When I first launched BOLD Traveller a few years ago, I had no experience in the publishing or media industry. I had just left my cushy job at a top financial institution to pursue a venture I had only murkily envisioned. All I knew was that I had to follow my entrepreneurial heart and channel my passion for travel into realizing something that served Canada’s most curious and intrepid. Today, BOLD Traveller is Canada’s leading luxury travel publication. Though we had to overcome many challenges along the way, they pale in comparison to what the world is collectively dealing with now. Today is a different world: vaccines and vaccine passports are the norm and we are learning how to navigate new travel protocols and constantly changing travel restrictions. It might take time, but I am confident we will continue to adjust and find the light at the end of the tunnel—just as we always have. Throughout the pandemic, I’ve had the immense privilege of working remotely and the good fortune of staying healthy. Since 2020, I’ve been hunkered down in my small (very small) condo in downtown Toronto, flipping through old travel magazines, watching reruns of the Golden Girls or Schitt’s Creek as a way to maintain some sort of normalcy. From time to time, I would make a short trip to the Toronto Islands to read a book or stop by the old office, missing my wonderful colleagues and craving the powerful creativity that is born out of a face-to-face interaction. The kitchen chitchats and that human bond you cannot get from a Zoom call—no matter how many a day you sit through. I still enjoy working from the 12th floor of my office, empty as it may be. But what I love the most, regardless of the season, is the light filtering through the glass and the setting sun that reminds me that tomorrow is another day and maybe, just maybe, it will be better than the last.

We’ve all been deeply affected and humbled by the global pandemic in some fashion, some more acutely than others: the travel, tourism and hospitality industries have been decimated. Yet, nothing compares to the heartbreaking loss of life and long-term fallout wrought by COVID-19. The magnitude of lost jobs, shuttered restaurants and small-business closures has been sobering. We’ve been forced to face a specific kind of collective grief in ways new to many of us. Yet, two years in, I still can’t help but feel optimistic and hopeful about the future, heartened by the efficient rollout and widespread embrace of vaccination. With new travel protocols in place to keep us safe, I am confident and eager to start exploring the world anew. As I think about travelling again, I yearn for deeper, enriching experiences. In service of that desire, this issue showcases our first #BoldList—the places, the people and the things we’re craving post-pandemic. When the time is right, travel will bounce back with a vengeance - and it will be better than ever. Travel can be radically inclusive and celebrate all of us. Travel can strengthen the economic resilience of local communities. Travel can empower all of us to be part of the solution. Travel can transform lives, proving that we have more in common than what we think divides us. At its best, travel gets us out of our comfort zone, gives us an opportunity to learn about different cultures, savour different foods, ride the buses, experience traditions like locals do and ultimately helps us grow as people. And this is my wish and hope as the world opens up: I want to travel more slowly, more purposefully, and more intentionally. I wish to leave a gentler footprint. I hope we emerge from this time with a renewed sense of our global interconnectedness, a recognition of our shared humanity, a dash of humbleness and an appreciation for the people that make an impact in our daily lives.

The issue that you are holding in your hand represents a new beginning for our publication. We’ll be making some exciting changes over the next few months. Please reach out if there is anything you would like to see from us as we evolve. Rest assured that we will remain bold at heart and as committed as ever to sparking the curiosity that inspires you to hit the road. Most importantly, I want to dedicate this issue to all of you that work in this wonderful industry: the travel agents that organise our itineraries, the butlers that open our doors, the pilots that take us from one destination to another, to the front line workers taking care of our loved ones, to the lovely flight attendants who are there to save our lives in case of an emergency. The people that feed us and clean our rooms and the grocery store clerks who help us get food on our table. And to you, dear reader, who continue to serve as my inspiration. From the bottom of my heart, thank you for allowing me the privilege of entering your homes.

My Best Hotel Experience: Unquestionably, the Belmond Cap Juluca in serene Anguilla... Ivory sands, dreamy villas, and a tantalizing tour de force in Peruvian cuisine that has me daydreaming of ceviche to this day. My Most Memorable Hotel Stay: Not quite a hotel, but definitely spending three nights in a hammock in the heart of Managua, Nicaragua; sharing my sleeping space with a few particularly spirited chickens. In 2022, I look forward to travelling to: Iceland, because over a year of mask-wearing has given me the training I need to transition to a balaclava with minimal discomfort. Also, the Northern Lights!

When I think of The Bahamas: The Bahamas was the first island I visited in the Caribbean and the colour and warmth of the sea was a revelation. You could not get me out of the water! Still can’t. In 2022, I look forward to travelling to: Tbilisi, Georgia for its exciting art scene, and Akko, Israel, a city that is normally a model of co-existence and where you find the fantastic seafood restaurant Uri Buri.

My most memorable wellness treatment experience: at a spa in the south of France with an all-Russian staff who spoke neither French nor English. We communicated by charades. I don’t remember a time when I felt so confused yet so relaxed. In retrospect, the language barrier removed all self-consciousness which enhanced each treatment. I would travel to: the Brittany region of France for Thalassotherapy. They take hydrotherapy to the next level. In 2022, I look forward to traveling to: the Sundance Film Festival in Utah to see premiere films, ski in the famous white powder of the Wasatch Mountains, and enjoy the apres-ski saunas and hot tubs.

Writer Hong Kong on the Double page 64 Hong Kong to me means: Everything: food, fashion, outdoors, museums, small islands, beautiful hotels. And dim sum! My Most Memorable HK moment: My first visit to Victoria Peak, with the city spread out below my feet. One thing most people don’t know about HK? It has amazing hiking trails. Try the Dragon’s Back hike on Hong Kong Island. In 2022, I look forward to travelling to: Hawai’i because I love the food, the people, the language, the music, the weather, and the beaches.

Welcome to The BOLD List The ways we travel have changed forever—especially in a post-pandemic world—masks, vaccine passports, travel requirements, the trends driving where we choose to go, what we like and dislike and what motivates us to book a trip. Yet, an avid traveller knows that in this world, there are still plenty of paths less travelled, destinations yet to be discovered and places that we would go back to in a heartbeat. Those of you who love to travel, to go beyond your borders (yet, at the same time, go deeper into your own backyard), you are a #boldtraveller. And for the BOLD traveller, that sense of wanderlust is a part of who you are. Of course, we’re not suggesting going headlong into the great wide open just yet. It’s more about easing into the undiscovered and using the experts to help you get there. Destinations such as Hong Kong, México, the Caribbean and right here in Canada, all invite a closer look. Travel rewards programs can help you do that. Take the HSBC World Elite® Mastercard® for example, as your guide to exploring the unknown: it brings the world in focus, and makes it even easier to just go. It’s with this spirit of exploration that we’re bringing to you this special issue that we’re calling The Bold List: the experiences our editors are dreaming about, and where they’re booking a cruise, reserving tables for the best in dining and drinking, and dreaming of staying in the coming year. It contains awe-inspiring, brain-building, life-affirming things to do, which also happen to be among some of the most amazing places on earth. What all of these experiences have in common is the joy that comes from discovery. And that’s something that never gets old.

Two icons 150 years apart are coming together with a message of hope and optimism—in a bottle of bubbly By Vawn Himmelsbach

Veuve Clicquot has partnered with Japanese artist Yayoi Kusama to celebrate its new vintage, La Grande Dame 2012. The collaboration is a tribute to Madame Clicquot, “La Grande Dame” of champagne, featuring Kusama’s signature polka dots suggestive of champagne bubbles. Kusama designed both a label and presentation box for the prestige cuvée. But the piéce de resistance is a sculptural flower, called “My Heart That Blooms in The Darkness of The Night,” that winds itself around a limited edition magnum—hand-painted by the celebrated artist herself. The sculpture consists of five blooms made of resin and copper, painted in vibrant hues and coated with lacquer—along with more than 1,000 precisely placed polka dots. According to Veuve Clicquot, the sculpture symbolizes love, vibrant energy and a celebration of life. Each of the only 100 editions is numbered and available upon request. More widely available is the 75cl bottle, which also features Kusama’s flower motif on the presentation box, as well as her signature polka dots on the label. This special bottle will soon be available for purchase in Canada. This isn’t the first time Veuve Clicquot has partnered with the iconic Japanese painter, sculptor, author, performance artist and filmmaker. In 2006, Kusama brought to life an original portrait of Madame Clicquot with a vibrant polka-dot pattern as part of a charity auction in Tokyo. For Veuve Clicquot, it was essential to collaborate with a joyful, hopeful and optimistic personality like Kusama, much like Madame Clicquot herself. These two extraordinary women—despite being separated by 150 years—both yearned to gain independence and conquer the world. Madame Clicquot was one of the few female entrepreneurs of her era in the early 1800s. As a 27-yearold widow, she took the reins of her late husband’s champagne house at a time when women didn’t have the right to work. With major innovations such as creating the first known vintage in 1810, the first known blended rosé in 1818 and the design of the Maubeuge bottle, this young widow revolutionized the champagne world. Kusama pioneered immersive experiences in art— notably with her Infinity Nets and Mirrored Rooms— where the viewer’s body and mind are integral parts of the work. As one of the few female artists of her era to make a living from her art, Kusama conquered the male-dominated art world during her time in New

York from 1958 to 1973. Now, at 92 years of age, she’s considered one of the world’s most famous and brilliant living artists. “My Heart That Blooms in The Darkness of The Night” is Kusama’s tribute to La Grande Dame, who shared her love of beauty and the avant-garde—and a drive for excellence. Indeed, Madame Clicquot understood that good champagne wasn’t enough to win over New York and St. Petersburg; the beauty of the product itself—the bottle, label and design—were just as important. As La Grande Dame once said: “Our wine must be both flattering on the eyes and on the palate.”

