Spring hasn’t yet officially arrived, but already I’m already getting behind on jobs to do in the garden. The silly amount of time I spent making boots for a Book Week costume on Sunday didn’t help in that department.

Given the frequency in which we here at OC Life hear about what Council did and shouldn’t have done, or what Council hasn’t done but should, I expect there will be a deluge of responses.

FROM SAIGON TO THE CENTRAL WEST: an orphan’s tale

While this year marks 50 years since the last Australian combat troops were withdrawn from the war in Vietnam, it wasn’t the last time our military personnel were to enter the warzone, and it is here where Millthorpe resident Van Nguyen’s story begins.

In early 1975, the communist forces launched a major offensive and began pushing south towards Saigon, ultimately resulting in the fall of the South Vietnamese capital on April 30.

During April, a Royal Australian Air Force (RAAF) detachment of Hercules transports began humanitarian flights taking civilian refugees from the city.

Starting April 4, 1975 in what was known as Operation Babylift, the RAAF joined the United States in a massive effort to evacuate orphaned children from Saigon.

“I was about nine… so I remember quite a bit,” says Van Nguyen, or Minh as he prefers.

“You know there was a lot of chaos, like organised chaos. It was a lot of soldiers everywhere. A lot of noise. Helicopters.”

“I mean, I was young, I didn’t fully understand what’s going on… It was scary. It was very scary.”

While Minh was safely airlifted from Saigon that April day, tragically, disaster struck an American Galaxy transport when a door blew off after takeoff. The plane crash-landed and set ablaze, killing almost half of those on board, including 78 Vietnamese children.

Arriving in Sydney, Minh and some of the other children were sent to an orphanage at Lidcombe.

“I came out here with other kids about my age and also babies as well,” recalls Minh, “When we arrived in Sydney they put us in the orphanage home in a place called ‘Minali’ and from there some of us got adopted and some got fostered. I got fostered by an Australian family and grew up out at Cargo.”

It was during the next four years with his foster family at Cargo that Minh learned to speak English and came to adjust to life in his new country.

Returning to live at the orphanage in Sydney as a young teenager, Minh found himself drawn to join the Naval Reserve Cadets, known these days as the Australian Navy Cadets.

And at 15, he was granted permission to leave school and join the Royal Australian Navy as a junior recruit, training at HMAS Leeuwin in Western Australia. He served for the next eight years until the polio he’d had since birth forced him to be medically discharged.

One might find it strange that someone who had experienced the trauma of war at a young age, would seek out a military career. But Minh says joining the navy was his way of giving something back to his new home. It was also where he found something he’d not had before.

“I just felt it was giving back to Australia… for what the troops that went back and rescued us did,” says Minh.

“And for me, personally, because I had no family, the navy gave me a sense of belonging and security. It was like belonging to a huge family.”

Proud to be an Australian, and proud to be part of the wider family of ex-servicemen and servicewomen in the RSL, Minh still remains curious about his Vietnamese heritage as he has never found out what happened to his birth family.

“Quite often I say, why? You know, why me? I’m sort of here alone, I don’t have a family tree,” says Minh, who at 57 years of age is still daunted by the idea of returning to the country he left as a child so dramatically 48 years ago.

“Some of my friends that came over here at the same time, they were very fortunate to be able to track their family members and some did go back.

“I know deep down inside that back home in Vietnam, I still have some relatives somewhere… so no, I definitely will go back to Saigon.”

Wade Park solar upgrade nalist in national awards

Orange City Council’s renewable energy upgrade of Wade Park is a finalist in the Cities Power Partnership’s fifth annual national Climate Awards.

The awards recognise the work of local governments paving the way to a zerocarbon future.

The $993,000 Wade Park project, funded by the NSW Government’s Regional Sport Facility Fund, saw the installation of a string of energy e ciency projects including a solar array, LED field lighting, batteries and an innovative water heating system.

Council has touted Wade Park as being its first net-zero facility.

The Wade Park renewable energy upgrade is in the running for the Renewable Energy Achievement Award and the Community Choice Award.

The winners will be announced at the Cities Power Partnership’s Climate Summit for Local Government 2023 on Thursday, September 7 in Melbourne.

LOCALLY-FILMED WARTIME SERIES GETS RELEASE DATE

A new SBS Original series filmed right here in the central west will be coming to our screens this September.

An irreverent, wry and witty reimagining of 1940s Australia, While The Men Away tells the story of the women left at home during World War II, while the men are fighting on the front lines.

