Hard to believe that we are closing in on another year’s end with the holidays just around the corner; with all the volatility experienced these past several months, the resilience of America continues to perform as it has in its glorious past. Instead of reflecting backward, now is the time to embrace the future and what better time to do so than now, with the seasonal festivities coming into full swing. With finances somewhat strained for all of us, perhaps we should stay a bit closer to home this year and do our celebratory holiday shopping supporting our great local shops and malls with our gift purchases. Spending our ‘gifting’ dollars with our local, friendly and familiar retailers is as much a gift to them as those on the receiving end, adding additional meaning to the act of giving being the greatest gift of all. The memories and emotions that come from giving are timeless, universal and lasting. This past year presented some unexpected and sometimes unwelcome challenges to many of us and it’s almost a relief to have it come to an end. Despite all the obstacles placed before most of us, Orlando Style continued its positive attitude, always seeking a brighter future and without looking back, was able to successfully negotiate a path of change, sometimes minor and sometimes great, to emerge in the pole position of magazine publishing in our city – a spot we promise to defend for a long time. Originally she was supposed to be coheadlining a tour with Kanye West, however controversy seemed to overtake Kanye right before the tour began and it was cancelled, leaving Lady Gaga free to embark on her own world tour. Lady Gaga has shocked, amused and entertained with her eccentric and sometimesbizarre appearance, her new pop sound and her infamous stunts. It’s not all hype though, Lady Gaga has proven she has the musical chops to top the music industry. Under the lightning bolt makeup, blonde wigs and outlandish costumes Stefani Germanotta, A.K.A. Lady Gaga, is just another girl who dreamed of being a singer. “I was always an entertainer. I was a ham as a little girl and I’m a ham today,” says Lady Gaga on her official web page. Lady Gaga began life as a normal looking brunette named Stefani Joanne Angelina Germanotta. Stephanie got her first record deal at 19 because of her amazing voice, but was dropped from the label because the executives failed to see anything special. After this setback, she began performing with bands and in burlesque shows, which helped Stephanie to create her own style. Mixing the retro beats she loves with pop and a touch of rock and roll– a “Superstar” was born! She got her stage name from a Queen song called “Radio Ga Ga,” believing, like Queen, that performance, looks and attitude matter just as much as music. That very attitude is what has taken her to reach new heights when “Poker Face,” her second single off of The Fame album, reached number one in almost 20 countries around the world.

Another hit single ‘Paparazzi’ from The Fame topped the charts in 2009. It deals with stalking and the trappings of fame, but it’s also about making the paparazzi fall in love with her. The up-tempo beat and danceworthy electro sound will stick in your head for days, but you won’t mind because this song is magic. If her MTV Video Music Awards performance where she sailed from the roof covered in fake blood is any indication of The Monster Ball tour, it is set to be full of amazing dances, live music and of course crazy theatrics. Lady Gaga has called this tour the first-ever ‘pop-electro’ opera. She said in a recent Rolling Stone interview that she wants to make this tour with story elements like an opera and “the most beautiful, most expensive-looking, delicious show, that my fans wouldn’t have to pay a ton of money to come see.”

The tour will feature songs from her latest album The Fame Monster as well as songs we have all grown to obsess over from The Fame. The idea behind the new songs and inspiration behind the tour is that everyone is born with a monster inside, and at some point they must face their demons. This pop opera is sure to be something to see, whether you are a hardcore Lady Gaga fan or not, there’s something for everyone. She will be appearing in all her glory on January 3 at the Hard Rock Live in Orlando. Be there and experience the ‘monster’ of Lady Gaga.<

Is it so wrong to think that those who insist on using the nice dinnerware should also have to clean it?

> Awww... the holidays. That heart-felt time of year when we get together with family and realize the true meaning of why we only get together once a year. Not that we don’t love our relatives with all our might, but there is only so much irony in listening to our aunts make the same complaints about each other’s kids. In this sense, we discover the true holiday spirit: tolerance. We’re able to greet co-workers with a “Happy Holidays” because we’re not quite sure if “Merry Christmas” or “Happy Hanukkah” is still in the employee handbook, and we do this just as easily as we sit around the dinner table with relatives and fake smile until our head hurts. This is the real reason we need a nap after eating turkey; being that fake can be exhausting! But of course, you can’t take a nap after dinner, because you never want to be “that cousin” who doesn’t immediately jump up from the table and start helping to clean up. Even just excusing yourself to the bathroom will cause family members to immediately fly into a hushed frenzy about how lazy you are.This is probably why the men in my family always insist on using paper plates and plastic utensils, stressing the point that the FOOD TASTES THE SAME; but it’s to no avail. The very mention of plastic anything (even a decorative fruit bowl) causes my aunts and grandma to scoff with insult and continue to lay out the best china. Is it so wrong to think that those who insist on using the nice dinnerware should also have to clean it?

