30 THINGS TO DO: Have Fun with Food

PEOPLE TO SEE: Logan Mize

Up Close: From the Editor I asked last month in my editorial where you will be when the light goes out? If you haven’t made a choice yet, there is precious little time. The first section in this issue is focused on special activities and celebrations based around the eclipse on Aug. 21. So most are scheduling an extended weekend getaway starting the Friday before, on Aug. 18th, with the viewing as the grand finale. Suggestions start on page 6. Remember to obtain proper eye protection for viewing. Most event destinations are providing proper glasses. Staring at the sun with unprotected eyes can lead to solar retinopathy, which occurs when too much ultraviolent light floods the retina and damages the eye. The eclipse may be especially dangerous for the millions of Americans just outside the path of the total eclipse in areas where the sun will only be

partially obscured. “Even when 99 percent of the sun’s surface [the photosphere] is obscured during the partial phases of a solar eclipse, the remaining crescent sun is still intense enough to cause a retinal burn,” NASA officials said on their eclipse website. Another thing to remember is that the retina has no pain receptors, so you may not realize you’ve damaged your vision until it’s permanent. If you can’t see the eclipse in person you can see NASA’s livestream of the event — no eye protection required. See article on P. 9. Remember, if you do not live in the direct path, you will not be able to witness the full impact. So you must travel to a designated route. The task is difficult, because it is natural to believe that if you happen to be close to the path, you will be able to see something that is “pretty good.”But just like the

person who can smell the meal outside of the steakhouse and not enter remains hungry, so do those who observe the eclipse from outside the path of totality. Then at the end of the day they are wondering what, indeed, all the fuss was about. Speaking of restaurant aromas, The next featured section this month is foodie fun. There are several reviews of top BBQ restaurants. I can still smell that luscious BBQ smoke reaching the parking lot when I arrive. See page 32. Then there are the foodie tours. I wasn’t sure I could handle all the walking from place to place on my first ever tour. However, I soon learned that a stop to sample the featured entree’s while learning its history was enough time to gather enough energy to continue to the next delicious bite. Start on p. 38. Until next time... Enjoy your extended weekend getaway! August, 2017~ WEEKENDEREXTENDED.COM | -7-

his is a once-in-a-lifetime event in Southern Illinois A total solar eclipse will roll over the United States. Of all the places with a good view, Southern Illinois will go dark for longer than anywhere else in the country—a whopping total of 2 minutes and 42 seconds. But a special celestial event is just one reason to explore this gorgeous region. Among the reasons to attend: the Moonstock Music Festival at Walker’s Bluff, a four-day celebration headlined by a concert by Ozzy Osbourne. On Monday, August 21, as the total solar eclipse nears, the Black Sabbath frontman will sing “Bark at the Moon” at the precise moment the sky turns black. Tickets start at $85 for a single-day pass.

To commemorate this epic event, Walker’s Bluff will release a new wine, Solar Red. Solar Red will be packaged in a black bottle with an image of Ozzy and a total solar eclipse. It will be distributed nationally.

Things To Do:

Get Outside and Witness the Solar Eclipse To encourage Americans to get outside for the 2017 solar eclipse, Hipcamp [https://www. hipcamp.com/discover]—a startup that creates new campsites by unlocking access to beautiful private lands such as nature preserves, farms, and ranches—is sharing 5 essential eclipse facts and 772 places to camp in the path of totality. 1. THE SUN WILL PUT A RING ON ITIn the last few seconds before the eclipse, sunlight streaming through the Moon’s valleys creates a bright flash of light on the side of the moon known as the “diamond ring effect.” 2. CORONA ISN’T JUST A DRINKThat glowing light halo around the dark solar eclipse has a name—it’s the “corona,” described by NASA as “the sun’s tenuous atmosphere.” 3. THE 7-YEAR ITCH IS REALThe last solar eclipse on the west coast occurred 38 years ago, so you don’t want to miss this opportunity. If you miss this eclipse, you’ll have to wait until April 8, 2024 for the next one. It will carve a path from Maine to Texas. The 2017 eclipse will run from South Carolina to Oregon. 4. OUR PLANETS GO THE DISTANCEThe Earth, Moon, and Sun are currently perfect distances from each other, meaning we can see the corona during this eclipse. Millions of years ago, -10- | WEEKENDEREXTENDED.COM ~ August 2017

