From the Head Chef, we have a great spring/ summer recipe for you to try - these delicious fish cakes are a must-try! Till the next edition (in April 2024), may the last of the year be an amazing time to finish off that "to-do" list and may the beginning of 2024 be a blessed one. Don't worry too much about those New Year's resolutions - rather focus on a few real dreams, aspirations and goals you want to accomplish!

ceo’s Letter

LETTER FROM THE CEO Dear Cotswold Downs community, In the ever-evolving tapestry of Cotswold Downs, it is with great pleasure and gratitude that I write to you today. As we gather here amongst the stunning architecture and lush amenities that adorn our Estate, I am reminded of the profound truth that it is the heartbeat of our community that truly makes Cotswold Downs extraordinary. In recent times, our community has embraced a spirit of adventure and togetherness like never before. The introduction of exciting new facilities, such as the mountain bike trail, guided bird walks, and invigorating Fun Runs, has added vibrant threads to the fabric of our collective experience. These activities not only provide us with alternative ways to enjoy our Estate but also serve as a testament to our commitment to growth and unity. Speaking of unity, the Rugby World Cup is currently in full swing, and Churchills has become a hub of energy and excitement during game time. The laughter, cheers, and lively banter that fill the air remind us of the joy of camaraderie. It’s heartening to witness the bond that unites us as we come together to support our favourite teams and celebrate the spirit of competition. Our Estate is a living example of what it means to foster a sense of belonging. Shared experiences and memories are the threads that weave us together, creating a tapestry rich in diversity and inclusivity. It’s in the moments of laughter during house parties, the warm conversations

over dinners with neighbours, and the collective adrenaline rush of our Fun Runs that we find the essence of Cotswold Downs. The strength of our community lies in the support we offer one another. Within these walls, neighbours are friends, and friends become extended family. In times of joy, we come together to celebrate. In times of adversity, we stand united, providing solace and assistance. This network of care and compassion is the bedrock upon which our community flourishes. Our Estate is not just a collection of homes; it is a nurturing environment for future generations. As our children grow in the embrace of a caring community, they are instilled with values of compassion, responsibility, and engagement. They are the promise of a brighter tomorrow. In closing, let us remember that Cotswold Downs is, above all, a place to call home. The bricks and buildings may provide the framework, but it is the people and the community that breathe life into our beloved Estate. Together, we create a remarkable place to call home. Thank you for being the heart and soul of Cotswold Downs. May our shared experiences continue to enrich our lives and may the spirit of unity and belonging forever thrive within our community. Yours sincerely,

Mark Renwick 7

2023 CLUB CHAMPS

T

he highlight of the annual golfing calendar recently occurred when we hosted the 2023 Cotswold Downs Club Championships. There was much hype and excitement prior to the event, with all the entrants putting time in on the range and putting green to hone their skills with the ambition of being crowned the 2023 Club Champion. The golf course was in immaculate condition and, as the day broke on Saturday, 2 September, all was set for the staging of this year’s event.

proved challenging for most over the opening 18 holes of the tournament. There were, however, some great opening rounds in all the divisions with the following members taking charge of their divisions on day one.

The standings after day one for the B, C and Ladies’ Divisions were as follows: • B Division: Wesley Volek (three shots clear) • C Division: Brendon Werner (three points clear) • Ladies’ Bronze Division: Kerry Potgieter (eight points clear)

On check-in at the registration table, all the players were gifted with a custom-made Cotswold Downs head cover, a unique Club Champs scorecard as well as an array of fruit, muffins, tea, coffee and fruit juice, which really set the scene for a Club Champs that was second to none in terms of a golfing experience. The weather on the first day was a little tricky with a swirling wind and chilly temperatures greeting the early morning field. Although the temperatures warmed up a little later in the day, it was the wind that

In the Men’s A Division, defending champion Brendan Adlam held a one-shot lead overnight after carding a solid round of 75. Lurking one stroke back after day one were Keaton Slatter, Paul Blackman and Dennis Mack. The premier division of the event was set up for a grandstand finish on Sunday. In the remaining divisions, the overnight leaders had quite a comfortable lead, although Carl Webb held a slender one-point lead over the field in the Senior Division.

The round of the day arguably went to Tara Smith in the Ladies’ Silver Division. Tara carded a fantastic round of 87 gross, and she held a 12-shot lead over second-placed Judith McDowell! DARYLL MARESCIA PROUDLY RECEIVING HIS CUSTOM-MADE HEAD COVER

with Brendan Adlam and Keaton Slatter level pegging standing on the 18th tee. After both hit fantastic tee shots on the par 5, they went for the green in two shots. Whilst Keaton pushed his approach slightly and his ball trickled into the green side bunker,

it was Brendan who unfortunately made the mistake of pulling his second shot into the hazard on the left of the green. The championship had been decided. Keaton ended off in style with a birdie on the last hole and was (for the first time in his career)

