Up Close: From the Editor

I feel like a bird that has been let out of its cage! As various locations throughout the United States reopen from the Covid-19 shutdown, my suitcase beckons. But where should I go first? I thought I had seen it all, done it all and experienced everything I needed to experience before the pandemic. However, after being shut in for more than two months, I eagerly scanned my emails, press releases and google searches in need of some kind of a getaway. It was then I realized it wasn’t necessarily a visit to a brand new or unknown destination I’ve never visited before. It wasn’t that I lacked the challenge of a first-of-its-kind adventure. It wasn’t even the anticipation of a unique first-time ever experience. No. It was the change of scenery I longed for, the spur-ofthe moment shopping excursion or simple bike ride to the park. The very knowledge that we “weren’t suppose to” was enough to make me “want to.” So even if it’s a bit early to venture too far away from the securities of home and you aren’t real sure what is safe for you or what isn’t, I challenge you to take the time to make a list of what is most important to you on an extended weekend getaway. Is it simply relaxation? Participation in a favorite game or sport? A search for the next item to your life-long collection? Regardless of what is important to you, we all have at least one thing in common. At some point during the day, we must eat. So this issue is dedicated to food fun. Some want an adventure while others want to try a new dish. Whatever is important to you, we at the Weekender Extended trust you will find at least one new idea to try. Good Luck! Cooking With a Purpose

Every holiday has its traditions. Valentine’s Day has chocolate. St. Patrick’s Day provides your choice of Irish stew or Reubens. Easter uses eggs in numerous ways. Memorial Day is full of cookouts while Independence Day just isn’t the same without picnics and fireworks. Halloween is the season for all things pumpkin quickly followed by Thanksgiving which is all about the turkey. In addition to programs, parties and presents, Christmas provides the opportunity for the most varieties of special food. New Year’s Day is known for snack foods during mega parades celebrating a whole new round of holiday celebrations – and the foods associated with each. As much as we like to repeat those rituals we have enjoyed for decades, there eventually comes a time when it just isn’t possible. Case in point: -8- | WEEKENDEREXTENDED.COM ~ July, 2020

failing health, bad weather, wartime . . . and the year 2020. A prime example of this is the many regions which have cancelled their annual fairs. There goes the carnival rides, the grandstand shows, all manner of agricultural competitions and our favorite fun fair foods. What is a trip to the fair without corndogs, cotton candy, kettle corn, funnel cakes and snow cones? Answer: an expensive hike in the heat. Here’s a recipe for a foodie fun treat to help you stay cool.

Snow Cones

In a small saucepan, mix together 2 c. sugar and 1 c. water. Bring to a boil, reduce heat and simmer 3-5 minutes. Add 1 package Kool-Aid, any flavor. Cool completely. Pour over crushed ice. If you are in an area where there is no fair, or it has been cancelled,

try creating your own. Organize a neighborhood picnic in your front yards so you can visit from a distance. Show a movie outside. Have a children’s tricycle race or a pet parade. Any of these events are an excellent place to debut your creativity. The summer opportunities are endless. Combine them all and it will create a neighborhood mini festival atmosphere. Get out there and make memories. Speaking of which, here’s a chance to revisit your childhood lemonade stand. It’s a good thing you know how to make something both tasty and refreshing. If you do actually get to attend a fair, enjoy a frozen lemonade for me and don’t forget to be very selective about taking home all the free souvenirs: sunburn vertigo and covid19. Those are traditions we can do without.

Raw Cacao Smoothie bowl Makes 1 serving Ingredients: 1/2 Cup of Hemp milk 1/2 frozen banana 1/2 small avocado 1 scoop of vanilla flavored vegan protein Ice