Often (but not always) wildly historically inaccurate, While The Men Are Away is about five individuals who find each other, and for a glorious moment in time, sample a life tinged with promise, hope and acceptance. And once they taste it, it’s impossible to go back.

Created and produced by Orange-based film company Arcadia, the series was filmed at a number of di erent locations around the central west, including the historic homestead “Ammerdown”, “Rose Farm” in Nashdale, as well as Millthorpe.

While The Men Are Away, will premiere on SBS on Wednesday, September 27. All eight, thirty-minute episodes will also be available to stream free on SBS On Demand, with double episodes to air at 8.30pm on SBS each Wednesday.

PASSING OF RESPECTED LOCAL BROADCASTER GORDON MCMILLIAN

Orange has lost another icon, after the passing of much loved and respected radio presenter, Gordon McMillian last week.

Gordon was a presenter of ‘Hits and Memories’ on local community radio station FM107.5, and had been a presenter with the station for approximately 35 years.

The experienced radio broadcaster, who had been in both commercial and community radio and the ABC, spoke

with the smooth and svelte voice of a professional. While many come and go, Gordon McMillan remained one of the mainstays with an on-air presence of 55 years.

‘’I had a great time at the ABC and also at commercial radio stations in NSW and Queensland but I have just as much fun at FM107.5 where I play a variety of oldies and country to make it breezy and happy for our listeners,’’ said Gordon in a recent interview.

Today is Da odil Day (August 31) and Cancer Council NSW is asking people in Orange to grab some fresh da odils or make a donation to fund their life-saving cancer research.

“Cancer takes so much from all of us, which is why this year, we’re calling on Australians to give hope to those impacted by cancer by funding vital cancer research that is saving lives every day,” Cassandra Sullivan, Community Fundraising Coordinator (Orange) said.

Gosling Creek residents take a drive down memory lane

Residents of Gosling Creek Aged Care got a real treat when the Central Tablelands Historic Car Club came to visit last week. A lovely morning was spent reminiscing and admiring.

A 1952 Land Rover caught the eye of resident Joan Giddings, who drove solo in a similar vehicle across the Nullarbor Plain.

“It’s those stories that are just so wonderful to hear,” said event coordinator Chris Gray. “It’s just nice to bring the cars here to the nursing home for the elderly people to look at and reminisce.”

Six cars of varying ages were driven out the front of Gosling Creek, including a 100-year-old Willys-Overland, and a 1927 Chevrolet.

Lifestyle Services Coordinator of Gosling Creek Aged Care Melissa Delaney said residents had been counting down the days until the cars came, and she is so thankful for the club for making the trip.

“It has just been amazing to have these cars here, our residents have been so excited,” she said. “We have had our dementia residents here today, and it’s just given them their spark back. Some of their families came to visit and it’s been amazing to share that experience with them. We’ve got residents that don’t leave their rooms usually, that don’t like doing a lot of things, they’ve been out and just admired the vehicles and had a chinwag with all the owners. It’s just been splendid.”

When Orange Had 32 Pubs: BACK IN THE DAYS OF 1880

Delving into the archives of the NSW State Library recently we came across this stunning historic photograph taken of Anson Street sometime in the 1880s.

The photograph is part of the remarkable Holtermann Collection, thousands of photographs documenting life around Australia in the late 19th Century. They are a true historical treasure!

The photograph is taken from Summer Street looking north to Byng Street, with the Metropolitan Hotel visible at the end of the block and two other pubs – the Prince of Wales and the Exchange Hotel – on the right hand side.

Having taken some interest in the history of hotels of late, a little further digging uncovered the following reminiscence published in the Orange Star newspaper on June 4, 1926.

We thought it may interest some of our readers:

Orange is quite respectable now - or has it degenerated? In 1880 its hotels numbered 32 at least, for a population of 4000. Now, with a population of over 10,000 within the town and suburbs, its hotels have dwindled to 18 in number. It was in the year 1880 that

Mr. W. (Bill) Richards — a Sydney native who used to catch eels in the creek that ran through Belmore Park, behind Sydney’s central railway station —came to Orange. He was then 22 years of age, and ever since he has resided in this town.

He came into the “Star” o ce for a quiet yarn on Tuesday night, and let flow a stream of interesting reminiscences of Orange in the “eighties.”

“In 1880,” he related, “the centre of business for Orange was the old camping ground at West End, where the teamsters who used to feed and provision the west always camped. There were three hotels then, within 50 yards of one another. The Limerick Castle was kept by John Herrick, the Green Gate by F. Perry, and the third by a man named Garlick. Blacksmiths’ shops were kept by Donohoe and Corduroy, and a saddler’s shop by Steve Herrick. Gillespie and McMahon had a big cha shed there, but it was burnt down in 1880.