It was also her belief that pinot noir had the potential to make the best champagne, so she acquired 10 of the House’s 12 pinot noir parcels. But these grapes are delicate, and their expression varies depending on the terroir, weather and harvest conditions (and determines if a year will be declared a vintage). It’s these grapes that provide the structure and strength of La Grande Dame 2012, from Grands Crus and the House’s historic plots, among the most prestigious in the Champagne region of France: Aÿ, in the Grande Vallée de la Marne, and Verzenay, Verzy, Ambonnay and Bouzy in the Montagne de Reims. The magic is also in the blend, with 90 per cent pinot noir and 10 per cent chardonnay from the Grands Crus of Avize and MesnilSur-Oger in the Côte des Blancs. “It is playful, lively and laughing,” says Didier Mariotti, Veuve Clicquot’s Chef de Caves. “This new vintage offers a strong minerality carried by pinot noir balanced with the freshness of the blend. Its aging potential is immense.”

X

Marks the Spot

Single-malt Scotch whisky is often associated with cigar lounges and special occasions—and the idea of using it in a cocktail is downright scandalous. But one of the most beloved Scotch houses in the world is challenging that perception with the introduction of X by Glenmorangie—a new single-malt whisky made for mixing. A serious Scotch drinker may consider it a crime to drink a single malt on the rocks, let alone with tonic, cola or— perish the thought!—a slice of orange. Drinking it neat (or with a drop of water to open up the flavours) has long been considered the only acceptable way to drink a single-malt whisky. Until now, that is. At Glenmorangie Distillery Co., founded in 1843 near Tain in the Scottish Highlands, expert craftsmen—known as the Men of Tain—have been producing prized single-malt whisky for generations, using the tallest stills in Scotland. And Glenmorangie The Original, aged 10 years in oak casks, has long set a high standard for Highland whisky with its floral and fruity flavour profile. But the Scotch house is also known for combining tradition with innovation—from piloting innovative distillation techniques and experimenting with new cask finishes to using barley from the property’s own fields—to create its award-winning whiskies. Inspired by the flavour possibilities of using single-malt whisky in mixed drinks, Glenmorangie’s team consulted with a range of top global bartenders to craft X by Glenmorangie, resulting in a sweeter, richer whisky that pairs with all manner of mixers—and yes, even orange slices. With X by Glenmorangie, the Scotch house is definitively entering the craft cocktail space—and making single-malt whisky the drink of choice for more informal occasions. So for anyone who’s never considered a Scotch cocktail for brunch, a pool party or karaoke night, that’s about to change. And it’s easy for even a novice at-home bartender to mix up a classic (or creative) cocktail that’s sure to impress. “X by Glenmorangie came from our dream of creating even more flavour possibilities with a single malt that’s made to mix. Consulting with top bartenders, we crafted this sweeter, richer single malt for all those enjoying mixing at home,” says Dr. Bill Lumsden, Glenmorangie’s director of whisky creation. Lumsden, considered a legend in the whisky industry, has 25 years at Glenmorangie under his belt and a PhD in microbial physiology and fermentation science. And for his many innovations, world-firsts and limited editions—which still respect the traditions of Scotch—he’s won multiple awards at the International Whisky Competition. This latest freewheeling whisky is crafted from a combination of whisky aged in bourbon casks and some finished in new char oak casks, resulting in an extravaganza of unexpected flavours.

A spot of whisky, that is. Glenmorangie releases its latest sip. Vawn Himmelsbach tips a wee dram and traces its origin story.

“Luscious with vanilla and pear, succulent orange and honeysuckle, all drizzled with chocolate fudge, X by Glenmorangie is perfect paired with a favourite mixer,” says Lumsden. Lumsden’s ideas come to life in The Lighthouse, Glenmorangie’s new experimental distillery designed by Paris-based Barthélémy Griño Architects. Described by Glenmorangie as a “playground for whisky makers,” the 20-metre-high glass stillhouse, which towers above the Scottish coastline, was created to push the boundaries of traditional whisky-making. And while The Lighthouse sits on the same property as Glenmorangie’s original distillery—built of stone more than 175 years ago—the new facility was designed exclusively for experimentation and injecting creativity into an age-old process. With two updated copper stills as tall as giraffes, The Lighthouse includes a purpose-built sensory

BEAUTY

laboratory and a brew house to experiment with mashing and brewing. The whisky’s sweet and rich taste both complements and cuts through mixers to create delicious cocktails. While it mixes well with any flavour, it’s also delicious neat. “So, whether you’re planning a brunch or a date night or want to experiment with your own flavour combinations,” says Lumsden, “this whisky will bring your drink the x-factor.” To inspire mixing, Glenmorangie has designed a series of refreshingly simple serves to make at home, each requiring just two to four ingredients, such as tonic, cola, lemon juice, agave syrup or sparkling apple juice. These cocktail recipes include new takes on familiar classics (such as Glenmorangie X Tonic and Glenmorangie X Cola) as well as swizzle-style drinks for fun-filled occasions: Glenmorangie X Brunch, Glenmorangie X Date Night and Glenmorangie X Passionfruit, the recipe for which the company has shared with us, below.

Move over, retinol. Cholesterol often gets a bad rap, but when it comes to skincare, it’s an anti-aging powerhouse. And cult-fave beauty brand Skinceuticals is using ingredients like cholesterol to target those crow’s feet and laugh lines. Its Triple Lipid Restore 2:4:2 anti-aging cream harnesses fat to combat the signs of accelerated aging through healthy cell turnover, improved barrier function and natural self-repair. So how exactly does it work? Lipids are the skin’s natural fats, which include ceramides, cholesterol and fatty acids. As we age, we experience lipid depletion—the loss of natural fats on the surface of our skin—which compromises the skin’s natural protective barrier. And that leads to signs of accelerated aging, including roughness, dullness, uncomfortable tightness and loss of facial fullness.

Glenmorangie X Passionfruit A tropical burst of flavour, this fizzy, fruity serve is delightful outdoors, with food and a beautiful view. Ingredients 50ml (2oz) X by Glenmorangie 50ml (2oz) Passionfruit Soda Passionfruit for garnish Method Fill highball glass with crushed ice. Add X by Glenmorangie and passionfruit soda. Stir and garnish with half a passion fruit. More recipes can be found on www.glenmorangie.com.

While there are plenty of anti-aging products on the market, Triple Lipid Restore 2:4:2 addresses these concerns with a concentration of lipids: 2 percent pure ceramides (with the same configuration as those found in human skin), 4 percent natural cholesterol and 2 percent fatty acids. According to Skinceuticals, natural cholesterol accelerates barrier recovery in aging skin, while fatty acids—high in linoleic acid (omega-6) and oleic acid (omega-9)—support lipid production. While we can’t turn back time, we may be able to slow it down: In an eight-week study, Triple Lipid Restore significantly improved key signs of accelerated aging such as evenness, smoothness, radiance, laxity and pore appearance—and all this with a lightweight, fast-absorbing texture. The anti-aging cream also has more than 500 five-star reviews on Skinceutical’s website—and the brand is a favourite among celebrities like Kristen Stewart, Sienna Miller and Hailey Baldwin (all who happen to have remarkable skin). So whether you’re looking to tackle the signs of aging or get some bounce back into dull, dry skin, don’t overlook the power of fat.