Of course, the holidays are not just about family. Let us not forget the retailers. We in the media do an excellent job of not letting you forget about them. Every year, as early as January 1st, “experts” scramble onto the airwaves somehow predicting a worse-than-normal year for retailers for the upcoming holiday shopping season. Using words like “consumer confidence” and “economic propensity “ they are always able to convince us that 1) you should’ve spent the day after Christmas shopping for next Christmas and, 2) this year companies are practically GIVING away that new MegaRobotic-Barbie-Action-Voltron that prevents swine flu.We fall for it every year, convinced we’d be a fool NOT to spend money on such great deals. I’m not gonna deny that women are the biggest culprits. I have yet to find a man pushing a shopping cart with a Holiday Toy Catalog open to snow globes. But, as women, we are also well aware that even something as simple as a paper weight will keep Aunt Lily from hinting to everyone that your cheap ass got her nothing but a card. Men would gladly get their aunt just a card if it meant she would show her displeasure by not inviting them to church on Mother’s Day. And this, folks, is why the holidays are always more stressful for women. Sure, men have the stress of watching their favorite college teams go for the bowl championship, and I’m not saying that isn’t any less productive than planning a holiday party or finishing up the holiday shopping but – wait... yes, I am. <

When a U.S. citizen marries abroad, he or she can file the marriage petition and the spouse’s immigrant visa application at the U.S. Consulate abroad. However, the Consulate typically takes a few weeks to process the application, which may not be an option if your employer in the U.S. will not give you an extended vacation. So, after the wedding bells have rung, you can return home to the U.S. and file a marriage petition from here. Once the United States Citizenship and Immigration Services (USCIS) confirms that the marriage is bona fide (not just to confer a green card on someone), the agency will approve the petition and then eventually forward it to the U.S. Consulate or Embassy in your spouse’s home country, where an interview will be set for the issuance of a visa. Be sure to consult with an experienced immigration attorney about the K-3 petition to shortcut the traditionally long processing time of the marriage petition But what if your family insists on having your wedding here because having the entire family attend the wedding abroad would be cost prohibitive? The solution is the fiancé petition! And once your fiancé enters the U.S., he or she must marry you within 90 days. After marrying, your new spouse must file an adjustment-of-status application with the USCIS and attend a “marriage interview.”

When Love is Nigh

Often U.S. citizens meet their foreign life partners within our shorelines. Note that the fiancé petition is not applicable when your fiancé is in the United States. The first step would be to marry your life partner. Upon marriage, you can file your marriage petition with the USCIS. In most cases, the marriage petition should be accompanied by an adjustment-of-status application. The USCIS will eventually set an interview to review two things: that the marriage is bona fide, and that your spouse is not “inadmissible” to becoming a lawful permanent resident. Yes, the Immigration and Nationality Act has several grounds of inadmissibility! Once the USCIS approves the marriage petition and the adjustment of status application, your spouse will get a Resident Alien Card in the mail. If the marriage is less than two years old, the residency will be granted conditionally for two years. Near the end of the two year conditional period, the couple must file a joint petition to establish that they still reside together; or if the marriage is terminated, that there is a bona fide reason for no longer residing together. Love Can’t be Blind

“My marriage is real! I don’t need an attorney!” If you are inclined to believe that, think again. Our discussion provides only an overview of the marriage-based immigration process. There are many intricacies involved that are not discussed here. For every person who is able to handle the process successfully, there is one who couldn’t. The lesson: While falling in love, avoid getting hurt. Whether marrying a foreigner abroad or in the U.S., knowing your options and being prepared is the key. It can avoid unnecessary delays. The appetizer selection is wide and primes the palate for the main experience. Don’t shy away from the oysters in the fall and winter. Spencer’s chooses lovely Wianno oysters, served on coarse rock salt with a cracked pepper-shallot mignonette, that slurp down smooth as silk. The Shrimp and Crab Cake with Chipotle Remoulade and Lemon Arugula Salad is a fantastic way to bring the senses alive with the rich flavors of ocean-