“In March Street a German named Monwinkle kept a pub, whilst at the corner of March and Hill streets was the Welcome Inn, controlled by Mrs Wigg. Not far away was the Gladstone Hotel kept by Tom Falvey.

“Down Byng Street there was a hotel adjoining the present School of Arts guided by Paddy Boyle, but it was destroyed by fire. I then belonged to the first fire brigade in Orange, and the night before the fire we had our first practice on a new engine just to hand. We ceased practice at 10.30 pm and the fire broke out at 1 am but the brigade was of no use because of want of water.

“Paddy did not rebuild the hotel, but had the license transferred to what was known as the Diggers’ Arms, about on the spot where the Orange lockup now is. On the opposite side of Byng Street was the Commercial Hotel, kept by Charlie Stockwell. The present Metropolitan Hotel, corner of Anson and Byng streets, was then Woodward’s grocery shop, but Bill West afterwards got a license for it.

“Where stands now the Carrington hotel, at the corner of Byng Street and Lord’s Place. Mrs Elliott kept another hotel, but it was not the Carrington then. Further along Lord’s Place, to the north, was the White Hart (afterwards called the Greyhound Hotel, controlled by Wiggins. There was situated the old handball court of Orange. The only game then played in Orange was handball.

“What is now the well-known Royal Hotel was originally known as the Duke of Wellington Hotel, and was kept by Danny Hanrahan. There was another hotel in Byng Street just above the School of Arts, but it was closed just before 1880, and its name, the Royal, was transferred to the Duke of Wellington house where the present Royal now stands.

“Where Eames’ butchery in Summer Street now is, there was a hotel guided by a man named Robertson. In Sale Street, McFadden’s hotel was on the spot where Mr Gillies’ residence now stands. It was kept by Bohringer, whose widow married McFadden. The Hotel Orange, at the corner of Summer and Sale streets, was originally a tinsmith’s shop, but James Stynes secured a license for it in 1880. In Moulder Street. two doors from Sampson Street, Bernard McConville had a hotel. “Come down Moulder Street to the site or the present Rugby hotel, there Ned Cummings presided over a weatherboard pub. Below was the Daniel O’Connell Hotel, with John Gillespie the licensee.

“At the corner of McNamara Lane and Moulder-street stood the Carriers’ Arms, with John Melville, an ex-policeman, in charge.

He died. John Kavan married his widow, and took over the license. “Where Dalton’s mill sheds now are was the Locomotive hotel. occupied by John Tongue. At the corner of Moulder and Piesley streets, on the site now occupied by Wright Heaton and Co., stood the Terminus Hotel in charge of John Kinghorn. Below in Peisley Street, John McGlynn looked after the Station House hotel. The Occidental Hotel, still there, then had as licensee Mingy Smith. “Go to East Orange and there is the oldest hotel in Orange, the Victoria. It was kept 00 years ago by Piesley, but in 1880 John Maher was in charge. At the Five Ways thirsty souls had the National Hotel. John Russell licensee, to quench their thirsts. Tallersall’s hotel in Summer Street, still there, was managed by James Small, and the Club Hotel by James Tanner. Mr James Torpy then owned the Royal Hotel, and had a wine and spirit licence for premises close by, A witticism sprung by a travelling troupe is still remembered— ‘Why is Mr. Torpy sure to get to Heaven? Because he lives in Lord’s Place, and keeps good spirits.’

“The Exchange hotel, where the N.S.W. Bank now stands, and was kept by Frank Goddard. The Telegraph Hotel, opposite the post o ce, was in the hands of Bob King. In Anson Street, in a dwelling between Summer Street and the Standard Hotel, was the Prince of Wales hotel, with John Parker in charge. The Standard Hotel had Bill David as the licensee. Finally, There was the Courthouse Hotel at the rear of Mr Solicitor Lane’s o ce, kept by Paddy Power. The building is now used as a stable.”

As you know I have been actively supporting the development of a new Greyhound Centre of Excellence and racetrack in Orange. I raised inquiries regarding the progress being made by the NSW Government and Greyhound Racing NSW on this important project last week in Parliament. Additionally, I had the honour of officially acknowledging the monthly Orange Mr Perfect Men's Health BBQs. I extended my gratitude to the exceptional team behind these events, including Cr Glenn Floyd, Matt Barr, Gary Sanders, and even my sons Mathew and Sean. My involvement in this valuable initiative began three years ago when I identified a gap in providing essential grassroots support for men's mental health and to see its exponential growth over these years proves its value. Good on you fellas!

