Letter From The Publisher: Publisher I began What’s Up For Kids almost 19 years ago. I had 2 little girls and my 3rd child wasn’t even a twinkle in my eye yet. But just a few weeks ago, we celebrated my oldest daughter’s college graduation— what a milestone. What’s Up For Kids was an accident! It was created out of my own need—because I was trying to find things to do with my little kids. At the time, there wasn’t a publication that served families in the South Bay—and while some have come and gone, we are still the only magazine that is dedicated to serving South Bay families. Time goes so quickly. And while you may be reading this with a baby in your arms and a 2 year old at your feet, hang on tight.—because it won’t be that long before you too are celebrating Kindergarten, 8th grade, high school and college graduations. Ana graduated from the Business School at Santa Clara University, Magna Cum Laude, with a degree in marketing. Yes, a proud mom and dad in deed! Now it’s time for a little summer fun! You’ll find a few recipes this issue as well as busy family cooking tips. Our 3rd and final Got Summer Camp guide is included as well—and don’t forget about our www.GotSummerCamp.com website where you can search 100’s of summer camps. Our calendar is filled with TONS of fun things to do—so be sure to visit www.whatsupforkids.com for the latest and greatest things to do with your kids this summer. Remember to stop and smell the roses and enjoy the lazy (sometimes crazy) days of summer!

Health & Wellness Health & Wellness Kid Friendly Egg Muffin In my recent Kid Friendly Healthy Meal Makeover Class in San Ramon, the moms and kids got to prepare egg muffins or egg cupcakes (call it whichever gets them excited about eating it. Protein is necessary for regulating blood sugar, energy, brain function and focus so having many options for protein is important for kids as well as adults! Not only are these little egg muffins a good source of protein, they are also gluten and dairy free. You can even add some veggies in there too! They were a big hit! INGREDIENTS: 12 eggs 1 small sweet Hawaiian onion diced 1 tbsp of crushed garlic 1-2 cups of frozen or fresh veggies- my favorite to use is spinach, broccoli and kale 1/3-1/2 cup of Daiya Vegan Cheese (gf, df, soy free) I use a combination of the white mozzarella style and the cheddar for a variety of flavors. Salt, pepper and spices to taste Optional to add bacon, turkey or diced ham DIRECTIONS: Preheat oven to 375 F. Use two paper liners in each slot of muffin pan, then spray liner with nonstick spray. In the bottom of the muffin cups layer diced meat, if using, vegetables, cheese and onions. Fill the muffin cups to be about 2/3 full, with just enough room to pour a little egg around the other ingredients. Break eggs into large measuring bowl with pour spout, add crushed garlic and spices, and beat well. Pour egg into each muffin cup until it is 3/4 full. Bake 25-35 minutes until muffins have risen and are slightly browned and set. Muffins will keep more than a week in the refrigerator. Egg muffins can be frozen and reheated, but I like them best when they are just refrigerated. For best results, thaw in refrigerator before reheating. Cookin’ Corner Easy Grilled, Stuffed Tenderloin I’ve always loved the idea of grilled stuffed flank steak. However, I’ve always been disappointed the end result. Too often they are like a pizza with meat for a crust. Ah! The perfect meal for anyone on the Atkins diet! There is either too much cheese, the steak is chewy and tough or just plainly difficult to cook evenly. I decided to swap the flank steak out for small (4oz) beef tenderloin pieces, pounded thin before spreading it with herbs and seasonings and then layering prosciutto and provolone cheese. The result—Delicious, tender, cheesy, melt in your mouth goodness. Easy Grilled, Stuffed Tenderloin— Serves 4 Ingredients 2 cloves of garlic, minced 1 Tbsp. minced shallot 1 Tbsp. chopped fresh sage 4 (4oz) pieces of beef filet 4 oz thinly sliced provolone. 4 oz thinly sliced prosciutto Salt and pepper 4 skewers * wooden skewers. Instructions 1.Combine the garlic, shallot and sage in a small bowl and set aside. 2.Pound the filet to 1/8” thick rounds. It’s best to pound any meat between two pieces of parchment paper or waxed paper to prevent tearing. I use the butcher paper that the meat comes wrapped in, and that works perfectly and prevents excess waste. 3.Salt and pepper the beef. Remember that the prosciutto will add salt, so go easy! 4.Sprinkle the beef equally with the sage, garlic and shallot mixture. Rub it in so that it sticks a little. 5.Layer the beef rounds equally with the prosciutto and cheese. Don’t cover the beef entirely with the filling. Leave about a ¼” border 6.Starting with the long side nearest to you, roll the beef up. Tuck the sides in and cut the roll into 1 ½” rounds. 7.Thread the beef rounds onto your skewer, stacking 4 or 5 rolls together on a single skewer. Make sure to leave a little ‘breathing room’ between each round so that they cook evenly. Repeat with the remaining beef. 8.Grill about 3-4 minutes per side, until they are well browned. Editor’s Note: Chef Phoebe loved cooking from an early age growing up outside of Portland, Maine. Her mother and aunt were accomplished self-taught cooks who welcomed curious Phoebe into their kitchens. From tapping her own maple syrup from trees in the yard to baking homemade bread, Phoebe learned at an early age about the delicious benefits of whole, natural, seasonal foods. Phoebe lives in San Francisco with her husband and their daughter. To learn more about Chef Phoebe, visit www.studioofgoodliving.com.

Dance N Association

Dance N Association (DNA) is a new dance program in the South Bay and has been offering programs since February for kids ages 2 to 11 at local parks in Rolling Hills Estates, Manhattan Beach, Hermosa Beach and Santa Monica. They have summer sessions starting for this summer. Recently, I spoke with artistic director, Tina Leder who shared a little about her unique program.