fresh crab and spicy heat from the smoked jalapeño peppers in the sauce. Salad is also elevated to a modern twist at Spencer’s. While they, of course, serve the steakhouse staples like the classic chophouse tossed salad (which Chef Broderick affectionately calls, “the kitchen sink salad” because it contains everything but…well... you know), Spencer’s also serves a brilliant take on Gazpacho, the cold summer soup. The Gazpacho Salad is one of those rare and delicate “composed” salads where each ingredient is to be eaten on one forkful to experience the full effect of the salad. Ripe grape tomatoes are combined with cold cucumber and red onion with cilantro vinaigrette. It tastes exactly like a wellmade gazpacho in the peak of the summer months: refreshing, cool, and invigorating. Paired with un-oaked white wine like Cakebread Chardonnay, this pairing sings sweetly. Spencer’s is one of the few steakhouses in Orlando to serve dry-aged beef. During

the aging process, juices are absorbed into the meat, enhancing the flavor and tenderizing the steaks. These steaks, especially the Prime Cut 14oz. Ribeye and the 12oz. New York Strip, are not only dry-aged but grass-fed, capturing more natural flavor of the beef in every bite. Spencer’s also offers a lovely, most tender loin of heirloom Kurobuta pork, meltingly tender and happily paired with tart cherry compote. Side dishes at Spencer’s are creations in and of themselves, enhancing the flavor of the meats perfectly. Roasted fingerling potatoes are doused in stone-ground mustard, making for a filling and flavorful accompaniment. Sautéed wild mushrooms fulfill the earthy umami quotient. The Loaded Hash Browns are extremely well made – crusty and brown on the outside and fluffy white on the inside – don’t miss them. If you’re nervous about ordering Ravenswood wines, don’t shy away from the Pickberry-Sonoma Mountain Red, a blend of Cabernet Franc, Merlot, and Cabernet Sauvignon. It’s a mar-

velous, drinkable accompaniment to any entrée at Spencer’s. Dessert is an occasion. Something was lost in translation when management told Spencer’s Austrian pastry chef to create a “mud pie.” He was told to put ice cream in a cake form and crust it with cookies. What resulted is a monstrous ice cream tower with three luscious flavors in a chocolate cookie crust. It’s impossible to miss when you see it being delivered to a nearby table; you’ll have to have one. The Deconstructed Bananas Foster is a real slice of the Big Easy and the oven-roasted Strawberries mixed with kaffir lime-scented crème fraiche are a light and satisfying way to end the evening. If you’re, miraculously, hungry for a little more, don’t forget the after-dinner libations. The bar at Spencer’s does a fantastic job of not only recreating the classics like Vesper and Sidecar, but their dessert drinks can’t be beat. > The Orlando Culinary Academy Student Brandon Callanta Wins Roy’s Orlando’s Aloha Kitchen Challenge Internationally acclaimed Chef Roy Yamaguchi made a special trip to his Orlando restaurant for the culinary event titled the “Aloha Kitchen Challenge.” The gourmet competition paired local culinary students: Carla Norelli, Brandon Callanta and Kelly Womack with top chef owners respectfully, to win a prestigious internship with a Roy’s chef. The partnering chef teams were asked to create an exceptional dish in the spirit of Roy’s signature Hawaiian Fusion® Cuisine. Over 200 guests enjoyed this one-of-a-kind dining experience and indulged in a fivecourse dinner— which included two courses created by Chef Roy and his Executive Chef Mac Lynch, and one dish from each competing team. A panel of 5 local celebrity personalities including our very own, Sven Bode, rated each team’s creation on taste, presentation, and individuality, and awarded the top score to student Brandon Callanta’s Massaman Curry Scented Scallop dish. But most importantly it taught me how to generate ideas and to get them on paper and finally on the table. I learned things like recipe development, costing, demographics (who you’re serving and where) and how to set up a station to execute a specific menu. 3) What are your culinary aspirations? I would like to open a wellness center that offers many different types of amenities for the people that want to be pampered when they are recovering. A facility that contributes back to the community by offering classes on health, sustainable agriculture, nutrition, healthy cooking, fitness, and so much more. I would like to be a part of or start a health center that accepts insurance in which a portion of the profits goes back to the community and charities. 4) At which restaurant would you like to do your Roy’s internship? I would like to go where it all started, Roy’s Hawaii Kai in Oahu, Hawaii. “This has been an experience of a lifetime. Chef Kevin Fonzo of K Restaurant & Wine Bar taught me how to prioritize and come up with a solid game plan to execute the event successfully. The Winning Recipe At Roy’s “Aloha Kitchen Challenge” • 1/4 cup julienne Fennel Add to taste: Mint, Basil and Cilantro Chiffonade, Orange Ginger Vinegar, Lemon Oil, Black Sesame Seeds (Garnish), Shichimi Togarashi (Japanese 7 Spice), Kosher Salt & Black Pepper