The World’s Most Extraordinary Stays From Switzerland to Japan, we go around the globe for a look ahead at the most beautiful hotels just opening Edited by Jacob Seguin

HUVAFEN FUSHI MALDIVES If you’ve ever, in your most fanciful dreams, thought of what owning your own private island would be like, the Maldives’ Huvafen Fushi does a sterling job of answering just such a hypothetical. Sprawling out over its own atoll, this one-of-a-kind property could be accurately described as an inverted oasis: a sandy pocket of palm trees adrift in the Indian Ocean’s endless blue. Accessible via airport speedboat, this secluded island has everything you need to get lost in relaxation: breathtaking bungalows and pavilions, pools of both the infinity and saltwater variety, award-winning private chefs, and a coral reef for some sunset snorkelling. The accommodations are similarly exceptional: while the beach-side bungalows remain popular, the overwater dwellings arrest the eye, extending over the tranquil waves by means of a great, horizontal staircase. Elsewhere on the property (well, below it), you’ll find another incredible feat of engineering: the Huvafen Spa, constructed eight metres below the surface of the water. The vast array of massages, facials and Thai-inspired treatments are made that much better by the glass windows that offer a panoramic vantage into the reef, creating a stimulating, hypnotic experience for all five senses. We could go on about the aquatic adventures, inspired gastronomy, and postcard-perfect beaches that define the Huvafen Fushi, but a single image of this luxurious lagoon says more than words can convey. huvafenfushi.com

HABITAS BACALAR MÉXICO The number two entry on our list continues the trend of aquatic excellence, but brings it inland to the border of Mexico and Belize, where one can find the many-hued Lake Bacalar on the edge of the jungle. The Habitas Bacalar experience is all about the lagoon upon which it is built, channeling the tranquility of its namesake lake into a host of profoundly energizing holistic experiences. The Bacalar’s diverse accommodations invite guests to awaken to the brilliant Mayan sunrise in an earthy, A-frame tent wherever they feel most comfortable: by the shore, within the jungle, or somewhere in between. Immersion is everything for the staff at Habitas Bacalar, who go out of their way to protect the almost-sacred lake and get guests fully invested in the natural experience with a host of activities that include yoga, sunrise paddle boarding, floating meditation, kayaking and diving. As a newer property of the larger Habitas family of properties, it bears noting the continued commitment of the operators to preserving the lagoon and local cultures and communities. It is a truly sustainable ecotourism experience. On site restaurant Siete marries locally sourced ingredients with traditional Mayan cooking for some excellent organic lunches with stunning views of the water. As the proprietors like to say, wellness is woven into the very essence of the Habitas Bacalar, and the spa menu does not disappoint: signature facial and massage treatments source key ingredients like cocoa and green tea from the surrounding communities, while the Sumpulche sweat lodge ceremony utilizing hot volcanic rocks is a faithful continuation of venerable Mayan practices. ourhabitas.com/bacalar

GALLERIA VIK MILANO MILAN, ITALY The Galleria Vik Milano is perhaps not so much a hotel as it is a working portal to the renaissance period, reflecting Milan’s rich cultural and artistic heritage in a striking ode to Italy’s most famous creatives. Every wall and corridor at the Galleria is a canvas upon which the property’s love of the surrealist, abstract or postmodern traditions is proudly displayed. Each room at the Galleria is a true work of art, possessing a bespoke visual identity honouring the works of Pino Pinelli, Felipe Cardena and Shinya Sakurai, among others. Just as no two people may extract the same meaning from a painting, no two stays at the Galleria are exactly alike: a feat accomplished by the regular rotation and reinvention of the property’s exhibits. The 89 room, instagram-worthy Galleria is ideally situated in the Milan Centre neighbourhood, providing a launchpoint for day trips to desirable landmarks like the Cathedral of Milan and the Piazza del Duomo, to say nothing of the wealth of boutique shops, restaurants and galleries in the vicinity. As one might expect from a boutique property in the heart of Milan, the Galleria is as much a delight to the tastebuds as it is to the eyes. Breakfast spot Vikissimo turns into a trendy acoustic lounge after sundown, while I Dodici Gatti Pizzeria serves up classical wood fired Neapolitan pizza from the rooftops overlooking the bustling streets and alleys surrounding the hotel. galleriavikmilano.com/en

CERVO MOUNTAIN RESORT SWITZERLAND The Swiss canton of Valais is pure alpine fantasy: a rugged wilderness of powder snow peaks and surprisingly green valleys that has developed a reputation for some of the finest skiing in the world. In the shadow of the majestic Matterhorn, the Cervo Mountain Resort has ascended to new heights of hospitality. After an intensive redesign in 2020, Cervo has reopened as a dynamic sanctuary from winter’s chill, boasting bonafide sustainability credentials (via geothermal sources and solar panels), timeless accommodations, and three restaurants that reflect the dynamic French-German cuisine of the region. This massive resort has rooms and lodges scattered across its snowy grounds to suit all tastes, with the 4-star Nomad offering compact comfort for the adventurer in need of a base of operations, and the 5-star Huntsman catering to those seeking an authentic Swiss chateau and an indelible sense of rustic nobility. Elsewhere on the grounds, one can restore body and soul at the Mountain Ashram Spa: essentially what you get when you mix Japanese onsen tradition with the local herbs and natural hot spring water of the Swiss Alps. You’ll find ski lifts in proximity to the property, ready to ferry you (nearly) above the clouds for a downhill joyride. Notably, Cervo has perfected the art of Après-Ski, serving up cocktails and live music on terraces directly at the bottom of the slopes. cervo.swiss/en

NODE KYOTO HOTEL JAPAN Formerly the capital of Japan, Kyoto strikes an intriguing balance between the country’s celebrated cultural traditions and its unabashedly modern, almost futuristic architecture. Both tradition and modernity are on full display at Node, a high-concept hotel from acclaimed architect Seiichiro Takeuchi. Resembling (by design) the eclectic gallery of a reclusive art collector, Node’s sleek, noir interior guides the eye to the splashes of warmth and colour erupt from its many installations and paintings to punctuate the tones of grey. Edgy, minimalist, monochrome and mysterious—suitable descriptors for Node’s 25 rooms, scattered across five floors and available in single and double bed configurations. Much like the Galleria Vik Milano (entry number 3 on this list), Node prides itself on working its art collection into its suites, endowing each with a unique assortment of pieces from the collection. Service from the snappily dressed staff is prompt and courteous, and dinner on the premises reinforces the creative current that flows so strongly through the property with an inventive take on Western-Japanese fusion. While Node may occupy the leading edge of design, it also sits in a very desirable location to some of the best restaurants and shopping in the city and the famous street food institution of Nishiki Market. nodehotel.com

STANLY RANCH

an Auberge CollectionResort

USA The Ranch has captured our collective imaginations and catapulted to the top of our minds without even opening its doors. Set to debut in February 2022, Stanly Ranch encompasses 700 scenic acres in the heart of the Napa and Sonoma wine countries, luring travellers in search of an authentic, adventurous experience with the promise of an upscale farm stay without equal. Storied vineyards and gentle, verdant hills complement the view of the Mayacamas mountains from any of the property’s soon-to-be-opened hotel cottage suites, each offering outdoor terraces and warm, natural interiors with just a hint of earthy agrarian flair. Despite its rustic trappings and intimate, casual style, there’s no question that Stanly Ranch is shaping up to be a true luxury gateway to the many splendours of California. Beyond its generous amenities, four restaurants spotlighting local, farm-grown fare, and week-long detoxing program, Stanly Ranch will also delight guests with guided hiking and wine tours, cycling and hot air balloon rides over the Napa River. We’re particularly excited to indulge in some handcrafted botanical cocktails, with ingredients sourced directly from the property’s gardens. For those who don’t mind getting their hands dirty, Stanly Ranch offers no shortage of opportunities to get involved with its farms and vineyards, an experience often culminating in a chance to sample the fruits (literal and otherwise) of your labour. aubergeresorts.com/stanlyranch

NAYARA TENTED CAMP COSTA RICA Costa Rica has made a splash on the global stage by being something of an irresistible enigma: its wild, tropical landscape is a dichotomous blend of rainforests, beaches and volcanoes. A favourite of eco-tourists (and coffee lovers) in recent years, Costa Rica has asserted itself as one of the world’s foremost destinations for those seeking to experience the unblemished majesty of nature. The Nayara Tented Camp (June 2022)—the newest addition to a family of properties that includes the Nayara Springs and Nayara Gardens, has dedicated itself wholly to offering this natural immersion since its launch in 2019, providing a luxury glamping experience just atop a dense canopy. Each of Nayara’s 38 luxury tents rise from the hillside on stilts, allowing one to gaze at the nearby volcano from the comfort of a hot spring-fed plunge pool. These aren’t the tents you camped in as a kid: a king bed, an outdoor double shower, and an expansive private terrace are just a few highlights from these superb, safari-style treehouses. Comfort and vistas aside, it’s the wealth of experiences here that really drives us wild: a yoga pavilion, sloth sanctuary and an open-air spa punctuate a robust portfolio of adventurous offerings. Imagine waking to the spirited staccato of colourful parrots and following their song into the rainforest, returning at night for a soak in the pool and a memorable, al fresco dinner highlighting the finest Peruvian and Asian flavours. This isn’t a pipedream: it’s just an average day at Nayara. nayaratentedcamp.com