it was blocked. And millions of years in the future, total eclipses won’t be possible because the Moon will appear smaller than the sun. 5. ‘GREECE’ IS THE WORDThe earliest predicted solar eclipse was in Ancient Greece in 585 BC. It was seen as an omen—one that caused a long-standing battle between the Medes and the Lydians to finally end! Lodging and camping in the path of totality has been booked for months, and prices can be sky high. To make eclipse-viewing available to all, Hipcamp has been partnering with landowners to create new campsites in the eclipse path—over 1,300 new campsites popped up on Hipcamp in Oregon alone last month. Hipcamp has also compiled the best available map of all camping options for viewing the total eclipse. The best part? Most of the new campsites are on land previously inaccessible to the public and waiting to be explored. >> SEE THE MAP OF ALL CAMPSITES ON THE PATH OF TOTALITY, VIA HIPCAMP: https://www.hipcamp.com/discover/eclipse-2017 For more on each of these facts, visit: >> https://www.hipcamp.com/journal/guides/ how-to-plan-a-2017-eclipse-camping-trip

Make Sure to Have Proper Eye Protection

Millions of Americans will flock outside Aug. 21 to gaze upward as the “Great American Eclipse” crosses the country. And they will all need eye protection. That’s because it’s never safe to view the sun with the naked eye. The sun’s surface is so bright that if you stare at any portion of it, no matter how small, it produces enough light to permanently damage your retina. Length of time doesn’t matter either. Without proper eye protection, you can suffer “eclipse blindness” — a serious injury in which the eye’s retina is damaged by solar radiation — within seconds of starring at the sun, according to the American Optometric Association.

Most victims eventually recover their eyesight, but some suffer permanent loss of some or all of their vision. Solar filters, special eclipse glasses or welder’s goggles must be used to view the partial eclipse. Experts suggests that one widely available filter for safe solar viewing is number 14 welder’s glass. A partial eclipse will be visible everywhere across the nation as well as in the hours before and after a far shorter total eclipse, which will only be visible for 2-3 minutes along a 67-mile wide path from Oregon to South Carolina. It is not safe to look at the uneclipsed or partially eclipsed sun through regular sunglasses, unfiltered telescopes or magnifiers or cameras, polarizing fil-

ters, CDs/DVDs or space blankets. The only time it’s ever safe to look at the sun is during a total eclipse, when the sun is completely behind the moon. However, holding binoculars or any other device while you’re wearing your eclipse glasses or other eye protection can still cause injury because the concentrated solar rays damage the solar filter and enter your eye. When the moon completely blocks the sun’s bright face for 2 or 3 minutes during the total eclipse, the otherwise hidden solar corona — the sun’s outer atmosphere — will become visible. Bright stars and planets will become visible as well. “But you’ve got to be careful,” said optometrist Myron Wasiuta. “Just before it’s over, you’ll see beads of light starting to form on the trailing edge. That’s the sign that you need to avert your eyes. The sun can be bright enough to cause retinal damage.” If you buy eclipse glasses, be sure that they are made by one of the five companies the American Astronomical Society has certified as safe for use. The companies are American Paper Optics, the Baader Planetarium (in Germany), Rainbow Symphony, Thousand Oaks Optical, and TSE 17. American Paper Optics of Bartlett, Tenn., hoped to produce 100 million pairs of glasses, president John Jerit said last month, but may fall short of that goal. The company usually employs about 35 people but nearly 80 work there now. August, 2017~ WEEKENDEREXTENDED.COM | -11-

Catch an Catch an Eclipse Watch Party - During Kansas’ Solar Spectacle

Follow the sun to northeast Kansas on Monday, August 21, for the celestial event of a lifetime. When the skies go eerily dark that afternoon, communities across the far corner of the state offer some of the best solar eclipse viewing anywhere. It’s been 100 years since the last total solar eclipse was visible from Kansas and the next one won’t come here until 2045. That’s why the towns of Atchison, Troy, Hiawatha, Marysville and others are making big plans to host eclipse watch parties for capacity crowds. “This hasn’t happened in Kansas since 1918,” says Adrienne Korson, Doniphan County economic development director. “We’ve had astronomers tell us it’s like winning the lottery to be on the eclipse’s central line of totality!” The August 21 phenomenon will darken skies all the way from Oregon to South Carolina, along a stretch of land about 70 miles wide. The closer to the center line of that path, the longer the total eclipse lasts. The longest duration

anywhere in the U.S. is 2 minutes, 40 seconds: Kansas clocks in with 2 minutes, 38 seconds of near total darkness in Doniphan County. “When the maximum viewing time in the nation is 2 minutes, 40 seconds, and we have 2 minutes, 38 seconds here, that’s pretty intense and a great opportunity for Kansans to view this rare event,” Korson adds. The path slices from the Marysville area in Marshall County across the corner of the state to Leavenworth County. The

