Meet Morgan French
M
organ French has two loves in her life besides her family: Puerto Rico, where she was born and raised, and Manchester, where she mixes exquisite cocktails at The Silver Fork. The flavors of the Green Mountain State and the Caribbean U.S. territory work their magic in many of French’s cocktail creations. One of them is the Plantain Bees Knees made with Bar Hill Tom Cat gin and honey-roasted plantain puree, lemon juice and a saline solution of salt and water at a 1-to-16 ratio. “It is my homage to my favorite places in the world, Vermont and Puerto Rico. French’s unique libations. It is made with tequila, Crème de Violette, lemon juice and egg whites, which make it super frothy and sweet. French also enjoys educating her patrons about the cocktails they enjoy. For instance, there is a Clarified Pina Colada on the menu. A clarified drink is the oldest way to make a batch cocktail, French explains, adding this is the way sailors made punch when they crossed the Atlantic to the New World. “I do a pina colada version that takes 24 hours to make, and it’s really good,” says French, who makes two gallons per week.
“I really enjoy the story of what a drink can teach you and all the thought that goes into it.” French, 28, was born and raised in Puerto Rico after her parents moved there. Mark French, a chef, worked for Hilton International and later opened a restaurant on the island with her mom, Melody French. She and her family lived in Ponce, which is about an hour outside of San Juan. “When I was 16, we moved to Manchester to open The Silver Fork and be closer to family. I fell in love with this place. French’s mother, father and her brother, Noah, a sous chef, all work at The Silver Fork. French remembers she had an immediate passion for mixology when her mom first taught her to bartend at 18. But soon after she learned how to make the classic cocktails, French became a self-professed “cocktail nerd.” “I understood it, and I definitely gravitated toward it at first,” she says. “But I didn’t think that would be my passion. I went to school to be a jeweler and metalsmith. I tried working in a jewelry shop, and I liked the technicality of it, but I missed this industry. I was born and raised at a bar and born and raised doing my coloring books at a bar.” In September, French was working on the restaurant’s fall cocktail menu. One new cocktail she created is a Chai Sazerac, which combines Mad River Rye with chai bitters and chai syrup instead of just sugar. “You get a little bit of caffeine,” she says. French also looks for ways to use locally made ingredients. For example, one of her friends makes a line of wellness items called Wolfpeach. One of those items is different sea salts for cocktail rims. French serves as the restaurant’s bar manager and runs the front of the house. She has two other bartenders, Camille Horace and Brett Sikora, who work with her. French remarks that Horace is a master of the dessert cocktail, and she enjoys collaborating with her to create various drinks. Sikora is about a year into his mixology career, and he is learning the craft from his colleagues. French's greatest satisfaction comes from seeing her customers express pure delight when they enjoy one of her drinks. “They get really excited about it when I am really excited about it. People are really curious.” Their curiosity opens the door for French to tell them how she creates their cocktail and what inspires her. They will also learn about the history of their drink and many other things that make them enjoy it even more.

History plays a huge role in The Silver Fork. Their present location is at the former 100-year-old Mark Skinner Library, where French used to do her homework after school. “We took the old bookcases from the library and turned it into our bar. You’re drinking on knowledge,” French says. “It’s just a really, special environment that the drinks get added to and vice versa.” According to French, the barroom used to be the children’s room. “My joke for that is the children’s room turned 21
and turned into a bar.” The Silver Fork has been in its current location for three years and was only a short distance away for 10 years after the family moved to Manchester. When asked why the family calls their restaurant The Silver Fork, French clarifies that it's not a play on a silver spoon as some may believe. When her family lived in Puerto Rico, French says her father’s culinary team competed in many competitions, including the Golden Fork.

They won second place, or the Silver Fork. One year, French asked the judges why they came in second and they told him it was because their Puerto Rican establishment did not have valet parking. “We were always proud of the Silver Fork award, because who needs valet parking anyway?” In Manchester, the French family has succeeded in creating a casual, laid-back atmosphere where their patrons can enjoy great food and cocktails. “We want people to feel comfortable and at home in our home,” French says. Vermont is also blessed with a vibrant craft cocktail and spirits scene that is coupled with a strong sense of community, which French finds endearing. “I love serving people, and I love giving people a really fun, homey experience,” French says. “One day it would be cool to have my own cocktail bar.” Follow The Silver Fork and Morgan French on Instagram @thesilverforkvt and @morgancfrench.

The White Mountain Inn Arlington
The White Mountain Inn serves up all of the traditional Thanksgiving fare plus some additional entrees to delight your palate. Besides the unique pecan and fig stuffing, the inn also serves salmon, steak and butternut squash gnocchi. Pumpkin pie is just one of many desserts to enjoy after the big meal. Thanksgiving Margarita 1 tablespoon ground ginger 1 tablespoon sea salt 1 lime wedge 1½ ounces reposado tequila ¼ ounce allspice dram ¼ ounce amaretto 1 ounce pumpkin puree ¾ ounce lime juice, freshly squeezed ½ ounce agave nectar Roasted pumpkin slice for garnish On a small plate, combine ground ginger and sea salt. Rub the lime wedge along half of the rim of a rocks glass and dip the glass in the mixture. (For a finer texture, pound the ginger and sea salt with a mortar and pestle.) Add tequila, allspice dram, amaretto, pumpkin puree, lime juice and agave nectar into a shaker with ice and shake until well chilled. Strain into the prepared glass over fresh ice. Garnish with a roasted pumpkin slice.

was a great animal lover. He and First Lady Grace Anna Goodhue Coolidge received so many animals as gifts the press referred to the White House as the Pennsylvania Avenue Zoo. On Thanksgiving Day in 1926, Coolidge pardoned a raccoon from Mississippi that was sent as a potential Turkey Day entrée, according to history.com. Coolidge adopted the animal and named her Rebecca the Raccoon. He walked her on a leash and had Rebecca sleep in his bedroom at night. Granting the pardon to Rebecca was easy, because Coolidge said he had no interest in eating raccoon meat.

2 ounces WhistlePig PiggyBack Bourbon ¾ ounce WhistlePig Barrel Aged Maple Syrup 1 ounce freshly squeezed lemon juice 2 dashes of bitters 1 egg white
Garnish:
Fresh orange peel and/or cherry
Combine all ingredients in a shaker with ice and shake vigorously for about 20 seconds. Strain into an old-fashioned or rocks glass filled with ice. Garnish with orange wheel and/or cherry.
American Holiday Mule Ingredients:
1½ ounces Wheatley Vodka 4 ounces ginger beer Splash cranberry juice
Garnish:
Cranberry, lime, lemon and mint
Combine vodka and ginger beer in a copper mug and top with a splash of cranberry juice. Garnish with cranberry, lime, lemon and mint for the holidays.

2 parts Roku Japanese Gin ½ part green tea simple syrup (or agave) ¾ part fresh lemon juice 5-7 mint leaves
Garnish:
Mint sprig
Combine mint leaves and green tea simple syrup into a shaker and gently muddle to extract the oils from the mint. Add other ingredients and ice, shake for 10-15 seconds. Fine strain into a rocks glass over fresh ice. Garnish with mint sprig.
