unnoticed - I swear I should have been a detective! George wrote me a note and drew a ring on it and left the note in a place where I could find it. I found the note and was totally blown away! It was the sweetest thing. Our wedding… The wedding was small, intimate and lots of fun. Putting everything together was the most exciting experience. As we had a limited budget and a short time to plan, we soon learnt that creative thinking is essential. Some of the main highlights included the following: Jade: George blew my mind with the wedding car because he kept it a secret. When my dad arrived to collect me for the ceremony, I was just blown away! It was not at all what I was expecting but it was everything I wanted. George: The Sushi was absolutely amazing - it was made fresh and really had a lot of people interested. We did the twist as our wedding dance, and our wedding cake was beautiful - it even featured our best friend Renji the Chow Chow. Our honeymoon… George: I work for a travel and accommodation company, who were able to help me find an amazing yet affordable Camps Bay villa within short notice. We had a short honeymoon at the Clifton Beach Bungalow, with a longer late honeymoon planned in Zimbabwe. I am so excited because I haven’t been to Zimbabwe since I was five years old and I am sure Jade will love it. I want to take her on an amazing, romantic safari experience and kiss her at Victoria Falls. LCHF - NOT A DIET

but a life style

by Grant Derrick

Grant Derrick, Editor of Brides Essence caught up with Professor Tim Noakes to find out more about the LCHF diet that is currently the buzz. We also review his latest book The Real Meal Revolution. Here is the interview. It is believed that the Scots consumed oats. What were the effects on their health? Prof. Noakes: Historically the Scots included a great deal of oatmeal in their diets. It was the major carbohydrate in their diet. Apart from this they ate protein and fat. The Swiss only ate rye which they grew and milled themselves. The famous Canadian dentist Dr Weston Price in 1930’s noticed that the children he was treating in Toronto had malformed mouths and dental caries and so he realised that a novel dental problem was developing and he wondered if it was related to changes in their nutrition. For 10 years he travelled around the world and visited 14 countries to determine what was the health of those populations that continued to eat their traditional foods and avoided the modern industrial diet, which already then was becoming full of sugar and refined flour. In Switzerland he found a group of people that had been isolated for 1000s of years. All they ate was meat, milk and cheese from their cattle which grazed on the most nutritious alpine spring grasses. This group of people was the healthiest that he had encountered in his 10 years of searching. They had none of the chronic diseases that are our modern scourge and no dental caries. Obviously once access was gained to this group, foreign foods were introduced and so their health began to deteriorate. 66

“It all depends on the individual’s tolerance to carbohydrates” Historically the Jews have been the healthiest of peoples. They lived according to the over 600 Levitical rules or laws. About 300 of the laws are about personal health. They recognise that infections came from external factors and thus were scrupulous in their cleanliness. Whenever plague struck a city, the Jewish communities in those cities always had the lowest death rates because they best understood the principles of hygiene. Today Jews living in Israel are not healthy. They have very high rates of heart disease, almost certainly because they eat the modern industrial diet with an extraordinarily high intake of harmful partially hydrogenated vegetable oils. This is a modern “food” against which the Levitical Laws are powerless. Out of all the different grains available, is there something that is better than wheat and high carbohydrate? Prof. Noakes: It all depends on an individual’s tolerance to carbohydrates, also known as their level of insulin resistance. For someone who is profoundly insulin resistant, then 2530 grams per day is the limit of the amount

of carbohydrate they should ingest each day. Included in this list is anyone who is morbidly obese or who has diabetes. For people who don’t have a weight issue, then in my opinion to maximize their health and to minimize the risk that they will develop diabetes in the long-term, they should simply limit their daily carbohydrate intake to about 200g a day. Grains can also cause other health problems because of the antinutrients they contain. They also contain proteins that can induce allergic reaction in many. A typical example is irritable bowel syndrome and hay fever. I suffered with IBS for 61 years and it is now completely gone as is my hay fever. And both went within weeks of my cutting out all cereals and grains in my diet. Eating grains can be acceptable for some but one has to be very cautious. Again it is down to each individual and if you have any allergic symptoms, it normally points to the grain. How does LCHF affect the balance of the interflora in the intestines? Prof. Noakes : This is still a novel science. All we know is that the people who are Jan/Feb 2014 Brides Essence Magazine

the healthiest have the greatest variation in intestinal bacteria. A lower variation seems to be related to certain diseases. In mice, obesity can be induced by changing the gut flora and obese rats can become lean by simply changing the intestinal flora. So if you eat mainly carbohydrates, your variation in intestinal flora is reduced, which may be an important mechanism whereby carbohydrates lead to disease. White flour is probably the worst offender in terms of its effects on gut flora. What affect do pulses and legumes have on the gut? Prof. Noakes : I haven’t really studied them enough but what I do understand is that all plants contain a certain amount of anti-nutrients including lectins as an inherent defence mechanism. An example of how this works : an animal can run away from you as a defence mechanism, but when you catch it, it is easy to digest. Cereals and grains on the other hand can’t run, but they still have to defend themselves, and their only defence is making themselves less attractive to being eaten by containing these toxic elements. Legumes