LES SOURCES DE CHEVERNY, LOIRE VALLEY, FRANCE While the dream of becoming a Disney prince or princess is—for most of us—sadly out of reach, the opportunity to live like one has become, as of September 2021, excitingly attainable. This bit of wish fulfillment comes to us courtesy of Les Sources de Cheverny: an 18th-century style Chateau nestled in the vineyards of France’s enchanting Loire Valley. Within this classical countryside known for its fairy tale castles and dreamy riverbank hamlets, you’ll receive the royal treatment you’ve always longed for and revel in the unabashed opulence of your palatial accommodations. Les Sources de Cheverny’s regal exterior is matched by an equally grand yet distinctly homely interior, burgeoning with tasteful antiques and pseudo-medieval accents. Beneath the building’s gothic turrets, you’ll find an expanse of well-maintained green space encircled by a quiet forest. The greater estate holds no shortage of attractions: la spa des sources pairs relaxation courtesy of its solid oak jacuzzis with the anti-aging properties of signature grape seed treatments from Caudalie, while the cuisine of chef Frédéric Calmels showcases local, seasonal ingredients sourced directly from the Romorantin vineyard and the aforementioned Sologne forest. The vision of owners Alice and Jerome Tourbier brought to life amidst a UNESCO-recognized ‘living cultural landscape,’ Les Sources de Cheverny immerses guests in a French landscape seemingly untouched by time. For those looking to spend even more time in the countryside, opt instead to stay in one of the charming stone and wooden cabins surrounding the lake. sources-cheverny.com

TORRES DEL MARQUES MATARRAÑA, SPAIN Renovated and reimagined as an exclusive hideaway in the foothills around Barcelona, this 18th-century farmhouse has become a true Mediterranean marvel. Within the sunset-coloured stones of this terrific tower, you’ll find three floors of 18 spacious suites expertly realized with authentic textiles, pale wooden accents and modern flourishes. Fragrant floral and olive aromas waft into each room by way of a private terrace; a constant reminder of the bucolic bliss that awaits one just steps beyond the pool, sauna and spa on the grounds. The relaunch of this hotel was a collective triumph shared by a bio-sustainable architect from the small town of Aragon and a small team of local artisans, who now operate Torre Del Marques in the true spirit of Spanish countryside hospitality. The property is notable for its commendable commitment to sustainability, with plentiful solar panels and a “local fare only” approach at the on-site restaurant reducing the property’s footprint on the idyllic mountains that cradle it. On the topic of the restaurant: it dazzles the palate with a fusion of avant-garde and traditional fare that prominently features the olives, truffles and honey harvested from the surrounding locale. Situated as it is within 150 hectares of rolling hills often referred to as the ‘Spanish Tuscany,’ the Torre Del Marques has much to offer for both the romantic and intrepid. Horse riding and truffle hunting have emerged as two of the favourite pastimes for visitors, and the nearby Puertos de Beceite National Park is well worth spending a day getting lost in. hoteltorredelmarques.com BOLDMAGAZINE.CA

White Rabbit

MOSCOW

It isn’t just the opulent 16th-floor dining room with sweeping views of Moscow that makes this one of the best restaurants in town. Or the domed glass roof, the newly built summer veranda or the airy and modern interior created by famous architect Natalia Belonogova. This elegant space is a temple for nouvelle Russian cuisine created by Chef Vladimir Mukhin (who some may recognize from the Netflix documentary series, Chef’s Table). Mukhin started his career at the age of 12 in his father’s restaurant, later training in France, Spain and Japan. In 2012, he moved to Moscow and opened White Rabbit, where he uses Russian ingredients—like Black Sea oysters, Crimean truffles and produce he grows himself—to come up with an inventive take on local cuisine, like rabbit pâté, baked cabbage with caviar and roast goose with black currants and black truffle. whiterabbitmoscow.ru/en/

El Chato

Wagyu tartar at Eight

BOGOTÁ

There’s a reason why El Chato in Bogota’s bohemian Chapinero Alto neighbourhood has made it onto Latin America’s 50 Best list three years in a row. Chef Álvaro Clavijo returned to his homeland after working in top kitchens across Europe and North America, opening El Chato in a moody space with plenty of exposed brick, an open kitchen, a spice library and a chef’s table on the second floor. The menu reflects local ingredients, from local producers, often blending Colombian ingredients with Creole flavours. But Clavijo puts his own spin on classic local dishes, like chicharron—thick-cut bacon served with dehydrated cilantro, candied lime and charcoaled chili—taking them to a whole new level. elchato.co

The Chairman HONG KONG

At The Chairman, the food is all about simplicity—2,000 years in the making. The Cantonese culinary style has been around for two millennia, and The Chairman focuses on tradition by bringing out the original flavours of ingredients rather than overplaying them. That means only the freshest ingredients are used: staff head to the Aberdeen Fish Market each day at 6 a.m. to handpick the seafood. Beancurd sheets are procured from Shu Kee, a local shop that has produced beancurd since 1942. All sauces are created from scratch, and meats and salted eggs are cured at The Chairman’s small farm in Sheung Shui. Worth the flight is Chef Kwok Keung Tung’s showstopper flowery crab, steamed with 15-year-old Chinese wine, chicken fat and clam juice. thechairmangroup.com

Disfrutar

BARCELONA

Disfrutar means ‘enjoy,’ and there’s plenty to enjoy at this two-Michelin-starred Barcelona hotspot. While the menu is avant-garde, the entire experience is meant to be welcoming and informal in an airy, light-filled space. The brainchild of Chefs Oriol Castro, Mateu Casañas and Eduard Xatruch—who helped to pioneer the avant-garde molecular gastronomy movement at Spain’s legendary elBulli—Disfrutar continues their exploration of gastronomy, earning it a spot on The World’s 50 Best list for 2021. The chefs combine unexpected flavours and textures, aiming to surprise and delight—so what you see on your plate may not be what you taste in your mouth. Standouts (if one had to choose) include crispy egg yolk with mushroom gelatin and the “panchino” bun stuffed with sour cream and Beluga caviar. disfrutarbarcelona.com

Eight

CALGARY

With a secret entrance, limited seating and word-of-mouth cachet, EIGHT is worth the trip for a gastronomic experience seldom seen here in Canada. Helmed by Chef Darren MacLean, known for pushing culinary boundaries, EIGHT has—you guessed it—just eight seats around an open black-marble kitchen that encourages an evening-long dialogue. And the menu explores the mosaic of cultures, both indigenous and international, that make up the Canadian culinary landscape. So what exactly is Canadian gastronomy? “I’ve been asked this question a lot,” says MacLean. “For me, Canadian gastronomy is too young to have a clear definition. I’m more concerned about being a part of the evolution into what it will become. Like the cuisine of any country, ours will also be

defined by the movement of people and how they adapt their cultures and traditions to the foodscape they encounter in new regions.” EIGHT’s winter series runs until mid-March, when a new block of seats will be released. Some highlights? The Alberta wagyu glass short rib— cured in red miso and salt for three months before being dry-aged for up to a year—is shaved paper-thin and served over poached B.C. matsutake mushrooms. And the squid offal curry, featuring charcoal-grilled tubes of Fogo Island squid, is served in an à la minute fresh green curry made from the liver of the squid, finished with cilantro blossoms from the EIGHT farm. eightcdn.ca

Bahamas is an archipelago of 700 coral islands and thousands more cays scattered along a stretch of Caribbean Sea like paint on an abstract blue canvas. Together the archipelago make up the perfect palm-fringed, soft sand, turquoise sea vacation destination. But just because you came to chill on the beach, doesn’t mean you should bypass Nassau and all it has to offer. On New Providence Island, spend time in the bustling capital city and you’ll get to know a cosmopolitan town with a distinct character that blends British, African and Caribbean cultures, and offers a wealth of nature, historic architecture, fine resorts, and modern restaurants, bars and coffeehouses. All in a city that’s easy to get around by foot or ferry and just a short flight away.

DECODER B O L D T R A V E L L E R . C A T H E B O L D L I S T 44

Nassau is an easily navigable city whose different neighbourhoods reflect its multi-faceted face. Downtown

Downtown, easily accessible from the cruise port and popular Paradise Island, is a history-filled collection of banks, shops and pastel-pink government buildings. Bay Street is the main shopping and eating area and home of the famous straw market, the place to go for handmade Bahamian crafts and straw vendors, who make up one of Bahamas’ oldest industries. (Stick to the authentic artisans. There’s a lot of tourists at the market too.) Spend time downtown and you’ll get to know the distinct rhythm of the city. Bustling by day, downtown goes quiet at 5 pm, as if a light switch has been flicked off. That’s when cruise goers return to their ships. Then a few hours later, as the sun sets the pace picks up again as locals and overnighters make their way to restaurants and bars. Nature and historical sites are all within walking distance as is Junkanoo beach, the closest beach to downtown.

