Rebellion Timepieces Re-Volt Ronaldinho: watchmaking is a celebration! Rebellion Timepieces’ brand new Re-Volt Ronaldinho, imagined hand-in-hand with the Brazilian football star, reflects his personality perfectly: compromise-free! No footballer could be better than Ronaldinho to epitomize passion for competition, a creative spirit and resilience Given his swiftness, his abilities and qualities, football fans have compared him to Pelé Ronaldinho’s versatility on the pitch has made him a real free spirit. He’s unclassifiable, has an offbeat personality and delights in pushing beyond his comfort zone and heading off the beaten track As a man of integrity, Ronaldinho lives life to the full without making concessions! His daring, maverick style is perfectly in tune with that of watches imagined by Rebellion Timepieces.

Nicole Buffett, the granddaughter of legendary investor Warren Buffett, has made a living off of NFT. Nicole Buffett, founder of Nicole Buffett Studios, talks about her studios and Zagaday.com. She identifies herself first of all as an artist, then as a writer and speaker who believes in the power of art and kindness to heal the world

What brings you to the majestic Madrid ?

Well, what brught me to Madrid was the Jaboy Conference. This is my first time in Spain, and it's such a pleasure to be here. After having met Jaboy and the group, everything has opened up for me to experience Madrid and give a speech at the event. I live on a 2-acre farm, and I have kind of attempted to develop my own art sanctuary there This community includes an organic farm as well as my art studio and enables me to work in nature when I am not spending time with my family in Los Angeles, so I have the best of both worlds

Web 3 and AI are important topics to you, why?

The first panel that I spoke on in Madrid was about Web 3 and AI, how they impact culture globally, and the implications that they have on humanity and our culture And also how it has had an impact on my work as an artist I have been pretty immersed in that word since it began, being arguably one of the first traditional artist women to enter this creative space of Web 3, which was really exciting. Thus, transcending my traditional fine art into a digital context has been a really interesting journey for me

How did this opportunity arose?

This opportunity arose because of the Club House and the pandemic, which became at that point the only opportunity to connect with people globally, basically exhibit my work in this digital context, and continue my career. From there, it activated my career more; the constraint of the pandemic propelled me to a much greater extent than I would have been inspired to otherwise My collector base is all over the world, and I started using Twitter for the first time, allowing for direct communication with so many different people and talking about my art So it was a blessing in disguise.

Thus, the website with all the work that I have done over the past two decades, which was already sold, meant that I was in a transition in my career anyway. So it happened that I moved to make NFTs, and this was then happening in real time. I would make NFT collections, which would all sell out In the first year, three out of four NFT collections immediately sold out. I would also send the original pieces of art to the NFT collectors, and that is something that I have done from the early stages So this technology became a new layer of my creative technology, and with all the parts of the process related to cryptography and cryptocurrency, as well as organizing and managing my content, it all together became a whole new dimension (This led to Nicole being listed as one of the Top 50 influencers in the NFT space by Fortune Magazine, alongside Paris Hilton )

Tell us about your process of creative state of mind and creating art?

I am getting into the subtle body experience of emotion, using a different emotional intelligence to guide me, and taking decisions without really following my instincts. It can be described as a primordial thought process I allow myself to process what I shape. I love to start the process with a method that I developed involving water, where I have a white canvas and start by applying water to it

I work in nature, usually with paintings placed flat on the ground; my work is really painting with the forces of gravity

So the painting almost imitates the ground with its surfaces and shadows from the sunlight falling onto it So the painting is using me to make it And I design the panels and work with a friend of mine, an amazing carpenter in San Francisco, to cut different shapes in a basic plywood panel that I paint on to give the illusion of surfaces and shapes that are cut out of the space. This is the actual place that I projected on the painting My works of abstract surrealism have physical dimensions, and the space thus becomes material

What are the key symbols and emotions that you seek to evoke trough art?

