editor’s note

that Leon moped around the entire time we were gone but temporarily shed his sadness as he slept with his front paws atop our ‘baby sitter’s’ bed each evening. Thereafter, Leon stuck to me like ‘Velcro’, 24/7, for the remainder of his lifetime…thus, our fond referral to him as mentioned above. Without going into all the specific details, Leon became ill several months ago. We took him to three different vets along with a multitude of specialists and his basically undiagnosed condition only worsened despite receiving prescribed medications for nausea, varying antibiotics, Prednisone to alleviate inflammation, etc.…it goes on and on. As his physical condition continued to deteriorate, we knew that our Leon was in great pain despite his courage and resolve never to display any outward discomfort, for he knew that telegraphing his pain would only cause us much additional distress.

There Are Angels Among Us

We never imagined we would ever find ourselves in a position of eulogizing the death of a pet, but with the loss of ours, we have come to realize that our depth of love and sadness is shared by thousands of others experiencing an event such as this; it is truly heart wrenching.

Leon had a good day today. We went to his favorite ‘doggy’ park and played hide and seek with his ball. Although he could no longer run like the wind, he loved to sniff and search for his ball tirelessly and never backed down from a challenge. He always wanted to show off for me, as he knew I was so proud of him. Our sweet Leon… we love him so much…our hearts are broken. We helped him into the car and we, ‘his pack,’ drove around the familiar neighborhoods so he could sniff the fresh air and feel the breeze gently blowing on his face, ears flopping in the wind. In that moment, he did not feel any pain, he was so content and happy hanging out with his family. We then fed him his favorite food, followed by a thin dental bone for dessert, washed down by lots of water and shortly thereafter, Leon meticulously selected a choice spot and graciously left his ‘last mark’ in this world. When we arrived home, I lay with him and rested for an hour or so, caressing him to sleep.

Nicknamed “Sad Sack of Velcro”, Leon De Marco was a lively member of our family for almost twelve years and we three were almost inseparable during this time, save for a date some nine or ten years ago, when Sven and I decided to take a short weekend holiday and asked a trusted and dear friend, Lou Milano who also loved Leon, to favor us by taking care of our puppy for a few days. Upon our return, Lou informed us

Leon loved visiting the doctor’s office, knowing he would get a great bath, some delicious cookies and very gentle treatment. The doctor gave him a tranquilizer to make him sleep lightly but Leon couldn’t relax so another two shots were administered and he finally sat down on the floor. We sat with him and told him how much we

loved him and that he was such a good boy; we cuddled, kissed and caressed our baby who trusted us implicitly; I rubbed his soft tummy as he breathed and loved watching it rise and fall with each breath inhaled and exhaled.When he closed his eyes and began to snore, we felt comfort in knowing he felt safe in our presence. We gave Leon our last kisses and asked him to save a place for us in Heaven, where only the worthy are privileged to enter; we know that God is now taking care of our sweet Angel. As we left the room, Dr. Jones assured us Leon would feel no more pain and that the final shot would require less than ten seconds sending our beloved Leon into his new and eternal rebirth where disease and illness do not exist and can no longer threaten him. He thanked us for putting aside our needs and putting our sweet Leon first. We left our final and personal written message to Leon, along with his favorite ball and squeaky toy, with Dr. Jones to accompany the cremation ceremony. We also chose to leave his collar and tag around his neck as we know that after wearing a necklace, a wedding ring, or a watch for any length of time, once removed it feels a bit naked, almost like something is missing; I never want Leon to feel even minutely less than being totally complete. Once we receive his remains, Leon will go wherever we go and he will always be nearby, within the walls of our home and our hearts. Today, ours is a pain that neither Sven nor myself could ever fathom feeling even though we knew our big, strong guy was already following us home and was happy and running with the power of a great stallion as he did before, showing off and saying: “look at me mommy…I can run like the wind!” He gave us almost 12 wonderful years of unrequited love and loyal friendship; since he was a puppy, he gave us his all every day of his life and we learned much from our sweet Leon. He taught us to love deeply, to persevere and to be forgiving. We love you so much my sweet Leon and wish you bright sunshine for the eternal life you now enjoy. Your happiness and love touched everyone you met and each learned to love you in return. You are now safely in God’s hands with His son and all His Angels. Despite this, we cry continuous and seemingly never-ending tears of sadness. <

