It’s just the second week of October, and barely warm enough to swim, but already there’s plenty of Christmas nick-nacks and apparel everywhere! A bit soon to be thinking of Christmas around the OC Life office when we’ve still got 10 issues to put out for you before then. Still, it will be here before you know it.

School is back for the final term, much to the relief of many parents and even some kids. I know my boys were very ready to go back and see their mates as they were both up and dressed in uniform on Monday before I’d had breakfast. I did manage to take the kids on a quick trip out to visit family in Dubbo last weekend and took them around the zoo. If you haven’t been for a few years you really should do so, the facilities there and the attractions just keep getting better every time I visit.

Full steam ahead for Australian National Field Days 70th year

The Australian National Field Days (ANFD) is celebrating its 70th year in 2023 and according to organisers it is shaping up to be one to remember.

The annual Field Days serve as a platform for showcasing the latest agricultural technologies, products, and services, making it a not-to-be-missed event for farmers, rural businesses, and agriculture enthusiasts.

Already about 450 exhibitors have booked sites for the three-day event at the Borenore on October 26–28, which means close to 1,000 companies will be represented at the site.

This year the Feature Exhibit is TAFE NSW, who will be on hand to discuss the variety of agriculture courses available for those looking to find a job, change careers or start a business in the sector, as well as short courses for stakeholders to upskill to better manage and maintain their properties.

Administration Manager of the Australian National Field Days, Jayne West, said interest in the 2023 event is

extremely strong, with a positive start to the season and a significant increase in the number of new exhibitors.

“We are very pleased with the number of exhibitors booking sites and the number of new companies keen to display with us for the first time,” Jayne said.

“Ag-tech is now such a big part of technology for farmers, so we’ve got an ‘Ag-tech Alley’ set up with 20 exhibitors… monitoring services, apps, drones, all tech stu .

“Something else that’s really big is tiny homes and modular homes. There’s a lot of interest in those at the moment with people putting granny flats in the back houses or having extra accommodation on-farm for Airbnbs and things.”

But more than just a large outdoor shopping experience, Jayne said exhibitors will be conducting demonstrations on site and there will be a whole range of informative and educational talks over the three days.

The popular fashion parade will return for the first time since 2019 with Wendy Henry from Booful adding her expertise and flair to the event. The parade will feature a display of clothing from exhibitors at the ANFD, and a special section will focus on garments made from natural

fibres like cotton, hemp, wool, and alpaca.

The CWA cooking demonstrations will also feature hemp as the product of the day.

The o cial opening will be held on Friday, October 27, where the NAB Award of Excellence, The Land Machine of the Year and Cabonne Council Best Local Exhibitor and Best Agriculture Exhibitor will be announced.

The Dogpro Sheep dog trials will run daily with 60 dogs competing in the open and novice trials with the final 10 dogs fighting it out for first place on Saturday, October 28.

“The whole region benefits from the event,” Sam Connell, Chairman of the Australian National Field Days, said. “With many accommodation and restaurant venues around the Central West showing strong bookings.

“Millions of dollars will be pumped into the economy during the three-day event,” he concluded.

The Australian National Field Days will take place October 26–28 at the Borenore site, 15 km west of Orange. Gates open 8.30am to 5pm daily.

INNOVATIVE APPROACH TO SKILLED STAFF SHORTAGE LANDS AWARD HONOURS FOR

Doggie Daycare

Faced with a shortage of skilled staff, Diesel and Blue Doggie Daycare & Grooming owner Danielle Haase decided to take matters into her own hands, creating an innovative solution that’s a boon for her own business while providing career opportunities for local kids.

Ever since Danielle opened her local doggie daycare business in 2019 she says she has struggled to find trained dog groomers, a problem that’s only become worse since the global pandemic.

“There’s no groomers in this world right now!” Danielle said. “Because of Covid, everyone quit and everyone got a dog. So there’s this massive disconnect between the amount of groomers and then the amount of dogs.

“I have advertised all over Australia or even considered FIFO, we considered flying someone in every week from Queensland as

a groomer because we’re that desperate for a groomer!”

