Too Die for Gluten free Coconut Cake

Story by Citty Kat

There is nothing like a delicious slice of coconut cake on a warm summer day. For Gluten free folks, finding quality food is few and far between. Well, I need to rephrase that, finding gluten free food that actually taste good is few and far between. Behold, I found a cake recipe that is both delicious and genuine. After all, Why can’t we have our cake and enjoy it too? Ingredients: 2 cups of Pillsbury gluten free flour blend 1 egg 1 cup of sweetened coconut flakes 2 cups of sugar 1 cup of buttermilk 1 stick of room temperature unsalted butter 1 tsp. of Vanilla 1 tsp. of Baking soda

Ingredients for Icing: 3 cups of powdered sugar 1 stick of melted butter 1 tsp. of Vanilla 1 cup of Coconut flakes

Preheat oven at 350 degrees. Spray a 9” pan with non stick canola oil and lightly dust with flour. Mix flour, coconut & baking soda together then add buttermilk. In a seperate bowl, mix butter, sugar and vanilla and blend until creamy. Gradually add in flour mixture and mix until well blended. Pour in pan and bake 3035 minutes. In the meantime, i would be a good idea to start your frosting. For that , you will simply need a stick of room temperature butter mixed in a bowl. Add a tsp.of vanilla and blend. Gradually add the 3 cups of powdered sugar until thoroughly mixed and becomes creamy. After the cake is finished, turn it out on a large dish and allow it to cool before you icing it about 1520 minutes. Top the cake with a cup of coconut flakes and ENJOY!

Touree Thornton

Story by Phantom

Topeka High school 2015 Graduate Touree Thornton played Trojans football as a defensive back all four years. While maintaining his 3.0 G.P.A. Senior year, 18 year old Touree Has been invited to play Football for Coffeyville Community College and will leave this summer for football camp. It is hard to be a teenage in this day and age. Things that were normal 20 years ago are completely taboo now and it’s easy to get into trouble and ruin your life. We applaud Mr. Thornton for staying focused, staying headstrong, and walking across that stage, from a boy to a successful young man. Kudos Kiddo!

A Macedonian in Kansas

By Citty Kat

"I arrived in Kansas around June of 2006. I had just completed my 7 year contract with the US Army and planned to visit my friend and fellow Sgt. in Kansas a couple of weeks. He didn't actually live in Topeka but was the coowner of a major downtown hotel at the time and gave me an apartment in the hotel to stay in. My first night alone there was a thunderstorm. Yes, it rained in Macedonia, but nothing this spectacular.Bright lighting, heavy winds and rain. I stayed up the entire time watching the yellow sky turn violet and gray. I at that moment fell in love with America." Says Marjan. Marjan comes from the land of Alexander the Great, Former Yugoslavia, Veles Macedonia. He says that America has a lot of perks versus Europe. A lot of room for advancing in life and your career. Even though he loves and misses his country, he says sometimes the simple things we take for granted like education and work are very scarce there. "Macedonia was once prosperous and beautiful socially, now it is slowly falling apart. From 19481991 it was paradise, now It is very hard to achieve what i have in a matter of a few years here now as a U.S. citizen. " Says Marjan. The 46 year old is now a Chief Engineer at the downtown Topeka Ramada , a homeowner, father of 3 and Married to his wife of 9 years. Marjan (pronounced mahdeeon) said if there is one thing specifically he loves about being an American, "Freedom to assemble and voice your opinion. Once that is taken away, the next thing to come from experience is your freedom. Cherish it."

Toopha Review: eal Hair, Real Quality R

By Ashia Ackov

For many years, Women have used hair enhancers a.k.a. wigs, weaves or extensions as an accessory for the night, to follow a new beauty trend or a long term fix for hair loss . I choose to do it because i am lazy and don't like going through a daily hair ritual of flat ironing, blow drying etc. I have hair like a lion's mane that needs to be tamed so i keep it braided. I do not, i repeat do not like cheap, poor quality "Fake" human hair that your local beauty stores sell and claim that it's "Real" at prices up to $120 a bag.Yes, i have been fooled before with the expensive crap being sold that last about a week before it looks like a matted bird's nest. I was skeptical, i always do my research, then i came across Toopha Hair. First of all, the entire experience from checkout to shipping was positive. I had trouble placing my order and Christina from Toopha's customer service department emailed me all the way through the process. She even continued to check in on me and make sure i was happy with my purchase later on. I don't know too many businesses that do that anymore, " value their customers". When i received my package, it was neatly package and looked like a million bucks. The unveiling of the box was like the heavens' shining through from a dark cloud. TaDa!! Finally, Real Hair!!! I am beyond impressed. It is very high quality, low shedding, fast and "FREE" shipping from China with excellent customer service, but it is not like you would ever use the customer service unless you wanted to buy in bulk (Hair starts out at $50)or make a new friend like "Christina". I know fellow braiders, even though they do not sell the hair in braid bulk, we can make it work, i just cut mine from the weft and it turned out fine. I challenge you to try this company and give them a review. The best reveal will win a free outfit of their choice from Mismatched Misfitz summer collection.