In the farthest northeast tip, the Doniphan County seat of Troy kicks off its “Eclipse in the Heartland” party on Sunday, August 20, with music, street vendors and a beer garden on the courthouse square and an evening 5K Eclipse Run. On Monday, eclipse day, Troy offers four designated viewing sites: the courthouse square, high school football field, city baseball field and the 4-H fair-

Atchison’s 2 minutes, 19 seconds of totality begin at 1:06 p.m. Witness the spectacle at two designated areas: Amelia Earhart Airport and Benedictine College’s Wilcox Stadium. Benedictine College also hosts talks by astronomers from the Vatican and a Celestial Concert by the college’s music department. And near Kansas City, join the Total Eclipse in the Parks gatherings at Antioch Park in Merriam, Heritage Park in Olathe and Theatre in the Park in Shawnee. Organizers of the northeast Kansas watch parties recommend bringing chairs, sunscreen and bottled water, and arriving early. Most importantly, make sure to have proper eye protection. Most sites will have special eclipse-viewing glasses for sale while supplies last, or people can purchase them ahead of time to be safe. During the total eclipse, the moon passes between the sun and earth, blocking all direct sunlight and turning day to night for a few minutes. Observers outside the path see a partial eclipse when the moon covers part of the sun’s disk. “Don’t miss this remarkable natural phenomenon,” urges Chris Sorensen, Kansas State University physics professor and amateur astronomer. “Given its rarity and extreme beauty, this total eclipse and its eerie type of twilight will truly be an awe-inspiring event.

SHOW ME THE COLUMBIA, - Thousands of visitors will venture to Columbia to celebrate and be witness to the “Great American Eclipse.” As seen from Earth, a solar eclipse occurs when a new moon travels between Earth and the sun, obscuring part of the sun. A total solar eclipse occurs when the moon completely covers the sun, making the sun’s tenuous atmosphere, the “corona,” visible. The last total eclipse that was viewable in Missouri took place in 1869, nearly 150 years ago, and only passed over the northeast corner of the state. The upcoming eclipse is unique in that it occurs exclusively within the United States, travels across a large swath of the country and occurs over land for a total of 94 minutes. Totality in the U.S. will begin at 10:15 a.m. in Salem, Ore., the first land mass it touches, and concludes in Charleston, S.C. at 2:49

-16- | WEEKENDEREXTENDED.COM ~ August 2017

p.m., the last land mass it touches, making the Great American Eclipse one of the longest observed in history. After leaving the eastern coast of the U.S., the moon’s shadow passes over most of the Atlantic before ending at sunset near Africa. In Missouri, the eclipse follows a diagonal line across the northwest to the southeast part of the state, and, since Missouri is located on the center line of the eclipse, it is predicted that hundreds of thousands of visitors from across the country and even around the world will travel to the state for this awe-inspiring occasion. Columbia, located in Central Missouri, is directly in the path of totality, so those in Columbia on the day of the eclipse will witness over two minutes and thirty seconds of totality beginning at 1:12 p.m. This will be one of the longest spans of totality in the country. According to Megan McConachie, strategic communications manager for the Columbia Convention and Visitors Bureau (CVB), Columbia’s location along the path of totality makes it the perfect place for viewing this unique event. “It’s rare that you can say we’re celebrating a once-in-a-lifetime event, but this truly is one of those times. We’re thrilled to be able to share this event with all the visitors that will be coming to Columbia.” McConachie says organizing for the eclipse first began in 2014, but they started working in earnest a little more than one year ago. “It’s taken a lot of planning and we’ve been working with Off-Track Events and Columbia Parks and Recreation to bring it to fruition. We are very excited for it to all come together.” To mark the occasion, the city of Columbia will host many fun events, including a free music festival, viewing parties, a 5k/10k race, a guided bicycle trail ride, and a variety of other activities for visitors and locals alike. There will be two separate viewing parties, one at the city’s Cosmopolitan (Cosmo) Park, 1615 Business Loop 70, and the second at Gans Creek Recreation Area, 3360 E. Gans Creek Road. The St. Louis Sprockets Stunt Bike Club will perform at Cosmo Park on Sunday, Aug. 20. Photo by Kevin Dingman