Cable Beach

On the north shore of New Providence, just a few miles west of Nassau, Cable Beach is the home of many upscale resorts lining its two-anda-half miles of fabulous white sand beach. This is the Bahamian Riviera, a grown up’s playground where you can while away an afternoon drifting on a sailboat, play a round of golf or try your luck at the island’s largest casino.

Paradise Island

You can cab it, take a ferry from the cruise port, or walk the 600-foot bridge to this true calling card of the Bahamas, known for its high end condos, estate homes and fabulous, and sometimes famously over the top, resorts. Yes, Atlantis resort, we mean you. (Atlantis is, of course, the home of the enormous waterpark you see in the photos.) Most of all, Paradise Island is a family paradise where you can rent water sport equipment, visit Dolphin Cay or spend the day doing what you know the kids really want to do: enjoying 141-acre Aquaventure Water Park. nassauparadiseisland.com

Junkanoo Beach

This beautiful public beach is favoured by locals as well as visitors, and is also a quick and easy walk from the cruise port. Here’s where you’ll find the tropically colourful painted beach shacks offering island delights to eat and drink, or where you can rent a kayak or treat yourself to a massage. This beach is an instagrammer’s delight.

From quiet and secluded beachfront properties to some of the most dazzling resorts situated on the famed beaches of The Bahamas, here are some of our favourites. SLS Baha Mar Resort

SLS is part of the sprawling Baha Mar resort complex, which means guests have the best of both worlds: a more intimate hotel experience and access to the Baha Mar complex’s amenities including all its pools, the massive casino, ESPA spa and the Jack Nicklaus Signature Golf Course. The pool has a slide for two and rooms have walk-in rainfall showers. sbe.com/hotels/sls-hotels/baha-mar

Graycliff Hotel

This boutique hotel is the historic face of Nassau, an estate dating back to 1776, that perches majestically on a limestone hillside overlooking downtown. It’s both a charming hotel where the guests such as Sir Winston Churchill, Aristotle Onassis and The Beatles have stayed and a tourist attraction in its own right. Besides the well-preserved and elegantly furnished Great House, you can tour the 250,000-bottle wine cellar, one of the largest in the world, and the humidor, where you can see master rollers in action. Overnighting guests are booked into colonial style rooms with four poster mahogany beds, and exceptional views. graycliff.com

Compass Point Beach Resort

The budget-minded traveller couldn’t do better than Compass Point Beach Resort, not far from the airport. The tropical-coloured, sea-front wooden huts inspired by the vibrants colours of carnival, are air conditioned and come with kitchenettes and private balconies. Staff are also helpful at suggesting and arranging affordable and interesting excursions. compasspointbeachresort.com

DECODER

Though Nassau has everything to recommend it, a day trip to one of the country’s out islands shouldn’t be missed to get the total Bahamian experience. Take a ferry or hop a plane for a quick flight to walk along pink sand beaches or swim with the pigs. Exuma

Your trip to the Bahamas really isn’t complete without an excursion to Exuma, a collection of 365 islands and cays, sand bars, reefs, grottos, translucent water, and even a huge swing in the middle of the ocean (at Coco Plum beach at low tide). Some of the islands are wild, others are tamed but privately inhabited by the rich and famous (Johnny Depp fell in love with Exuma when filming Pirates of the Caribbean and bought one of them), and others are waiting for you. This includes Big Major Cay, where you’ll find the real stars of Exuma: the wild pigs. In fact, Big Major Cay is also known as Pig Island. The porcines will swim up to your ferry waiting for a food handout. And, if they’re in a good mood you can swim with them. If you find yourself in the northern Great Guana Cay, make sure to stop at Lorraine’s Cafe, a beloved insiders’ secret. It’s off the beaten path but totally worth the detour for the delectable coconut bread. bahamas.com/islands/the-exumas

Andros

Hop a 20-minute flight from Nassau to Andros, a seemingly untouched slice of paradise where you can swim at one of the limestone island’s many blue holes, explore the vast underwater cave system, barrier reefs, mangrove flats and secluded pine forest. bahamas.com/islands/andros

Bimini Island

Ernest Hemingway liked to come to this westernmost district for deep-sea and bone fishing. How’s that for an endorsement? Other offshore fishermen followed suit, and it’s become a place to set fishing records. Not into fishing? ying face down on the massage table, listening to the soft sounds of pleasant music in the Zen-like treatment room, I grappled ever-so-slightly with a decision to make. As the massage therapist worked out the kinks in my back that real-world reality had worked in, I needed to decide whether or not to close my eyes and succumb to the physical and auditory pleasantries or keep them open to watch the brightly coloured koi swimming effortlessly below me. From the massage table, my small window to the world was positioned over the plexi-glass floor affording me an experience like nothing I had ever had. I opted to watch the fish—who seemed to float in space below me the longer I lay there. Once I rolled over, I closed my eyes and let the darkness of the aromatic eye pillow escort me to that space of in-and-out delight. And so it goes at W Punta de Mita where they take their mantra, “Detox. Retox. Repeat.” seriously and the memories made there don’t fade. If the sun, sand and cerulean blue waters are not enough for you to detox, the 4,000 square feet AWAY Spa, which could easily be a destination unto itself, offers ample opportunity. Purposefully built into the landscape and nestled around lush green trees, the

space was designed to resemble a cave, albeit a light and airy version. A vibrant statement chandelier crafted from glass flowers in the colours of a Mexican sunset, signature spa scent and curated spa playlist heighten the serene scene. Plush modern armchairs and coffee tables tempt you to recline and sip the signature chlorophyll water and fresh beverages from the adjacent juice bar as you prepare for your custom treatment, performed with organic, natural and effective spa products from Babor and Eminence. AWAY offers a full-service array of facials, massages and body and skin treatments and each room affords the guest the enviable opportunity of choosing to gaze down at the fish, up at the large palm leaves, or inward to reflect, unwind and, as the name indicates, get AWAY. Outside, guests can rest, relax and reflect on the secluded and spacious wooden relaxation deck built around a freshwater pool, complete with waterfall and a nearby labyrinth for walking meditation. Located at the northern tip of the Riviera Nayarit, W Punta de Mita pays homage to the local culture and indigenous art throughout the quaint property. From a sunset-inspired colour palette to showing local Huichol artistry, the design elements of the hotel embrace the region’s vivid spirit. The guest rooms vary in size, style and location. Some seem to rise straight out of the jungle, some are ocean front – a number with private pools – and others are lakefront, positioned on the fresh-water reservoir. The rooms have a simple, laid-back beach décor including brightly coloured paintings on the walls of surfers and touches like headboards on the beds made of old surfboard—apropos consid-

ering the area, which is just being discovered by the rest of us, has been no secret to surfers from around the globe for decades. It is the nod to local Huichol culture, however, that is nothing less than impressive. Few travellers outside this remote yet easy-to-reach area have the opportunity to be exposed to the brightly, hand-beaded designs of the indigenous people that have both religious and cultural significance. Based on traditional native textile designs, the tiled runway or Camino Huichol—is a central nervous system to the hotel, leading guests on a journey across the hotel and branching off to restaurants, bars and pool along the way. Crafted from 751,184 tiles, the “runway” depicts characters from Huichol legends, like a coyote, scorpion and the blue deer, a revered God in the culture. Take your own vision quest through the space, from the entry, through the Living Room, across the Wet Deck, and then up and over the beach to the majestic ocean.

nce guests have taken the ‘Detox’ step, it is time to ‘Retox’. The most difficult part about this phase is deciding where and how. The property has numerous dining and drinking options although nothing can compare to Mesa 1—one of the world’s most exclusive restaurants. Mesa 1 has one table, one seating and one table of guests per night. It goes without saying that reservations are required for this select seven-course dining extravaganza guaranteed to be an experience you will never forget. Spice Market is an easy way to “Retox” with fresh specialties from Vietnam, Thailand and Malaysia and a personal favourite of mine and anyone who loves the combination of fresh and spicey global foods. Of the numerous restaurants on site, the hands-down, most popular kid in class is Chevycheria (everyone calls him ‘Chevy’). The al fresco restaurant, with its thatched roof and 1950s-era Chevrolet truck, is the place to enjoy ceviche like you’ve never had before. Punta de Mita is known for its ceviche and in addition to a daily special based on the catch of the day, the Chevy menu includes ceviche with shrimp and scallops, tuna and avocado, coconut and blended signature dishes that, much like the AWAY Spa, can easily be a destination onto itself. After a successful ‘Retox’ there is only one thing left to do. Repeat. The W Punta de Mita is surrounded by picturesque towns and villages with shopping, dining and even a polo club that make for great day trips. But, if you never venture off the property and choose to instead, stick to the “Detox. Retox. Repeat.” theme, your trip will have been well worth it.