The shapes that I chose have a lot of meaning One of the things that I like about abstract art is that it allows the viewer to bring their own meaning and associations to the work, and I like to enable the viewer to enter this subjective world of emotions And I am not imposing a preconceived idea here, but only proposing the space that I invite you into and inviting them to define their subjective experience of it. African music is also a big part of my work and painting process in the way that it inspires me. I also play an instrument and am planning my first trip to Senegal to attend a music workshop

We, as humanity, are connected as a nuclear family... indeed we are sharing everything, and how we do that and the structures and mechanisms that regulate this through systems of autonomy inside a shared collective are important to understand. This includes not only the resources but also the physical space and financial exchange. This is how we need to think of ourselves as a society that is organized like a nuclear family.

As I became more and more trained as a painter as a student of art professors, I also learned from a professor that an artwork is not necessarily more valuable if you spend more time making it He argues that an artist's whole life experience is projected into a particular work, and it should not be underestimated that even when an artist is not working in his studio, the combined impressions and information from the world around him are influencing the artwork. Thus, everything that happens to me as an artist also becomes part of my work, regardless of time.

You said that you come from a "family of artists"?

Erica, my twin sister, who is a mother, my best friend, and a jewelry designer, makes pieces that can be used in meditation and are often made of 108 beads Each collection at Zagady com supports an environmental or social cause and has an original physical piece attached to it, such as a painting or one of these jewelry creations, that has been paired with a digital asset, such as an image or a video, that the collector can save to their own Web3 wallet

Speaking about the environment, pandemics showed us that Mother Nature was our savior and that we are nature and part of nature. It is the opposite of the 1960s utopian idea of community that imperatively shares everything.

LuxuryWatch Market'sShifts -

At the peak of the luxury watch market in early 2022, Rolex stainless steel models traded at 3x their listed prices; meanwhile, Patek Philippe Nautilus models traded at more than 5x their listed prices."

External forces such as global stock markets that have shattered the confidence of any retail investor that has suffered declines of not less than 20% YTD conservatively, and can go up to 80% if it was a highly speculative portfolio Another external force is the so-called transitory inflation that hasn’t yet shown any sign of abidance even after the FED's interest rate hikes, and that’s a massive concern to speculators that face a risk of the FED increasing interest rate hikes as a benchmark Internal forces, such as overleveraged investors that entered the market in its best times thinking it was a money-making heaven, now face the reality of the market's drawbacks and may have to dump inventory to meet leverage obligations.

Economics 101

The luxury watch market post-pandemic has seen a lot of self-proclaimed gurus that lack knowledge of the global market's economic state, which may be one of the many reasons for overinflated prices

At the peak of the luxury watch market in early 2022, Rolex stainless steel models traded at 3x their listed prices; meanwhile, Patek Philippe Nautilus models traded at more than 5x their listed prices

Don’t blindly follow someone, rather follow the market's whispers and try to hear what it is telling you The more inexperienced individuals enter any market, the more it is exposed to overinflated prices © Courtesy of Tiffany.com

The luxury watch market, being an alternative asset class that gets influenced by traditional assets, has started to correct, but the secondary market hasn’t been looking great. Markets are usually affected by both external and internal forces

When interest rates are low, investors get the chance to speculate more on risky asset classes that generate abnormal returns However, interest rates can’t stay low forever or else it will cause inflation, mispriced assets, and many other complications The luxury watch, like any other alternative asset class postCOVID-19 that has gone through abnormal, unjustified growths, must come back to its mean prices, if not lower, due to current economic and political complications In addition to the above, the gray market has shown signs of being very manipulative in terms of some charitable auctions, or maybe even call it the free publicly announced tax write-off.

The tax system's loopholes put some alternative asset classes in danger of inflated prices and may be one of the causes of a market's correction The tax system is one of many that add fuel to the fire; however, it is not as impactful as the amount of wealth low interest rates and cryptocurrencies have caused.

Chaumet's Wa

Chaumet celebrates more than two centuries of fine craftsmanship and savoir-faire that adorn some of the most stylish women in the world Chaumet's new high jewellery collection was presented this July in Paris with prominent guests attending and cinema stars.

