NOTE

Over the years, I’ve become more and more of a fan of Christmas and the holiday season. It’s not one specific thing but rather a collection of all the many small things accumulated over a lifetime of holidays that make it my favourite time of the year. I’ll even go so far as to say that I’ve grown to love seeing the Christmas tree go up, which is a subtle admission that I wasn’t always the biggest fan of the tree… but now I LOVE it. Lorinda and I have been fortunate to spend Christmas in the US for the last two years. They go all out with lights, decorations and celebrations, and one of our favourite things to do is attend the tree-lighting ceremonies in each of the small towns close to where we live. Each town does its own parade, closes down the main street, and packs it with food vendors, exhibitors and a market. It’s also been a unique experience to have a ‘cold’ December where hot chocolate, winter jerseys and gloves are a standard as opposed to long summer days, a swimming pool and a braai. It has been memorable, but it has also meant that we have spent Christmases without all of our close family together in one place. This was tough because we’ve been doing Christmas together

for as long as I can remember. Shew! It’s hard having our kids on three continents. I know this is a common thing for so many of us nowadays and something no family enjoys. Fortunately, this year will be different as, once again, the Scott clan will be together. Three incredible weeks together plus we’re close to lifelong friends (who are really like family)! This is what it’s all about, right? We push through the days, meet deadlines, chase projects, and appreciate the gift of being able to work hard, but the real blessing is the ability to spend quality time with those you love - be it family, friends or the community. Our proverbial cups are filled when we’re able to connect with, laugh and hug those who matter the most. So, yes, I love this time of year but I think it’s because I know that every Christmas song, every decoration, every jingle and every bauble that I see go up in November means that I’m getting closer and closer to spending uninterrupted, quality time with the people I love most in the world. Yep, I’m a fan of Christmas and all it brings. To you and your family and friends, I wish you a blessed Christmas. I hope you enjoy all the Christmas bits and pieces we’ve put together for you in the magazine and I look forward to chatting to you again in the new year. God bless.

NAVIGATING MOTHERHOOD AND FINDING YOUR VILLAGE WORDS AMANDA LOW

W

e have all heard the famous African proverb, “It takes a village to raise a child”. I believe that the essence of this adage extends beyond just child-rearing. I believe it also takes a village to support a mom. It's no secret that becoming a mom is a joyful and rewarding experience, but it can also be challenging and lonely at times. While everyone has their eyes on the little one, I believe that moms need the support just as much when it comes to navigating motherhood. It is essential as a new mom to access support from one another, family members, friends, and reputable professionals. This allows us to feel connected, as we share and learn from each other's experiences. As a local Midlands mom, I am privileged to work alongside mothers who share a passion for supporting new moms. Our circumstances and backgrounds, as new moms, might have been vastly different - from locals with deep community connections to those who were new in town and had few connections, along with medical professionals and those whose babies were born during the COVID pandemic. But, despite these differences, we all had one thing

in common: an undeniable need for community. No mother can go it alone. Finding your village and building a strong support network should be an integral part of your motherhood journey. But where do you begin? How do you access such a supportive group, in which to immerse yourself and get involved? Of course, family and friends are always the first people to reach out to, as they are usually fully aware of your particular circumstances and can provide invaluable support as soon as it is needed. Additionally, you could consider joining a local mom’s group, where you can connect with a community of like-minded moms. Sharing stories and asking questions is a great way in which to build relationships. Finally, don't forget that the Midlands is brimming with dedicated professionals available to provide guidance and support. Take advantage of the resources that are offered to help you on this incredible journey called motherhood.

Tomato, Pea and LENTIL SOUP

with Coconut Sorbet and Garlic Bread leaves, oregano and chilli flakes. Mix well and sauté for five minutes. 2. Add the tomatoes and stir well, cooking them for 10 minutes to reduce the acidity. 3. Add the leek and carrot and cook for 10 minutes. If the mixture starts to stick, add a little water to help it along. 4. Once the mixture has cooked, add the lentils and vegetable stock. Bring to a boil over high heat, then reduce to a simmer. Cook for 45 minutes, stirring every 10 minutes. If the liquid gets too low, top it up with boiling water. You want a thick soup consistency. 5. Once the soup is ready, remove from the heat and stir in the peas and parsley. Season to taste.