But then Danielle realised that this could also be an amazing opportunity for young locals. Working with TAFE and other training organisations, Danielle has created a traineeship program that, from next year, will see a regular intake of young school leavers being trained and qualified as dog groomers right here in Orange.

“I realised there was this amazing opportunity for kids leaving school who didn’t want to go to uni and were creative and maybe neurodiverse and loved dogs and they wanted to do something in that realm,” Danielle said.

“So I created this traineeship program, which has been kids approaching me up until now, but as of next year, we’re going to have an intake every January – two trainees, every year, ongoing is the plan. A permanent, regular, organised traineeship program.”

This creative approach to solving a skills shortage saw Danielle win not just the Excellence in Innovation category at the 2023 Business Orange Awards, but Diesel and Blue Doggie Daycare & Grooming was named 2023 Outstanding Business of the Year.

“That kind of threw me off-centre a little bit,” Danielle said. “But it speaks to the success we’re having, we also won the state Australian Achiever Award again in the pet services category — we’ve won state every year since we’ve started and we won national last year.

“But, as I said on the application, it’s not like we’ve created anything new. We’ve basically just taken something that’s on offer, which is fee-free training through government, and a business that has the potential to train and kind of pulled them together.”

As well as putting the traineeship program in place, Danielle has also been actively meeting with career counsellors and schools

to promote dog grooming as a career or a skill set that could take you anywhere in the world.

“If I was 18, 19, 20 and I had a Cert II and then Cert III in grooming I could literally travel the world,” she said.

“Instead of getting a Responsible Service of Alcohol or doing a barista course and heading off, you could get grooming qualifications and travel the world as a groomer, because there is just a dearth of groomers worldwide...

“Or if these kids are ambitious, own your own business! I’ve got no qualms teaching them everything I know and them going out on their own and opening their own businesses. Because it’s just an industry that right now — and for the next three to five years – that is going to have the opportunity for rapid expansion and for smart school leavers to grab it and be successful.”

Big field of runners set to tackle Mount Canobolas trails

It’s only in its second year, but this weekend’s local trail running event, the Lonely Mountain Ultra, is expected to draw close to 1100 runners from across Australia beyond to the central west.

Held on the slopes of Gaanha-Bula Mount Canobolas, the Lonely Mountain Ultra sees runners take on gruelling distances from ultra-marathons of 104km, 50 miles, and 50km, to the more accessible 30km, 22km, 11km and children’s 4km and 2km events.

The inaugural event last October saw about 750 runners take part, but when this year’s races begin on Saturday, October 14, organisers expect there will be close to 1100 runners of all ages taking part.

“We couldn’t be happier really with the way the registrations seem to be going,” Lonely Mountain Ultra management

committee president Sam Collins said.

“We had some distances last year that sold out, the shorter distances, and we bumped our numbers up significantly this year to include more runners but some of them are going to sell out again.”

Sam said it looks like there will be a full field of runners in the kids’ 2km and the 11km, 22km and 32km races are also on track to sell out.

“Yeah, and we’ve got more than double the amount taking on the 100k this year compared to last year and close to double in the 50k as well, which is great.”

Not only have the number of registrations increased this year, but runners are coming from further away. This year, SAme said they have had entries from up and down

Foodies of Orange enjoyed a delicious day out at the Orange Producers Markets every Saturday.

The weekly markets, held in the courtyard next to Bills Beans is an opportunity for local growers and producers to bring their freshest produce every week. COME and JOIN US

the east coast, Queensland, Victoria, Tasmania, and even from New Zealand, England and the USA.

“It’s nice to have some overseas participants but there’s heaps of people from out of their region,” he said.

“That’s part of why we’re putting this on; to bring people to the region so they can experience the trails that we’re so lucky to have here.”

Competitors in the 104km ultramarathon will hit the trails first on Saturday, with the race start at 6.15am. Runners in the other distance races will then follow at intervals throughout the morning, with the kids’ races being held in the early afternoon.

All races begin and end at an event site located near the intersection of Mitchells

Way and the Cargo Road at Lidster, approximately 15 kilometres west of Orange.

“We’ve got a whole event village set up with stores from sponsors, so people can come and engage with them. We’ll have various food vendors as well, so people can get a range of di erent food and drink options, co ee, beer, wine– that sort of thing,” Sam said.