Try Unique Foods

There are many regional specialty foods around Arkansas. The following were actually created first in the state. Cheese dip is a creation of the Donnelly Family dating back to 1935 (that’s a decade before nachos were invented!). The white version of the dish was created at the Blue Mesa Grill in Little Rock in the 1980s. Fried pickles were created at the Duchess Drive In in Atkins, Arkansas by Bernell Austin. The Tomolive was also created in Atkins, a small olive-sized and colored baby tomato pickled in brine that imparts a flavor similar to green tomato relish. It was created by Atkins Pickle Company researcher Robert Switzer and is used mainly as a cocktail garnish. Cavender’s Greek Seasoning, popular around the world, was created and is manufactured in Harrison, Arkansas by the second and third generations of Spike Cavender’s family. Grapette and Orangette sodas were created by William Tyndle Fooks in Camden, Arkansas. The recipes were purchased by the Walmart corporation and the two beverages are sold today under their own names as the house brand of grape and orange soda. Fried chicken and spaghetti served together is a regional specialty of the Arkansas Ozarks, combining the pastas and sauces brought to the area by immigrants from Rome and paired with the soul food style fried chicken of the Arkansas Delta. Arkansas delights in a number of different pies, but it is the possum pie - a layered pie of sweetened cream cheese, chocolate custard and whipped cream - that is almost exclusively found in Arkansas and which can be discovered all over the state. The Searcy County Chocolate Roll is a confection of cocoa, confectioner’s sugar and butter rolled like a

cinnamon roll but with a pie-crust like pastry, baked and served hot or cold. The process of baking flattens the roll.

First of all, Kansas is known as the “Sunflower State.” So why wouldn’t sunflower seeds be at the top of the list for a great snack? Kansas designated the wild native sunflower as official state flower and floral emblem in 1903. Native Americans were using native sunflowers for food over 3,000 years ago. These wild sunflower seeds were only about 5 mm. long. Over hundreds of years and careful husbandry (selecting only the largest seeds for cultivation), the Plains tribes began the development of today’s large modern sunflower, rich with oil.

Sunflower heads consist of 1,000 to 2,000 individual flowers joined together by a receptacle base. The large petals around the edge of a head are actually individual ray flowers, which do not develop into seed. There are more than 60 species of sunflowers. The native sunflower grows to 15 feet tall with flower heads up to 2 feet in diameter, and can produce over 1,000 seeds from one plant. The flower head turns and faces the sun throughout the day - tracking the sun’s movement. Sunflower seeds are rich in protein and yield a high-quality vegetable oil. You can eat sunflower seeds raw or buy dry roasted seeds with or without the shell. They also come in flavored varieties. Sunflower seeds are popular in trail mix, multi-grain bread and nutrition bars, as well as for snacking straight from the bag. They’re rich in healthy fats, bene-

If you’re interested you need to act now, looking to have spaces filled and stocked no later than July 6th so we can be ready for opening day July 11th. If needed we can put some vendors inside the Twin Oaks Event Center next door to keep cool and have shade/restrooms. The Donut Trail

In Butler County, just north of Dayton, nine donut shops serve thousands of their tasty treats to customers from across the nation. Those who bring their official Donut Trail passport may have it stamped and can receive an official Donut Trail T-shirt once it is completed and turned in to the visitor’s bureau. Some 2,900 donut customers have completed the trail and received their shirt, says Tracy Kocher, marketing director for the visitor’s bureau. Customers have come from 33 states and five foreign countries. She says 50 percent of the people who’ve turned in passports are from outside Butler County. The idea for the trail grew out of the visitor’s bureau’s mission. “Culinary tourism is a very large trend right now. People travel around the -48- | WEEKENDEREXTENDED.COM ~ July, 2020

The beautiful thing about the Donut Trail is that you visit places from Oxford to West Chester so people get into communities they might not otherwise have visited.” The visitors bureau says the county has one donut shop for every 20,000 residents but not just any donut shop qualifies. Members of the donut trail must be non-corporate, or franchise locations that are clearly located in Butler County and their primary business is donuts. Other retailers have joined the trend. For example a pottery studio offers a whole line of pottery with a donut theme. Diana Ramsey, owner of Kelly’s Bakery in Hamilton,

