Beneficiary The San Mateo County Association of REALTORS® Foundation was created to benefit housing-related causes throughout San Mateo County. The SAMCAR Foundation is a separate 501(c)3 Public Benefit Corporation, funded through the generous contributions of its REALTOR® and Affiliate members, and friends. Since its inception, the SAMCAR Foundation has focused its charitable efforts towards benefitting organizations and programs that strive to make San Mateo County a more livable, affordable and thriving community. Through its work, the SAMCAR Foundation has made significant financial contributions that have enabled many of our San Mateo County citizens to finance a down payment on their first home, make their mortgage payments, and receive the education needed to make a sound investment in their financial stability and future through homeownership. Penne con Formaggio (Macaroni with Cheese)

1 pound Penne or Ziti 4 tbsp butter 1 ²⁄3 cups cubed cheese (a combination of mozzarella, Bel Paese, Swiss, & Provolone) ¼ tsp coarsely ground black pepper ¼ tsp freshly grated nutmeg ¼ cup grated Parmigiano-Reggiano cheese 1 ½ tbsp minced fresh parsley ¼ tsp coarsely ground pepper Salt to taste

In a large pot, boil the pasta in 4 quarts boiling water until al dente. Drain the pasta in a colander and return to the pot over low heat. Add the butter and mix well with a wooden spoon to coat the pasta well. Sprinkle the cubed cheese on top of the pasta and let it remain on top for 1 or 2 minutes to warm. Then stir vigorously with a wooden spoon to melt the cheeses. Add the pepper and nutmeg, and stir in the Parmigiano-Reggiano cheese. Add the cream and parsley, and continue stirring until well mixed. Add salt to taste and serve immediately.

Easy Orzo/Vegetable Salad 1 tsp olive oil 1 cup cherry tomatoes (halved) 1 cup chopped zucchini 2-3 cloves garlic (minced) 2 tbsp fresh chopped basil 2 tbsp fresh chopped Italian parsley

¼ tsp red pepper flakes ¼ tsp sea salt ¼ tsp fresh ground pepper 3 cups hot cooked orzo

(substitute low sodium chicken broth in orzo directions for water unless you’re making vegetarian)

Use as a side dish or a vegetarian entrée by adding kidney/garbanzo or feta cheese. Heat olive oil in a medium skillet over medium-high heat. Add cherry tomatoes, chopped zucchini, and garlic garlic; sauté 2 minutes. Add red pepper flakes and sauté 1-2 minutes or until zucchini is crisp-tender. Combine tomato mixture with cooked orzo. Remove from heat and gently add fresh basil and parsley. Toss well. If adding beans or feta, add along with basil and parsley.

Anne Oliva’s Almond Nut Tart 1 cup flour 1 tbsp sugar ½ cup salted soft butter a few drops almond extract a few drops vanilla extract

1 tsp water ¾ cup heavy cream ¾ cup sugar 1 tbsp Grand Marnier 1 cup sliced almonds

To make crust mix together 1 cup flour, 1 tbsp sugar, ½ cup salted soft butter, a few drops of almond extract, a few drops vanilla extract and 1 tsp water. Press into a 9 in tart pan. Chill. Save 1 tsp of the dough for patching. Bake in a preheated 375˚F oven until browned lightly. To make the filling in a saucepan mix together ¾ cup heavy cream, ¾ cup sugar, a few drops almond extract and 1 tbsp Grand Marnier. Warm the mixture until sugar melts, not too hot: add 1 cup sliced almonds. Pour into the baked shell and bake in a preheated 450 oven for 15 to 20 minutes. Turn oven down to 400˚F and bake another 15 minutes turning often so that the sugar mixture caramelizes evenly—this can be a little tricky.