TOTAL ECLIPSE

At Cosmo Park, attendees can expect a family-friendly weekend of fun, music, science and frivolity leading up to the main event. Festivities at Cosmo Park begin on Saturday, Aug. 19 and culminate with a huge eclipse celebration on Monday, Aug. 21. The free activities will include a screening of the blockbuster movie Guardians of the Galaxy (PG-13) at 8:30 p.m. on Saturday, a Kids Zone with activities and games for children throughout the weekend, educational information, demonstrations and a two-day music festival featuring some of the region’s most exciting bands and entertainers. In addition, beer gardens featuring four of Columbia’s craft microbreweries and a plethora of the area’s favorite food trucks will also be on location. Cosmo Park features ample open space to take in the epic sights of a total solar eclipse, so it’s a perfect place for families and friends to enjoy in this rare event. Violet and the Undercurrents, one of Columbia’s

most popular bands, will perform on Sunday, Aug. 20 at Cosmo Park during the Totality Music Festival. The Totality Music Fest at Cosmo Park takes place on Sunday and Monday, August 20 and 21. Music begins at 12:30 p.m. on Sunday afternoon with a performance by Bockman followed by Violet and the Undercurrents. There will be a 30-minute break in the music for a demonstration of cycling skills by the St. Louis Sprockets Stunt Bike Show at 3 p.m. The tunes continue with The Bel-Airs followed by Old Salt Union before another demonstration by the Sprockets Stunt Bike Show. The evening will begin winding down with a performance by Aaron Kamm and the One Drops before the Ben Miller Band takes the stage at 8:30 p.m. to close out the day. On Monday, the activities at Cosmo begin at 11:00 a.m. with a celebratory presentation of the national commemorative solar eclipse postage stamp. before a break in the music to prepare for the total eclipse, which will occur at 1:12 p.m. The party will continue with a set by the AJ Gaither One Man Band at 1:30 p.m. Elsewhere on Monday, amateur and professional astrologers, “eclipse chasers,” or anyone looking for a quieter solar experience will find the wide-open spaces and expansive views available at Gans Creek Recreation Area ideal. Located near Rock Bridge Memorial State Park south of town, Gans Creek offers 320 total acres with ample space for setting up telescopes or any other astrological equipment for optimal viewing in

a beautiful park-like setting. Other family-friendly events lead up to Monday’s eclipse, as Columbia will host a Totality Run and Totality Ride on Sunday, Aug. 20. The Totality Run begins at 9 a.m. on Sunday at the skate park in Cosmo Park. This walk/run takes place on Bear Creek Trail, over a crushed limestone path passing through creeks, wetlands, wooden boardwalks and bridges and forested areas. Participants have the choice between running and walking a 5k or 10k. Registration for the Totality Run costs $25 for youth runners (15 and under) and $35 for adults. All registered participants will receive a Totality Run t-shirt, eclipse viewing glasses and a free beverage at the conclusion of the race, including beer for the adults. For those looking to do a little pedaling in honor of the eclipse, the 9.6-mile Totality Ride offers a fun and relaxing social bike ride along Bear Creek Trail. The ride also takes place on Sunday along the same path as the fun run, but begins after the conclusion of the 5k/10k. Riders will leave Cosmo Park between 11:00-11:30 a.m. and

travel to Oakland Park (4.8 miles), where they will stop for a lunch consisting of Shakespeare’s Pizza and a live musical performance at the park shelter. Following lunch, riders will return on the trail back to Cosmo Park (4.8 miles) where they can stick around for the Totality Music Fest. At the conclusion of the ride, adults will also receive a complimentary beer, if desired. Registration for the Totality Ride costs $25 for youth and $35 for adults. All registered riders will receive a Totality Ride t-shirt and eclipse viewing glasses. With such a unique opportunity at hand, the city of Columbia is expecting thousands of visitors leading up to the eclipse. According to McConachie, Columbia’s population could easily double on Monday, the day of the eclipse, with an extra 100,000 people visiting the city for the celebration. Columbia is offering free shuttle rides to Cosmo Park on the day of the eclipse as available parking will be at a premium. On Monday, visitors are encouraged to park at the Columbia Mall, 2300 Bernadette Drive, and wait for the shuttles to pick them up from in front of the Cafe Court at the mall. The drop-off location at Cosmo Park is at the Parks Management Center, just a short walk to all the festivities. Shuttles to and from Cosmo Park will run from 9 a.m. until 3 p.m. Those that have not already made plans for the CoMo Eclipse should do so as soon as possible. “Our hotels are at 90-percent occupancy,” says McConachie, “so anyone that wants to come should book their stay now to make sure they have lodging and can enjoy