INGREDIENTS For the Soup • 1 tbsp coconut oil • 1 brown onion, finely chopped • 2 cloves garlic, finely sliced • 1 tbsp fresh thyme leaves • 4 bay leaves • 1 tsp dried oregano • 1 tsp dried red chili flakes • 6 plum tomatoes, finely chopped • 1 large leek, finely sliced • 1 large carrot, scrubbed and grated • 1 cup uncooked brown lentils • 4 cups vegetable stock • ½ cup fresh or frozen peas • 1 handful flat-leaf parsley leaves • Salt and pepper • ¼ cup coconut cream

For the Garlic Bread • 6 clove garlic • Fresh rosemary • Olive oil • 1 ciabatta or any bread of preference For the Coconut Sorbet • 2 tins (4 cups) coconut milk • ½ cup desiccated coconut • ½ cup white sugar • 2 tots Malibu liqueur • 10ml glucose METHOD For the Soup 1. Heat the coconut oil in a medium-sized saucepan over medium heat. Add the onion and sauté for five minutes until translucent. Add the garlic, thyme, bay

For the Garlic Bread 1. Put on the oven to 160°C. Place the rosemary and garlic into a small bowl and stir together until well-mixed. 2. Place as many pieces of sliced bread as you want onto the baking tray. Drizzle olive oil (roughly one or two tablespoons) onto the bread slices and cover with the garlic mixture. Bake for 10 minutes until lightly toasted. For the Coconut Sorbet 1. Place all the above ingredients into a saucepan and bring to a boil. 2. Chill the mixture. If an ice-cream machine is not available put the chilled mixture into the freezer. Whisk every 30 to 45 minutes until frozen and allow for a light and fluffy sorbet. 3. When serving, place the soup into a bowl and top with a scoop of sorbet and a side of garlic toast.

Glazed Ham With Mustard Sauce INGREDIENTS • 1 ham (5 to 6kg) • 2 carrots, sliced • 1 onion, chopped • Freshly ground pepper • 2 cans beer (2 x 340mls) • 2 tins pineapple rings (reserve 250ml of the juice) • Cherries For the Glaze • 62ml mustard powder • 250ml brown sugar • 125ml apricot jam • 83ml white vinegar For the Mustard Sauce • 2 tbsp flour • 2 tbsp mustard powder (add more for stronger flavour) • ½ cup sugar • ½ tsp salt • 100ml sherry • 390g mayonnaise METHOD 1. Line a baking dish with foil (shiny side inside) forming a cross – big enough to wrap the ham. 2. Place the ham on the foil, skin side up. Put sliced carrots and chopped onion on top, sprinkle with pepper, and pour the two cans of beer over it. 3. Seal the foil making sure that the beer cannot leak out. This is important! Pour water around the sealed ham. 4. Bake at 190°C for 30 minutes per kilogram of meat plus 30 minutes over. 5. When cooked, unwrap and pull off the skin. Score the fat into diamond shapes. Decorate with pineapple rings, securing with toothpicks. Cherries can be added at a later stage when glazing is nearly done, as they tend to burn very quickly.

For the Glaze 1. Boil the reserved pineapple juice until reduced by half (125ml). 2. Add the mustard powder, brown sugar, apricot jam and white vinegar to the juice and boil until it thickens for approximately 10 minutes. 3. Set oven to 200°C. Pour half of the glaze over decorated ham. Bake for 30 mins, basting several times. 4. Pour the remaining glaze over and bake for another 30 minutes, basting. Put cherries in the centre of pineapple rings. For the Mustard Sauce 1. Make a white sauce with flour, mustard powder, sugar, salt and one cup of boiling water. 2. Let the mixture cool down. Add the sherry and mayonnaise.