For the traveller eager to get the most out of a winter escape to vaunted Valais, Jacob Seguin reports on where to stay, what to drink and which slopes to conquer in this Swiss wunderland of mountain peaks and tasty eats.

ising majestically out of Switzerland’s Rhône basin, the wild and rugged canton of Valais covers an alpine expanse of more than 48 snow-capped peaks, surpassing 13,000 ft. Home to much more than just the world-famous Matterhorn, Valais encompasses verdant vineyards, impressive glaciers, fairytale chateaus, and some of the finest ski resorts in the world, including Verbier, Saas Fee and Portes du Soleil.

Skiing Alpine accomodations The people of Valais clearly know a thing or two about warding off winter’s chill: from sprawling palatial properties to classically Swiss boutique cabins, the accommodations in the canton strike the perfect balance between luxury comfort and rustic charm. While you’ll be delighted staying at any of the many four- and five-star properties that ring the most popular mountains in the region, 22 Summits Boutique Hotel has established a particular reputation for excellence. Blending a contemporary wooden exterior with an interior dripping in hunting lodge chic, Zermatt’s 22 Summits features lavishly appointed yet unquestionably cozy rooms in proximity to a museum, a nature park and the Matterhorn. The all-new Alaïa lodge caters to guests looking to be at the heart of the action, providing trendy Swiss lodge style with the latest modern conveniences nestled between both the ski lifts and golf course of the Crans-Montana resort. Your hotel concierge is also your gateway to a host of unmissable excursions in the pristine wilderness and sleepy mountain hamlets of Valais. While the region may be most famous for its skiing, it’s also a hotbed for tobogganing, mountain biking, snowshoeing and dogsledding. For fans of Switzerland’s iconic mountaineering dog breed with a centuries-old pedigree, we recommend taking a day trip to Barryland. Here, the barrel-collared St. Bernards are honoured with both a museum and a kennel full of excited, playful puppies.

To visit the powder-snow peaks of Valais, those looming bastions of arctic exhilaration, without doing a bit of skiing or snowboarding would be a crime against the mountains themselves. When in Valais, do as the Romans (who originally counted the canton as part of their Empire) would likely do and take to the slopes. Veteran and intermediate skiers will find some of the finest steeps, blacks and moguls in the world here, all well-maintained and picturesque in their ivory splendour. The Pas de Chavanette, otherwise known as the “Swiss Wall,” is a true joyride: less than a kilometre long, but with a vertical drop of 400 metres with a gradient as steep as 76 percent in some places. In Saas-Fee, the Galen Piste offers a 770 metre-descent to its valley floor, complete with breathtaking views of the Mischabel massif on the way down. For beginners and casual enthusiasts looking for something a bit more relaxed, one of the best ways to learn while taking in the mountainous majesty of Valais is at a ski touring park, where guides are on hand to supervise you through carefully signposted routes catering to all skill levels. The parks of Morgins and Torgon remain perennial favourites, each offering a variety of gentle paths through some of the canton’s most revered high and low altitude areas. For true lovers of the sport, many of the most desirable hotels in Valais offer exclusive Ski Safari passes: a customizable, multi-day program that allows visitors to explore a new ski area every day. Upgrade to the Plus version of the program to get gear and transit included—so you have more time to focus on refining your technique, of course!

Michelin-starred Chef Franck Reynaud’s Perch from Valais with caviar, cauliflower and verjus

Wine The vineyards of Valais, which account for a third of Switzerland’s total wine production, yield some remarkable vintages, an outcome of its geologically rich soil and surprisingly dry yet verdurous valley climate. Infused with a certain alpine terroir, the robust reds and delicate whites that define the canton’s offerings have won admirers across the world. At many of the region’s restaurants, you’ll have the opportunity to sample the emblematic Fendant and Syrah as well as Dole: a light-hearted red blend made from Pinot Noir and Gamay grapes that serves as the perfect pairing to many of the French and German dishes delicacies of the region. Situated as they are within the green foothills of the Valais countryside, the vineyards make for an incredible hiking destination, even in the winter. While almost all of the canton’s winemakers are happy to host visitors for tastings and cellar tours, we’d especially recommend a tour of Visperterminen, Europe’s highest vineyard. After a tasteful (and tasty) refresher on wine history in the St. Jodern Wine Cellar, you’ll embark on a scenic hike along the Bisse de Beitra escarpment trail and take in unbelievable views of the imposing Matterhorn. For something compelling right in the heart of the canton’s capital, Les Celliers de Sion offers a novel tasting experience within its storied barrel cellar, titillating all five senses in a playful wine tour like no other.

Food The collision of French and German cultural influences in Valais has given rise to a gastronomic tradition unique in all of Switzerland. While you’ll certainly find the Swiss staples of bread, chocolate and cheese (including the regional specialty, the oft-melted Raclette), the cuisine of Valais is foremostly defined by the innovative approach of its chefs and the use of fresh, organic produce and meats cultivated within the region’s steppes and valleys. To get a taste of this dynamic cuisine for yourself, we recommend embarking on the Sion Wine & Dine Tour, a guided traipse through the ancient castles, terraces and cellars of the canton’s capital that culminates in a lunch or dinner at one of Valais’ finest eateries. For a certified fine dining experience in the heart of the mountains, any of the restaurants curated by Gault & Millau are sure to satisfy your craving for true European delicacies. As a specific recommendation, the gourmet restaurant L’Ours, located in the foodie haven of Crans-Montana, certainly lives up to its Michelin Star, focusing on classic French flavours infused with an alpine twist. Dishes like pressed lamb with accompanying tomato confit and Oeuf mollet: a delicate soft-boiled egg served on quinoa with a robust ratatouille characterize the approach of Head Chef Franck Reynaud, who takes pride in serving up regional, seasonal fare. His passion shows in his cooking: each bite is infused with a deep, complex flavour that is both satisfying and replenishing after a day up on the slopes.

Wellness The unique geography (or rather, geology) of Valais has allowed the canton to broaden its descriptors and emerge as one of Switzerland’s leading wellness destinations. The secret to this success is found not upon its mountains, but under them: in the hot water that bubbles up to the surface and collects in the region’s many profoundly relaxing thermal baths. Rich in mineral content, these natural spas offer a warm respite from the chilly environs, soothing body and soul and leaving the skin reinvigorated. Thermalbad Brigerbad and Leukerbad Therme are top choices for the traveller in dire need of a good soak, offering multiple pools and majestic views of the surrounding mountains. For a carefully curated, holistic wellness experience, opt to stay at one of Valais’ exceptional wellness resorts and boutique hotels. The charming mountain towns of Zermatt and Crans-Montana can claim the highest concentration of these relaxation destinations, building on their idyllic surroundings with world-class spa offerings to realize true restorative bliss. A collection of classically alpine-style chalets under the shadow of the Matterhorn, the Cervo Mountain Resort in Zermatt combines the bliss of its natural environs with the luxurious amenities of its Mountain Ashram Spa, which combines a steam bath, bhutanese bath, ritual room and sauna to help guests reach new heights (literally!) of relaxation. In Saas-Fee, check in at the regal yet rustic Walliserhof Grand-Hotel & Spa: a new five-star, 74-room property that looks as if it jumped out of a Wes Anderson film and pampers guests within its oak-and-fur walls with extensive massage, bath and cosmetic treatment services.

HONG

ON THE

KONG We explore the famed harbour town from city to beach by Jim Byers

DOUBLE

TRAVEL TWO WAYS B O L D T R A V E L L E R . C A T H E B O L D L I S T 66

One of the things that keeps me coming back to Hong Kong is the number of worlds stretched out right in front of you. You can take in a show at the new M+ Museum in bustling West Kowloon. Less than an hour later you can be admiring a temple decorated in shades of fiery red and gold alongside a beautiful beach on Peng Chau Island. Stay: The W Hotel is a stylish, five-star property in West Kowloon. It’s connected to the Elements shopping mall and has the highest outdoor swimming pool in Hong Kong. The Eaton Hong Kong is a bright, clean, convenient hotel on Nathan Road in the Jordan neighbourhood. It’s rated four-stars and also is eco-certified. I had a great stay there on my last visit. Eat: Located on the 102nd floor at the Ritz Carlton, Tin Lung Heen serves up authentic Cantonese cuisine, including dim sum. The views of Hong Kong and Victoria Harbour are truly spectacular. Explore: The Yau Ma Tei Fruit Market, which opens at 6 a.m., is a great place to shop in the West Kowloon Cultural District. Look for luscious, fresh pineapples and plums, as well as Asian delicacies such as colourful dragon fruit. I loved visiting in the pre-dawn hours on my last trip.