What if today is my birthday and splurge at an “all you can eat buffet”? What effects will this have on my LCHF metabolism?

addictive and can control the occasional sugar/carb binge without slipping back into the addiction, then it is not really a big issue.

Prof. Noakes : If you are a fat-adapted athlete and you have a high-carb day, then the following day your metabolism will be noticeably different and will take about 3 days to return to normal. So it is not really relevant but it will definitely have a short term effect. But if you have diabetes, then your carbohydrate balance is very fragile and the recovery period will be much longer. If you are healthy, the effects are not as serious compared to someone who is unhealthy. There is also the addiction component which is key. A relapse can really start with just one teaspoon of sugar. So if you are not

What sort of research is going into LCHF, bearing in mind that it goes against the grain of the traditional sciences?

68

Brides Essence.com - Issue 11

Prof. Noakes : Last week I was in Washington DC with four of the world’s leading researchers in this field. We gave a talk to a diabetes conference organized by the Joslin Hospital, one of the most famous diabetes organizations in the world. Jeff Volek and Steve Phinney are the two researchers who were funded in 2000 by Robert Atkins (founder of the Atkin’s diet). In 1962 Robert Atkins began his work. He treated over 60 000 patients but never funded any research.

If Robert Atkins had started to fund this research in the 1970’s we would not be having this debate; the world would know that this is the diet that works in diabetes and obesity. Jeff Volek deserves the Nobel prize because he has shown that a high fat diet improves all the risk factors for heart disease – every single one of them, whereas in those who are insulin resistant – which is all people with Type II diabetes and probably a majority of the obese - a high carbohydrate diet does the opposite. The key finding in all this work is that carbohydrates – not fat - causes the most dangerous form of abnormal blood lipid patterns- high blood triglyceride and small dense LDL-cholesterol particles and low HDL-cholesterol concentrations – combined with high blood glucose and insulin concentrations. It is these changes that drive heart disease and they are reversed by a high fat, low carbohydrate diet. What we now know is that fat, especially saturated fat

in the diet, acts quite differently in the body when it is ingested together with either a low- or a high-carbohydrate intake. When fat is ingested without a low carbohydrate intake it is entirely safe. But when fat and a high carbohydrate intake are combined, the outcome is very unhealthy. Gary Taubes organized the session at which we spoke. He wrote the book “Good Calories Bad Calories”, which is probably what got me involved. His book describes where the whole nutrition story went wrong and how the food industry influenced it and so on. The next great book on this topic has just been released. It is Denise Minger’s “Death by Food Pyramid”. Anyone interested in their health has to read both books as should all medical practitioners and dieticians. Prof Noakes : I have published a paper in November’s South African Medical Journal. It is simply an account of information sent

to me over the years by more than 120 people. The average reported weight loss on the LCHF diet was 15kg – these are the most astounding results, better than any other clinical trial in the world. One of the subjects lost 83kg, another lost 70kg. The report includes a medical doctor who cured himself of diabetes, hypertension, hypercholesterolemia, sleep apnoea and atrial fibrillation when he went on the LCHF diet. At the age of 57 he realised he would not make it to 65. So he told his wife that she should be prepared for that eventuality. Today he is disease free, on no medication and after checking all his blood records I expect him to live to 100. Another subject is Simon Gear, who cut 3 hours off his previous Two Oceans 56km ultra- marathon time of 7 hours to below 4 hours in less than a year. So there has been a great deal of research done on the LCHF, but no one knows about it because it is simply not 70