“We’ll have a DJ there for the busiest parts of the day. It’ll be a pretty fun festival feel. We had a really good vibe last year and we’ve just built on what we did last year to make it even better for this year.”

DON’T RISK DIVIDING AUSTRALIANS

Dear Resident,

Our country faces real challenges, including the rising cost of living. Other important issues include national security, crime, housing, energy, infrastructure, education, health and mental health.

The upcoming referendum is also very important.

It is not simply about recognising Indigenous Australians in the Constitution. That could be done without tying it to a risky Voice.

This Voice proposal would be the biggest change to our Constitution in history. Enshrining in our Constitution a body for one group of Australians means permanently dividing us.

This Voice covers all areas of “Executive Government”. No issue would be beyond its reach.

It risks legal challenges. The High Court would ultimately determine its powers. Some Voice supporters are upfront in saying that this will be a first step to reparations and compensation and other radical changes.

It’s a big decision. However, the Government won’t provide basic details. We don’t know how its members would be chosen or how it would operate. Australians are being asked to vote before these details are worked out. Once it is in the Constitution, it would be permanent. This decision affects all Australians.

If you don’t know, say no.

Ride Blue on the road to be er mental health

Local motorcycle riders are preparing to hit the road on Saturday for a friendly, free social ride to raise awareness of just how much help is available when you are feeling blue.

Now in its seventh year, the Ride Blue Suicide Awareness Ride will depart Orange at 9am on Saturday, October 14, heading out to Molong, Garra, Cudal and Eugowra, before

returning for a free barbecue lunch open to anyone who wants to attend.

Ride Blue founder Steve Doherty said all are welcome to take part as it is about getting people more familiar with the mental health services that are available in our community.

“Back in Orange, we will have a free barbecue lunch, cooked by Lifeline, and we will have health information stalls there… the whole idea of Ride Blue right from the start

is to get people to realise that there’s not just Lifeline and Beyond Blue, but there are a couple of dozen other metal services around Orange that we don’t really know about,” Steve said.

“So it just gives them the opportunity to meet those people and see that they are just normal people like you and I and then down the track when they know someone that needs help, they can recommend someone.”

The Ride Blue Suicide Awareness Ride begins and ends at Headspace Orange, near the intersection of Peisley and March Streets, and is free to take part.

WATER SAFETY

As the seasons shift, many of our community members are drawn to the water. However, despite ongoing safety warnings, heartbreakingly, drownings continue to take place.

The recent National Drowning Report 2023 shared alarming data about drownings in NSW:

• 107 drowning deaths (up against the 10-year average of 95)

• 78% of drowning deaths were males (83 deaths)

• 57% of drowning deaths were people over the age of 45 years

• 14% aged 75 and over (15 deaths)

• 3% of deaths under the age of 5 (3 deaths)

Interrelate Orange Open Day

• 35% of all fatalities in NSW were in rivers and creeks (29% at the beach, 12% from rocks)

• Drowning rates in outer regional, remote, and isolated areas were notably 1.77 times higher than in urban zones.

• 71% higher rate of fatal drownings in disadvantaged areas compared to more affluent regions.

• NSW's fatal drowning rate is almost double that of QLD and VIC and three times that of WA.

These figures are a stark reminder of our collective responsibility for water safety and the prevention of such tragedies. It's crucial for us to champion the importance of safe aquatic practices, and vigilant of others’ saf ety in and on the water. Let's enjoy the warmer weather and look out for each other.

Retired train drivers follow the tracks back to the Orange depot

Retired train drivers and signalmen came from all over for a reunion at the Hotel Canobolas on Friday, October 6.

For many of the former work colleagues, it was their first time being together in over 30 years.

“The depot closed in 1989 and most of the drivers haven’t seen anybody at all since that time,” retired train driver Philip Tratarinov said.

Philip made the journey from his home in Brisbane for the weekend reunion.

“Fantastic to see these guys… 26 blokes, with an average of 40 years experience each, it comes to 1040 years of total experience on the footplate with NSW Railway!