Set the table and let the ham do the rest!


Island Salad INGREDIENTS • 2 tbsp coconut oil • 1 cup uncooked quinoa (preferably red) • Salt and pepper • ½ cup edamame beans, shelled • 2 nectarines, halved and pips removed • Olive oil • ¼ cup coconut flakes • 50g raw macadamia nuts • 2 handfuls baby spinach • 1 avocado, peeled, pip removed and cubed For the Dressing • Zest and juice of 2 limes • 5 tbsp olive oil • 1 tsp honey • ½ tsp red chilli flakes (optional) • 1 small handful fresh mint leaves, finely chopped • Salt and pepper METHOD 1. Heat the coconut oil in a medium-sized saucepan over medium heat. Add the quinoa and stir, allowing the quinoa to toast (roughly two minutes). 2. Add two cups of boiling water and a good crack of salt and bring to a simmer for 15 to 20 minutes. As the last of the water is absorbed in the saucepan, switch off the heat and cover with a lid, allowing the quinoa to steam for five minutes. 3. Once steamed, remove the lid and

spread out the quinoa on a baking tray, allowing it to cool. 4. Place the shelled edamame beans in another small bowl and cover with two cups of boiling water. Blanch for five minutes and then rinse with cold water, drain and set aside. 5. Slice the nectarines into crescent shapes (about 5mm thick). Drizzle lightly with olive oil. Heat a griddle pan over medium to high heat, then add the nectarines to the hot pan. Grill for four to five minutes on each side until grill marks appear. Remove from the heat and set aside. 6. Toast the coconut flakes in a small frying pan for five minutes until golden brown. Keep an eye on them so they don't burn. Meanwhile, roughly chop the macadamia nuts. 7. Spread the spinach leaves over a medium-sized serving platter. Cover the spinach with the cooled quinoa and add the edamame beans. Top the salad with the avocado, nectarine slices, toasted coconut, and macadamia nuts. For the Dressing 1. Mix all the ingredients in a small bowl and season to taste. 2. Drizzle the dressing generously over the salad and season with salt and pepper.

Mud Cake

INGREDIENTS • 350g dark chocolate, broken into pieces • 170g caster sugar • 185g butter, chopped • 5 eggs, separated • 45g flour, sifted • Cocoa powder, sifted • Icing sugar, sifted METHOD 1. Preheat oven to 180°C. 2. Place the chocolate, caster sugar and butter in a heatproof

bowl set over a saucepan of simmering water and heat, stirring until the mixture is smooth. Remove the bowl and set aside to cool slightly. 3. Beat in egg yolks one at a time, beating well after each addition. Fold in flour. 4. Place egg whites in a clean bowl and beat until stiff peaks form. Fold egg whites gently into the chocolate mixture. 5. Pour mixture into a greased 23cm springform tin and bake for 45 minutes until the cake is cooked when tested with a skewer. Cool cake in the tin. 6. Just before serving, dust the cake with cocoa powder and icing sugar.

he history of the Hilton Train Station is an interesting one, and one that doesn’t get enough appreciation. The property still belongs to Transnet, who reportedly did not have the funding to keep it maintained, so after a committee was formed by the local community, efforts were made to see what was possible with this historical beauty! Its heritage is now preserved by Hilton Steam Heritage Association, which started in April 2011.

Aboard!

Hilton Train Station The abandoned, dilapidated station was slowly repaired by a group of volunteers and local businesses. They painted buildings, cleaned up the property, and improved the site’s conditions. It has grown from a small museum to include various businesses that use the renovated structures and railway wagons. The income from these new ventures allows the Hilton Steam Heritage Association to upkeep the maintenance of the property. But, let’s go back right to the beginning…