Baked Spaghetti 2 cups canned diced tomatoes 2 cups tomato sauce 1 cup water ½ cup diced onion ½ cup diced green bell pepper 2 cloves garlic, chopped ¼ cup chopped fresh parsley 1 ½ tsp Italian seasoning

1 ½ tsp House Seasoning 1 ½ tsp seasoning salt 1 ½ tsp sugar 2 small bay leaves 1 ½ pounds ground beef 8 oz. uncooked angel hair pasta 1 cup grated cheddar 1 cup grated Monterey Jack

Preheat the oven to 350˚F. In a stockpot, combine the tomatoes, tomato sauce, water, onions, peppers, garlic, parsley, seasoning mixtures, sugar, and bay leaves. Bring to a boil over high heat, and then reduce the heat and let simmer, covered, for 1 hour. Crumble the ground beef in a large skillet. Cook over medium-high heat until fully cooked, with no pink color remaining. Drain the fat from the meat, and then add the ground beef to the stockpot. Simmer for 20 more minutes. Cook the pasta according to the package directions. Cover the bottom of a 13 by 9 by 2-inch pan with sauce. Add a layer of pasta and then a little less than 1/2 of each cheese; repeat the layers, ending with the sauce. Bake in the oven for 30 minutes. Top the casserole with the remaining cheese, return it to the oven, and continue to cook until the cheese is melted and bubbly, about 5 more minutes. Cut into squares before serving.

Pasta with Pepper-Broccoli-Garlic Sauce Serves 4 to 6

1 cup olive oil ½ cup water ½ tsp ground pepper 4 cloves garlic 4 oz. hot peppers, drained

1 head fresh broccoli, chopped and precooked 1 pound linguini ½ cup Romano cheese

Simmer olive oil, water, ground pepper and garlic for 15 minutes. Remove cloves of garlic. Add drained hot peppers. Add broccoli Keep warm while cooking pasta. Cook 1 lb linguini in salted water. Drain and place in large bowl. Sprinkle Romano cheese while tossing. Pour sauce over pasta and toss. Serve immediately. Put additional cheese on the table.

Cucumber Appetizer 1 (8 oz.) package cream cheese, softened 1 (0.7 oz.) package dry Good Seasons zesty Italian salad dressing mix ½ cup mayonnaise 1 French baguette, cut into ½ inch thick circles 1 cucumber, sliced 2 tsp dried dill weed

In a medium bowl, mix together cream cheese, dressing mix and mayonnaise. Spread a thin layer of the cream cheese mixture on a slice of bread, and top with a slice of cucumber. Sprinkle with dill. Repeat with remaining ingredients.

Baked Ziti 1 box Ziti or Rigatoni noodles 1 can Traditional Sauce (or your own recipe) 16 oz. Ricotta Cheese 2 tbsp of Italian seasoning, basil or oregano 1 cup Mozzarella Cheese, shredded Parmesan cheese, grated

Cook ziti according to directions. Put in 9” x 13” pan. Mix in Ricotta cheese and seasoning. Mix in Mozzarella cheese. Pour sauce over top. Bake in 350°F oven for 45 minutes. Sprinkle with Parmesan cheese, serve. Delicious! You can make this in advance. Great picnic or potluck dish. Freezes well.

Pesto Sauce

“This is the way my Italian mother-in-law wrote down recipes!” Olive Oil (enough to moisten) Garlic Basil – 2 parts (stems removed) Parsley – 1 part (stems removed)

Blend in blender or food processor. Now ready for freezing in jars. To cook: If pesto is frozen, defrost first. If jar is a pint jar, add 1 large cream cheese and ½ to 1 cube to mixture and heat slowly. Use pasta of choice (family always used fresh Tagliarini). Put some water from pasta into sauce. Sauce should be thick. You can add cooked Italian green beans or zucchini to sauce or serve as is. Add some grated cheese and Mangia!

Panna Cotta (Cooked Cream)

½ cup half-and-half 1 envelope unflavored gelatin 2 cups heavy cream ¼ cup plus 2 tablespoons sugar One 2-inch piece vanilla bean Grated zest of 1 small lemon Grease 4 1/2 cup ramekins lightly with butter and set aside. Pour the half-and-half in a small bowl and sprinkle on the gelatin, then stir to dissolve. Set aside. In a medium saucepan, mix the cream, sugar, vanilla bean, and half-and-half mixture. Cook over medium heat, stirring constantly with a wooden spoon, until the mixture begins to boil. Take care not to let the mixture bubble up over the sides of the pan. Cook until the mixture begins to thicken slightly, then remove the pan from heat, and discard the vanilla bean. Stir the lemon zest into the cream, then carefully pour the mixture into the ramekins. Place them on a tray and cover with plastic wrap. Refrigerate until set, about 5 hours or overnight. To serve, run a butter knife around the sides of the ramekins. Place a serving plate on top and invert the plate. Shake the ramekins to release, or dip each mold quickly in hot water and then invert onto serving dishes. Serve at once.