WEST KOWLOON CULTURAL DISTRICT (WKCD) This is the newest area of Hong Kong, built on reclaimed land in storied Victoria Harbour over the past few years. The district is believed to be one of the largest public projects in the world, with 17 cultural venues and a central park. It’s also home to new, world-class museums, the Hong Kong Palace Museum and the M+. The latter is said to be Asia’s first global museum of contemporary visual culture. The Hong Kong Palace Museum will focus on Chinese art and culture and is slated to open mid-2022. The WKCD also includes one of the world’s most strikingly modern designs in the Xiqu Centre, which stages Chinese opera performances. The building features a tall, wavy, metallic exterior with thousands of aluminum ribs. You enter and find yourself under waves of brilliant white, thin panels and a giant, red and white coloured light fixture that’s meant to mimic a grand chandelier. It’s truly one of the most spectacular bits of architecture you’ll ever see. The WKCD has quickly become the cultural and artistic centre of Hong Kong, a place enjoyed by locals and visitors alike. Not only is the district a hip and happening region of its own, but the views of central Hong Kong and the peaks of Hong Kong Island are astonishing. You’ll catch amazing sunsets from the west side of the district. Designers here have created plenty of open space, with wide expanses of deep green lawn, folding wooden chairs to relax on, as well as palm trees and deciduous trees. It’s less than one kilometre from the ferry dock in Tsim Sha Tsui to the WKCD. You also can take public transit to the West Kowloon station, itself an architectural masterpiece. The West Kowloon Cultural District also includes parts of two great Hong Kong neighbourhoods; Jordan and Yau Ma Tei. Jordan is home to Hong Kong’s famous night market, where you can find everything from watches to antiques. There also are a plethora of casual food stalls. Yau Ma Tei is home to carefully crafted historic buildings such as the Yau Ma Tei Theatre and the Tong Lau building on Shanghai Street.

Eat: Wing On Street is abuzz with traditional Hong Kong cafes such as Kee Sum that specialize in foods such as deep-fried shrimp toast or, yum, ice cream pineapple bun. Try Bo Ma for delicious milk tea. Explore: One of the coolest places to check out on Peng Chau is the Fook Yuen Leather Factory, an historic building erected in the 1930s. Today’s owners have transformed the grounds into a wildly colourful “secret garden,” with odd, fascinating displays made up of old chairs, bicycles, and even a yellow submarine.

PENG CHAU ISLAND This horseshoe-shaped island is a tiny little slice of old-style Hong Kong, with a pretty beach, casual seafood restaurants and fascinating temples. You know you’re in a different place than Kowloon when you get off your boat and find dozens of folks scattered about on old plastic chairs, playing mah jong or other games. Some locals have donated exercise bikes, which residents and visitors can use to work off a big lunch in a shady spot overlooking the sea. There are no cars allowed on the island, so this is a wonderful spot for a getaway. The island was once home to buzzing factories that made porcelain and other materials. They’re mostly closed now, but make excellent Instagram photo material. Explorers will find small art galleries scattered about the island, as well. Lung Mo Temple is built across the road from crescent-shaped Tung Wan Beach, which makes sense when you understand that Lung Mo is a Chinese goddess of water. Tin Hau Temple has a bronze bell that dates to the 1700s. Take the gentle hike to the top of 96-metre-high Finger Hill and enjoy the view of Ngan Chau Tsai Pavilion, an open-air affair with a graceful green roof. Try a walk down a short path to the right of the pavilion for great views of orange-hued rocks along the water. Another great Instagram spot is Tai Lei Island, a tiny drop of an island that’s connected to Peng Chau by a short bridge. There’s a small beach with a rock that looks like a turtle emerging from the ocean. Peng Chau’s small markets teeming with locals, coffee and tea shops, and more, keep it buzzing. “Peng Chau,” says Hong Kong tour guide Olivia Tang, “has many goodies packed in a small box.”

FINDING THE JOY

IN RIVER CRUISING - By Liz Fleming -

CRUISE CHECKLIST B O L D T R A V E L L E R . C A T H E B O L D L I S T 70

riving a rental car through a country when you can’t read the signage really ups the vacation tension factor. It’s fun to see the sights of course, but not exactly relaxing. That’s why boarding our Emerald Cruise Line ship proved to be such a contrast. We’d loved our days on the road, but there was something soothing about handing over travel control to the white-uniformed captain and his crew. We’d see all the sights between Amsterdam and Budapest but someone else would be in charge of getting us there—the lazy joys of river cruising. The fun began before we set sail with a private boat tour of the canals of Amsterdam. Gliding along ancient waterways was the perfect way to settle into a cruising state of mind. Later, after boarding, we watched through the glass doors of our suite as the ship pulled away from the dock. We unpacked and congratulated ourselves for booking this mode of travel. There would be no more traffic and no schlepping of suitcases from car to hotel for a week. We had a floating home! But lovely as our suite was, we didn’t linger—there was too much to see and do

“AFTERWARDS, WE HEADED TO OUR SUITE TO WATCH THE LIGHTS ON THE RIVER BANK TWINKLING IN THE DARKNESS.”

We started with a visit to the bridge, and drinks on the sunny upper deck. The captain was eager to explain how his huge collection of dials and gauges worked and even offered us a chance to take the wheel. We’d have happily chatted with him and lolled in the sun forever but soon had to head to the lounge for our first port talk. Never having explored this part of Europe, we found the daily port talk covering the next day’s adventures made it easy to plan. Emerald offers shore excursions each day, most of which are walking or small group bus tours of local sites, but you’re also welcome to explore on your own. Each port talk gives you an orientation to the next day’s stop, explaining whether you’ll dock in easy walking distance to a town or if you’ll need transportation. You can choose between what Emerald offers, or hire one of the cabs or private tour companies that are always gathered at the dock. A word to the wise – if you choose to explore on your own, be sure to arrange for a return that’s at least an hour in advance of sailing. If you’re not on board when the ship leaves, it will be up to you to make your way to the next port! After the port talk, dinner was next on the agenda and we were impressed not only by the extensive menu choices and the elegant dining room décor but also by the service. The chef and his team pride themselves on creating menus that celebrate the cuisine of each region the ship sails through, so our first night’s dinner included such Dutch treats as herring, bitterballen, krokets, rookworst (sausages) and snert (a traditional pea soup). We tried a little of everything, trying hard to remember that each day would bring a different collection of culinary treats. Is it any wonder that cruise guests come home heavier than when they left? The post-dinner entertainment that evening was low-key but charming—a local band who came aboard to play traditional Dutch tunes in the lounge. Afterwards, we headed to our suite to watch the lights on the river bank twinkling in the darkness. We knew that the week ahead would be filled with the wonders of Germany, Austria, Slovakia and Hungary. There would be fascinating medieval towns and hilltop castles to explore, and we’d ride the ship’s bikes through the countryside and along the rivers our ship was sailing. We’d visit wineries and enjoy guided tours of not one, but four exciting capital cities along the way—and Emerald’s talented staff and crew would handle every detail. We were already captivated by the magic of river cruising and it was only day one. .

a variety of activities including paddle boarding and snorkelling. Emerald Azzurra will also feature three tenders and two zodiacs for shore landings. Additionally, the ship features an onboard wellness centre complete with gym and spa. But we can’t ignore river cruising. One of the most popular aspects of this mode of travel is the way it allows for experiential travel. River cruises stop in small ports where guests can simply walk off the ship and explore. The intimacy of river cruising also appeals to guests. For example, Emerald Cruises’ Star-Ships sailing on European rivers carry a maximum of 180 passengers. Guests appreciate that they get to know the crew and other passengers during their time onboard. Emerald Cruises, named Best River Cruise Line for Value by the Cruise Critic Editors’ Picks Awards for five years running, also sail on the Mekong, as well as a chartered river ship sailing the Russian waterways.

Air Quality in Cabin

Ships are equipped with air circulation systems that ensure there is no re-circulation of inside air on board the ship. When you are relaxing in your suite you will be breathing air from outside the ship that is channelled directly to your suite. The air will also be released from your suite directly to the outside.

Physical Distancing procedures and mask procedures

Cruise Control What you need to know when choosing to cruise now.