taught to our doctors and dieticians. For the life of me, I cannot understand why not. I believe you have a new book coming out. Tell me more about it ? Prof. Noakes : It is called “The Real Meal Revolution” by Quivertree Publications. It is a great book that has been put together and edited by myself and two adventure chefs, Jonno Proudfoot and David Grier, with expert nutritional input from Sally-Ann Creed. There are over 100 delicious recipes in this book. There is a comprehensive section introducing the LCHF diet and the story behind it with some great guidelines on how to implement the diet. Bertie is more than familiar with the country house set-up: he is a veteran of the cocktail hour and, thanks to Jeeves, his gentleman’s personal gentleman, is never less than immaculately dressed. On this occasion, however, it is Jeeves who is to be seen in the drawing room while Bertie finds himself below stairs - and he doesn’t care for it at all. Love, as so often, is at the root of the confusion. Bertie, you see, has met Georgiana on the Côte d’Azur. And though she is clever and he has a reputation for foolish engagements, it looks as though this could be the real thing. However, Georgiana is the ward of Sir Henry Hackwood and, in order to maintain his beloved Melbury Hall, the impoverished Sir Henry has struck a deal that would see Georgiana becoming Mrs Rupert Venables. Meanwhile, Peregrine ‘Woody’ Beeching, one of Bertie’s oldest chums, is desperate to regain the trust of his fiancée Amelia, Sir Henry’s tennismad daughter. But why would this necessitate Bertie having to pass himself off as a servant when he has never so much as made a cup of tea? Could it be that the everloyal, Spinoza-loving Jeeves has an ulterior motive? Evoking the sunlit days of a time gone by, Jeeves and the Wedding Bells is a delightfully witty story of mistaken identity, a midsummer village festival, a cricket match and love triumphant.

Veld to Fork

Gordon Wright

If you’re one of the (many) people whose heart skips a beat when gazing at iconic pictures of the Karoo, or you find yourself longing for the lifestyle of a bygone, gentler time and place, Veld to Fork is sure to find the road straight to your soul. Showcasing the food of a timeless and achingly beautiful landscape, this cookbook is so much more than a mere book of recipes. Each photograph tells a story, whether it is of the delicious dish in question, the spectacular scenics, quaint towns or gritty but welcoming locals. Graaff-Reinet-based chef and guesthouse owner Gordon Wright combines tradition, culinary flair and the freshest of local ingredients to present 82 mouthwatering dishes for every occasion. Naturally an array of meat dishes take pride of place but they are equally matched by soups, side dishes and desserts that will leave you day-dreaming for more, days after you’ve enjoyed them. Not forgetting the preserves and baked goods for which the region is equally famed.

The Real meal revolution

by Grant Derrick

PROFESSOR TIM NOAKES, DAVID GRIER, SALLY-ANN CREED, JONNO PROUDFOOT Oxford describes revolution as “a dramatic and wide-reaching change in conditions, attitudes, or operation”. There is no better word to describe this fantastic book which challenges the conventional way of thinking when it comes to what we eat. It requires a new thinking cap that opens our eyes to see beyond the traditional trains of thought regarding what foods are “actually” good and which ones are clandestinely bad. The book is not all about science, however there is an indepth section explaining the theory behind the revolt. This is not one man’s ideals, but rather a cumulative knowledge gathered over many decades by many prominent scientists, nutritionists and medical doctors. Now, to the good part. This book is filled with fantastic and life changing foods that are easy to prepare using available ingredients. You will be surprised at just how amazing these meals are when you try them. The thought of cauliflower instead of potatoes for mash may sound a little sceptical, until you try it. I wonder if you would notice the difference. Such is the nature of these recipes. This is not some boring, “You can’t eat that” diet like all those fads that have gone before, this is really sustainable and enjoyable living.

The recipes have been put together by the team :

Professor Tim Noakes - is a leading South African Exercise and Sports Scientist at the University of Cape Town, and world renowned leader in the research and discovery of how modern foods and low-fat diets have not worked out as promised. Professor Noakes has now focussed his dedication to exposing the myths surrounding our current dietary crisis. Sally-Ann Creed – a qualified Nutritional Therapist who suffered most of her life with asthma, sinusitis, panic disorder amongst others and who overcame these challenges by altering her diet and lifestyle. Having discovered the benefits of correct eating and supplement intake, she strives to help others by opening their eyes to the benefits of a revolutionary way of thinking. Sally-Ann is the author of the best selling book “Let Food Be Your Medicine - an easy to understand guide to healthy living” David Grier – has spent most of his career in the hospitality and restaurant industry. He has owned a string of successful dining restaurants in South Africa. He has taken on many athletic challenges in order to raise funds for his charity foundation “Miles for Smiles Foundation” that raises funds to aid children born with cleft lips. To date his foundation has gifted over 1000 smiles to kids born with cleft lips. He has run the wall of China, the entire South African coastline, the island of Madagascar from South to North, and also run the entire length of India, amongst other amazing feats. All this was done whilst on a low-carb / high-fat eating plan. 72