“I met one of my old mates, Peter Naven yesterday, we swapped so many yarns. Peter is actually from the steam era too. History yarns, the blokes that were around, remembering

the blokes that are now dearly departed and gone to the roundhouse…

“It’s just a lovely little reunion and we plan to have some more later on because a couple had to drop out due to health issues.”

Philip, who got the nicknames “Tetanus” or “Tarantula” as a driver, actually began his career in Orange as a young railway fireman, moving up through the grades to get his driver’s ticket.

“It was a little blue fold-out and they put your name and once you’ve got that you were over the moon!” he reminisced.

“You did five years of hard study, got through and now you’re a driver!”

After a night of catching up at Hotel Canobolas the old colleagues met up again on Saturday morning for a tour through the Orange East Fork deport, which is now home to heritage rail group, the Lachlan Valley Railway.

“Just a huge ‘thank you’ to John Healy and Bondy at the depot with the LVR for letting us do the tour on Saturday, It was terrific!”

NEW TRAILER TO SUPPORT DISASTER-HIT COMMUNITIES

It was wonderful to see that the Rapid Relief Team in Bathurst recently received a $10,000 grant under the Federal Government’s Stronger Communities Program.

The team can always be relied upon when we need them most, providing crucial catering at emergencies like the Black Summer bushfires where they offered thousands of meals to our firefighters and emergency crews.

During the storm and flood disaster of November 2022, and at the Hill End fires, the Rapid Relief Team were there, lending a hand to communities in need.

The grant has enabled the Rapid Relief Team to purchase their own emergency support trailer for the Bathurst region, so the group can offer valuable assistance to emergency services and fire crews as they protect the community.

It was great to have a chat about this new funding with Rapid Relief Team members Michael and Peter in Bathurst recently.

A BRILLIANT BATHURST 1000!

It was fantastic to attend the Bathurst 1000 race last weekend!

The Great Race certainly lived up to expectations with Shane van Gisbergen and Richie Stanaway storming home to Shane’s second straight win and third Bathurst 1000 title in their Chevy Camaro.

A huge thank you to all of the Bathurst Regional Council staff and all of the volunteers who worked so hard to make the 60th Bathurst 1000 so memorable!

In tribute to the legendary old timers who made the Great Race what it is today, I took Big Red, my 1962 XK Falcon ute to the Bathurst 1000.

What is the Voice?

This Saturday the 14th of October, Australians will be asked to have their say in a referendum about whether to change the Constitution to establish an Aboriginal and Torres Strait Islander Voice.

The Voice would give advice to the Australian Parliament and Government on matters that affect the lives of Indigenous Australians.

Why is the Voice necessary?

It’s hard to believe, but

Aboriginal and Torres Strait Islander peoples are not recognised in our nation’s founding document. This wrong must be made right.

The Voice provides that recognition in a meaningful way.

The aim of the Voice is to get better outcomes for Indigenous Australians by ensuring they have a say on issues that affect them. For example in housing, education, health and jobs.

Aboriginal and Torres Strait Islander people have lower

Will the Voice have the power of veto over legislation?

No. Myth busted. There is no veto. This means it would have no power to overrule Parliament, and any advice it gives would be non-binding.

Will the Voice be a third chamber of Parliament?

life expectancy, higher suicide rates, higher infant mortality rates, and worse educational outcomes than non-Indigenous Australians. The gap isn’t closing, and despite well-intentioned governments, the current approach isn’t working.

In the modern, prosperous Australia of 2023, how can this be acceptable?

We need to change it up.

The Voice is about listening and getting positive, tangible outcomes in communities around Australia.

But don’t we already have Indigenous Parliamentarians?

We do, but like governments, individual parliamentarians come and go, and they represent parties. The Voice would be independent and be above partisan party politics. Having it in the Constitution provides independence, consistency, and continuity.

Is the Voice legally and Constitutionally sound?

Yes. A host of constitutional law experts and organisations have given the Voice the tick of approval as being legally and constitutionally sound, including:

Will the Voice “gum up” the Federal Government with court challenges and stop budgets, change Anzac Day, take land, ban fishing, stop nuclear-powered submarine contracts or create a seperate state?

No. Myth Busted. The Voice can’t and won’t introduce bills or run programs. It will be subject to the rules set for it by Parliament.

SAYING YES!