Since its foundation in 1780, Maison Chaumet has drawn inspiration from the elements of nature, among which water and flora play a major role Currently, the Maison's heritage of savoir-faire and craftmanship is highlighted in the large exhibition 'Botanical –Observing Beauty' in a collaboration with the Beaux Arts de Paris at the BeauxArts de Paris Crossing visions, eras and media, this original exhibition highlights the natural world that is represented and celebrated through the universal lens of art and beauty Chaumet masters the anguage of art and with this new collection, the Maison conveys the sea wisper to jewellery-

making The Maison debuts a High Jewellery collection for the first time entirely inspired by the sea.

The Chaumet's sea contains unseen aquatic flora and fauna beauty, and Maison's contemporary gaze transforms this world through rich colour blocking, in elegant sea horse shaped ladys watch, or sea shell brooche, with determined linear geometrical motifs, and flowing corals, all richly embelished with superior traditional crafts of gemmsetting. For its aptly named "Ondes et Merveilles de Chaumet" High Jewellery collection, the Maison pays homage to the rich sea world and introduces a unique jewellery language of the sea The new High Jewellery collection, which is also an extension of Torsade de Chaumet, the Maison’s previous High Jewellery collection

The Comète des Mers parure (above) adapts the reflection of stars in the sky glistening on the sea bed Rising on a ball ring with a pearl body, an exceptional, almost round, natural pearl pairs the infinite delicacy of its pale blush pink hue with its extraordinary weight of 55 grains The brilliance in its multicoloured star comes from a fascinating inner life of a treasured padparadscha Padparadscha sapphire, famous for its majestic orange-pink hue on the outside and the refined interior shades in pink, adds to the translucent sea theme

The notion of waves and movement is also explored in the undulating necklaces through the interaction of volumes, heights, and diamond cuts.

Chaumet colours the collection with the seas

In the story of the house, the Déferlante parure which captures the Maison signature such as head jewels, the toi et moi and the tiara are redesigned to be worn in a contemporary way: Several different looks are possible thanks to a full line of the one-of-a-kind transformable pieces: a head jewel becomes a brooch, a sautoir transforms into a short necklace, the climber earring has two ways to wear it, and the 6.05-carat diamond transforms from a ring covering the finger bone to a solitaire mount. The sixty-nine works in the Ondes et Merveilles de Chaumet collection capture the splendor and diversity of the oceans around the globe The colored stones translate the journey The voyage is translated by the stones that colour the collection with all the nuances of the seas Each has its own story to tell, but all convey an emotion arising from an encounter with the Maison’s gemologists

The intense red spinel and bright blue sapphire set For example, the Escales parure (top image) perfectly illustrates the art of colour central to the Maison Inspired by suspended time in harbour, when the sails are lowered and the engines cut, the Escales parure perfectly illustrates the art of colour central to the Maison, featuring a row of spinels in an exceptional brick red hue set out against sapphires, evoking translucent waters The narrative impact of this chromatic combination imbues a ball ring and pear-cut diamond drop climbing earrings

Set with a pear-shaped Paraiba tourmaline crowned with a tiara of spinels, another ring evokes the rocking motion of boats at anchor, their reflection imperceptibly shifting when a speedboat passes offshore (left)

With the Ondes et Merveilles de Chaumet collection, the artisans of the 12 Vendôme workshop are not only honouring the jewellery craftsmanship of which they are both the guardians and the transmitters Their virtuosity is extended to sensational timepieces like the new High Jewellery watch made to resemble gracious sea horse, and sculpted in white and rose gold, set with cushion-cut and oval-cut red spinels, round sapphires, round Paraiba tourmalines, marquise-cut and brilliantcut diamonds

Characterised by modernism, and athletic spirit, the Maison successfully introduces new mode to curating a High Jewellery collection. See more on Chaumet com

Savji Dholakia

Founder and Chairman of Hari Krishna Exports

Today, 2 billion people live without safe drinking water The [UN] Water Conference is a tremendous opportunity for all stakeholders to come together with renewed conviction and work towards solving the water crisis with urgency.

What work is Hari Krishna’s philanthropic arm, the Dholakia Foundation involved in?