FOR THE CHICKEN: 500g boneless, skinless chicken thighs •1 cup extra-thick yoghurt 1 tbsp fresh ginger, grated • 3 cloves garlic, minced • salt and black pepper 1. Mix the yoghurt, ginger and garlic and season to taste. 2. Add chicken and marinate for at least 30 minutes. FOR THE SAUCE: 3 tbsp butter • 2 tsp olive oil • 2 cloves garlic, minced 1½ tbsp ginger, peeled and minced • 1 red chilli, minced (seeds removed if you don’t want it spicy) 2 tbsp tomato paste • 2 tsp paprika • 1 tsp garam masala 7 roma tomatoes, diced (or 1 tin chopped peeled tomatoes) 1½ tsp salt • 2 cups water • ½ cup cream 1 handful fresh coriander, roughly chopped 1. Place a large pan on medium heat, then add the butter and olive oil. When the butter has melted, add the garlic, ginger and chilli and sauté until lightly browned. 2. Add the tomato paste and cook until the tomato has darkened in colour, about three minutes. 3. Add the paprika and garam masala and sauté for another minute. 4. Add the tomatoes, salt and water. Bring the sauce to a boil, then turn down the heat to a simmer and cover. 5. Cook for 20 minutes, take the pan off the heat and allow the sauce to cool for five minutes. 6. Meanwhile, preheat your grill and cover a roasting tray with foil. 7. Remove the chicken thigh chunks from the marinade and place on the tray. Place under the grill and cook for about five minutes on each side, until lightly charred and cooked through. Don’t worry if the chicken is still a little uncooked but charred on the outside – it will cook in the sauce. 8. Use a blender or food processor to blend the sauce until smooth. Pour back into the pan. Bring the sauce back up to a boil and add the chicken. 9. Reduce heat to a simmer and cook, covered, for about 10 minutes. 10. Add the cream and fresh coriander, stir through and serve.

12 Apostles

Luxury stay by Grant Derrick

This pearl situated at the foot of the 12 apostles mountain peaks just South of the renowned Camps Bay and only a 15 minute drive from Cape Town CBD. Friendly and helpful staff are only too eager to assist in any way possible. Beautiful works of art grace the walls and nothing is ordinary or common with every feature of this fine establishment being hand picked for its artistic prowess. Ushered into one of the 70 suites, we were delighted to find a bottle of the finest wine on ice and a delectable fruit and nut platter awaiting us. After settling in from the workday and having freshened up we proceeded to the Azure restaurant where Jabu, our friendly waitress ushered us to our table of choice. We opted for a 5 course gourmet feast; which allowed us 92

to savour more of the delicacies than if we simply opted for the a-la-carte choices. The meal began with delight and just got better as more and more delicious meals were brought. Jabu went out of her way to provide us with everything we asked and more. What a pleasant time we had. Of course we over ate as everyone tends to do with such fine and excellent food. We enjoyed every mouthful as we watched the sun set over Camps Bay from our table. Upon returning to our room we were so surprised to find our room transformed – petals everywhere and candles set a romantic air. This is not to be missed. Breakfast was stunning at the Azure Restaurant which was everything and more than we expected. We ate our fill

of the finest continental buffet et al and after breakfast, Vash was whisked off to her spa treatment at the 12 Apostles Hotel Spa. The spa is world class. Vash enjoyed a B|Harmonised Treatment. This unique massage incorporates meditation breathing, targeting the main areas of the body which hold stress and works to realease and relax not only the body but also the mind. Vash came away feeling extremely refreshed and relaxed. I took the opportunity to wander through the stunning gardens and took a hike up the mountain. I was awe struck at the beauty of this part of the Cape. The pathway meandered up the hill through 8 very private and secluded picnic spots. Fynbos surrounds and all that nature could offer was around me. The aromas, the

wildlife, the birdlife and the most awesome views of Camps Bay and beyond. After my hike I was a little peaked so I took the opportunity of soaking in the floatation pool at the spa. After 15 minutes or so I felt right as rain and totally rejuvenated. Thank you 12 Apostles for a most memorable and thoroughly enjoyable stay. We recommend the 12 Apostles Hotel and Spa to all couples as the perfect getaway, the perfect place to stage your wedding and a relaxing way to enjoy your honeymoon. Somewhere

to do nothing by Dave Cooper

A

prominent quote on the walls of MadiMadi goes something along the following lines “Madi-Madi…where you finally have enough time to do all the nothing you want!”. This short sentence captures the essence of this tranquil haven some 60km outside of Oudtshoorn. Madi-Madi Safari Lodge is the new, lesser known sister lodge, to the existing Botlierskop Reserve just outside of Mossel Bay. It positions itself as a destination for luxury and tranquillity and overall lives up to this well.