Nathan Cleary is supporting an Indigenous Voice to Parliament.

Isn’t the National Indigenous Australians Agency (NIAA) the same as the Voice?

No. Not at all. Myth busted.

Unlike the proposed Voice, the NIAA is not independent of government, it’s part of the Department of Prime Minister and Cabinet. Only 22% of its staff are Indigenous. It can be abolished at the stroke of a pen. It can’t give advice to the Parliament.

Oh and the NIAA doesn’t have a $30 billion budget (another myth busted there on the way through).

Does the Voice give anyone special rights?

No. Myth busted. Leading constitutional law barrister Bret Walker SC has described claims the Voice would lead to endless court challenges and the “gumming up” of the wheels of government as “nonsense” and “too silly for words”. It’s an advisory body that will be subject to the rules Parliament makes for it. It won’t have the power to ban anything. These wild claims are ludicrous.

Who will be on the Voice?

Members of the Voice will be chosen by Aboriginal and Torres Strait Islander people and serve for a fixed period. It will include Indigenous Australians from every state and territory, the Torres Strait Islands and representatives from the regions and remote communities. It will be subject to the rules made for it by Parliament.

Would the Voice stop me digging a hole in my garden or on my farm?

No. Another whacky myth busted. It’s an advisory body folks! The Voice would not be able to force the Parliament to do anything it doesn’t want to do. The veggie garden is quite safe.

Why can’t we put the rules of the Voice in the Constitution?

Because our Constitution provides the broad framework for governing our country and we leave it to our elected representatives via the Parliament to pass legislation about details such as rules.

No. Myth busted. The Voice does not give any group any special rights. It’s an advisory body that doesn’t give any rights to anyone. This has been confirmed by eminent constitutional lawyers and former High Court judges.

For example, in 1901 the Constitution gave the Australian Government the power to set up a High Court and other courts. It wasn’t until 1903 that Parliament established the High Court through legislation. Then in 1975 the Parliament set up the Family Court through legislation.

Another example is that in 1901 the Constitution gave the Commonwealth the power over currency but left it to the Parliament to work out things like what the notes are and what they look like. In 1910 a law about notes was passed. Banknotes finally got issued in 1913.

The Voice will be set up by the Parliament and subject to its rules.

Orange naturalists release field guide to the stunning native orchids of the Central West

“Most people don’t sort of recognise that there are orchids in the region at all, much less 137 of them!” says local naturalist Dr Colin Bower who is hoping a new book written with friend and colleague Dr Richard Medd will go a long way towards changing that.

Their book, Orchids of Central Western NSW - Identification, Biology and Conservation the first comprehensive guide to the native orchids of the Central West. One-hundred-and-thirtyseven species and three hybrids are described and illustrated in the guide along with high-quality photographs for ease of identification.

Dr Bower, a retired entomologist, and Dr Medd, an agricultural scientist, have both had a long fascination with natural history and have spent a lot of their spare time over many years searching for and photographing orchids and other native plants throughout the Central West and beyond.

“There is so much about the orchid that is fascinating,” says Dr Medd. “They are very charismatic, they’re beautiful plants, exquisite flowers, but more than anything it’s their evolutionary tricks…. they have evolved fascinating mechanisms to ensure that the pollen of one species lands in the right place in the right address.”

One such evolutionary trick common to orchids in this region is that they are able to mimic insects, both physically and chemically, in order to propagate.

“About 80 per cent of the orchids in the region actually trick their pollinators into pollinating them,” explains Dr Bower, who has travelled all over the east coast of Australia studying orchids and their pollinators.

“They mimic female insects and admit odours, the sex pheromones that attract males and the orchids are pollinated when the males attempt to mate with the flower.”

But orchids have extraordinarily complex life cycle requirements that can only be met by intact natural habitats, says Dr Medd.

“Like a lot of native flora in natural areas, there’s pressure on them from all sorts of angles and they’re disappearing in the landscape,” he says.

“So one of the main aims of the book is to draw attention to the fact that these beautiful plants exist and that they’re under threat because they’re not well conserved.”