Hampton Hideaway Seinfeld bought his East Hampton mansion from Billy Joel ... for $32 million. Brad’s Belle Set aside the Brangelina cliff side castle in Malibu, the vacation home on Long Island, the $18K custom-made home for the kid’s gerbils and numerous other real estate, and the one that stands out the most is the fairytale home Brad and Angelina purchased in the beautiful South of France for only $60-70 million. Tony’s Toys Tony Hawk works, breathes and even lives skating. He became frustrated after being harassed at public parks and built a 4,000 square foot skate park in his own back yard. It comes complete with a center pyramid, railing and a ledge. But the luxury doesn’t stop there; inside you’ll find more than $150,000 worth of gaming electronics. All play, no work in Tony Hawk’s case. Pizza Palace George Clooney’s main residence may be in the United States, but the one he really loves is a ‘little’ villa in Italy.Villa Oleandra overlooks Italy’s famed Lake Como and boasts 15 bedrooms. Clooney says in an ABC interview that he refuses to sleep in the master bedroom because it’s too big. One of the bathrooms in this Italian getaway is bigger than the average American apartment. It is also said to have it’s own outdoor theater. But we think he made the purchase because it comes with a separate kitchen just for Pizza!

Queen’s Castle It’s only fitting that the queen of daytime TV would have a home built for a queen. Oprah Winfrey’s House cost an estimated $51 million. Referred to as “The Promised Land,” this 23,000 square foot abode has 6 bedrooms, 14 bathrooms and 10 fireplaces, a guesthouse, a barn, an orchard, a manmade lake and one of the most magnificent views on the Pacific coast. But in case Oprah needs a break, she also owns homes in Hawaii, Milwaukee and Chicago.

Green Goddess Julia Roberts and hottie-hubby Danny Moder recently completed a ‘green’ makeover totaling $20 million dollars. Included in their Malibu home makeover, rooftop solar panels that generate enough energy to take their home off the grid, recycled floor tiles and wood from sustainably managed forests. At about 6,000 square feet, the six-bedroom, five-bath house is actually pretty modest for such a giant star. But this home is enough to make other eco-stars like Leonardo DiCaprio green with envy.

Sophisticated Swift Taylor Swift is getting creative with a redesign of her Nashville apartment. This new star is turning a regular loft into a fairyland any girl would enjoy. This starlet has a 3,062 square-foot penthouse at the luxurious 18-story Adelicia apartment building in Nashville. Swift isn’t doing the typical remodel, she plans on putting a moat-like pond around her living room fireplace, with koi fish in the moat, according to a Yahoo music report. She also plans to put in a spiral staircase with a telescope and humansized birdcage at the top looking out at her night-sky painted ceiling. <

My proudest moment was when we opened Emeril’s. It all started with that restaurant, in what was back then a pretty undesirable neighborhood in New Orleans.

new restaurant in Pennsylvania. You’ve got another new book of recipes.You’re appearing on radio and television. And Orlando Style just saw you at Tchoup Chop in Orlando. What keeps you going?

EMERIL I’ve always loved the foods of the

islands and Asia – whether it’s Polynesian, Japanese, Vietnamese, Hawaiian or Thai. When we opened Emeril’s back in 1990, we described the menu as “New New Orleans” cuisine because it married some unexpected global flavors with traditional Louisiana Creole cooking – bold seasonings, lots of fresh seafood, beautiful fish, shrimp and pork. At Tchoup Chop we have the same culinary philosophy but give things a more Polynesian and Asian twist. When we saw the plans for the Loews Royal Pacific Resort and how it brought a little bit of the islands to Orlando, we knew it was the perfect place for Tchoup Chop.

Chef Greg [Richie] and Chef Jason [Glus] have an amazing appreciation for the craft and their unique styles of cooking…as well as a strong foundation in our company’s style of hospitality when it comes to food and service.

> February began in a very charitable way for car lovers with the sixth annual “Cars for the Cure” Auto Show in Lake Mary at the Colonial TownPark, which benefited the American Lung Association, and featured some of the fastest, most exotic and powerful machines on display all lined up on the streets that are home to some of the best shops and restaurants in the Heathrow/Lake Mary area. The event came to the finish line with a traditional drive along the most scenic highways of Central Florida. As always this event had a great turnout for a great cause.