In Parliament this week, I met with Jacqui Watts, CEO of No to Violence, along with Roy Butler MP, Member for Barwon. We discussed the pervasive issue of domestic and family violence affecting communities across NSW, including Orange. VIETNAM VETERANS 50th Anniversary

It was a privilege and an honour recently to be part of the commemoration service to mark Vietnam Veterans Day and 50 years since the end of Australia’s involvement in the conflict. A gathering of Vietnam Veterans, current serving members of our Armed Forces, ex-service men and women and members of the community gathered at the Cenotaph in Robertson Park to mark the occasion. Many memories were shared and it was particularly heartening to see the involvement of so many young people in the service. Well done to the students of Orange High School who performed vocal tributes and in particular the moving rendition of “I Was Only 19” sung by male students. The catafalque party was provided by students of Orange Anglican Grammar School who performed their duties with great diligence. While for many it was an emotional day evoking memories it was wonderful to see such community support for the service.

Detailed designs get underway for revamped Adventure Playground

Orange’s much-loved Adventure Playground is another step closer to its major upgrade, with Council appointing design consultancy Civille Pty Ltd to develop the detailed design and construction drawings for the project.

Civille also developed the concept designs for the revamped playground, which were put together following rounds of community consultation earlier this year. These draft designs will be used to develop the final

detailed design and construction drawings.

Once complete, they will be presented to Council and the community for approval before beginning a tender process to engage a builder.

Orange City Council Sport and Recreation Community Committee Chair, Councillor Tammy Greenhalgh said it was great to see progress on the project.

“The Orange Adventure Playground has provided more than 20 years of enjoyment for children and families in Orange, and

this is an opportunity to build on the unique character of the site to revitalise the space for everyone to enjoy,” Cr Greenhalgh said.

“These detailed designs and drawings are important to give us a clear picture of the infrastructure needed to bring the concept to life, which will also give us an indication of the costs involved in making the project a reality.”

The upgrades will be delivered in stages depending on funding availability, according to Council.

Already $1.93 million has been allocated to the project, which includes a $1.25 million grant from the NSW Government’s Resources for Regions program.

Most of the improvements will be delivered in stage one of the project which, due to the deteriorating condition of the existing playground will focus on the main play areas, central meeting area and relocated picnic shelters, as well as the installation of a splash park and water play facility.

From Orange to gold: two locals who took on the world and won

With five gold and six bronze medals between them, Orange’s ‘Golden Girls’ of dragon boating have done Australia proud in their first world championships.

Estella Ferri and Kerry Madden have both returned home from the World Dragon Boat Racing Championships, held in Pattaya, Thailand. Typically you would see these two women in their Colour City Dragon Boat attire down at Lake Canobolas but, over the past few weeks, they have been adorning the green and gold of the Auroras, Australia’s national dragon boating team.

“It is actually mind-blowing to don the green and gold, and to represent your country in any sport is just an incredible experience,” said Estella. “Being lucky enough to have the gold medals means that we did get to stand up on that podium. and to have the anthem playing was… wow! One of those life experiences I’ll never forget.”

For Kerry Madden, standing on the podium with her fellow teammates was surreal. She shared Estella’s sentiment, stating the whole experience took her breath away. “It’s an incredible feeling to stand on that centre one when the flag goes up. It’s like a relief that we finally did this, and it just makes you so proud to be in it and to have done the best, and to prove to the other countries that we are very good at what we do.”

Australia finished third in the world for the small boat category, with Estella and Kerry making up five of the seven gold medals of the tally. They each competed in the small boat 200 metres, 500 metres, and two-kilometre distances for their respective age groups, and both have said the pride is still pumping through their veins.

Both Estella and Kerry fell into the sport as little as six years ago. After competing at club level, onto regions, and then nationals, competing at the world championships was the next-level step for both paddlers.

“I competed last year at the Asian Championships, which were again in Thailand,” said Estella. “It was an

incredible experience representing your country, so when the opportunity for worlds came back, I decided to reapply.”

“I was lucky enough to get chosen in the Western Region,” said Kerry. “After the expression of interest came around at the end of last year, Estella said, Why don’t you try out?”

A two-kilometre row time was submitted, followed by a number of trials, and the rest is history.

From the beginning, Estella and Kerry have been training buddies, keeping each other accountable with the countless training sessions leading up to the championships.