Healthy Active Ageing: Preventing falls in the home

Benefits of staying active and healthy as you age include increased wellbeing and participation, faster recovery, reduced risk of chronic disease, and prevention of falls and pressure injuries. Here are tips to prevent falls in the home from Western NSW Local Health District:

COMMON CAUSES:

• History: If you have had a fall at home, you are more likely to have another.

• Confusion: Being unwell can cause confusion and disorientation, and impact concentration on surroundings and safety.

• Vision: Have vision changes checked. Ensure glasses are clean. Use lights at night, let your eyes adjust before walking.

• Toileting: If you often rush to the toilet or frequently go at night, talk to a healthcare professional about strategies to reduce fall risk.

• Transfer and mobility: If you often use furniture as a support or find it hard to get on and off the bed, toilet or chairs, seek advice from a healthcare professional.

• Medications and medical conditions: If you ever feel dizzy or light-headed, your doctor can provide medication reviews and changes if required, or advice on managing symptoms to reduce risk.

FALL PROOF YOUR HOME:

• Floors: Make sure floors are non-slop and clear of clutter. Remove or secure rugs.

• Cables: Make sure these do not cross walkways.

• Lighting: Use lights inside and sensor lights outside, ensure adequate lighting.

• Stairs: Install handrails and slip resistant highlight strips on stairs and steps.

• Bathroom: Use non-slip bath mats, install rails or a shower chair. Be careful on wet floors.

• Kitchen: Clean up spills immediately, do not climb on anything to access cupboards.

• Gardens: Keep walkways clear and moss free. Be careful if frost and ice are present, or it is wet and slippery.

YOUR HEALTH:

• Health conditions: Illness can increase fall risk, including; arthritis, osteoporosis, diabetes, heart problems, depression, Parkinson’s disease and dementia:

o These can cause balance concerns and even shortterm illness can impact stability. Talk to a health professional about reducing fall risk.

• Diet: Eating well, avoiding highly-processed foods and drinking plenty of water develops and maintains muscle and bone strength, including; fruit and vegetables, good protein sources, dairy and legumes.

• Calcium and vitamin D: As we age our bones become susceptible to weakness. Consuming adequate calcium and vitamin D is essential to maintaining strength:

o Dairy, salmon, sardines, tahini, figs and nuts are good sources of calcium.

o Smoking, and over-consuming caffeine and meat can reduce calcium absorption.

o Vitamin D comes from sunlight, and food like dairy, oily fish, eggs, mushrooms and liver.

When Ren and his mother move from Chicago to a small farming town, Ren is prepared for the inevitable adjustment period at his new high school. When the reverend’s rebellious daughter Ariel sets her sights on Ren, her roughneck boyfriend tries to sabotage Ren’s reputation, with many of the locals eager to believe the worst about the new kid. The heartfelt story that emerges is of a father longing for the son he lost and of a young man aching for the father who walked out on him.

HEAVENLY MALE VOICES JOIN IN SONG AT HOLY TRINITY

Two of the oldest male voice choirs in Australia are coming together for one special concert at the Holy Trinity Anglican Church on Sunday, October 22.

The Sydney Male Voice Choir, celebrating its 110th anniversary this year, has embarked on a tour of New England and the Central West. But, when the tour hits Orange, they will be joined by our own long-running Orange Male Voice Choir for an afternoon of musical joy that only a live performance can deliver.

“The Orange Male Voice Choir will be celebrating its 100th anniversary in 2026, so we are two of the oldest male voice choirs in the country, probably the two oldest in New South Wales almost certainly,” Orange Male Voice Choir member David Woodside said.

The two choirs have a long history of singing together when the opportunity arises, David said, and each occasion has been a memorable one.

“Those concerts we did in the past were massive affairs. We had two extremely good conductors in those days and both choirs would put about 60 or 70 people on

stage,” he said.

While the choir numbers took a hit during the height of the pandemic, it has been a busy year for the Orange Male Voice Choir, and this combined concert will be one not to be missed, David said.

He said you will be impressed by the sheer range and versatility of the repertoire from choral classics to Billy Joel, Joe Cocker, John Farnham, Queen, Creedence Clearwater Revival, Broadway musicals, opera and more.

“I think we’re singing well, they’re singing well, so all things considered it will be a fairly successful concert,” David said, adding that the last time these two choirs shared a stage it was at the Sydney Town Hall in October, 2022.