The railway line that runs through the Hilton Train Station is part of the original line from Durban to Johannesburg, which opened in 1884, however, the actual station only opened four years later in 1888. A second line was opened in 1916 to accommodate the increase in train lengths and weight. This line ran through the same area where the Hilton Siding Centre now stands and it comes out by Groenkloof Road, which is where the rainbow bridge is located. A third railway line was opened

in 1960 in an effort to accommodate train lengths and reduce gradients. This line runs along the Cedara Tunnel entrance to the forests located behind Linpark High School in Pietermaritzburg. The tunnel is 6.2 kilometres long with a reported record of being the longest tunnel in the southern hemisphere until the 13-kilometre-long Cape Hex River Tunnels were built. The Hilton railway line served as a secondary line until 1987 when it closed due to the severe floods and a washaway located around Sweetwaters. The line that ran from Hilton to Cedara served until the

late 1990s. Reportedly, a volunteer group kept the steam trains in operation until 2006, utilising a workshop where Build It is now. Just a few years after this, the Hilton Steam Heritage Association took the station under their wing, wagons and all! They now have several locomotives (or ‘locos’) at the Hilton Train Station, namely 1 Class 1276, 19AR 696, 19B 1402, 15AR 1963, H2 314, and the old Sheldon breakdown recovery crane 184 from Masons Mill. There are a few other interesting historical details surrounding the train station. Firstly, it has a connection to

The Knoll homestead, which is now the The Knoll Historic Guest Farm. In 1925, The Knoll was owned by David Anderson Hendrie, who was also the Locomotives Superintendant for the Natal Government Railways and the Chief Mechanical Engineer for the South African Railways. He designed locomotives and coaches, which included the 1 Class type mentioned above. David’s grandson donated several historical items that are now viewable in the museum at the Hilton Train Station. Another fun fact: the 19B locomotive reportedly pulled the British Royal Tour Train in 1947. The station has also been the site for two groundbreaking

Opened in September, Whistle Stop Cafe is in the heart of the station, offering delicious treats and great coffee. Situated at the silver wagon, House of Nuts has the best dried fruit and nuts in town. You have to visit the vintage ice cream shop, Moo

Moo’s Ice Cream, converted from the station’s storeroom. They offer a variety of homemade artisan ice creams, delicious milkshakes and pancakes. creating items like wheaty bags, doggie beds, make-up bags, and aprons. Let’s take a moment to appreciate the Hilton Train Station and celebrate the rich history that lies between its tracks. While it may not be operational today, it is nonetheless worth a visit to get the feel of the olden days, with a modern-day twist.

remember, back in Grade 7, for one of our activities on our excursion camp, we were taken for a walk up to an opening. After the camp leader told us to turn off our torches and look up, the sky lit up with stars. Everyone was in shock as we had never seen that many stars before. We all lay down and our camp leader taught us a few basics about stars, like if you see one that seems to be moving in a straight line, that’s actually a satellite, and if a star seems to be changing colours from blue and red, it means it’s dying out and emitting gas before eventually exploding.

Midlands residents are truly lucky to have fantastic opportunities to stargaze. Because there is so much to know about the night sky, I chatted to local outdoor enthusiast Deon Small, who runs Berg Adventures and has spent many nights gazing up at the stars. He gave me some interesting insight about the beauty that is just above our heads. Deon says that, throughout the ages, mankind has been fascinated by the stars. Each population, from the Greeks (who named constellations after their gods and deities) to the San (who saw the nature around them within the clusters of stars), had their own interpretations of the night skies. Early explorers used the stars to navigate far off lands and even


LOCAL today we use the same stars to aid in navigation. “Stargazing is a combination of folklore and stories with more practical uses of the stars and a more modern interpretation of the constellations. In recent times, some of the fictional characters from the Marvel Universe have even been given their own constellations in an effort to rejuvenate astrology within a younger generation,” Deon explains. To get the best viewing of the night skies, Deon suggests downloading a star app to help you find the constellations and other interesting facts about the skies. Although the Midlands is a great place for celestial sights, he says that the best area to stargaze is the Drakensberg, far away from all ambient light.