Our foundation’s core values are the upliftment of society and preserving the environment for the coming generations To achieve this, the foundation has a mammoth lake construction project and recently constructed our 111th lake in India I have a dream to eradicate the water crisis in India completely, and I don’t want to die until I realise this vision

Today your enterprise has a turnover of over $1.5Bn. Your story is truly an inspiration-please describe your journey What advice would you have for the younger generations?

Copyright

This spring, Hari Krishna's Dholakia Foundation was the only gem and jewellery organisation to attend the UN 2023 Water Conference, held at UN Headquarters in New York, alongside other attendees including the Bill & Melinda Gates Foundation, Deloitte Consulting, Inditex and Gallup. The Dholakia Foundation has recently completed building 111 lakes in India which conserve 7 billion litres of water, stretching over 100 acres each, which have turned desert into green landscape and which are benefitting the livelihoods of 200,000 farmers

During a Dholakia Foundation gala dinner in New York in the week of the UN 2023 Water Conference, Indian diamond manufacturer Hari Krishna which supplies diamonds to Tiffany & Co and which is a member of the Watches & Jewellery Initiative 2030 (started by Kering and Cartier), announced its Dholakia Foundation is now building 75 further lakes in India in its mission to eliminate drought, disease and economic hardship caused by acute water shortages

Dholakia who left school and his village, Dudhala in Gujarat, aged 12 due to water scarcity and poverty, to become a self-made Indian billionaire, holds the Padma Shri award, stating, "I want to ensure our knowledge unites and helps other diamond-producing nations and other countries. I do not want to die until I have solved the water crisis "

I left school at the age of 12 and dreamt of making my fortune in the diamond business after observing poverty around me due largely to the lack of water resources. My first job in the diamond business was cutting and polishing diamonds, and I then progressed to the role of a broker. My entrepreneurial streak remained alive, however, and with the support of my brothers, I started Hari Krishna Exports I wish to continue our legacy of giving back to society and achieve my dream of eliminating the water crisis and making a difference in millions of lives

Coming from a modest background, I feel it is vital for our second generation to learn the value of money and understand the hardships faced by the common man In our family, we have a unique way of training our future generation, which I implemented with my nephews and my son Dravya – I gave them 500 rupees. I left them to fend for themselves in a new city with no help and away from the trappings of luxury. This experience has taught them the importance of hard work, self-sufficiency, and the value of money. This experience was a challenge for them as they had to navigate a new city, find work, and complete the tasks without any assistance. They learned to adapt to different situations, communicate effectively with people from various backgrounds, and manage their finances By requiring them to complete four jobs, they learned the importance of hard work and developed a sense of accomplishment from achieving their goals

Overall, this training method proved effective in instilling important values in our family's future generations. We believe that these experiences will help them develop into responsible, compassionate, and successful individuals who will continue to make a positive impact in the world

Dior continues to celebrate women leaders and artists with haute couture show that takes place just days before Dior Couture gets a new CEO, its first female CEO, Delphine Arnault thus two powerful women will lead Maison Dior, where Creative Director Maria Grazia Chiuri, who not only re-steers Dior towards more Italian and architectural aesthetic that characterised Dior during its Gianfranco Ferré era, but she is also the very first female Creative Director for Dior Dior Haute Couture Spring-Summer 2023 lifts up the role of feminine artists who questioned the archaic socioanthropological construct Bringing together references from the Maison’s archive as well as integrating the bright energy of the American artist, Joséphine Baker, Dior is again highlighting the importance of human touch, attention to detail, and traditional savoir-faire that stands out in an increasingly virtual world.