FARMERS’ MARKETS PAY TRIBUTE TO LASTING LEGACY OF CELEBRATED COOK LESLEY RUSSELL

This Saturday’s Orange Farmers’ Markets will hold a special memorial for celebrated cook, educator and author Lesley Russell, who died in June this year after a battle with cancer.

Lesley was a regular participant in the Chef’s Table cooking demonstrations at the markets and on Saturday there will be not one, but three Chef’s Tables with each team cooking their favourite recipe from Lesley’s cookbook Nothing Rhymes with Orange.

For those who missed out on purchasing the fast-selling cookbook, 150 copies were held for this special market and will be available for sale from 9am while stocks last. There is a limit of two books per person, $55 per copy.

METHOD:

Mix vinegar and sugar in a small pan over a low heat and simmer until thickened and glossy. Leave to cool (it will thicken as it cools), then transfer to an airtight jar or squeeze bottle.

Something I like about spring is that we eat more raw vegetables and salads. All the seasonal food is now screaming for a crunchy, colourful and delicious combination of flavours. Whatever leaves, herbs, fruit, veggies, nuts, protein, etc, you like to make your salads with, will improve by the final touch: the dressing.

As you may know there are many, many di erent types of dressing. But –whatever you do – please always follow this saying: “What you dress your salad with should be as healthy as the salad itself.”

I love how each culture around the world has di erent approaches towards dressings. And how incredibly interesting it is to see the combination of ingredients depending on the di erent weather, products available, and terroir. But at the end of the day, they all follow the same principles:

1. Fresh is always better.

2. Never overdress your salad.

3. Use good quality ingredients.

Whether you are going to make an oil dressing or a creamy one, the first rule about it is to add your dressing little by little. Toss your ingredients with some tongs until the ingredients are lightly dressed.

As a Spaniard, a good vinaigrette always must have olive oil and vinegar. And the beauty of Mediterranean dressings is to understand that, depending on the type of oil and the type of vinegar you choose, you will get di erent results. Remember, vinegars are really, really important to make our food delicious! I know they seem not to be the most exciting ingredient in our pantry but they add acidity, encourage healthy gut benefits, and improve our digestion.

To make a basic vinaigrette you just need to follow this ratio of three parts of oil per one of vinegar. But if you prefer a sharper vinaigrette try just two parts oil per one of vinegar.

Talking about vinegars, please be adventurous because there are heaps of them: balsamic, apple, red wine, white wine, sherry, malt, champagne, etc. In fact, there are even ‘aged vinegars’ that can blow our mind with how delicious they are. I remember we used to use a Catalan aged vinegar to make a mignonette sauce for oysters in a fancy restaurant in Sydney, that was an absolute bomb! So good.

Salad dressings are called ‘temporary emulsions’ and the list of them is absolutely endless. From example, you can make a homemade creamy mayo and, by adding more ingredients, they suddenly become aiolis (garlic plus mayo), tartare (mayo with capers, gherkins and parsley), remoulade (tartare mayo plus anchovies), cocktail sauce (mayo with ketchup, Worcestershire, lemon juice, etc).

As well, there are other dressings based on fermented milk products, such as yoghurt, sour cream (crème fraîche, smetana) or even buttermilk. Whatever you choose to make, homemade dressings will save dollars, and you will avoid eating stu full of unnecessary preservatives. Trust me, there’s nothing like a fresh vinaigrette!

So, be creative, have fun and enjoy the incredible world of spring salads with homemade dressings.

When I was growing up, my closest friend was an adopted kid from the Philippines. His parents had adopted him when he was only 18 months old and we had so much fun together doing all sorts of crazy things that were possible during the 90s. As we got older, our games and sources of fun became more and more reckless as we tried to show the other just how grown-up we thought we were. The clearest memory I have of this was when I was 14 and he was 15 and his parents were out, and we thought it’d be fun to take his dad’s car for a drive through the front paddock. We had a great time. We didn’t try drifting or drive too fast because there was a part in both of us that we should still try and be careful. It all went very well… until we had to park the car back in the garage. My friend misjudged the angle, wedged the car on to the side of the garage door, and the car got stuck. Whichever way he tried to manoeuvre it, the side panels would only buckle and scrape more. He then had the bright idea of tying a rope to the towbar and dragging the car sideways with his dad’s ride-on mower (with a bit of a run-up). It did work but caused a bit of serious damage to the car’s axle. But we thought we were all good and that his dad wouldn’t notice. However, just as we were shutting the garage, his parents came home. I had never seen my friend cry before.