Our Christmas Day feast is made up of local foods too - meat, veggies, chutneys, preserves, and even drinks - as we try to keep our spending in the local economy. We love the buzz of the Midlands over Christmas. It's a busy time for our business, which is rewarding. We also enjoy the gift giving and receiving - it's a chance to make everyone feel loved.

The Scott Family Sally, Dale, Ethan and Kellan Scott live in Howick. Sally is the co-founder and Creative Director of Caversham Textiles along with her parents, Ros and Malcolm Christian from The Caversham Press. The studio was housed in an old Wesleyan Methodist Chapel, built in the 1800s. Over the years, the chapel has extended to ultimately include the texile studio. WHAT IS YOUR MOST SPECIAL HOLIDAY MEMORY? My mom (Ros) makes Christmas extra special. The morning always starts with mince pies, Christmas cake and carrot cake. We are a more traditional family when it comes to Christmas dinner and the entire family contributes to the meal. This is a sit-down affair with turkey, gammon and a table laden with vegetables, gravies and sauces. This is usually preceded by a plated starter and ends off with Christmas pudding, malva pudding and trifle. WHAT IS YOUR FAVOURITE THING ABOUT SPENDING THE FESTIVE SEASON IN THE MIDLANDS? Whilst we celebrate Christmas in the heat of summer, we are fortunate that we don’t get the stifling humidity of the coast and often have a cooler day, which is perfect for enjoying copious amounts of hot food!

The Ikaneng Family Makhubalo Ikaneng, also known as “Makhubalo The Storyteller”, cherishes the festive season as he can spend quality time with his family. Makhubalo’s wife, Lungile, is a youth engagement coordinator who has a strong affection for family gatherings. Their four children, Unathi, Khanya, Sibahle and Lunalo, bring life to every celebration in their home.

Our traditions are rooted in the themes of renewal and togetherness. We prepare the house by making basic renovations to signify the special period of renewal. Following this, we have a grand meal prepared using ingredients sourced from local shops. This is a special time for me to dust off my special recipe book and cook for my family.

I have unwavering faith in the Midlands and its potential to become a hub for engaging and memorable holidays. My favourite aspect of spending the festive season in the Midlands is the determination of its residents to continually enhance the quality of services and products offered, aimed at improving the experiences of both visitors and residents.

The O’Neill Family The O’Neills hail from the Midlands South. They reside on a charming sugarcane farm, the backdrop for their family business, Sugar Baron Craft Distillery. WHAT IS YOUR MOST SPECIAL HOLIDAY MEMORY? In December 2019, we received an invitation to attend my cousin's wedding in the UK and turned the visit into a memorable holiday. On Christmas Day, we toured London from an open-top bus. As the sun set, the city transformed into a twinkling wonderland. Christmas lights adorned every corner. I can vividly recall the awe and excitement on the faces of the children. WHAT IS YOUR FAVOURITE THING ABOUT SPENDING THE FESTIVE SEASON IN THE MIDLANDS? The days are often bathed in the warm embrace of the sun and the air is filled with the fragrant scents of wildflowers. Mornings often greet

you with a mystical veil of mist. Cicadas serenade the daylight hours with their high-pitched, rhythmic chorus, while the evenings are adorned with the gentle croaks and chirrups of frogs. This is what we love about spending the festive season in the Midlands!

f you want to venture out of your daily surroundings but still stay close to home, why not adventure to Underberg? Around an hour and a half drive from Howick, it’s a beautiful area to explore. If you’re not sure where to visit or what to do, we share a few fun activities and accommodation and foodie spots you must try - the ultimate traveller’s guide! Even if you are unfamiliar with Underberg, you will know one of its main attractions: Sani Pass. Sani Pass Tours offers a variety of guided 4X4 tours into Lesotho on a daily basis (remember to pack your passport!). The Sani Pass Day tour is the most popular but overnight tours are also available – all departing from Underberg. Traverse the winding Sani Pass through two border posts to enter the eastern highlands of Lesotho, enjoying rich Basotho culture and adventure at the same time. Enter the pandemic in 2020, which opened the freelancing floodgates as more and more people started remote work, and so Shea took her shot. “South Africa desperately needs self-starters and entrepreneurs, but I couldn't find any freelancing guide specific to the South African context. So, I sat down and started writing.” Shea has accrued a wealth of knowledge throughout her life. She attended Clifton Preparatory School and St Anne’s Diocesan College, after which she studied a Bachelor of Journalism at Rhodes University. After her overseas working experience, which involved the ski slopes in the United States, teaching English in South Korea, and a marketing agency in Canada, she returned home to South Africa and worked as a marketing manager.