94

Brides Essence.com - Issue 11 Re-launch Issue

My wife and I had decided we needed short second honeymoon, which really meant a weekend away without our much loved, incredibly busy 3 year old and her 18 month old brother/tornado. Browsing the ubiquitously popular Groupon site ,Madi-Madi caught our eye for a number of reasons. Firstly, the design and fittings looked stunning and we have a penchant for such places. Secondly the food looked good (something we also love) and thirdly, we would be in the beautiful and isolated outdoors where we could go on a game

drive or two if we wanted but also do very little if we wanted. So we made our booking not knowing what to expect (the resort had only been open for a few weeks when we arrived) and after dropping off the kids at the Grandparents in Mossel Bay we headed off for our first ‘just the two of us’ weekend away in more than 3 years! Reaching Madi-Madi was relatively simple, though you will need to keep an eye out for the Madi-Madi signs once you pass through Dysselsdorp. The road to the lodge is good, though you will need to take it easy once you are through the gate as there are some bumpy sections which tested the suspension of our Golf. On arrival we were warmly welcomed by Rupert and Natasha, who together manage the lodge, and after a short tour of the Manor House (more to come on this) we were shown to our lodge which in our case was one of the Superior Riverfront Cottages. The cottage was exquisitely finished and just what we had hoped for. A King

Sized, four poster bed, with luxurious linen, pillows and a fireplace (which the staff prepare for you) were very inviting and we already had something to look forward to that evening. The cottage has unrestricted views of the river and is far enough away from the Manor House, which serves as the primary meals and meeting point, to ensure privacy. Our personal favourite was the bathroom. A freestanding bath, walkin shower and a double vanity with custom made copper fittings really were a work of art and turned out to be great place to relax with a glass of champers, a book (in the bath of course) and the sound of the fire crackling in the background. At nighttime one can expect some fun reading material; a nice little touch. To be honest we did grab a couple of sneaky episodes of our favourite series whilst we were there (unforgivable but I can see many of you with a knowing smile on your face!) Meals at Madi-Madi buck the typical ‘isolationist’ trend of the modern day and

age (though you can have private meals at your lodge if you would prefer) and take place at the main Manor House around a beautiful, at least 12 seater, table at which all guests are welcome to sit, eat, drink and meet other guests in the lodge. Rupert also ate with the guests which we thought was great as it allowed one to ask questions and understand some more of the details, challenges and joys of running such a lodge. The meals were excellent, with the menu developed on a day by day basis and brilliantly executed by George and his team. The highlight for me was the breakfast (yes, I am one of those who judge the quality of an establishment

96

Brides Essence.com - Re-launch Issue 11 Issue

by the most important meal of the day!). A perfectly cooked English breakfast which is cooked over a blazing woodfire is a great way to start the day. At lunchtime one is provided a picnic basket full of goodies and at supper one can opt for a romantic dinner at ones own lodge which involves a beautifully laid out table, lit up by torches, to which George or Natasha will bring the delicious food and drinks. The lodge has an extensive and well priced wine collection. The facilities, as one would expect in a retreat such as Madi-Madi, are focused on relaxation and serenity, so don’t expect tennis courts and gyms! Rather game drives, horseback rides, walks, a boat

cruise on the lake (which it seems are not always doable in the summer due to low water levels) and night time star gazing are what you can expect to spend your time doing, along with some lazing around the pool in the summer months. Unfortunately the battery on the telescope had packed in so we weren’t able to do the stargazing we had hoped to but one can imagine the beauty of Orion’s Belt and the Pleiades under the Karoo sky. In the evenings one can sit around the outside lodge fire (and eat there too, weather permitting). A welcomed addition for those with children is a small area in the Manor House where kids can watch a DVD or two in the

evenings while you and your partner put your feet up with a glass or two of your favourite beverage either outside in the lounge or in the reading corner, a cosy area with its own fireplace and a well stocked bookshelf . What truly differentiates one lodge/ hotel/resort from another in this day and age where money can buy quality finishes, facilities and a great chef is the service levels. Madi-Madi nails it! From the warm welcome of Rupert and Natasha to the long chats with George about the meal for the day. The staff seem to have a genuine concern for their guests backed up by a solid hospitality background and training. Though warm and welcoming, one never gets the feel that they are in your face or overbearing. Game Drives with Rupert were always informative and interesting even if we didn’t see too much wildlife. On this point it must be noted that Madi-Madi is still relatively

new so the game levels will take some time to increase as more are introduced, so don’t expect a Big 5 experience just yet. Despite having only been open for a couple of weeks when we arrived, Madi-Madi seems to be well on its way to becoming a destination to ‘get away from it all’ and the perfect place for a few days break with your new or, like us long-time spouse, to be refreshed by the tranquillity, luxurious accommodation and excellent food.