The Couture collection continues to go further back to the roots of this discourse and aptly collaborating with contemporary American artist Mickalene Thomas for the design of the setting of the défilé, with her inspiration being Black female role models that broke racial barriers by appreciating how the couture is a way to celebrate social change and individual, Chiuri and Thomas highlight some of the most iconic women of this movement

As the défilé began, each look was strong, as if projecting not only Baker's style and artistic force but also the strength of the heterogeneous, eclectic group of thirteen phenomenal black women, depicted as giant portraits and elaborated with embroidery conceived by the Chanakya ateliers and Chanakya School of Craft across a printed textile base on the walls

Haute Couture Spring-Summer 2023

Gaurav Gupta G

aurav Gupta who graduated from Central Saint Martins makes his official debut during Paris Haute Couture Week, aptly presented at the Indian Republic Day, 26th January Gupta highlights India in his collection in many different ways, often exploring the themes of surrealism, Indian history and rich tradition. By fusing on the traditional methods of building and adornment with his vision of the future,

he masterfully narrates the concept of infinity in his spring-summer 2023 couture collection Gupta's fascination with the ancient Egyptian civilisations, and how it explorations on time and metaphysics is also incorporated through elaborate embroideries and almost sculpture-like

creations Each look has original and timeless twist to it; taking inspiration in the Sanskrit term for zero, shunya (Śūnyatā, शयता), which was developed in India, as the first modern equivalent of numeral zero, by Hindu astronomer and mathematician Brahmagupta in 628 AD This revolutionary discovery and the possibility of advance studies of space and time also inspires Gupta's first official runway show during Paris Haute Couture Week, "I wanted to delve more deeply into our mental landscape to develop an idea that is subliminal" the designer said.

His sculptural draping forms in indigo electric blue in satins, chiffons, organzas represents a sense of futurism of dressing in a way that was absent in other shows in Paris

Georges Hobeika H

obeikas' latest collection reflects not only the values of the designer duo Georges and Jad, but the importance of the relationships and conversations between family or friends in many ways To emphasise this, the show’s cast includes a number of real-life friends of the Maison, walking as couples and pairs in order to create the experience of a once-in-a-lifetime moment at Paris Fashion Week; to name a few: Leonie

The first day of Paris haute Couture week had a strong American vibe; front row occupied by American artists and celebrities at Schiaparelli, or Dior, where the défilés grew to encompass the entire setup. But don't runway and models take all the attention now? They did at Hobeika's show. A new era for the Maison began six months ago with the Fall 2022 Couture collection presented by Co-Creative Directors Georges and Jad Hobeika.

Half year fast forward for their second haute couture jointly signed collection titled 'Small Talks', they present more than seventy original looks, as unique as the Maison’s clients and friends. Underlying this concepts are familial bonds, and the powerful link with the house’s archives that date nearly three decades back in time

Alexis Mabille A

lexis Mabille opens with a golden show aptly located at renowned auction house Christie's. But there were more golden moments on the day 2 of Paris Fashion Week, from Stéphane Rolland's golden hour inspired haute couture to Celia Kritharioti's vision of Greek sun and alluring shimmers, to the creations by Ronald van der Kemp and more this day.

For his Haute Couture Spring-Summer 2023, Alexis Mabille presents one of his boldest shows in terms of playfulness and uncompromisingly couture collections consisting of 36 undeniably powerful and youthful looks

The collection's theme "Color Addict" is fully represented with a diverse colour palette and starts notably with golden tones The attention is on draping, Mabille's favourite Hellenic silhouette is perfectly presented in colours that range from bright gold to dusty olive Other looks feature well tailored pointy shoulders with wide floor length dress, another classic Mabille silhouette However this time the designer refrains from embroidery using it very rarely and letting the outfits and colours speak their own language - a couture poetry.

Mabille's show, like the défilé's soundtrack is always upbeat, and this vibe is translated by models that swayed their way down Christie's Paris premises-where Mabille's clients feel at home, the front-row guests included artists including Ellen von Unwerth, Sasha Ray, the Hungs

Zuhair Murad

The Zuhair Murad Haute Couture springsummer 2023 show pairs the dexterous design from the Belle Époque paired with the reckless spirit of the seventies.