crowned the Club Champion of Cotswold Downs. Congratulations to Keaton – a very worthy winner. In the remaining divisions, it was the overnight leaders who managed to hold their nerves on day two and were all crowned champions in their respective divisions. In the B Division, it was Wesley Volek who took home the top honours. In the C Division, it was the battle between the youngsters with Brendon Werner managing to edge out Demyan Burczak by a narrow two-point margin. There were runaway victories in both the Ladies’ Divisions, with Tara Smith romping home to an eight-shot victory over the field in the Silver Division and Kerry Potgieter winning by five points in the Ladies' Bronze Division. Well played, ladies! Last but certainly not least was the Senior Division, which was a tightly contested affair going into the last nine holes. However, it was a great back nine holes on day two from Carl Webb that gave him the title of 2023 Senior Club Champion.

ENTERTAINMENT

COMEDY CORNER Good morning Mark,

ENEMATA ON THE FIFTH

I am uncertain as to the correct plural of the word “enema”. My instinct says it should be “enemata” but the Americans say “enemas”. Let’s go with my gut feeling and you can take it that when you see “enemata” it means one enema and then another one. Picture the scene! The trouble-and-strife and I are sitting sipping a rather nice sauvignon blanc and nibbling on Doritos, watching the sunset from the fifth tee. I know, I’m a romantic old fool! The conversation had turned to matters environmental: alien invaders, bird hides, tree labels and suchlike when WHOOSH! We each received a complimentary enema

through the slats of the bench. It is rare these days to get anything free, even enemata, and it became apparent from the malodour that the enema fluid had been used before and what we were being given was definitely secondhand.

The smell suggested that whoever used the fluid first had a serious gut problem. I just hope it’s not infectious. Now, I have no objection in principle to secondhand things: cars, houses, golf balls, etcetera, but enema fluid!? Really? We were drenched, my wine was spoiled, the Doritos soggy, and I don’t think the flavour will ever catch on. The Old Dutch was similarly smelly and unapproachable. Most unromantic! Let us assume that a bench was put on the

fifth tee for people to sit on. I think this is a reasonable assumption as benches have remarkably few other uses. Our experience then leads to two questions. Is it sensible to put a bench directly above a watering point for the tee? If the answer to one is “Yes!”, is it necessary to start it without warning during sunset when people are using the bench for its intended purpose? We all like surprises, and although the forcible injection of recycled enema fluid during a romantic tryst tested my resolve, it did give me the opportunity to display my full range of expletives. There might be a detail or two here that deserves attention from somebody! Toodlepip!

PRO SHOP ASSISTANT AVUYILE “AV” MKONDO Avuyile “AV” Mkondo’s journey embodies the incredible power of passion, persistence, and unwavering determination. Growing up in a rural environment far removed from modern technology, AV discovered his love for numbers and computers at a young age. Despite facing hardships that denied him the privilege of completing matric, he never let go of his dream. AV’s relentless pursuit of knowledge led him to actively network online, attend webinars, and participate in virtual code camps. His dedication to self-improvement was awe-inspiring, especially given his lack of formal education and financial resources. Everything changed when AV joined the Pro Shop at Cotswold Leisure Centre in Hillcrest, even though he had no prior understanding of golf. His exceptional memory for people’s names, innate affinity for all things tech, infectious enthusiasm, and eagerness to learn quickly set him apart. AV’s journey took an unexpected turn as he became a qualified level 2 health and safety representative. Now, AV is poised to take the next step in his remarkable journey by pursuing a full tech qualification in college before his 25th birthday — a goal that once seemed far-fetched. His motivation is deeply rooted in the responsibility he feels towards his mother and siblings, driving him to work tirelessly to secure a better life for them. AV’s story is a testament to the belief that passion and persistence can transform anyone into a success story, regardless of their starting point. He is an inspiration to us all, reminding us that with dedication and resilience, dreams can become reality.

Sanitize and Renew your roof from Pollution and Bio Organisms Coastal and Southern regions have 100% algae, fungi or moss prevalent. Fungal buildup, including moss, algae, and lichen, can thrive in damp and shaded areas of roofs. These organisms can retain moisture, leading to the degradation of shingles or tiles and the growth of roots that penetrate the roofing materials, resulting in damage and deterioration. Furthermore, the presence of fungi can negatively impact the overall appearance of the roof, giving it a disheveled and unkempt appearance. Therefore, it is crucial to address pollution and fungal buildup promptly to prevent long-term damage and maintain the functionality and visual appeal of roofs.