After checking out the fast cars, we slowed down to enjoy “A Reason To Roost” with Chef Norman Van Aken of NORMAN’S. The “culinary Olympics” which benefited the Bocuse d’Or Foundation helps select the chefs who will represent the USA in the next international Bocuse d’Or competition in Lyon, France in 2011. Beginning with a champagne cocktail reception and leading to a five-course dinner menu the night was full of celebration all around.

In addition to the above humanitarian aid, our government has taken various measures to deal with the immigration consequences of the earthquake. For the most part, politics have taken a back seat on this humanitarian issue. Given the catastrophic nature of this earthquake, Republicans and Democrats alike have supported all of the following measures. One area of deep concern has been the impediment of children’s adoption from Haiti. The process of adopting Haitian children was already slow to begin with. But the process has slowed even more due to the earthquake. Many adoption documents have been lost. As a result, many U.S. adoptive parents who began the adoption process prior to the earthquake have encountered even further delays. In order to expedite the unification of Haitian children with their U.S. adoptive parents, The U.S. State Department and the Department of Human Services (DHS) are working with Haitian authorities to expedite the process of children’s adoption into U.S. homes. Also, various members of Congress are intervening to assist in this unification process.

Besides assisting Haitian children abroad, our government is providing relief to those already here. DHS reacted quickly by halting the deportation of illegal Haitian immigrants. According to DHS Secretary, Janet Napolitano, there are between 100,000 and 200,000 Haitians in the United States

illegally. Many of them have deportation orders, which have been halted by DHS as a humanitarian gesture. Also, our government offered Temporary Protected Status (TPS) to illegal Haitian immigrants. Given the humanitarian disaster in Haiti, this program grants an 18-month status ending in July 2011.

One area of deep concern has been the impediment of children’s adoption from Haiti.

Our government typically grants TPS when there has been an earthquake, flood, drought, epidemic, or other environmental disaster resulting in a substantial, but temporary, disruption of living conditions in the area affected. TPS has previously been granted for various countries, such as Sudan, Somalia, Nicaragua, Honduras and El Salvador. Although Haiti has previously suffered from repeated natural disasters, the magnitude of the recent earthquake has finally prompted our government to issue this TPS program. However, TPS does not extend to all Haitians. Those Haitians who entered the U.S. after the January 12, 2010 date of the earthquake are not eligible. Despite our own economic challenges, America’s response to the earthquake in Haiti has been overwhelming. We realize that our difficulties pale in comparison to those whose lives have been so devastated. We all must contribute and help when we can and as we are able.<

Sound good but not quite sure where to start? Here are some ideas for quick yet effective outside workouts. First, start off with some stretching. There’s nothing more important than making sure your muscles are nice and stretched out so you avoid a pulled, or worse, torn, muscle. Once you’re ready, do some cardio. Ride your bike, strap on some roller blades, go for a jog…anything to get your blood pumping and your muscles warmed up. A good warm-up is essential in providing good results. If you’re lucky enough to

live by the water, canoeing or kayaking are terrific ways to get your cardio workout while also toning upper body muscles. And, you could always go for a 10 to 15 minute power walk on the beach. To properly perform power walking, you need to use good posture: keep your chin up and look straight ahead in front of you; be sure your shoulders are back. Keep your arms bent at a ninety-degree angle and swing them with your fists coming up to shoulder level before swinging back. After cardio, do some simple exercises. Lunges, park bench dips, push-ups, and even pull-ups, if there’s a park with a pull-up bar nearby, are great exercises that really work out the targeted muscle groups. The best part about them is that all of these exercises are simple and you don’t need any special equipment or weights to do them. So there you have it. If this hasn’t convinced you to take your workout routine outdoors, take a look outside while you’re stuck in the gym. See that gorgeous sunshine? Exactly. Go out and enjoy the beautiful weather and just get moving! <

Why did you decide to become a chef? GREG:

I first became interested in becoming a chef when I was a fairly young boy. I was cooking with my grandmother and my great grandmother. They were teaching me how to make homemade breads. Which was fascinating. There was actually a time in the fifth grade where I did a report on how to make bread. A lot of kids thought that was weird. Then on my 13th birthday, my birthday was held at a pizza place where you got to make your own pizzas. So that was when I said, ‘I’m going to be a chef when I grow up,’ officially. OSTYLE:

So you knew you wanted to be a chef when you were 13 years old?