Tell us a little about your dance program? DNA offers various dance programs for youth and adults (depending on the location) ranging from ballet to glee (show choir) to hip-hop. Classes run on sessions, usually 8 week sessions, so the kids can progress in each class and learn a class choreography to showcase for the parents and guests at the end of the session, which is something both the family and the children look forward to and seem to enjoy.

What do kids enjoy about your program? A good example of what the students enjoy, was when this little four year old girl had two of her aunties, godparents, siblings, and other family member come to watch her “last day performance” and she was on top of the world with her big cool-aid smile, I never seen her so concentrated on getting the routine just right then on that day and it was honestly one of the cutest and loving thing I’ve ever seen. This is really why we do what we do, to help bring people together in support of one another. We’re a community based dance company and strive to promote self-love, determination, and comradery within each city, which is the reason why we use city recreation centers to offer all of our programs.”

What is unique about your program? Parents can feel that they are contributing on a broader scale, with our endorsement to a wonderful non-profit organization called Artist Striving to End Poverty (ASTEP), conceived by Broadway Musical Director Mary-Mitchell Campbell and a group of Julliard students. With each class in our program, ASTEP is endorsed to help underserved children across the United States and various other countries through the form of arts (practical, musical, dancing, and performing) education. It’s one way we try to give back to the community amongst others.

What is happening this summer with DNA? This summer DNA will have their half day camps in Rolling Hills Estates: Glee Camp June 16-20 (611year olds), Cheer Dance Camp June 23-27 (4-6 year olds), Fairytale Ballet class which involves crafts and arts time making a wand and a crown to be incorporated in class and in the last day performance. In Manhattan Beach and/or Hermosa Beach they will offer ity bity hip hop class, mommy and me ballet, classical ballet, and glee club. In Santa Monica there will be cheer, glee, zumba, and barre fitness. In the fall DNA will be starting a Competition Dance Team. Locations include: Joslyn Center and Creative Arts Center Manhattan Beach, Community Center Hermosa Beach, Community Center Rolling Hills Estates, and Marine Park Building Santa Monica. For specific information on classes offered at each location, visit www.DanceNAssociation.com or call (310)404-8781. You can also email: info@dancenassociation.com

On Dad’s Watch On Dad’s Watch Perplex Me Not By Michael Malgeri I'm always working on some kinda angle when it comes to educating, entertaining or otherwise annoying our kids. If I can achieve all three in any given tomfoolery, I ring the bell and seize a personal moment of Fatherhood victory. "Your mission, should you choose to except it, is to use this word in a conversation today with any of your friends. Are you ready?...The word is....wait for it...PerPLEX." "Another one of Dad's goofy games!" I heard the brainwaves without either child making a sound. "That's a dumb word. What does it mean?" asked my son. "I see the word 'PERPLEXES' you," I said...brilliantly I might add. "Oh I get it," said our daughter. "You mean it's like...you're puzzled or something." "I see you're not perplexed anymore." "How much do we get?" Ooooooo, I had a taker! "Two BUCKS!" "NO WAY! I'm not going to embarrass myself for two bucks!" Now, this is where certain genes didn't get passed on. I'm usually OK with embarrassing myself for free. In fact, given some of the scam artists I've encountered, I often end up PAYING people to embarrass me! "Hey man! Take it or leave it. See ya later, dudes." As they departed the vehicle in front of school I smiled at the "Dad is a big goofball" headshakes I received from both. The die was cast. With two kids, you have a better chance of forecasting what's going to happen, because at least one of them comes through on your prediction. I drove to my office at Starbucks. I only had to wait until recess, when the kids are allowed to sneak in a few text messages. Around 10am, I heard the familiar 'beep' on my iPhone. "KA CHING!" Guess she rang the bell for me! Editor’s Note: Along with “On Dad’s Watch” Michael has also written a series of books he calls “Bedtime Stories about Capitalism,” which teaches kids about honest profit making. QUICK TIPS FOR ORGANIZING QUICK TIPS FOR ORGANIZING Busy Family Cooking Tips Had a busy day at work or running errands, shuttling kids to and from sports activities? Here are a few ideas to get you going on the path to quick & easy mealtimes. ♦

Once a week cook a big pot of soup. It’s easy to make and nutritious. Have it as a main course with canned biscuits or cornbread. Another night a cup of soup with grilled cheese sandwiches or a salad.

Not into making soup? No problem. There are tasty canned soups available. Consider packaged noodle soups adding frozen or canned veggies to add interest & nutrition. Toss in a salad bar and French rolls.

Everyone likes pasta! If you have a package of pasta and a jar of sauce in the pantry…you’ve got dinner anytime! Frozen ravioli or tortellini are yummy too. Add a salad and you’ve got dinner. Don’t forget the Parmesan cheese.

Buy frozen pizza to pop in the oven for a quick meal. Or buy readymade crusts and let the kids add the toppings. Individual crusts are fun and each child can “decorate” their own.

Cook up chili in the slow cooker before leaving for the day. Turn into chilidogs, taco salad or burritos with canned refried beans. Have a “make your own taco” night using readymade shells or tortillas. Add boxed Spanish rice and ole’…dinner. You could use canned chili too.

Burgers and fries? No problem. Buy pre-made burgers: veggie or turkey or beef (fresh or frozen) and a bag of frozen French fries. Toss them in the oven while you get the condiments ready. Cheese slices, tomatoes and lettuce complete the burgers.

It can be done…..easy & nutritious. Kids can help. Older kids can help cook. Younger kids can help with a salad, set the table and retrieve condiments. All can help to clean up! Bon Appetit’.