“I am so grateful that I had Estella, it was just such a helping hand for my training, to keep me motivated,” said Kerry.

“If I didn’t have her, it would have made it that little bit harder. I don’t know how you would have done it on your own. When it’s five o’clock in the morning and the alarm goes off to go to the gym and you didn’t want to go… I would still get up because I knew she would be there waiting for me.”

All teammates had a dedicated gym programme that required at least three days a week of weights and cardio, as well as a few pedalling sessions out on the dragon boat a week. As captain of the Auroras’ Senior A team (40 years and over), Estella attended weekly sessions in Sydney as well as whole divisional camps in Melbourne and Brisbane. Kerry also attended many of these sessions in Sydney, spending whole weekends out on the water.

“I supported Kerry in making her own application for the world championships, and she was successful, so we both continued the journey together, which was just incredible,” said Estella.

Estella said next on the list is the Australian Masters coming up in October. The regional team will be heading down to Adelaide to compete, in anticipation of the Australian dragon boat championships happening in Perth next year. For Kerry, she is still “on a bit of a high”, and plans to keep as fit and healthy as she can.

TEN MONTHS LATE AND TENS OF MILLIONS OF DOLLARS SHORT

It was interesting to see that the Shadow Minister for Emergency Management and Deputy Leader of the National Party, Senator Perin Davey, was in Eugowra and Cabonne this week.

The storms and floods hit the Cabonne Shire and Wellington on the 13th and 14th of November 2022. It’s now September 2023. That’s almost ten months later.

So I ask the question, why?

Why has it taken the Shadow Cabinet Minister tasked with the opposition’s disaster response and recovery policy almost ten months to set foot in these disaster-hit communities?

Why didn’t the NSW National Party - which Senator Davey is a member of - and her NSW Ministerial colleagues activate the same level of support the Northern Rivers received for disaster-hit areas in the Central West when they were in government, and had the chance to do so?

Ironically, now that the NSW Nationals are in opposition, they think it should be activated!

You can’t make this up.

Of course it should be activated. They are the very party that should have done so!

No wonder people are cynical about the major parties.

After that dark day in November, we saw press conference after press conference, and concerned street walk after street walk by National Party members, yet a Northern Riverslevel of support was never activated for our region.

As our disaster-hit residents struggled through loss and tragedy, the NSW Nationals and their Ministers dangled disaster relief packages in front of them like a bag of cash on a fishing pole - then cruelly reefed it away, never delivering it.

The NSW Nationals promised a lot and spent up big in Sydney in the lead up to the election, but they never properly funded disaster relief for the country people they say they represent.

Sadly, Senator Davey’s visit to our disaster-hit towns is a case of ten months late, and tens of millions of dollars short.

VOICE TO PARLIAMENT PANEL

There was a great crowd at the recent Voice to Parliament Panel in Orange featuring former Wallabies Captain and Independent Senator, David Pocock!

A big thank you to David for coming to Orange to chat with the local community about his support for an Indigenous Voice to Parliament. Hopefully some folks grabbed the chance to get some rugby tips, too!

The panel shared a number of practical examples about how the Voice could make a real difference to Indigenous Australians in

areas such as education and health.

The gap between Indigenous and nonIndigenous Australians is still so wide in so many ways, such as in life expectancy, suicide rates, infant mortality, and educational outcomes. How could this be in the modern and prosperous Australia of 2023?

The gap between Indigenous and nonIndigenous people cannot be allowed to stand.

We need to change it up, and that’s what the Voice will do.

A CATCH-UP WITH LOCAL STUDENTS

Earlier this week, it was great to join Year 11 students at Kinross Wolaroi who are taking part in a year-long leadership program.

The program aims to inspire the students to learn more about what makes a good leader, and encourages the group to think about the type of captains they’d like to be before they look at taking on leadership roles later this year.

It was a privilege to share a bit about what I’ve learnt along the way, and meet so many young leaders striving to be the very best they can be. Our future is in very safe hands!

Orange Hawks put in superior second half performance to claim a 36 - 20 win over Bathurst Panthers in week two of the 2023 Peter McDonald Premiership elimination finals at Wade Park on Sunday.

Hawks held a slender 14 - 10 lead at halftime.

How to Survive Book Week

The highlight of term three is always Book Week. Not for me obviously, but for better, more involved parents. However, if the note about book week stirs existential dread in you as well, I’ve learned some tricks over the years I will now share to help you survive too.