says the response has been unbelievable. Most days her shop will have several trail-goers, usually in families or small groups, stopping in to get their passports stamped. There’s no time limit for completing the trail and a purchase is not required. Specialty donuts like The Buckeye, a yeast donut with peanut butter crème filling and chocolate icing. An Interview With B By Allison Kugel The current state of our world has opened our eyes, shifted priorities, compelled us to action and leveled society’s playing field. Recent events call upon all of us to, both, embrace and acknowledge our vulnerabilities and muster our collective strength. Regardless of what race, religion, ethnicity, or socio-economic circumstances we hold, we are forever bound together by these extraordinary times we live in. While our essential workers on the front lines keeping the nuts and bolts of society running and keeping us informed; elements like nature, family, friends, and the arts lift our spirits. Music has the power to inspire, heal, help us process our anger or heartbreak, prompt reflection, or make us grow nostalgic. Therefore, it should continue to be celebrated, even in the tensest of times. Some of my favorite interview subjects have been musicians, because of the philosophical and poetic nature many of them share. Legendary Poison frontman, Bret Michaels, is one of those people for me. We first met in 2007 when I interviewed him about his then VH1 reality show, Rock of Love. I enjoyed Michael’s company then, and thirteen years later I still do. We resumed our conversation as it pertains to his now four-decade multi-platinum-selling music career, how some much-publicized health challenges have strengthened his spirit and resolve, his love of touring and his inexhaustible energy for new projects. Bret Michael’s band Poison, in a joint statement with Motley Crue, Def Leppard and Joan Jett and the Blackhearts, announced their anticipated 2020 tour would be postponed until 2021. In the interim, Michaels is excited to discuss the recent release of his personal scrapbook memoir, titled, Auto-Scrap-Ography. The book -56- | WEEKENDEREXTENDED.COM ~ July, 2020

is an amalgamation of Michael’s timestamped photographs, inspirational musings, landmark memories, and deep thoughts, penned by the singer, himself. Allison Kugel: This is the first interview I am releasing since the start of this pandemic. I have been reticent about putting anything entertainment-related out there. Bret Michaels: We use the words “tough times,” but these are also confusing times. Some people are saying “Don’t worry about it,” while others like me and you are saying, “Are you


Bret Michaels: and your family safe?” I’m in the highest risk category for COVID-19, being a Type 1 Diabetic since the age of six. So, my whole family have been really good about wearing masks and gloves and being safe until we get closer to the shore, if you know what I mean. I’ve also been trying to inject as much positivity into everything as I can without it sounding phony. I call myself a drealist. I dream and I dream big, but I’m also a realist.

Allison Kugel: I agree with you about injecting positivity into challenging situations. My son has been complaining that he hasn’t seen his friends, and he jokes that our lives have become like the movie Groundhog Day. He’ll say, “We take the same walk everyday mom!” I say to him, “Look how blue the sky is. Look at that beautiful tree. Try and find the simple things that you may have overlooked under more normal circumstances.” Bret Michaels: One thousand percent! I went out and took pictures with my kids. And recently I got a bucket of paint out because our sports court has needed painting for ten years, and I’d been avoiding it. I’ve put myself into every project I could find. It keeps you positive and it keeps your hands busy. If you are taking a walk and looking at a tree, it keeps your mind on positive stuff. It works. Allison Kugel: Would you say that some of the things you previously took for granted or overlooked, you are now noticing or rediscovering? Bret Michaels: Completely. I have a ranch in Arizona, and I went through everything that I have hoarded. I de-hoarded it (laugh). Then I went and started painting stuff. I’m a motor sports, outdoor kind of guy, so I ripped apart engines, like Go Kart engines. I also began noticing some furniture in need of a little love and TLC. Allison Kugel: I can’t speak for other journal-

ists, but for me this work has been a giant case study in the human experience. I’ve learned that everybody’s life has a master theme. Your Type 1 Diabetes has been well documented, as was your brain hemorrhage some years back. You also had some big accidents that required rehabilitation. I feel that your master theme in this life is overcoming limitations of the physical body. Bret Michaels: That makes sense. When people ask me, “How do you overcome?” I say this is the card I was dealt and rather then become a victim to it and have self-pity, I chose to take the path of being spiritually and mentally positive. I want to go on record and thank my parents for that. My dad was active and a have fun, get it done kind of guy. My mom is the same. She opened the first youth diabetic camp in Harrisburg, Pennsylvania because I was the only kid in my entire class growing up who had diabetes. I send so many kids to diabetic camp so they can see what I experienced. Allison Kugel: The right perspective makes all the difference in your life. Bret Michaels: All the difference! With coronavirus, we don’t know the exact date it was created or where it came from, so rather than focus on that, why don’t we start focusing on the cities that are doing better, and what places like New York are doing to make it better. We have already established that it’s a horrific virus. Now, what do we do to help each other get through it? And the amount of anxiety and depression this has caused, and economic turmoil; we are going to have to keep an eye on each other. We have to have each other’s backs. Allison Kugel: Let’s talk about your new book, Auto-Scrap-Ography. How did you manage to sit down and write this book?