I’d also never seen his parents angry before. But, as I sheepishly grabbed my bike to ride home, I heard his dad say something that has stuck with me: he said he still loved him and that he forgave him. As I remember that teenage episode, I’m reminded of how the Christian message resonates so much with this memory. At the heart of the Christian message is one of forgiveness. That, even though we have messed up, God o ers forgiveness through Jesus. But there’s something even more wonderful in this. That those who are part of God’s family are adopted into it and they will never be unadopted. That was the crazy irrational fear I had as I rode back home that afternoon – that my friend was somehow going to be unadopted. But, of course, that would never happen. He had been forgiven. He was assured of his father’s love even in the midst of a pretty big mistake. This is exactly what happens to all those who trust in Jesus, and it is the hope that I have. The apostle Paul reflects on this in Romans 8:15 when he says: ‘The Spirit you received does not make you slaves, so that you live in fear again; rather, the Spirit you received brought about your adoption to sonship. And by him we cry, “Abba, Father”.’ There is a wonderful promise and certainty of hope here, that all those who are God’s are adopted into this family and he will never unadopt them.

Head on down to the Cumnock Sportsground from 9am to 2pm on Saturday, October 21 for the Cumnock Village Markets Family Fun Day.

There will be more than sixty market stalls including a variety of food trucks, co ee and ice cream, and bacon and egg rolls from Cumnock Fire Brigade.

Free Family Fun Day Activities include a petting zoo, bungee run, mechanical bull, plaster cast painting, face painting, Cobb and Co Coach rides, jumping castles, live music and more!

Our September meeting was very rewarding as we were able to give support to two men who had recently been diagnosed with prostate cancer, and were not clear on what type of treatment they should pursue. As our members have had various types of treatments, we were able to answer most of the queries the gentlemen had, and hopefully made their future decision easier.

The main Item of the meeting was the information stand at Orange Field Days, and how we can sta it. This is a very important three days as it allows the group to contact many men and explain the importance of visiting their GP and having regular PSA blood tests, as prostate cancer cannot be self-diagnosed, and there is no screening program available. In previous years we have handed out over 100 information packs and spoken to many men and their partners.

We are still looking for volunteers to help at the stand and hand out information packs. If you can help come to our meeting or ring Ray or Charlie.

ORANGE CITY WOMEN’S BOWLING CLUB NEWS

On Tuesday, September 27 we held our Fiesta Day with 47 bowlers attending including four visiting teams from Millthorpe, Majellan (Bathurst) and two from Orange Ex-Services’ Country Club. The theme was ”dress as a famous personality” and the atmosphere was fun from the start of the day with many bowlers dressing up as sports people, cartoon characters, movie stars, or in work uniforms and even Dolly Parton put in an appearance. Some people just went as themselves.

A Life Sentence

As a law student, I spent weeks at the Downing Centre courthouse. We were told to observe and learn. From horrific violence to cheeky gra ti, for a country kid straight out of school it was pretty eye opening.

I’ll never forget a young man who had hit a pedestrian while drink driving. Sitting in court, you could tell he was afraid. I remember him crying while his public defender begged for leniency. He wasn’t much older than I was.

I was in knots. I’d heard the su ering and anger of the injured person’s family. I didn’t want the result of drunkenly running over a stranger to be: “No worries mate!”. But at the same time, I also wanted there to be a way back for that kid. I wanted his heartfelt sorry to be worth something.

This is the question at the heart of Jesus’ story. How will a good God deal with you and me?

Courts fumble awkwardly around justice and mercy. But God doesn’t. Through Jesus, God doesn’t simply ignore our failures or write us o . Instead, Jesus took justice and punishment on himself so he could o er us forgiveness and mercy. Realising that changed my life. You?