etlands are often referred to as the “kidneys of the Earth”, and for a good reason. Nestled within Cotswold Downs, our wetlands play a vital role in maintaining the health of the Estate's water bodies. These specially developed wetlands not only add to the natural beauty of our surroundings but also serve as a protective barrier against flooding and as a natural filtration system for greywater from golf course irrigation. They hold the building blocks for life to thrive and for biomes to grow within our Estate. Unlocking their full potential will be the icing on the cake for 34

our Estate. With 11 distinct wetland areas, including prominent ones along the 6th, 7th, 12th, and 18th tees, let us unpack this magical kingdom of microbial workers and delve into the multifaceted roles these wetlands play in cleaning our water, being home to our animals and insects, and how we as a community can protect and look after these important environmental areas. Wetlands are not just scenic landscapes that were developed to enhance a view but are complex biological and chemical reactors. One of the most fascinating aspects of wetlands is the microbial processes that

occur within them. Inside our wetlands are vast entire kingdoms of bacteria, fungi, and other microorganisms, which are the unsung heroes in this ecosystem. They engage in a variety of biochemical reactions that help break down a wide range of pollutants. For instance, denitrification is a microbial process where harmful nitrates are converted into harmless nitrogen gas, which is then released into the atmosphere. This is particularly important in agricultural areas where fertiliser runoff can contaminate water bodies. The microbial activity is so efficient that it often outperforms many

plays a role in insect control, while dragonflies and damselflies are indicators of water quality. These species not only contribute to the ecological balance but are also beneficiaries of the nutrient-rich, pollutantfree environment that wetlands offer. While wetlands are nature's own filtration system, the residents of Cotswold Downs can play a significant role in their conservation through simple yet effective strategies. One of the most impactful ways is through responsible waste management, particularly concerning household chemicals. Proper disposal through recycling programmes prevents these substances from contaminating the wetlands.

modern mechanical filtration systems, highlighting the irreplaceable role of wetlands in water purification. The wetlands in Cotswold Downs are a treasure trove of biodiversity, especially being situated in the biodiverse-rich region of Hillcrest, South Africa. Plants like cattails have a fibrous root system that acts like a sponge, absorbing pollutants from the water. Bulrushes are known for their ability to uptake heavy metals, thereby detoxifying the water. Water lilies provide shade and temperature regulation, creating a conducive environment for aquatic life. The African clawed frog, a native species,

Another critical area is the use of detergents. Many conventional detergents contain phosphates, which, when washed into water bodies, can lead to harmful algal blooms. These blooms consume oxygen and block sunlight, disrupting the natural balance of the wetland ecosystem. Switching to phosphatefree detergents is a simple yet effective way to reduce this form of pollution. The various wetlands of Cotswold Downs are more than just aesthetic elements. They are engineered ecosystems that serve multiple purposes. From managing stormwater and preventing flooding to enhancing water quality and supporting a diverse range of life, these wetlands are a testament to the Estate's commitment to environmental sustainability. By deepening our understanding of these natural wonders and actively participating in their conservation, we can ensure that they continue to benefit not just Cotswold Downs but also the broader ecosystem downstream. 35

RECIPE

Salmon FISH CAKES

Who doesn’t love fish cakes? Whether you’re in the mood for a light starter or a delicious main meal, this recipe is a show-stopper!

SERVES 4

INGREDIENTS Salmon Mixture • 500g salmon cubes • 300g peeled potatoes • 100g chopped onions • 15g fresh garlic, minced • 15g chopped dhania (coriander) • 2 lemons • 1 teaspoon black pepper • 2 teaspoons fish spice • Salt to taste Batter • 3 eggs • Panko crumbs

METHOD 1.

2.

3.

Place the peeled potatoes in a pot of water and boil until they are soft and easily pierced with a fork. Drain the water and mash the potatoes until they are smooth and free of lumps. Set them aside to cool slightly. In a large mixing bowl, combine the salmon cubes, chopped onions, minced garlic, chopped dhania, black pepper, fish spice, and a squeeze of fresh lemon juice. Mix everything together until well combined. Once the mashed potatoes have cooled slightly, add them to the salmon

mixture. Gently fold the potatoes into the mixture until evenly incorporated. Taste the mixture and season with salt as needed. 4. Take portions of the salmon mixture and shape them into patties of your desired size. You can make them small for appetisers or larger for a main course. 5. In a shallow bowl, whisk the three eggs together to create the batter. Place the panko crumbs in another shallow bowl. 6. Dip each salmon fish cake into the beaten eggs, ensuring it is coated evenly. After dipping in the eggs, coat the fish cake with panko crumbs, pressing gently to adhere. Repeat this process for all the fish cakes 7. Heat a frying pan or skillet over medium heat and add a few tablespoons of oil. 8. Place the fish cakes in the pan and cook for about three to four minutes per side, or until they are golden brown and crispy. 9. Once the salmon fish cakes are cooked through and have a lovely golden crust, remove them from the pan and place them on a paper towel-lined plate to drain any excess oil. 10. Serve the salmon fish cakes hot, garnished with fresh lemon wedges and

additional chopped dhania if desired. They are delicious on their own or with a side of tartar sauce, aioli, or a fresh salad. Enjoy your homemade salmon fish cakes! Whether you grill, fry, or deep-fry them, they're sure to be a crowd-pleaser.