I

I am a writer. Therefore, I write: whole books! No, better make that chapters. Um, pages and pages. Well, sometimes a paragraph or two. Let’s say, a sentence at a time. Sometimes I just scribble down notes with snippets of ideas. And on occasion, it is nothing more than thoughts to be organized and used later. I have lots of these.

Writer’s block is very real: those days when the words just won’t come. Years ago, I read about an idea used by a writer who was ‘stuck.’ Their character ran into a building and up the stairs to . . . to what? Instead, the author made a change by writing the character running down the stairs, out the exit and into the great outdoors. That was all it took to get those creative juices flowing which provided an abundance of possible scenarios for the end of the story. It worked for that author, but as I have mentioned before, I am an indoor person. When I get stumped, going outside isn’t the answer. And yet, here we are: smack dab in the middle of summer where there is always a plethora of activities specifically designed to get you outside. The possibilities are endless. Let’s start with sports, both for participants and spectators. Then there are concerts, fairs and festivals everywhere. For shoppers, flea markets and rummage sales abound. One big difference about this year is the eclipse on August 21. When it comes to a ‘once in a lifetime event’ this is it! So what can I write about that goes along with that? How about the Milky Way, the galaxy in which we live? Or, at least, my version of it. This is a recipe handed down from my husband’s grandmother. I took the liberty of updating it a bit. The original recipe says -30- | WEEKENDEREXTENDED.COM ~ August 2017

By Kandy Derden, Places to Go Editor to use the 10 cent size candy bars. As much as it pains me to admit it, I am old enough to remember when candy bars were that price. For those of you who don’t, it is just the regular size. The instructions say to use a double boiler, but keep in mind, this was before there was a microwave in every home. I questioned the oven temperature and the length of baking time. I don’t know why it is so different from other recipes, but it is correct and it produces a good cake. MILKY-WAY CAKE 6 Milky-Way bars (regular size) 2 sticks margarine 2 cups sugar 1 cup buttermilk 4 eggs 2 1/2 cups flour 1/2 teaspoon baking soda 1 teaspoon vanilla 1 cup chopped nuts (optional) Melt together 1 stick margarine and candy bars. Set aside to cool. Meanwhile, cream sugar and other stick of melted margarine together. Add vanilla and cooled candy mixture. Add eggs 1 at a time, mixing well after each. Sift flour and baking soda together. Add alternately with buttermilk. Fold in nuts. Spray a tube pan or 2 loaf pans. Bake at 275 degrees for 2 hours or until a toothpick inserted in center comes out clean. No icing is necessary, but a light glaze or chocolate drizzle is optional. One of the things I like about this cake is that it is great without icing which makes it easy to transport and eat anytime, anywhere . . . even during an eclipse.

For Lip-Smack By Sheeree Oney Things to Do Editor

When it comes to deciding how to prepare apple pie or barbeque ribs, the sky seems to be the limit. It depends on the chef you are visiting with as to what ingredients are noted to be the best. For apple pie, it’s all about the type of apple used. There are only 7500 varieties grown in the world with 2500 of them grown in the U.S., according to the University of Illinois Extension. So that reveals just how many different “best” recipes for apple pie there are. The secret for the best barbeque seems to be designated by the ingredients used in the sauce. (Some like it sweet while others prefer tart or tangy.) Another important factor is the process and time alloted for smoking and the wood of choice. It also depends on the area as to which is most popular. For Indiana, the vote goes hands-down to Big Hoffa’s BBQ in Westfield, just north of Indianapolis. Big Hoffa’s packs a big taste into each signature menu item. This pirate decorated restaurant (many items donated by his customers) is noted for the more unusual items on the menu. For this, the restaurant was named in the number three spot in the nation for its BBQ by Yahoo. They have also been honored as the top BBQ restaurant in Indiana among other prestigious awards. Over the past years, this restaurant has consistantly ranked in the top five of as many as 38 Barbecue restaurants in