overwhelmed, one of our very own local freelancers, Shea Karssing, has recently published her helpful guide, Freelance Like a Boss. Shea has been freelancing for six years and found a gap in the market after a few freelancing friends came to her for advice on how to start their own business. “I realised there was a need for a freelancing 101 guide - basically, everything I wish I'd known when I first started out,” she shared.

Writing has always been a part of Shea’s life. She was a finalist in The Witness True Stories competition twice and was placed in the top 100 for the English Olympiad twice. A Revolutionary BPH Therapy WORDS DR SANTOSH BUGWANDIN

A

s a urologist committed to improving the lives of men affected by prostate enlargement, commonly caused by benign prostatic hyperplasia (BPH), I'm excited to talk about a groundbreaking therapy that is reshaping the landscape of BPH treatment: Rezum BPH, a common condition in ageing men, often leads to bothersome urinary symptoms that can disrupt daily life. Traditional BPH treatments like medication or surgery, while effective, sometimes come with drawbacks, such as numerous side effects. Traditional endoscopic TURP surgery can be invasive with several days spent in the hospital. HoLEP or laser surgery offers a surgical cure for prostate enlargement and is currently the standard of care. However, all of the above procedures do disrupt a man’s normal functioning. Rezum is an FDA-approved, minimally invasive procedure that employs water vapour therapy to address BPH. The treatment uses the natural energy carried by water and heat to induce changes in prostate tissue that obstruct the urinary tract. The gland shrinks, with minimal trauma to the gland and its surroundings. Performed as a day procedure, Rezum eliminates the need for extended hospital stays. Patients typically experience minimal discomfort and quickly resume their regular activities.

In my practice, HoLEP surgery still represents the pinnacle of curative surgery for BPH, however, Rezum is a valuable new alternative. Additionally, Rezum is a viable alternative for men with mild BPH symptoms who prefer not to rely on chronic medication for their prostate condition. Regarding the duration of effectiveness, clinical studies demonstrate sustained symptom relief after Rezum treatment, in glands between 30 and 80 grams in size. It is important to note that most medical aids do not currently cover this procedure, however, I am pleased to be part of a trial that offers full coverage to eligible Discovery Health members seeking Rezum treatment. This initiative is an exciting step toward making this life-improving therapy more accessible to those in need!

midst times of uncertainty, there lies a valuable opportunity for you to not only survive but thrive. This is a mantra that I firmly believe in and it has yet (touch wood) to result in any catastrophic failures in our business ventures. In fact, the opposite is true. Being bold and looking to take advantage of opportunities to grow, even when you feel up against the odds, has continued to yield returns. As Henry Ford once said, “When everything seems to be going against you, remember that the airplane takes off against the wind, not with it.” Yes, it may not always seem financially possible and there might not feel like an obvious solution, but history has proven time and time again that stepping positively into adversity is far more beneficial than allowing things to simply unfold around you. What are some of the key benefits of investing in growth during tough times? Firstly, when it comes to organisations, there is the potential to strengthen your market position. While competitors may be hesitant to make bold moves, your strategic investments can help you capture a larger share of the market. This can include expanding your product or service offerings, entering new markets, or acquiring competitors struggling in the downturn. By doing so, you not only solidify your presence but also position yourself for future growth when economic conditions improve. The same can be said for investing in real estate during tough times. Often there are great opportunities to grow your investment portfolio, especially as rental markets tend to remain fairly robust in most markets as property ownership becomes more challenging or unaffordable for