1 TBS Orange Ginger Vinegar 2 TBS Yellow Curry Powder 1 TSP Siracha 1 TBS Honey 1 TSP Brown Sugar Kosher Salt & Black Pepper to taste

To prepare, toss all ingredients together To Plate: Macadamia Nuts:

• 1/2 cup on a sheet tray lined with wax paper • Bake at 275F for 20 minutes or until lightly golden brown > RECIPE: Callanta’s Massaman Curry Scented Scallop Serves 4 Appetizer portions

1) Put curry aioli in a squeeze bottle and zig zag the aioli on a plate for visual appeal

1 Whole egg 1 Cup Canola Oil 1 TBS Dijon Whole Grain Mustard 1 TBS Cilantro (finely minced) 1 TBS Lemon Juice

3) Make a bed of Macadamia nuts (1 TBS per dish) for the scallop to sit on the slaw 4) Sear scallop in iron skillet using a 50/50 clarified butter and canola oil mixture. Cook to medium-rare, pat off excess fat and plate on the bed of macadamia nuts 5) Toss micro greens in a bowl with lemon oil and salt. Garnish scallop by laying the micro greens in a nest like mound directly on the scallop and serve immediately. <

> Orlando’s opulent Harriett Lake is a legend of outrageously admirable charitable giving and equally outrageous fashion sense. “I have always loved clothes,” she says, “since I was a very young woman – fashion was always a passion.” From the look of her closets, that’s obvious. Harriett never goes anywhere or to any event without looking fabulous, and she carefully chooses each piece of clothing for the optimum effect. The house has two enormous closets (one is two stories and sports a moving drycleaners style hanging rack) full of over 1600 hats and countless shoes, evening gowns, jackets, crisp white shirts and every accessory or accompaniment in between. There are clothes in most rooms of the decadent and sprawling house, arranged systematically by designer and occasion.The intricate beading and detail of Escada delights her, clapping her hands as she recognizes one of the designs amongst a plethora of outerwear. “I love Dolce & Gabbana, Escada, Gucci – any of the Italian designers. They really know clothes and really know how to go over the top!” she says. Harriett does all of her own shopping, mostly from catalogs at home, though she does venture out to peruse the offerings at Last Call by Neiman Marcus and Saks Fifth Avenue Off Fifth outlet. She loves St. John’s for daywear. She’s got a modern sensibility to her wardrobe, though many of her pieces recall a vintage era, many of her favorite coats and dresses have been seen on Barbara Walters. “We’re like cosmic fashion twins! We love the same silhouette,” says Lake. Her real clothes idol comes as no surprise, though. “If I could have the wardrobe of any

woman in the world, it would be Queen Elizabeth II. How amazing would that be!” With a choice like that, Harriett reveals her real affinity for rococo richness in detail, sumptuous fabrics and sheer elegance. From living in Orlando for any amount of time and enjoying the arts, it’s almost impossible not to see Harriett’s name on a variety of Orlando institutions’ charitable giving lists. Harriett has her name on a bar at the Orlando Shakespeare Theater, the Harriett’s Favorite Things fundraiser benefiting the Orlando Ballet and many more honors. “I’m not saying I’m not a material girl,” says Lake. “I’m just saying that the charities come first.” Lake focuses on local arts and health initiatives like Harriett’s Boutique at the Breast Care Center at Orlando Regional Medical Center. The boutique sells scarves, hats, post-mastectomy camisoles, self-help books, and other items that carry no price tag for breast cancer survivors. The arts hold a special place in Harriett’s heart, “It would destroy me if we didn’t have the Orlando Ballet.” She gives generously to that organization as well as the Orlando Philharmonic, Mad Cow Theater and the Orlando Art Museum among others. As a child, her mother taught her that to be charitable was one of the most important things in life. “You’re either born wanting to help others, or you’re not,” she says. “My mother taught me to make people’s lives better, and it’s one of my favorite things to do.” < presented by