The show's mood evokes, "nights on the streets of the most mythical bay, young women frolic on Vespa's " Bringing the breeze of contemporary looks and the rich and dramatic color palettes of Cote d'Azur sunsets, the collection goes from bright pink to flame orange, with statement pieces in pale green, Caribbean blue, and fading yellow As the show progressed, the Belle Époque theme became more evident in the majestic dresses fit for grandiose chateau events Notably, Murad's Mariee appears to be an homage to the epoque of grandeur, when the centuries collide

The macramé-adorned wedding dress is unlike anything the designer has previously shown, and its understated labour is in contrast to many other highly embellished outfits, nevertheless, it got a well deserved applause. Reflecting on the history of macramé-style knots , known from the carvings of the Babylonians and Assyrians, the finale underlines the designer's masterful touch; paying hommage to the tradition while keeping his mind in the present This seemingly effortless pairing is the reason for Zuhair Murad's international popularity and the reason why his dresses are so well-suited for red carpets in LA, French Riviera, or dynastic wedding ceremonies Murad's couture looks do not replicate history; rather, his couture proposes casual elegance that captures the freedom and all the modern opportunities.

VALENTINO

ANATOMY OF COUTURE Spring Haute

Couture from 2022 by Pierpaolo Piccioli questioned the feminine figure as a socio-anthropological construct.

This year's Haute Couture collection continues to go further back to the roots of this discourse exploring a new way to examine this discourse by introducing the concept of Valentino Le Club Couture, a haute couture collection for the red carpet and business meetings featuring an array of well-tailored business suits for all genders Indeed Piccioli stated that the most ordered couture look was the opening look with black tie, Considering everything that is required to produce and present such collections, the Maison collaborates with La Réserve des Arts, a French nonprofit organization with the

aim of supporting the circular economy applied to the creative sector, with its many facets and interlocutors. At the heart of the work of the organization is the salvaging of sets, props and visual merchandising products to which it gives new life, offering them to a Community made up of over 10,000 members, students and art professionals who can buy them for their own creative work

Masterful colour blocking is in Valentino's DNA, this time again crowned by Irish haute couture miliner's feather hats and pieces At Valentino, Couture is a sphere of fantasy and freedom, of the unique and exceptional, where craft is not a fetishistic reflection of value but a means and methodology to achieve improbabilities, to challenge perceptions, see also Valentino com

Fatih Tutak

Chef at TURK Fatih Tutak, MICHELIN star** restaurant, Istanbul

Chef Fatih Tutak was recognised with a debut two-star showing at the award ceremony, when his TURK Fatih Tutak restaurant made history.

Chef Tutak's successful concept is "Cooking with Time", which entails the importance of both time as a cooking construct knowing when is best to serve an ingredient at its optimal taste and time as an indefinite continuation of life and his thirst for creativity

Chef Fatih Tutak, who was born in Istanbul in 1985, has spent the majority of his career working in some of the most prestigious dining establishments in Turkey and abroad, including the Ritz-Carlton Cam in Istanbul under renowned chef Paul Pairet and, in the Far East, in Tokyo under Seiji Yamamoto at the three Michelin-starred Nihonryori Ryugin, before he was given the opportunity to work alongside René Redzepi at the lauded Noma

Where did your passion for Turkish cuisine start?

Chef Fatih Tutak: We wanted to reflect our own perspective on Turkish cuisine and establish TURK as a distinctive dining destination for the nation when we made the decision to open it Therefore, every aspect has been covered, including architecture, design, music, culinary expression, and beverages We set out to develop a complete experience centered on expressing and providing Turkish cuisine I worked as a cook for a very long time and alongside many excellent chefs.

How was it to launch your first restaurant in the late 2019, and then receive two Michelin stars in 2022, in spite of the pandemic and all the restrictions?

Chef Fatih Tutak: It was a big challenge, and this restaurant is also a reflection of what I learnt from them We wanted to offer this cosmopolitan, global, and gourmet side since there are many excellent restaurants in the country, and I respect what they are doing

"If I don’t find key ingredients, I am forced to change the menu; this pushes me to create It is also why Turkish cuisine is so tasty because of the creativity of chefs that arises from an appetite for variation and the simplicity of its ingredients. We have so many ingredients that we prepare ahead of time Because we must respect the environment food becomes precious to us, like a diamond -

We wanted to open fantastic restaurants where both local and foreign customers could experience our food and where our staff members could develop professionally from the beginning of their employment Turkish food has a rich history as well as many facets Although Turkish BBQ and street food are well-known, they only make up 1% of Turkish cuisine. We decided to do more as a result and present Turkish food at its highest level

How would you summarize your early career working with celebrity Chefs in Noma, in Copenhagen or in Tokyo?