Let’s start with the news. Many river cruise companies—take Emerald Cruises, for example, are dipping toes into the deeper waters of the sea. In many ways, a ship acts like a floating hotel—guests can unpack once, settle into their staterooms, and wake up every day in a new port. It’s an ideal way to visit multiple cities and countries without having to navigate trains and planes or having to live out of your suitcase. The 360-foot long Emerald Azzurra is Emerald Cruises’ first foray into ocean cruising. The superyacht has been custom-designed to cruise the waters of the Adriatic Coast, the Red Sea, the Black Sea and the Mediterranean, offering guests an intimate, boutique yachting experience. Emerald Azzurra will call on multiple ports in Greece, Italy, Croatia, Montenegro, France, Turkey, Cyprus, Malta, Spain, Israel, Jordan and Egypt. As well as exploring the major highlights in these regions, guests will also have unique access to the smaller ports and harbours only accessible by small yachts, giving them the freedom to explore the authentic local towns and villages off the beaten tourist track. As the newest superyacht in its class sailing these waters, Emerald Azzurra’s spacious balcony staterooms and suites, which start at more than 285 ft², have been designed with a modern feel and upscale amenities. Unlike other ships in this class, 88 percent of the cabins feature balconies from which to admire the breathtaking views. In the true style of a superyacht, the ship features a marina platform from which guests can take part in

The cruise line has enacted new onboard policies to help keep guests safe and healthy. For example, checking in and out of the ship at ports can now be handled in a completely contact-free way. A phased embarkation allows guests to arrive and depart from the Star-Ship smoothly and with safe social proximity in mind. Contact-free hand sanitizer dispensers will be readily available in all public spaces and guest corridors on board, while automated doors and contact-free guest servicing will minimize the number of touchpoints. Face masks should be carried by guests at all times. However, they are required to be worn when moving about the ship where social distancing is not possible. The on board food and beverage service has been adapted to ensure extra care is taken in order to minimize social contact. In port, guests will travel in smaller groups, allowing for a more intimate travel experience, while respecting social proximity and destination specific regulations. To enhance your sightseeing, you can listen to your tour guide through your individual headset, allowing you to be in your own personal space.

Yes, it’s wonderful to be wowed, but it’s even better to be educated. Ports of call in between Cartagena and Lima included a day’s fascinating transit through the Panama Canal; we had so many highly credentialed experts on board as part of the Eclipse’s Discovery Team, it was hard to decide where to start—with the Canal historian, the biologist, one of the two geologists, the anthropologist, the ornithologist, the naturalist, and more. Our other ports of call included a magical morning in the Utria National Natural Park (northern Colombia), enjoying the wildlife, the spectacular flora, and the peaceful mangroves; a thrilling few hours off the coast of southern Peru, around Isla Guañape, cruising in Zodiacs, savouring playful encounters with spirited South American sea lions and tuxedoed Humboldt penguins; an evening in Salaverry, marvelling at the majestic tricks and turns of the famous Paso horses and their skillful gauchos; and in stark contrast to the rainforests and jungles, a day in Trujillo, Peru’s second-largest city, exploring history and culture.

ur helicopter hovered, it seemed, a bare 100 feet above the glittering cerulean waters of the Caribbean, dotted with the San Blas islands, off the coast of Panama. This was our first day out of port (Cartagena), on an extraordinary 10-day journey (which would terminate in Lima), with Scenic Luxury Cruises & Tours, cruising on the uncompromisingly luxurious explorer yacht, Eclipse. I had eagerly signed up for one of the helicopter rides the ship had scheduled today. Equipped with not one, but twin, state-of-art (James Bond-looking, clad in glistening black) helicopters, the Eclipse has a crackerjack aircrew on board; they were busy all day, as groups of six passengers eagerly hopped into the super-quiet cabin. (Bose headsets also help to suppress extraneous noise, all the better to hear the pilot describe all that we were seeing below.) There are more than 350 islands in this archipelago, some 50 of them inhabited by the Guna people. There are also so many things to see below in the jade and azure undulating waters—a few surprising shipwrecks, schools of fish on the hunt for smaller prey, and the occasional lone fisherman plying his luck from a canoe. This helicopter ride will stay with me forever—a rare glimpse into the sapphire sea from above; this singular journey was so very typical of the care and thought that Scenic puts into all its cruise itineraries and excursions. From takeoff to landing back on the deck of the Eclipse, it was a thrill.

While I had sailed with Scenic previously (a delightful river cruise in France), this was a rare opportunity to experience the company’s recently christened (Dame Helen Mirren is the vessel’s godmother), Eclipse, billed as the world’s first discovery yacht, and worthy, indeed, of that epithet. My voyage took place during late October/early November, and the Halloween gala and specialty party feast the chefs organized was yet another fab shindig that will remain indelibly etched in my brain: The day we crossed the equator, we had a costume party to celebrate the loss of our equatorial virginity. Sailors who have never crossed the equator are Slimy Pollywogs, but after the crossing, become Trusty Shellbacks, sons and daughters of Neptune. (I even have a floridly calligraphed certificate to prove my seaworthiness!) If a helicopter ride captivates your fancy, you’ll also be interested in taking a ride on the ship’s submersive, or baby submarine. It cannot be launched at all ports (maritime laws for each region, local underwater ecology, the weather and the tides dictate this), but if you get a chance to do it—you must. The submarine can go down to 1,000 feet and it accommodates six people. With glass vistas all around and swivel seats, you can have figurative eyes in the back of your head. Even if you do not have the opportunity to go underwater, there is so much to do on board—and a spa/yoga/Pilates/gym area, with 6,000 serene square feet. You’ll be hard-pressed, frankly, to leave your comfy veranda suite (Eclipse can accommodate 228 guests, and for polar expeditions, 200), as they are among the most elegantly decorated and designed I’ve ever stayed in at sea—safety, sustainability, discovery and luxury are all married into the design. The nearly one dozen restaurants on board will tickle your palate, particularly Lumère, the contemporary French restaurant, and Koko’s, a marvel of an Asian-fusion eatery and sake bar, with a private teppanyaki open-grill restaurant tucked into a secluded area. It is also worth noting that Eclipse boasts a 1:1 guest:crew ratio, so you’ll experience cosseting service at the highest level. And, best of all, Eclipse cruises are all-inclusive, save for spa treatments—and those helicopter and submarine outings.

What You Need to know When Cruising with Scenic Cruises What does it take to get on board?

Physical distancing and masking procedures

Scenic requires all guests to have received the required dose(s) of an approved Covid-19 vaccine. Guests are also required to complete a pre-departure medical health evaluation. Crew goes through daily health and temperature checks. Guests undergo a mandatory briefing and health screening – which may include a rapid COVID test before boarding the Space Ship. A negative Covid PCR test, taken within 72 hours of departure, is required to board the ship. For guests who require a Covid test before returning home, the line will provide a complimentary test near the end of their cruise.

Checking in and out of the ship at ports is now completely contact-free. A phased embarkation allows guests to arrive and depart smoothly and with safe social proximity. Contact-free hand sanitizer dispensers are available in all public spaces and guest corridors on board, while automated doors and contactfree guest servicing minimizes the number of touchpoints. Face masks are required to be worn by crew at all times and by guests in public areas. Scenic provides guests with masks. The food and beverage service has been adapted to ensure extra care is taken in order to minimize social contact with dining tables restricted to no more than six (excepting the chef’s table) and staff served buffets. In port, guests will travel in smaller groups, while respecting social proximity and destination specific regulations. All coaches are sanitized daily and kept at half capacity to ensure ample space between guests.

AIR QUALITY Scenic Space Ships are equipped with air circulation systems that ensure there is no re-circulation of inside air anywhere on board the ship. All cabins/suites have individual controls and all air flow comes from filtered outside air.

Current Capacity Limits There are no limits on capacity at this time as Scenic Space Ships provide ample public space to accommodate far more guests than are both currently sailing and if the ships were filled. The ships carry between 96 and 171. Guests appreciate that they get to know the crew and other passengers during their time onboard.

Finding wellness within the remoteness of BC’s Great Bear Rainforest - By Melissa MacMullin -

I

magine a place so secluded and inseparable from nature that simply reaching it makes one feel like the protagonist of a classical odyssey. Step off the plane, breathe in the invigorating scent of cedar trees that mingles with the crisp mountain air and taste the salinity of the ocean breeze on your tongue. Eagles soar overhead. The weight of the world evaporates. You’ve arrived at Nimmo Bay Wilderness Resort, the very definition of a secret hideaway nestled into the old growth forests of British Columbia’s Great Bear Rainforest. Its remote location informs an all-inclusive luxury retreat that offers highly personalized (staff are two to a guest), purposeful experiences far from the bustle. Another luxury: the resort’s proximity to 50,000 square miles of sprawling coastal wilderness provides a plethora of opportunities for both adventure and relaxation seekers.

What began in 1981 as a humble fishing lodge, Nimmo Bay is now a retreat for the enviro-mindful: a sustainable, eco-friendly resort, with nine cabins, some that can sleep up to 18 people. Family-owned, it is managed by the oldest son of the Murray clan. It depends on water powered electricity systems and solar energy to run more than 80 percent of the establishment. In its operations, the resort team supports local farms, uses local products, compost, recycle and cut out excess waste, reduces greenhouse gas emissions, promotes renewable energy, and is involved with fin-fishing activism and funding pivotal wildlife research. Most recently, resort management assisted in B.C.’s decision to ban the hunting of grizzly bears as a trophy sport by offering hunters trips for two to their resort in exchange for their coveted license. Now that’s what we call a wellness win-win. nimmobay.com