Firstly, you need to understand that Book Week isn’t about books — or children. It’s a passive-aggressive competition between parents. I highly recommend you opt out early from any of this by turning up to assembly in the wrong week, forgetting sports day is now Friday (repeatedly), talking about drinking so often in the parent chat group that someone sends you a link to AA, and swearing at the other parents at drop off. Now nobody sees me as competition or expects homemade costumes. So once you’ve given up, you might like to try one of these easy “Netflix show cosplays”.

Miss Nine is going as Harry Potter this year. She has our metallic “cloak of invisibility” shower curtain, a twig she found on the ground that looks a bit like a wand and we’ll draw an eyeliner lightning bolt on her forehead. Actually, Miss 14 will draw an eyeliner lightning bolt on her forehead, I don’t own eyeliner. She’s never read the books but has watched all the movies twice.

Your eldest/only child can use the personalised book you had made about them when you were a tired new parent and an ad for “Insert child’s name here Christmas Adventure” popped up in your news feed. This doesn’t work for your second and subsequent children. As their blank baby books also reveal, you gave up by then.

With groceries now exclusively packed in paper bags, there’s never been a better time to grab the masking tape and construct a “Paper Bag Princess”. As a great bonusElizabeth has messy hair and is covered in dirt and soot so you don’t even have to bathe the child beforehand.

Your neglect ADDS to the character’s depth.

Send them dressed in whatever extra-curricular uniform you’ve already paid hundreds for. Gymnastics? Horse Riding? Beekeeping? Rugby? THERE’S A BOOK ABOUT THAT. Call Collins Booksellers. Not only will they find you a book but they’ll process the transaction over the phone and then deliver it to you. YOU DON’T EVEN HAVE TO PUT A BRA ON.

There are also books about The Matildas. And I know you already spent $40 on a jersey for green-and-gold day at school. Work smarter, not harder.

Can your child fit in an empty 30-can box of zero sugar Coke? Pop some cat ears on them and staple a copy of My Cat Likes to Hide in Boxes to the front. Yes, the headband from the sex kitten costume you wore at your sister’s hen’s night is fine.

Dig your old cabbage patch kid out of that storage box in the garage, the one that you’ll sort through WHEN YOU HAVE TIME. Attach it to your child with the ring sling you carried them in exclusively at mother’s group (they went in the pram everywhere else). Boom! Baby-Sitters Club. Last, and easiest of all, grab a lace tablecloth/curtain. Throw it at your child from a height… et voilà! They are now, literally, Charlotte’s Web.

Look, will these costumes win awards? No. But will your children appreciate your effort and will they be super excited to see you leave work early and make it to the parade? Also no. They’ll be too busy having fun with friends. Will seeing them happy make your day? You bet. Well done you!

Family, food and humble cooking…

The other day as a joke, a customer told me that I was the Spanish male version of Julia Child in Australia. I laughed about it, but then it made me think about something that I do have in common with all those predecessors in my profession.

As a cook, and as a person who tries to teach others about the principles of thinking about food, I believe that following trendy recipes in mainstream magazines is not really going to help anyone feel less stressed about cooking for their family in an economical and delicious way. My grandparents for sure didn’t have that, having to survive hungry times after a civil war, and having a lot of mouths to feed every day.

I refuse to accept that eating well at home has to be expensive. And I blame all those pseudo-gastronomic experts who create content for the food media in Australia. The fact that people at home feel intimidated and confused about food is because TV shows dramatise the act of cooking, turning it from an act of love and sharing magical moments with your people, to a pointless competition with layers of judgments and egocentric snobbish behaviours.

Julia Child, like many food educators in other cultures, wanted to teach us all the basic principles of cooking. And that is not about technique, it is about thinking. For sure, no one likes to be lectured and told they have been doing things incorrectly all this time. But I’m sure you will agree with me that there is a big di erence between knowing more or less how to follow a recipe and knowing how to cook in a smart and economical way.

As I’ve explained here before, I learned how to cook thanks to the lessons that my grandmother and mother taught me. But let me tell you a secret; both of them actually didn’t know the fancy names of modern techniques. They just knew the principles of how to open the fridge and be able to prepare a lunch or dinner for a lot of people with just a few ingredients. This made me realise that if I wanted to survive later on in life, as an independent adult, I had to think for myself and be able to solve everyday problems in a creative way. You know. That day you forgot to do the shopping. The one when you started to cook something but didn’t check if you had all the ingredients first. The week when you open your fridge or pantry and it’s completely bare.

