Cookin’ Corner Spicy Chicken & Glass Noodle Salad By Phoebe Schilla

Spicy Chicken Salad with Rice Noodles! This is the latest little lunch salad or light dinner that I am crazy about. It has everything going for it—easy to make, delicious and lends itself well to variation—the type that has you using up leftover bits and pieces from last week’s farmer’s market trip. The secret is the addictively spicy-but-not- too- spicy and pungent dressing. Dressing: • 2 Tbsp. oil • 2-4 garlic cloves, chopped • 2 Tbsp. Tahini or other nut butter- I’ve used both almond

butter and peanut butter on occasion. 2 Tbsp. soy sauce 2 tsp. sesame oil 1 Tbsp. horseradish 1 Tbsp. Chinese style hot mustard (mix up your own by combining 1 Tbsp. dry mustard powder mixed with 1 tsp. water and 1 tsp white vinegar. Stir well before using.) • 1 Tbsp. finely chopped hot pepper such as jalapeño or Serrano, more or less according to taste. Salad: • 2 skeins mung bean noodles, about 2 oz. (you can also use angel hair pasta, soba noodles, or thin rice noodles.) cooked according to package instructions. • ¼ cup cilantro leaves • 2 scallions, white and green parts finely sliced • 1 small to medium cucumber julienned • ½ red or orange bell pepper, julienned • 1 cup julienned napa cabbage, endive or radicchio or other salad green-y type stuff. • 1 cup shredded protein- I most frequently have leftover grilled chicken, but have also used leftover pork and tofu.

To make the dressing: Heat the oil in a small skillet over medium heat. Saute the garlic until aromatic. Remove from the heat. Add the remaining ingredients and mix well to combine. Set aside. Place the noodles and remaining ingredients in a large bowl. Pour the dressing over and toss well to combine. Become a Junior Ranger! The Junior Ranger Program is back, with some exciting new programs! This spring, the City of Rancho Palos Verdes’ Recreation and Parks Department invites children ages 7-12 to take an exciting adventure to become Junior Rangers! Mountains Recreation and Conservation Authority (MRCA) Rangers and naturalists will lead children through programs where they will hike the Palos Verdes Nature Preserve, create crafts, and learn about local wildlife, tide pool marine life, wildfires, open space safety, and more! Once participants complete the orientation and at least three of the Saturday programs, they are eligible to become official Junior Rangers, and attend the June 7th graduation ceremony! Below is a list of the Saturday Programs offered for the Spring 2014 Junior Ranger Program. If you are already a Junior Ranger, come join on our hikes, review sessions, attend new sessions, and share what you have already learned with Junior Rangers in training! It can involve focusing on the breath, on bodily sensations, or on a word known as a mantra. To meditate means turning your attention away from distracting thoughts and focusing on the present moment and is commonly used for relaxation and stress reduction Considered a type of mind-body complementary medicine, meditation can give you a sense of calm, peace and balance that benefits your emotional well-being, your overall health and even improve certain medical conditions. A growing body of scientific research supports the health benefits of meditation as cited by the Mayo Clinic which can include: Along with the emotional benefits of meditation which can include: • Allergies

Find a comfortable position for your body as well as temperature, Focus on the flow of your breath as you slowly inhale and slowly exhale. Do this several times until the rate of your breath has slowed and deepened. Set a relaxing sounding timer- start with 5 minute increments. Meditation is the word or term used to include many different types of practices that simply get you to a relaxed state of being. There are many types of techniques so there is no one “right” way to do it- experiment to find the easiest way for you to relax and clear you mind on a regular basis. On Dad’ On Dad’s Watch s Watch Happy 10 Anniversary!!! By Michael Malgeri They say a picture is worth a thousand words, but I say, "A word is worth a thousand pictures"...or do I say, "A thousand pictures are worth a word." I forget, but the point is, words like "family," "children," "son," “mother” and "daughter" conjure images, each of which serves up emotions that are personal and forever precious. I recently performed a geeky lexical analysis on the compendium of "On Dad's Watch" stories, and the word that elevated itself to the top was "kids." Below you'll find a few favorite photos that pop into my head when I say, hear or otherwise think "kids." No doubt you have a beautiful collection of your own. I want to thank you all for allowing me to share 10 years of fun, mayhem, antics, some heartbreak, perhaps a little too much politics, and every once in a while T.M.I. See ya next time! QUICK TIPS FOR ORGANIZING QUICK TIPS FOR ORGANIZING Spring Cleaning—Really? Today’s spring-cleaning is not the same today as in our mother and grandmothers’ day. Then the house was literally turned inside out with a schedule including, deep cleaning and polishing of all furniture, fresh wallpaper, painting, rug cleaning, fresh or new slipcovers, and more. If you do not recall all this fuss over winter’s ending, I am sure your elders have not too fond memories. Yes. Spring does still conger up thoughts of opening the windows and freshening up the house. So go for it with these quick tips to help you “spring” into action. 1. 2. 3. 4. 5.

Open windows to air out each rooms. While you’re there, quickly clean the window and ledges on the inside. You can plan a later day to tackle the outsides. Or hire a window cleaning service. Try using a light sprinkling of water on the bristles of a broom to “catch” more dust and dirt when sweeping. This works especially well on porches, decks and garage floors. Or try the new disposable pads on a stick method of dusting and wet cleaning. A telescoping duster is great for cobwebs in those high spots. When using a feather or “furry” dust catcher, try giving it a quick (light) spritz of furniture polish to catch the dust and not just push it around. Check out the cleaning supplies at your supermarket for great shower, tile and grout cleaning sprays & solutions. Also visit a local janitor ial supply stor e for substantial and reasonably priced products. A swipe of a baby wipe or a spray of window cleaner is great to freshen up sinks & fixtures. Remember to change the kitchen sink sponge daily…yes daily. They can be a breeding ground for bacteria! Toss them into the dishwasher or washing machine or zap them in the microwave oven for two minutes. Keep cleaning supplies under each sink in a handy plastic caddie for easy access and quick daily clean-ups. It is easier to clean on the spot when the supplies are handy. Take care to prevent small children from getting into these areas. Window blinds can be a hassle to clean. A feather duster with a light spray of dusting spray will do well to collect the dust. Or hire a window blinds cleaning service.

That should get you started with the “new & easy” spring-cleaning. Now, reward your hard work with some fun in the sun! After all it IS Spring!