Chef Fatih Tutak: My professional development and growth have greatly benefited from working with such outstanding and well-known chefs I can use all I've learned about their philosophy, cooking methods, and vision in my own cooking It was an honour for me to be in their kitchen at such a young period in my career because they are both significant components of my profession

Our goal was to start our own restaurant serving Turkish cuisine The detail of every single dish is enhanced by complimenting beverages and music. We sought to improve the entire dining experience, and in doing so, I hope to establish a new, universally recognized vocabulary for Turkish cuisine

What are the advantages and benefits of having such a unique destination and work environment as Istanbul?

Chef Fatih Tutak: Istanbul is one of the most multicultural cities in the world, bringing together so many different cultures from the Byzantine, Ottoman, Turk, Armenian, and Kurdish peoples, and its unique history and journey define the city. All this gives Istanbul soul and a creative vibe. It's incredibly inspiring everywhere you go, whether you're walking on a boat I feel so lucky to have been born and raised here Every time I take a walk outside or go on a tour of the city, it nourishes my soul, which translates into and is reflected in my cooking

You developed a tasting menu of "New Turkish Cuisine"?

Chef Fatih Tutak: Turkey has its own cuisine. Thus, we are inspired by many inputs, but we remain true to our Turkish roots, so when you have a dish, you can always discern the taste of Turkish cuisine

In terms of cooking technique, we can apply all cooking techniques, which can be inspired by Danish, German, or French cooking. Cooking techniques are very universal in general

The different cooking techniques (eg salting, fermentation, and preservation) were developed as a response to the lack of technology that could preserve food Today we can pair these with the new technology and develop innovative ways of cooking that can enhance or create new flavors

In my opinion, there are no limitations, in terms of the availability, inspiration and exchange of ideas today. Still, we never change the traditional dishes; we need to respect the Turkish tradition, which means we do not copy or replicate them

We have a couple of traditional dishes on the menu now; they are signature dishes of Turkish cuisine, but we don't change them to show them off. If anything, we can elevate them using the best of what’s in season, improving cooking techniques, and even combining art, science, physics, and entertainment to tell the story of a particular dish

How can food and flavours can stimulate our mood?

Chef Fatih Tutak: Food is very sentimental for me because it touches your soul and heart. We hope that all our menu experiences will connect guests to cherished memories

Turkish guests understand this well, and they can relate to it instantly We don't only serve food; we present a menu that feeds the soul. We work with a micro-seasonal menu, so we don’t change the menu each season, four times a year, but rather almost every four weeks.

Why is "cooking with time" important for your menu?

Chef Fatih Tutak: We catch nature and its products at the right time We make use of whatever nature provides us during its peak season, whether we preserve it or cook it over time We capture the peak quality and flavors of the season's fruits and preserve them by working with them and then allowing them to rest, age, and ferment We then reuse them the following year. This is our philosophy of "cooking with time"

We have so many ingredients that we prepare ahead of time, because of our principle of continuity and because we must respect the environment. Food is precious to us, like a diamond Therefore, we need to show the climate and seasonality of Turkish geography because we use everything from here Every part of this country has different terrain, and we focus to find the best-quality products and whose production would not be harmful to the land, water, and sea.

Our guests are always served a sampling menu consisting of multiple dishes. We have almost 50 dishes on our menu. (This interview has been edited, see all on moralmoda com)

Now we are witnessing an evolution in people's eating habits, and people eat less meat. A lot of plant-based dishes from the Aegean region are a good example, and they naturally use high-quality local olive oils "

" Solutions do exist, as does the will. However, the scale in which we need to take action means that we must give these solutions and this will a new dimension. Above all, it means that we must work together in a coordinated manner with companies, scientists, financial players and all those who make a difference. Without this coordination we will not succeed in giving the various initiatives mentioned here the full scope that they deserve” - HSH Prince Albert II of Monaco.