Julia Child’s book Mastering the Art of French Cooking came out in 1961, and changed American households forever. In Spain, we have our own version of this; a book called 1080 Cooking Recipes by Simone Ortega changed many, many generations of home cooks. This book now has more than 50 editions and has sold more than 3.5 million copies. Simone Ortega got a special Gastronomic Award in 1987 because she changed, not just a generation, but also a preestablished way of thinking. A new future in home cooking in Spain!

This book has many, many fond memories for me because my mum had a copy in her kitchen with handwritten notes of all the things that she liked, the amounts of ingredients she played with, etc… I remember vividly, seeing her preparing food with the book opened next to her. In fact, the day I graduated as a chef here in Australia, I received a parcel from Spain with a new edition of this book and a very emotional note on the first page from her, asking me to never forget my roots.

So, I take that joke from my customer as a compliment about what I’m trying to do here in Australia with all of you! Understanding that we are all in the same boat. Because the process of making food is not all

the nonsense that self-interested businesses are trying to sell you 24/7. It is about love. And understanding that, independent of the budget, you care for your family and that you want to try to do the best you can for them.

Traditional ´Sopa de Ajo (aka garlic soup)

Ingredients (serves 4):

- 6 cloves of garlic

- 1 bay leaf

- 120 g old bread

- 3 tbsp olive oil

- 2 tsp pimentón (smoked Spanish paprika)

- 1.5 l chicken stock

- 4 eggs

- Optional: pieces of leftover Jamón, or chorizo, or sausages, etc…

Instructions:

- Peel and slice the cloves of garlic, removing the central green stem. Cut the bread into 2 cm slices.

- Place the olive oil in a large deep saucepan on low heat. Add the slices of garlic and cook on medium heat for several minutes until they start changing colour. Watch them closely as they can burn very quickly!

- Add the pieces of bread and cook for several minutes. When the bread is golden brown, turn down the heat and add the paprika. Mix well

- Add the stock to the saucepan and the bay leaf, bring it to a simmer and cook on medium heat for 20 minutes or so.

- Crack the eggs into a bowl and pour them into the soup. Stir gently until the egg has cooked through. Try to leave the yolks intact, as they are delicious when they are slightly runny in the centre!

- Serve it piping hot! Enjoy!

Note: This is a very humbled soup using leftovers. If you don’t have Jamon Serrano, use chorizo or sausages, or any other leftover piece of meat.

Men’s Probus is on the move with a good roll-up of members enjoying the fun, friendship, and fellowship of Probus.

The meeting began with respect being paid to recently deceased member Robert Cleal, and a welcome to Garry Morgan. Terry O’Malley was farewelled as he moved to the Sydney area.

It was noted that the club finances and new constitution were all in good shape, and activities are continuing. Our insurance is safe with Probus South Pacific.

On August 18 2023, Orange U3A (The University of the Third Age) held their AGM at the Seniors Village Hub, where committee members for the 2023-2024 term were elected.

New members are always welcomed with all the details about Orange U3A on their website at orange.u3anet.org.au or their newly created Facebook page.

Probus South Pacific is a growing body, with annual gatherings being held across Australia and New Zealand to spread the “handclasp” of Probus. To this end the combined Probus Clubs of Orange will hold a dinner in Probus Month (October). Final arrangements are not yet complete, but the date has been set for Wednesday, October 11, with a luncheon (at a reasonable price for a two-course dinner) held at Orange Ex-Services Club at midday. All will be revealed at the September 6 meeting. Mark your calendar; it will be a joyous occasion.

The tour to Zig Zag Railway at Lithgow is causing grey hair for Director John Langford but will happen in November with the coach departing Orange Railway Station at 8am with morning tea before boarding the historic train at 10.30 with lunch to follow at the Workies Club (own expense). Bus fare $30 to $42 depending on numbers.

Program Director Brian Coyne has a great line-up of speakers for your interest. In September, Jessica Adoma from Commonwealth Bank will discuss money matters

particularly as they a ect older people. In October gymnast Vanessa Gaynor will help us to painlessly keep fit, and in November Peter Smith will talk about his walks in Ireland and Portugal. Our Christmas party is in December and we take a break in January.

Guest speaker this month was W/O Tom Squires, a real Army man who displayed a collection of his Army forebears with an amazing array of awards. Tom joined the Army at 18 years of age at Townsville and progressed through the ranks from private to warrant o cer; a 22-year career that saw service in East Timor, Solomon Islands, Iraq, and Afghanistan where he gained the rank of sergeant. His special duty there was to guard the o cer who was instructing local fighters. Canada and Hawaii were the best places he served, while Afghanistan struck him as a place of terrible poverty.