Indiana. Adam Hoffman, owner and founder of Big Hoffa’s Smokehouse BarB-Que, is originally from California and later decided to move his love for barbeque to Indiana. His pulled pork and smoked BBQ ribs are some of the favorites on the menu. He has adopted a California style of cooking where all ingredients are made in house and are fresh and a southern flare with his sweet and tangy bbq sauce. With the barbeque, his pulled pork sandwiches are worth traveling the extra mile for when you are remotely close by and his smoked pork ribs fall right off the bone, after being smoked for over 26 hours. Adam has been serving

the great people of Indiana for more than ten years now, starting his business in 2003. Hopefully he will be serving them for many more years to come. The Hoffanator, shown above, is a truly sinful combo of french fries topped with mac and cheese,

baked beans, pulled pork, ranch dressing, and bbq sauce. (Photo: Big Hoffa’s Smokehouse Bar-B-Que/ Facebook) If you think that’s a lot of ingredients, Adam has surprising news. “Many people don’t realize that some of our sauces alone (like the barbeque sauce and ranch dressing that top the Hoffanator) are made of an upwards to 20 different ingredients,” he said.

kin’ Top-Winning BBQ

The pulled pork slow cooked in a smoker always fueled with wood is the big reason these fries are one of Big Hoffa’s most popular items. The type of BBQ at Big Hoffa’s is known as “Hybrid” which is the type of grill used for cooking the meats. Best Dish to try in my opinion is the Meat sampler (1/2 rack baby back ribs, 1/2 lb Tri Tip and 1/2 lb pulled pork). This way, you will get a sample taste of more than one type of meat they are all so very good! Big Hoffa has created some of the

most interesting menu items out there from The Hoffanator, The Marley, The Buccaneer, The Saigon Special and many more Indy favorites! When passing through Indiana, be sure to stop by and give them a try. I am confident you will love the food. Not only is the meat tender and flavorful, but their sauce is the best I’ve tasted - (the spicy one) Adam shared that he’s proud of what he does and he wants his

customers to leave full and happy. Big Hoffa’s is accustomed to accolades for its cue. In 2015 the foodie website TABElog named Big Hoffa’s among the 12 best barbecue restaurants in America. That same year Yahoo put Big Hoffa’s on its list of the best barbecue in every state. So be sure to check out the menu online at http://www. bighoffas.com/

Head for the South f

By Katy Walls Editor American Roads

Southerners love their BBQ! Here are a few of my favorites:

Calhoun’s is famous in East Tennessee for its BBQ ribs. When I visited their newest location in Oak Ridge, located on the greenway overlooking Melton Hill Lake, I had to sample their special. It was a pretty afternoon so we chose to dine at the fire pit area overlooking the lake. As an added treat, we got to watch spring training for the rowers, a popular competition here. My ribs came with a generous helping of baked beans and fried apples. The sauce was a nice combination of sweet and spicy. The ribs were cooked to perfection and fell off the bone. The desserts were equally delicious; choices were Strawberry Shortcake or Chocolate Cake topped with ice cream. The first Calhoun’s opened in west Knoxville in 1982. Soon they headed for The National Rib Cook-Off in Cleveland, Ohio and came away with top honors, a first place ribbon and the right to call their ribs the “Best Ribs in

masters. Her sauce is her specialty

America.” They continue to do ribs and BBQ very successfully as the Oak Ridge location is their ninth location.

Helen’s BBQ in Brownsville,

Tennessee is on the opposite side of the spectrum when it comes to showy location but her ribs stand tall and proud; some the best in the South. Helen can prove this by being named on Southern Living’s Barbeque hot list. She has received numerous other honors for those tender juicy ribs drenched in her secret sauce. Helen Turner one of just a few women pit

she does a sweet version and a hot one. “It’s not written out just in my head.” Helen’s BBQ Joint is small so when we visited she set up a tent in front for our group. She took us back into her screen porch smoke room. It made my eyes water but Helen just kept stirring her fire and checking her meat. She cooks shoulder whole and then she can slice or pull it depending on what the customer

for delicious BBQ wants. The smoke is thick and Helen told us one of her customers said, “When a customer walks out of here they smell just like Helen.” One reason for so much smoke is that Helen cooks her pork the old fashioned pit way. She has two pits. One burns the hickory and oak to right consistency and the other she uses to cook the pork. She rarely cooks chicken. She credits her husband who comes here and lights the wood fire pit on his way to work every morning. When she opens the coals are ready to start cooking. The pits are simple and handmade of cement blocks and tin but the result is a masterpiece. The BBQ Shack is another classic. It is located in what was once a country store back in the 70s. It was obviously something else before that. Today, it’s where you find North Carolina style barbeque in Dothan, Alabama. For those not born in the South, most states have a special style of Helen is shown below cooking her pork the old fashioned pit way.

