Summer Flavours of Norwich Well, we have had a difficult year but all the foodies have rallied around to support local; caterers have delivered goodies, new cake makers have entered the scene and restaurants changed formats to enable people to eat safely – even farms have opened up shops and turned their hands to deliveries! Then we were hit with a month of discounts in the Eat Out to Help Out scheme, getting people out again and gaining confidence in social distancing, when to whip the mask off and ordering via a QR code. Some amazing food things happened over the summer, like Junkyard Market at the back of St Mary’s Works, with a full-on street food market London-style, serving up in August and September – did you go? Clear Company started up a travelling street food fayre across Norfolk and the Norfolk Showground had a street food area as part of their pop up cinema weekends.

Plus, did you manage to get a FUP Burger – Tom aka ‘The Fry Up Police’ was banging out dirty burgers mainly from The Black Horse all over summer and into autumn, proclaimed the best burger around by many a food blogger – hopefully by the time you read this, he’ll have a permanent spot! So, despite everything, Norwich came out the other side tastier, some of us larger (!!!) but mainly stronger.

We even had some new restaurant openings; in Chapelfield, a small Asian street food chain Chi, with their sister café The Granary next door. The Gatherers vegetarian bar and restaurant opened on Muspole Street and, over on the market, Cuppie Hut extended allowing Mel and Kim to bake in house. Fat Elvis popped up at Don Txoko offering 48 hour fried chicken. The Last Wine Bar eventually re-opened with the head chef taking the reins.

As the weather grows colder there is nothing better than a Curry to warm you up, so why not try my Thai Penang recipe (also served all over Indonesia)? It’s a lovely, rich, spicy, coconut-rich curry made with steak for tender cooking, almost instantly. I’ve kept this as authentic as possible whilst making it easy to make. I’ve been teaching Thai cookery for a few years now and absolutely love the subtle, well-balanced flavours that Thai food offers whilst punching your taste buds hard with a chilli kick. I’ve backpacked around Thailand and loved the interesting street food the country has to offer everything from bags of crispy spring rolls to caramelized locus on sticks.

Beef Panang Curry

Beef Panang • 2 tbsp sunflower oil • 1 can / 400ml coconut milk

To make the paste simply process all the ingredients together to form a paste, or use a pestle and morter by first crushing the seeds and then adding everything one by one, until smoothly pounded.

• 450g good quality beef (I recommend rump steak), stripped

Heat the oil in a frying pan.

• 1 - 2 tbsp fish sauce

Add a third of the coconut milk, when it sizzles and starts to bubble add all the paste.

• 1 lime, juiced

Cook on a high heat, stirring all the time and cooking out the flavours in the paste. As it starts to boil down and dry, add a few more tablespoons of coconut milk, until all the coconut milk is gone or the oil starts to appear. The mix should not be too to dry so that it sticks or burns but not too saucy either.

You can make this fresh or buy it from an Asian supermarket.

Add the beef, still cooking on high and stirring all the time until the meat has browned. Add the lime leaves, sugar, fish sauce and lime and cook for a few minutes more until the beef is cooked but still tender. Serve with a sprinkling of shredded lime leaves, chopped coriander leaf or Thai basil. Perfect served with plain Thai Jasmine rice.

• 6 - 8 lime leaves, shredded • 1 level tsp light brown sugar

Penang Paste

• 1 tsp each of coriander seeds and cumin seeds – dry fry • 4 - 5 dried large red chillies, soaked in boiling water for 15 mins • 1/2 onion, chopped • 2 inch fresh ginger, chopped • 2 fresh lemon grass, chopped • 2 cloves garlic, crushed or chopped • 1 tbsp fresh coriander roots and stem • 2 generous tbsp roasted peanuts (or 1 level tbsp smooth peanut butter) • 1 level tsp shrimp paste • 1 heaped tsp tomato puree (optional) • 1/2 tsp or a good pinch of salt

Garnish (optional) • 2 - 3 lime leaves, finely shredded

Have you ever mentioned buying a coat for your dog and been laughed at? Told that dogs are made to live outdoors and naturally adapted to the cold and wet? Their wolf relatives certainly are, but modern-day dogs have undergone a great deal of selective breeding in the 20-40,000 years since they split from their wolf cousins. That means some dogs may need to wear something to keep them dry, warm or both when it’s windy, wet or snowy—and in extreme weather, most dogs will benefit from a raincoat.

Are some dogs more likely to need a raincoat?

Buying the Perfect Raincoat for Your Pooch There are numerous dog raincoats available, so to help you choose the right coat for your cuddly canine, it’s worth considering the types available and what you and your dog require from a raincoat. • Thickness and warmth Some raincoats are thick and padded, or have an inner fleece lining, while others are the dog equivalent of a mackintosh —waterproof but very lightweight, simply designed to keep your dog dry rather than offer protection against plunging temperatures and chilly winds. • Coverage Many dog raincoats cover little more than your dog’s back, while others have chest and/or tummy protection. You can also get trouser suits—some with mini-trousers and others that look more like overalls, covering your dog right down to their paws! Other coverage features include storm collars and hoods —some removable and some not. • Features Reflective strips or material can help you (and drivers or other walkers) spot your dog in bad weather or poor visibility, and some dog raincoats even have pockets so you’re your dog can carry their own treats and poo bags! If your dog’s collar will be sitting under the raincoat, then check it has an opening for a harness or lead (a few designs don’t). • Colour, size and style Some dog raincoats are available in high-vis colours, helping with visibility. Always check the dimensions of the available sizes and measuring instructions carefully. It’s best to measure your dog for a coat when they’re standing up. Length usually refers to the measurement from your dog’s collar position to the base of

Baked Lemon & Lime Cheesecake Cheesecakes go back before the Romans and it was the Romans who introduced them to us. We’re making a New York cheesecake here which is simply a baked vanilla cheesecake, often served with a fruit compote. BISCUIT BASE

LEMON AND LIME FILLING

225g ginger biscuits or digestives, crushed

400g cream cheese

100g butter, melted

200g crème fraîche or all cream 300g 100g whipping cream 2 large whole eggs plus 1 yolk 100g caster sugar 1 tbsp runny honey Zest of 3 fresh lemons and the juice from 2 Zest of 3 fresh limes and the juice from 2

Make the biscuit base Simply stir the biscuits in to the butter until well coated. Line a tin, I used a 22cm/8.5in spring bottomed round cake tin but anything will work, just bear in mind the thicker the filling the longer it will take to cook. A thin filling in a baking tray will take about a third less. If the tin is non-stick line with greaseproof paper. Push the mixture down firmly and refrigerate until needed. Preheat oven to 180°C / gas mark 5.

Make the filling Whisk all the ingredients together to form a smooth pouring consistency. Pour all the mix in to the base. Bake on the middle shelf for 60 - 75 minutes until set around the edges but still slightly wobbly in the middle, but not runny. Make sure you check the cheesecake every 20 minutes during cooking, if the cheesecake browns turn the oven down a tad. Cool slightly before removing from the tin. Serve warm or for best results, serve chilled.

If you have an injury or condition that affects your mobility, balance or energy levels, or causes joint pain, then stairs can be a challenge—no matter what your age. It may only be when stairs become difficult that you realise how many times a day you need to use them, particularly if your study or your only bathroom is upstairs. Suddenly, your staircase is the enemy, stopping you going about your daily routine. What’s the solution?

Living on the flat You could stop using your upper floor and adapt your downstairs living area so that it contains everything you need, converting living spaces into bedrooms and bathrooms. But this can be very expensive and disruptive. If you share your home, these adaptations can affect the day-to-day life of those you live with, and your relationship with them.