> When I was first told that I would be would be sitting down, face to face, withTHE Paulina Porizkova, one nerve-wracking question came to mind: Who?! A quick check of Google images showed me that while I may not have recognized her name, I certainly recognized her face. It is synonymous with beauty; touted twice by People magazine as being among the 50 faces in the world that cause other women to immediately stop what they’re doing and go spend thousands of dollars on beauty products and facial surgeries. That being said, I was expecting to sit across from a woman who used phrases like, “Dahhhr-ling,” and demanded that the Mall at Millenia have yellow M&M’s (and ONLY yellow) waiting for her in an offwhite ceramic bowl. I was way off. Paulina’s quick wit and sense of humor wasn’t the only thing that shattered the supermodel stereotype. So did her views of the modeling world.

To begin, Paulina’s bio is an impressive list of magazine covers, swimsuit calendars, and independent films. At the height of her modeling career this 5’10” beauty was making multi-million dollar deals with Estée Lauder. She hosted a style show for E! And recently was hired – then subsequently fired – as a judge on America’s Next Top Model. “You don’t work WITH Tyra, you work FOR her,” was Paulina’s subtle way of explaining something that really needs no explanation if you’ve ever happened to – in a rare lapse of judgment – catch a few seconds of the show while channel surfing. As I sat across from her asking such indepth questions as, “So, like, what was it like to, like, model and stuff?” (Hey, I was nervous, okay?!), she was able to sum it all

up in two words: “Modeling sucked.” No lie. Here is a woman who spent the last 30 years living the dream of every young girl who doesn’t like the thought of spending 10 years in medical school; and Paulina hated every minute of it. Well, not EVERY minute. “The number one best thing about being famous was first class,” she recalls fondly. “But to have the focus of your life and career be entirely on how you look is horrible.” Tell me about it. For this world-famous supermodel, there was nothing more boring or mindless than modeling, except for maybe the people associated with it. That may be because she spent the first ten years of her life making history in her home country of Czechoslovakia ... and it had nothing to do with modeling. Paulina’s childhood is a poignant story about political struggles in the 1960’s. I could write a book about it, but for time’s sake I suggest you Google it. At the age of ten, after a very publicized life as a political refugee, she moved to Sweden. Her life did a 180° at the age of 15 when she was discovered on the streets of Sweden and thrust into the dramatic world of fame and fashion. It wasn’t a business she respected. She told me she yearned to be appreciated for her brain; at one point even jokingly offering to recite a list of the Roman emperors. I told her it was only a 20minute interview. Today Paulina’s top priority is her “private life,” as she cryptically puts it. Which I took to mean her 20-year marriage to The Cars lead singer, Ric Ocasek, and their two children, Jonathan and Oliver (when you’re that famous your private life isn’t all that private). Her advice for aspiring young supermodels? “Buy my book A Model Summer. It’s about a 15-year-old Swedish girl who spends the summer working as a model in Paris.” Uh, okay ... that was more like a plug. But she did have this to say about modeling: “Make sure you understand it’s a lonely mountain to climb, and it’s the shortest mountain ever. You have to be prepared for the walk down.”<

Sak Comedy Lab to Relocate to CityArts Factory The Downtown Arts District recently announced a new, permanent home for SAK Comedy Lab, an improvisational theater company and home of SAK University. The newest addition of a growing Arts District, SAK Comedy Lab will occupy more than

8,000 square-feet of space at CityArts Factory’s Eola Capital Loft beginning February 2010. CityArts Factory – currently home to five independently operated art galleries, the Kiene/ Quigley Community Gallery, and the Orlando Magic Classroom – is a 20,000 square-foot multi-use arts and cultural destination where visual and performing arts co-exist in the

heart of the Downtown Arts District. Visited by more than 35,000 people annually, CityArts Factory showcases an infusion of local and international works of art.

SAK Comedy Lab has been a part of the Orlando Arts scene for seventeen years and has created several arts organizations including the Orlando Theater Project (OTP), the Orlando International Fringe Festival, and the Central Florida Performing Arts Alliance. Before opening the SAK Comedy Lab, SAK Theater performed improvisational street theater around the globe and at Epcot at the Walt Disney World Resort, and recently celebrated its 30th Anniversary of laughs.

The Canine Companions for Independence is the largest non-profit provider of assistance dogs. This organization helps people with disabilities by providing them with highly trained assistance dogs. There are so many ways to help.