The BBQ Shack in Dothan, AL offers several choices of their homemade sauce.

barbeque that differs from other states. In North Carolina there are two styles that compete, sometimes heatedly, to be named the “official” state style. Mainly it’s the sauce. The Western Style uses ketchup, vinegar, and pepper. The Eastern Style forbids the use of ketchup and uses a mayonnaise base and often mustard. All use varying spices to create totally different sauces wherever you go. The BBQ Shack offers several choices of their homemade sauce; sweet, mild, medium and hot in the ketchup based and a mustard based sauce that comes in four flavors also. Their special is a unique variation called the Carolina Shack Sauce. I had their lunch plate of four ribs, baked beans and corn nug-

gets. The ribs were tasty and flavorful; they are a more substantial style and I found a mixture of the sweet and mild sauces perfect. The beans were good but the corn nuggets were out of this world. The corn must have been locally grown to be that tasty.

King’s Barbeque in Kinston,

North Carolina dates back to the 1930s when Wilbur King, Sr. first started serving barbeque from a pot-bellied stove in his country store. He served the local tobacco traders and mill workers that comprised Kinston before it became a foodie destination. Eventually the store evolved into a real restaurant and remained in the King family until 2004.

BBQ - Continued... The last remaining King owner was picky on who took over King’s. Joe Haggitt, who had begun at 17 as a busboy and worked his way up, was a good choice. Joe told us Mr. King still comes by to check on him. There are tons of choices including a huge buffet. I went with the baby back ribs and sides of greens and butter beans; filling and delicious. Not only the ribs but the sides were perfect. Both were well seasoned with pork. I barely had room for dessert. But I forced myself to make room for their Bourbon Pecan Pie and was not disappointed. It’s Heaven on a spoon.

they don’t need advertising: they don’t even have a sign. Locals all know where to find them and visitors follow their nose. Their specialties are fall-off-the -bone ribs and pulled pork with side dishes like huge baked potatoes and their special Brunswick stew. Slow cooking is their secret weapon. The pork ribs and pulled pork are begun the night before they will be served. The dessert menu offers some hard choices. An unusual pecan cobbler or traditional peach cobbler makes for a hard choice. The coconut cake is worth consider-

ing. The delicious fudge brownie covered with ice cream, caramel sauce and pecans got my attention. Jeff and Monte Erwin, the brothers that co-own Dub’s never attended any fancy cooking schools. In fact, they never planned on becoming restaurateurs. That is until their first business, home construction, went downhill in the early 2000s. Before that they barbequed as a hobby. So they decided to “Do what you love

-38- | WEEKENDEREXTENDED.COM ~ August 2017

and you will never work a day in your life.” They opened Dub’s in January 2005 in a small location only seating 24. In just over a year their construction background came in handy. They built an addition that seats another 130 people and kept on doing what they love, barbequing. The brothers are firm believers that their choice of sauces is a prime factor in Dub’s popularity. They offer a wide variety ranging from sweet to fiery hot and every combination in between. They gave the restaurant its name from an old saying their grandfather, a local farmer nicknamed Dub, used

when his wife cooked his special pork tenderloin for breakfast. “Ole Hoss, you’re eating high on the hog. You better get out to the field and pay for it.” Jim Morpeth opened the first Country’s Restaurant on Mercury Drive in 1975 in Columbus, Georgia. He now has three. I’ve eaten in two but my favorite is the Broadway Street location. It’s located in a piece of Columbus’s history; the restored 1930s Greyhound Bus Station. A 1930s Greyhound bus is the centerpiece of the diner. The driver’s seat and wheel are still there but the interior of the bus is fitted out with tables as seating like a traditional diner. Kids have fun “driving” the old bus. For grownups, it’s a step back in time. Country’s barbeque is cooked slow over hickory and oak at each location. I loved the ribs. Some of my friends tried some of the other choices and were happy as pigs at a trough (pun intended). There are daily “Bus Driver Specials” that will make you drive back for more. Their Lemon Meringue Pie is a foot tall and it tastes as good as it looks.