And that I shouldn’t feel hindered by anything that was already going on. And to think of it as a completely fresh start.

So what’s your favorite thing on the menu that you’ve designed? Or is that unfair to ask?

OSTYLE: GREG:

That’s the first time I said it. And I pretty much stuck with that all through high school. I started working washing dishes when I was in the 10th grade. I went straight to culinary school out of high school. I worked almost full-time in a restaurant. I got promoted from dishwasher up to cooking shortly at a little mom and pop place in Stone Mountain, Georgia – and just learned the basics of good home cooking really. Then I was on my way. OSTYLE:

Could you tell us about your experience with Chef Roy Yamaguchi?

How did that happen? Did Emeril reach out to you? GREG:

I had met Emeril a number of times through the years. In fact, he and I first met; it was a really funny coincidence, at a magazine event, where I was voted Chef of the Year. There were two years that it happened. One year it was Chef of the Year. The other was Best Chef in Orlando. Chef Emeril personally handed me the Chef of the Year award. And that was actually our first meeting. We met again another year where the same thing happened, where he was again there as a guest host, and I was receiving some awards.

GREG:

I started working out there in his Hawaii restaurant. I was only planning on living out there for a year. Just getting some experience and having fun living in Hawaii. And after about 6 months, Chef Roy called me into his office and offered me a Sous Chef job. And I said, well, I’m honored, but I’m actually going back to Atlanta, where I’m from. And everybody thought that I was going a little crazy. And you know, after I thought about it, after a month or two went by, I thought, you know what, this is an incredible opportunity. So I said, I’d like to take you up on that offer. And so I took it, and after some amount of time they started opening up more restaurants and lo and behold they offered me the opportunity to be the ex-

That’s a great way to meet a future employer, receiving a Chef of the Year award. So what do you do when Chef Emeril tells you that you should do whatever you want?

GREG:

That’s like asking a parent if they have a favorite child. You’ve got to love it enough to put it on the menu in the first place. And so you know, for me, the best way that I can answer that would be as we change seasonally, the newest and most exciting things with the season are going to be what’s fun for me. The weather just changed and now these baby brussels sprouts are coming out. Or my fisherman just called me up and he’s got the most beautiful black grouper you’ve ever seen. So that’s how you get excited. Look how beautiful these vegetables are. Look at this fish. And then you can start creating a dish. Using all these things, putting them all together in some exciting new way, that would be my favorite dish of the moment. OSTYLE:

If you weren’t a chef, what would you be doing?

GREG:

GREG:

Well, when Chef Emeril says he’s familiar with your style of cooking, and that he knows what you’re capable of and has a lot of respect for you. Well, that makes you feel great, one thing. And, of course, now you know that you can’t let this guy down. And so you start by thinking what would you like to cook. What you would like to eat. You just do it one dish at a time. I didn’t take the menu and then hand in a new one the next

That’s a great question. I ask myself that sometimes, and I’ve got so many weird answers that it wouldn’t make sense to put them in one sentence. If I started from the beginning and didn’t choose that path, I’d probably be a doctor. Obviously, it’s a little late for me to go to medical school, but it’s nowhere near being a chef, right. <

1 lb ground pork 1 head baby bok choy, chiffonade cut 1 cup Napa cabbage, chiffonade cut 1 medium carrot, brunoise cut, (very small dice) 3 1/2 tablespoons oyster sauce 1 1/2 tablespoons ginger, peeled and minced 2 tablespoons garlic, minced 1 teaspoon Togarashi shichimi 1/4 cup sake 2 tablespoons vegetable oil 1/4 cup cilantro, chopped salt and pepper, to taste 1 package gyoza wrappers 1 teaspoon cornstarch, mixed with water to form a slurry or thin paste

Over medium heat, sautĂŠ garlic, ginger and vegetables in vegetable oil. Deglaze the pan with sake. Continue cooking until all of the moisture has evaporated and the pan is dry. Remove from heat and cool. In a mixing bowl, add vegetable mixture to the ground pork. Add remaining ingredients and mix until combined. Place a small amount of the filling onto one of the gyoza wrappers. Moisten the outer edges of wrapper with a bit of the cornstarch slurry. Gently fold over to seal edges, leaving as little air as possible in the center. Steam the dumplings for about 4-5 minutes. Enjoy!