Tom is a special marksman and became an instructor at the School of Infantry. He now heads the NSW Regiment at Orange, with 10 sta to manage supply and transport resources in this area. They take part in memorial services, like ANZAC Day, and are deployed to assist in emergencies like floods and bushfires.

I am sure that many of us can remember with fondness the stories we read as children that captured our imagination; whether it was the stories of The Wishing Chair or The Faraway Tree or the magical world of Narnia. I am currently reading The Lord of the Rings to my eldest and it has been so much fun – and noisy. I have been told to keep my voice down on numerous occasions, especially when the Rohirrim people charged the armies of Mordor in the battle of the Pelennor Fields. There is something wonderful about a good story. It takes us on adventures to new worlds. They leave a lasting impression in our hearts and minds. I was of the generation that grew up with Harry Potter and I still remember in Year 12 when the Deathly Hallows was first released and the silence across the school during recess and lunch as we were all quickly reading this final story and trying to not hear any of the spoilers. The gift of stories, the gift of a book, is such a powerful one. We have just finished celebrating Book Week and there have been the usual festivities as teachers and students right across Australia join in the fun of dressing up as their favourite characters. In our house we are waiting with anticipation for the release of Andy Gri th and Terry Denton’s final instalment of the 13-Storey Treehouse series. These books have brought so much joy to our house as we are constantly bombarded with laugh-

out-loud jokes and silly anecdotes. We are very excited to see how the series ends and what will become of this crazy treehouse. In fact, even as I write this, my son is sitting at the kitchen table quickly re-reading the series so that he’s up to date and ready for the final book. So what stories have impacted you over the years? What were the stories of your childhood that were formative in shaping the way in which you see the world? For me, the two books that have impacted me the most are Tolkien’s The Lord of The Rings and The Bible. The reason why I would say The Bible has shaped me the most is because the stories, lives, songs, letters are not just the account of a particular group of people, but it is the greatest story ever told. It is a story that makes sense of the world we live in. It is a story that shows just how all of our stories are woven together as part of the great big story of the world. And here’s how a part of it begins in the Gospel of John: ‘In the beginning was the Word, and the Word was with God, and the Word was God. He was with God in the beginning. Through him all things were made; without him nothing was made that has been made. In him was life, and that life was the light of all mankind. The light shines in the darkness, and the darkness has not overcome it.’ Maybe you might like to take the time one day to follow this story and see how it ends.

I doubt I’m alone experiencing the ongoing e ects of disobeying an instruction. As a nineyear-old boy living on a farm, I was told not to go near a particular horse. But I knew I could handle him! One day Dad had left him grazing in the paddock while he had lunch. I got on, but he took fright and bolted. He didn’t stop until we hit a wire fence, then I hit the ground, and he landed on top of me, shattering my elbow. O

to Sydney for surgery, and a bent arm for life. So often we refuse to listen to good advice, thinking we know better. The Bible, God’s good word for us, speaks about God as our heavenly Father. If that is true, then ignoring his good word is not the best course of action.

While I don’t always listen to the good advice of others, I have experienced the joy of listening to the good word of my heavenly Father. When was the last time you read The Bible? Why don’t you pick one up and read it? You may just find that you, too, will see the good words of a loving heavenly Father.

THUMBS DOWN to Orange City Council for the rate increase, they love spending ratepayers money in whichever way they like. Do they ever take pensioners into consideration?

THUMBS DOWN to the P Platers who were racing each other in Phillip Street, showground side. Maybe speed cameras need to be in place?

BIG THUMBS DOWN to Orange City Council for their rate increase of $68 per quarter. Absolutely ridiculous. If they didn’t waste so much of the rate payers money on trivial things they might be able to keep our rates at a reasonable amount?

A MASSIVE THUMBS DOWN to the people who drop rubbish around the PCYC volleyball courts and football fields.

THUMBS DOWN to all the people that go to the movies and deliberately wreck the seats - have some respect for other people’s property!

THUMBS UP to the sta at Orange Post O ce for still providing a fantastic service during their renovations, it can’t be easy. Keep up the good work!

Scouts rally in Orange

Scouts from throughout western NSW gathered in Orange in October 1955 for a weekend of activities and friendship. Coming from Dubbo, Forbes, Bathurst, Lithgow, Molong, Manildra and Fairbridge Farm, they joined two local troops – Orange and Glenroi – for a parade along Summer Street, a rally in the Lands O ce Reserve and various competitive events.