Things to Do:

Blend History w

By Kathy Barnett Senior Editor SANFORD - Don’t know which restaurant to try first? Do not fear; there are plenty of choices here and they are all organized and scheduled for you when you go on a Sanford Food Tour. The Sanford Food and History Tour is a threehour walking food tour through the heart of the downtown area. Your host will guide you through the timeline of events beginning at the time of the Seminole Indian wars. Blending in the arrival of city founder Henry Sanford, the haunting tales of the I-4 dead zone and the evolution of the “historic waterfront gateway” city, I found myself attracted to more than simply the food. This fair city is as rich in history as it is equipped with numerous great chefs. You’ll enjoy large, sample-sized portions of food with roots in the Deep South and Europe. You’ll also see live demonstrations and taste the finished product. You’ll learn the stories behind the venues, hear from the folks that created the concepts and understand why they all chose Sanford. Each of the businesses we visited are locally owned. They can’t be found anywhere else, making this a unique and memorable experience. It is one that has been placed on my “go do again” list. I can’t wait to come back to Sanford and re-visit all the stops on the tour and order a complete meal from each location. I would recommend this tour to both locals and visitors as a “Must-Do”, A great way for couples, friends and family to have fun as well as for company outings. At our first stop, our group was treated to a southern tradition with a modern twist at The Tennessee Truffle. Owner Chef Nat Russell transports his secret ingredient from his home state, ramps. It was actually named as a tribute to the hometown of the chef and co-owner, Buffalo NY. Guests kept asking, which eventually led to the creation of the burger. I was impressed with the crunch and flavorful homemade potato chips. To top everything off, we were called on to make our own last course (below) at Wondermade Marshmallows. We were provided with all the ingredients for a S’more (minus the heat of a bonfire and the bugs) including the choice from a wide variety of marshmallow flavors. A perfect ending to a perfect food tour! Stay tuned...more food from Sandford coming next month...

country has put us in a really great spot. Seeing these songs connect with country music fans in such a big way is a tremendous feeling.”

NASHVILLE – Logan Mize is an artist on the ascent with the numbers to back it up. His 12-track album — produced by Dan Agee— Come Back Road is out today and has already yielded a single demonstrating the power of his songwriting and voice. The full-length Big Yellow Dog Music release can be purchased HERE. The debut single from the “driving” (Rolling Stone) Come Back Road, “Ain’t Always Pretty,” was pushed out early this year and has already exceeded 22 million streams on Spotify and has been selected for inclusion on popular playlists on both Spotify and Apple Music. With early support from The Bobby Bones Show, “Ain’t Always Pretty” has quickly become the most popular single ever released by Mize. He continues to prove that he is one of the hottest independent artists to watch in country music with cutting-edge success, strong fan feedback and glowing reviews. “‘Come Back Road,’ written by Josh Kear, Ross Copperman and Rodney Clawson, benefits from symmetry in the production – a fingerpicked acoustic guitar and Mize’s serrated edge vocals give way to a contemporary, thunderous drum loop before returning to the acoustic strums.” - Jon Freeman, Rolling Stone Country. Exclusive premieres were released by Rolling Stone, Taste of Country, The Boot, Lovin’ Lyrics and The Shotgun Seat; all eager to be the first to share the music with their followers. “I’m really blown away by the early response to this album. It’s tough to drum up this kind of noise about a release without a major label and country radio airplay,” said Mize, adding, “I think the combined support of Spotify and Apple Music along with a decade of playing small town bars across the

Logan Mize is an accomplished country singer/ songwriter from Clearwater, Kansas, who has deep musical roots to his family tree. His great uncle was Billy Mize, largely known for crafting and evolving the legendary Bakersfield sound, which included musical pioneers Merle Haggard and Buck Owens. In 2010, several years after moving to Nashville, Logan signed a publishing/record deal with Big Yellow Dog Music and a booking deal with William Morris Endeavor. He spent the next seven years playing seemingly every venue in every town across the U.S. and winning over fans every stop along the way. In 2016, Mize made waves when he booked a solo acoustic tour via social media and traveled more than 20 thousand miles in less than two months in a 1989 Chevy station wagon named “Glenn” running his own sound and lighting performing 2- and 3-hour acoustic shows for fans across the country. Mize is excited for this new chapter and this new, much-anticipated release with Big Yellow Dog Music. For more information, visit www.loganmize.com