> Edward Wilkerson, designer for Lafayette 148 New York, shares a Resort 2010 collection that’s both classic chic and sandy island goddess. When it’s time to start a new collection, Edward Wilkerson takes a trip. It might to be Italy or Spain, Vietnam or Hawaii, but wherever he goes, he finds inspiration.Wilkerson is the designer for acclaimed women’s wear label Lafayette 148 New York, and with its classic silhouettes and easy-breezy feel, it’s clear what his inspiration for Resort 2010 stemmed from: St. Tropez. “I landed in St. Tropez to find inspiration for this collection and I instantly was stunned by how much fashion was around me. This was what I was looking for my entire life,” says Wilkerson. He browses flea markets all over the world, looking at artisan jewelry, handmade textiles—all the while people-watching, looking for his next catch. There must have been a lot of elegance in St. Tropez, because that’s exactly what Resort 2010 for Lafayette 148 New York is: it’s dripping with the stuff.

Wilkerson aspired to be an architect in his early years, but fashion led him astray to the High School of Art and Design in New York. It’s easy to see where architecture fits into his designs. Wilkerson’s clothes are struc-

tured and tailored impeccably to be flattering while still breathing airy life to staple pieces. “My customers are used to a certain fit; building a house and building a garment are one and the same. If the structure isn’t there, the piece will just fall flat,” he says. Wilkerson’s taste in fabrics is keen and his designs make the most of each stitch. Because of the fabrics he chooses, the garments do exactly what he wants them to do— they flow. Just look at the show-stopping blue tie-dye halter dress, cocktail length in front while draping to a train in the back. Talk about high drama. As the model walks, the train flutters behind her, light as air, like butterfly wings or peacock feathers. Essentials from this collection include classic wide-leg white trousers. “They’re elegant and sporty at the same time. Put white trousers with almost anything and you have instant glam,” he says. The Resort 2010 collection showed fluttery tuxedo shirts in chiffon, safari jackets, and tie-dye tunics all paired with the classic white pant. Other essentials, according to Wilkerson, include a sexy white mini skirt, the safari suits, and an oversized black sequin smoking jacket. “It’s a challenge to stay warm and dress for evening without pulling on a fur or something equally heavy. quins are back,” Wilkerson says. He’s right; and this belted black sequin smoking jacket takes cool spring nights and turns up the heat. Wilkerson is a big fan of shopping smarter, not harder. Instead of working the classics to death, he suggests that women step away from what they’re used to and find signature pieces that pair well with what they already have. “You can easily kick up your existing wardrobe with animal print, tribal designs, anything that’s hot for the season. Try on something you thought you’d never buy, go for something that’s not typically your thing, you might surprise yourself.”

One of these things is the oversized tribal jewelry seen everywhere on runways for Resort 2010. These pieces are for maximum drama—huge pieces of abalone shell draped around the neck, enormous wooden cuffs adorned with gold studs—these accessories are not for the faint of heart. However, Wilkerson does find value in understated jewels, too. “The best investment a woman can make is one strand of perfect pearls. They go with absolutely everything,” he says.

Other decades have been making quite a splash in the late-2009/early-2010 collections. Elements of the 50s, 60s and 80s translate into the cinched waists, balloon dresses and vivid colors seen on the runway. What’s the best way to take something retro and make it modern? Accessorize. Wilkerson says, “Look for belts, bags, hats and shoes that can change everything you own. The slightest change makes the biggest difference. Pop the color, cinch the waist, draw the eye to your feet—anything that will make your outfit an unexpected surprise.”

and relevant muse. “I need fashion magazines because I have to have something I can touch; I’m a very tactile person. I have to see it in front of me, manipulate it, and burn it into my muscle memory. When I start designing a new collection, I do it by hand. I can barely turn on a computer, anyway,” he jokes. Wilkerson believes that his fashion is perennial and can be worn by women from their 20s to their 50s and beyond. “All women can wear the same thing when they wear my clothes,” he says, “It’s all about adjusting the fit to make it work.” Wilkerson’s ‘fit model’ is in her 50s and a size 12—a refreshing departure from clothes that look fabulous on idealistic model bodies but can’t be worn day-to-day. “It’s refreshing, but it’s also realistic. I want to make clothes that fit real women.” Lafayette 148 New York’s Resort 2010 collection, found at Neiman Marcus, is literally a breath of fresh air.
